1 pound Macaroni

In a large pot of boiling salted water over medium heat, add the pasta and cook until al dente. Drain the pasta and reserve.

chopped 2 cloves garlic, chopped Freshly ground black pepper 5 tablespoons all-purpose flour 1/4 cup white wine 4 cups heavy cream 1/2 teaspoon paprika 1/4 teaspoon cayenne pepper 1 bay leaf 4 cups shredded sharp Cheddar足 8 oz chopped lobster meat, cooked 8 oz chopped shrimp, cooked 1/4 cup panko bread crumbs 1/4 cup freshly chopped parsle足足y leaves 1/2 cup parmesan cheese 14

Add 4 tablespoons butter to a large pot over medium heat. Once the butter shimmers, add the shallots and garlic and saute until translucent. Season with salt and pepper, to taste. Add the white wine and reduce, by half, about 2 minutes. Slowly add the cream, whisking well to remove any lumps. Add the paprika, cayenne, and bay leaf. Bring the cream up to a simmer and turn the heat to low. Let reduce until the cream is thick and can coat a spoon, about 5 to 10 minutes. When thickened, remove the bay leaves. Stir in the grated cheese, a handful at a time, combining well after each addition. Add the chopped lobster & shrimp to the sauce and stir well. Add the pasta and stir. Add to the greased baking dish and sprinkle with the panko crumbs and parsley. Bake for 25 minutes. Remove from the oven and let rest for 10 minutes before serving. Sprinkle individual servings with parsley & parmesan cheese. hiltonhead.com

Winemaking in Chile dates back five centuries, tracing its roots to a time when Spanish Conquistadors first brought grapes to the New World colonies of South America. Despite being politically linked to Spain, Chile’s wine history is mostly influenced by French, specifically Bordeaux, wine making. Prior to the Great French Wine Blight, which decimated French vineyards in the 19th century, wealthy Chilean land owners were influenced by their visits to France and began to import French vines to plant.

and Malbec. Chilean winemakers have developed a unique style for their reds, producing vintages that are dark in color, yet easy to drink because of their soft tannins. Chileans have also found a way to produce a Malbec grape that has enough character to stand on its own. Malbec is used in limited quantity in famous Bordeaux blends, but is rarely bottled by itself. Interestingly, it was the exportation of these vines to the New World that saved the French vineyards from the Great Blight. Once it was discovered that the roots of the American vines were resistant to the blight, these roots were grafted onto the French plants, and the French vineyards were replanted with the new European-American grafts. Today, Chile has a good reputation for high quality wines at reasonable prices. However, this was not always the case. Prior to the 1980s most Chilean wines were considered low quality and were mostly consumed locally. As people became aware of the excellent growing conditions in Chile, foreign investment in infrastructure and technical expertise started to pour into the area. Although Chile exports a large variety of red and white wines, given their history, it is not surprising that they are mostly noted for their French red varietals. Some of the most acclaimed French reds from Chile are Cabernet Sauvignon, Carmenere 20

Although mucky and smelly, the salt marsh is an important part of the Lowcountry. In actuality, the salt marsh produces more food for the environment than rain forests. The green grass that dominates the marsh is called salt marsh cord grass or Spartina. When this cord grass dies each winter and decomposes, its nutrients are released into the marsh mud, creeks, streams and even into the ocean. These nutrients begin the food chain for the entire Southeastern coastal area. So, the next time you enjoy a meal of shrimp, mussels, oysters, blue crab, stone crab or saltwater fish, thank the muddy salt marshes.

ISLAND BEACHES PUBLIC BEACH ACCESS:

All of the beach is public, from the ocean to the high water mark. Access to the beach, how ever, is often private. The Town of Hilton Head Island provides nine beach accesses: Alder Lane Beach Access, off South Forest Beach Drive; Coligny Beach Park, off Coligny Circle; Driessen Beach Park, at the end of Bradley Beach Road; Chaplin Community Park, off Wm. Hilton Pkwy.; Fish Haul Park & Mitchelville Beach Park, at the end of Beach City Road; Burkes Beach Access, at the end of Burkes Beach Road; Folly Field Beach Park and Islanders Beach Park, both off Folly Field Road.

