Letter from Nicole

As the mother of boys, I've tried my best to raise them to embody the qualities I feel will most contribute to them having a good life, to becoming good men. To be honest and kind, confident but humble, strong but gentle.

To accept others, and accept themselves. To be themselves regardless of what others think, and allow others to do the same.

To value education, read books, be grateful and gracious, love openly, and find the extraordinary in the ordinary. To grow into kind men, who respect others, who respect women, and who respect themselves.

It isn't always easy, but I'm trying my best to teach these things, and more, to my boys.

I also have a daughter. I do my best to teach her these things too, but as she inches closer to double digits, and my boys speed into their teenage years, I realise it’s far more important to show, than it is to teach.

I discovered a TikTok account recently - @girldad_e, who’s entire schtick is showing his daughter how she should be treated “so your dusty son” doesn’t get away with doing it the wrong way. It’s a funny account, but it drives home an important point – the absolutely critical role of fathers and father figures in their children’s lives. Especially young girls.

It's up to me to show my daughter, not just tell her, how to live a good life, a positive life, the best life possible.  To be compassionate and forgiving, but strong and independent.

But her male role models play an incredible special part by showing her what it means to be loved, respected, and valued.  In the way they treat her, the way they speak to her, the behaviours they model, and the way the speak about and treat other women.

My father played an instrumental role in my confidence, and my expectations of partners and fathers – for myself, and for my children.

So to all the dads, step-dads, single dads, father figures, and important male role models stepping up daily – Happy Father’s Day, we appreciate you!

Time to Spring Clean Your Skincare?

As we welcome the warmer Spring, we’re often reminded it’s time to clear out the junk in our homes and lives. This may also be a good time to consider whether your skincare routine needs a revamp too. Do you have more than a dozen different skincare products? Or do you not use anything at all?

It’d be too much to cover to try to get into the nitty gritty details of each possible step and active ingredient available, but here is a basic framework to see if you've got the basics of a healthy skincare routine down first. You can always build it up from there!

Evening Routine

Let’s start with an evening cleanse. If you’re going to use only one cleanser, it would be ideal to use an oil cleanser. That is because it’s the most optimal way to remove residual sunscreen, makeup, and oil soluble pollutants without it being too harsh on the skin. If you have oily skin, or if you’ve had a particularly gunky day from sweat, makeup, etc, then you can follow your oil cleanse with a gentle water cleanser. Just be mindful if your face is tight and "squeaky" afterwards, it may mean your cleansers are a tad too much and you’ve stripped out your skin barrier. It really should be left feeling clean yet supple.

After cleansing is when you start applying actives. When picking active ingredients, you really should know what you’re trying to achieve, the evidence behind them, and the dosage. If you're only going to pick a single active to use for long term anti-aging benefits, then it might be worth exploring retinoids. Retinoids does everything from promoting collagen production, helping fine lines, to reducing hyperpigmentation. They do vary in type, potency, dose, and as such varying potential risks and benefits, so do take caution introducing them. After your actives we then always end with a balanced moisturising cream to seal it all in and help restore and maintain your skin barrier.

Day Routine

In the morning you don’t need to cleanse unless you’ve had a particularly gunky or sweaty night, in which case a pea sized amount of any cleanser is all you need. Apply moisturiser if extra dry, otherwise pop on the most important skincare of them all: SPF50+ sunscreen! Nothing really beats sunscreen when it comes to anti-aging. Just google “truck driver sun damage” to see what it’s like for one side of the face to receive more UV radiation than the other over a lifetime.

From here you could explore niacinamide, vitamin C, AHAs or BHAs as other potentially helpful actives, but it does depend on what you’re trying to achieve and they all have their caveats. If in doubt, or you have a more specific skin concern, it may be worth visiting a health practitioner who’s familiar with skincare to help cater something a bit more personalised.

Inspiring Make-A-Wish® Adventure Fulfills Young Leo’s Gaming Dream

This month, Make-A-Wish Australia and its Gold Coast Volunteer Branch orchestrated a heart-warming event to grant the wish of a remarkable seven-year-old named Leo, whose courage shines brightly as he fights Burkitts lymphoma.

