This month I let my son leave the safety of our housing estate to go bike-riding with his friends.

I was terrified, and I know it’s the first of many moments of ‘letting go’ I’m yet to endure with all my children.

Firsts. They’re a thing, right?

During my first oral presentation at school, I read every word of my speech despite knowing it off by heart, my hands shaking furiously as I sped through each palm card at record speed.

My first live cross during my time as a television reporter was one of the most terrifying firsts I ever endured – the sound of the music signifying the news was about to begin almost sending me into a panic attack.

Not all firsts are terrible though. In fact, many of the most amazing experiences of my life were firsts.

The first kiss. Is there anything better?

The first time I laid eyes on my children – the most magical, memorable moments of my life.

If I could relive those experiences, I’d do it in a heart beat.

But you can’t relive a first time. It’s simply not possible.

Firsts can be scary too.

The first time I realised everything wasn’t always going to be ok.

But they can also be life-affirming. The first time I felt truly comfortable, truly confident in myself – to be myself, trust in myself and feel strong enough not to compromise that sense of self for anything, or anyone.

I’m going to break some sad news to you all. It’s possible that you may not have heard, but last week a 96 year old, working mother, died peacefully at home.

We all have women we admire and I’m going to explain to you why, for me, Queen Elizabeth II was not really one of them. Queen Liz personified all the things that women in a patriarchal society are trained to be. Dutiful, demure, beautiful, polite, and with a dedication to doing EXACTLY what you are supposed to do whether its something you’d like to do or not.

Women spend their lives subjugating their needs, wants and desires, making sure that other people are satisfied. I think the Queen was an amazing woman (with a rather bizarre and complicated family – including a son who wished to be a tampon…now our King…), I think she had incredible force of will and stamina, but she is not someone I want to emulate.

Here’s my ‘Queen of the Week’ eight-time World Surfing League title holder Steph Gilmore!!! Steph finished 5th overall for this year’s competition, she had to compete in and win 5 consecutive heats on one day to achieve her eighth title. She had to beat the surfers ranked, 4th, 3rd, 2nd and 1st in order to be crowned queen. Steph, at 34 is one of the oldest women on tour, she has had to overcome massive adversity (including breaking bones in a random assault on the Gold Coast which left her physically and psychologically traumatized) and she has had to adapt to the style of women’s surfing becoming more physical with more ‘tricks’ and less flowing style. She is a successful surfer and brand. She is a confident, mature, dedicated businesswoman and athlete following her passion.

Let’s all try and confidently follow our passions, happily taking up space in the world, spending our energy and love where and when WE want to, not constrained by obligation and duty.

Changing Perspectives: Choose to View Life Through a Different Lens

“Your opinion is your opinion, your perception is your perception—do not cloud them with ‘facts’ or ‘truth.’ Wars have been fought and millions have been killed because of the inability of man to understand the idea that everybody has a different viewpoint.”

There is only one thing we truly own in life, and that is our own perception.

The way we were raised, the culture we grew up in, the relationship we had with our parents and siblings and the types of music, books and movies we have been exposed to, all play a part in how we perceive life and all that it entails. So, is perception reality?

“Your reality is as you perceive it to be. So it is true, that by altering this perception we can alter our reality?”

We may meet people who are able to look at life from two perspectives (as in ‘yours’ and ‘mine’) and be able to empathise with both, but it is certain that we will also meet those who are still completely rooted in their own perception and cannot bring themselves to see a situation from another point of view.

Instead of being a victim of circumstances where we think that our perception is formed ‘from’ the things that have happened to us, we can take back control of our lives by change the lens on our cameras and view life differently.

The happiest of people know that there is always good in every situation, either in the form of a lesson or a blessing.

When we begin to challenge and question our perceptions, we will find that our life changes dramatically.

A beautiful wisdom naturally occurs as we exceed the nature of our perception which allows for the complete tranquillity of unity so true consciousness can emerge.

Regardless of location, most traders will attest to the difficulties Covid-19 has brought to the retail industry. We spoke to Shoetique founder, Cathy Hardy, about showing resilience as one of the longest traders in Southport.

Tell us about Shoetique’s product?

“Basically, comfort is everything these days, whether you’re 21 or 91, it’s what we all expect now. I don’t do high heels, I don’t do stilettoes or anything like that, but I do do mid-heel ranges that are comfortable to walk in and look sensational”

What is going to be popular this season?

