From the editor SARAH BLINCO
Over the past month I had the pleasure of playing tourist on the Gold Coast, doing all the fun things we take for granted, forget or are too busy to do, and only ever get around to when someone is visiting. Indeed, I was hitting some of our tourists’ favourite haunts because I had one of my oldest friends, Lauren, visiting from California. We’ve been mates since 1997, when we became pen-pals of sorts, but in the digital realm, bonding over a mutual love of Savage Garden, The X-Files and a long-held wish on her part to visit Australia, and on mine to travel America. Our families are now friends, and we’ve caught up all over the globe, in LA, Orange County, Vancouver and Sydney. A Queensland sojourn was long overdue for Lauren, so I set aside time to help her tick off her GC bucket-list. We shopped at Broadbeach, people-watched in Surfers, indulged in an entertaining night out at Draculas, cruised the canals, sipped tea at Versace and cocktails at the Sheraton; koalas were petted, kangaroos fed, and many, many photos taken. Something Lauren is really good at is being still. She’s content to sit on the beach, in a park or even at a cafe and not fidget with gadgets, computers or phones. Lauren reminded me that not only do we have extraordinary locations and attractions all over town that we don’t take advantage of to the extent we could, but when we’re there, we often forget to just be, and enjoy. Watch the waves, listen to the music, laugh at the spectacle, be a kid again... Hopefully you have a little discretionary time up your sleeve this festive season. In that case, perhaps consider what your bucket-list would be if you were a first time visitor to our sunny shores.What would you want to do? If you haven’t experienced it recently, then gather friends and family and do it. Beaches, theme parks, festivals, cafes, restaurants, shopping, nature and beautiful waterways... Lauren would happily have stayed here. We are lucky enough to be here, so get involved and make the most of the Coast this summer. Oh, and if you take any brilliant photos, don’t forget to share them with us on Facebook! Thanks as always for supporting Get it. Enjoy your month, and on behalf of our team, I’d like to wish you a very merry Christmas filled with much love, laughter, music, food and sparkling pressies under the tree.

7 spots for a healthy meal on the move
As a mum to two energetic girls, I like to get them out of the house as much as possible. If I haven’t packed a sandwich or two for the day, then I definitely like to try and choose healthy options for the three of us whilst out and about.

My youngest daughter can’t go past a sushi bar without wanting a piece or two. Usually en-route from the gym mid morning, we stop at Sushi D’lite, at Westfield. I know that we can get a great tasting fresh sushi roll, with no complaints from the girls. If we are in Southport and have some time to spare, I take the girls to Flavors @ Ferry. The girls have a gourmet toasted cheese and tomato sandwich and we get a delicious fresh fruit salad to share. I have to admit that I have a sweet tooth and have been known to order the Welsh Cakes on one or two occasions (to share of course).
Another of our favourites if we want something on the run while in Southport, is the Quench section at Ferry Rd Markets. They have tasty wraps and salads to suit all of our palates, if I can drag the girls away from the gelati counter that is. Whenever I see a Flannerys I have to stop. They do great snacks that are easy to portion control with the ease and availability of the different products in the bulk buy section. Just because it says bulk buy, doesn’t mean you have to. There are so many different things to try, and it’s always a hit with the kids. Paradise Point is a great place to hang out (there is a Flannery’s there too!). We frequent Cafe 7, with its vintage feel and laid back atmosphere. The coffee is great and the lunches are reasonably priced. I like the fact they have an all day breakfast menu. The girls can share an omelette, and I have the poached eggs which is the healthiest way to eat them by far. When all else fails, I have never heard the girls grumble on a pit stop at Brumbys. They will easily devour a Spinach and Feta sausage roll. I opt for this one as it obviously does not contain any of the saturated fats found in sausage meat, and sauce is never on the menu. Our most southern destination on the GC has to be BSKT Cafe. If we are down near Mermaid Beach then we make a b-line there. You feel healthy just being in there! Even the ‘treats’ section has the majority of the options made with organic produce and the others contain ‘superfood’ ingredients. Riana