Hakuba Brewing Company Update Hakuba’s local brewery continues to go from strength to strength and is working on a special anniversary beer to celebrate Hakuba47’s 30th anniversary. Hakuba47 will be selling at their excellent Louis Pizza restaurant, and this extra hoppy pale ale will be well worth the trip! Hakuba Brewing Company has been very busy over the summer, having closed its Iwatake premise and moved to a larger, more central warehouse on the main highway. They have invested in a bigger and better brewhouse and have also tripled their fermentation capacity to give you more of what you want! With the extra tanks, they hope to knock out a few new recipes this winter, including a Double IPA (expect huge hop flavors and higher alcohol levels) and also a delicious Saison based on their Elderflower infused Gold recipe. Head brewer/Owner Dan Cockburn said, “I’m delighted with the new brewery as we have been fighting to keep our favorite beers in stock since we started four years ago.” Expect some exceptional beers this winter! The most popular restaurants do get very busy, so it’s best to book in advance. Not all of Hakuba’s restaurants have English speakers on the other side of the phone, so it is best to get your Japanese speaking accommodation staff to book for you. Local restaurants rely on seasonal business, and last-minute cancellations are very damaging to their businesses. Due to this, most restaurants have strict cancellation policies... MIMI’S This season, Mimi’s have announced the addition of private banquet rooms to the restaurant. An extension of the elegant Eastmeets-West theme of Phoenix Hotel, the banquet rooms are inspired by traditional Japanese design and art, with elements of the iconic Great Wave artwork featured around the rooms accompanied by lamp-lit spaces. Two banquet rooms are separated by a Japanese sliding door for the option of converting the two rooms into a single large room to accommodate up to 20 guests, perfect for families, friends, and colleagues. Executive Chef Kazuyuki Shimamoto san and his lovely wife Yuki have for years turned their international expertise to the interpretation of the freshest local produce of the Shinshu region to provide a dining sensation Mimi’s Page 78
SPICE UP YOUR LIFE Sometimes when it is blowing a storm outside all you want to do is get on the phone and order something for everyone. A new addition to the Hakuba food scene for the 2019/2020 season is Spice Lab Delivery At Spice Lab the small menu focuses on fresh healthy style options, conveniently delivered to your door throughout Hakuba Village. Some of the items include handmade pita bread with hummous or smokey eggplant. Israeli falafel with tahini, curried lentil tomato and coconut soup. Moroccan style chicken tagine and spicy tomato harissa chickpea stew and with Warm sticky fig pudding or Almond matcha Baklava. SPICE LAB Page 27
ALPINE GRILL BEST RIBS IN HAKUBA What could be better after a big day on the slopes, a big meal to follow! You can do both in Hakuba, on the mountains during the day, as well as at Alpine Grill, Echoland’s original steakhouse in the evening. On the menu are pork spare ribs that, after being stewed in Chef Kazuharu Watase’s secret homemade sauces of spices and vinegar for over three hours, are so tender that you don’t even need a knife to eat them! A new addition to Sharaku this season is master chef Karaki, with over 30 years experience intimately involved in producing fine Japanese food. Karaki-san operates his own restaurant in Chino, Nagano and this winter will bring his expertise of Nagano produce to Hakuba. Karki-san is in demand globally, having been invited to guest chef in many fine hotels and restaurants around the world, including prestigious venues in London, Canada, and Tokyo. Japanese food means different things to different people, but anyone visiting Sharaku will learn that the horizon is forever widening. With its wooden panels and antique furniture, Sharaku’s contemporary restaurant fit-out pays homage to the Ukiyo-e artist who has lent the restaurant his name SHARAKU Page 70

