 o CHERNOBYL NUCLEAR ACCIDENT  Ukraine's a site of the first ever large-scale nuclear accident in human history: Chernobyl Nuclear Power Plant just about 100 km away from Kyiv, Ukraine's capital.  In 1986, one of the Plant's nuclear reactors caught fire and exploded, emitting deadly levels of radiation and sending airborne a cloud of radioactive particles that spread over the continental Europe.  Chernobyl nuclear accident is a level 7 event on the International Nuclear Event Scale, the only other of the same magnitude is Fukushima Daiichi nuclear accident of 2011. (source:   The ground around the Plant is still radioactive and no people are allowed to live within 30 km in diameter "no man's land" exclusion zone surrounding the Plant.  In 1986, authorities conducted "forced" evacuation of people, who left most of their belongings behind.  The Plant continued to produce electricity by its other undamaged reactors until the Plant was closed in year 2000.  Chernobyl documentary in English language is at www.youtube.com, search for "Chernobyl disaster incident" o RADIATION  Reportedly, current levels of radiation in Kyiv, Ukraine's capital, do not exceed the levels registered in the rest of Europe.  Background levels of radiation Ukraine-wide are controlled daily.  There is a Governmental program to monitor radioactivity of fresh foods and meats sold in local markets. FOODS: TRADITIONAL, VEGETARIAN, ORGANIC, KOSHER, BABY FOOD FOOD: TRADITIONAL UKRAINIAN - flour and cereals and many first courses o TRADITIONAL SOUPS, SNACKS, MAIN COURSES, GARNISHES: traditional lunch starts with a soup  SOUPS  "RED BORSCHT": a vegetable soup, colored up by beetroot, made on a basis of meat broth. Beetroot, cabbage, potatoes, onions, carrots, parsley, dill. It's a popular believe that borscht tastes better the next day. Ingredients are not mashed into a cream soup. o Better tastes with:  Crashed/milled garlic (1-2 cloves) added before adding sour cream.  A tablespoon of sour cream, which is stirred after being added. o Served with pastry/small buns with brown crust at the top called "pampushki" soaked in a sauce made of crushed/milled garlic and sunflower oil.  "GALUSHKI SOUP": clear soup with dumplings - pieces of wheat flour dough called "galushki" - have no meat filling. The soup tastes like Italian noodle soup.  SNACKS  "SALO": salted pork fat. Fresh port fat is cut into 10 by 15 cm pieces, sprinkled with salt and left to mature for up to a week. Sometimes also smoked. o Served in slices on a piece of rye/black bread. o Better tastes with a claw of garlic that is rubbed into bread's crust.

“SALAT OLIVIER” or “Russian Salad” as it’s known outside Ukraine: diced potatoes, carrots, pickles, sausages, eggs dressed with mayonnaise.  MAIN COURSES  "PECHENYA": hotplate of potatoes backed with meat and/or mushrooms. Backed and served in the same clay pot, sealed at the top with a film of wheat dough. o Warning: served very hot! Open the lead and let the dish cool off.  "VARENYKY": wheat dumplings – much like Italian ravioli - stuffed with meat, cottage cheese or cherries. o Served with sour cream.  "DOMASHNYA KOVBASA": home-made baked sausages, meet or blood. Meat sausages made of pork and lard. Blood sausages made of pork blood mixed with boiled buckwheat porridge.  "GOLUBTSY": large-size cabbage rolls filled with boiled rice and meat rolled in cabbage leaves. Stewed in a cream souse. o Served with sour cream.  "ZRAZY": potato pie, served in oval-shape pieces, backed on both sides. Made of mashed potatoes with eggs and a bit of wheat flour. As a rule, filled with meat.  "DERUNY": fried potato pancakes, served with a sauce made of crushed/milled garlic and sunflower oil.  "CHICKEN KYIV": a meat chop made of boneless chicken breast pounded and rolled around cold garlic butter with herbs, then breaded and either fried or baked.  GARNISHES  "GRECHKA": buckwheat porridge  Sliced fried potatoes o DRINKING "POLICY": no drinking of alcohol before starting to eat, frequent toasting  One eats, toasts and drinks alcohol "bottom up" from small glasses.  Toasts are infinite, 1st is to "glad that we meet", 3d is to women, as a rule. TIP: it's ok not to drink after every toast. You need just to raise a glass and pretend that you take a sip as a token of respect to the hosts.  Coffee or tea is usually drunk at breakfast or dinner/supper.  Black and green/herbal tees are equally popular.  Tea with milk is not very frequent.  Coffee is not served, as a rule, at dinner/supper. o TRADITIONAL FRUIT DRINKS  "UZVAR" (Ukrainian name) or "KOMPOT" (Russian name) is a dry fruit drink, boiled with sugar, left to infuse.
