I was a lucky little kid, blessed with loving parents. I always had to share my mum though − not just with my brother, but with my friends! Often I had to vie for attention, just as my pooch, Harry, head-butts other dogs out of the way so he is first in for cuddles at the park. For a while I wondered why my young friends insisted on congregating at our car for a pre or post primary school day ‘catch up’ with my mum. I later realised they all adored her too, and it’s not hard to understand why. She made them feel special, paying each and every one the attention they craved. She would laugh at their jokes, tell her own, then bid them farewell with a warm, genuine smile. That’s my mum. She’s sweet and kind. I was just lucky enough to get to go home with her.

THE GOLD COAST’S Sarah Blinco catches up with gorgeous and gifted Gold Coaster, 23-year-old Alex Forras, who is poised to be film’s next big thing! You’re starring in an exciting new production, Black and White Lines, directed by Darren Downs. Tell me a little about the film? Black and White Lines is set in the eastern suburbs of Melbourne in 1963. The story takes place in a Technical School for boys, and is based around a bunch of unruly youth who are doing time in Saturday detention for various infractions of the moral code like damaging school property and stealing. I play new kid on the block, Michael Cox, and he has been transferred to this school after a troubled past which saw him expelled from his former school... School tough, Eddie Gilmour (Leighton Irwin), sensing a rival, seeks to assert his alpha-male credentials as leader of the ‘Blackburn South Boys’ gang, by immediately going on the offensive, subjecting Michael to a barrage of abuse and invective, which ultimately leads to the two squaring off with flick knives, an essential initiation rite within the gang and one which Eddie challenges Michael to accept or decline. It all builds to an unexpected and dramatic ending! What’s your best memory from on-set for the film? Probably my coolest, fondest memory from on the set would be the songs we would sing between takes. Most of the cast have had some singing/dancing experience and we would often, much to the annoyance of the crew, break out into song and dance. It was quite funny and relieved us of the boredom of sitting on a set for long hours.

How long have you been acting for? It’s been a life-long dream. Since I was young I’ve enjoyed entertaining people, at that stage it was mainly for family and friends. That passion just grew and I decided to take it further and audition for school acting roles and then for things outside of school. I started off doing some very small roles in some student films on the GC. I then got approached for a TV presenting role in a show called Trash to Fab which unfortunately didn’t get pickedup, but it spurned me on to keep trying and auditioning for other things. From there I picked up small parts in a number of television shows. I’ve also undertaken extensive acting courses at Vox Academy (Gold Coast) and NIDA (Brisbane). This is your first film role, where else would audiences have seen you? I have had roles in Elephant Princess, H20, Terra Nova and appeared in a number of television commercials. Are there any key differences between filming for a movie and filming for television? Television production is so fast. Especially on a TV series where there are massive deadlines to work to. Working on a film is a lot slower paced and it can take a day to do two scenes. How’s the transition been moving from the Gold Coast to Melbourne? I spent most of my teenage and younger adult years on the GC, but I have family and friends here so it was an easy step. [For me] Melbourne has more to offer, either theatre, film or television. Culturally it’s exciting too. There are excellent networking opportunities, and a lot of schooling opportunities for film and television. What’s the biggest industry lesson you’ve learned over the past year or so? 11

Get used to being rejected because you’re going to hear the word ‘no’ a lot more than the word ‘yes’. I’ve also learnt just in the process of this film that marketing and promotion is extremely important. It’s one thing making a good film but getting it out there and noticed requires clever promotion! Which actors do you look to as role models? I’ve always respected actors who are so talented they can work in any genre, like James Fox, Natalie Portman, Morgan Freeman, Alec Baldwin, Jim Carrey, Anthony Hopkins, Will Ferrell, Hugh Jackman and Russell Crowe. What advice do you pass on to other young up-and-coming actors? You need to put yourself out there. Short films and extra roles are a great way to enter the industry. Network, take advantage of the talent websites making sure you have good photos and if possible a showreel featuring your best work. Keep people updated on what you are doing via social media and getting out to film and media launches when you’re invited to them. Also, don’t limit in regards to roles, or you risk the danger of being typecast or boxed into one category. What projects are in the pipeline for you now that Black and White Lines filming has wrapped? I’m looking at working with Darren Downs (Director of Black and White Lines) on a new project he has in development later this year. I can’t say too much about it, but it’s again set in Melbourne and based around real events. I’m very excited about it. There is talk of Black and White Lines being developed into a feature. There is a lot of interest. We’re keeping our fingers crossed and just going to see what the reaction is with the short. alexforras.com May 2013

