IAPAC, SIMA Hold a Mayoral Race Debate and Some Sparks Fly BY JAWAHAR MALHOTRA HOUSTON: In this local election season, the most watched contest for Mayor of the City of Houston has garnered lot of attention citywide, with the seven major candidates sparring in debates held on television or in smaller venues in front of special interest groups or communities. Just such an event was held this past week, on Wednesday, September 16 at India House under the auspices of the Indo American Political Action Committee and the 12 year-old Small Independent Motel Owners Association which represents over 175 motel and hotel owners, the majority of whom are South Asian. All the candidates – Chris Bell, Steve Costello, Adrian Garcia, Ben Hall, Bill King and Marty McVey - spent over an hour responding to the questions thrown out at them. Bell had to leave for another function 30 minutes into the event and Costello arrived about 30 minutes late from another event. Another major contender, Sylvester Turner, was unable to attend and one of the lesser known candidates, Rafael Munoz Jr. asked to speak for a few minutes at the tail end. With widespread interest in some regulations that have been discussed within city circles, such as a mandated minimum wage hike and crime control, attendance at the event was high for a weekday night, with parking overflowing into the vacant grassy space. IAPAC President Karun Sreerama and incoming President Hasu Patel, who is also on the SIMA Board, made a concerted effort to get the word out and were rewarded with a full hall of about 350 people who attended the event. The debate was moderated by Judge Ravi Sandill who developed a set of questions which he asked of each candidate, giving them a time limit to answer,

strictly enforced by timekeepers who gave 15 and 5 second warnings to each respondent. The system worked well and managed to keep the candidates focused. Each was able to give a 2 minute opening and closing statement, but no questions were permitted from the audience. Though there were many similarities between the candidates on several issues, Hall and McVey tried to differentiate themselves from the pack by focusing on their business acumen and in the process traded some sharp personal barbs on at least two separate issues. In his closing statement, Hall tried to reinforce why his perspective on city politics was so different given his business interest in media and law practice and McVey emphasized his international trade experience and frequent visits to India for his work with USAID's Board for International Food and Agricultural Development food security projects in India, Bangladesh and Nepal. Prior to the debate, attendees were

asked to take an informal survey of their choices for Mayor and

rate the issues of importance (results are in the box below). Appetizers and a buffet dinner

Poor Kids Take a Magical Bus to a Transformative Journey for a Better Future

BY JAWAHAR MALHOTRA HOUSTON: Almost four decades after the British ceremoniously exited the Sub Continent and left behind a shattered but euphoric India, another Britisher came to the work in the city with the Gateway of India at its shores and was shattered and appalled by the depths of poverty that he saw. Deeply overcome with a desire to raise them out of their misery, he sought his own independence from his comfortable executive position and began to work with the poor in Mumbai. “I came to Bombay 30 years ago (as COO of Cox and Kings, then India’s largest travel company) and this city of 25 million had a huge impact on me,” said Matthew Spacie, 48, as he sat onstage in an armchair being interviewed by the screen actor Manoj Bajpayee. “I started a search on how to help poor people and it led me on a journey to understand why people live in poverty. I couldn’t understand why India had tremendous resources but there were people living on the streets.” One day, Spacie recalled, he saw fifteen boys loitering in the streets

and, on an impulse, he started to coach them to play rugby, a sport he himself played regularly at the Bombay Gymkhana. He built on this experience to instill discipline, team spirit and hard work in them and was amazed that he was able to help each one of them find a job within 12 months. He was beginning to formulate a way to address the roots of poverty and came up with the idea of Magic Bus in 1999, launching it in the Dharavi slum of Mumbai. The Idea has changed his life and those of 450,000 kids who have gone through his education and vocational centers in the past 26 years. He resigned his job in 2001 and though still a British citizen, settled in Mumbai, married an Indian woman, Ashima Narayan, a photographer and film-maker (Meri biwi Hindustani hai. Meri biwi bohot sundar hai, he said in the smattering of accented Hindi he speaks) and lives in Lower Parel. He was recognized for his work and knighted as a Member of the British Empire in 2007. Spacie was in town for the second annual Magic Bus Benefit Gala held at the Westchase Mar-

