Dear Neighbours, We don’t get masses of excitement here in thrilling Gilling. The Boxing Day floods were probably the last pulsequickening thing to happen to us since the previous floods in 2008. So the arrival of a swarm of honey bees on the roof of The Forge was quite jolly. Luckily, we were able to get in touch with a local bee-keeper, Bill Scriven, who popped over from Barton-le-Willows to help us out. The photo shows him placing a portable hive on the roof. He then proceeded to sweep up the bees with a dustpan and brush to drop the majority into the hive. By late evening all the rest of the bees were in the hive and they are now safe and happy in their new home. In this month’s issue Nicholas Rhea gives us the lowdown on one of my favourite herbs, rosemary, including how it got its name, something I’d never thought about before. Also, this month, an article about something I keep thinking about but don’t get round to doing - swimming. I know it’s good for me and I will start going, honest! There’s a very nice recipe this month in the shape of a Salmon and Broccoli Quiche, which ‘real men’ should have a go at because it’s delicious. In her gardening article, Pippa Greenwood advises on planning your planting. Relax in the sunshine (yes, I know I’m being optimistic) with the crossword and sudoku and have a wonderful August. I

n common with many people living locally we have a rosemary plant in the garden. Ours lives in a handsome pot and stands outside the back door, seemingly guarding the house. Its strong scent is instantly recognizable and is easily appreciated by running one’s fingers through the foliage. Rosemary is widely cultivated because it is a popular and strongly scented herb with a range of medicinal and culinary uses. It has sharply pointed blue-green leaves and attractive blue flowers sometimes showing a splash of white and it can develop into a sturdy shrub standing about a yard or more in height (90 – 100cm.) Like many herbs, rosemary has attracted a good deal of folk lore. For example, it was long thought the bush would never grow taller than Christ when He was on earth and it was also claimed it would never live longer than Christ, ie 33 years. If left to its own devices, it was said to grow for those 33 years until it reached Christ’s height, and then broaden out instead of growing upwards.

Another legend associated with Christ is that its flowers used to be white but during the Flight into Egypt, the Virgin Mary spread the linen of the Child Christ upon a

rosemary bush to dry, and since then the flowers have been blue, although slightly variegated with white. Another legend was that Mary’s cloak brushed the plant and turned the flowers blue. Those associations are believed to have been the origin of its name – Rose of Mary - whilst another Christian link is that it is said to bloom at midnight on Old Christmas Eve (December 6). It is an evergreen that flowers in the spring although sometimes it produces a second crop in the late summer. The cultivation of rosemary is due to its wide range of uses

from cosmetics to medicines. Locally and through-out Britain, we usually grow it in our kitchen gardens where its leaves have a wide range of culinary uses, both dried or when fresh. Perhaps another range of uses is heralded by the phrase “Rosemary for Remembrance” for it was used at both weddings and funerals as a symbol of remembrance and as a token of true love. It also indicated that a woman was righteous and so, in the seventeenth century, brides would weave sprigs of rosemary into their wedding bouquets. Another wedding custom was for the newly married couple to dip rosemary leaves into their drinks before consuming them; this was thought to ensure love and happiness. Even into fairly recent times, a sprig of rosemary was placed in the grave as the coffin was lowered, the purpose being to ensure remembrance of the departed. The ancient Romans planted rosemary near tombs in the belief it helped to preserve the body and Shakespeare refers to the herb in Romeo and Juliet when Friar Laurence says, “Dry continued on page 12

12 up your tears and place your rosemary on this fair corpse.� In this country, the people of medieval England thought rosemary protected them against evil spirits, witches and fairies, and they also believed it provided protection against thunder and lightning, or even against being assaulted and injured. Lovesick girls would make good use of sprigs of rosemary as they tried to identify the name of their future husbands. One method was for a girl to place a silver sixpence and a sprig of rosemary beneath her pillow on All Hallows Eve, believing this would produce a dream about her future spouse. Another charm was to place a bowl of flour beneath a

rosemary bush on Midsummer Eve, and next morning she would find the footprint of her future husband outlined in the flour. In addition to this range of values, rosemary was acclaimed as beneficial with a bewildering number of uses. One cure-all was Oil of Rosemary which, it was claimed, would ease most problems from colds to diseases of the head and brain such as giddiness, drowsiness, loss of speech and various forms of sickness. It could be either drunk when mixed with wine or bathed in the affected part but the recommendation was to use it sparingly. All forms of stomach trouble or gum diseases could be

aided by a decoction of rosemary or ailing gums could be rubbed with the leaves; it was especially recommended for windiness in the bowels and also for easing rheumatism. Its oil is also said to repel insects, make perfume and even act as a hair-restorer. It was widely used in hair lotions, especially in France whilst in this country people would make rosemary tea to strengthen weak hearts, aid the memory and cure coughs and colds. It is not surprising that so many cottage gardens in Ryedale and elsewhere continue to grow this most versatile of plants.

Getting in the Swim!