Michelle Lacey chats to Ron Hailes who holds the Relay For Life event close to his heart, after his wife Monica was diagnosed with breast cancer in 2004. he Relay For Life Gold Coast chairman says he is thankful his wife is now in remission after battling the cancer for nine years. “It is tough, and one of the hardest things is when people are in remission it can come back,” Ron explains. This year, Relay For Life is looking for more than 100 teams to take part in a relaystyle walk or run overnight for 18 hours straight on May 25 and 26 at Evandale Lake in Bundall. All money raised will be invested into the Cancer Council Queensland’s vital cancer research, education programs and patient support services. Ron says, “It’s about celebrating the survivors, remembering those not with us anymore and fighting back against cancer. It is a gathering of like-minded people for a great cause and we are hoping to get about 100 teams taking part in this year’s event, as we aim to raise $100,000.” Relay For Life began in Australia in 1999 and now raises more than $18 million each year. Event organisers are urging businesses and the public and to get involved to help raise money and awareness for the cause. Entry is $20 for adults and $15 for youths, which includes a polo shirt and breakfast at the event. Breeze FM are a Hope Sponsor for this year’s Relay For Life. LOCALPROFILE with Sarah Blinco

FIGHTING e r u t u f e h for t Bond University student, Julia Steele, was recently awarded the opportunity of a lifetime after securing one of Australia’s most prestigious scholarships − the Prime Minister’s Australia Asia Award − to study overseas. Sarah Blinco made contact with this innovative young leader to ask about her drive, passion and plans for the future.

Are you finished studying for your Bachelor of Environmental Management? At the moment I’m in my last semester, studying mandarin on exchange at Suzhou University (a city near Shanghai). The semester here finishes in July when I will have officially finished my Bachelor of Environmental Management (Sustainable Development). From there,I’m heading to study an intensive mandarin course in Taiwan for two months, before heading to Beijing to do an internship at the Institute of Desertification under the Ministry of Forestry. My current goal is to concentrate on learning the language so that when I am qualified, I can work in either an Australian or Chinese company, government department or NGO. Why did you decide to study in this field? Environmental Management is quite a broad subject but Sustainable Development is genuinely the issue of my generation (once you May 2013

cut through the green wash). What areas of sustainable development are you most passionate about? To put it simply, I’m passionate about preserving the natural environment (in the state it has been for millions of years before humans). Australia is a place of many beautiful and diverse natural landscapes, which I can really appreciate since travelling to different countries. When I arrived in China the first time, I looked directly at the sun (through the pollution) and I remember thinking,‘This isn’t right...’ Why do you believe you were one of just twenty undergraduates nationwide to be chosen as a recipient of the prestigious Prime Minister’s Australia Asia Award? My responses to the application questions were very genuine. Regardless of whether I became a recipient, I knew I was always going to find a way to study and 14

work in China − it was my goal. What process did you have to go through to be considered as an award recipient? I needed to contact Chinese universities to see whether they would host me and inquire about the different degree programs they offered. I needed to show participation in community service and I needed to have three very good references. I drafted the application a few times and had different people provide their opinions.It was quite a lengthy process but definitely worth it! The [overall] prize is a scholarship to support up to a year of study in Asia, followed by up to a year of internship work at a business,government department or NGO of your choice.The aim of the Award is to create new networks internationally with Asia across many fields (other recipients studied law, business, events management and many other degrees). It supports me financially and is well-known internationally so it will really open doors for me. Why is China such a relevant location to be studying and learning for you at this point in time? China is the world’s fastest growing economy, it is the most populous nation and consumes by far the largest amount of energy in the world. It therefore encounters quite a wide range of environmental problems and at the moment I am in the middle of deciding where to concentrate my energies, starting with the internship at the Ministry of Forestry. It is also extremely relevant to learn the language and experience living here to better understand the Chinese mentality and way of life. What about the experience are you most looking forward to? I’m looking forward to getting out of the city and travelling to Shangri-la and Yunan Province (close to Tibet). So far I’ve only seen cities and am really excited to see a more serene side of China. If there’s something about the world that you can change due to your studies and experience in the future, what will it be? In the past there hasn’t been any value placed on the environment. It has been taken for granted that we will have clean air, sufficient water supply and sufficient raw resources to sustain the rate of development seen throughout the past 200 years. This mentality is shifting − government and businesses are seeing the value in conserving energy and being more environmentally aware. In my career, I want to ensure the true value of the environment is realised by government, business and policymakers worldwide. What were your favourite subjects at school; what strengths do you need to have to excel in your chosen field? I’d probably have to say Chinese. There is no specific kind of student to study this degree, you just need to be passionate in what you’re learning. Where do you hope to be in five to ten years time? When I’m 25, I will have experience in Chinese government, an NGO (potentially the WWF) and in a commercial environmental firm. By then, I’ll know which group can actually make the most impact.