riott hotel on the city’s westside, held on Saturday, September 19 and attended by around 350 people. The event was organized by the Houston Chapter of the Magic Bus (other chapters are in New York, the UK, Germany and Singapore), with President Amit Bhandari, the head of the BioUrja Trading, LogiBo and West Plains fuel commodity supply firms and his Board Swatantra Jain, Jugal Malani, Dr. H.D. Patel, Dr. Sunita Moonat, Gopal Savjani, Brij Kathuria and Mona Parikh. The event opened up with a montage of Manoj Bajpayee’s films shown on three screens inside spherical frames, an artifice contrived by the ever inventive mind of the technically savvy Brij Kathuria, who spent countless hours on the stage details. Bajpayee had flown in from Mumbai especially to attend as guest of honor (see page 12) and strode up to the stage to receive applause and took his place in the armchair setting to conduct the interview of Spacie. Emcee Pooja Lodhia, a reporter from KTRK ABC13 TV, radiant in a gold thread and sequined sari introduced both Bajpayee and Spacie as well as the other surprise guest who had flown in from Mumbai, Sangita Pal, a young 18 year-old from the slum of Dharavi who has graduated from the Magic Bus system and hopes to go onto college. Bajpayee expressed admira-

tion of the work that Spacie has done in creating Magic Bus, adding that years ago, when he first went to drama school, his mentor was Barry John, an expatriate Britisher and how coincidental it was that another Britisher was now mentoring young people on their road to success. Spacie explained how 450,000 children had so far joined Magic Bus and how it was able to channel their ambitions so that there wasn’t a mismatch with their abilities, how Magic Bus was able to bring people together and encourage them to send their kids. “We have built 30 vocational centers so far and next year hope to add another 50,” he added. Bajpayee shifted his attention to Pal asking her about her experience as a child born in Dharavi who had joined Magic Bus when she was 7. “Before Magic Bus, my life was limited to the home, and now I have learnt leadership skills,” she said, “and how it can take me further.” She explained how she lives with 6 others in one-room in the slum and is currently in college. “My friends

who are now married and have kids wish they had joined Magic Bus too,” she added. Changing roles, Spacie then interviewed Bajpayee about his life journey to become an actor which he answered with much appreciated honesty. After the interview, Bhandari and Spacie opened the floor for questions from the audience and a donation drive which Bhandari pledged to match dollar for dollar, adding that they had already collected $280,000 before the gala. Figures released later showed that the event had mustered $480,000 for Magic Bus. The evening rolled into dinner, which, along with the appetizers, was catered by Dawat Catering and an entertaining bhangra segment by the Rice University Student group. Ambiance was provided by Nalini Kannan of Décor One and by music from DJ Nish Naik.

BY JAWAHAR MALHOTRA HOUSTON: In sharp contrast to the glitter and paparazzi laden Tiger Ball held in the Spring, the Asia Society’s Night Market electrifies the block on Southmore Blvd, between Caroline and Austin, converting it into a mini-recreation of the sort of frenzied atmosphere you’d experience at a urban patch of a large Asian city. The result is a sanitized mix of food trucks catering to tastes from Thai to TexMex; vendors under red pop-up tents lining

the street, a small band playing to one corner of the lawn and crowds – mostly casual with young kids, pet dogs in tow - bustling between the spots and up and down the street which was cordoned off at each end this past Friday, September 18 in the evening till 9pm. An idea that was unveiled in 2013 the year after the Asia Society Texas Center was opened; the Night Market has become the other cornerstone of the Center’s outreach

Yes, it was the 3rd Ganesh Mahotsav organized and celebrated by Telugu Radio Hungama at Shri Radha Krishna Temple. The Hungama’s Ganesh Mahotsav was celebrated with great enthusiasm and participation. The preparations of this sacred festival began months in advance. The committee members and volunteers spent hundreds of hours in planning and implementing which led to a grand success. The 6 feet Ganesha idol seen on the actual day of celebration was specially made and shipped from Hyderabad, India. The stage was decorated by Decor One which provided a beautiful backdrop for Lord Ganesha. Sridhar Dadi, on behalf of Radio Hungama team extends his heartfelt thanks to Ms. Nalini of Décor One. Sridhar Dadi invited Indian community leaders, sponsors, Hungama Team and his family to light the lamp as a start of the occasion, followed by the elaborate execution of traditional rituals under the guidance of our Hindu priest Shri Hanuman Swamy of Sri Rama Jaya Niketan. A very special thanks to Shriman Hanuman Swamy who performed the two Samuhika Poojas at 10:30 AM and 4:30 PM respectively. BY SANCHALI BASU SUGAR LAND: Harish Jajoo kicked off his much anticipated mayoral campaign on Thursday, September 17th, at the Fort Bend Chamber of Commerce. The general election for the mayoral seat will be held on Saturday May 7, 2016. The current mayor, James Thompson, has reached his term limit and cannot seek re-election. The room was packed with friends, neighbors and wellwishers to support the fearless, conservative, experienced leader. Hard working campaign officials greeted the attendees at the entrance. Refreshments and

