No mineral oil in food

Efficient, sustainable protective barrier for packaging

No more mineral oil mixtures transferred into food from packaging: Sappi’s new papers with integrated mineral oil barrier bring new safety and capability to recycled packaging solutions for the food industry in a sustainable and efficient way. The two key benefits: Minimum 15-month mineral oil barrier protection and very good heat sealing capabilities so that food packaging does not require any additional coating seal. P

ackaging protects the product it contains from dirt, contamination and destruction. However, there can be significant consequences when the packaging itself becomes a concern: The existence of poisonous mineral oil mixtures has been detected in various foods since the 1990s. Recycled packaging carton board was identified as the source of these mineral oil mixtures in food. Printing inks from recycled newspapers that contain solvents are the primary culprits due to the fact that poisonous hydrocarbons cannot be fully removed in the re-

cycling process. A residual amount, normally around ten percent, remains in the recycled material after processing. The ink on the printed packaging can also contain mineral oil mixtures and can migrate into the food as well. Dry foods and foods containing fat are affected: Rice, noodles, chocolate products, muesli, potato dumplings and baby food. The mineral oils predominantly migrate into food – even at room temperature – as volatile gases. Most inner pouches currently used fail to offer adequate migration

protection. Safe solutions, such as those using complex laminates with aluminium and PET, are both expensive and not environmentally friendly. The transfer of mineral oil into food is the result of two key properties of the food itself: First, the particular surface of the food onto which the mineral oil is absorbed; and secondly, the percentage of fat in the food into which mineral oils can easily be dissolved and absorbed. These residues consist of a complex mixture of saturated (MOSH) and unsaturated hydrocarbons

(MOAH) suspected of being carcinogenic. Humans ingest the poisonous substances by consuming the food with high-risk consequences: In 2009 the Bundesinstitut fĂźr Risikobewertung (BfR; Federal Institute for Risk Assessment) determined that mineral oils can become concentrated in the human body with ingestion over time. Animal testing has shown that they are highly poisonous and can cause liver inflammation, heart damage and other diseases, including cancer. The conclusion of the BfR was that it is urgent that the transfer of mineral oils into food should be minimised. Solutions expensive and a long way off Industry and researchers have long been looking for solutions to eliminate these unwanted risks. The entire printing sector is discussing how

Three questions to Kerstin Dietze, Marketing Manager for Sappi Speciality Papers, Sappi Fine Paper Europe What has the market’s response been to the idea of packaging papers with an integrated mineral oil barrier? The interest in an efficient and sustainable mineral oil barrier solution is very high and is growing. The increasing interest is certainly also driven by the imminent introduction of legal requirements. Many product manufacturers are now focused on this issue and are looking for rapid solutions. For this reason, the response to our official product launch during Interpack 2014 was extremely positive. There were many enquiries from product manufacturers and processors about our innovative and recyclable barrier papers, with our efficient and easy-to-implement solution enjoying a great deal of interest. Are there any specific projects yet, and how is the ongoing development of the mineral oil barrier papers progressing? Currently there are multiple customer tests running on different packaging types for tea, cereals, chocolate and various dry foods. We are very optimistic that we will be able to present the first successfully implemented projects very soon. The development work will not come to an end following the successful market launch of the mineral oil barrier papers, however. The next stage is to expand the number of weights on offer for these barrier papers. What further developments is Sappi currently working on? Sappi is increasingly investing in the development of special papers. Thanks to expansion of the specialist centre for special papers in Alfeld, we will be able to present many additional innovations in the future. The Algro Nature and Leine Nature papers that can be composted at home, as well as the mineral oil barrier papers Algro Guard M and Leine Guard M are the first innovative results of these investments. In addition to this, our company is also running various development projects in the area of sustainable packaging solutions. A key focus is the integration of different functionalities into our papers. We will be announcing additional products and solutions very soon.

