he falling temperatures are upon us and serve as a reminder that the end of the year is quickly approaching and oh, what a year it has been! I am truly humbled by Chicago’s warm embrace of its newest luxury lifestyle publication, which will always be a key moment for me personally. Chicago was synonymous with a “life well lived” long before ChicagoMOD was conceptualized, and I’m so thrilled to help bring to the forefront the many amazing attributes and people our great city has to offer. Speaking of which, in ChicagoMOD’s debut year, we’ve worked with so many who have inspired us, from Taylor Kinney, Anthony Rizzo, Chelsea Handler and Ana Ivanovic to our current cover stars Terrence Howard and Jussie Smollett of Empire. A CONVERSATION WITH THE KINGS OF CHICAGO DINING

t a corner table on the second floor of Somerset restaurant in Gold Coast, Kevin Boehm and Rob Katz, founders of Boka Restaurant Group, discussed their latest creation in

the company’s extensive portfolio. “I think we hit the mark on this one,” says Katz. With 17 restaurants under their belts and (many) more on the way, the two have mastered the chef-driven concept and paired it with unreplicable design and top-notch hospitality. They took time out to share with ChicagoMOD what it takes to be on the cutting edge of the restaurant scene in America’s most-touted food city. What inspired Boka Restaurant Group? KEVIN BOEHM: It started with a cup of coffee Rob and I had at Nookies on Wells in December 2001. We had four restaurants separately from each other. We were fast friends. We thought a lot alike. The beginning idea was one restaurant, and when it [Boka] opened, we’d sit at the end of the night across the bar and build this architecture on cocktail napkins, which eventually became Boka Restaurant Group. The idea was to build a restaurant group around a multitude of chefs, then surround them with inspired design and great hospitality. ROB KATZ: We were very ambitious. We never dreamt that we’d have two thousand employees and 17 places. We were driven, competitive and ambitious from the get-go and really good at what we do.

“I learned to race driving it in the hills of Ohio,” he says. Today you might see Rahal cruising around town in his 1965 289 Shelby Cobra roadster, probably the most valuable car in his collection. It’s one of several convertibles he owns, along with a late ‘60s Alfa Romeo Duetto and a bright red Volkswagen Beetle that recalls the one he drove in high school. “When you drive it, everybody smiles and gives you a thumbs-up,” Rahal enthuses, noting that his 21-window Volkswagen bus has the same effect. “When you drive a Ferrari, they just flip you off.” By the time he was six, Rahal was already a car junkie, thanks to his father Mike Rahal, an amateur racer with a penchant for sports cars. The Vision is produced at the Cirrus headquarters in Duluth, Minnesota (a short journey from Chicago in the SF50). This is where the world’s best-selling high-performance piston airplanes are manufactured. The Vision is designed to be flown by the owner, not a fulltime professional pilot. And evidently prospective customers are in agreement: 2017 marks the third year Cirrus has delivered more than 300 of its units around the world. As we’ve come to expect of Cirrus, this model has a whole-airplane parachute. The Cirrus Airframe Parachute System (CAPS) is standard on its craft, and incorporating it into the SF50 provides passengers with an elite safety mechanism, one that has, according to the company, saved hundreds of lives thus far on their other crafts. Maybe the most remarkable thing about the SF50 are its simplicity and ease of use. It’s a breeze to fly, and Cirrus says the training course takes most pilots about 10 days. The training is conducted in a flight-simulator at the Duluth factory. Starting in 2018, it will be completed in a full-motion Level D simulator at a center under construction at the company delivery and service center in Knoxville, Tennessee. Look for the Vision to take flight over Chicago soon. Who knows? Over the years, the two men worked on 12 boats together (six by the Missouri-based Marine Technology Inc.), designing and racing them as driver (Gargiulo) and throttleman (Goldman). The newest was a 52-foot, all-carbon-fiber, lime-green cat designed to match (down to the taillights and air vents) Gargiulo’s Lamborghini Aventador SuperVeloce (SV) Roadster. Gargiulo estimates it contains 100,000 custom Lamborghini parts. “There’s so much of him in the boat,” says Gargiulo. “Every month he would fly to Missouri to check on the progress.” The two men had an unbreakable bond developed over years of racing together. They were so close that they could anticipate each other’s moves, according to Gargiulo. In 2010, they broke the speed record for pleasure boats at a cool 193 MPH. (You can see a video of their run on YouTube, still a record). They also surpassed a long-standing endurance record which had stood for more than 28 years. Blasting from Miami to the Bahamas and back again, they finished the run in — get this — one hour and 44 seconds! Although outside the boat the partners were known for their camaraderie, in the boat they fought like cats, says Gargiulo. He likens their racing relationship to marriage. “In the boat we would fight from the second we got in to the second we got out,” he says, chuckling. “He always insisted on telling me where to go. And it was like, ‘You do your job and I’ll do mine!’” Their relaionship was irreplaceable. After Goldman’s passing, Gargiulo decided to put the SV up for sale. In the realm of celebrity portrait photography, some images seem to define the word iconic. Collectors looking for such works need look no further than the photography of Matthew Rolston. His portraits — he has photographed everyone, from Isabella Rossellini to Prince, from Don Johnson to Steven Spielberg, from Cyndi Lauper to Tom Waits — are among the most memorable ever. More than 100 of them are included in Hollywood Royale: Out of the School of Los Angeles (teNeues Media). Discovered by Andy Warhol in 1977, Rolston got his start working for Warhol’s Interview magazine alongside artists such as Bruce Weber, Annie Leibovitz and Steven Meisel. He went on to shoot for Rolling Stone and Vanity Fair, creating some of those publications’ most noteworthy covers. Rolston, known for his signature dramatic lighting and richly detailed sets, helped define both portrait photography and the 1980s magazine scene with his gender-bending style. He often dressed stars in glamorous looks from the 1940s and 1950s, and reassembled sets from the glory days of Paramount and MGM. In 1980 he shot his first glamour portrait for Interview, in which he dressed Martha Davis (of the pop group, the Motels) as Norma Desmond, Gloria Swanson’s character in Billy Wilder’s Sunset Boulevard. It became his signature style. In addition to photography, Rolston has produced music videos for Madonna, the Eurythmics, Sheryl Crow, Beyoncé, David Bowie and Christina Aguilera, among many others. In 2010 he became the creative director of the hospitality group, sbe, and designed the bohemian-chic Redbury Hotel in Hollywood. Last year, the Redbury New York opened in the landmark building that once housed the Martha Washington Hotel on East 29th Street. Rolston’s design inspiration came from New York’s fabled music recording and publishing district, known as Tin Pan Alley. His Hollywood and rock-and-roll bona fides uniquely suited him for such a project. “Guests step into a design filled with visual eclecticism, the feeling of soulful American pop music, and a warm, welcoming ambiance. I want guests to feel both stimulated and relaxed at the same time,” he explains. Rolston’s work has been shown at the Whitney Museum of American Art, the Los Angeles County Museum of Art (LACMA), the National Portrait Gallery in Washington, D.C. and the Victoria & Albert Museum in London. Three previous monographs of his