Expressions Artistic Director, Natalie Weir, is the genius choreographer behind the performance. Natalie is an established, award-winning and acclaimed choreographer, known internationally for her highly physical partner work, her organic movement style and her touching insight into human nature. She has created over 150 professional works in her 20+ year career and has worked extensively throughout Australia, America and Europe, creating works for many of the world’s most prestigious performance companies. She says, “Choreography is not just something I do, it defines who I am.When I am developing a work in the studio, my connection with the dancers is the most important thing – I feel choreography is simply revealing what is already within a person, waiting to be found. My respect for dancers is enormous and when the relationship works, magic can

A genuine entrepreneur and philanthropist of the Gold Coast, Humphrey Firkins is a well-known name and much-loved personality, particularly within the Saint Stephen’s College community. He shares his remarkable tale with Chris Mcleay ith the ravages of war taking a toll on his home country, a young Englishman embarked on a journey to Australia. With £100 in his pocket and the clothes on his back, he dreamed of a better life. Still enlisted in the British Army and based

in Egypt, Humphrey Firkins demobilised. In Egypt he boarded a ship, the Tamaroa, and with no real desire to return home to England he headed to Australia. He was in luck when a position opened as a purser on the ship where he was able to work for his fare. It was 1947 when Humphrey arrived in Melbourne and wasn’t long before he began to build his empire. As we continued chatting like old friends,

Humphrey starts at the beginning. He fondly recounts his childhood living in the English countryside where his family once owned the largest crops of hops (used for beer production) throughout Europe. Humphrey has always enjoyed living on big properties and that served him well when landing in Melbourne. While Humphrey dreamed of reuniting with his sweetheart, Goda, he started a poultry farm to establish an income before inviting her


to join him. When Goda arrived from England the two were quickly married in 1949. Soon after their marriage, Humphrey and Goda were blessed with four children, three boys and a beautiful baby girl. It was due to a severe back injury and his ever-growing family that Humphrey identified the need for a career change. With a keen eye for business he tried his hand in the pharmaceutical world. Opening his own business and with Goda by his side, he developed and sold veterinary medicines and supplies. After many years of success, Humphrey and Goda decided to leave Victoria, and thought opening a deer farm on the Gold Coast would be an ideal option. The pair built a homestead on a property in Coomera named Flowerbank. After several years working on the land they so dearly enjoyed, Humphrey sold the Coomera property, which is now home to Saint Stephen’s College. With Humphrey’s determination and foresight paying off, he found that ‘better life’, and has subsequently used his life-lessons to inspire and support the students of Saint Stephen’s College. Humphrey is founder and chairman of The Goda Foundation, named after his beloved wife. The foundation offers funding and assisted programs for students to develop a sense of place in the community while encouraging character development. It was created as an everlasting memoriam to the love of his life, and provides a means of continuing her dream of a better education for all.

Humbly, Humphrey recounts the beginnings of the foundation and a warm smile appears. He says his greatest joy is witnessing the growth and the enthusiasm of the students. “In 1999 the trust deed offered around $2000 towards education outside of the regular curriculum,” he said. That figure has soared and is now upwards of $250,000. The future of the foundation is bright with Humphrey looking to expand the program to Asia. “China is where the future lies, and we hope to open a permanent base and work with other schools,” he adds. Director of Community Relations, Paula Axford-Wood, says Humphrey is a treasured part of Saint Stephen’s College. “When he arrives the students are star-struck. Humphrey is a celebrity on campus,” she smiles. Humphrey receives regular letters from students as thanks for his support and belief in their education and development. One such letter attributes Humphrey’s work with the students as lifechanging. The student was a participant in the Outward Bound Program thanks to Humphrey and The Goda Foundation. I recently visited Saint Stephen’s College to walk through and witness what Humphrey had achieved through his generosity and dedication. As I entered the western gate,

