There’s something happy in the air lately. Even the pungent garbage truck in front of me at the traffic lights this morning couldn’t ruin my mood. I’m putting it down to a smell − not the garbage truck − but the weather. Whatever sweetness I’m detecting, it’s linked to positive memories; parties and fun. Interesting scents can have that effect, isn’t it? I think you’ll agree too, music never fails to elicit a response in this way. I’ve even adopted a theme song for us this month, ladies − Katy Perry’s Roar. My neighbours must be so sick of that track by now (and probably even more tired of having to put up with me belting it out ... very un-Katy like). I love it though, and our gorg designer, Aimi, agrees. We feel the song reminds us to put issues and negativity to the side and rather, reflect on challenges overcome (while singing along at the top of our voices). Aimi adds she’s guilty of turning up the volume on Rihanna’s Diamonds too, which makes her feel great, although warns we probably don’t want to be driving in the car with her when she’s singing with Riri. Missy’s into Miley Cyrus’ Someone Else, from her new album Bangerz, because of its 80s electro-feel and the fact the song, “Makes me feel like I’m on stage”. Love it! Leanne hasn’t as yet divulged her theme song, although she did recently reveal something surprising (which yes, did impress me) − she likes a little bit of doof doof dance music every now and then. Who knows where we’ll end up for our Christmas party! “Sing like no-one’s listening,” as they say; don’t mind if we do. We’re all about good moods this month, so with that in mind, I’d love to know, what’s your theme song of the moment? That song that makes you happy and gets you through ‘stuff’? Australia’s prolific storyteller, Judy Nunn, is back with what can only be described as a bestseller-inwaiting. Set against the gorgeous backdrop of regional Queensland, Elianne (out this month) explores the institution of Queensland’s sugar-cane farming industry, the social revolution of 1960s Australia, and the power of family secrets. J’aimee Brooker meets with Judy for Get it Your latest novel, Elianne, is set against the backdrop of the southern Queensland cane fields initially in the 1880s then moving forward into the 1960s; can you share with us why this particular time and place sparked interest and inspiration for your novel? The time frames of 1880s and 1960s were not my inspiration for the novel, but the place certainly was. Elianne is the first of my books to be based in Queensland. I’ve wanted to set a book here for some time and Queenslanders have certainly been urging me to. Then upon visiting the area of Bundaberg, it happened − the southern cane fields simply cried out to me, and having decided upon the location, I sat down and worked out what period would best serve the story I wanted to tell. The topic of family secrets and the dynamic by which these are brought to light is something that most readers enjoy and can relate to. Elianne delves quite powerfully into this topic − what is the appeal of writing about families and their proverbial skeletons for you? There is always drama and conflict in families, particularly when they are drawn together from afar at Christmas time as the members of my Durham family are in Elianne (the festive season has a great deal to answer for in my opinion). And, as you said, the revelation of family secrets is something we can all relate to. As the novel unfolds, we witness the social revolution of the 1960s − of all the freeing opportunities that this time availed, which do you think was the November 2013
most important to the direction of Australia? Harold Holt’s disbanding of the White Australia policy. Whitlam took credit for its demise, but Holt was really the prime mover. Can you share one particular fact that has stuck with you following your research for Elianne? The Pacific Island Labourers Act, part of the White Australia policy, which was the first legislation to be passed by the new Commonwealth Parliament in 1901. The Act was designed to put an end to the system of ‘Kanaka labour’ as the practice was known, which in itself was a good thing, but the act also called for the mandatory return of most South Pacific Island workers to their countries of origin. By this time, many had been in Queensland for decades. They’d settled in this country, they’d raised their children here. Their banishment meant homes were destroyed and families torn apart, it was cruel and heartless. What makes up quintessential Queensland for you? The vast spaces, the heat, the people, the lifestyle. There’s something uniquely Queensland about all of those things. What book has changed your stance on something important to you, and why? 12
I can’t possibly nominate one book that has changed me or my stance on things. Every book that makes an impact upon me will in some way change me. The novel I’m currently reading, The Son by Philipp Meyer, is doing just that. Biggest accomplishment to date: Every new book I finish. They don’t get any easier, if anything they’re harder as I keep setting the bar higher for myself. Each time I think ‘I can’t do this again’, so to see a new book completed and in print gives me a huge sense of accomplishment. What’s next for you? Surprise, surprise. A new book.