Kushikatsu is basically just a deep-fried, skewered dish, usually made with chicken, fish, or pork. Many types of seasonal vegetables are also used, such as radish or mushroom. “Kushi” in Japanese means skewer, and katsu means fried (usually in reference to pork), but many other items can be used. HIGE at the lower end of Echoland is the place to be in Hakuba for the best kushikatsu in the resort. HIGE Page 59 A new addition to the Misorano dining scene is Meteor Dining in the Meteor Lodge. Owned by popular local Tetsu Fuskushima, the restaurant will be run by his son, Masa, a certified chef who has honed his skills in restaurants in France and New Zealand. Italy’s northern regions are known for their hearty, rustic cuisine that is designed to warm you down to your toes after an exhilarating day on the slopes in the cold mountain air. And now you can enjoy that same cuisine right here in Hakuba at La baita in Wadano. Newly opened in La Neige Higashi kan, La baita will showcase an arrangement of mountain cuisines, but the centerpiece of the menu is an L-bone steak, giving customers unforgettable dining experience. WHAT YOU’LL BE EATING IN HAKUBA IN WINTER 2020 Hakuba is not your typical mountain town, it has a well established foodie culture, waiting for you to explore. Here are some of the best restaurants in valley
as you quaff a pint or two of your favorite beer, Hakuba features a number of great pubs with friendly atmospheres and more importantly, tasty menus. Cherry Pub just a stone’s throw from Echoland features gourmet pub food including the great New York cut steak. Aptly named The Pub and located in lower Wadano is Hakuba’s oldest pub. They serve an array of pub food and drinks from around the world. The Taproom on the edge of Happo is a favorite for craft beer lovers with more than 17 beer to choose from. Combine this with their fish and chips and it could be a long evening. Our final pub is The Brew Pub in Iwatake, come for either lunch or dinner, the nice guys there will even pick you up!
FINE DINING Hakuba is home to some of Nagano’s most elegant restaurants where creative food and enchanting atmospheres meet for exquisite dinners to remember, Mimi’s at the Phoenix Hotel in lower Wadano is helmed by a Japanese master chef, Mimi’s showcases some of the unique products found in the Shinshu region and presented with exquisite Japanese sensibility. Misorano’s Traumerei is consistently rated as one of Nagano’s top restaurants and fine dining establishments. From fresh seafood to rack of lamb and steaks, paired with probably the best wine choice in the valley.

day spent out on the slopes at one of the ten Hakuba Valley ski resorts can certainly inspire a mountain-sized appetite. Fortunately, Hakuba can satisfy any gastronomic desire with the valley’s incredible assortment of restaurants. So give your taste buds a treat and come along on tour to some of the Hakuba Valley’s dining highlights.
ASIAN
We start with Jing Hua on Olympic Road in Misorano. Jing Hua is a place for deliciously prepared Singaporean dishes, including xiao long bao. Experience the rich exotic flavors of India at Indy Momo in Mizuho. They have a full tandoori oven for everyone’s Indian favorites. You can also spice up your day at Thaifoon Cafe in Happo, where they prepare a range of different cuisines from across Asia

Serving grilled dishes that integrate regional ingredients with seasonal influences Lava Rock at the Courtyard by Marriott Hotel just a short walk above Echoland is the perfect location for a night out with friends or a romantic dinner for two.

ou shouldn’t leave Hakuba without trying the delicious Wagyu beef on offer at one of Hakuba’s famous eateries Kobeya. But first let us give you information on what makes Wagyu so special.
What is Wagyu? Japanese Wagyu beef is popular for having a rich, juicy and buttery flavor as well as a well-marbled fatty texture. In fact, it is highly marbled that the fat is almost as prominent as the lean meat. When it is cooked right, the well-marbled portion of the meat melts and dissolves into the surrounding muscle, making the overall texture soft, tender and utterly transcendent.
First cattle in Japan Cattle were first introduced in Japan about 150 years ago with the opening of ports to the western powers. Originally the Japanese were not accustomed to eating beef and cattle were raised to provide the power to plough the fields for rice cultivation or for transportation of goods. In fact, cattle were used a long time ago in Hakuba to transport salt from the nearby Sea of Japan to the castle city of Matsumoto in the south. The foreigners who moved to Japan at this time introduced the custom of eating beef and the people were amazed to discover its delicious taste.
What makes local Shinshu Wagyu so special? In Shinshu, the old name for the area of Nagano, the cattle are raised according to strict tradition in an ideal environment. Nagano is blessed with both clean water and clean air. Combine these with an abundance of rain with moderate levels of humidity and you will have the perfect condition to raise cattle. The belief is that the mellow, relaxed and happy cows raised in a stress-free environment make better meat. We kid you not when we tell you that to relieve stress and muscle stiffness, and to ensure that the fat is well dispersed, local farmers use a special secretive process to raise the cattle that include listening to soothing
music and daily massages! Some farmers even go through the trouble of brushing Japanese sake on the cattle’s coats to soften their skin; this practice is believed to improve the quality of the meat. Another part of the Shinshu wagyu legend is the cattle’s special diet. Shinshu beef are fed organic grains, sake mash and plenty of Japanese beer. Beer seems to stimulate hunger which is necessary to keep the cattle on feed during the hot summers when their appetites decrease. Increased food intake leads to higher fat production and retention, which contributes to the distinctive marbling in the beef.
Wagyu @ Kobe-ya As you enter Kobe-ya, you will no doubt be greeted by Naoi-san, a gentle giant man who knows a thing or two about both wagyu and beer! Choosing what to eat at Kobe-ya can be a little difficult because everything seems tasty, but with the help of the English speaking staff who will recommend what to order and how much to order your wagyu and vegetables will arrive at your table. Now here is where it gets interesting; on the center of your table is a hot plate for the wagyu and vegetables to be cooked in. It is a fun way to cook as everyone on your table gets involved in making sure the wagyu is prepared just the way you like it. Kobe-ya has a lot of both Japanese and western side dishes that can be combined to make it a kind of izakaya feel to the restaurant. Pair your wagyu with one of the Japanese or international wines and it will be a memorable day.
Was Kobe Bryant named after Kobe-ya restaurant? It’s true! Well sort of true….World famous NBA superstar Kobe Bryant was named after Kobe Wagyu beef. After a taste of Kobe beef, Kobe Bryant’s parents were so moved by the succulent taste that they decided to name their son after it. So not directly named after Kobe-ya Restaurant but definitely named after the prized Japanese delicacy! KOBE-YA Page 55