I noticed ‘The Goda Firkins Auditorium’. The school’s design carries the style of the original homestead that Humphrey and Goda had built many years before, and in fact, the facade of the original homestead was carefully moved and now stands as the entrance to the auditorium. As Paula escorted me through the school, she pointed out the Humphrey Firkins Lecture Theatre which is another great tribute to the generosity and kindness of this much-loved local. In 2010 he was awarded the Albert Australia Day Award for his outstanding work with The Goda Foundation; it continues to grow, and with Humphrey at the helm, the foundation is certainly in safe hands. What is next for Humphrey Firkins? When queried, he told me simply,“Write my memoirs.” I for one am looking forward to that! As far as I’m concerned, this magazine feature is but a tiny snapshot of an inspirational and interesting life; and a man who, I’d add, is a true gentleman.

Popular Australian relationships therapist, Isiah McKimmie, shares insight into why improving communication and connections at home works hand-in-hand with work or career aspirations

ife is busy, your job demanding; you work long hours and when you fall into bed at night, all you want to do is sleep. Sound familiar? When the demands of life, career and even kids take over, we often forget to make our relationship a priority. We frequently tell ourselves that it’s just for a little while, it won’t be forever, we’re doing it for the good of the relationship − so we can get that house, have that holiday, build a life together. But working on developing a better intimate relationship with a partner can also help your career; Here’s how (without having an office romance!). Relationships require great communication Most of us are not born with good communication skills. Good communication is something we learn, develop and practice. Good communication is the foundation of any healthy relationship − whether that is an intimate relationship or a professional one. I often have couples who come in and tell me their communication is good as they hardly ever have arguments. Closer inspection usually reveals that although they don’t have arguments, when something is bothering them, they ignore it hoping it will go away. Underlying tensions can cause greater resentment in all our relationships, but we can learn to tell our partner how we’re feeling in a way that doesn’t blame or judge. Partners are often less tolerant of poor communication than our work colleagues as there’s more emotion involved. Even so, May 2013

working on communication in the relationship provides useful skills that will make us better communicators in the office too. Learning to speak-up and share what’s really going on can be daunting − but it can also pave the way for greater intimacy and understanding. Rather than feeling like you need to be strong and emotionless at the office, sharing how you feel (in a constructive way, of course) can actually promote greater understanding. Jack Canfield, in The Success Principals, talks about how having the courage to tell the truth to potential business partners and employers can give them greater respect for you. Good communication is also about listening to others. Intimate relationships offer an ideal opportunity to practice

for what we want − in life, in the bedroom and in the office. Women not asking for a raise or promotion has been shown to be one of the leading causes of men earning more than women and getting promoted more readily. Women, more than men, are taught that good girls don’t ask − we’re taught to just do the right thing, play the martyr and that we’re selfish if we ask for something for ourselves in return. We don’t ask for what we want in the bedroom because women who enjoy sex are given all kinds of names by society and we’re afraid of hurting a man’s feelings (or is it ‘ego’?), if we want something different than what he is doing for us. Many women I see in sex and relationship coaching sessions tell me they don’t enjoy sex. “He’s been doing this thing

intimacy at home, we’re going to be brighter and happier in the office too. These feelgood hormones also allow us to feel greater compassion and understanding for those around us − creating more harmonious relationships in the office as well.

A healthy sex life makes us more confident Numerous studies have proven that a healthy sex life can actually make us more confident. Confidence is key in getting noticed in the office and getting that promotion you want. I once worked with a woman who had a non-existent libido. She and her partner ran a business together. As we worked on improving her sex life and getting her desire back, she noticed she became more of an active participant in the business as well − instead of sitting back in meetings letting her husband make all the decisions, she found herself speaking up, asking questions and putting her opinion forward. This led to some great opportunities for the business. From a health and wellness perspective too, if you’re feeling flat and lethargic, your job or career is going to suffer. Sex improves health, immunity and energy levels. It also lowers blood pressure and stress levels. Creatively speaking, have you noticed some of the greatest artists and musicians of alltime also have/had a lot of sexual energy? In ancient Tantra Yoga, our ‘sex’ chakra is also our ‘creative’ chakra. Think about it − sexual energy creates life, so when sexual energy is flowing, so is our creativity. We understand ourselves better Working on our relationship also requires us working on ourselves − ‘personal development’, if you will. Knowing yourself, understanding personal challenges and seeking constant improvement is a key quality to develop if you want a career to flourish as well. want in the bedroom, we can also learn to ask for what we want in the office − like a promotion or a raise. In relationships we can often fall into the trap of expecting other people to know what our needs and desires are. We expect our partners to be mind-readers and then get hurt and angry when our needs aren’t met. Unfortunately this can also play out in the office. When a work situation doesn’t suit us, instead of talking to the boss about it, we leave or find another position instead of fixing what it happening. In a healthy relationship, we learn to regularly state our needs and requests for