THEBIG REVEAL Designs for a new Gold Coast Cultural Precinct Friday 22 November â&#x20AC;&#x201C; Sunday 15 December Gallery 2, Gold Coast City Gallery he dream of a new Gold Coast Cultural Precinct now takes tangible shape with the highly anticipated reveal of the winning design from the international competition launched in March. From a field of 75 entries, drawn from across the globe, an expert jury has shortlisted three design teams, Arm Architecture, Crab_Vogt_DBI and Nikken Sekkei to produce detailed concepts for a new Gold Coast Cultural Precinct. One of these will be announced as the winner of the competition on 21 November. All three visions will be unveiled in this exhibition through the use of models,
drawings and animations. The exhibition will trace the evolution of the design brief and the history of this magnificent site. It will show how these three design teams made up of architects, landscape architects, engineers, curators and planners have imagined the future of this landmark development for the Gold Coast. Sarah Blinco meets lovely local, Christie Sharpe, who through her new app, Fancied, is aiming to shake-up the cyber-dating experience What made you want to crack into the competitive app dating game? A few years ago I started learning about personal development and relationships. I love connecting people so when the opportunity came up to get into the dating space, it felt like a natural fit for me. The Fancied app was actually a pivot from a web based platform called Fancy My Friend that I created with previous business partners who eventually went on to do their own projects. I’ve been involved in online/tech startups for about three years now. My background is in business management and marketing, however my technical team, Sakura Sky run by Andrew Stevens and Olivia Storelli in Sydney, are highly experienced and talented software engineers who have worked for some of Australia’s largest online and media companies. Can you explain Fancied for us? Fancied is a location-based dating app that identifies social hot spots such as bars or venues that are most popular with Fancied app users. You can search for singles nearby or check into one of our popular hot spots. It’s anonymous to ‘fancy’ someone on Fancied so you’ll know if there is a mutual interest before someone has to make the first move. Fancied’s target market is 18−35 year old singles. Most dating apps allow singles to flirt and interact within the app however, what differentiates Fancied from its competitors is the ability to show singles the most popular places to meet other singles and where they can date their matches. You’re a local entrepreneur; what do you enjoy most about being an ‘ideas person’? What I think is so great about being an ideas person is that you have the ability to be creative and innovative. Sometimes I have too many ideas and want to do it all − ‘the entrepreneurs curse’, however, I think one of the most important things about having ideas is not to hold onto them too tightly. I’m definitely one to talk about my business idea from the get go to as many people as possible. It’s the only way you learn if your idea is a good one and if people would want your product or service. Do you think people are born to be entrepreneurs, or people learn to be entrepreneurs? I have grown up in a family of entrepreneurs, both my mother and father November 2013
FANCY THAT have grown successful companies. I started off my career in retail management positions before I had the urge to start my own business. I think to some degree you can inherit your parents’ traits but I also believe you can learn how to be an entrepreneur by surrounding yourself with the right mentors and learning from them. I’m only at the beginning of my journey but from what I have learnt, persistence is the key to success and it takes a kind of person to not give up on their dreams and keep trying until they succeed. How do you see the future of online/app dating evolving over the coming few years? Right now we’re seeing a lot of growth in mobile dating and it’s currently taking over online dating. Approximately 65 per 14
cent of traffic for online dating sites comes from their mobile users and we’re seeing this because of the increase in adoption rates of smart phones. With new technologies and network capabilities improving we’re only going to see more and more people using location and vicinity based dating services to meet new people. Some people still perceive there is a stigma around meeting people online; what’s your response? I believe that the stigma is definitely on its way out. Facebook and mobile apps have made meeting people through technology more accepted. You can now meet up with a person who you have met through an app while you’re out with your friends as it feels a lot more contextually right
and safer, plus if you don’t like the person at least you have your friends to fall back on. That’s what is so great about Fancied, it encourages you get out from behind your computer screen and stop waiting for Mr or Mrs Right to come along and go out and meet them. What are your hopes for the future of Fancied? I’m most looking forward to hearing about successful matches. I love that we have been able to build a dating brand from the ground up to create a product that is fun, friendly and relates to a more positive experience. Our goal is to be with the customer through every aspect of dating. In the beginning we help them meet and connect, when they’re a couple we want to show them where to go for their anniversaries and dates. What’s your advice for those with aspirations to develop their own app and/or online business? Firstly flesh out your idea on friends and family, if they get excited by it and can see you doing it then you could be on the right track. Be sure to do you market research and put together a plan and decide if you need to bring other partners to help you, just make sure everyone has different skill sets. t is a big year for the Gold Coast Turf Club with a $35.4 million redevelopment, a new name and the launch of the exclusive Crystal Lounge all set to be revealed in November. The crowds are set to be impressed by the newly transformed turf club, which has also gained 10 new corporate suites as part of the multi-million dollar development. Gold Coast Turf Club CEO, Grant Sheather, says the Club can now cater for a wider variety of functions and events. “For us, the redevelopment brings the Gold Coast Turf Club up to par with other top clubs around Australia”. The Club has received a number of improvements such as an extension to the existing Skyline restaurant, a new Crystal Lounge located on Level 2, as well as 10 state of the art corporate suites. The Bundall Racecourse will also be upgraded with an all weather training track and an equine swimming pool. Grant adds, “We want to show the public we are a major attraction and event venue on the Gold Coast, not just a racing club on a Saturday afternoon. In previous years, people could November 2013

