An addition changes a home’s character

T

his is not a cookie cutter home,” says homeowner Brian Cameron about his spacious five-bedroom, four-bath Codrington Park residence. “It’s a custom home with nice clean lines. I like the high ceilings and open feel to it. It’s not boxy.” Situated on a quiet cul de sac in the east end of Barrie, the immaculate residence claims 3500 square feet of living space. Enter the covered front breezeway and to your right lies a glass block wall embedded in the brickwork that throws light inside the adjacent sitting room. This room was not original to the structure, Cameron reports, but rather an extension added to the front of the residence. It’s an inspired use of land, primarily because front yards are often dormant spaces. By building the addition half way down the length of the front garage, setbacks are still maintained and the main living area is enlarged without encroaching on the recreational use of the rear yard. It also allows for distinctive architectural features, such as the angled window on the second level that juts out just enough to draw in both morning and early evening light as the sun travels across the sky. A block glass wall was also set into the garage to mirror the one in the main house and further illuminate that attached structure. Enter the residence and the impact of the new addition is instantly apparent. A cathedral ceiling flies all the way up to the second level flooding the open concept kitchen/family room with ambient

light from the second-floor windows. What is absent, is the cramped utilitarian kitchen and undersized living room, so frequently seen jammed into subdivision homes. Instead, the kitchen ranges the entire length of the room, with white modern cabinetry, sleek hardware, professional appliances, a huge granite countertop and two separate islands positioned in differing directions, one with a prep sink. The range top, embedded in the main countertop, is gas. The oven, more workable at eyelevel, lies at the far end of the kitchen, allowing two cooks to work unimpeded. The kitchen is so spacious, in fact, that there’s room enough for a full-sized built-in desk and book shelf. The opposite sitting room addition is sunken one step down to illicit the division of function. Three enormous picture windows make you feel like you are lounging right within the park-like setting of the manicured front lawn. What would have been a standard suburban home is now welllit, airy, voluminous, and very livable. “There are a lot of comfortable areas to sit,” Cameron says. “And my significant other loves the space in the kitchen. Especially the two islands.” Pot lights dot the bright white ceilings everywhere but there is so much light streaming through the home, including through two skylights in the roof of the addition, that seldom is a lamp turned on during the day. “They’re fairly 12

large sunroofs and on sunny days there’s natural light everywhere,” Cameron says. “And it’s incredibly quiet. Hardly any traffic and quite out of the way. Almost like being more remote, but everything is close enough that you’re only two minutes away from stores and everything you need.” The residence sits high above Kempenfelt Bay with meandering walkways that bring you to the shoreline within a leisurely fifteen-minute stroll. There are no houses directly behind either, as the property backs onto Codrington Park where the laughter of children playing delivers the soothing sounds of community. “I like it,” Cameron says. “There isn’t a feeling of isolation.” A walkthrough divides the main kitchen countertops, allowing access to the more intimate dining room behind. The cozy adjoining living room next to it with wood burning fireplace offers wide deep lounges that invite sprawling naps and reading with more privacy. The flooring here was recently replaced with dark wide plank hardwood. Windows bring plenty of light into this room as well, from both the rear of the property and south side of the home. Freshly painted, Cameron chose contemporary white with grey and silver accents throughout, save for the fireplace room where a light blue offers a departure. “It’s a great entertaining home,” he says. “At my 50th birthday party we had sixty people here 14

“This home would accommodate a fairly large family”

plus catering staff. People could congregate in various areas and chat. Everyone was in a different room, the big room, kitchen sitting and separate living room and dining room. There was a lot of space for seating.” Exit through the rear patio doors in the dining room and you are in the fenced, secluded yard, that is beautifully landscaped with mature trees, ferns and garden beds filled with hydrangea. The yard offers five different seating and dining destinations around the bromine pool. “It’s a resort-like setting,” Cameron says, admitting that it was the yard that most attracted him to buying the home in the first place. He had come from a pool home and enjoyed working poolside in warmer weather. Back inside, a contemporary stairwell takes you to the second level, where a balcony overlooks the floor below. Here, the master and three more bedrooms reside. One of the more favoured features Cameron delights in is the master’s walk-in closet that is large enough to play host to his extensive wardrobe of suits. But, by far, one of the most distinctive aspects of the home are the angles. Angles proliferate both inside and outside, from bathrooms to hallways, to the pool which was dug at a skewed angle to best take advantage of property lines. Even the slanted rooves of 16