Horner meets Tanya Jurgensen − a woman who has achieved no less than losing 95kg! If you read one inspiring story coming into the New Year, this is the one ... hen Tanya Jurgensen was told by doctors that surgery was the only option for her to lose weight, she saw this as the easy way out. At 180kg, Tanya chose to make the life-changing decision to go against the doctor’s advice and fight for herself without it. As the gorgeous, seemingly confident 35-year-old sat in front of me, I would never have guessed the journey she had been through. Growing up in Brisbane with her parents and successful sportsman older brother, Tanya battled with her weight as well as living with Polycystic Ovarian Syndrome, a disease that contributes to weight gain. She got used to being referred to as ‘the fat little sister’ which encouraged her to feed her insecurities. However, Tanya’s concern for her weight grew when her health took a turn for the worst. Developing liver function failure at just 27 years old, Tanya was taken into the fulltime care of her parents. Suffering from breathlessness and severe migraines, she would often sleep for eighteen hours a day. Her family and friends watched Tanya fall into deep depression, and suicidal thoughts were not uncommon for her. “For years I allowed myself to be treated like human garbage,” she told me. In fear that she could die, doctors tried to convince Tanya that gastric band surgery was her only option left. Sick of people making choices for her, Tanya was desperate to get her health and independence back. After trying over 20 crazy diets, she joined the ladies gym Curves. Participating in their work-out circuit they offered at the time, Tanya felt her body reacted well to their routines. Unfortunately for Tanya her local Curves closed down, and on top of dealing with a nasty break-up, the weight-loss stalled for a while. However, with the willpower she had left, Tanya’s drive to accomplish her goal soon kicked back in.“I just didn’t accept this was it, I really felt like I could get to the end goal.” Proceeding on her own with sheer determination, she managed to lose a remarkable 30kg through exercise and hard work, and soon enough, Tanya found a new curves that she decided to contact. Despite knowing what she wanted for herself, Tanya tried every excuse to get out of it. Laughing to herself, Tanya recalls saying, “Look I’m really not interested in your shakes”. After daring her to try their new diverse diet plan, which had taken Curves’ nutritionists four years to perfect, Tanya was out of excuses and joined the program again. December 2013

I was astonished when Tanya told me she had currently lost 95kg in total. Learning new ways of thinking about food, she gained knowledge on how to deal with nutrition in her everyday life. “There are so many positive weightloss marketing programs so that you are not putting your body under stress, there isn’t a good enough excuse anymore. I don’t choose food as entertainment, I now choose size 12 clothes.” Finally getting the support she needed, Tanya learnt to surround herself with people who encourage her and who deserve to be in her life. “The loving support, the consistency, the encouragement. These people gave me so much power.” Wanting to give something back, Tanya found she has the ability to motivate others to achieve the same as her.Having shared her story in front of various audiences, including Curves members, she has received such positive praise. “People come up to me and say I’m an inspiration and I couldn’t ask for more. All you have to do is believe in yourself, other people don’t need to make you feel good. The only thing I need is for me to be ok with me.” Although she is 16
close to her target weight, her new healthy life style will stay with her forever. Currently focusing on toning now, Tanya regained the selfesteem she deserved. “Confidence is actually easy now, I’m not concerned by what other people think.” Discovering she can continue to do the things she loves has given Tanya a whole new lease on life. With ambitions to start a new career in the wine industry, Tanya recently returned from a month’s tasting tour.The Curves managers were delighted to be greeted with the beautiful Tanya 1.6kg lighter than when she went. “The program I was given by Curves is designed for your life, and if you’re passionate about it you’re going to want to commit to it. I know what to do when I go on holiday now,” says Tanya. When coming close to the end of this emotional interview, I asked Tanya what her advice would be to someone struggling with weight-loss. She smiled knowing exactly what her response would be and said,“I chose me, you need to choose you.”