“We have a lot of European shoes, a lot of handmade Spanish espadrilles, all new season is flowing into my doors now. I have Spanish, Portuguese, Brazilian, Italian, Turkish, and all sorts of countries”

How is Shoetique different to other retailers?

“I’m an independent and there’s only a few of us left on the Gold Coast. I’ve been around for over 16 years, and we give exceptional service, we are full of good ideas to put clothing together to make a perfect outfit. You basically get one-on-one service with us. We have always got new things in to try

How has Shoetique shown resilience over the years after dealing with uncontrollable circumstances such as the tram build and COVID?

“God only knows how I dealt with that light rail, I just kept doing one day after the other to try and get through it. COVID was the same, again, I just worked within the rules, I had my doors open, I was just here, I did what I needed to do, I needed to be open in Australia Fair and so that’s what I did, just kept going, just kept going.

What’s the most unexpected positive thing to happen during these times that has allowed your business to grow?

“Just being here, doing what I do and having beautiful things, gorgeous clothing and footwear and handbags and jewellery and all the things that I think women would like.

How will Shoetique continue to be resilient with the Australia Fair re-development?

“We are all really excited about it, we will get through all of the building works, but if it is to be redeveloped, bring it on. My side has actually already been done, and has already been re-developed, so there is no reason not to come to Australia Fair”

What are your hopes for the future of Shoetique?

“A beautiful hot long summer, lots of travellers, lots of tourists, lots of wellbeing, lots of health. We are in for a good summer that we haven’t had in years, we’ve got a long Summer to look forward to.”

Fur babies

It’s a human’s world and dogs are just living in it – but they’re also sleeping between our bed sheets, keeping us company while we work, earning cash and earning themselves a spot at the pub. Aussie dog food company, Scratch, surveyed the owners of over 12,700 Aussie dogs to dig up the dirt on attitudes towards our furry friends and their perceived role in society, and the results are in!

The survey found that Aussie dog owners are becoming less interested in having kids, with 1 in 3 respondents desiring children less since becoming a dog owner. This is up from 33% in 2020. This could be linked to night times already being a family affair without adding children into the mix. Roughly 65% of dogs sleep in their owners’ bedrooms. Of those, 73% are allowed on the bed, and 56% sleep in the sheets!

Dogs truly are a key part of Aussie families with half of all dog owners saying it’s been harder to cope with losing their dog than it has been when losing a human. Given how much they mean to us, it’s no surprise that we don’t agree with current government legislation labelling dogs as objects with 80% of Aussies believing that dogs deserve to be seen as more than ‘property’ by Australian law.

When it comes to dog breeds, Aussies are most partial to the cavoodle, with ‘doodle’

breeds and retriever breeds dominating the top ten list, and staffies and French bulldogs placing towards the bottom.

Scratch co-founder and CEO, Mike Halligan, said, “We did our first Great Aussie Dog Survey in 2020, and we couldn’t believe the results. A lot has changed in society since then, so we wanted to follow up and find out how the lives of Aussie dogs have changed. The results have left us laughing, crying, and scratching our heads!”

“Our number one priority is giving the dogs of Australia the best quality of life we possibly can, so we’re proud to roll out initiatives like the Great Aussie Dog Survey to help us learn from owners what else we can do for their dogs. Dogs truly are a human’s best friend, and are clearly worth the investment – after all, 97% of respondents said their dog has had a huge or positive impact on their lives” he concluded.

Healing & A Holistic Approach to Mental Health

Therapy doesn’t always mean a clinical setting and talking one-to-one. Equine Therapist Warren Fitzgerald has opened the gates to The Wagon Stop, welcoming clients from all walks of life to connect with horses, nature and themselves, offering support in a unique and immersive way. We chat to Warren about his work, his Beechmont farm and what inspires him.

How did you first get introduced to equine therapy, and what drew you to this career path?

Throughout my life I have always had a powerful relationship with my horses and I was aware of various programs being delivered to veterans and a range of medical and mental health clients with whom I have worked. I realized my time had arrived to progress my interest, the foundations were laid through my experience as a health professional (a Clinical Registered Nurse and a Public Health Clinician) and a steward of all the animals and natural environment here on the family farm.

Can you tell us in a nutshell, what equine therapy and psychotherapy involves?

The cornerstone of Equine Assisted Psychotherapy is the setting up of a safe, relational container for the client – horse –practitioner relationship that supports new opportunities and choices for relationship and emotional growth.