PARKING & FACILITIES:

There are 23 metered spaces at Alder Lane; 54 metered spaces at Folly Field and 13 metered spaces at Burkes Beach Road. The parking fee is a QUARTER for each 15 minutes.

Additionally, there are 207 spaces at Driessen Beach Park for long-term parking. The fee is a QUARTER for each 30 minutes during the week. Parking spaces at Islanders Beach Park are ALWAYS reserved for annual beach passes. Parking at Driessen Beach Park for annual beach passes is reserved from 8 a.m. to 3 p.m. Parking is FREE at Fish Haul Park, Mitchelville Beach Park and Coligny Beach Park. Handicap parking is available at no fee at all beach parks.

Parks. The boundaries will be clearly marked on the beach and in the water. During the beach season, lifeguards are stationed in each of the designated swimming areas for assistance and beach information. Please ask a lifeguard before entering the water if the yellow caution flag is flying.

Hilton Head’s beaches are marked with signs to let emergency responders know where anyone who needs help is on the beach. They are also useful to help you find your place if you are lost on the beach. It is helpful for everyone in your group to know the marker where you are staying, so that you can return on your own or tell beach patrol personnel, so they can get you back to the right place. The markers sit near the dune line.

These currents can take you up and down the beach quickly and cause you or your kids to get lost. – Don’t let your kids swim unsuper- vised, even in guarded areas. – Don’t swim alone. Use the buddy system so that someone always knows where you are so they can get help if needed. – Don’t overestimate your swimming ability. Stay in chest deep or less water to insure you don’t

get stuck in water over your head. – Don’t rely on flotation devices. – Swim parallel to shore if you want to swim long distances. – Don’t swim against the current. Swim across the current to escape the pull. – Always swim sober. – Don’t dive into unknown water or shallow breaking waves. Always go feet first. This will help you avoid spinal injuries.

DESIGNATED SWIMMING AREAS:

WATER SAFETY TIPS: – Don’t enter the water if you can’t swim. – Swim near a lifeguard. United States Lifessaving Association statistics show that substantially more drownings occur in areas where there are no lifeguards. – Ask the lifeguard about any dangers in the water or on the beach, especially if he or she is flying a yellow caution flag. – Be aware of direction and strength of longshore currents. 60

BEACH SAFETY TIPS: – Apply plenty of sunscreen and reapply it throughout the day. Remember trouble spots, such as the ears, feet, and nose. Even cloudy days allow the sun’s harmful rays to cause sunburn. – Wear sunglasses. The sun’s rays can cause serious eye damage. – Drink plenty of water. The hot summer days can dehydrate you very quickly. – Be aware of the rules and regulations of the beach. Signs are posted near most beach accesses.

– Don’t leave your kids unsuper- vised, even in guarded areas. They may wander and become lost. – Find the nearest lifeguard if you or someone in your group becomes lost. – Report any hazardous beach conditions to the nearest lifeguard. – Know the name of the beach or hotel/condo and the beach marker number where you are staying, so the lifeguard can better assist if you are lost.

– There are often jellyfish and stingrays, as well as other sea life in the water, which may sting or cut a person. Other problems may occur on the beach or in the water which may require first aid. In any situation where first aid is needed, find a lifeguard or seek further medical attention. – Report any hazardous water conditions to the nearest lifeguard. – Call or wave for help if you are in trouble.

Fall is redfish season, much to the delight of local fishing aficionados.

Fall is a special time here in the Lowountry for many reasons: the weather is better, the crowds are thinner… and the bull redfish swarm inshore waters. The bulls, ranging from 20 pounds upwards to the 50-pound mark, are here or offshore all year. However, at this time of year, they come close in big numbers, with catches of 20 or more fish in a trip not at all uncommon. The strength of these fish is incredible, rivaling any other fish of its size, short of an amberjack or tuna. I usually fish heavy spinning reels with 50-pound braid and, even with a heavy drag, they will strip a line off at an alarming pace. Incredibly, they often do it several times in a battle. I have fished lighter tackle, but the lengthy battle takes a toll on these big fish and they must be released. The law requires that everything over 23 inches must be returned to the water.

known as “spot tail bass” or “puppy drum.” Officially, their proper name is “red drum.” Coloration is usually a deep burnt orange or copper across the back with a single spot at the base of the tail. Some fish have multiple spots from the tail to the middle of the fish. A strong broad tail and thick shoulders give it all the horsepower it needs to make your day. Good conservation and our local mariculture center have provided some of the best stocks of redfish I have seen in 40+ years of fishing this area. Al Stokes and his crew at the mariculture center have been boosting the local population with their work for years.