beverages were offered to the guests. Jajoo, who has served on the city council in Sugar Land since June 2011 is currently serving his third two-year term. He is the first South Asian-American in the history of Sugar Land to run for mayor, even though Sugar Land has long been a center of the Asian-American and Indian-American community of Greater Houston. Harish Jajoo is a consulting engineer and a registered professional engineer in the state of Texas. He previously managed public works and engineering for the City of Houston for 29 years. As part of the Sugarland city council, he has played an integral role in many economic development and infrastructure projects. He is also

a Certified Flood Plain Manager in the State of Texas and is active in several professional and community activities and organizations. Jajoo is a fiscal conservative who strongly favors lower taxes and disciplined spending, and is an advocate of public safety. At his campaign kickoff he said, “As a leader of the city, providing a superior quality of life to our residents has always been my priority. I aim to provide top-notch public safety, robust infrastructure, and economic development, and to make Sugar Land a destination for visitors. I am always looking to give the best value to Sugar Land's taxpayers.” He and his wife Shashi have lived in Sugar Land since 1985 and have two grown sons. In previous elections, he has proven that he can get the South Asian community to come out to vote. Shashi and Harish took the center stage to thank everyone for their attendance, asked for their support and encouraged everyone to vote. He emphasized that he was running because he knows that

His Concern for Others’ Plight Brings Bollywood Actor Bajpayee to Houston BY JAWAHAR MALHOTRA HOUSTON: In the first minute that you meet him, you feel he could be your college buddy, wearing a grey Kenzo Paris t-shirt, with whom you could share a few moments and chat comfortably. In fact he was someone’s former college buddy: Rajneesh Chaudhary’s from the days of Ramjas College in Delhi University. “Though we didn’t study the same courses, we knew each other and got to become quite friendly,” explained Chaudhary who has lived in the Bayou City now for the past six years and is a practicing attorney. After college, they went their own ways but stayed in touch. Chaudhary worked in the administrative branch of the Government and Manoj Bajypaee went where his heart was: to act and starred in a Doordar-

Bollywood actor Manoj Bajpayee was in town for the Magic Bus gala. He sat for interviews with the local press the morning after he arrived on Friday, September 18

shan TV serial and then in 1994 landed a role in a couple of Bollywood movies. Since then, Bajpayee has made over 56 films and won nine awards from the movie industry. Yet he still seemed to retain his humility and accessibility as if he was still the young lad from a village in Bihar who had left to seek his fortune. Now he was in Houston with his wife the actress Shabana Raza (formerly known as Neha) and 5 year-old daughter at Chaudhary’s request, to be the guest of honor for the Magic Bus Benefit Gala held this past Saturday (see story page 05). While here, he was going to the Asia Society Night Market (see page 08) and to meet others, He would spend a few more days here before leaving for Atlanta enroute to India. He stayed at the Westchase Marriott and agreed to come down to meet the press even though he was severely jet-lagged. He had last visited at the premiere of the 2009 movie “The Whisperers” made by Houston entrepreneur Ashok Rao. And it was quite a surprise what his reasons were to come almost 10,000 miles to attend the Gala. He was inbetween movies and had planned to take his family to Singapore when Chaudhary approached him. Later, Amit Bhandari, the President of Magic Bus Houston met with him in Mumbai, bringing the founder of the charity, Matthew Spacie and convinced him of the work that the group does in India. “I was so taken up by Matthew’s dedication and selflessness that I could not reuse them,” said Bajpayee of the decision to come to Houston. He acknowledged that there were donors in India too, but that charities should take help from everywhere. “I am not in favor of extravagant, opulent marriages; instead we should give half the amount to NGOs!” added Bajpayee. Asked how the Indian movies have affected society he instead disagreed. “Movies are an imitation of society, they should raise a debate. They don’t change society, they only change the hairstyles!” He went onto dispute the notion that he was a character actor, insisting that he was not, that he was “just an actor”. to the arts and cultural scene, especially as the Center is set in the heart of that district. Since it was first launched in 2013, the Night Market has found a following among those who seek a different flavor to the international crowd in the Bayou City. The vendors – several were from the Indian community - and other activities spilled into the main Center lobby and even upstairs into the large meeting room where tables were set in the center for kids to paint watercolors and make paper crafts and the room’s glass doors which open to the roof garden led to a vendor selling orchids. A bar was setup facing the glass wall looking onto the rooftop reflecting pool while the other side led to the series of rooms that displayed works that form the current Drawn From Nature exhibit that runs through February 21, 2016. The exhibit is a chance to see works by contemporary Asian artists who connect art and nature with astounding results like the floating pieces of charcoal made into a