the two covered patio overhangs tilt at an angle to ease runoff of rainwater and snow. It’s the reason the home doesn’t possess that “boxy” feeling, Cameron speaks of. The finished lower level of the residence is where everyone can take a breather, and enjoy the game on TV. A comfy double sofa setup accommodates the crowd. Even here, the home’s colour scheme has been meticulously maintained. This level also enjoys a fifth bedroom, bathroom with a shower and a workout gym. Knocking down a wall on the recreational level was the one major renovation Cameron tackled to open the area and make it more livable. “This home would accommodate a fairly large family,” he says. “They could live here quite nicely without it being crowded.” Which is the main reason he is ready to move on from it. As an empty nester now, downsizing is the next step. “I work a lot and want a smaller place that suits my lifestyle,” he says. “I don’t even use the dining room at all. And there’s one room I only use for ironing. Linx Kitchen & Social is taking a swing at combining upscale dining and indoor golf. Located under one roof in Barrie’s south-end, diners and golf enthusiasts can nosh and hit the fairway year-round without worrying about inclement weather. Opened in September, 2020, the 10,000-square foot facility features award winning golf simulators, along with semi private and executive suites. Not a golfer, no worries. “Guests are welcome to enjoy our immersive dining experience,” explained Candice Young, who owns and operates the Linx with her husband, Jason. To learn more about the unique destination, that features a modern hip interior to wow customers, I recently caught up with these golfing restaurateurs. Here’s how the conversation unfolded. 20

What does your Canadian winter look like? Linx Kitchen & Social is a one-of-a-kind destination. Can you expand? Jason Young: From what we understand, no other business in North America offers upscale dining with a golf experience. There are definitely golf simulator experiences out there, but that’s really all they are. What led you to open this type of venture? JY: After 18 years of serving as an infantry soldier in the military, I was on the look out for something to do during my retirement. Golf and dining out have always been something that we have both been passionate about, so we decided to merge the ideas. In short, we saw a space that was open in the industry and we decided to jump into it. Candice Young: Our goal was to create a modern twist to the country club. We didn’t want to be a sports bar. Instead, we wanted something that showcased a sleek, urban interior, with a downtown Toronto feel to it.

You want to be known as a restaurant first, that also offers golf. With that in mind, let’s start with the food. Just like the way the Linx is separated into three separate areas — golf, bar/lounge and dining room, you provide three different menus. Can you expand? CY: It’s almost like three separate locations wrapped into one, which breaks down the name Linx, Kitchen and Social. Linx is the golf side, which serves up more golf friendly food (something that you can take a quick bite out of and then get back to swinging that club). The Kitchen menu refers to our dining room fare, where the plates are larger and the choices are more upscale. Social covers our lounge/bar area, which guests can enjoy after a round. It features more appetizers and shareable items. People can order from any menu, no matter where they are located. What’s the best way to describe the overall menu? CY: Our red seal chef, Kathleen Forsythe, says ‘it’s a well rounded cuisine touching on Italian, French and American, using different cooking methods. It features old school classic dishes from Hollywood that are modernized for today’s society.’ What are some of your top sellers? CY: Guests really seem to enjoy our braised short ribs, veal piccata (see recipe in story), rack of lamb, duck spring rolls, lobster ravioli, calamari, and our burgers, which are made fresh daily, on site. Our charcuterie boards also go over really well, either for dine-in or take-out. What about diners with special dietary needs? CY: Along with vegan, gluten-free and vegetarian menu choices on the menu, our executive chef is

pretty accommodating to special requests. We also have a vegan sous chef on our team, and he is very creative with menu offerings. Let’s hear about those fancy golf simulators of yours. JY: We use Golfzon Vision premium simulators and they are truly state-of-the-art. Guests can choose from over 190 courses (which are projected onto massive screens) from around the world. Not only is there a moving swing plate that automatically adjusts to uphill, downhill, and side hill lies by simulating course slopes from the tee box to the putting green, it also allows you to hit off various surfaces, and even lets you adjust the height of your ball on the tee. It’s as close as you can get to playing golf outdoors. CY: Some of our customers actually prefer playing indoors because they don’t have to contend with the sun, the bugs, heat or rain or snow. How many golfers can you accommodate? JY: For group events, the golf space works well for between 30 to 40 people. Along with our executive suite (features a boardroom table), which works for about 10 to 12 people, we also have five semi-private suites which are great for four people per suite. We can accommodate up to six people in the semi-private suites, but a foursome is better. I also wanted to mention that we have call buttons in every suite, so the servers will only stop in when requested. Do you need to bring your own clubs? JY: Because of COVID, you have to bring in your own clubs. In the future, the plan is to eventually have rentals available.

