LIVING WATERS FOR THE WORLD PROVIDES HANDS ON TRAINING IN OXFORD

BY Kathryn Winter Camp Hopewell, hidden in the midst of Holly Springs National Forest, is a year-round retreat center and summer camp that caters to Oxford and surrounding communities. What many people do not know about Camp Hopewell is that it also serves as a training center for an organization known as Living Waters for the World.

Living Waters for the World (LWW) is an organization that trains and equips mission teams to share the gift of clean,sustainable water with communities in need. The organization was founded as a ministry to the Presbyterian Church (USA), but welcomes people of all walks of life and all denominations. According to the Living Waters website, the need for clean water is overwhelming. Over three million people die each year from water related illnesses, and most of them are children. OLE MISS STUDENT VOLUNTEERS Wil Howie, founder and ambassador of LWW, said 4

that the organization trains volunteers four times a yearthree times in Oxford at Camp Hopewell and one time at Calvin Crest Conferences, near Oakhurst, California. The training lasts for four and a half days, and it is called Clean Water U. The organization began training in March of 2004. Over the past 11 years in Oxford, 2,000 volunteers have been trained. Clean Water U has trained Ole Miss students from 36 states with many international students as well.

water and process it through our modular clean water systems to purify it for human consumption.” HOW IT WORKS Through filtration and disinfection processes, bacteria, chlorine-resistant organisms and other impurities are removed from the water. The system can process up to 300 gallons of water per hour. Living Waters serves 25 different nations, has 711 installed systems and has 11 regional networks. They include Cuba, Dominican Republic, El Salvador, Guatemala, Ghana, Haiti, Honduras, Peru, Southeast Mexico, Nicaragua, and Yucatan. All of LWW’s systems are located in institutional settings like: churches, health clinics, schools, hospitals and orphanages. These systems do not plumb into homes, but people can get the clean water in five-gallon bottles. ohnny and Susan McPhail are actord from Oxford, Mississippi. They have appeared in several films, including some that have been in the Oxford Film Festival, and have appeared alongside many local and national actors. Johnny and Susan exude an energy and zeal for life, and that is palpable when you speak with them—especially when they talk about acting, their children and friends. Johnny has been the half of this dynamic duo who, up to 10

now, has done the majority of movie, television and theater appearances, and this year Susan appeared in two films at the Sundance Film Festival, the largest film festival in the United States. The two really connect as a couple. They giggle like school kids, and when Johnny looks at Susan, he has stars in his eyes. Who could blame him? With her Mae West looks and attitude, Susan is quite the beauty and a Southern accent that drips from her mouth like honey.

n one of their most current debuts,Texas Heart, Johnny and Susan play a couple who take a special interest in the “new-kid-in-town” lawyer, played by Erik Fellows. John Savage (The Deer Hunter; The Godfather, Part III; Summer of Sam) also guest stars in this movie. In 2005, Susan played “Freeda McCommon” in J.D. Evermore’s Glorious Mail. Later, she played “Lady in Hell” in Jim Bulian’s 2007 film Bellringer. Susan also played “June” in Meaghin Burke’s Killer Kudzu, which also featured Johnny. Kudzu Killer was the winner of the Oxford Film Festival’s Community Film Project in 2014. In 2015, Johnny appeared in the movie American Ultra. He played a gas

station attendant alongside Jesse Eisenberg, a Golden Globe and Academy Award nominee. Apart from acting, Susan has dedicated much of her life, both at home and on the screen, to breaking down the barriers and helping to reverse the stigma given to special needs people. Susan was a special education teacher for over 25 years, public speaker and education consultant. Susan has had some success. In the 2014 Big Significant Things, directed by Alison Eastwood, Clint Eastwood’s daughter, Johnny and Susan appear in the same scene with each other and their daughter Ashley, who is autistic. Apparently, the talent runs in the family. Susan and Johnny have had roles in a host of other movies, and Susan will appear in six other films that are to be released later. You can’t beat the small-town atmosphere of Oxford anywhere. It’s something that’s palpable and reminiscent of the Americana many feel have long-since passed us by. Within the city itself, there is any number of fun and interesting things to do, from shopping on the Square to visiting Faulkner’s Rowan Oak for a dose of true Southern inspiration. The choices are as varied and compelling as the leaves on the trees in the Grove. But if you want a weekend trip, something out of the city, but close enough that you can get back to the Square before the nightlife comes alive; here are few engaging and fun places you might want to check out:

About 30 minutes north of Oxford is the picturesque town of Holly Springs. The city itself is filled with beautiful antebellum architecture and quaint hometown beauty. The Marshall County Historical 14

Museum is three floors of Marshall County history at its best. The museum artifacts on display were all donated by local residents and represent a true kaleidoscope of random pieces that typify each era of the city’s history. From Civil War memorabilia to taxidermy animals indigenous to Mississippi; the museum is a wonderland of quirkiness and eccentric pieces that only a true native could have the foresight to donate. And the charm of the building itself, which is listed on the National Register of Historic Places, can’t be beat. Originally built

The Marshall County Historical Museum is open all year except Christmas, New Year’s Day and Thanksgiving.

It is located at 220 East College Avenue. Normal operating hours are from 10:00 a.m. to 4:00 p.m. Monday through Friday and closed on Saturday, except by special arrangement made by calling the Museum in advance, during regular operating hours. Admission is $5.00 for adults and $3.00 for children.

About 20 minutes north of Oxford is the Foxfire Ranch. Foxfire Ranch has sought to revive the Hill Country Blues juke joint tradition in a safe family atmosphere.

The Foxfire blues season runs from March through early November of each year. The facility has a 5,000 squarefoot open air pavilion, an indoor banquet hall, three stages, and a kitchen that has come to be known for some of the best soul found in the area. It’s also available for private parties and gatherings. Blues is performed each Sunday evening, rain or shine and admission is $10 per person, children under 13 get in free, and shows start at 5pm. TULA OPRY BRINGS LOCAL MUSIC & FOND MEMORIES TO ALL BY SHANE BROWN

Once a month, good music is being played in a small wooden building that was created by a desire

It is great music. It happens on Saturday nights, and it happens in Tula, Mississippi. It has been a little secret for a while, but talk and talent have people coming to witness its authenticity. It is called the Tula Opry. When you walk up to the Tula Opry, a wooden boardwalk that’s twenty feet long leads you onto a front porch that holds swings on both ends and benches as well. There is plenty 20

of sitting room and standing room on this porch. Antique and rustic signs hang on the walls of the front porch that dangle from under the black and white sign of its entrance that reads “Tula Opry.” You can hear the twanging of a guitar or the pounding of a bass and someone’s voice, but not until you enter past the screen door and at the twist of a doorknob you hear some good music.

Once inside, the floor is open. It is lined with chairs and most every Saturday night they are occupied. There are ten rows with each row holding twelve chairs. The small kitchen that sets to the back side was full, too, as Southern Belles hand out Cokes and cookies and other desires and treats. The walls are full of pictures antique things. The stage is small, but bright with lights. The lights focus you on each member of the band playing bluegrass or gospel music. The audience is quiet and appreciated during each song. Jokes are told and friendships are made. Smiles are glued to faces and eyes dancewith a foot.

I smile and hope they want stay a little longer. The band plays and everyone smiles. The show ends with “Will the Circle Be Unbroken” as I watch my son and nephew clap and smile and dance. I look around and everybody else is pretty much doing the same.

HEALTHY HOMETOWN AWARD FOR OXFORD

he city of Oxford received a Healthy Hometown Award from the Blue Cross & Blue Shield of Mississippi Foundation in early fall on the steps of City Hall on the Square. The Award recognizes and rewards exemplary community health and wellness, and includes a $25,000 grant that will be used to install outdoor fitness equipment along the bike path near the Oxford Activity Center. “On behalf of the Board of Alderman and the entire community, we are honored to be named a Healthy Hometown,” Mayor George P. Patterson said. “We are working in conjunction with the university to create more opportunities for everyone in the community to become more active and aware of health issues. We thank the Blue Cross & Blue Shield of Mississippi Foundation for this opportunity and grant.” 22

AWARD PRESENTATION The Blue Cross & Blue Shield of Mississippi Foundation noted the city’s many healthy assets, such as area trails and paths, and work site wellness programs at the city, university and area businesses among its accomplishments in creating a healthy community culture. The Foundation also noted the improvements in school nutrition and nutrition education for Oxford School District students brought about by Good Food for Oxford Schools. The award presentation featured Sheila Grogan, executive director of the Blue Cross & Blue Shield of Mississippi Foundation. “The Blue Cross & Blue Shield of Mississippi Foundation is proud to partner with the City of Oxford in celebrating its success and accomplishments in creating a culture of wellness in

the community,” Grogan said. “We look forward to the continued success of Oxford’s community wellness initiatives.”