spherical disk or funneling inward by Seon Ghi Bahk or the rattan, beeswax, bamboo and burlap designs by Sopheap Pich. A particularly fascinating piece is the musical bamboo table made by Mineko Grimmer which is played by tiny pebbles which fall off a melting congealed wedge hung over the top with a wire. A complimentary adjoining piece of his does the same with steel wires strung between a wooden frame. And of particular interest to the Desi crowd was the appearance on Friday night of the Bollywood actor Manoj Bajpayee who was in town (with his wife the actress Shabana Raza, formerly known as Neha) as a speical guest of the Magic Bus Gala (see page 05) that was held the following night. Baypayee was brought to Houston by his college friend, local attorney Rajneesh Chaudhary who is on the Advisory Board of the Asia Society Houston. Thronged by many locals who came to meet him, Baypayee gladly posed for pictures with his adoring fans.

18 September 25, 2015 Modi in Silicon Valley Prime Minister Narendra Modi is billed to spend two days in New York and two days in Silicon Valley this week, but it’s the latter that’s attracting the buzz. Both literally and metaphorically, Silicon Valley is located at the other end of the planet from India. Technology is an article of faith in Silicon Valley whereas, technology and modernity are regarded with deep suspicion in the almost Luddite compact between political parties in India. Modi’s visit to Silicon Valley – the first by an Indian PM in more than three decades – is a sign of hope as it indicates he wants to make technology and innovation work for India and would like to absorb some lessons on what makes Silicon Valley tick. Indian-born people have been responsible for starting up 16% of Silicon Valley’s technology companies, which offers two lessons at once. First, Indians can build world class companies given an enabling environment and we must offer this in India itself. Second, Silicon Valley thrives on openness, diversity and meritocracy. This is well worth emulating in India. There are other takeaways too. Government fosters innovation best when it provides higher education, some basic infrastructure and research funds, but otherwise gets out of the way. The intellectual epicentre of Silicon Valley is Stanford University, while a Silicon Valley-like hub has come up around Cambridge University in the UK. But India fails to foster world class universities and the reason for doing so – the vice-like grip the government has on higher education – points to the larger difficulty of harbouring innovation hubs in India. Modi needs to overhaul this root and branch if he is to come anywhere close to realising the twin dreams of harbouring Silicon Valleys in India and making the country an innovative society. EDITORIAL/COMMENTARY Copying the US-Chinese Code

BY PRATAP BHANU MEHTA With its focus this week on Prime Minister Narendra Modi’s visit to America, a self-obsessed India may be pardoned for ignoring Chinese President Xi Jinping’s travels in the United States. Whether India pays attention or not, the Sino-US relationship is the single most important factor in international politics today and has the greatest impact on New Delhi’s own ties with Washington. New developments this week between the US and China in the cyber domain are symbolic of the changing nature of the US-China relationship. They also underline the urgency of more purposeful digital diplomacy from Delhi. As US President Barack Obama hosts Xi at the White House later this week, Delhi must come to terms with the fact that China and America compete and cooperate at the same time. The unfolding dynamic between Washington and Beijing is similar to the one between America and the Soviet Union during the Cold War, when they confronted each other around the world but also carefully regulated their military competition. A code of conduct on cyber behaviour, expected to be signed by Obama and Xi this week, will remind many of the era of nuclear arms control. The New York Times reported last week that Washington and Beijing are close to an agreement stipulating that neither country would be the first to launch cyber attacks on the other’s critical infrastructure, like electric grids and the banking system, during peace time. Many will question the utility, credibility and effectiveness of such a declaration. But the accord may well go down as the first arms-control agreement of the cyber era. It follows a series of US allegations of