meeting them or fixing a problem.

Happy relationships make us happier Our relationship can be one of the greatest sources of joy in life, but when things aren’t working it can cause stress that we carry into our work life. Ever seen someone walk into work with ‘that glow‘ and you just know they had an amazing evening the night before? Physical intimacy helps our body release ‘feel-good’ hormones and endorphins like oxytocin. We feel more bonded to the person we’re with, but also generally more loving and happy. he four-day event, which celebrates its 25th anniversary this year, is a popular time for the ‘who’s who’ of the boating world, as owners showcase their lavish boats to more than 40,000 people. Among this year’s impressive display includes the Horizon P110 Tri Deck, which is tipped to be one of the largest vessels on show at a staggering 110-foot (33.5m). Horizon Motor Yachts Australia sales manager Sean Madgwick says the sixbedroom boat was the biggest Horizon to be imported to Australasia. “It is the best of the best and built for the Australian market,” he enthuses. The superyacht comes with a $9.9 million tag, which is a discount on its regular asking price of about $10.9 million. Environmental importance and efficiency is also not forgotten, with Team Windcraft set to showcase two eco-friendly luxury motor yachts. Managing director Peter Hrones says the Greenline Hybrid 33 was the first truly hybrid boat to utilise solar, diesel and electric power effectively, as well the Greenline Hybrid 40. “Greenline’s hybrid design drastically reduces running costs and carbon footprint, which is becoming more relevant to today’s boatie.” This year, 39 first-time exhibitors will join some of the biggest names in the boating business such as Westport, Maritimo and Queensland Marine Centre. Want to escape the imminent cooler temperatures? Head up to North Queensland where the weather is still balmy and warm, and an annual celebration is in fullswing! Chris Mcleay uncovers the many delights of Cafe Nineteen anctuary Cove’s dining precinct is home to local favourite, Cafe Nineteen. The aroma of freshly roasted Veneziano coffee beans fills the spacious dining room as customers enjoy the upmarket cafe fare on offer. “The coffee is the best on the Coast,” says proud owner of three years, Lorna Riley. Cafe Nineteen use only the best of our local produce too. This can be seen on delivery of the beautifully presented meals. The breakfast menu is well-balanced and offers a mix of continental options for the lighter start. Mueslis, Devonshire Teas and Fruit Salad with yoghurt are all available. The famous 19 Breakfast of poached eggs smothered with hollandaise, crispy bacon, mushroom and tomato on toasted Turkish Bread will always be a winning combination. Also popular is the Cove Breakfast, which includes a tea or coffee, or the Sumo which appeals to the diner with a bigger appetite. It is huge! If lunch is what you are after, Lorna and her team have you covered. The sandwich menu is available all day and offers a range of specialty breads, including a gluten-free option. Fillings include Chicken Breast with Pesto, Roast Beef and Caramelised Onion or Atlantic Smoked Salmon. The extensive lunch menu has all the favourites one would expect from such a high-calibre cafe. The Wagyu Beef Burger on Turkish Bread or the hearty Gourmet Pie that changes with the season. The Caesar Salad can be jazzed up with chicken tenders, avocado or salmon. The ‘specials board’ greets customers as they enter Cafe Nineteen and adds a weekly range of options to the menu. The glass cabinet presents the rest of the cafe’s

offerings which include the Quiche of the Day and the Homemade Lasagne, both of which are served with a fresh garden salad. The food arrives quickly from the kitchen to the table; add that extra cup of coffee, and you will be glad you made the trip. The coffee machine runs non-stop to keep up with the orders and with the Coffee and Cake special for only $9.50, the orders are set to continue. The large range of homemade desserts are impressive and the premium range of cakes are included in the offer. Lorna is proud of the house specialty Banoffee Pie and says that regular customers