Jumpinpin Another favourite spot of mine to spend time out on the boat. It’s a beautiful place and the view is amazing! Jumpinpin (between North and South Stradbroke Island) is ideal for fishing, and the sand dunes are heaps of fun.

Gold Coaster, Rebecca Jaeger, shares how she realised that despite a life-threatening back injury, she had control over deciding whether she would let a bad situation or a mind-over-matter attitude determine her destiny
ne of my favourite quotes is by Steve Maraboli: “The reason many people in our society are miserable, sick, and highly stressed is because of an unhealthy attachment to things they have no control over.” ‘Control’ is not about the spy agency and bumbling Agent 86, Maxwell Smart, from television’s Get Smart, nor is it about the amount of time your husband or partner has control over the remote. It is not about controlling the Monopoly board, or life for that matter. It is about the behaviour that is used every day by everyone; well except for me, not now anyway. It took the aftermath of a life-changing injury to help me understand we have the choice what to take on and what to put up with. It was 1998 when I bought The Celestine Prophecy by James Redfield, and while it has been subject to criticism − whether fair or not − I found it insightful and useful in understanding ‘me’. An old school friend sent me another influential book, Chicken Soup for the Soul, which she hoped would help me heal emotionally and to realise the gift of life. Seventeen years later and these books have been well used. Dog-eared, stained with coffee and yellow-highlighted stories of importance stand as a reminder to me as to why we are here. The personal library I hold dear today is about as unexpected to my younger self as the damage was that I sustained in Japan in 1996 as a fitness teacher. I injured my back so badly I couldn’t walk for days.

I was consumed by burning and tingling sensations and felt paralysed from the hips down. Life became exhausting through simple exercises like going to the toilet and shower, and I had to be cared for. It was terrible and embarrassing. I had been a NSW State softball player for three years and had even won three Australian National titles, but had never succumbed to any kind of horrendous injury like this. I felt so vulnerable and scared. Fear of the unknown was the worst part. The late 90s − 1997 and 1998 − took me to a place where I had never been before. My loss of ‘Human Spirit’ lead me to attempt suicide. Gone were the days of my independence and freedom. My dreams and goals were shattered. I was supposed to be living and working in the USA; I was gutted that I did not get there after Japan. I felt anxious, trapped and very out of control. The following five years felt to me like I was living in a chamber room, in a dark castle where I could not breathe in light, or sound, or laughter. I felt like I was suffocating. My spirit was not willing to bear all that belonged to me, and the blue skies and sunshine never suited my soul which was being bombed constantly by doubt, fright and the 10-hour a day contemplation, “Am I in hell?” My desire to work in hospitality was destroyed by the pain, and my self-esteem was choked by financial burdens, all factors that fuelled my dissipating spirit. Eventually I ran out of hope, faith, courage, trust and love. I simply did not want to live.