Chinese cyber attacks orchestrated by state agencies including the People’s Liberation Army. In May, a US federal grand jury indicted six Chinese on charges of industrial espionage. There was intense speculation in the last few weeks that Washington might follow up with new cyber sanctions against Chinese entities. Washington’s decision to hold back on the sanctions appears to have created the space to wrap up the first cyber agreement between America and China. Washington, which used to dismiss the nuclear capabilities of China as inconsequential, is now offering a grudging recognition that engagement with Beijing is critical for the management of the emerging cyber challenges. For Xi, the cyber agreement is a vindication of its demand that America show respect for China’s new position as the second most important military power and accept its call to build a new type of great power relationship. Xi’s cyber diplomacy is not limited to his engagement with Obama. Much like Modi, Xi is spending some quality time on the American west coast. If Modi is catching up with the top guns of Silicon Valley, Xi begins his tour of America at Seattle — another centre of technological innovation in the world. Xi plans to visit a Boeing assembly line near Seattle. China is the top international customer of Boeing, which has deep roots in Seattle. He will address the China-US Internet Industry Forum, hosted by Microsoft and the Internet Society of China. Xi is accompanied by senior officials in charge of Beijing’s internet policy and the CEOs of its top companies. In Seattle, Xi will also have an intensive round of discussions with the leading American businessmen. The US corporate sector, long

the most reliable friend of China in America, has been deeply concerned in recent years about Beijing’s industrial espionage and theft of intellectual property. It has also chafed at the increasing restrictions placed on operations within China. US businesses have been pressing Washington to start acting against China’s cyber incursions. Xi, however, appears confident that he can leverage the size of Beijing’s market to get US companies to accept some of Beijing’s conditions, and persuade those like Google to return to China. Xi’s cyber diplomacy in America raises a couple of questions about India’s. If China, whose cyber philosophy is fundamentally different from that of the US, can cut deals with Washington and American businesses, why has India been so reluctant to seize the opportunities for a deeper digital partnership with the US? Why does India, despite shared democratic values with America and the deep links between Bangalore and Silicon Valley, play second fiddle to China and Russia in global debates on cyber issues? To be sure, Modi has signalled some positive reorientation of India’s approach to internet governance in recent months. But he will have to do much more to enthuse Silicon Valley to ramp up its engagement with India. Modi could begin by asking a simple question. Why do American digital entrepreneurs, including those of Indian origin, find it a lot easier to deal with China, with all its harsh new conditions, than to do business with Delhi? HOUSTON: Shiv Shakti Mandir is in full swing with a dhamaal ten day Ganesh Utsav that will culminate in a spectacular Ganesh Visarjan & Parade organized by Masala Radio. The Fifth Annual Ganesh Visarjan festivities will begin at 5PM with a parade with the 10ft Houston Cha Raja Ganesh Murthi on Saturday, September 26, at Shiv Shakti Mandir, 6640 Harwin Drive in Houston. Due to swelling crowds of devotees and inpouring of Hillcroft restaurant, the parade will end and celebrations continue at the Mandir itself, with professional dances, live singing, crowd dancing, prasad and Maha Aarti. Houston Cha Raja will leave after Maha Arti to Madras Pavilion Sugarland for an 8PM Visarajan on the lake. Celebrated in Mumbai, Maharashtra, and around the world, Ganesh Utsav (festival) is one of the most fun events. In the late-1800s, India’s revered freedom fighter Lokmanya Bal Gandharva Tilak brought the concept of a “sarvajanik mahotsav” (sarvajanik = public/ for everyone; mahotsav = grand festival) – a celebration of one of the most loved Hindu Gods representing wisdom and prosperity. Not only did this mahotsav bring the community together, it was also a way to organize a collective protest at a grassroots level against the British rule then. That pioneering concept of bringing the community together is still alive today in Houston, thanks to the vision of Shri Virat Maharaj of Shiv Shakti Mandir. He, along with Masala Radio and dedicated volunteers, have successfully recreated the sarvajanik mahotsav right here in town. Known as Houston Cha Raja – King of Houston (similar to Mumbai’s Lalbaug Cha Raja), the ten-foot idol of Lord Ganesh is on display at the Mandir. Starting with the sthapana (installation) of the ten-foot idol on Ganesh Chaturthi, on the fourth day in the holy month of Bhadrapad, daily celebrations with poojas, recitation of bhajans and aarti, are planned for devotees to pay homage until Saturday’s Ganesh Utsav. Also known as Visarjan (immersing in water), Sunil T and the Crazy Masala Crew will lead a procession on Saturday, September 26, in the Mahatma Gandhi District area at Hillcroft and Harwin, which symbolizes Lord Ganesh’s return to his home in Mount Kailas. While not only bringing the community together, this annual event also gives everyone, especially our young generation, a chance to celebrate India’s rich culture. Tips for organizing homework assignments It’s 7 p.m. and your child just remembered a homework assignment that’s due tomorrow. Satyam Scam: Sebi asks Raju Family, others to Return Rs 1,800 Crore BY ANIRUDH LASKAR MUMBAI: India’s stock market regulator on Thursday asked B. Ramalinga Raju, the main convict in the accounting fraud at erstwhile Satyam Computer Services Ltd, and nine entities linked to him to return overRs.1,800 crore of illegal gains made by them. The Securities and Exchange Board of India (Sebi) also sought an additional Rs.1,500 crore as interest on the amount dating back to 7 January 2009, the day Raju, Satyam’s founder, admitted to fudging the books of the company over several years to the tune of Rs.7,136 crore. On 10 April, a special court sentenced Raju, and nine others to seven years of rigorous imprisonment after convicting them. All 10 have challenged the verdict. Thursday’s order by Sebi appears to be a follow-up to an order issued by it in July last year barring Raju and four others from the markets for 14 years and asking them to return Rs.1,849 crore of illegal gains along with interest. That order was passed against Ramalinga Raju, his brother B. Rama Raju (managing director of Satyam at the time the fraud took place), Vadlamani Srinivas (ex-chief financial officer), G. Ramakrishna (ex-vice president) and V.S. Prabhakara Gupta (ex-head of internal audit). Thursday’s order fixes the individual liability of Raju, his two brothers, and other individuals and companies related to the then promoters of the firm. While passing the order, Sebi’s whole-time member Rajeev Kumar Agarwal said prohibitions on insider trading are intended to ensure that insiders in a company do not breach