My choice is to sit in, relax and enjoy the bright red couch while I read the day’s news. Committed to coomera y family and I joined the Coomera Anglican College community in 2003. We were welcomed into a vibrant young community the members of which soon became close friends. My long term commitment to the College since then has allowed me to witness its growth and many exciting changes. From my enrolment in the College in 2003 as a shy, reserved young boy I have become an active member of the community and I was fortunate enough to be appointed to the role of College Captain this year. ituated on the corner of Lawson Street in the heart of Southport’s CBD, the fastpaced surroundings demand that food be available quickly and of high quality. Owners Daniel and Myra Campbell say the menu has been designed so meals can be ordered, prepared and eaten within half an hour. The restaurant offers office catering and platters with free Southport CBD delivery for orders over $60, and with plans to cater onsite for corporate functions for up to 50 guests, the menu can accommodate all requests. The daily ‘specials board’ adds flair to the already exciting menu and fits well with the generous portion sizes; my choice of warm Thai Beef Salad is a perfect example. Daniel’s range of homemade preserves and sauces used within his menu are all available for purchase, starting from $6.95. The likes of Daniel’s Garlic Aioli or his Strawberry and Plum Jam are never on the shelves for too long. All items for sale are made and bottled on premises by Daniel and adds

glamour to the deliberate rustic feel of the place. The addition of the covered alfresco dining area allows the restaurant to expand its available seating which bodes well for this family-run business as they now open for breakfast on Saturday mornings. The sign above the coffee machine sums the restaurant up well; it states, “Enter as strangers – Leave as friends.” Daniel Stuart Fine Food is open for breakfast and lunch Monday to Friday and Saturdays for breakfast.

A delicious drop: Stevens Single Vineyard Shiraz his 2010 vintage has been awarded two bronze medals, and boasts a Halliday rating of 90 points and ‘Highly Recommended’ (2013 edition). The drop is modern, elegant and balanced with an approachable 13% alcohol; medium to full-bodied with a lively, intense purple colour. Black cherry, raspberry and fresh, spicy flavours dominate the palate with a vibrant, fresh acidity that makes the wine a wonderful example of the contemporary style of Hunter Valley shiraz. Sourced from the Stevens’ family ‘Old Hillside’ vineyard in the Hunter Valley; the shiraz vines were first planted in 1867 and are some of the oldest and rarest vines still in production in the world. The vineyard is based on heavy clay over limestone soil, and the single vineyard philosophy is based on producing wine from these unique vineyards only when nature contrives to produce fruit of such outstanding quality, that the winemakers set aside parcels of fruit to be bottled separately. Tyrrell’s single vineyard wines are released with age, generally around 2-3 years. It is this age component, the small quantities and unique characteristics of the vineyard that set the wines apart.The fruit for this wine is hand-picked and fermented in traditional open vats before spending 15 months in French oak. with Sweet Persimmon & Somtan Dressing (SERVES4)

South East Asian cookery is all about balancing and pushing the sweet, salty and sour notes in a dish. In this recipe the persimmons add the perfect amount of sweetness to this Thai-based salad, full of lively colours, textures and flavours. INGREDIENTS • • • • • • • • • • • • • •

2 chicken breasts, poached 4 sweet persimmons, peeled, and cut into 7mm batons ½ - 1 continental cucumber, peeled, quartered lengthways and sliced 3mm on a diagonal 4 Chinese cabbage leaves, shredded 2 red eschallots, thinly sliced, or 8-10 spring onions, chopped 1/2 cup mint leaves, torn 1 long red chilli, finely sliced (optional) 2 Tbs fish sauce 5 Tbs freshly squeezed lime juice 5 tsp caster sugar 2 cloves garlic, crushed 2 Tbs roasted ground rice* (optional – available from Asian grocer) 3 Tbs deep fried shallots (optional – available from Asian grocer) 4 Tbs chopped, salted, roasted peanuts (optional)