Deer are a common sight throughout the majority of North America. These graceful, agile creatures can run at speeds of up to 30 mph. White-tailed deer are excellent swimmers as well, which is why they can be found on a number of South Carolina’s sea islands and barrier islands. White-tailed Deer, known as Odocoileus virginianus, can be seen throughout southern Canada and the United States. They inhabit mixed young forests, old fields and croplands. During the spring and summer, their coats are a reddish tan with short, thin, wiry hair. The deer’s winter coat is much thicker and may appear grayish or even bluish tan. This species of deer has white patches on the eyes, throat, belly and, most notably, tail. South Carolina white-tails, a smaller variety, typically weigh up to 175 pounds. Deer throughout the rest of the U.S. have been noted to weigh up to 300 pounds. Male bucks grow antlers they will shed annually. The size of the antlers is directly correlated to the nutritional health of the deer, with larger antlers seen on very healthy individuals. Breeding season for white-tails in the South begins in August and will last through January. Deer are polygamous, with one male breeding with several females. A female doe’s gestation period lasts for up to 210 days. Young females will commonly give birth to one fawn; as they become older, females may give birth to twins. Fawns will nurse for up to eight months and stay with their mother for up to a year. White-tailed deer reach their sexual maturity at a year and a half. Young males grow small nubs known as buttons during their first year, with proper antlers beginning to develop at the age of two years. Growing antlers, usually developed in the summer, are soft 66

and covered with short hairs known as velvet. By the late summer and early fall, the antlers will harden. Males are known to rub off the velvet against trees and other coarse objects. They typically shed their antlers between December and February. White-tailed deer are extremely social animals. Traveling in groups, known as herds, provides them with a sense of safety. They are able to communicate with each other predominantly through scent. They also use stomping or tail flicks as a form of subtle communication. Their white tail will flick upwards as a flag for other deer, to signal that danger is close. White-tails forage mostly at dusk and dawn, but can be seen eating during the day as well. They are herbivores, consuming a wide variety of nuts, mushrooms, fruits and foliage. They have a four-chamber stomach, which aids in the digestion of roughage. South Carolina’s deer hunting season is one of the longest seasons in the United States, beginning on August 15 and lasting through January 1. It is important for the state of South Carolina to cull the population of deer to keep this species under control. Issues of overpopulation can cause birth defects and malnutrition. At times, the imbalance of males to females can also cause malnutrition and reproductive stress on the species. October on Hilton Head is a time of changes. The air begins to cool, the water becomes clearer, the spartina grass dies off and the sunsets get longer. October is also an important time for the comings and goings on migratory bird species on Hilton Head. Summer visitors, such as the Kentucky Warbler, begin their long journey south, while winter guests, such as the Swamp Sparrow, are just getting into town. For some birds, the beautiful natural habitat of Hilton Head and the surrounding areas are too good to give up and, over time, they have taken to staying all year. One of these bird species is the White Ibis, which is commonly seen in large flocks in the fall and winter. The White Ibis is a medium-sized bird, standing around a foot tall. Adults are almost all white, with black tips on the end of their wings, usually only seen while the bird is in flight. Their most distinguishing feature is their long, curved beak which ranges in color from orange to pink. Males of the species look identical to females, but are about 35 percent larger. White Ibis nest in large colonies along with other birds, such as anhinga, herons, egrets and storks. These colonies can number over 10,000 birds. Nesting occurs in the spring and summer, and by fall many of the juvenile Ibis have left the nest and 68

The White Ibis is highly adaptable, in part due its varied diet. Ibis spend most of each day hunting for food, either by waving their beaks in shallow water or digging their beaks into sand and mud for crabs and other burrowers. They eat all kinds of seafood including crabs, shrimp and small fish. They also eat land-dwelling species such as spiders, ants and mosquitoes. Historically, North American White Ibis spent their winters in the Florida Everglades and numbered in the millions. Early European settlers ate the Ibis, after seeing Native Americans do so. These settlers remarked that, due to its diet, the White Ibis tasted like fish. Over the last 30 years, drought and development surrounding the Everglades have caused the Ibis, along with the Wood Stork and Roseate Spoonbill, to spend more time further north. This northward trend has enabled these birds to establish year-round habitats in our local area. Recovery Shots By Doug Weaver, Palmetto Dunes Oceanfront Resort

With practice, any player can recover from awkward lies.