Joined by sixteen of his closest friends, Leo was treated to a day filled with wonder and joy, centred around his passion for gaming and fascination with science. It all began with an unforgettable gaming extravaganza on the Ghostly Games bus, where laughter and excitement filled the air, creating lasting memories and bonding experiences. After the gaming adventure, Street Science took centre stage, presenting aweinspiring experiments.

For Leo, YouTube became a source of solace during his time in the hospital. The combination of gaming videos and educational children's science experiments inspired him deeply, setting the foundation for his ultimate wish.

As the day concluded, Leo generously shared his joy by sending his friends home with jampacked party bags filled with tokens of the wonderful moments they shared together.

Leo's mother, Shannon, said the Make-AWish journey served as a beautiful reminder

that there was always something special to look forward to.

“For one magical day, the focus shifted away from the challenges of his diagnosis, hospital visits, and treatments, and instead celebrated the unique, funny, and remarkable kid that Leo is,” she said.

Karlee Chamberlin, President of the Gold Coast Volunteer Branch, highlighted the impact of generous donations and fundraising activities, making inspiring and empowering wishes like Leo's possible.

Declutter your mind – and wardrobeyour this Spring

Spring is not just the perfect time to declutter your home, it’s also a chance to spring clean your wardrobe, so you can start the new season with your best foot forward.

According to Motto Fashions owner, Lauren French, refreshing your wardrobe can increase energy levels and create a renewed sense of wellbeing.

“It’s an opportunity to refresh your style and make space for new trends,” she explained.

“It’s easy to hold on to things and stay comfortable with what we know and hold on to old clothing that reminds of us of certain times in our life, but as we change so does fashion and reaching for the same old clothes can give you a dated look.

“Injecting new trends into your wardrobe keeps you looking current – holding on to a lot of old trends makes you look dated and often ages you.”

Lauren recommends trying every piece on before deciding whether to keep it or ditch it.

She said often there were clothes that look great on the hanger, or evoke a memory, but trying it on again with fresh eyes can give you a different perspective and allow you to see how dated it is.

And if you are still struggling, get a friend around to help and have some fun, she said. According to Lauren, the pieces you are not reaching for should go.

“It’s an opportunity to make one less decision in the day. If you are a mum, you don’t get much time to yourself but if you have only items you love in your wardrobe you should be able to get dressed in less than five minutes,” Lauren said.

“As a general rule I hold onto things that will be really difficult to replace – like a sequin blazer or something really special that you can’t buy easily. Anything else should go if you haven’t worn it in the past few years.

Clearing out your wardrobe will also allow you to see what’s missing and make way to add a few key seasonal trend pieces to keep it fresh and up to date.

Lauren recommends holding on to any recently purchased blazers, and definitely hold on to a good fitting jean.

“Baggy jeans are still the trend going through to summer,” she said.

“Invest in quality knitwear, which doesn’t tend to date, and a good piece will carry you through the years, so worth investing that little bit extra in.”

T-shirts, especially printed, will be a key trend for Spring, and Lauren said mixing a casual tee with something dressy was an easy, stylish way to look modern.

To avoid ending up with a wardrobe next year full of dated clothes, Lauren suggests investing in only one or two items from each of these trend pieces.

And to achieve an expensive look, wear similar tones head to toe.

“This is a great formula to build a wardrobe on,” she said.

After a challenging menopause experience, holistic women’s health expert Dr Mindy Pelz set out to change how women view and manage menopause. Get It Magazine’s Holly Bartter checks in with Dr Mindy to discover how we can reframe menopause, simple changes to get started and her new book, The Menopause Reset

Can you tell us about your own personal experience that inspired your book, The Menopause Reset?

Menopause was a terrible experience for me! I’d worked hard to stay healthy and happy for pretty much my entire life, which meant I was totally unprepared for the effects of menopause. I had anxiety, depression, mood swings, and night sweats. I was irritable all the time, my libido disappeared. I felt like I had become a completely different person.