to migrate to inks free of mineral oil for the long term. Carton manufacturers are working on improved cleaning processes for recycled papers; and paper processors are voluntarily avoiding the use of inks containing mineral oil for packaging printing. However, none of these solutions can have the desired impact in the short term however, and even when they are achieved, the associated costs are very high. Functional barriers, either in the form of coated, painted or laminated folding cartons or impermeable inner pouches, is a potential solution that is currently available. The use and benefit of packaging materials with mineral oil barriers (abbreviated as MOB (Mineral Oil Barrier)) are currently an important topic of discussion in the packaging sector. Although some of these measures are currently being implemented by product manufacturers, there is a need to do more, and soon: Legal requirements for this are anticipated in Germany, in particular, where a legal bill is still being discussed. However, a recommendation for the use of barriers for inner pouches in food packaging has existed in Austria since 2012. Sappi presents its solution To enable the continued use of recycled paper in packaging materi-

als, Sappi has developed a solution in partnership with BASF and Eurofins that brings innovative MOB papers into the market. The Sappi paper has a barrier coating which is applied during the production process in the form of a special dispersion agent. These new paper types for flexible packaging prevent the penetration of potentially harmful substances into food while allowing the ongoing, sustainable use of recycled cellulose in packaging materials, including outer packaging and transport packaging, ensuring improved food safety. Sappi introduced MOB papers as a technology demonstration at Fachpack last year . Shortly afterwards, these papers were awarded the “PPI Award 2013 for Advances and Innovation.” At this year’s Interpack, MOB papers were introduced onto the market under the brand names Algro Guard M for outer packaging that require high print quality, and Leine Guard M for inner pouches and bags. These save, sustainable and cost-effective solutions have been generally available since Spring 2014. Homogeneous, sealed surface One of the technical challenges in developing the MOB papers lay in achieving a homogeneous coating

to fully cover the pre-coated paper substrate. Even small defects in the coating can have a direct effect on the quality of the barrier function. This means it is important to have an exceptionally smooth, non-porous raw paper with a full-coverage primer offering. Another challenge was finding a production window on the coater to permit a barrier coating to be applied to product without the rollers becoming blocked. Together Sappi and BASF succeeded in developing coating solutions to address these challenges. It required the creation of a water-based polymer dispersion that could guarantee the necessary barrier while providing a stable and fault-free film using the predefined parameters without blockages. For this purpose, the film formation had to be aligned with the blocking response to achieve the optimal formulation. Test confirms effectiveness To test the effectiveness of the barrier coating in preventing the penetration of poisonous mineral oils into food and other sensitive products, BASF turned to Eurofins Consumer Product Testing GmbH, an international bioanalytics service provider. This lab focuses on test-

ing and analysing foods, pharmaceutical products and environmental samples as well as consumer goods. Eurofins conducted a threemonth test cycle on behalf of BASF. These and other tests have definitively shown that papers with MOB barriers developed jointly by BASF and Sappi prevent mineral oil residues in recycled cardboard and recycled carton from migrating into food during the standard shelf life of the foods in question: The two new Sappi papers, Algro Guard M and Leine Guard M, have the necessary MOB functionality for a protective period of at least 15 months - in other words, far longer than the normal maximum shelf life of the products - as well as very good sealing capabilities. It is precisely the integrated MOB functionality and the excellent sealing capability of the papers that ensure that no additional processing steps or extra coatings are needed to meet these requirements. This

results in shorter value chains and more efficient overall production times. Before these tests were conducted, the supervisory bodies in the food industry were of the opinion that the migration of mineral oils could only be safely prevented via functional barriers such as inner pouches. According to information from Eurofins, the material from BASF was the first directly applied coating able to demonstrate appropriate barrier properties. Thanks to the surface properties of the new MOB papers, they are also very well suited for downstream processing to enhance the packaging according to brand owner requirements. These types of enhancements are not always required, however. For example, tests have shown that the MOB papers also offer excellent aroma protection. This is demonstrated, for example, by protection against

the loss of camphors (peppermint) and limonene in foods packaged using these papers. At the same time, the barrier paper also protects against environmental odours that could impair flavour penetrating the packaged food from the outside. Conclusion: on the right path Both of these new Sappi paper types feature two key properties: Guaranteed mineral oil barrier protection for 15 months and excellent heat sealing capabilities. The market interest in this packaging solution is immense. This confirms for Sappi that its approach in developing a packaging solution with mineral oil barrier was the correct one: The many benefits of paper and carton as packaging materials - renewable, environmentally friendly, recyclable, compostable and biodegradable - now include providing a mineral oil barrier for improved food safety.