their fiduciary duty towards investors and other stakeholders. In the present case, the 10 entities were found to be guilty of misusing insider information to make illegal gains by trading in the shares of Satyam. “…the spirit behind prohibition of insider trading is that the insiders must disclose or abstain. They should not take the position adverse to the interest of the general investors and should not place their interest or the interests of those to whom they communicate the unpublished pricesensitive information,” the 39-page order said. “It has to be kept in mind that in respect of contraventions of relating to the insider trading, the violator should face the consequences otherwise the objects of the regulations and also of the regulatory jurisdiction would get defeated. In my view, the enforcement actions for such violations as found in this case should have effective deterrence,” it said. The entities were directed to pay back the money within 45 days by way of a demand draft in the name of Sebi. Those against whom the latest order has been passed include SRSR Holdings (controlled by the Raju brothers); IL&FS Engineering and Construction (formerly known as Maytas Infra that was controlled by Raju and his two sons); Raju’s mother B. Appalanarasamma, and his two sons Teja Raju and Rama Raju Jr.; his brother Suryanarayana Raju and B. Jhansi Rani (wife of Suryanarayana); Chintalapati Srinivasa (then director of Satyam), his father Anjiraju Chintalapati (since deceased) and Chintalapati Holdings Pvt. Ltd. Acknowledging that IL&FS had acquired Maytas and renamed it IL&FS Engineering and Construction Co. after the fraud, Sebi said the

latter wasn’t involved in the fraud, but added that “unlawful gains made on account of insider trading by Maytas and lying with IL&FS Engineering and Construction Co. cannot be allowed to be retained by it”. Under the terms of the order, Ramalinga Raju and Rama Raju have to return overRs.56 crore that they earned through sale or transfer of shares held

Mama’s Punjabi Recipes

Saada Punjabi Parantha (Plain Punjabi Crispy Flatbread) Punjabi paranthas (crispy flatbread) are famous and loved the world over and found in most Indian restaurants. Though most places will serve a version of the plain parantha, they are seldom in the style of the home made parantha that most Punjabis have come to expect. These days, it is even hard to find a Punjabi girl who has the skill to make a crispy, nicely cooked, thick plain parantha like the one that I learnt to make as a young girl in my ancestral home in Lyallpur. I still cook them this way, much to the delight of my sons and their families. I learned by sitting beside my mother and the other women from the extended family in the haveli (courtyard) of the home of my extended family. These days, even in India, most girls don’t have the time to learn or the patience to refine their cooking skills. Apart from restaurants that make paranthas (often the cooks are Punjabis); ready-made ones are available in the frozen food section and all that is needed to heat them, sometimes in the microwave. This gives people even less motivation to learn to make the paranthas properly. A true Punjabi parantha is usually 8 to 10 inches round and nearly ¼ inch thick. It is made of twice-rolled dough, with a little dab of oil and then cooked on each side till there is a crispy, golden brown top layer, which can only happen when you coax the dough to actually puff up. Then the crispy side is coated with some butter or oil and served with food. One last difference is that Punjabi paranthas do not need to be round: they can be made in the shape of a triangle or even a square. That depends on the way you make the balls of dough and how you roll them out. Usually people are surprised and pleased to receive these paranthas instead of just plain round ones. Ingredients :