HEALTHY HOMETOWN JUDGES Judges for the 2015 Healthy Hometown Awards included Meriden Zerner, MS, RDN, CSSD, LD, of the renowned Cooper Aerobics Center in Dallas where she is a registered dietitian nutritionist and certified wellness coach; Coach Ken Carter of Marlin, Texas, whose life was the basis of the 2005 film Coach Carter, business owner, educator and motivational speaker for youth about the importance of health, wellness and academics; and Jordan Friedman, MPH, President of The Stress Coach, based out of New York City, producing training programs related to stress

management for businesses and universities.

HEALTHY OXFORD The Healthy Hometown Award will provide momentum to Healthy Oxford, a new coalition of partners from the city, the university, area businesses, running and biking clubs, farmers markets and nutrition programs, and other groups and individuals working in wellness-related fields. Healthy Oxford will continue to promote health and wellness in Oxford through a combination of programs and projects designed to make getting active easy and fun for all citizens.

M.B.A from Fuqua School of Business at Duke University in 2002. Dr. Vitter plans to continue to put improve Ole Miss for the students, alumni and all of the Ole Miss community.

What has been done and continuing to be done revolves around the students. The Graduate Brings Two New Restaurants To Oxford BY LIZ BARRETT FOSTER

s if a gorgeous new hotel built from the ground up wasn’t enough to impress, The Graduate, located on the corner of North Lamar and Jefferson Avenue, has brought along with it two new restaurants and a rooftop bar overlooking downtown Oxford. The first restaurant is Cabin 82 (named after the cabin that the Mannings own at the Neshoba County Fair), located directly off of the hotel lobby and accessible from an inviting exterior patio. No detail was overlooked in this cute and cozy order-at-the-counter cafe where you can check your email over a cup of coffee and chicken biscuit as early as 7 a.m., or stop in for a casual dinner of Chicken and Williams Brothers Smoked Sausage Pot Pie or Fried Chicken Skin Nachos—neither of which will put a strain on your pocketbook.“We’re really excited to be the first restaurant in Oxford to be working 28

with Williams Brothers out of Philadelphia, Mississippi,” says Jon Davis, chef de cuisine of The Graduate Oxford Hotel, who you may recognize from other Oxford venues such as Bouré and Blind Pig. “In addition to the sausage for the pot pie, we’ll also be working with Williams Brothers for our bacon and bologna.” Take the elevator up to the top floor where, after 4 p.m., the kitchen opens and drinks start flowing at The Coop, a rooftop terrace bar with unique sharable plates and a relaxed atmosphere. While the restaurant’s name is part play on the termt “chicken coop,” Davis also reveals that the true meaning can only be found in photographs displayed just inside the bar’s restrooms. How’s that for a mystery? As with Cabin 82, prices at The Coop are affordable and the space is comfortable and inviting. Once you saddle up

THE NICAUD BROTHERS ARE BRINGING THE BACCHUS TO THE SQUARE BY CALLIE DANIELS

he name Bacchus come from the family’s roots in New Orleans. The Nicaud brothers’ grandmother and fat h e r ow n e d restaurants in the New Orleans as well as their uncle owning Lil’ Rays’ in Long Beach. Jourdan Nicaud, is a successful restaurant entrepreneur who opened three restaurants by the time he turned 24 last year. 32

He said, “We’re all longtime Ole Miss fans, and we’re definitely excited to be here.” His younger brother, Field Nicaud is a sophomore majoring in hospitality at the University of Mississippi. Field is more than ready to help Jourdan manage Bacchus on the Square. A true sophomore, Field will have to wait until he turns 21 in November, the same age Jourdan was when he opened his first restaurant. Still, in the days leading up the grand opening, Field helped his brother with the set up as well as getting the word out among his Ole Miss friends.

