A

t the turn of the century, Star Shoot was the unlikely hero of horseracing whose legacy almost didn’t

happen.

This story begins in 1898, far away in Ireland.

Fathered by the British 1893 Triple Crown winner Isinglass, Star Shoot entered the world with great anticipation and promise.

Once trained, the 2-year-old proved a contender in the British racing circuit, finishing second at the Summer Breeders’ Foal Plate in June 1900. He went on to win the Hurst Park Foal Plate, British Dominion Two-YearOld Plate and the National Breeders’ Produce Stakes.

While Star Shoot was at first a budding starlet within the horseracing community of Britain, he later became plagued with the aftermath of a sickly childhood. He began to experience respiratory issues and later developed soft feet. Ironically, Star Shoot’s British owners thought that he would never be a good breeding prospect in light of his poor health. He was sold to an American Thoroughbred importer named John Hanning in 1901, and for far less than what other horses of his breed were being sold for. He was then transported to Runnymede Farm in

Paris, Kentucky where he stayed until John E. Madden purchased him in 1912.

As Hamburg residents know, John E. Madden was an early American breeder who put Lexington on the horseracing map. Madden was also the owner of the near 2,000 acre horse farm that was once located here in Hamburg. Star Shoot likely roamed it’s sunny hillside pastures that are now occupied by bustling businesses.

At the farm at Hamburg Place, Star Shoot was the sire to many noteworthy offspring.

Grey Lag, winner of the 1921 Belmont Stakes, and the incomparable Sir Barton, first winner of the Triple Crown, were among the successful horses that came from Star Shoot’s family line after being deemed “unbreedable” by previous owners.

Finally succumbing to his routine sickliness, Star Shoot died of pneumonia on November 19, 1919. He was buried in the original equine cemetery at Hamburg Place.

He now rests in the relocated Hamburg Place Horse Cemetery, which was created when the first cemetery was moved in 2005 for development purposes. It is located in between WalMart and Lowes. The cemetery is currently home to 18 Kentucky racehorses, including Sir Barton, and can be found on Sir Barton Way near Walmart and Lowes.

YMCA BACK-TO-SCHOOL RALLIES

The YMCA — in partnership with Fayette County Public Schools and LFUCG and in collaboration with 16 Lexington neighborhoods, the Lexington Division of Police, the NAACP, Transylvania University, and the Georgetown Neighborhood Association — is hosting the eighth annual Lexington Neighborhood Back-to-School Rallies Aug. 1.

Thanks to the generosity of sponsors like Kentucky Utilities (lead sponsor), the United Way of the Bluegrass, Passport Health Plan, PNC, the Rotary Club of Lexington, and Amazon, these free rallies will provide more than 5,000 elementary, middle and high school children with backpacks and school supplies.

Each neighborhood will distribute supplies for all grade levels. The Back to School Rallies program, an initiative of the Fayette County School District, has been facilitated by the Y since 2011. During that time, nearly 35,000 children have been served through this important program.

EARLY START/KINDERGARTEN – FIFTH GRADE REQUIREMENTS:

1. A current Kentucky Immunization Certificate indicating: a. Two MMR, at or after age 12 months, second before kindergarten, between ages 4-6. b. Series of three Hepatitis B vaccines c. Two or three HIB immunizations (according to brand). d. Four doses of DTaP, fourth dose on or after 4th birthday. e. Age appropriate doses of Poliovirus, the final dose on or after 4th birthday. f. Two Varicella (chicken pox) vaccine after the first birthday and the second between ages 4-6 years; or proof of having had the disease.

2. A physical examination done within one year prior to or 30 days after entering school.

3. A Kentucky eye examination done by a licensed ophthalmologist or Otometrist by January 1 of the year of enrollment.

4. A Kentucky Dental Examination done by a licensed Dentist or Dental Hygienist is required for all 5 or 6 year olds enrolled in public school, by January 1 of the year of enrollment.