Directions: 1. Pour the flour into the bowl, then slowly pour only enough of the water in while kneading the dough

5. Place a tava (flat plate or flat skillet) on the stove and heat on medium. Now carefully place the flattened dough on the tava and spread a dab of oil around the circumference on the tava. When small brown spots appear, turn the parantha over and let it cook and use the oil again. When brown spots appear on this side, turn over and repeat till the parantha is lightly brown. The parantha should puff up a little when cooked on each side. till it becomes a nice, round, tender firm ball. 2. Dab the surface of the dough ball with a little water to keep it moist, cover the bowl and set aside for 10 minutes. 3. Pinch off a portion of the dough and make into a 2 inch round ball. Pour a little dry flour on the counter and roll the ball in it to coat it. Now use a velna (rolling pin) to roll the ball into a nice round, flat pancake, about 1/8 inch thick. 4. Gather the sides of the pancake and close off with your fingertips into a ball. Now roll the ball out again carefully into a pancake, smearing it with a little oil, and make sure the dough does not tear.

6. Remove the parantha and serve while warm with yogurt or achaa.

Shakuntla Malhotra is a skilled cook of Punjabi dishes made in the old-fashioned style that she learnt as a young woman in her ancestral home in Lyallpur, India before it became part of Pakistan after the Partition in 1947. People have often admired her cooking for its simplicity and taste that comes with each mouthful. Even in her mid-eighties, she continues to cook daily and agreed to share some of her delectable Punjabi recipes.

If it is not hot enough, then the fried food will absorb too much of the oil before it gets fully cooked, creating a piece that will taste oily and ooze into your hands. It is best to test with a small amount of batter first and then start cooking.

Movie Review: Katti Batti

BY SRIJANA MITRA DAS Maddy and Payal are in a live-in relationship. Suddenly, Payal leaves. But Maddy's sure Payal still loves him - can Maddy and Payal patch up their katti love-life? So, Katti Batti is sweet, funny, sassy - but inconsistent. Maddy (Imran) and Payal (Kangana) fall in love, moving into a New York-like Mumbai apartment, living together in yuppie style. But slowly, the romance of bedside candles and naughty home videos fades and life - feeding the pet, paying the bills, withstanding family tragedy - happens. On the plus side, Katti Batti is one of the freshest-looking movies around, young, modern and hip. Its lead pair looks terrific - Imran simply rocks the nerdy glasses-and-stubble style while Kangana can clearly do bohochic-chick asleep - and the movie’s a delicious mash of tattoos and linen shirts, wineglasses and vintage jars, spaghetti straps and stunningly tiled floors. But herein lies the problem - Katti Batti can’t get over its own good looks. After a breezy first half, its story meanders, growing heavy while the bond between the leads feels too light. The movie is divided into dramatic cross-sections, moving from present to flashback, but the editing is too leisurely for powerful impact.

Certain sequences - a contemporary Devdas, with ‘Chandramukhi on LoC’ - are hilarious but others - a ‘Fosla’ (Frustrated One-Sided Lovers’ Association) band - add extra weight to a storyline that should be lean. With geeky charm, Imran’s competent but Kangana’s Payal feels like a remix of similar roles. Kangana lights

up certain scenes with her unabashed panache but others, like those featuring Maddy’s supposedly South Indian boss, feel dated and dull. In a sense, Katti Batti is vintage Nikhil ‘Salaam-eIshk’Advani - pretty but so full of cute little somethings, the plot’s overall impact gets jumbled. Here, an emotional twist takes you by surprise but the lead pair’s bond doesn’t develop enough agony, enough ecstasy - perhaps because they seem to live their life with so many buddies, including the Fosla Band. Somewhere between glossy ad, glassy music video, sitcom and masala movie, Katti Batti leaves you pouting. This could’ve had the lusty, gutsy power of a full-blown French kiss - it ends up a pleasant but passing peck on the cheek. -TimesofIndia