blues Elizabeth Campbell discovers why loneliness doesn’t have to be a downer this festive season
s Gold Coasters get ready to deck the halls with boughs of holly, carol Jingle Bells until the wee hours, open Secret Santa gifts and eat enough food to feed a small village, it won’t be like that for some. Sadly, for many people – old and young – the festive season can be a lonely time, especially if you are on your own or your family and friends live interstate or overseas. But it doesn’t have to be – and that’s the mantra of the self-proclaimed Gold Coast “Christmas fairy” who’s turning the tables on festive loneliness and inviting everyone to lunch. Susie Longman is the founder and organiser of a free Christmas Day lunch held at Labrador for those who don’t have anyone to spend the day with. Now in its third year, the Gold Coast Christmas Community Lunch has grown from 200 people to more than 500. Susie says there are many reasons why people may be alone during what is meant to be one of the happiest days of the year. “Loneliness is a significant problem on the Coast and not only at Christmas. We see a lot of older people whose families are interstate or they are widowed. We also see a lot of women from refuges who are fleeing violent situations. They often have their children with them and only the clothes on their backs,” Susie says. “There is also a great number of people who can’t afford Christmas but don’t want their children to miss out. We December 2013
are told by our guests that the cost of living and unemployment contribute to their situations and they often have to go without. They are hard-working people who have come up against hard times. Some are welfare families. We also see a lot of fractured families where it may be the dad’s off year with the kids so they come to us as a guest or volunteer. We are inundated with volunteers, but many of the people who come want to volunteer because it takes their mind off having no one to spend Christmas with. Some break down and cry when I tell them we don’t need any more volunteers. I always encourage them to come as our guests. There are very sad stories out there and that’s why we do it.” While many of her lunch guests arrive early and leave late, Susie says it’s much more than just a roast lunch. “It is about giving the gift of connection more than anything else. Many of these people just want to talk and have someone to connect with because they are so lonely,” she says. “We have a buddy system where all of our volunteers sit and eat with our guests and spend quality time with them. It truly is magical.” Susie and her son, Cam Christie, who will travel from Sydney, began the charitable event after seeing a similar church-run lunch when they were in Port Douglas for Christmas one year. “The community is so generous. We always have an army of volunteers who BYO a potato peeler and tea towel, and 18
many Gold Coast businesses that donate whatever food and drinks they can,” she says. “We go through 180kg of vegetables and 40 chickens and if there is any left over, we send it home with the people who really need it. Last year a Small Goods company came on board at the last minute, so everyone got to take home a ham. Nothing goes to waste.” Guests will enjoy a full roast meal and all the trimmings including chicken and ham, a wide range of vegetables, pudding and custard for dessert, and soft drinks, tea and coffee. How to cope with Christmas loneliness Gold Coast holistic doctor, Dr Cris Beer, says there are many ways people can avoid loneliness at Christmas. “People can find themselves lonely at Christmas due to social isolation. They may be estranged from family members, live far away from family, be widowed, divorced or single. As Christmas typically is a time when family gathers together it can bring about a sense of aloneness if others are enjoying this fellowship when you are not,” she says. “Of course, loneliness itself can also arise from the quality and not the quantity of relationships with more personal relationships leading to a greater sense of connection. “The best way to avoid loneliness this Christmas is to try and find ways to be connected to others and the community. This might involve, for example, community volunteer work, attending a church service, or being part of a community activity.” Dr Cris’s top 4 tips include: 1 Try to stay in touch with family and friends via mail, phone, Skype or email. 2 Don’t spend Christmas alone. Even if this involves joining a volunteer organisation to help serve others on Christmas Day. 3 Attend community celebrations like Carols by Candlelight. 4 Seek counselling if Christmas is a particularly difficult time of year for you. “The Salvation Army provides a volunteer group who help give Christmas lunch to individuals. Church organisations all over the country have free Christmas services and often provide lunch afterwards, and Carols by Candlelight celebrations are held all over the country too,” she says.

Dating back to the time of the ancient Egyptians, aromatherapy is so much more than gorgeous scents and pretty candles – it tackles stress and health issues, clears out toxins, and balances the mind and body. Plus, as anyone who has ever had an essential oil massage will tell you, it’s incredibly therapeutic. But how does aromatherapy work, exactly? Founder of the Aromatherapy Co (thearomatherapycompany.co.nz), Sarah Townsend, says that it all comes down to its “affinity with the skin’s natural oils”. But it’s also very personal – our genetic makeup, feelings, and memories can all affect the way we react to different oils. She explains that when essential oils are absorbed in the skin and travel through the bloodstream, they “promote healing for the entire body”.The oils do not need to touch your body to have an effect, though – Sarah swears that even just breathing in the aroma of essential oils can put a positive spin on your emotions. Just in case you’re wondering, four is the magic number: it takes four seconds for the oils to reach the brain through smell, and four minutes for them to work their way into your skin. Many people link aromatherapy to luxe spa treatments, but it offers so much more. Once you start adding essential oils to your beauty routine, your skin and health will show their thanks. Since oils are so concentrated, they are amazing at nourishing, hydrating, and generally improving the condition of your skin. As Sarah explains, essential oils enhance the look and feel of skin because the ingredients in them “mimic the skin’s natural layers”. The benefits do not stop there: aromatherapy is so versatile, it can be used for medicinal purposes. In other words, it can help to improve – and in some cases, cure – the ailments that crop up in our every day life. There’s an oil for just about everything, including colds, fatigue, stress, asthma, eczema, arthritis, allergies, head lice and acne. Sarah points out that aromatherapy also treats the
mind, “altering moods and easing mental worries”. We can appreciate essential oils are possibly wonder products, and now the question is, how do we use them? Sarah says there are a few methods that offer therapeutic benefits to the mind, body and soul. Like the oils in general, the way you use them is an entirely personal thing. To really amp up the benefits, it is best if the oil absorbs into your skin. As such, women tend to lean towards vapourisation, massage, and baths. Sarah says vapourisation is one of the most powerful methods. Here’s how to do it: distill a few drops of pure essential oils in a water burner, lighting a candle at the base. Within seconds, an aromatic fragrance will waft through the air, releasing the kind of “healing vapours” that “shift moods and soothe emotions”.If you’re the kind of person who likes to soak their worries away, add three drops of essential oils to a warm bath. Then sit back, relax, and let the oils seep into your pores. Or, if you’re feeling indulgent, treat yourself to an aromatherapy massage. Ask your masseuse to
gently work the pure oils into your skin, or try it at home. For those who prefer to flirt before committing to a date, there are plenty of milder methods of aromatherapy that are just as effective as concentrated oils. An oilbased candle, body wash, spritz, or bath salt can be a lovely introduction to the world of aromatherapy. Once you get a taste for oils, you’ll wonder how you lasted so long without it.