Opening during a pandemic must have been challenging. In fact, it didn’t even allow you to have a proper grand opening. Has there been any sort of silver lining? CY: Between construction delays, lockdowns and capacity restrictions, it wasn’t easy — that’s for sure. On a positive note, the pandemic really strengthened an interest in golfing. As a result, we have noticed that there are many new golfers around. And that’s good for us because there really aren’t too many places to golf indoors during the winter. Do you have live music? JY: We try to have live music every Friday and Saturday night. And on those nights, we have one of our chefs at the bar shucking fresh oysters. What about parties and special events? Candice: Currently, we can safely accommodate up to 150 people (between the golf area, bar area and dining room). The space works really well

for weddings, team building events, birthdays, anniversaries, holiday parties, bachelor events and more. Tell us about your involvement with Christmas Cheer. CY: We are excited to be one of the main drop-offs for Christmas Cheer this year. Also, along with our staff, we plan on volunteering as much as possible throughout the handout days. What’s on tap for the future? JY: We definitely plan on expanding with more locations. Beyond that, once COVID settles down, we are hoping to offer various special events ranging from cooking classes or wine tasting to butcher nights and more. Veal Picatta This is a popular dish the Linx Kitchen & Social. Enjoy at the restaurant, or at home with this easy recipe. 2 lbs (910 grams) veal cutlets, about 12 pieces Kosher salt and freshly ground pepper, to taste 1/2 cup all-purpose flour 4 Tbsp unsalted butter 2 Tbsp olive oil 1/2 cup dry white wine 1-1/4 cups chicken stock 1 lemon, thinly sliced 1 Tbsp lemon juice 2 Tbsp chopped fresh parsley PREPARATION: Season veal with salt and pepper and dredge in flour, shaking off any excess. Heat 2 tablespoons of butter and oil in a skillet over medium/high heat. Working in batches, add veal and cook turning only once until golden brown, about 3 minutes. Transfer to a serving platter, cover and set aside. Add wine to skillet and cook, scraping bottom of pan until reduced by half, about 3 minutes. Add stock and lemon slices and bring to a boil, cook until reduced by half, about 7 minutes. Add remaining butter, juice and parsley and season with salt and pepper. Pour sauce over veal and serve immediately. Can be served alone, with noodles, or your choice of side vegetables. Serves about 6. 24

ver the years, I’ve developed, tested and published countless festive cookie recipes. Do I have a few favourites? You bet, I do. Perfect for priming the holiday dessert platter, here’s a compact selection of some of my top picks. Trust me, these tried and true recipes are sure to make the season sweeter.

Peanut Buttercup

thumbprint cookies

1 cup, plus 3 tbsps butter, at room temperature ½ cup icing sugar 1 tsp pure vanilla extract ½ cup corn starch 1 tsp salt 2 cups all-purpose flour 24-30 small (1-inch or so size) Reese’s Peanut Butter Cups (available at the Bulk Barn) PREPARATION: 1. Preheat oven to 325F. Line cookie sheets with parchment paper. 2. In large bowl, using an electric mixer, beat butter, sugar and vanilla until light and fluffy. In medium bowl, sift together cornstarch, salt, and flour. 3. Using a wooden spoon add dry mixture to butter mixture in 3 batches; stir until dough is just firm enough to roll out.

Divide dough in two. Turn first batch onto floured board and knead until mixture is smooth and cracks slightly. Repeat with second batch. 4. Form balls using just over 1 tablespoon of dough for each, place on prepared cookie sheet. Slightly flatten and press one peanut butter cup into the centre of each cookie. Adjust shape, if necessary.

This delicious recipe features two of my favourite things — Reese’s Peanut Butter Cups and shortbread. Need I say more?

5. Bake for 10 minutes and then rotate sheets. Bake until just slightly brown around the edges, about 8 to 10 minutes more. Transfer to wire rack to cool completely. 6. Store in an airtight container for up to a week, or freeze for up to 3 weeks. Makes between 24 to 30 cookies.