The players left out from the full-strength ODI squad that had toured Bangladesh were allrounder Ravindra Jadeja and seamer Dhawal Kulkarni. Gurkeerat, who bowls offspin took Jadeja’s spot in the squad while legspinner Amit Mishra came in for Kulkarni. Gurkeerat, 25, had two impressive outings for India A recently. He had taken 2 for 42 and scored an unbeaten 87 in the tri-series final victory against Australia A in August, and then he made 65 and took 5 for 29 against a Bangladesh A team comprising several international players in the first oneday game in Bangalore. “Gurkeerat was picked looking at his all-round capabilities,” Sandeep Patil, the chairman of selectors, said. “The demands of the game are such that we need more allrounders.” The selectors, who met in Bangalore on Sunday afternoon, said they had not contemplated any change in the captaincy, with MS Dhoni returning to lead the ODI

and T20I squads after Virat Kohli had captained India to a Test series win in Sri Lanka. Dhoni had retired from Test cricket during the tour of Australia last year. “We have not discussed anything regarding the ODI captaincy,” Patil said. “We are very happy the way Dhoni has led. LAHORE: Shahid Afridi, the Pakistan T20 captain, has said the Pakistan Super League (PSL) should be held within the country, with or without overseas players. The PCB had announced recently that the inaugural edition of the league would be held in Doha, Qatar in February 2016. “It would be great if PSL could have been held in Pakistan,” Afridi said. “Our cricket should be played within our own territory. It looks good if our grounds get revived, filled with crowds and our own players get the maximum benefit out of it.”

KOLKOTA: Jagmohan Dalmiya wore safari suits, large spectacles and always had his hair slicked back. In the cliché-ridden world of Hindi cinema, that was what the bad industrialist wore. But Dalmiya loved Indian cricket and Indian cricketers deeply. That latter combination wasn’t as prevalent as you’d like to believe it should be. And he was tough. He read the fine print in contracts and exploited it for the benefit of Indian cricket and its finances. It meant he was always prepared and, while I was never in any negotiating room with him, those who were often talked about being befuddled by something that came from left field. The marketing head of one of India’s biggest sponsors once told me that you had to fight tooth and nail with him on contracts but, she added with a smile, once you did that, he respected you! Much has been written about his role in the 1987 World Cup. India had no choice but to get it right given the bad blood that had accompanied its exit from England that believed it had a right to host it every time. The India of 1987 was incomparable to the India of 2015. Hotels were limited and sometimes basic. There was only one airline and it was both arrogant and inefficient. And there were people waiting for the tournament to fail. It didn’t. It was a high point in the running of Indian cricket. But his finest hour came in 1993 when he took on the establishment over the awarding of television rights. A year and a half earlier, South Africa had come to India as part of a dramatic re-entry into international cricket. Ali Bacher of what was then the newly formed United Cricket Board of South Africa, asked Dalmiya how much India wanted in terms of television rights. Remember, this was only 24 years ago but the BCCI wasn’t aware that it could be paid for television rights. Unaware of what constituted a good amount, they asked the UCBSA to make an offer. What came in reply was several times higher than they would have been happy with. Out of this ignorance came a plan to revolutionise the finances of Indian cricket. And in Inderjit Bin-

dra, Dalmiya found a soulmate and a fighter. It was also the time that Doordarshan demanded a production fee from the BCCI on the basis that if they didn’t cover international matches, there would be no revenue from the advertising boards around the boundary. Dalmiya and Bindra sold the rights instead to TWI, the television arm of the giant sports marketing firm IMG. It set off a debate, and a major legal battle, on who owned the air-waves. It was ugly on the ground but the duo stuck to their guns. As late as 1994, there were two crews flying around the country. Two sets of cameramen for every position, two sets of commentators, two sets of equipment and two Russian made Ilyushin aircraft flying everyone around the country. It was the tenacity of Dalmiya and Bindra, and a landmark judgement, that opened the airwaves to all and the rights to Indian cricket began to be sold for amounts that would have been considered unthinkable. Those two unlocked the value of Indian cricket. In time to come, Dalmiya would revolutionise the earning capacity of the International Cricket Council. The old establishment could never come to terms with his direct, often blunt, style of functioning but he was too sharp for them. I don’t think he ever received credit for what he did there, and if there was any at all, it was grudgingly accorded. On Dalmiya’s passing, many players said in their messages that he was a player’s man. No administrator can ask for a better compliment. He might have been brusque, politically savvy and often ruthless but he lifted Indian cricket. The current generation of players must be thankful for that.