Given your sessions are out in nature, do you find that grounding presence helps people feel calmer right away?

Indeed I do! Having worked in clinical settings throughout my career, the benefits for clients connecting to the land, the elements and nature is transformative. Nature is a great source of wisdom and guidance, and a way to work with our inner world.

How is it different from traditional forms of therapy? And do they work well together?

Equine Assisted Therapy is a very valuable adjunct to more traditional forms of therapy and clients are often referred to me by a range of health professionals. In psychotherapy (regardless of the different theoretical and practice approaches or biases), it’s all about providing that space that is safe and supportive while also challenging enough for growth, learning and change. In my sessions, everything is framed in the “now”, and the opportunity to try something new without over analysing, and I have clients of all ages and all capacities.

What is it about horses especially that works so well in therapy – what are those special qualities horses have to support human healing?

Horses gift us with their power, beauty, grace and wisdom. The horses see the real you and being seen is incredibly healing. Horses live in awareness and their contact is authentic, so what they feel they express. This is both great modeling for humans, and an opportunity for feedback without judgment. By playing and being with horses we remember how to be kind to ourselves, and when we are hard or engage too strongly, horses pull away. They aren’t just a tool, but a teacher!

What do you love most about what you do?

I love living and working here on this land, where I am surrounded by nature with my 6 horses , Sophie my dog, Meow Meow my cat, cattle and chooks. I am so privileged with this opportunity to enhance the lives of both my clients and the horses and other animals in my care here on the farm.

Do you feel there will continue to be a shift in people moving towards different types of therapy such as this?

There is such a unique wisdom of horses, of animals, and of the forests, the bush, the ocean and the natural environment, that is undeniable, and so very needed right now. The public is being warned about the serious risks of self-diagnosing after new research revealed 30 per cent of Australians have ‘diagnosed’ an illness through online research. Even more alarming, 45 per cent of these people have chosen their own medications to treat the selfdiagnosed illness.

According to Dr Andrew Thompson, selfdiagnosing can not only put your health and risk, it can actually lead to worse health outcomes, particularly if the diagnosis is later found to be inaccurate.

A recent survey found that among the respondents who admitted to selfdiagnosing through online research, 45 per cent treated themselves for their condition, including with over-the-counter medicines.

What are the risks with self-diagnosis?

Dr Thompson says: “It is important for Australians to be aware of the risks of self-diagnosing. It’s understandable if an individual diagnoses a painful ankle as a sprain, for instance, but there are symptoms such as abdominal pain and heart pain that can’t be diagnosed without a medical test and could be very serious. Ultimately, a misdiagnosis followed by incorrect medication could risk complications,

worsen an existing health condition, and lead to side effects.

“Unfortunately, another downside to selfdiagnosing is the potential impact on the doctor-patient relationship. Patients can become fixated on certain symptoms or a particular diagnosis and may be unwilling to accept a professional, accurate diagnosis as a result.”

A delay in receiving the correct diagnosis from a medical professional can also worsen the condition, lead to more severe and possibly longer-term health problems, and in some cases, a fatality.

“A misdiagnosis can also place individuals and their families under unnecessary stress, along with financial costs. Patients may also invest time and finances into seeking unnecessary self-tests.”

Why do Australians self-diagnose?

The majority – 65 per cent – said their reasons for self-diagnosis was that they trusted their instincts about their own health and, combined with online research, were confident they could determine their own health issue.

One in four said they trusted the information they sourced online was accurate and reliable.

Access to doctors was another reason for individuals to self-diagnose, with 18 per cent of respondents having trouble accessing a doctor before they self-diagnosed, and 12

per cent not having a regular doctor they trusted. COVID continues to have an impact as one in five did not want to visit a doctor during the pandemic.

For others, poor experiences with medical professionals were behind their selfdiagnosis with 13 per cent saying they were unable to get a diagnosis for their illness, and 22 per cent saying they had been misdiagnosed by a health professional in the past.

Dr Thompson said it was concerning to discover that so many Australians have had trouble accessing healthcare. Patients in regional and rural areas, where GP wait lists are blown out due to a shortage of permanent doctors, may have challenges in finding a regular doctor. But that doesn’t mean they should turn to the internet, which doesn’t take into account individual symptoms, or a patient’s family history, medical history and other factors that can impact a diagnosis.