Menopause really got the best of me until I started doing research and discovered that there’s a lot we can do to counter the effects of menopause. Fasting, dietary changes, supplements, exercise - with a few well-placed shifts in your lifestyle, you can make a huge difference in how you feel during menopause.

Do you feel there’s still a stigma surrounding menopause?

There’s definitely still a stigma surrounding menopause. I was surprised by it, honestly. I think sometimes there can be a sense of, “I went through this without help, so you should too.”

As women, we’re also used to dealing with our monthly cycles and the symptoms they bring, without complaining or making a big deal of things like PMS. For a lot of women, I think menopause feels like an extension of that.

What is the mental impact of menopause on women?

Menopause can have a huge impact on us mentally. First off, it’s scary feeling like you’ve become a different person overnight! If all of a sudden you’re anxious and depressed and irritable, and you don’t know why, it can take a huge mental toll. You can feel like you’re losing your grip on reality.

Once you figure out that menopause is the reason, the mental side of things gets easier. But it’s still hard, because it does require you to accept certain changes in your life.

What age does menopause usually begin for women, and do you find this is changing at all for any reason?

In the United States, the average age at which menopause begins is 51. But there’s a lot of variation there. For most women, menopause begins anywhere between 45 and 55. It lasts an average of seven years (though it can continue for as many as 14 years).

Over the last six decades, the average age at which menopause starts has been delayed by 1.5 years, and today, compared to the 1960s, women are fertile for an average of 2.1 years longer.

Is menopause a medical area that is still having new research done on it, in terms of how we can best treat these symptoms?

There’s a ton of ongoing research on menopause! Some of the most exciting recent research is looking at how psychedelics (like psilocybin mushrooms and LSD) may affect menopause. Both psychedelics and estrogen bind to the same type of receptor in the brain, and there’s early evidence that psychedelic drugs—which show a lot of promise

in treating things like anxiety and depression—may be able to help with menopause symptoms as well.

However, we could use more research into treating the symptoms of menopause. Hormone replacement works well for a lot of women, but it comes with risks and side effects for some of us. I’d like to see more research on how lifestyle changes can improve menopause symptoms.

What are the most common symptoms women experience during menopause?

Some of them are easy to identify—if you suddenly start getting hot flashes, for example, you’ll probably figure out pretty quickly that menopause is the culprit.

But other common symptoms of menopause are harder to identify. Anxiety, depression, irritability, mood swings, trouble sleeping—these are all common symptoms that could have a lot of different causes. It can take time (and, in some cases, a hormone panel) to confirm that menopause is causing these symptoms, which can be frustrating. It’s awful, experiencing all these effects without knowing why.

Can you give us your top 3 tips to start managing menopausal symptoms?

My top three tips to start managing menopausal symptoms are:

Try intermittent fasting. It balances your hormones, promotes mental clarity, decreases inflammation, and improves your brain function. It’s also easy and free. You can start today— all you have to do is go 16 hours without eating, then have all your meals for the day in an 8-hour window (say, between noon and 8PM).

Ditch the sugar. Refined sugar majorly disrupts your sex hormones, which can exacerbate existing menopausal symptoms. Cut back on refined sugar and carbs and eat plenty of fruits, vegetables, meat, and healthy fats instead.

Walk every day. Walking is SO underrated as a form of exercise. I know it seems like it wouldn’t do much, but even a mile-long walk every day will make a big difference in your hormone balance.

What message do you have for women who are feeling hopeless against menopausal symptoms currently?

I know firsthand how hopeless menopause can make you feel. I struggled with it for years—depression, anxiety, trouble sleeping, night sweats, all of it. Doctors wouldn’t or couldn’t help me and I thought there was no end in sight.

But you truly don’t have to suffer through menopause. There are things you can do to take your life into your own hands. They work, and you’ll feel the changes within days, not weeks.

It’s easy to get caught up in the hype of skincare and the latest must-have formulations, but according to some experts when it comes to glowing skin we should be starting from the inside.