Brad McMurray He’s acted alongside some of Hollywood’s biggest stars, and Gold Coaster, Brad, doesn’t look like slowing down for Christmas either... Tell us a little about your family? We are a little bit like the Brady Bunch, a blended family. There’s me and my two kids, Declan (14) and Jenaya (11) along with my wife, Rachael and her daughter, Nikita (16). Tell us about a usual Christmas in your home? Well it starts with the kids getting up way too early.You’d think as they’re getting older that would change, but no. So, up early, Christmas music goes on and we open presents under the tree, in our PJs. A bit of goofing around and then up for a big hot breakfast, and then getting dressed and preparing for spending the day with family. Any gift in particular that you’d love to see wrapped under the tree? A 1977, AFA Graded, mint-condition, vintage Star Wars Darth Vader action figure. I’m a bit of a nerd at heart. What is a typical Christmas lunch and/or dinner at your house? Lots of seafood, exotic salads, French potato bake and a honey glazed ham. Before I was an actor, I used to be a five star chef so I usually throw in something unusual and more adventurous than your average turkey and stuffing. Tell us, what is the one dish that gets served every single year? Is there a story behind this? Gratin Dauphinoise (traditional French potato bake). It was one of the first dishes I learned to make in the first year of my chef’s apprenticeship so I make it every year. It never disappoints. Essentials for a Gold Coast Christmas… Good seafood, a fantastic bottle of Sauvignon Blanc, a late afternoon swim at the beach, family and lots of laughter. December 2013

Your best Silly Season survival tip? Relax. Don’t sweat the small stuff. Christmas is about spending time with loved ones, not who spent what on presents or who forgot the potato salad. What have been your big achievements in 2013? I had several feature films come out this year as well as a guest episode in the ABC’s hit TV series, Miss Fisher’s Murder Mysteries. I’ve also been teaching for three different acting schools which has been a fantastic experience professionally. What are your plans/goals for 2014? I’d love to have an overseas holiday with my family. More high profile work interstate and overseas is on the cards. My wife and I are writing a screenplay and plan to make our own feature film. There are the six of us, we think of ourselves as quite an assorted bunch, much like a bag of liquorice allsorts. What are your plans for Christmas 2013? 30
Christmas is spent at our place; we have an indoor skateboard ramp, tennis court, pool and a large yard − so no shortage of things to do. We have a family tennis tournament each Christmas Day with a plaque which gets engraved with the winners’ names. Tell us about a usual Christmas in your home? All the kids are awake before the sun rises and are in our bed trying subtly to wake us up so they can start opening presents. It is waves of present opening after this as more family arrive. Any gift in particular that you’d love to see wrapped under the tree? Every year there is a skateboard under there for someone, but I myself don’t fancy that! For me, I’d love to see something sparkly; every girl loves a little sparkle. What is a typical Christmas lunch and/or dinner at your house? Like previous years we all do our bit to prepare a feast, we don’t miss a thing and our menu includes a selection of seafood, the traditional roasts and with Japanese heritage there are a few culinary Japanese delights. We also have fruit mince pies, pudding, pavlova and trifle. Tell us, what is the one dish that gets served every single year? Is there a story behind this? There are a few but two stand-outs would be dad’s glazed ham and mum’s trifle, you can’t beat either of them!