‘That day’ − the last minute, last thought, was and still is embedded in my mind. Thankfully I had an outer-body experience which saved me from pursuing what I believed was the inevitable. I rang the only person, my only lifeline who knew me well enough to save my lost human spirit. His name is Dr Owen Roberts. The day which could have been so horrible turned out to be the most amazing day of my life. Owen had been our family doctor since I was 11. That day he gave me something more than medicine could ever do. He listened and held me in his arms while I cried. From that day I have healed slowly without the quick fix of an anti-depressant. I realised I had to slowly unravel myself from the web of doubt and start embracing ‘me’. With the help of a financial counsellor, family and friends, and knowing that Owen was there at any time, I really could see the light and realised how stupid I had been to not to ask for help earlier. I had suffered by my own negligence. Fast-forward to 2013 and I have rediscovered my spirit, had a back operation, completed a Diploma in Life Coaching and a Degree in Sports and Performance. I have started my own business, jaegerbomb iNC, and have written ‘Mental Toughness’ programs for teenagers, adults, athletes and

even racing-car drivers. The programs promote coping mechanisms which are not taught in schools. My purpose is to challenge those who want to live a better life and to create one without influence of toxic behaviour and unreasonably high expectations which leave no room for disappointment. Today, I believe the word depression is used loosely to allow society to label themselves when they are not coping. It’s disappointing that some professionals prefer to hand out pills instead of − when possible − helping people to reconnect. I know first-hand what feeling disconnected is like − when what you need back is your spirit − and pills do not help recover this element. Don’t let the negatives in life control you. If life is crap, fix it, fight it, do not give in, give up or quit! Do not try to control what you cannot, simple. Find another path and stop expecting something to happen. If there’s one thing I realised, it’s that you have to make things happen. Use control to determine your own destiny.

Regardless of the type of apnoea the individual involved is hardly aware of the problem, and may even become conditioned to the resulting day time tiredness. Sleep apnoea causes significant levels of sleep disturbance and deprivation. Sleep apnoea is often observed by the partner and diagnosed with a sleep study and can range from mild to severe. Sleeping on your back increase the possibility of obstructive apnoea as does obesity and in males a neck circumference greater than 17 inches and in females 16 inches, this is due to the deposition of fat in the throat and tongue area. Central apnoea breathing is interrupted by a lack of respiratory effort. Obstructive apnoea breathing is interrupted by a physical block to airflow despite respiratory effort and snoring is common. Complex apnoea is a combination of both.

Did you know, in approximately 80 per cent of cases, one of the parties has an ulterior motive for staying friends, with an emotional attachment of some degree to the leaving person? Are you in this situation right now? Take a minute and be really honest with yourself. Think about each scenario below by placing yourself in the position of the person who is being left (referred to as YOU) and your partner leaving (referred to as LEAVING PERSON): l YOU are unable to let go of the leaving person, you are in love; if they give you a chance it will get better. The LEAVING PERSON sprung on you that they no longer wish to be in this relationship. What do you do? l YOU feel your insecurities and emotions arise. You did not see or want to see a breakup coming. This person is the love of your life. What do you do? l YOU have children involved, this breakup is not just affecting you, it is affecting your whole family. Would YOU use your children as leverage to reinstate a friendship? l YOU make promises that whatever happened will never happen again, but the LEAVING PERSON cannot forgive the event and needs to leave. What do you do? l YOU are in an abusive relationship, YOU want to leave but the LEAVING PERSON who controls the relationship will not allow YOU to leave. Do you attempt a fake friendship to escape? l The LEAVING PERSON had an affair, stepped outside your relationship, broke your heart and trust. YOU feel guilty and not good enough, do you try harder suggesting being friends and starting again? l YOU cannot believe the internal emotional turmoil you are feeling right now, you never considered the relationship would ever end, you can’t see yourself with anyone else, your friends and families all love each other and yet the LEAVING PERSON is no longer wanting to be in this relationship. What would you do? If you are truly honest with yourself, in any of the scenarios above, whether you are male, female, same sex relationship, short or long relationships, YOU may want to hold 30
onto the LEAVING PERSON, for a number of different reasons − initially though, none to be their friend. Who wants to be ‘just friends’ with someone you’re in love with or still attached to? Initially, with emotions raw and new, are you thinking of the bigger picture? Could you really handle being in the same room with an ex and new partner, watching them enjoy life when it used to be you? Or, imagine you’re at your ex’s family’s home in an attempt to be friends and they arrive with the new partner, or they arrive and ignore you because when they said ‘end’ they meant it? Through both training and experience it’s important to note that a couple needs to give each other space and time to grieve the death of the relationship. There is no rule on how long, this depends on the individual situation and the depth of the emotional
attachment. If space is given, then there is hope for friendship or at least amicable communication (especially important when children are involved). The other 20 per cent of breakups find friendship easier, and it doesn’t take a rocket scientist to work out this is because of the reduced emotional attachment or control of the other person. You’ll realise lack of emotional attachment when you can truly look at someone and don’t feel anything − you don’t hate them or wish them ill; you don’t love them and wish they would return − you just accept them for who they are. Whatever stage you’re in right now, you need to find a way to analyse the situation clearly and objectively, so the ultimate outcome is the right one for YOU.