Sugar

Cookie cutters are a must for this traditional treat. Decorate as desired with icing, coloured sugar, or festive decorative candies. 3 2/3 cups all-purpose flour 1 Tbsp baking powder 1 tsp salt 1 cup butter, at room temperature 1 2/3 cups icing sugar 2 large eggs 2 tsp pure vanilla extract 2 tsp finely grated lemon zest (optional) Water (if needed)

PREPARATION: 1. PREPARATION: In medium bowl, whisk together flour, baking powder and salt. 2. In large bowl, using electric mixer on medium speed, cream butter and icing sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla and zest (if desired). On low speed, beat in half of flour mixture. Using large spoon, stir in remaining flour mixture. Add a few drops of water if mixture seems too dry. 3. Separate dough into thirds. Pat into disks. Wrap in plastic. Refrigerate until firm, 2 hours to overnight. On lightly floured surface, roll out each dough disk to ¼-inch thickness. Using 2 ½ to 3-inch cutters, cut out cookies. Gently re-roll dough scraps. Cut more cookies. 4. Transfer to parchment-lined baking sheets, spacing cookies about 1-inch

apart. Note: cookies will maintain their shapes if you place the cookies on the trays in the refrigerator for about 10 minutes prior to baking. If you don’t plan to ice the cookies, sprinkle with granulated sugar for decoration (if desired). 5. Bake, one sheet at a time, in preheated 350F oven for 10 to 12 minutes, or until edges turn light golden brown. Timing may vary depending upon how cold the dough is. If using smaller cutters, reduce cooking time, and keep a close eye on the oven to avoid overbaking. Cool 5 minutes, then transfer to wire rack. 6. Decorate as desired. 7. Store in airtight container at room temperature up to 5 days, or in freezer up to 2 weeks. Makes about 36 (amounts may vary depending upon cutter sizes).

This sweet topping dresses up any cookie. Short on baking time? Easy to use, pre-made white and coloured cookie icings can be purchased at the Bulk Barn and most grocery stores. 2 ¾ cups icing sugar 1/4 cup hot water 1 tsp light corn syrup 1/4 tsp pure vanilla extract (omit for a whiter icing) Food colouring (optional) Water (if needed) PREPARATION: 1. Combine all ingredients. Mix until completely smooth using hand whisk. Add drops of water or small amounts of icing sugar if necessary to ensure a slightly fluid, but spreadable consistency. Spread icing on cooled cookies. Be sure to place festive candies, or coloured sugar sprinkles (if using) on icing before it sets. Makes about 1 cup.

Chocolate Crackle

These chocolaty delights are always a hit on any cookie tray. 1 ½ cups all-purpose flour ¾ cup unsweetened cocoa powder 1 ¼ tsp baking powder ½ tsp salt 1 tsp ground cinnamon ¾ cup butter, at room temperature 1-1/4 cups granulated sugar 1 large egg 1 tsp vanilla ¾ cup high quality semi-sweet chocolate chips 1 cup icing sugar (for rolling cookies in) PREPARATION: 1. In medium bowl, sift together flour, cocoa, baking powder, salt and cinnamon. 2. Using an electric mixer, cream butter and granulated sugar until light and fluffy; beat in egg and vanilla. Using a wooden spoon, gradually stir in flour

mixture and chocolate chips to form a soft dough. If it’s too dry add a few drops of water. Form dough into 2 balls and flatten into disks. Wrap in plastic wrap and refrigerate for 2 hours, or overnight. 3. Remove dough from the refrigerator. 4. Preheat oven to 350F. Line baking sheets with parchment paper. Using 1 tablespoon of dough, shape into 1-inch balls, flatten the top, just slightly. Roll in icing sugar until fully coated. If any dough is visible, roll again. Bake cookies until sugar coating splits, about 12 to 15 minutes, rotating halfway through. 5. Cool on baking sheet for 5 minutes before removing to wire racks to cool completely. Store in airtight container up to 1 week, or freeze up to 3 weeks. Makes about 45 cookies.

Chocolate Almond

biscotti

These crunchy biscotti are always a favourite at my annual bookclub cookie exchange. Perfect for any chocolate lover, this recipe also freezes extremely well. 1 ½ cups slivered almonds 3 cups all-purpose flour 2/3 cups unsweetened cocoa powder 1 tsp salt 1 tsp baking powder 1 tsp baking soda 1 cup butter, at room temperature 2 cups granulated sugar 3 large eggs 1 ½ tsp pure vanilla extract ½ tsp almond extract 1 cup high quality semi-sweet chocolate chips PREPARATION: 1. Preheat oven to 350F. 2. Spread almonds in a single layer on a baking sheet. Toast 5 to 7 minutes, or until fragrant and light golden brown. Set aside.