I marinate my fruit months in advance so it’s perfect and full of flavour when Christmas comes, and I make all my own pastry – I’m pretty sure they’re the main reason everyone ends up at my house. I was on Channel 10’s Recipe to Riches, which was such a great experience. I appeared twice on the Today Show as a result of my successful YouTube channel, MyCupcakeAddiction, and have flown twice to the USA to film in professional studios and meet amazing talented chefs and actors – it’s been a whirlwind! What are your plans for 2014? I want to expand my family, see my YouTube channel reach one-million subscribers and continue to fill that cookie jar with many more little victories. Charlotte Reeves lives an enviable life brimming with creativity and animals. She tells Sarah Blinco about her job as one of the Coast’s favourite pet photographers Have you always been a photographer or did it evolve from something else? Photography first appealed to me as a career during my final year of high school, when I completed a short course in shooting and developing black and white film. Instead of pursuing study in veterinary science as I always intended, I instead completed a two year Diploma of Photography at TAFE. When I finished, I struggled to decide on what to specialise in and instead went on to complete further study in multimedia and graphic design, other passions of mine. What inspired the move into the pet photography arena, and how long have you been doing it for now? After a number of years working in the design industry, I rediscovered my love of photography through taking photos of my first dog as she grew up − a Great Dane called Kaya. I loved photographing her and her doggy friends so much that I started my pet photography business in 2007 and have been addicted ever since. I lost Kaya to cancer at just two years old in 2009 which gave me an even bigger drive to pursue pet photography as a long term career, as I realised just how important it is to capture beautiful photos of our furry friends while we have them. Have you any hilarious ‘disaster’ stories to tell? I count myself lucky to have never had a true disaster happen at a pet photo session, but working with animals, often things just haven’t gone as planned. I’ve had dogs more interested December 2013
in making friends and checking out the smells than modelling (who can blame them really), and cats who decide the safest place is under the bed and nothing will convince them to come out. Plus everything in between! I love that photographing pets keeps me on my toes and sometimes the unplanned shots are the best ones. What’s the best moment you’ve had, where an animal did something really cool or unexpected that you captured? On a recent visit to New York City, I was photographing a Long-Haired Chihuahua in Times Square. It was late at night and we’d travelled there in the subway, with little PJ happily munching away on a rawhide chew in his carry container. Times Square was seriously busy with people milling around everywhere, many of them asking us what was going on. I was expecting PJ to be super distracted but he surprised us all by sitting beautifully as asked, completely focused on his owner. Imagine my surprise when he even showed off his “beg” for us while balancing on a barricade! He was such a little superstar, it was an amazing and surreal moment. Have you any really special stories you can share? One session that touched me and always sticks in my mind is one I shot a few years ago of a black Labrador cross called Albert. He’d been diagnosed with cancer and his devoted mum had organised a photo session as she didn’t think he had much time left. She’d also decided she was going to do absolutely everything in 38
her power to fight the disease, including some alternative therapies. At the session, poor Albert could barely put any weight on his leg and it was twice it’s normal size and hot to touch. Imagine my delight when she brought him back to my house a month later to pick up her order, and Albert trotted into my yard, right as rain! His leg was almost back down to normal size and he was moving without so much as a limp. Albert ended up having another year or so with his beloved mum, all due to her love her him and her desire to fight the disease to the very end. Where’s your favourite location or type of location, to shoot animals? I have so many favourite locations! I do love shooting at the beach most of all though. It can be a super distracting place as dogs generally love the sights, smells and excitement of other dogs running around. With some patience
and lots of breaks in between though, I always manage to capture some stunning shots at beach locations. What are three of your top tips for those of us trying to capture moments on film with our pets? 1 Go outside and turn off the flash − I see so many shots of people’s pets indoors, where the camera has automatically turned on the flash to compensate for the low light. This tends to give animals those dreaded glowing eyes which ruins the look of the photo.The eyes are definitely the window to our furry friends’ personalities, so to ensure they look clear and well lit, head outside where there’s lots of light and if possible, manually turn off the flash. 2 Get their attention. Bribery works really well with dogs in particular. Use toys or treats to make sure their gaze is firmly focussed on you before taking the shot. Rewarding your dog’s attention with a game of fetch can result in some really fun action shots as they are running back towards you. 3 Be patient and make it fun − the best way to make your pet camera-shy is to expect too much of them and make it into hard work. Instead, reward good behaviour often and make it a really fun experience for them. This helps them associate camera-times with good times, encouraging them to co-operate and increasing your chance of getting great shots! TRAVEL with Sarah Blinco