S

wimming is often regarded as an activity enjoyed by the young, but it is ideal for any age. It’s one form of exercise where you don’t need to be physically fit to benefit. Not only that, but it’s something for the entire family to enjoy. Most towns have a pool; as no equipment is required, it isn’t an expensive activity. Can’t swim? Don’t worry, many complexes offer lessons to beginners. Why swimming is good for you. To combine fun and exercise, swimming is just about the best option. As well as relieving tension, it also improves energy levels, posture and flexibility. Swimming increases the heart rate, stimulates most of the major muscle groups, improves blood circulation, builds stamina and enhances cardiovascular fitness - all without putting strain on joints. Sound too good to be true? It isn’t. Because the water supports your weight, it removes any stress on your knees, hips and spine. It is believed that exercising in waist-deep water reduces strain on joints by up to fifty percent - increasing the depth

to chest level is said to reduce the pressure by as much as seventy-five percent. Recovering from surgery Post-operative recovery is often aided by taking up a regular swimming regime. In particular, it is often recommended for women recovering from a mastectomy. It is advisable to consult a doctor before taking up any form of exercise. Also, discuss with an expert which muscles are in use during some of the more strenuous strokes, as these may not be suitable. During pregnancy Research has shown that pregnant women benefit hugely from swimming. It strengthens abdominal and back muscles, reduces joint stiffness and has even been shown to assist in lowering high blood pressure. Weight loss and general fitness Because it is low impact, it’s a great form of exercise for those carrying excess weight. Many obese people have found it beneficial as part of a regime to reduce weight and improve their overall fitness levels. As

a fat-burning exercise, it is excellent. Because you can set your own pace, you can swim for long periods, thereby increasing your stamina, which is an essential ingredient in any fat-burning exercise regime. Swimming burns three calories per mile for every pound of body weight. So if you weigh ten stone (140 pounds) and you take approximately half an hour to swim a mile, you could use up about 420 calories. There are other forms of exercise which will help you to lose weight and get fit, but few of them are as easy on the body as swimming, or as high in calorie use. An approximate use of calories per hour for various activities (depending on body weight) would be: weight lifting 215, aerobics 500, jogging 700, walking 300, cycling 700 and swimming 800. In fact, swimming is great for just about everything except building up protection against osteoporosis. The reason for this is because it isn’t a weightbearing exercise. But, for general health and fitness, you should get in the swim.

Recipe! A rich and creamy quiche packed full of succulent salmon flakes and broccoli. Serve warm or cold with a crisp green leaf salad.

Salmon and Broccoli Quiche

Roll out the pastry on a lightly floured surface and use to line a 20cm loose-based flan tin (it should be at least 4cm deep). Trim off the excess pastry and prick the base all over with a fork. Chill in the fridge for 30 minutes.

Ingredients: • 250g shortcrust pastry • 300g salmon fillets

Preheat the oven to 200C/180C fan/Gas 6. Place a baking sheet in the oven to heat up. Line the chilled pastry case with baking paper and baking beans. Place the flan tin on the baking sheet in the oven and bake blind for 15 minutes. Remove the paper and beans and bake for a further 5-6 minutes until the pastry is crisp and pale golden. Reduce the oven temperature to 190C/170C fan/ Gas 5.

• 200g small broccoli florets • 4 large eggs • 250ml double cream • 100ml milk • Salt and freshly ground black pepper

Meanwhile, place the salmon fillets in a deep frying pan and cover with water. Bring to the boil then simmer gently for 5-6 minutes until just cooked through. Remove with a slotted spoon and leave until cold. Roughly flake the salmon discarding any skin and bones. Steam the broccoli florets for 1-2 minutes until almost tender.

• 50g Cheddar cheese, finely grated

TIP Replace the salmon with flaked smoked mackerel for a change of flavour and add a handful of fresh chopped dill or parsley to the egg mixture.

Serves 6. Ready in 1 hour 30 minutes, plus chilling and cooling

Place the flaked salmon and broccoli in the pastry case. Whisk the eggs in large jug then whisk in the double cream and milk. Season with salt and freshly ground black pepper.

Gently pour the egg mixture over the filling then scatter over the grated cheese. Bake for 25-35 minutes or until the filling is set and golden brown. Serve warm or cold.

A

lthough gardens are now looking a little tired, the drier soil means it is not a good time for planting shrubs or trees. So, do what you can to perk up flower beds and borders and then start to plan ahead for spring, as garden centres are starting to take delivery of bulbs which will get your garden looking fabulous early next year.

Many bulbs start to put down roots at the end of summer and into autumn, so prompt planting is advisable, though tulips are best planted in October. Another option is mail order catalogues which have a bigger choice of bulbs, often including more unusual varieties. Time is of the essence, however, so send off for these as soon as possible so that you can choose some delightful bulbs ready for planting in the next month or so. Before buying, decide where in the garden you can cram in a few bulbs. As they are often in flower before the rest of the garden gets going, they can be used to under-plant existing trees, shrubs and herbaceous flowers. Bulbs are an excellent way to make the most of every square metre of soil, and to ensure that your garden looks

lovely as early as possible in the year. Many bulbs do well in containers, so if you have a permanently planted up container this too can be under-planted with several layers of spring flowering bulbs. Use a transplanting trowel to minimise damage to the existing plants’ roots. If you are unsure which bulbs go together, don’t feel frightened to experiment. Alternatively, many catalogues and garden centres offer mixed selections of bulbs for specific purposes and there are also some lovely packs of bulbs following colour themes. These usually represent good value for money too. If you have a dull patch of lawn, brighten it up in the early months by planting some small bulbs. Crocus or miniature narcissus are particularly useful, as once the flowers have faded you don’t have much deteriorating foliage to cope with. In larger areas, consider planting up drifts of fullsized daffodils, but make sure you don’t want to mow the grass beneath these trees or shrubs regularly, as you can’t safely remove the leaves of the daffodils until at least six weeks after flowering.

Check that bulbs are in good condition before you buy, avoiding any which show even the slightest signs of deterioration such as sunken brown spots, excessive softness or patches of bluish mould. Larger bulbs generally seem to do better than smaller versions of the same variety. For large quantities of the same variety, buy a net of bulbs from your garden centre or direct from a mail order specialist nursery. If you can’t plant your bulbs promptly, keep them in a cool and well ventilated spot before planting, as this is essential to reduce the risk of them deteriorating. Next month I’ll be looking at novel ways to make the best use of the gorgeous array of available bulbs, so plant some now and then treat yourself to a few more for September planting!