“People look at the skin as a superficial thing, but it is actually a really important organ in the body, especially as it’s the largest,” says founder of SkinB5 acne and skin wellness, Judy Cheung-Wood.

When people think about skincare they tend to think about their face. In reality though, you have skin all over your body, and if you treat it well, it can benefit you from the inside out.

“Ensuring your skin is healthy is more than just about looking good, it’s about feeling good with vitality and true wellness,” Judy says.

So, how does it work?

Gold Coast cosmetic doctor and GP, Dr Tanya Unni, agrees that what you put inside your mouth matters for your skin, hair, gut and brain.

“The remedy for many skin problems is not giving a cream or topical medicine,” she says.

Dr Unni recommends eating natural unprocessed foods with a diet rich in vitamins, minerals, antioxidants, fatty acids and non-processed oil.

And adding in supplements in compliment with diet, including collagen supplements and anything that will reduce inflammation.

Depending on the skin and condition she likes turmeric and adaptogenic herbs to reduce overall stress.

“Vitamin B is important because people are not eating enough meat and fish,” she said.

So, while expensive lotions and potions might make us feel like we are doing the best we can for our skin, it could be time to consider supplementing with a superfood or collagen as well as taking a look at what we put in our mouth.

Embracing Change: The Power to Refresh Our Life Choices

Life is a journey filled with choices, big and small, that shape our experiences and define who we are. As a counsellor, I often find myself reflecting on how these choices impact our overall well-being. One word that encapsulates the essence of such introspection is "refresh." Just as a refreshing breeze invigorates our senses, so too can the act of evaluating and recalibrating our life choices so to invigorate our path.

Picture a serene pond, its surface marred by ripples caused by the choices we make. Some ripples are gentle, nurturing positive growth, while others can disturb the tranquillity, causing turbulence within us. In the same way, every decision we make sends ripples through our lives. To refresh means to take a step back and ponder whether the ripples we're creating align with our values and aspirations.

Embracing the power to refresh our life choices requires self-awareness. It's about acknowledging our motivations, fears, and desires. When faced with a decision, ask yourself: Is this choice aligned with my authentic self? Does it contribute positively to my growth and the growth of those around me? By pausing to reflect, we can prevent hasty decisions that might lead to regrets down the road.

Additionally, the act of refreshing our choices is an ongoing process, not a one-time event. Just as a garden needs

tending, our choices need regular evaluation. The career path we once chose might no longer resonate with our passions; the relationships we invested in might need adjusting. Refreshing choices isn't about admitting failure; it's about acknowledging growth and embracing the evolving nature of life.

The refreshing process can be both liberating and daunting. It takes courage to let go of paths that no longer serve us, but in doing so, we create space for new opportunities. It's essential to seek support during this journey—whether through self-reflection, discussions with loved ones, or professional guidance.

In conclusion, the word "refresh" invites us to reevaluate our life choices intentionally. As a counsellor, I encourage you to recognize the power you hold to refresh your life's direction. Embrace change as a friend, not a foe, and remember that with every refresh, you're sculpting a life that aligns more closely with your truest self.

How Decluttering Your Space Will Help... Declutter Your Mind

Let’s face it, clutter gets in the way. In fact, over a quarter of Australians say clutter creates stress and anxiety in their lives.

International author and simplicity expert Bronwen Sciortino says clutter can actually lead to conditions like depression, fatigue and high levels of the stress hormone cortisol.

“Cluttered spaces can attract dust, mould, and animal fur which can exacerbate allergies and asthmatic conditions. It can also cause you to produce more stress hormones and chronic, long-term stress. This has been found to be a major source of health conditions such as Type 2 Diabetes, cardiovascular events (like blocked arteries and heart attacks), strokes, and autoimmune diseases.”

With conditions like these standing in your way, your mental health begins to deteriorate, making you much less likely to deal with the clutter head-on (pun intended). Once you give up on tidying up, your body starts to give up too, leaving your mental and physical health with nothing left to lean on.

So, where to start?