A road trip throughout the Scottish Highlands has Sarah Blinco thoroughly enchanted Do you trust your Uncle Chris?” Our amusing guide’s dulcet tones broke the silence,rousing us all from a coachinduced delirium. “Yes,” we smiled and nodded, wondering what was coming next. “Right then, close your eyes. Close them tight, and don’t open them until I say. I’m going to tell you a story...” A mild objection rose from the group, because at that point we were cruising throughout 360-degrees of picturesque landscapes: vast lochs, dense green terrain stretching skywards, mysterious clouds looming across the cliff-tops − how could we look away? “When I was little,” he continued, “My Uncle Harry brought us along this route on a family outing; he requested the same of us, and as we trusted him, we kept our eyes closed... I see you all trust me, well, except for you two in the front seat. Don’t think I can’t see you.” We giggled but kept our eyes shut (well I did anyway), as Chris proceeded with one of his wonderful tales of adventure and revelry. Just as I was pondering how much of Mother Nature’s spectacular show I was missing despite being thoroughly immersed in Chris’ story, his tone notably edged towards a climax, as the coach simultaneously stopped. “And then my Uncle told us to turn our heads to the right, and open our eyes NOW.”As forty odd heads shifted to the right, and our eyes snapped open in anticipation, we all gasped at the surreal scene, for in front of us, perched in the middle of a large loch, surrounded by peaceful lapping water, a crisp breeze and dreamy mountainous landscape, was the most gorgeous Mediaeval castle most of us had ever seen − in real life, at least. It was a scene we had envisaged when choosing this Haggis Tours Skye High expedition, and there it was for the taking. Eilean Donan Castle, originally built in the 13th Century, but lovingly restored over the years, familiar to a few as it has been featured in various films and photo-shoots. This wasn’t the last castle or set of romantic ruins we would come into contact with on our journey further into the Highlands of Scotland, and even though the landscape varied from lochs and mountains, to desolate, craggy regions featuring jaw-dropping sheer cliffs dipping into the icy ocean, it was all magical − everything I’d hoped. for The Isle of Skye itself is all dramatic landscapes surrounded by sea and boasts Scotland’s oldest and youngest mountains. A geologist’s dream, with something different to discover on each and every journey. I was more interested in the folklore of the place − and yes, stories of faeries, princesses, monsters, romance, battles and betrayal run rampant in these parts. Fortunately for us, Chris (who incidentally, lived on the Gold Coast for a while) is the very best, most passionate story-teller I’ve ever met, December 2013

and his enthusiastic accounts − of history and mythology − had us enthralled for hours. His accent didn’t hurt either (notably the Scottish accent usually ranks within the top three sexiest in the world... according to Google (and a little of my own research)). As we edged up a steep hill, ocean and windswept cliffs drew further behind us and fields of green with odd-shaped mounds emerged in front. Chris explained we were about to discover a sublime little place called Faerie Glen. As I happy-danced gleefully in my mind (anywhere called ‘Faerie Glen’ had to be amazing, right?), he recounted a‘faerie -tale’about a young prince of this world, and a faerie princess who fell in love many moons ago. Of course, they could never be together, but the faerie king granted them a wedding plus one year and a day together. Sadly, that year passed all too quickly, and as they parted ways, broken-hearted, the faerie princess handed her true love a special faerie flag blessed with protective powers. This flag is said to have been used by Scots in the 40
past, and indeed it has protected them.Allegedly, some Scottish soldiers even took the flag with them into the Great War and were the only men in their group to return. While we didn’t actually get to see this charmed flag, we were privy to the home of the faeries. Faerie Glen is a marvellous green, hilly landscape with hidden surprises − like waterfalls pouring from cliff-tops − emerging around any given corner! It’s said, if you need help with anything important here in the human realm, if you close your eyes and walk around one of these ‘faerie mounds’ seven times, a portal of light will open up in the heather and take you into the faerie underworld. But, beware, for time passes quickly in Faerie Glen’s underworld, so if ever you are to meet a faerie here, or seek help below, your notion of fifteen minutes could indeed be seventy years ‘up here’. This trip was more than just sensational scenery (which would have been enough); we also learned about Scotland − history, conflicts, tumultuous relationships with neighbouring England as well as between clans. In fact, if