The new SK ERGON: when technology meets the ergonomic design

F

rom processing to packaging technologies, from ingredients to food safety up to logistics and handling: Anuga FoodTec trade show, held in Cologne last 24-27 March, is much more than this. On the occasion of this important rendezvous SMI showcased their innovations in the packaging sector, the latter having to keep up with new market trends with the aim of ensuring competitiveness, efficiency and flexibility with special consideration to energy savings and eco-sustainability.

These are the principles on which SMI most innovative studies are based and that came into effect in the realization of the new SK 500F shrinkwrapper of the ERGON series, showcased in world premiere at Anuga Foodtec. Ergonomics, technology, robustness, modularity, etc. These are only some of the elements featuring the new ERGON series. What presented in Cologne was just a preview of the new range of primary and secondary packaging machines

manufactured by SMI. By launching this new machine series, SMI is making a breakthrough in their history which has its starting point in the SK automatic packers, that is the product that has always distinguished itself for high performances, top-level reliability and operational flexibility. food sector being the stainless steel an acid-resistant material for products like tomatoes, milk, etc. The new curved style of the sliding doors installed on the SK 500 F ERGON shrinkwrapper and the new “orobie� grey color immediately recall the high level of technology typical of the machines produced by SMI. The curved style enables to position every motor externally with respect to the mechanical groups they activate, which makes maintenance interventions easier for the line operator. Furthermore, the doors closing system is equipped with a decelerating device that slows down the move in the final phase of the closure to avoid sharp collisions that may cause damages. The ergonomic frame of the new SK

ERGON enables the operator to easily manage all the activities related to both the use and the maintenance of the machinery, following the highest safety standards. There’s no contact between the moving parts and the packed product, since the threaded bars on which the adjustment devices of guides and chains run are placed in a protected area preserving them from dirt and dust. Moreover, SMI shrinkwrappers do not need geared motors, as they are activated by brushless motors (driven by digital servomotors) directly connected to the transmission shafts with the subsequent advantage of reducing energy waste, noise and maintenance.

The new ST ERGON shrink tunnel The innovative process involving the new SK ERGON did include also the primary element of the shrinkwrapper, that is the shrink tunnel. SMI shrink tunnels are state-of-the-art machinery enabling the reduction in energy consumption, the best environmental compatibility of processes and the qualitative enhancement of the packaged product. Thanks to an accurate analysis of thermodynamic events generated by the shrinking process, SMI tunnels are capable of handling in an efficient and homogeneous way the distribution of hot air flows on the whole area of the pack. In the new ST ERGON version the air adjustments have been further increased, making the heat flow direction more precise and thus enhancing the final quality of the pack. In addition to this, packs undergo an immediate cooling process which, by means of a series of fans placed at regular 1-meter intervals in the oven, fixes their shape, look and rigidness to prevent deformations or damages during the following packaging steps. At the exit of the shrink tunnel a conveyor connects the oven belt to the conveyor belts; this connection is ventilated so as to enable the right thermic transition of the pack. On the final section of the oven belt some cleaning brushes in vetronite are installed so as to remove possible dirt from the conveyor belt. SMI shrink tunnels are designed to ensure the operator an easy and totally safe access to the internal parts of the machinery during cleaning and maintenance operations which are extremely reduced if compared to traditional systems. Moreover, the new oven of the ST ERGON series is equipped with a small switchboard positioned in the lower part of the tunnel under the outlet conveyor belt, that is an area that the operator can reach easily in case of interventions. In the end, a special measuring unit placed out of the tunnel ensures an immediate and detailed check of energy consumption.

erlikon Leybold Vacuum exhibits food processing vacuum solutions at the CFIA Rennes, France and the ANUGA Foodtec, Germany. Oerlikon Leybold Vacuum is supplying the Food Processing Industry with advanced vacuum solutions. Apart from applications in Food Packaging, other food applications including Vacu- um Baking and Freeze Drying are gaining more and more momentum, now requiring increased focus on fast and energetically effective vacuum solutions that are replacing aging and high- maintenance equipment at older food processing plants. Beginning in 2015, Oerlikon Leybold Vacuum received a larger order from a Swiss equipment manu-

facturer. The company is a world leader in food technology and developed various methods of food processing under vacuum, providing substantial improvements in product and process quality. The pump models made by Oerlikon Leybold Vacuum will be implemented in the freeze-drying system of a German supplier who produces twenty tons of instant coffee powder per day. Modern vacuum pumps with their very compact design, high efficiency and the possibility to use an external frequency converter such as the RUVAC WH series match the requirements of the customer to an extremely high degree. These pumps can be integrated e.g. in current freeze drying