My husband and I were together for a good number of years and have two beautiful children together. After a while though, we realised our marriage wasn’t working. We tried counselling but inevitably came to an amicable solution − we would remain under one roof to take care of our children, but would enjoy separate lives. Back to nature in the loveliest of environments ... Sarah Blinco explores Kingfisher Bay Resort and Fraser Island I hate that noise,” cried the 7-year-old in front of me, as another tree branch scraped past the vehicle’s long glass window; a sound akin to that of nails along a blackboard. The five Poms perched on the back seat were launched into the air again while the rest of us fastened our seatbelts and gripped whatever we could for balance.The ride through soft sand − surrounded by lush rainforest on either side − was surprisingly wild and bouncy, and we all giggled gleefully as we hit another curve in the road with speed. Our guide, Peter, explained that in order to get through the sand, at various points, he had to take the track with some pace, but on a guarantee he is a very good driver (which indeed proved to be true) we put our faith in his expertise, sat back and indulged in the Fraser Explorer experience. Fraser Island and Kingfisher Bay Resort are synonymous with whale watching in Spring, 4WD adventures, fishing, wildlife, intriguing plants and naturally beautiful landscapes. As we travelled across Fraser as part of the Beauty Spots (day) Tour, I was fascinated to learn about this amazing World Heritage listed space − the largest sand island in the world, and the only one where rainforest sprouts from sand at elevations of 200 metres or more. Peter our guide − also known as Peter Meyer, world-renowned photographer − openly offered his wealth of knowledge gathered onlocation over 19 years. He told us stories of the savage 2011 bushfires that tore through here, outlining ramifications on the local plants and animals. Peter taught us all about the island as he ferried us through the rainforest and out onto the vast sandy stretch, Seventy-Five Mile Beach, where we joined a convoy of 4-wheel-drives descending upon popular destinations like Eli Creek, the famous Maheno shipwreck that’s been beached here since 1935, serene Lake McKenzie and to the colourful sandy Pinnacles. We even spotted a whale playing off the coast during our adventure. Along the way we discussed dingoes ... and fate. Peter recalled how late one afternoon a tour he was leading came to an abrupt halt thanks to a flat tyre. As he went about fixing it, their party noticed four dingoes sauntering along the beach; three dingoes were stalking one little guy who obviously had ventured where he shouldn’t have been. Being an opportunist (as apparently is characteristic of dingoes), this one unfortunate soul ducked under the bus, taking shelter from the other three. This was a unique sight in itself, and those taking part in the tour soon forgot they had been delayed getting home. Eventually it came time to move on though, and naturally the vehicle revving to life gave the dingo a fright − so startled was he that he bolted across November 2013