SIXTH – 12TH GRADE REQUIREMENTS:

1. A valid Kentucky Immunization Certificate including all of the above immunizations.

2. A Tetanus, Diphtheria and Acellular Pertussis (Tdap) booster is required if the student is between 11-12 years of age or older regardless of interval since the last dose of Tetanus.

3. A second dose of Varicella (chicken pox) vaccine is required for sixth – twelfth grade entry.

4. One dose of Meningococcal vac-

cine for sixth - twelfth grade entry, age 11 or 12 years or older.

5. A Physical Examination done within one year prior to or 30 days after entering sixth grade.

OUT-OF-STATE TRANSFER STUDENTS:

1. A valid Kentucky Immunization Certificate.

2. A Physical Examination done within one year prior to or 30 days after entering school.

TUBERCULOSIS REQUIREMENTS:

1. A Tuberculosis skin test or BAMT (Blood Assay for Mycobacterium Tuberculosis) is required to be given to the student and read prior to enrollment in school if the student has lived outside the U.S.A. or Canada for more than 3 months and has not previously been enrolled in a public school in the U.S.A. 2. The Tuberculosis skin test must have

been performed and read within three months before the date of enrollment.

(Exchange students are screened through IAKSS.) 3. If the Tuberculosis skin test is reactive, the student must have a chest x-ray and medical examination prior to enrollment.

Food author Ronni Lundy’s new book is Sorghum’s Savor

I

f you’re already a fan of Corbin, Kentucky native and food writer Ronni Lundy, you know not to pick up her new book, Sorghum’s Savor, expecting a conventional “cookbook.” The books that came before it — although they contain wondrous recipes — aren’t cookbooks either (Butter Beans to Blackberries; The Festive Table; and Shuck Beans, Stack Cakes and Honest Fried Chicken.)

Her writing, then as now, would be better characterized as part anthropology, sociology, family history, travelogue, and part southern literary renaissance.

She responds, “I would have to own that while I love to cook, recipe is not my primary interest in writing about food. I am profoundly grateful to those for whom it is and for their work, which informs mine, and I try to live up to good practice and honor great cooking when it comes to writing recipes, but I am as interested as much in why we are doing what we’re doing when we stand at the stove as the how. And that interest is personal, political, sociological and extremely historical...Food is an easy door into strange cultures and stories. Plus you get to eat while you’re doing all that research.”

“With Sorghum’s Savor, my interest in its past had to do with discovering why sorghum syrup—once made all across the continent—has persisted as a process and a beloved flavor in the mountain south when it has faded elsewhere. There were surprising lessons of politics and economics I discovered, but also there was the revelation of an ethos of independence, and the appreciation of complexity in taste (mixing your sweet with a little bitter and tart) that inform my understanding of the culture I come from. Maybe you could say that’s poetry in there, as well, then.”

She incorporates a few non-traditional recipe options for sorghum in the new book (Rosh Hashanah bread, anyone?).

Asked about other sorghum surprises she’s discovered along the way, she says they weren’t all unexpected. “I knew it worked in Japanese, Korean and Chinese dishes because I’d been doing that for some time.

I was surprised and delighted how beautifully it worked with Bengali recipes and with masala in general. That’s logical, of course, when you consider that jaggery is a traditional sweetener across India and is basically sugar without the molasses removed. We’re working in the same general flavor palate.”

“I also was intrigued to find it working with tequila. Bourbon was a given for me.

I mean, they’re practically cousins, but the

Sour-garita that Anna Bogle and Amelia Kirby came up with at Summit City Lounge in Whitesburg actually made me want to drink it. And I can tell you that tequila and I haven’t been on speaking terms for decades.”

In the book, she describes sorghum syrup as having “what my mother would have called ‘a whang to it.’ That’s the slightly sour taste that cozies up perfectly with the intense sweet of sorghum when it first hits the mouth. It resolves into a buttery resonance, what chefs like to call sorghum’s umami…” Which leads to questions about all the interesting ways she’s found to make the “whang” work for a dish.