system leading to a considerable savings on energy cost. At the same time these pumps delivers a higher pumping speed which will give the customer a much needed upgrade in their production with in- creased flexibility. Other food processing manufacturing processes also profit from the advantages of applying modern vacuum technology, as seen in the vacuum conditioning of industrial bread baking. Here, simple physical principles are applied. At atmospheric pressure, water boils at 100 째C. Decreasing the atmospher- ic pressure decreases the boiling point. If the pressure is at 42 mbar, the water already evaporates at 30 째C, the energy necessary for baking stems from the still

FLEXIBILITY IN BULK ASEPTIC PACKAGING

T

he use of bulk aseptic packaging in the fruit processing industry is extremely popular. It can be used for puree, NFC juice, concentrates, particulates (dices, cells, pulp) etc and allows long shelf life and considerable decrease in the problems of disposal of traditional packaging methods. Taking into consideration the considerable capital cost investment of an “aseptic bulk packaging line” including a sterilizer and a filler it is important that the choice of the characteristics of the equipment be carefully selected in order to match with present (and also future) applications. Some of the points to be taken into consideration are:

FOR THE FILLER › Quantity to be packed › Type of aseptic bag/container and relevant size › Characteristics of the product and presence, if any, of fibers and particulates (in this case max size needed)

FOR THE STERILIZER › Quantity to be processed › Type of product to be sterilized and its (their) organolectic characteristics (viscosity, thermosensitivity, presence of fibers /particulates etc).

Similarly the filler can be chosen according to the criteria indicated above and can be of different models including: › 1 head filler, complete with aseptic tank › 2 heads filler › 1 / 2 heads filler for the filling of 1000 kg bags or 4 drums on a pallet

All fillers can be equipped to fill small bags in box and con be equipped with aseptic heads for 1 or 2 inches depending upon the size of particulates that can be present in the product. Flexibility is also required for the sterilization method that is usually steam but complemented by disinfectant (Hydrogen peroxide solution) depending on pH of the product to be filled. The system with variable length and layout can be linear or rotary. A pneumatically operated oblique tray denester picks up the containers, which will arrive at the chain via a chute. Format changes will be managed by a touch-screen operator panel, which enables various configurations and recipes to be saved, the structure shall be fixed directly to the filling belt. The tray transport belt is built entirely in stainless steel with a catenary and self-adjusting porter drive system according to size, and has the possibility of working step by step or continuously. Parallel to this, the belt for the advancement of the pasta to be inserted into the trays is positioned and equipped with a rapid removable mat, even if the length is greater than 10 metres. In accordance with the type of system and production requirements, a series of variable model and number dispensers are installed on the other side of the conveyor for mayonnaise, sauces, meat sauce, white sauce, etc. ... The dispensers are operated by alternatively operating lobe pumps, which ensure the homogeneous and uniform filling of the tray. The fully automated line, which however still retains its reduced size and allows for speed and productivity to be increased, is innovative; in fact,

the system can be realised for one or more rows. Thanks to the automation, which occurs via a robot, the line can also be used for cannelloni and similar products. Packaging, Verona and Martini Alimentare. Martini Alimentare S.r.l. is one of the major meat producers in Italy. Producing more than 115,000 tonnes per annum, Martini is the major player in the production of pork, a significant processor in the poultry market and is also renowned as a quality supplier of rabbit meat. Orviero Monti, Research and Development Manager at Martini believes “In the retail sector, competition is keen and packaging should not hide the product but should emphasize its quality keeping its intrinsic freshness, flavour and fragrance and make it visually appealing to the consumer”. As part of their on-going innovation programme, Martini recently launched a new high-end product range including porchetta a fette (sliced cooked pork, tagliata di pollo (thin sliced chicken) and kebab di pollo (chicken kebab), which will be of fered both under their own brand, as well as private label brands. For this new range, Martini made the decision to look at new packag- ing and opted for transparent rigid plastic trays rather than the traditional EPS tray normally used in this market sector. The reasoning behind this dramatic change was very simple as Sgr Monti explains. “We started from a very simple consideration - the amount of detailed information we must include on each pack, either as a label or as direct film printing, takes up more and more space. We are required to inform consumers about ingredients, nutritional values, food