GOLD STAR REGATTA 100 CLUB OF CHICAGO The Gold Star Regatta on July 29, a fundraiser sailing race created by Marlon Harvey, founder of the Chicago Police Sailing Association, made for one of the most fun events of the summer at the Jackson Park Yacht Club. The Chicago Police Sailing Association, in conjunction with the Chicago Area Sail Association, hosted the lively event which featured beverages, local food trucks, entertainment and fun under the sun. The activities benefited the families of first responders who have fallen or been injured in the line of duty.

Catherine De Orio

C

atherine De Orio’s Italian upbringing influenced her love for cooking at an early age, so it comes as no surprise that the former litigator eventually transitioned into a career involving her true passion: food. De Orio enrolled at Kendall College of Culinary Arts while working her day job to legitimize her pastime and learn more about the industry. Now, she serves as executive director for the Kendall College Trust, a scholarship program that helps budding chefs and restaurateurs, so she can give back to the institution that gave her so much. ChicagoMOD sat down with the Check, Please host to talk about how her charity work empowers her in one of the greatest culinary cities in the country. Why is your role as executive director with the Kendall College Trust so important to you?

I was lucky enough that I was able to pay my own way through culinary school. Culinary school is not inexpensive, to say the least, and the reason I continued my job as a lawyer and didn’t just quit and go to culinary school was because I didn’t want to have student loans. The Kendall College Trust provides financial needs and opportunities for students that don’t have the ability to put themselves through school. It’s very personal because my life changed when I went to culinary school. I feel very lucky to have had the career trajectory I’ve had, and the ability to change careers as successfully as I have. I want to help students who have dreams be able to achieve them when something like financial need is standing in the way.

What are some key events the Trust hosts each year? We host a one-week summer culinary camp with students from underserved communities, so primarily the South Side and the West Side of Chicago. If they have an interest in the culinary

field, they can apply and we give them a full-ride scholarship to come to Kendall for a week, and they do culinary classes from 8am-5pm. They’re essentially learning a very condensed version of what your first block in culinary school would be. We’ll give them a small scholarship if they decide to enroll after high school if they’ve been a member of our camp. We give away more than a quarter million a year in scholarship funding. Our big event is Fried Chicken & Champagne with 12 chefs from Chicago. We have Ryan Mckass from Arcadia, a two Michelin star chef; Sarah Grueneberg from Monteverde, who just won Best Chef Great Lakes at the James Beard Awards; Beverly Kim, also a Michelin Star chef. We have Honey Butter Fried Chicken, and they compete and do a version of fried chicken for the title of the Golden Hen. Pops for Champagne does a VIP champagne lounge with premium champagne. We pair our culinary scholarship recipients with one of these amazing chefs so they get to cook with them or help them throughout the day.

Chicago received many accolades for its incredible food scene this year. What are some of the benefits of students living in one of the greatest food cities in America? It’s pretty expensive to live in Chicago and come to school here, and the Kendall College Trust provides a resource for students who don’t have the financial means to go to school, or to come to a city where they have the exposure to the best chefs in the world, the best restaurants in the world, a community who is giving and wants to see the next generation succeed and wants to help them. Chicago is a much more collaborative, less competitive city for the culinary industry than you see in San Francisco or New York. It’s not that those communities aren’t great, but Chicago has a support network that is very rare and you don’t see it in a lot of these other cities. For students to be able to come here and for us to be able to help them come here is a huge advantage and resource.

What moments do you look forward to and enjoy most through your charity work? I kind of forgot how exciting that time is when you’re graduating. It’s been really gratifying and has given me a lot of extra passion for things I’m doing here. I’ve developed relationships with some of these students. They come to me with questions about what to do, which job offers they have, ask for advice, and it’s just so exciting to watch these students because some of them have been our scholarship recipients two or three years in a row. For me a success isn’t that they’re working in a huge restaurant. It’s if they get a job they are happy with, are they on the right path, do they feel supported, did they feel like they know they continue to have a support network. We always say once you’re part of our family, the KCT community, you’re part of it for life and we’ll continue to help.