Adventure the sand to the shipwrecked Maheno and attempted to dive through one of the portholes. Only problem was, he got stuck! A wave came crashing through the bones of the old ship at that point and promptly pushed him back out, and he ran off, his ego bruised more than anything else.“A once-in-a-lifetime occurrence − that sequence of events will never happen again, and we saw it all because we had a flat,” beamed Peter. After a day of picturesque scenery, exploration, a swim and entertaining stories, we kicked back ‘at home’ in our spacious, comfortable Kingfisher Bay Resort digs. While the view from our verandah was sublime, we’d been urged to get to the beach by sunset to catch the dramatic mango-coloured beams of light reflect across the ocean and disappear into the night. We secured a little possie at the beachside Jetty Hut, ordered a glass of bubbles and a beer, and merrily soaked-up the spectacle; 32
sail boats bobbed in the distance, foreign accents gossiped among us, and the segway tour group made its way back along the beach towards us as night fell. Kingfisher Bay Resort on Fraser Island is the ideal escape for those who want to get back to nature in the nicest, most comfortable way possible. The place certainly lives up to the name given to it by its Aboriginal owners who called Fraser Island K’gari, which means ‘paradise’. Cathy Baker, owner/manager of Harvey World Travel Hope Island, lives the intrepid traveller’s dream − Sarah Blinco checks-in with this friendly local to discover more about her world How did you end up on the Gold Coast? I come from an airline family, dad with Qantas, and mum a hostie in the 60s with a WA-based airline, MMA. I was born in Darwin, then we moved with dad’s many postings both in Australia and overseas. I left home when we were based in Perth but on a visit to Brisbane I was lured to the sun and sand of the Gold Coast at 21. What did you want to be when you were growing up? Growing up all over the world and with travel in my blood, of course I wanted to be an air hostess, just like mum! When did you settle on ‘travel agent’ as your ideal career? I travelled a lot in my twenties, backpacking around the world, enjoying a couple of ski seasons and I realised that I preferred being a passenger rather than a worker. After coming home to settle down, being a travel consultant just made sense. How has your job changed over the past ten years; how have you adapted to people ‘being their own travel agents’? I started my career in 1994 and back then everyone used travel agents so we were always very busy, working long hours. These days we have more time to plan and create the trip of a lifetime for people who want the benefit of our knowledge and expertise. What are your top reasons for utilising professionals to arrange travel plans? My staff and I are all very well travelled. You just can’t beat that type of first-hand November 2013
knowledge. It’s always nice to have someone to call on for help when you are away and as I always say, I could mow my own lawn but I pay someone to do it because I don’t have time and they do a better job. Tell us a story of one of your happiest customers? There’s nothing better than when our clients come home and make a point of bringing their photos in and excitedly tell us all about their adventures. It’s not uncommon for us to receive flowers, souvenirs and cards as thanks for a job well done. And your favourite destinations...? I have just returned from five weeks in Europe and it was my second time to Turkey in two years. It’s such an amazing and diverse country with friendly people, fantastic shopping, awe-inspiring ancient sites and seaside towns you never want to leave. Mykonos was also gorgeous. What’s next on the agenda? I never know where I might be going next, opportunities just pop up and I rarely say no! The only one I have planned is to return to Vietnam again, back to my favourite town of Hoi An for some tailoring and to stay at the Fusion Mai for some spa treatments, and then to visit Nha Trang for the first time, I hear the beaches and seafood are to die for. What advice would you give to aspiring young travel agents? We often have young people coming in wanting to become a travel agent. My advice is travel as much as you can first. Half the battle 34
is knowing the destinations you are talking about. People always prefer to deal with an agent who ‘has been there’. What are your picks for ‘destinations of 2014’? Hot spots for 2014 include those off the beaten track. There’s still the old faves of Thailand, LA and London, but regular travelers are now looking at paddle steaming down the Mississippi, exploring the Fjords of Scandinavia and gastronomic touring through Europe. What does ‘travel’ mean to you? Travelling opens your mind and helps us be more accepting of other cultures. When you see where people come from and how they live, you can understand their point of view of lot easier. It also makes us appreciate home, Australia, is definitely the lucky country.