“I’m my mother’s daughter,” she says, “so ‘whang’ is always high on my list of great attributes for a food. I often put a spoonful of sorghum in a pot of something knowing you will never taste it flavor forward, but it will resonate in the overall experience. This works really nicely when cooking with meat, particularly in marinades.”

“Sometimes you don’t want that, though. Here’s how to think of it in musical terms: Sugar is a soprano; honey is alto; maple syrup is tenor sorghum is baritone.

Imagine your recipe sung in a deeper voice. Sound like a good idea? Use sorghum then.”

Lundy is currently at work on a book called Victuals about “the contemporary Appalachian sustainable food movement.”

She says, “You will want it because it has the most stunning photography I have ever seen in food world. I’d tell you the name of my photographer and his wife, who is the food stylist, but I can’t afford for anyone to hire them away just yet. Stay tuned…”

Parents are partners at neighborhood Montessori veniently and quickly accessible for Hamburg, Andover, and all southeast Lexington parents. Campbell says, “The church has a beautiful large lower level with lots of natural sunlight. Our classrooms are open to one another which allows our staff to provide each other support throughout the school day. Extra adult hands can be available when one classroom needs them. It is surprising how quiet the classrooms can be when all of our students are hard at work on their activities, even with the ‘open concept’ classroom, which is not unusual – other Montessori programs operate in a similar way – but it is a bit unique. However, this layout allows our oldest children to have interactions every day with our toddlers and that has proven to be very beneficial to all our students.”

She followed Dr. Maria Montessori’s lead in determining what age groups Harmony Day would serve. “She began with children ages 3 to 6 and that is where we started.

We have since added a Toddler Program for children ages 18 months through 3 years.

We will add an elementary program when we have families asking for and ready to support an elementary program.”

She explains, “Montessori classrooms are multi-age classrooms with student ages spanning over three years. This allows for a classroom community to grow —older students giving lessons or reading to our younger students. Everyone in a Montessori classroom experiences needing help, practicing asking for help – not just from the adults but also from other children, and everyone in a Montessori classroom experiences giving help. It works beautifully and creates very peaceful and supportive environment for learning to take place.

H

armony Day School founder Michelle Campbell moved to Lexington’s 40509 neighborhood from Winchester in 2000. Creating a Montessori program, she says, “had been a long time dream of mine,” and she set about acquiring the necessary tools and experience to realize that dream. “It’s always been important to me to have a quaint neighborhood school. At the same time, I recognized it was important that I have vast experience teaching and observing in a variety of Montessori school settings before launching into designing my own school. Every program has its own unique qualities and I knew I wanted my school to be truly special. After four years of teaching in traditional programs and 12 more years of teaching in four different Montessori

programs, I felt ready to create Harmony Day School.”

Our neighborhood, here in southeast Lexington, she says, was an “obvious choice.

My family, friends, and neighbors are here and I wanted to offer them a high quality Montessori program for their children. In 2010, there were not a lot of options here in the Hamburg, Andover and Richmond Road areas for young children or young families wanting an early childhood education for their children. I wanted to give them something special. ...With the explosion of development and growth here – especially among young families, it seemed ideal for its own Montessori Program.”

hat would parents find if they dropped in on a “typical” day?

They would discover that there is no such thing as a typical day in a Montessori classroom. Campbell says, “There is always something interesting happening. Students are learning foreign language, planting seeds or seedlings, studying whatever insect they might have discovered in our outdoor classroom. It’s very child-centered, so while we always have new daily lessons planned, we also have many many impromptu lessons based on whatever interesting thing the child discovers on their own. One year I had a student who had developed an interest in learning about the Titanic. Not a typical topic of conversation in a primary 3-6 year old classroom, but he was fascinated so we rolled with it. He was a very advanced learner so he studied geography – made beautiful maps of the ship’s voyage, even studied ocean

currents and the period fashion as part of his Titanic study. In a Montessori classroom, it’s impossible to know what any one day might bring. Montessori guides are very flexible because we recognize it is about the child and the child’s learning process. We are there to introduce lessons and guide the students towards life success.”