By using transparent trays, the product is visible not only from the top but also from the sides and from the bottom. As a result, we have given the consumer three dimensional visibility!” This change in packaging format meant that Martini also needed to look for a new lidding film that would provide a suitable barrier to maintain shelf life, whilst at the same time enhancing product visibility. The chosen film was LINtop PP HB F 27 from LINPAC Packaging. MOSH/MOAH migration and food safety

Companies who pack food in recycled paperboard are facing a new challenge: to make sure MOSH/MOAH mineral oil does not migrate from paperboard packaging into the packaged food

W

hat is MOSH/MOAH? MOSH (Mineral Oil Saturated Hydrocarbon), chain and ring-shaped.MOAH (Mineral Oil Aromatic Hydrocarbon), predominately alkylated polycyclic. MOSH and MOAH are mineral oils commonly used in industrial inks, notably for printing newspapers. Since newspapers form a significant part of the paper/carton recycling stream, recycled paperboard often contains a mixture of MOSH and MOAH. A potential health hazard if ingested. Draft regulations exist concerning the migration of MOSH into foodstuffs. Although not yet directly regulated, MOAH typically contains components that are known to be carcinogens. Recycled paperboard is used not just for the individual packs, but also for carton boxes used for distribution. MOSH/MOAH migration may thus remain a threat even when virgin paperboard and lowmigration inks, or even other types of non-barrier packaging are used.

conveyors or with special inclined guides for upright bottles, minimising bottle contact to avoid any damage. evati Food Tech was established in 1966 as a manufacturer of fruit and vegetable processing systems in the so-called Food Valley area, siege of the Italian food processing and preservation machinery industry. It was therefore an easy game for Levati Food Tech to specialize in creating solutions for sterilizing and pasteurizing packed vegetables and sauces (in any kind of food containers: cans, jars and glass jars) in pressurized cookers. This equipment can manage all the aspects that make a preserved food a safe and tasty product: different cooking times, various degrees of temperature, pressure variations, variety in food container shape. Market request to sterilize not only fruit and vegetables, but also meat lead Levati Food Tech to imagine a different machine that could meet this requirement. In 1974 Levati Food Tech launches its first rotary retort. This technology is ideal to guarantee higher heat penetration in food containers , temperature uniformity during all the phases of the sterilization cycle and maximal heat exchange. In 1983 Levati Food Tech delivers its first fully automatic system of discontinuous retorts. At the same time research is carried out in Levati Food Tech to introduce important technical innovation in the branch of vegetable processing, manufacturing many lines for potato skinning and frying (chips, pellets, etc.) and for beans processing. In the 1990’s and 2000’s Levati Food Tech applies IT to retorts for checking and registration of production cycles, temperature and by calculating (F0) sterilizing or

pasteurizing effects. Information technology also allows to simplify retort use and maintenance. Levati Food Tech sophisticated retort control software makes it extremely easy for an operator to use an autoclave guaranteeing at the same time homogenous temperature (+/- 0,5°C) in each area of the retort. In those same years a boom in food package material and form variety occurred (pouches, trays, doy-pack, thermoformed products) and it intertwined with a change in eating habits: modern life became frantic but at the same time very much interested in healthy and palatable food. On one hand we assisted to ready meals development, ready to eat and easy to preserve, thanks to sterilization they do not need any preservatives or cold chain. On the other hand we assisted to a request for natural products . As a consequence Levati Food Tech started producing machines for ready prepared salad and vegetable sterilization. In 2011 LFT obtains a patent for its exclusive SRC system to be applied on PRIMA rotary retorts mod. SR 1450 and 1800 consisting of crossed water jet, automatic clogged nozzle check, big size filters, high flow rate centrifugal water pump. Combination of all these elements creates a perfect balance between centrifugal force, gravity and kinetic energy; further, uniform temperature distribution in each phase of the sterilization process is guaranteed by