To poach chicken: Cover the chicken with water in a small pot. Bring to boil and then reduce to a low simmer to cook for 45 minutes, covered. Cool completely in poaching liquid then transfer to a plate to shred finely with 2 forks (the remaining poaching liquid can be frozen to use as stock). To make dressing: Combine fish sauce, lime juice, sugar and garlic in a small recycled glass jar and shake vigorously until sugar is dissolved. To assemble: Combine persimmons, cucumber, cabbage, spring onions, mint, coriander and chilli (if using), chicken and dressing in a medium to large bowl and toss very gently with hands or chopsticks so as not to bruise ingredients. Divide into 4 portions and garnish with roasted rice, fried shallots and peanuts and serve immediately.

with Avocado, Pickled Ginger & Korean Seaweed Serves 4 (as a vegetarian appetiser)

The nuances of flavour in a persimmon are very subtle, so I always tend to steer clear of applying heat but rather, take advantage of its uncomplicated sweetness and lovely, crunchy texture. This recipe takes its flavour profile from Japanese sushi. If you want to fancy up the dish feel free to add flakes of crabmeat and tobiko (flying fish roe), but here I’ve opted simply for a vegetarian version which makes for a beautifully refreshing canapé. INGREDIENTS • 2 sweet persimmons, calyx removed, peeled and sliced into wedges • 1 small/medium avocado, mashed (and passed through a sieve for perfect smoothness) • 1/2 cup of Japanese mayonnaise (available in supermarket Asian section) • 1/2 - 1 tsp wasabi paste • 2 tsp lemon or lime juice • Salt to taste • Japanese pickled ginger (available in supermarket Asian section) • 1 Tbs toasted sesame seeds, white or black (optional) • 2 large sheets or 1 small packet Korean fried seaweed* (available in Asian grocer)

METHOD Mix avocado, Japanese mayonnaise, wasabi, lemon or lime juice, salt and pepper until combined. Transfer to a piping bag (if you want a tidier result but spooning is fine). Arrange persimmon wedges neatly onto serving platter. Pipe or spoon a nice dollop of the avocado mixture on each wedge, top with small rosettes of ginger, a light sprinkle of sesame seeds (if using), and then finish with torn shards of the fried seaweed. Serve immediately.

Next to eating it in its most natural state, like a fresh apple, this is the next best way to have a persimmon. Of course, it is an idea stolen from the tried and tested combination of melon and prosciutto, but it just works so well. The saltiness of the prosciutto is delicious with the sweetness of the persimmon. With a crack of pepper for spice and a squeeze of lime over the top for a hint of acidity, it doesn’t get any easier for a lazy cook! I would always recommend an Italian or Spanish prosciutto because they are far less salty, leaving the meat soft and sweet. INGREDIENTS • 4 sweet persimmons, each with calyx removed, peeled and sliced into 8 wedges • 24 thin - medium slices of Italian or Spanish prosciutto • Juice of 1 lime • Cracked pepper METHOD Wrap each wedge of persimmon with a slice of prosciutto. Place in the oven for 15- 20 minutes or until they are cooked to your liking. Remove and allow to rest in a warm place for 5 minutes. Serve with green beans and roast potatoes.

HEALTH oday, it seems like every restaurant, food manufacturer and grocery store are making organic food claims and pushing the public to ‘go organic’, and Australia is buying it. Farm gate sales are up 34 per cent in the last two years and the organic food industry has a predicted growth of 15 per cent each year. Organic food has become mainstream, however, is the food revolution just another marketing ploy by the big two supermarket groups? And is organic food necessary to become healthier? Just as organic food sales have risen in the past couple of years, so has obesity, thus linking the two is inevitable. Think about it, just because something is organic does not mean it is healthy. Yes there are less hormones, additives and other chemicals, but you can still make or buy a carbolicious piece of organic bread, an organic cookie or even a creamy, fat-laden pasta carbonara. Conversely, if you are a parent with slim, healthy children wanting your kids to live a life free from additives, hormones and other added nasties − living organically can be the way to go and has been found to lift one’s mood and help with learning difficulties. Organic eating is not just for the health-conscious either. Gold Coast dietician, Amanda Clark, says eating organic not only provides you with food that has no added synthetic chemicals or pesticides, but it is also good for your carbon footprint. “Organic farmers [also] use farming practices that protect the environment,” she says. Amanda also suggests you might want to try eating organic food if you are finding food a bit bland.“Many people would [also] say organic food tastes better.” There is one major misconception about organic eating, that it will induce weight loss... wrong! Although it is better for the environment and it is found by some to be