Following a two year absence after the Christchurch earthquake, Marmite is back on Aussie shelves! We reckon it’s a good reason to celebrate... Crunchy Marmite Croutons (MAKES 24)
INGREDIENTS • 4 1⁄2 cm slices of Ciabatta or French Baguette • 2 tbs Sanitarium Marmite • 1⁄4 cup grated Edam cheese METHOD Preheat oven to 160°C. Lay bread slices on a baking tray. Spread each piece with Marmite covering all of the bread. Sprinkle over grated cheese. Bake in oven for approximately 15-20 minutes until cheese has melted and bread has turned golden. Remove from oven and allow to cool. Cut into pieces and store in airtight containers.
Lentil, Bean, Apple & Walnut Salad
with Marmite Vinaigrette (SERVES 6)
INGREDIENTS • 1 cup (250 g) red or brown rice • 1 x 400 g can lentils, drained • 1 x 400 g can red kidney beans 4 carrots, peeled and grated • 100 g walnuts or almonds, toasted • 4 Granny Smith apples, cored and sliced • handful of fresh mint leaves • 2 handfuls rocket leaves Vinaigrette: • 1⁄4 cup olive oil • 3 tbs cider vinegar • 1 tsp Sanitarium Marmite • 1⁄2 lemon, juice METHOD Wash the red rice in a sieve under cold running water. Cook rice in a medium saucepan with 6 cups water for 25 to 30 minutes, then drain. Meanwhile, prepare vegetables and toast walnuts. Arrange the lentils, red rice, red beans, grated carrot, walnuts, rocket leaves on a large platter. Make the vinaigrette: In a glass jar mix all the vinaigrette ingredients together, give it a good shake. Drizzle the November 2013vinaigrette over the salad and garnish with mint leaves.

INGREDIENTS • • • • • • • •
1 tbs Sanitarium Marmite 2 tbs oil 1 onion, peeled, finely diced 1 cup (250 grams) Arborio rice 250 g button mushrooms, cleaned, quartered 250 g courgettes, trimmed, cut into pieces 1 cup baby spinach leaves 1 tsp margarine 50g Parmesan cheese, grated
METHOD Place spoonful of Marmite in a 1 litre jug or bowl. Fill with boiling water, and stir to dissolve. Heat a deep heavy based frying pan with oil. Fry onion for 1 minute, until softened. Add rice and cook for 2-3 minutes until warmed through. Add mushrooms. Add boiling water mixed with Marmite, 1 cup at a time, until water is absorbed. Add more hot water to marmite mix if more liquid is needed. Simmer approximately 15 minutes, until rice is tender but still has ‘bite’. Season to taste.

Remove from heat and stir in sliced courgettes, baby spinach leaves, margarine and cheese. Stir gently to combine. Serve in warmed bowls.
2 cups (250 g) wholemeal flour 3 cups (150 g) bran flakes 1⁄2 cup brown sugar 2 tsp baking powder 1 tsp mixed spice 2 tsp baking soda 2 cups (500ml) soy milk or dairy milk 1 tbs Sanitarium Marmite 50g margarine 3 eggs, lightly beaten 2 carrots peeled, grated 1⁄2 cup raisins (optional)
Method Preheat oven to 200°C. Grease 2 x 12 muffin tins with oil spray. Mix flour, bran, baking powder and mixed spice in a large bowl. Dissolve baking soda in milk in a separate bowl. Melt Marmite and margarine together in a small saucepan or microwave. Make a well in the centre of the dry ingredients. Add eggs, milk mixture, melted ingredients, carrot and raisins to dry ingredients. Mix quickly until just combined. Bake for 15-20 minutes or until muffins spring back when lightly touched.

Tell us a little about your passion behind the Medibank Wave Warriors Junior Challenge (MWWJC)? I have been fortunate to enjoy a long and successful career as an Ironman so I really wanted to give back to the sport. As I came through as a nipper myself many years ago, there really hasn’t been any change to the traditional competitions available for juniors. I wanted to provide a greater opportunity for kids to compete and have fun in an event which is professionally presented and conducted. The MWWJC is now in its fourth year – what’s been a stand-out moment? Just seeing the enjoyment the kids get from being part of it. The smiles on their faces says it all. You boast a 40-year family history in Surf Lifesaving along with much kudos as a hugely successful Ironman – how do you think this has shaped who you are today?

I think the best part of it all has been my intimate connection with the ocean. It is my greatest passion and something I will be passing down to my kids. The ocean enriches my soul, it is where I play and have fun but it is also a place I can go to relieve stress and restore balance. When you’re not working, where might we find you on the GC? Either surfing at Currumbin or hanging at the beach with my wife and twin girls. We tend to stick to the southern end of the Coast these days. In three words, what does the Gold Coast mean to you? Ocean and home. This year you’re most looking forward to.... ? Spending time at the beach with my girls this summer, they will be 18 months old so this will be the first summer they can enjoy the beach and ocean properly. Can’t wait!