the possibility to vary the angle of inclination of rotating and fixed nozzles or to keep them fixed on the same position. These characteristics result in maximum heat exchange and enhanced heat penetration in the product. Moreover, SRC system is characterized by a smaller foot print reducing sterilization time cycle by 20% in comparison with static retort sterilization time.In the last few years the expansion in packaging variety and the high turnover of flexible food containers used by our Customers has lead Levati Food Tech to study the most suitable solution to manage crate loading / unloading and tray stacking/unstacking with a single machine. In order to meet the most demanding requirements in terms of package integrity, uniform heat temperature distribution and reduced cycle time, Levati Food Tech retorts (both static and rotary) are designed according to FDA standards, the American Control Board for food administration. The products developed by Zanotti cover the needs of small to medium-sized cooling necessities, as well as the needs of logistic and storage centers: monoblocks, multicompressor stations, condensing units and cooling systems for food, but also for the aging of cold meats and cheeses, to refine wines or to dry grains in silos. The diesel unit completes the cooling chain with its split battery system or others, which were specifically designed for the short, medium to long distance transportation of food. The industrial division designs and implements equipment for ice tracks, like the new ones of Courmayeur and the Arena of Minsk, which is the biggest one in Europe. Recently, the company acquired a new contract to make a track, with Olympic features, in the new ice stadium of Kazakistan. The works will

soon begin. The installation will be implemented with the latest freecooling technologies that use the cold from outdoors at certain times of the year. Recently, Zanotti was chosen by a major airline of the United Arab Emirates to make a system for their new catering center for a value of 21 millions of dollars; in the international airport to increase the production of 260,000 meals a day that will be distributed on board of the new Boing fleet. It’s one of the biggest and most modern structures of this kind worldwide and, therefore, it requires highly reliable systems, top notch final touches and strict hygienic conditions with regards to the equipment. As a result of this important contract, Zanotti recently won the tender for the supply of a similar installation; which should be implemented in the new airport of Muscat, in the Sultanates of Oman.

The semiautomatic screen changing system then automatically inserts the screen holder back into the hammer mill. As a result, the grinding step never needs to be the limiting factor in a production process. The investment needed for a semiautomatic screen changing system is also relatively limited.

The new turbine generator system will enable further improvements to the already world class efficiency of the Climeon Ocean solution. The Climeon Ocean system uses low temperatures between 70 degrees and 120 degrees Celsius and converts this energy into electricity. uality control requirements for food production and food processing are constantly increasing. Modern FT-NIR spectroscopy presents the industry with many possibilities for fast and simple quality control in the laboratory and can also be used to monitor the production line directly. This allows for the cost-effective analysis of different quality parameters in all relevant products, ensuring quick quality control at the individual stages of production.

Quality control of frying oils Deep-fried foods, such as chips, fish products, doughnuts and crisps, have become a substantial part of our diets today. This calls for a quick and simple method for closely and continuously monitoring the degradation in quality of deep-frying oil and thereby detecting harmful byproducts that develop from oxidation and polymerisation in particular. Various criteria are applied to determine when the oils need to be changed. For instance, the total polar materials (TPM) and polymerised triacylglycerol (PTG) levels are defined using gel permeation chromatography (GPC). Regulations in many EU countries state that a deepfrying oil should contain below 24-27 % TPM, and 16 % PTG. However, no single parameter can be considered conclusive. A variety of tests should always be consulted to measure the by-products resulting from both oxidative and thermal processes in the oil before a valid conclusion can be drawn. Using FT-NIR spectroscopy, these parameters, as well as other important readings such as acid value and Anisidine value, can be established from one single measu-

Furthermore, the fat content is a common criterion for value-based payment to suppliers. In this respect, FT-NIR spectroscopy represents a valuable tool for assessing the raw materials going into the product. The parameters of fat, protein and water can be determined simultaneously using just one measurement. The results can be used as a basis for decisions about production procedures. Steel Belts Are Top of the Milk for Tetra Pak

Tetra Pak has recently launched the Tetra Evero Aseptic onelitre - the first aseptic carton bottle for milk.