3. Grind 1/2 cup toasted almonds in food processor. Set aside. 4. In large bowl, whisk together flour, cocoa, salt, baking powder and baking soda. 5. In another large bowl, using an electric mixer cream butter and sugar together until light and fluffy. Add eggs (one at a time) and vanilla and almond extract, beat until well blended. 6. Using a wooden spoon, stir in the flour mixture in two additions until well blended. Mix in ground almonds and chocolate chips. 7. Divide dough in half and form each into a ball. Transfer dough to a large parchment paper lined baking sheet. Shape dough into two logs 2-1/2 inches (about 6.5 cm)

wide and 14 inches (about 36 cm) long. Leave 3 inches (about 8 cm) between logs, as the biscotti will expand while baking. 8. Bake about 35 minutes (rotate sheets half way through baking process), or until firm when gently pressed. Cool on baking sheet for about 15 minutes. 9. Using two spatulas, carefully transfer logs to a cutting board (they could split if you don’t take your time here). With an electric knife (or a serrated knife), cut logs crosswise into 1/2 inch (about 1.5 cm) thick slices. Carefully transfer and arrange slices, cut side down, on 2 parchment paper lined (or un-greased) baking sheets. Bake about 15 minutes or until firm. Transfer to racks and cool completely. 10. Makes about 4 dozen.

T

he grizzly bear was close enough to watch it chewing. It sat chest deep in the shallow river, gripping a chum salmon in curved claws as long as my index finger. The bear looked almost thoughtful as it stripped the skin from the fish with its teeth. It was certainly more interested in the salmon than the eight visitors and pair of guides watching and taking photos from a nearby wooden viewing tower. The grizzly let the half-eaten fish slip into the water and lumbered along the riverbed to catch more. “It’s not a zoo,” guide Cheyanne Hackett of the Homalco First Nation explained before we set out that afternoon on our first day of grizzly bear watching. “We are the animals locked in the cages and the bears are wild.” We were on the traditional territory of the Klahoose First Nation in coastal British Columbia, where the Nation has run grizzly bear tours in Desolation Sound off the northern tip of the Sunshine Coast since 2016.

In 2020, the nation’s business arm Qathen Xwegus Management Corp. purchased an off-thegrid former fishing lodge in a remote corner of Homfray Channel. The property reopened in May 2021 as the all-inclusive Indigenous-owned and operated Klahoose Wilderness Resort. Located about an hour from Lund B.C. by boat, the eco-resort was our base for an all-inclusive, three-night stay. During the August-to-October salmon run, three-hour stints of grizzly bear watching on two separate days are also included. Situated in a deep water cove and surrounded by forest covered mountains, the resort feels immersed in nature and removed from everything. Our time there was much more than the bear viewing. It was a culturally rich, relaxed experience infused with Indigenous storytelling, traditions and craftwork. We arrived to hear a welcome song and drumming from the resort’s cultural ambassador, Klemqwateki “Randy” Louie. He designed the property’s black, red and white grizzly bear logo and carved the smooth yellow cedar paddles hanging in the expansive great room of the 6,100-squarefoot cedar lodge. Louie’s paddles are also in the resort’s four lodge rooms and three cabins, all of which are decorated with Indigenous art, including fabrics by Coast Salish artist Simone Diamond. The cedar-walled spaces are rustic, with luxurious touches. With an average of 12 and maximum of 24 guests at the lodge (there were just eight people when I was there), we got to know each other and our Indigenous hosts over these few days. Outside of the grizzly watching, there was no set programming. With comfy oversized furniture and a cozy woodstove, the great room was a faGoodLife | Barrie Winter 2021 n 37

vourite gathering place. Louie showed us his carving tools, answered questions, shared stories and talked about his art. Weaver Anita Noble, head of resort housekeeping, made the traditional cedar hats on display in the lodge. She patiently showed us how to weave and twist strips of cedar bark into a rose. We learned the cedar tree has great significance to West Coast First Nations people and Noble explained she thanks the tree with words and a tobacco offering before she peels the long, narrow strips of bark. We started the day with morning yoga on the dock, our arrival sending nervous harbour seals tumbling into the ocean. It’s a favourite place for them to elude the Bigg’s killer whales (also known as Northern transient orcas) that hunt them. More than a dozen seals would be lazing here each morning after overnighting on the dock. I could hear their comical huffs and snorts while stargazing from my balcony. Guests eat their meals together. The Klahoose name means “bottom fish,” so local halibut was naturally on the menu, along with sidestripe prawns pulled from a deep water trap off the dock. We also had chicken, risotto and excellent hearty breakfasts to start each day. One morning, Klahoose Nation member and lodge caretaker Stephen Whitmore took us on a short hike through the electric green rainforest to a rocky viewpoint on the resort property. Boat skipper and grizzly bear guide Leon Timothy of the Tla’amin Nation near Powell River spent two weeks creating this well-designed trail. The ground was spongy underfoot. The air smelled of cedar and spruce. “I feel like my world has expanded,” said visitor Margo Viner of Squamish B.C., who was travelling with her husband, Norm. “I feel I can breathe more deeply here. It has inspired me and my curiosity. I want to learn more and not only about this (Klahoose) Nation.” The resort is open from May to mid-October. Summer visits focus on water activities, including kayaking, swimming and stand-up paddleboards. Guests can watch for whales, dolphins, seals and eagles amid breathtaking scenery on boat rides.