1. Make a Game Plan

Getting started is the hardest part. Keep things achievable by making a game plan and setting a few rules of your own. That way, you can set yourself up for realistic goals, not just Pinterest goals.

Try taking a page or two out of Marie Kondo’s book, and scrap what doesn’t work for you.

2. Start Anywhere

Don’t put too much pressure on yourself. Getting one drawer sorted is an achievement in itself.

Bronwen suggests keeping things simple: “Whenever you’re trying to do something differently, your success will always rely on making it as simple as possible. The less impact making the change has, the more likely you are to create a new habit.”

Adjust to Tough Love

By categorising the clutter, you can figure out what you need vs. what you don’t. Then, set up 7 piles:

1. Arm’s Length: Anything you need on a daily basis should be as easy access as possible.

2. Cupboard: Need it on the regular but not every day? Keep it in a close-by cupboard (one you don’t need a stepladder for).

3. (Deep) Cupboard: Only need it a few times a year? Keep it in the deep cupboard. Be mindful that cramming your cupboards full is the same as sweeping things under the rug; it’s still a mess even if you can’t see it (or reach it).

4. Store: If you only reach for it once a year (if that), store it. Anything sentimental but not essential also falls into this pile. TAXIBOX brings storage to you then takes it away once you are done.

5. Sell: Don’t need it but it’s still worth something? Sell it. Facebook Marketplace is your friend (except for the “friends” that ask if it’s “still available?” before leaving you on read).

6. Donate: Anything you can’t sell, you should donate – take note of the donation bins in your area to speed up this step.

7. Bin: Bin the stuff that you’ve loved for a little too long, aka, anything that’s lived beyond its life-span. We try to waste less, but sometimes it just has to be done.

4. “Get Around to It”

No need to wear yourself out – getting overwhelmed is never good. Try:

• Focusing on one thing at a time

• Finishing one task in full before you move onto the next

• Rewarding yourself once something’s crossed off the list (so you keep coming back for more)

5. Store what you don’t use (but want to keep)

All in the mind

Health and fitness is 30 per cent exercise, 70 per cent nutrition and 100 per cent mindset. Success starts in your head and your ability to achieve your goals is going to heavily rely on your mindset.

People with a fixed mindset believe they have fixed characteristics whether referring to intelligence, personality or ability. Whereas those with a growth mindset believe that with effort anything can be changed and they are willing to put in the work.

Adopting a growth mentality can be done and doing so will allow you to master your mindset and take control of your fitness and health. So how do you adopt a growth mindset?

Here are our top 4 tips:

Embrace failures and setbacks as an opportunity to learn and grow. Rather than being discouraged by setbacks, embrace them and let it motivate you to keep trying, improving and growing. For example, you set out for a run but can only run for a few minutes before having to start walking. Rather than saying “I'm not good at running” and never running again, set yourself a goal of running 1km. Over time this distance will increase and before you know it you could be an avid runner!

2 Change the language you use with yourself. Change “I can’t” to “I can” and “I'm not good at that” to “I'm going to get better at that”. Simply changing the language you use, will translate and become your reality.

3 Don’t be afraid to try new things. Step out of your comfort zone and try new things whether it's new forms of exercise, group classes, starting at a gym or a new food. You will never know unless you try!

Spinach and Mushroom Galette

Total time 1 hour 20 minutes

Cook time 1 hour

Serves 4

Difficulty Moderate

Ingredients:

• Plain wholemeal flour, 80g

• Plain flour, 120g

• Dried thyme, 3 tsp, leaves

• Reduced fat oil spread, 50g

• Egg(s), 1 medium, lightly beaten

• Egg yolk, 1 medium

• Baby spinach leaves, 500g

• Eschalot(s), 2 whole, thinly sliced

• Mushrooms, 250 g, button variety, sliced

• Garlic, 2 clove(s), crushed

• Ground nutmeg, ¼ tsp

• 97% fat-free cottage cheese, 80g

• Mixed salad leaves, 2 cup(s), to serve

• Oil spray, 1 x 3 second spray(s)

Method:

1. Process flours, 1½ teaspoons thyme and ¼ teaspoon salt in a food processor until combined. Add spread, one spoonful at a time, processing in short bursts until mixture resembles breadcrumbs. Add whole egg and process until a dough forms, adding a little cold water if necessary.