T

he new carton combines the easy handling and pouring of a bottle with the environmental and cost advantages of a carton. It is initially being aimed at the ambient white milk market, including nonoxygen sensitive enriched products, as well as flavoured milk and cream. Unlike traditional carton materials, which are aseptically sterilised before they are formed into shape, the Tetro Evero Aseptic is pre-formed and not flat-packed, meaning it requires an alternative approach. The majority of existing technologies for sterilising performed shapes rely on a gas-condensation process. This process involves the gas condensing on the material surface, but this is known to be complex and difficult to control. The Tetra Evero Aseptic, however, uses a new gas-phase sterilisation technique which involves the cartons passing through a unique aseptic chamber in pairs where they are exposed to hydrogen peroxide. The gas comes into contact with the whole preformed package - inside

The DIMA COMPACT 500 machine has an adjustable production capacity up to 500 kg/h and is suitable for medium and small pro-

duction; it can be equipped with interchangeable moulding parts for the production of various types of cheeses. Mozzarella, from 1 to 500 grams, is obtained with various moulding drums. Cylindrical products, like pizza cheese up to 5 Kg, are obtained thanks to a conveyor with 2 forming tubes. Other special products like “scamorza” cheese strings”, “sfoglia cheese” ... are all and easily possible to be produce, with the same machine! COMPACT 500 consists of a slicing section, where the curd blocs

are sliced by means of a special rotating disc. The curd, exiting this area, is fed to the cooking section of the machine. Here, the product is moved forward by means of two variable speed augers, and is heated and moistened by the continuous introduction of hot water. Water temperature, quantity and level are all adjustable. By means of the augers, the curd is then transferred to the stretching section which is performed, then, by means of tow variable speed stretching arms. Even in this section, it is possible to adjust the inflowing water quantity according to the processed product. The pasta filata, which comes out through a special unloading opening, is continuously fed to the moulding section, designed for the production of spherical mozzarella or other kinds of cheeses.

ARCK Spa manufactures plants for the food and beverage industry with a particular attention to the storage, heating/cooling, pasteurizing and concentration of the fruit juice and milk/whey. FARCK concentration plants can be used with excellent results both for pure and rectified musts and for fruit juices and can be coupled with all desulphurization columns with a very high energy saving. FARCK uses the principle of the Vapour Thermal Recompression and manufactures plants with reduced consumptions (less than 1 Kg. of steam to evaporate 10 Kg. of water). The circulation of the product is “falling film”, with vertical pipe bundle exchangers, condensate separation with elimination of non-polluting liquids and cleaning of the plant by means of forced circulation in short time. The capacity of the evaporators varies from 1.000 or 2.000 lt. of evaporated water to 50.000 lt/h of evaporated water (big plants with 3-6 effects). An important characteristic of FARCK evaporators is the centralization of all controls into a control synoptic board that allows the driving of the plant by one operator alone. All FARCK evaporation plants are realised in monobloc in order to be transported and installed in short time. Thanks to many years of experience in this sector FARCK Spa can design and manufacture plants with very low consumptions thus respecting the environment. FARCK Spa manufactures also plate exchangers, heaters coolers and pasteurizers for food liquids. Our technical office is able to calculate the exact number of plates and sections necessary to guarantee the best energy saving by respecting the product to treat; the plate exchangers are completely manufactured with AISI 304 and 316 stainless steel and have a capacity from 500 to 40.000 lt/hour, with one or

more cooling or heating or pasteurisation sections, with or without holding tubular sections , provided with temperature control board and positioned on bedplates in order to reduce space and time assembly. FARCK Spa is also specialised in the manufacturing of S/steel tanks with capacity up to 200.000 lt. for the storage, cooling or mixing in general. It is possible to add special stirrers for the movement of high density and viscosity products, manholes with micro-switch, breathers, rotating cleaning balls, manifolds, gangways, railings; everything realised following all accident prevention regulations. Thanks to the high level of its technicians. FARCK Spa manufactures also Spray- drying plants for the pulverisation of the concentrated liquids coming

from evaporators and their transformation into powders with a long-life conservation. Compared to traditional dryers, the product coming from a FARCK plants has better qualitative characteristics : lower density, no hygroscopicity, better solubility, no hardening in packaging and so a better use in the industry. ilk is broadly acknowledged as a complete staple: nature created a unique way of feeding babies safely and completely, providing nutrients, proteins and essential fats in equal proportions. UHT high-temperature treatment enables from the one hand to extend the shelf-life of the product, while from the other hand it reduces its vitamin content and changes its sensorial profile: UHT milk is characterized by so-called “cooked” taste, due to sugar caramelization, volumes to be transported remain the same and therefore the problems connected to the consumption of fresh milk remain.