you’re a Campbell you’re not welcome in some of these parts to this day! We of course gained knowledge of other intriguing lore... and a little background in something very important to the Scots, whisky. There are indeed many wondrous, historical and interesting elements which come together to colour contemporary Scotland. Evidently Scotland is home to numerous renowned features, but none more famous than Loch Ness and its notorious monster. This particular destination has been on my bucketlist since childhood. My brother, Josh, and I were both fascinated by this legend when we were young, and he managed to visit ten or more years before I made it to Loch Ness. I’d always treasured a little Nessie figurine which Josh had bought for me, and was particularly excited to finally dip my toes into the choppy waves of this spectacular body of water. Loch Ness is massive. It contains more than twice the water England has within all of its lakes and catchments. It’s also dark under the waves, in fact, it’s pitch black at 10 metres below. Unexplored lava caves and tubes lead off the loch, and sonar navigation systems have detected unnaturally large shapes swimming in the depths. Basically, there is a lot of space and much scope for a monster − or monsters − to hide. Many do believe in these monsters, and if we can appreciate anything from history, it would be that while someone may seem mad for their beliefs, it does not mean they are incorrect. Did you know that scientists understand more about the surface of the moon than about the depths of these waters? Which is why believers
insist yes, the monster is possible. While the earliest report of a monster sighting associated with this area dates back to the 7th Century, modern documented sightings started in the 1930s, with the most famous picture, known as ‘the Surgeon’s Photograph’, snapped in 1934. A hysteria built around the story which continued into the 1950s, and while that has calmed, even to this day there is a policeman in Inverness (a city not too far up the road) who is tasked with the job of recording sightings. Nobody knows whether Nessie is real or not, and that’s part of the mystique and allure of this story. There are things in Loch Ness; there are dangerous things − this is a fact. But it is the monster that makes it legendary. From the captivating cliffs of Cuith Raing, sheer drops and waterfalls crashing into the ocean around Kilt Rock, to magical bodies of agua promising eternal youth, and the character of one of the world’s most delightful cities, Edinburgh: this Scotland and Isle of Skye journey is certainly one that leaves a happy traveller wanting more. I discovered a blog by ‘Rachel in London’ who experienced this trip in 2009, and I feel she captures my experience with these words. “Jane Austen’s book Northanger Abbey sums up perfectly my whirlwind of a weekend touring Scotland and the Isle of Skye: ‘If adventures will not befall a young lady in her own village, she must seek them abroad’.” Go seek your adventure, and if I can impart any advice, seek it in Scotland. Stuff yourself silly and delight the senses with these delicious Christmas treats
Turkey with Apple and Raisin Stuffing
serves 6-8 Ingredients: 1 x 5kg Ingham whole turkey Stuffing: 40g butter 1 large brown onion, finely chopped 4 rindless bacon rashers, finely chopped 6 cups fresh white breadcrumbs 1 cup raisins
from Ingham
1 apple, peeled, core removed and finely diced 1/4 cup sage leaves, roughly chopped 1 egg, beaten Salt Ground black pepper 4 apples, halved lengthways 1 tablespoon olive oil 20g butter, melted Cooked vegetables, of choice
Method: Preheat oven to 180°C. Place a rack into a large roasting dish. Pour ½ cup water into roasting dish. Wipe turkey inside and out with paper towel. Stuffing first. Melt butter in a large non-stick frying pan over medium heat. Add onion and bacon. Cook, stirring occasionally, until onion is soft. Remove from heat. Cool. Combine onion mixture, breadcrumbs, raisins, diced apple, sage, egg and salt and pepper in a large bowl. Fill upper and lower cavities of turkey with stuffing mixture. Tie legs together with kitchen twine and tuck wings under turkey. Place turkey onto a wire rack in a large roasting pan. Cooking times vary according to the size and weight of the bird. Place apple halves, olive oil and butter in a large bowl and toss until apples are coated. Place into a large shallow ovenproof dish. Add apples to barbecue for last hour of cooking turkey. Stand cooked turkey on a chopping board covered for 10 minutes before carving or serving.
White Chocolate Cherry Panna Cotta from Australian Cherries
Serves 6
Ingredients: 4 sheets leaf gelatine or 3 teaspoons powdered gelatine 1/2 cup milk 2 cups cream 1/2 cup caster sugar 100g good quality white chocolate 200g pitted cherries 100g whole cherries with stems on Method: If using leaf gelatine, soak the gelatine in the milk. If using powdered gelatine, sprinkle the gelatine over the milk, stir, then microwave on high for 30 seconds. Place the cream, sugar and chocolate in a saucepan and stir over a medium heat until the chocolate has melted. Add the gelatine and milk and stir until the gelatine has dissolved. Place pitted cherries in the base of six moulds then pour over the panna cotta mixture. Refrigerate for 3-6 hours or overnight. When ready to serve, dip the panna cotta moulds in boiling water then unmould onto serving plates and top with whole cherries.