Nothing satisfies quite like a steaming bowl of ramen, full of springy noodles. Get slurping your way through these ramen restuarants.
Ramen Daigaku located at Iimori slopes at Hakuba Goryu first opened in Nagano in 1960 when most of their part time staff where university students, daigaku translates in English to university. The ramen chain in one of the most famous in Nagano. A favorite is shoyu ramen, a great tasting ramen to keep you warm on the slopes.
A favorite of many, in fact their namesake in Matsumoto regularly has a line outside. Zunpachi is located at the Shirakaba slopes on Happo ski area. Their signature ramen is shoyu tonkotsu, a soya based pork bone soup. The vegetarian ramen is healthier option, in fact it is one of the best vegetarian ramen dishes around.
Singaporean style ramen Zha Jiang is piping hot, rich minced pork and soya bean sauce. It is a perfect match for the slightly thick noodles. If you prefer a slightly spicier sauce, try adding some chili and grated garlic miso or some black vinegar. Combine your meal with the excellent Xiao Long Bao dumplings.
Bonne Neige at Warabadiara slope is both a ramen and curry restaurant. It is a good alternative to Green Plaza when the resort is busy.

Located across the road from the main Hakuba Train station, Emu, pronounced “em” is immensely popular among locals and tourists alike. The restaurant serves ramen made with carefully prepared soup and local ingredients. Be sure to try the fried rice and gyoza as well - they go perfectly with the ramen!
Since its opening a few years ago Tottsuan has become Hakuba’s favorite ramen restaurant. Named after a famous Japanese animation character, who the owner and chef is said to resemble. Tottusan Ramen is located on the 148 highway about an 8 minute walk from the main Hakuba Station. Get there early as it does get busy.
If you like your ramen hot as in spicy hot then the Hull restaurant in Escal Plaza on Hakuba Goryu is the place to go. Red Devil Ramen as its name would imply, is incredibly spicy. Don’t be surprised if—like other customers— you break out in a sweat trying to conquer this spicy bowl!
Bankokya is a cozy Thai restaurant at the Nakiyama base on Happo-one. Not your typical ramen but they have a variation of the spicy shrimp Thai soup that has a non-traditional twist with the addition of ramen noodles. Open for both lunch and dinner.
Jacky’s Kitchen at the top of Tsugaike Kogen is getting popular, the ramen is a great belly warmer to hit the Tsugaike powder.
Slopeside at Tsugaike Kogen, Junes has a range of different ramen including extra spicy for the cold days.
If Taiwan had a national dish, it would be beef noodle soup. Meteor Garden is located in Misorano, close to 7-11 convenience store.
This is one of the spiciest ramen that is found in Hakuba. Liebe is located at the base of Happo-one on the Nakiyama base.