interpack 2017: all leading office-holders re-elected to Advisory Council

riedbert Klefenz, President of the Packaging Technology division of Robert Bosch GmbH, is the old and new President of interpack. He was unanimously re-elected to this office in April at the constitutive meeting of the Advisory Council for interpack 2017. Both of the Vice-Presidents who held office in the 2014 council were re-elected as well: Christian Traumann, Managing Director of MULTIVAC Sepp Haggenmüller GmbH & Co. KG, and Bernhard Borgardt, Managing Director of Ostedruck Bernhard-J. Borgardt GmbH & Co. KG, who is also a member of the steering committee of the European Plastics Converters - EuPC association, a past president of IK (German Plastics Packaging Association), and a board member of GKV (the Central Federation of the Plastics Processing Industries in Germany). This first meeting of the Advisory Council of the world’s most important trade fair for the packaging sector and related processing industries represents the official kick-off of the strategic orientation phase and concrete contentrelated preparations for the trade fair. “The constructive collaboration with the Advisory Council is a key ingredient for a successful interpack. Close interaction with the leading companies in the industry is an essential prerequisite for precisely aligning the range of products and services offered to the needs of our exhibitors and visitors,” states Werner Matthias Dornscheidt, President and CEO of Messe Düsseldorf. In its second edition, “components for processing and packaging 2017” will be staged with a revised concept. This event for suppliers to packaging technology producers will be held at a central location in the exhibition centre in the temporary Hall 18. It will remain open for the complete duration of interpack. For exhibitors, the online registration phase will start in October of this year at www.interpack.com and www. packaging-components.com. The official closing date for registration for interpack is 29 February 2016.

Mit überarbeitetem Konzept geht die components for processing and packaging 2017 zu ihrer zweiten Auflage an den Start. Die Veranstaltung für die Zulieferer der Anbieter von Verpackungstechnologie findet an zentraler Stelle im Messegelände in der temporären Halle 18 statt. IPACK-IMA is among the most attractive international exhibitions for suppliers of technology and materials for Processing & Packaging. It will be held in 2015, May 1923 at Fieramilano, Milan - Italy. iba, the world’s leading trade fair for bakery, confectionery and snacks, takes place every three years at the Fairground Messe München. The trade fair encompasses all the products and technologies that are relevant in the daily operations of bakers and confectioners of all company sizes as well as of restaurateurs and decision makers from the food retail sector. The range of topics extends from raw materials, ingredients, baking aids and half-finished products to production technology, process optimization, small and large machines and computer systems to complete interiors of bakeries, cafes and pastry shops, sales and outof-home consumption. Around 70,000 trade visitors from more than 160 countries came to visit iba 2012. Overall, over 1,200 companies from 58 countries exhibited. be evaluated. At the end, the best bakers will be given a chance to delight the audience with their skills. All four bakeries have similar facilities. Ovens, equipment, machinery as well as the raw materials to be used will be identical. The participants have the freedom to choose their recipes, designs and preparation methods. On all three days, the competition will start an hour before the fair at 8:30 am and end at 4:00 pm. Visitors can marvel at the results at the stand of the German Baker’s Confederation in Hall B3. An international jury consisting of Günther Koerffer (Sweden), Erwin Heftberger (Austria), Werner Hürlimann (Switzerland), Franz Schuster (Italy) and Wolfgang Schäfer (Germany) will evaluate the competitors’ pieces. The overall winner will be honoured on the end of the third day, Monday, 14th September at 5:30 pm at the iba forum in Hall B3.

Die Fachmesse fasst alle Produkte und Technologien zusammen, die im Alltagsbetrieb von Bäckern und Konditoren aller Betriebsgrößen, Gastronomen und Entscheidern aus dem Lebensmitteleinzelhandel relevant sind. Das Themenspektrum reicht von Rohstoffen, Zutaten, Backmitteln und Halbfertigprodukten über Produktionstechnik, Prozessoptimierung, Klein- und Großmaschinen und EDV-Systemen bis hin zu kompletten Inneneinrichtungen von Bäckereien, Cafés oder Konditoreien, Verkauf und Außer-Haus-Verzehr. Zur iba 2012 kamen rund 70.000 Fachbesucher aus über 160 Ländern. Insgesamt stellten über 1.200 Firmen aus 58 Ländern aus.

odern Bakery Moscow, the most important networking platform for bakery and confectionery industry in Russia and the CIS, takes place in Moscow IEC Expocentre April 22-24 2015.