The resort took delivery of a sturdy 12-seat catamaran in September. It’s named Goat 1 for the mountain goat, which holds a sacred place in the Klahoose Nation’s identity. Towards the end of summer, the spotlight turns on the bears. The hourlong boat ride to Toba Inlet for our first day of grizzly watching started out on auspicious note with the sighting of a bald eagle. “In our culture, to see an eagle first thing in the morning, you’re going to have a good day,” said Timothy. He steered the boat past mountains, forests and thundering waterfalls, stopping to drift so we could watch a humpback whale gracefully surface and dive. Hackett greeted us at the dock. She put on a brilliant red button blanket sewn by her grandmother and a woven cedar hat topped with a blue Russian trading bead, then drummed and sang the Women’s Warrior Song in her language to honour missing and murdered Indigenous women and girls. During the short bus ride to the six viewing towers, Hackett explained the work being done here with grizzly research programs. DNA is gathered from fur samples left by bears after they scratch itchy spots on trees wrapped with barbed wire to snag hair samples. She detailed bear behaviours, including how the males churn their paws into the soft banks of the river, leaving a scent-marking urine trail so females can choose the strongest mate. Bears eat medicinal plants for everything from aiding a cub’s digestion to calming arthritis, Hackett said. “Our people used to live alongside the grizzly bears for over 10,000 years and we would watch what they would eat,” she said. With a few exceptions, anything grizzly bears can consume, humans can eat as well. Timothy warned us to not bring any bear-attracting food with us — not even gum. And he urged us to be as quiet as possible in the towers. The bears know we’re there and will move on if disturbed by human sounds. We were excited and too chatty when we saw our first grizzly bear, a young dark-brown female. Our steps echoed on the wooden floor. The skittish animal disappeared into the forest. Lesson learned. Guides near other towers radioed bear positions to Timothy and Hackett and we moved to another viewing platform where we were able to watch another grizzly. We learned to identify the males by their long

snouts. Females have rounder faces. The bears fished and explored along logs, the beach and in the river, always one at a time, as if they were taking turns. When one bear ambled back into the forest holding a large, flopping salmon in its jaws, I was tempted to applaud. The next day was even better, including a massive animal Timothy estimated to be 350 kg and about 10 years old. Chestnut brown, with a long pale snout and a lighter-coloured arc of fur behind the muscular hump, the guides know this bear well and call it Snorkel. It lazily scooped the newly dead or dying spawned salmon from the water, chewing and licking its snout. “That’s a big, big bear,” whispered Timothy. On this late-September day at the height of the salmon run, the river was packed with chum, also called dog salmon, their tails thrashing as the fish raced to spawn. It’s a good time to be a grizzly bear. All of the bears abandoned half-eaten fish for the circling gulls. The shore and logs were covered in salmon carcasses. “They only want the skin and the eggs if it’s a female salmon,” Timothy said. The fat-laden parts would help the grizzly prepare for hibernation. The big male grizzly walked through the shallows, swinging its head side to side to hunt, often sticking its face in the water. It moved down river. Timothy motioned us to walk 15 metres to the next raised platform to follow along. He and Hackett, both carrying bear spray, were front and back of us as we slowly came down the stairs. “Crouch. Don’t look big,” Timothy whispered. He’d told us these animals are incredibly fast. Although the bears hadn’t paid us any attention, it was a bit tense until I climbed the stairs to the tower and the gate was shut behind us. We shared stories and impressions of the day on the return boat ride to the lodge, arriving to see a mottled black seal sunning itself on the dock.

There are plans for the Klahoose Nation to use the resort for healing and retreats in the off season. A longhouse and a sawmill for fallen cedar trees are on the wish list. This property was once known as the Homfray Lodge. Now it’s a Klahoose-owned business that brings employment and training opportunities to the Nation, along with giving visitors an Indigenous travel experience. Hackett says she believes this kind of tourism, where visitors can learn and share Indigenous history and stories, can be an act of reconciliation. “I think it’s absolutely amazing that we’re branching out like this,” said Whitmore of the resort’s ownership. “No one thought we can do this and here we are, reclaiming it.” Linda Barnard’s trip was sponsored by Destination British Columbia, which did not preview this story.