Recovery shots from awkward lies are tricky, but with practice any player can become an accomplished escape artist. Walter Hagen, the five-time PGA Championship winner, mentioned that even in the tournaments he won, he would embarrass himself by hitting terrible shots that made him angry enough to kick his bag and shout. However, he got over it and was thinking clearly before he executed his next shot, which was often brilliant. While Hagen expected the best, he was prepared for the worst. Sidehill lies are a worst-case scenario for many golfers because they are rarely practiced. Here are some tips on preparing for those shots, so you can perform a Hagen-like recovery when you find yourself in an awkward lie. For all shots hit from uneven, sidehill lies, the same basics apply. First, find your balance by leaning on your toes, then shifting your weight to your heels. Find a point in between where your balance feels like it is under your shoestrings. Once you find your balance, make multiple practice swings to allow your body to adjust to the feeling of that particular shot. When you're ready to hit, ask one of your playing partners to watch where your ball goes so you can focus on making solid impact and swinging under control. In addition to these general tips, keep the following specifics in mind for these different types of trouble shots: 1. Ball Above Your Feet Grip down on the club in order to 70

maintain your basic posture. You may lose distance, so consider taking more club. Remember that the ball flight tends to go in the direction of your body, so for a right-hander you’ll probably hit the ball left. Your swing will feel flatter, but trust it and make a confident, controlled swing. 2. Ball Below Your Feet Take one more club than usual from that distance and avoid allowing your weight to shift to your toes. Your swing plane will already be steeper than normal, making it easy to lose your balance and fall forward if your weight is on your toes. Righthanders should aim to the left of the target to prepare for the ball to go right. 3. Forward Foot Higher Than The Back Foot In this scenario, your backswing feels easy because your club and body are moving downhill. However, your downswing and follow-through must be exaggerated to help you transfer your weight to the forward foot. Practice getting to your finish with your normal tempo and rhythm. This shot will fly higher and shorter than usual, so take one club more to compensate. 4. Forward Foot Lower Than The Back Foot This shot can go farther than you would imagine. The key is to practice your backswing so that you get the normal weight transfer to your back foot. After impact your weight will transfer forward down the hill and you may lose your balance, but this is OK. Allow your swing to finish and take a step forward down the hill. RECREATIONAL PATHWAYS GUIDE The Town of Hilton Head Island provides nearly 60 miles of public pathways and nature trails for the enjoyment of pedes trians and cyclists. At low tide, the Island’s 12 miles of beaches are ideal for biking. Public beaches are indicated on the Island Events’ Island Map. Our map also shows the existing public pathways. Many kiosks are located along the pathways with an Island-wide map on one side, and a localized map of the area on the other.

RULES FOR THE ROAD:

 Please obey all traffic signals and pathway markings. Stop signs must be obeyed for safety. Bicycles are vehicles and must obey SC traffic laws.

 Travel the pathways at speeds that allow for the safety of pedestrians and other users.  Never ride within the roadway against traffic. State law requires bicycles to drive like all other vehicles.

 Please do not ride on roads where a pathway is available.  Please ride single file and keep a safe distance from other bicyclists.  WATCH OUT FOR MOTORISTS! Motorists must yield to pedestrians and bicyclists within marked crossings, but they may not see you.  Please yield to pedestrians. When resting or stopped, please move off the pathway.  Most sections of the pathways are not illuminated. If you must bike at night, please wear light-colored clothing or carry a flashlight. Bicycles must have a red rear reflector and a headlight when biking at night.  When approaching slower pathway users from behind, please sound your warning device, or call out, “Passing on your left.” Always pass on the left.

 Bicyclists should always wear a helmet, especially children 12 and under.  Make eye contact and use hand signals. Assume other bicyclists and motorists don’t see you. Hand signals tell motorists and other path users what you intend to do and will ensure everyone’s safe enjoyment of the pathways.  Be courteous, alert and predictable.