Sushi
The most popular Japanese food, it is basically made of white rice prepared in sushi vinegar then topped or combined with fresh or raw ingredients such as seafood, fruits or vegetables. There are different kinds of sushi preparations. Nigiri Rice is formed into a ball or a chunk and topped with fresh seafood. Norimaki Rice, fresh seafood and vegetables all rolled up in sheets of dried seaweed called nori with the use of a bamboo mat. These are then cut up into small, bite-sized pieces. Temaki Basically the same as norimaki, but instead of being rolled in a cylindrical shape, the rice and all the other ingredients are rolled into a cone shape. Chirashi The rice is not pressed into any shape or form here, but just laid out in a bowl and all the seafood, vegetables and other ingredients are spread out on top of it. Inari Sushi rice is made as a filling for small deep fried tofu bags or aburaage.
Sashimi
Another popular Japanese fare, it consists of thinly sliced raw seafood. Freshness is the key in serving sashimi because it is not served with anything else except a dipping made of soy sauce and wasabi or horseradish paste, and some slivers of fresh vegetables. The common types of sashimi are as follows: Maguro – Tuna Ebi – Prawn Tako – Octopus Toro – Fatty Tuna
Ika – Squid Saba – Mackerel Sake – Salmon Uni – Sea Urchin
Yakimono
A way of preparing dishes by pan-frying or grilling. Some popular examples are: Kushiyaki The Japanese version of kebabs, these are grilled skewers of seafood or meats and vegetables.

Takoyaki A common street food in Japan, this is octopus mixed in a batter dumpling and fried in spherical griddles. Yakizakana Fish grilled in open flame and served with grated daikon or white raddish. Unagi Eel grilled and basted with a heavy soy sauce marinade. Okonomiyaki pancakes made of savory ingredients such as meats and vegetables.
Donburi
Literally means bow. It is a complete meal of steaming hot white rice in a big bowl topped with various dishes, such as beef, pork or seafood. The toppings can be cooked in different ways such as the following: Oyakodon “Mother and Child” bowl. This is basically a tandem of chicken and egg topping. A special variation of this would be fresh salmon and roe. Gyudon Beef donburi. The beef is braised or stewed in a mixture of soy sauce and onions and topped with raw egg. Katsudon Pork cutlet donburi. Deep fried pork cutlets are topped with egg and young onion leaves. Tendon Tempura donburi. Lightly battered pieces of seafood and vegetables are deep fried and dipped in a mixture of soy sauce and miso. Tekkadon Tuna donburi. Chunks of raw tuna are served with rice and strips of nori seaweed. Unadon Eel donburi. Slices of eel are grilled and basted in a thick soy sauce mixture.
Nabe
Yakitori Pieces of chicken, and other chicken parts barbecued on a stick.
Nabe is a style of hot-pot cooking. The dishes are usually prepared at the table. Expect to find plenty of vegetables with mixed with seafood or meat.
Gyoza Originally from China, these are dumplings
Chanko-Nabe The traditional food of Sumo wrestlers as
part of their weight gain diet. Very rich in protein it goes very well with beer and rice. Shabu-Shabu Various ingredients such as meats, seafood and vegetables are all cooked in one hot pot of soup or stock base right on the diner’s table. The one-dish meal is served with various dipping sauces and a bowl of rice. Sukiyaki Beef sliced in thin slivers is cooked with leafy vegetables in a mixture of mirin, dashi, sugar and sake. This is then cooked right on the table and served with raw egg that serves as the dipping sauce.
Noodles
Noodle dishes have mainly been imported from China and changed to suit Japanese palate. Soba Thin buckwheat noodles, also served in a soup base and topped with other ingredients .They can be served either hot or cold Yakisoba Fried Japanese noodles. Soba noodles are stir-fried together with various kinds of meats, seafood and vegetables and soy sauce. Ramen An import from China, this Japanese noodle dish is based on a thin, spaghetti-like noodle served in a hot soup base and with different kinds of toppings.
Yoshoku
Yoshoku is the name given to dishes influenced by Western styles of cooking but developed independently in Japan. Most restaurants provide both chopsticks and cutlery, so you can choose which works best for you. Guratan (gratin) Fillings are topped with cheese and a white sauce made from milk, butter, and flour, which is then baked in an oven. Chicken and seafood, such as crab and shrimp, are popular fillings. Korokke Mashed potatoes mixed with sautéed diced onion and ground beef, shaped into a ball, coated in breadcrumbs, and fried. Believed to come from the European “croquette.” Eaten with ketchup or Worcestershire sauce. Hambagu (Hamburg steak) Ground beef or pork is mixed together with sautéed diced onion and breadcrumbs.