Parents often ask themselves how they’ll know when their child is ready for preschool.

Campbell recommends parents “observe their child for cues to readiness. Has the child given up their morning nap? This should be dictated by the child and should not be pushed or rushed. Once the child gives up their morning nap, the parent should also be observing an active and interested child. If the child is curious and wanting more stimulation than the home environment provides, it’s time to enroll. A lot of preschool require a child be toilet trained. At Harmony Day School, toilet training is part of toddler curriculum.”

Once enrolled, parents will find that the day is “student-centered. We have four different student areas at the school. The classrooms, of course, but also an afterschool room for our children who stay beyond the half day noon pick up and the 2:30 full day pick up times. This room offers more play based materials to provide our students a bit of a ‘down time’ from the classrooms. We also have an indoor gross motor room. This space provides the young child a place to appropriate throw, jump, slide, spin and crawl.

Very important tasks to the child learning about their body and refining their gross motor movements.”

Parents are an integral part of the Montessori educational experience. Campbell says, “We look to parents as partners in their child’s education. We offer parent education nights, parent observations, parent teacher conferences and family fun events. This year our goal is to add a school vlog (video blog) to our school website. Our hope is when a parent learns of a new lesson their child has received, they can watch the vlog to see that lesson. We want to offer opportunities for our parents to really understand the child’s school day experience and to further understand the amazing gift they have given their child by enrolling them in a Montessori program.”

Asked to finish the sentence, “when my child ‘graduates’ from Harmony Day, he or she will be able to……” Campbell responds, “At the age of 6, I would say a child will leave Harmony Day School having developed a great deal of independence, self-pride, amazing coordination – gross motor and fine motor and a very strong sense of order. Because they have developed those skills, they will have begun to read, some will have learned

They will have an understanding of other lands and the people who live there.

They will have an ear for languages, and I could go on and on. But what a Montessori education really creates are life-ready children. Children who know how to study, are self-motivated learners and are excellent time managers. They initiate activities independently, rather than waiting to be told what to do, and they know how to work in groups and divide tasks for group collaborations. Montessori students are prepared for life success, they make excellent employees and they are among today’s most innovative adults. And who doesn’t want that for their child?”

About Montessori “The first Montessori program opened in Rome, Italy in 1907.

It was based upon the observations and principles of Dr. Maria Montessori, a keen observer and visionary. She was the first woman to graduate medical school in Italy, though she never worked as a physician. Upon graduation, she began her work with young children implementing her knowledge of child development acquired during her years of medical training. She revolutionized the education field. Even traditional programs make use of some of her principals. Furniture that fits the size of the student is a great example of this. Before Montessori, child-sized furniture was unheard of. And of course, the child’s classroom should be sized appropriately for the child, rather than the adult. It’s a philosophy founded on the child’s best interest, the child’s level of development and the child’s readiness. It’s based on good common sense.

All Montessori Guides must be certified by a nationally recognized training program. The training program itself varies in length but is rigorous and very thorough. At the end of the training program, all prospective guides must complete a year of internship at a suitable accredited school. At Harmony Day School, we are blessed to have a very diverse teaching staff who, in addition to Montessori certification, also have degrees from various colleges and universities. We even have classroom teacher with advanced degrees.

I have taught in traditional and Montessori programs. Montessori spoke to my heart because it is child-centered rather than teacher or curriculum based. We are designed to meet the needs of each student. We have thousands of lessons available during a child’s educational experience with us, which, if enrolled in our toddler program at age 2, will span four to five years. But which lessons are chosen at any point in that timeframe is really about

the child. What interests them? Do they have the attention span to be successful with the materials? Have they mastered the previous lessons? It’s about them, and that’s refreshing in the education field. It’s is also very natural and follows the development of the child, which is so important.