1 HOTEL Toronto RETREAT IN THE CITY

I

t’s a drizzly fall day when I arrive at the 1 Hotel Toronto located on Wellington St. W. and a short distance from the entertainment district. Grumblings about the dreary weather instantly dissipate, however, when I enter the new hotel’s lobby. Natural wood décor, soft lighting, chic furnishings and an abundance of living plants creates a Zen-like vibe that I immediately connect with. The biophilic designed hotel seems to perfectly balance luxury and sustainability, urban design and nature’s innate beauty. The 1 Hotel Toronto, which opened in early August this year, is the sixth property in the 1 Hotels brand portfolio, and the first location in Canada. The nature-inspired brand is dedicated to cultivating the best of sustainable design and architecture, relying in no small part upon local artists, builders, chefs and farmers. I needn’t look too hard to discover the touch of local artisans in almost every aspect of my stay here. A striking wood carved table that catches my eye as I check-in is one of more than a thousand handcrafted furnishings in the hotel by Toronto-based Just

Be Woodsy. The woodworking studio collects and reclaims fallen trees to transform them into oneof-a kind pieces. This second life ethos is evident throughout the building, including under my feet: the lobby’s floor hails from the wooden remains of a barn that was torn down in Blyth, Ontario. “Bringing nature indoors is the premise of every one of our hotels,” explains marketing director Hailey Manning. “More than 3,300 living plants populate the interior. We have gardeners who come in daily to care for them.” The lounge located just to the right of the front entrance is aptly called Flora. It exudes a chic log cabin atmosphere that combines thoughtfully curated bookcases, natural wood accents, fireplaces and lush plants. The wow factor is a stunning installation above the bar of foraged flora artfully designed by Toronto floral design company, Timberlost. Ample table and lounge seating make this a perfect space for remote work by day and sharing cocktails by evening. My hotel room, while staying true to the sustainability vibe, offers a more modern aesthetic

than elsewhere in the hotel. A cream palette with light wood accents creates a clean, Scandinavian style setting. Small details like drinking glasses made of recycled wine bottles, a chalkboard in lieu of a notepad, a re-usable water bottle and a yoga mat are all nice eco-friendly touches that make 1 Hotel distinct. I return to Flora after dinner for an aura reading. Yes, that’s right – an aura reading. 1 Hotel Toronto has a calendar offering a variety of happenings, including funky experiences for the spiritually curious which fits with the upscale hippie vibe and is refreshingly unique to the Toronto hotel scene. Coincidentally, tonight is the equinox and, in celebration of this celestial event, the hotel is hosting a sound bath featuring crystal bowls and meditation to relax the mind and body. As a yogi and meditator, this is right up my alley and I can’t think of a better way to spend my evening. Programming is updated monthly with enough variety to suit many tastes – not just yogis – including harvest dinners, HIIT classes, a run club and live music. I recommend checking this out before booking a stay to take advantage of interesting options. For dinner, I visit 1 Kitchen – the all-day restaurant that serves breakfast, lunch and dinner as well as in-room service. It’ upscale diner meets safari. A staggering number of plants are arranged throughout the space above and alongside booths and small dining tables with

Natural Chateau Laurier Hotel and Parliament light pours in through a wall of windows facing Wellington St. For dinner I enjoy an appetizer of delightfully crisp sweet potatoes and, for an entrée, cod from Fogo Island, Newfoundland that’s perfectly cooked alongside a medley of local vegetables. I’m not surprised by the freshness of the meal; there is a seasonal garden pavilion on site that supplies a selection of crops to the restaurants. What can’t be sourced here is found almost exclusively through local vendors. In fact, 90 per cent of the restaurants’ menu ingredients are sourced from within 100km. In spring 2022, the hotels’ signature restaurant, Casa Madera will officially open. This upscale restaurant will serve coastal cuisine influenced by Mexico and the Mediterranean. For an end-of-day cocktail, I make my way to Harriet’s, the swanky rooftop restaurant bar. On a clear night, the bar would open out to the starry sky with outdoor heaters keeping the guests comfortable. Tonight, with the retractable roof on, the large windows still offer a picturesque view of the Toronto skyline. Harriet’s has a more urban, electric feel than the other restarants on site. Patrons can enjoy small plates, an open concept sushi bar and bottle service. An overnight stay at 1 Hotel Toronto is the perfect urban retreat – delectable food, impeccable service, upscale digs and, most notably, a natureinspired space that is unlike any other hotel in the city. Indulge yourself in this luxurious hotel, and feel darn good about it, too.