Directions: Preheat oven to 250˚F. Prepare a 10-inch tube pan by greasing bottom, lining with parchment paper, and greasing and flouring the parchment-lined bottom and sides. Combine 2 c flour in a large bowl with the cherries and pineapple chunks. Roll gently with a large mixing spoon to coat the fruit completely and blend the excess flour into the batter. Set aside. Beat egg whites in a chilled medium bowl until foamy but not stiff. Set aside. Sift second 2 cups of flour and baking powder together in another bowl. Set aside. In a large mixing bowl, cream butter with sugar. Mix in egg yolks, one at a time. Add lemon extract and pineapple preserves, mixing until blended. If more room is needed, transfer to 6-quart bowl. Work in the floured fruit and the sifted flour, mixing until blended. The batter will be stiff but workable. Add nuts. Fold in the egg whites until completely blended, stirring and folding in one direction only. Use large spoon to ladle the batter into the prepared tube pan, smoothing and evening the batter with a spatula. Bake on center rack in preheated oven for 3-1/2 hours, until cake begins to pull away from the sides and toothpick inserted into top comes out clean. Remove to a rack to cool for about 30 minutes. Jiggle to loosen from pan and flip onto waxed paper to cool completely. Wrap in waxed paper and store in tightly covered container, or freeze it. Download the hottytoddy.com app!

CHRISTMAS CHERRY COOKIES You will come back to this recipe every year. Make up multiple batches at a time because they disappear almost immediately.

1 c butter (2 sticks) 1/4 c confectioner’s sugar, sifted after measuring 2 c all-purpose flour 1 c fine-chopped pecans 1 tsp vanilla extract 36 red or green candied cherries Additional confectioner’s sugar (about 2 c)

PECANS Directions: Beat butter and the first confectioner’s sugar on medium speed with mixer until creamy and fluffy. Beat in vanilla. Add flour, mixing well until dough has formed. Mix in the pecans. Refrigerate dough about an hour. Preheat oven to 325˚F. Line cookie sheets with parchment paper. Place about 2 c confectioner’s sugar in a dish or 8-inch pan. Form one-inch balls from the chilled dough, spacing the cookies on the cookie sheet 1 to 2 inches apart. Press a cherry into the center of each ball, reforming cracked edges. Bake on center rack of oven for about 20 minutes. Cookies are done when the dough is firm to the touch. Remove to a wire rack to cool for about 10 to 15 minutes. While still lukewarm, carefully place each cookie in confectioner’s sugar, gently scooping sugar over the cookie. Shake off excess and place on waxed paper to continue cooling. Cookies need about 1 to 2 hours to set up. Store in airtight metal containers. YIELD: About 3 dozen cookies.

FROSTED 2 c pecan halves 1/4 c butter 1 tsp kosher salt 1 tsp salt 1 tsp cinnamon 1 c white granulated sugar

Directions: Heat oven to 300˚F. Line baking sheet with parchment paper and spray with nonstickcooking spray such as Pam. Beat egg white with the water until frothy but not stiff. Add pecans and stir until completely coated. Combine salt, sugar and cinnamon and add to the nuts. Toss well to coat. Pour mixture onto the baking sheet. Bake about 30 to 40 minutes, turning the nuts every 5 to 6 minutes. Remove from oven and stir once more before cooling on a rack. Store in a tightly covered container.

SPICY 2 c pecan halves 1/4 c butter 1 tsp kosher salt 1/2 c light brown sugar, packed 1/4 tsp cayenne 1 tsp chili powder

Directions: Preheat oven to 350ºF. Mix butter and spices in a pan and remove from heat. Then add pecans and cover well. After a few minutes, recombine the pecans and spice mixture and spread the spiced pecans in one layer on a baking sheet. Roast for 15 minutes, tossing several times top keep from burning or roasting unevenly. Remove from oven and cool on a wire rack. Store in a tightly covered metal container.

CURRIED GARLIC 4 c pecan halves 4 tsp Worcestershire sauce 1 tsp curry powder 1/4 c (4 T) butter, melted 1 T garlic salt Dash of Tabasco

Directions: Stir butter and spices; mix with 4 c of pecans. Spread out in large flat pan and toast at 250ºF for 30 to 45 minutes. Stir occasionally while toasting. Use slotted spoon to spread on a paper towel to cool and drain. Store in tightly sealed metal container after completely cooled (several hours or overnight).