2. Shape dough into a disc, wrap in plastic wrap and place in fridge to chill for 30 minutes.

3. Cook spinach in a large saucepan of boiling water for 30 seconds or until just wilted. Drain and refresh under cold water. Using your hands, squeeze as much moisture from spinach as possible. Coarsely chop.

4. Spray a large non-stick frying pan with oil and heat over medium heat. Cook eschalots, stirring, for 7-8 minutes or until soft. Add mushrooms and cook, stirring, for 5-6 minutes or until tender. Add garlic and nutmeg and cook, stirring, for 1 minute or until fragrant.

5. Remove from heat and stir in spinach. Season with salt and pepper. Stand for 5 minutes to cool. Stir in cottage cheese.

6. Preheat oven to 200°C. Line a baking tray with baking paper. Roll out pastry on a piece of baking paper to a 3mmthick, 40cm-diameter circle.

7. Transfer pastry (on paper) to prepared tray. Spread mushroom mixture over the pastry, leaving a 5cm border. Fold pastry edges over to partially enclose filling.

8. Using a fork, lightly beat egg yolk in a small bowl. Brush pastry edges with beaten egg yolk. Bake for 40-45 minutes or until golden and crisp.

9. Serve galette with salad leaves.

These yummy recipes from Weight Watchers are sure to give you the kickstart you need to throw off those winter blankets and get creative

Beetroot and Goat’s Cheese Tarts

Total time 45 minutes

Prep time 25 minutes

Cook time 20 minutes

Serves 8

Difficulty Moderate

Ingredients:

• Baby spinach leaves, 75g

• Egg(s), 2 medium

• 97% fat-free cottage cheese, ⅓ cup(s), (85g)

• Light sour cream, ¼ cup(s), (65ml)

• Fresh thyme, 1 tsp, leaves, plus sprigs to serve

• Reduced-fat puff pastry, 278g, (use 2 x 170g sheets), just thawed

• Cooked peeled beetroot, 250g, drained, thinly sliced

• Skim milk, 2 tsp

• Soft goat's cheese, 80g

To freeze tarts, cool, then seal in a reusable container, with baking paper between layers.

Freeze for up to 1 month. Reheat from frozen on baking trays in 180°C oven until hot.

Method:

1. Place 75g baby spinach leaves in a colander over the sink and pour over boiling water to wilt. Rinse under cold water, then squeeze firmly to remove excess liquid. Coarsely chop.

2. Whisk 2 eggs, ⅓ cup (85g), 97% fat-free cottage cheese and ¼ cup (65ml) light sour cream in a medium bowl.

3. Stir in spinach and 1 teaspoon fresh thyme leaves. Season with salt and pepper and set aside.

4. Preheat oven to 200°C. Thaw 2 x 170g sheets frozen reduced-fat puff pastry. Cut 4 x 12cm rounds from each pastry sheet making, 8 in total.

5. Place pastry rounds on two non-stick baking trays.

6. Thinly slice 250g drained, fresh cooked beetroot. Arrange half the beetroot slices over pastry rounds, slightly overlapping and leaving a 2cm border.

7. Fold up the pastry border to form a rim, pinching at 3cm intervals for a decorative edge.

8. Spoon spinach mixture over beetroot layer, then arrange remaining beetroot slices on top.

9. Lightly brush 2 teaspoons of skim milk over pastry edges.

10. Bake for 15 minutes. Crumble 80g soft goat’s cheese over filling and bake for a further 5 minutes or until pastry is crisp and golden.