Montessori programs are 100 percent about the child. Their development, their readiness. Lessons are given to each child individually based upon the child’s level of readiness. Montessori teachers believe birth to age 6 is the most important time in a child’s life. At this age, children are learning without effort. It is innate and unconscious. So exposing the child to a multitude of experiences is very very important. In our culture, we tend to feel learning should be restricted to letters, numbers, shapes and colors. But we are missing a real opportunity if that is the extent of information we offer the child at this age. They benefit greatly from hearing foreign languages, experiencing art and studying classical art, listening to classical styles of music. They love to observe and study insects and plants and adore learning about life in other cultures. The young children’s brain is capable of so much more than we give credit for. In Montessori programs, we offer thousands of experiences in these subjects to our students under the age of 6.

We are so lucky in Lexington to have Montessori programs that span from 18 months all the way through high school. That is so rare to have in your own backyard. There are fewer than a dozen Montessori High Schools in this country, so having our own here in Lexington is huge. Of course, all Montessori teachers would love to see all of their students continue in Montessori beyond the age of 6, but we also recognize that children benefit greatly from having any Montessori experience.

Lexington’s 24th annual Tour of Remodeled Homes in Lexington is just the opportunity you need to check out all those stainless steel appliances and granite counter tops in action before you start drilling.

Past tours have featured everything from

aging-in-place upgrades, room-by-room, to lifestyle enhancing additions like outdoor spa areas and pool houses.

The Tour of Remodeled Homes is presented by the Lexington Remodelers Council, a division of the Home Builders Association of Lexington, and has been a tradition in Lexington since 1991. The purpose of the tour is to showcase notable examples of state-ofthe-art craftsmanship in Lexington.

The Tour represents an excellent opportunity for Show, don’t Tell. He recommends, “go into the tour with a game plan. What would you like to see? Keitz Construction is on their third year of the Tour. This year’s project is an ambitious whole-home remodel, “taken down to the bare studs” according to owner Nick Keitz.

From his perspective, one of the biggest challenges as a builder/remodeler is “competing with non-insured, non-licensed people.”

The Tour represents an opportunity for homeowners (and prospective homeowners) to view the work of licensed contractors and remodelers. Keitz’s advice is “don’t try to do all the projects in one day.”

Chip Crawford of Crawford Builders said they have had projects on the tour every year since its founding. He said that he normally meets 600-800 people during the two-day tour.

This year’s home by Crawford Builders is a historic home from 1900, located on an 18 acre horse farm on Old Frankfort Pike. Their team has added 2500 square feet to the historic property, as well as a three car garage.

The biggest change Crawford has seen since the beginning of the tour has been the popularity of energy efficiency. In incorporating the latest technologies, Crawford says they have made their 115-year old home twice as efficient as the average new home, earning a Home Energy Rating (HERS) of 43.

Crawford said this can be done in a number of ways, from updating windows and doors to equipping a home with geothermal heating and cooling.

Crawford said that while a remodeled home is typically more expensive than a new home, one should consider cost versus value.

It is important for many growing families to have homes that cater to their unique needs.

“A lot of people live in the houses through the project,” he said. “It’s a very intimate thing.

Top 10 Tips for Homeowners considering a Remodel

Addition on Old Frankfort Pike

Crawford Builders: This 1900 home was purchased by the current owners in the hopes of restoring its original character. A 2,600 square foot addition was added to the rear of the home, but everyone involved in the project strived to maintain the historical aesthetic.

Wherever possible, existing materials and finishes were used including door hardware, the staircase handrail used as a kitchen island foot rail, and the original window glass used in the new kitchen cabinets. Think about the Lifespan of your House. Will you be there for five years or 25 years? Is your family expanding, or are the kids going off to college soon?

What is the resale value in your neighborhood? Have you considered aging in place, or do you plan a post-retirement move? Do Grandma and Grandpa plan to live out their golden years in the mother-in-law suite?

Prioritize. Know your wish list and your dealbreakers, your must-haves versus your fantasies.