arbados was my first Caribbean island and has forever imprinted itself on my memory. I remember being astounded by how loud the tree frogs were. I learned here that a slice of papaya tastes wonderful with fresh lime juice squeezed over it, and that, if you aren’t careful when having breakfast on the terrace, the saucy yellow-eyed black birds will steal your toast. While I have been to other islands, Barbados is the one I return to most often. This winter it is a good choice for a holiday in the sun, with its many tropical experiences, carefully controlled Covid

protocols and a food scene that promises to satisfy the most demanding gourmet. What I love most about the island is the mix of high sophistication and casual informality, Those who enjoy the ceremony of high tea can savour 35 different kinds of tea amidst pink walls and flower filled gardens at the Fairmont Royal Pavilion, on St. James Beach. I loved the tiny perfect sandwiches, exquisite cakes and iced biscuits. It felt very English but then Barbados has always had close connections with the Brits, who settled on the island in 1627 and who still visit here in large numbers. For a real indulgence, book one of the resort’s villas which come with daily breakfast, a butler, and VIP transfers to and from the airport. For a less formal stay, consider the Sea Breeze Beach House, south of Bridgetown near St. Lawrence Gap and close to Oistins. It is a four-star allinclusive resort, freshly decorated and great value. There’s no high tea, but there is a very cute Rum Shack near the pool where guests can enjoy rum punch, Bajan cutters, fresh fruit juices and coffee.

(A cutter is a Bajan specialty consisting of a salt bread bun with something in the middle, usually a fish cake.) I loved having morning coffee on the deck chairs overlooking the ocean before the day got too warm. Of all the Caribbean islands. Barbados is number one for culinary sophistication and variety. You can dine like a celebrity or eat like a local. Barbados boasts a range of high end restaurants that offer international cuisine in beautiful situations. Champers Restaurant and The Cliff offer fine dining with breathtaking outlooks on the ocean. It makes for a special evening, to dress up, show off sunburned shoulders and sip an island cocktail. You may well rub those shoulders with visiting celebrities – Drake was a recent visitor to The Cliff, and island-born Rhianna returns frequently. My own celebrity encounter saw me having dinner with George Washington - well, at least with a George Washington impersonator, when I visited Bush Hill House. The U.S. President-tobe came to Barbados in 1751 at the age of nineteen with his ailing older brother, Lawrence. He stayed for two months in Bush Hill House and historians claim his stay in Barbados, the only time he was outside of the United States, changed him in important ways. The Barbados National Trust, which runs the house, puts on dinners which are reconstructions of the menus that Washington would have enjoyed during his stay here. It is a fascinating culinary encounter with history and well worth experiencing if there happens to be one of the dinners scheduled during your visit. Even if you don’t do the historic dinner, the house and museum are definitely worth a visit. For a more casual meal, particularly for lunch, Little Good Harbour’s Fish Pot Restau

rant is lovely, with local fresh fish on the menu and the chance to dine with your feet almost in the surf. But my favourite dining is casual island style, exemplified by the Friday night fish fry at Oistins, a small fishing village at the southern end of the island. It is definitely touristy, but it is touristy for a reason – everyone has a good time. On my last visit, I perched on a picnic bench as the sun set to devour some fresh flying fish with chips and macaroni pie, a cold Banks beer and a slice of rum cake. There was great music, and couples danced under the stars. Oistin’s fish fry is always a party. The best way to get a taste of authentic Bajan flavours, in my view, is to do a roti tour. Barbados is justly famous for its roti and you can get them at little roadside places all over the island. A friend who is a notorious roti addict, took me to the Indian Grill in Bridgetown for one of the best shrimp curry roti I have ever had. We took them back to the beach and sat by the water with curry juice running down our chins and wished we had ordered twice as many. Locals sing the praises of Cuz’s, a small stall on the beach next to the Hilton where the eponymous

and taciturn Cuz serves the best fish cutters on the island. You can also walk around downtown Bridgetown to visit Cheapside Market to partake of hot fish cakes and salt bread with pepper sauce and coconut water or visit the fish market close by where visitors are always welcomed. There are several rum distilleries on the island that offer tastings and mixology experiences, like the historic St. Nicholas Abbey. At the Mount Gay distillery you can pick up a bottle of an eye-poppingly-expensive special edition aged Mount Gay

rum to take home or learn how to pair rum with different food courses. And of course, there are the rum shops. Luxury adventures are in ample supply on the island. You can watch the polo matches during the season or the car races at Bushy Park. There is yoga on the beach, guided hikes and every kind of water sport you may crave. Or you can lie on the beach and watch the tide come in. Whatever your inclinations are, you won’t be hungry or bored in Barbados.