11. Season with freshly ground pepper and sprinkle with thyme sprigs to serve.

Ingredients:

• Silverbeet, 4 cup(s), (1 bunch)

• Olive oil, 1 tsp

• Brown onion, 1 medium, finely chopped

• Garlic, 1 clove(s), crushed

• Canned diced tomatoes, 400g

• Egg(s), 4 medium, room temperature

• Reduced fat feta cheese, 30g, crumbled

• Dukkah, 10g

• Fresh mint, ¼ cup(s)

• Lemon(s), 1 medium, wedges

Method:

1. Preheat oven to 180°C or 160°C fanforced.

2. Cut down either side of silverbeet stems to remove white stalks. Discard stalks. Wash leaves and, without drying, roughly tear.

3. Place in a large saucepan over medium-low heat. Cook, covered, turning occasionally, for 2-3 minutes or until wilted. Set aside for 5 minutes to cool slightly.

4. Squeeze to remove excess liquid. Finely chop.

5. Heat oil in a medium saucepan over medium heat. Cook onion, stirring, for 5 minutes or until softened. Add garlic and cook, stirring, for 1 minute or until fragrant. Add tomatoes and bring to the boil. Remove from heat.

6. Add silverbeet and stir to combine. Season with salt and pepper.

7. Spoon silverbeet mixture among four 1½-cup (375ml) capacity ovenproof dishes. Use the back of a spoon to create an indent in the centre of silverbeet mixture.

8. Crack an egg into each indent. Sprinkle with feta and dukkah. Place dishes on a baking tray.

9. Bake for 10 minutes or until eggs are cooked to your liking.

10. Sprinkle with mint and serve with lemon wedges.

Avocadobaked Eggs with Smoked Salmon

Tips: Room-temperature eggs cook more evenly and quickly when added to the hot mixure but you can use fridge-temperature eggs if you prefer. You can use a 250g packet frozen spinach (thawed, well-drained) instead of silverbeet. For gluten free, serve with gluten free bread.

• Avocado, 1 medium, ripe, halved

• Smoked salmon, 60g

• Egg(s)’ 2 medium

• Eschalot(s), 1 whole, finely chopped

• Capers, rinsed, drained, 1 tsp

• Fresh dill, 2 tsp, chopped

Place the scooped out avocado flesh in a small container, drizzle with lemon juice to prevent it browning and store in the fridge for up to 2 days. Enjoy it smashed on toast or add it to salads, sandwiches or wraps.

Method:

1. Preheat oven to 200°C.

2. Line a small baking dish with baking paper. Cut a very thin slice off the bottom of each avocado half so they sit flat and place in the prepared baking dish.

3. Scoop about 2 tablespoons of flesh from each avocado half, creating a hollow for the egg. Line avocado halves with smoked salmon, then carefully crack an egg into each so they don’t spill over.

4. Bake for 15-20 minutes, until whites are set and yolk is cooked to your liking.

5. Sprinkle with eschalot, capers and dill. Season with pepper. Serve.

Hash Brown Egg Tarts

Total time 1 hour 5 minutes

Prep time 20 minutes

Cook time 40 minutes

Serves 4

Ingredients:

• Sebago potato, 400g, (2 x 200g), peeled, halved crossways

• Grated parmesan cheese, ¼ cup(s), (20g)

• Cherry tomatoes, 250g

• Egg(s), 4 medium

• Fresh chives, 1 tbs, chopped

• Oil spray, 1 x 3 second spray(s)

Method:

1. Preheat oven to 180°C. Lightly spray 4 holes of a large non-stick muffin tin (200ml capacity) and line each base with a small round of baking paper.

2. Add potato to a pan of boiling water and cook for 8 minutes or until partially cooked. Drain and set aside until cool enough to handle.

3. Coarsely grate potato and place in a large bowl. Add parmesan and season. Mix until well combined. Divide evenly between prepared muffin tin holes and press to line tins evenly. Lightly spray with oil and bake for 25 minutes.

4. Meanwhile, place tomatoes on a baking tray and bake for 15 minutes.

5. Remove muffin tin from oven and carefully crack an egg into each potato case. Bake for another 12 to 15 minutes or until egg is just set. Set aside for 5 minutes to cool slightly. Run a knife around each tart and carefully lift from pan. Serve with tomatoes and sprinkle with chives. Season with pepper.