yummier, it is not necessarily the way to go if you want to lose weight. Local dietitian, Cherie Hugo, from My Nutrition Clinic says organic food would not make you lose weight, although it may provide some weight-loss benefits in the long run. “Eating organic is not an effective weight loss plan, but commitment to organic eating may lead to general health benefits,” she explains. “…If they are going to make the effort to eat organic food (vegetables, lean meats and fruits), they may also be more likely to take time in considering food portions, variety and optimal activity levels which in turn helps to obtain and maintain a healthy weight.” When it comes to meat, switching to organic can be beneficial. Organic meats are not allowed to be fed antibiotics, hormones or artificial drugs and the animals don’t eat genetically modified food, so everything you’re eating is wholesome and natural. Amanda explains organic meat definitely has its health benefits and it’s produced in a humane way. “Organic meat has been found to contain lower levels of antibiotic resistant bacteria… they are generally leaner and have a higher level of omega 3 fatty acids... They [organic meat] are guaranteed to be raised in a way that places emphasis on animal welfare, they eat grass that has not

been treated with chemicals.” On the Gold Coast we are lucky to be surrounded by numerous fresh food markets, free council exercising facilities, and an outdoor/sporty lifestyle. It almost seems like we have as many gyms as fast-food restaurants, so healthy eating is bound to be on our minds. Yet, we are also a State of unemployment, so food prices can be an issue, especially when they are ever increasing. Based on value, taste and freshness, local markets are your best bet. Besides the price and health benefits of no pesticides and chemicals, purchasing food from The Organic Gold Coast Farmers Market, Mrs Flannery’s, Wray Organic or your local markets (such as Carrara, Nerang and Broadbeach) will also lessen the chance you will buy other junk food! However, if you are strapped for time and cash, and don’t want to waste petrol and time driving to different grocery stores for particular items, perhaps visit one area that has it all (or the majority of what you require). For example, right next to Carrara Markets (where you can get your fruit and veg) there is an Aldi, a Woolworths, a place to get your seafood and as well as a butcher.You’ll get some exercise too! Alternatively, you could even grow your own little fruit and vegetable patch at home. Yes, it may take longer to grow but you can then guarantee your food is pesticide, hormone and chemical-free, and you’ll reap long-term benefits. The average Gold Coast family might not be able to afford to eat ‘organic’ all the time (some of the prices are indeed very steep), but to get the most bang for your buck and time, shop inseason and locally. Blues on Broadbeach Music Festival is back again this month, and one of the all-star lineup we have to look forward to is the divine Prinnie Stevens who answers a few questions exclusively for Get it...

What can we look forward to regarding your set to be played at Blues on Broadbeach? This gig is with my best friend Mahalia, we both have a different sound, she has a soul/ rock feel and I have a Pop/RnB feel. But after appearing on The Voice together and recording an album together last year, we like to do songs that have influenced us as young singers. We have both been influenced by singers like Aretha Franklin, The Supremes, Tina Turner and much more! At Blues on Broadbeach you can expect some tear jerkers and also some fun up tempo numbers that will be sure to have everyone up and dancing! Tell us a little about The Voice journey? The Voice absolutely changed my life, it has taken my career to the next level. I hoped and prayed that it would and I can’t tell you how grateful I am for such an amazing opportunity. The show was filled with great people, from the producers to mentors to my fellow artists. I am very proud of being in season one of The Voice. The highlight for me was being able to sing and dance on national television and have Australia get a glimpse of who I am, as an artist. Have you always known you would be a performer? I have always been a performer. I did my first professional gig at the age of nine and have not looked back since. It has been a hard road, filled with rejection and much more. But it makes you a stronger person and an artist with depth and experience. I definitely took the long road here, but I wouldn’t change it for anything. Who is the coolest, most inspirational celebrity you’ve worked with? That would have to be Joel Madden of course! I have to say, he is one of the few people that have really understood me as an artist, and that was almost instantaneous. He stood up for and fought for me when other people doubted me. I will never forget that, I owe him so much for all the things I am achieving now and I want to make him proud that he made that decision from day one. Loving that you’ve released your own collection of nail lacquers! What other goals do you have in mind for the future? I am all about fashion and music. I am in talks about releasing a jewellery line and I’m looking to do another collection with Hello Darling. Music and fashion go hand-in-hand for me, I May 2013