Grilled Barramundi with roast peppers, zucchini, olives & almonds
Serves 4 Ingredients: 1 zucchini 1 eggplant 1 red capsicum 100gm pitted black olives 2 tbsp toasted almond slices

2 tbsp unsalted butter 2 tbsp extra virgin olive oil 4x 200 gm portion barramundi skin on and deboned Salt 1 Lemons (½ juiced, ½ cut into wedges)
Method: Slice zucchini and eggplant lengthways ½cm thick. Place in a bowl and toss with salt and 1 tbsp oil. Char grill vegetables until tender. Set aside. Roast capsicums over an open flame until skin is black then place into a bowl and cover for 5 minutes before peeling them. Cut capsicum in half and remove all seeds and pith. Slice capsicum into 2cm wide strips and set aside to cool. Season the fish skin with salt. Add the other tbsp oil into a hot pan and place the fish skin side down. Once the fish has relaxed, allow it to cook on a high heat for 2 minutes. Place the whole pan into a preheated oven of 220’C until the fish is cooked. Place vegetables in the oven to reheat. Take the fish out of the oven and turn the fish over using a spatula. Place the pan onto the stove on a high heat. Add the butter and allow it to cook until golden brown. Quickly add the lemon juice and almonds and spoon the butter over the skin of the fish. Divide the vegetables evenly and arrange them in the centre of 4 plates. Place the cooked barramundi on top of the vegetables and spoon the almond and butter sauce over the fish. Serve with a lemon wedge and drizzle with extra virgin olive oil to finish.
Char grilled White Peaches with Mandarin Granita & Cinzano Bianco Jelly
Serves 1
Ingredients: 2 white peaches halved and stoned Granita: 200ml mandarin juice 50ml 1:1 sugar syrup

Jelly: 20ml cinzano bianco 1 crushed juniper berry 230ml 1:2 sugar syrup 1 titanium gelatine leaf
Method: Jelly: Soak gelatine in cold water until soft. Place sugar syrup and juniper berries into a small saucepan and heat slowly ensuring it does not boil. Remove from heat and allow to infuse for 5 minutes. Strain syrup mixture into a jug. Using your hands squeeze the gelatine to remove any excess water. Add the gelatine to the warm syrup and stir until gelatine has dissolved. When mixture has cooled, add the Cinzano and mix well. Pour mixture into shot glasses and allow to set in the fridge for 5-6 hours, overnight would be ideal. Granita: Mix juice and sugar syrup together and place in the freezer overnight. Using a fork, break up the mixture every couple of hours when possible. Peaches: Once the grill is very hot, place peaches skin side up. Wait until the grill marks have caramelised the natural sugars then turn them to create a criss-cross pattern. Flip them over and continue to cook for another 3-5 minutes. Serve 2 peach halves on a plate with a shot glass of jelly on the side topped with a generous amount of granita on top. 43

Roast with crackling To help you cook the crispiest crackling, there are three things you need: heat, oil and salt.

MAN OF ACTION Meet Aaron Hickey − Navy Australian Surf Rowers League Surf Boat Rower, Open Men’s A Grade Crew, Kurrawa SLSC, winner of two Australian Gold medals... Need we say more? Tell us a little bit about your background in rowing – how did it all begin and when did you realise it was something you wanted to pursue to the degree you have? After many years playing all kinds of sports I found it was a combination of rowing, surf and competing in a team environment that eventually got me over the line. My dad had been involved since we were little kids and it was only natural that I would follow in his footsteps and he became my first coach at Rainbow Bay SLSC aged 15. What’s your training regime like? To be competitive in the Navy National Premiership League as an A-grade rower we average 8-10 sessions per week comprising of mainly of rowing, weights, running and cycling. What’s the best thing about your gig? Meeting so many people from different backgrounds who share an interest in surf rowing, plus being able to compete at some of the best beaches in the world. What’s your success mantra? Everyone makes mistakes, it is how you learn from them that determines who you are.
Tell us something about the industry we probably don’t know? We are all qualified surf life savers and can be often found patrolling the beach on weekends. What’s been the most exciting moment of the journey from over the past few years? Rowing out in big surf still to this day gets the adrenalin flowing. However winning two Australian Titles has definitely been the highlight and now that Navy are on board the sport is growing in popularity. What’s your key advice for those juniors who want to follow in your footsteps? Don’t take shortcuts if you want to be your best. It takes commitment and dedication but the rewards will be life-changing. Above all else, have fun. When you’re not working, where might we find you on the GC? Anywhere outdoors, especially around home at Burleigh; and enjoying the occasional beer with mates. In three words, what does the Gold Coast mean to you?