“I urge individuals to always seek professional advice from a doctor or GP. Those who don’t have a regular doctor or struggle to access healthcare could seek telehealth services such as InstantScripts, which are available after hours and are affordable. Sourcing a regular doctor or making the conscious effort to seek regular health check-ups can help Australians better manage all aspects of their health and combat and manage potential illnesses early and effectively.”

Injectables v’s Cosmetic Surgery

More and more Australians are turning to injectable treatments rather than going under the knife.

According to Dr Vivek Eranki of Cosmetique, patients are raising concerns that cosmetic surgery is not only extremely expensive, but also permanent and comes with risks.

“Injectable treatments are virtually instant however they are not permanent and their level of treatment can be adjusted according to the desired aesthetic outcomes of the patient,” Dr Eranki said.

“They can also be administered on a gradual basis, allowing the patient to dip their toe in the water. As the patient becomes more familiar with the effects, they can book in to have more. This means the patient is always in control.

“Most people have injectable treatments in their lunch hour. The process only takes a few minutes.”

Dr Eranki has outlined the benefits of injectable treatments versus invasive cosmetic surgery.

“If for any reason you decide that you would like to change your look at your next appointment, you can do this. This is the beauty of injectable treatments, the treatments can be adjusted as you need to achieve a different look or outcome.”

“Make it part of your regular beauty routine, it’s less frequent than going in for a pedicure or to the hair salon to touch up your roots.

Injectable treatments are cost effective

“There are a number of different injectable treatments available,” Dr Eranki said.

1. Find your “why”

Having a clear understanding of exactly why you want your result will help you to maintain consistency even when you aren’t motivated. Whether you want to reduce your blood pressure to live longer or enhance the way you feel about yourself, whatever makes you get out of bed in the morning needs to be compelling enough to make long term change. Everyone will have a different answer, there is no right or wrong, only what truly drives you to keep moving forward.

2. Exercise made fun gets done

The type of exercise you enjoy is the one you will most likely continue with long term

and get sustainable results. If you dread the thought of walking on a treadmill for example, then find a different way to get your cardio in. Looking forward to your sessions will mean that you will likely feel positively about exercise and therefore have a healthy relationship with exercise.

3. Track your progress

You need to find as many ways as possible to measure your progress, not just the number on the scales, then celebrate the small steps forward. You can record the distance ran in a session, the amount of water drank in a day, the hours of sleep each night or even just the number of steps you take each day. Seeing yourself getting better each session will keep you moving forward, so try wearing a tracker!

4. Follow the plan

Although this may not sound exciting and fun, simply sticking to the plan over a long period of time will get great results and inspire you to keep going. Often, we look for instant gratification when we haven’t given the plan enough of an opportunity to get results. Not every workout will be exciting, but results come from an accumulation of small marginal measured gains.

5. Have a refresh

Every now and again it is healthy to change it up and do something completely different. As long as it’s not contradictory and could cause issues, then trying something brand new and different can be a positive way to mentally refresh and put your body under a different training environment.

6. Recovery is key

Planning for rest and recovery is majorly beneficial to keeping motivated, progressing, and remaining injury free. If we don’t plan our recovery, there’s a higher chance we won’t recover as well and either get injured or begin to plateau, both of which will cause an instant drop in your motivation.

Things are certainly moving in the right direction, albeit a little slower than a number of patients and doctors would like to see. The TGA & OCD are doing a great job of evolving the categorisation of the medicines and slowly removing the red-tape for patients and providers. However, the ability for CBD Isolates to be sold over the counter in pharmacies will certainly open more Australians to the benefits of plant medicine. We should see those hitting the shelves over the next six to twelve months.

Essentially, the cannabis compounds, including THC & CBD along with hundreds of minor cannabinoids, terpenes and flavonoids, interact with the human endocannabinoid system to regulate mood, sleep, pain and appetite. So, it’s important to understand that cannabis is not just ‘masking’ symptoms, but actively treating them. This one bit of knowledge is key to repositioning cannabis as a ‘medicine’ rather than a generic ‘drug’.

What other changes are we likely to see in this space in terms of accessibility, new products and beyond?

Looking at the industry more broadly, it’s safe to assume we will eventually catch the rest of the evolved world by de-scheduling cannabis products from a Schedule 4 or 8 (requiring a prescription), to a 3 or below. That said, I hold hope that open adult use

How can someone look into becoming qualified as a medicinal cannabis patient, what does that process involve?

The first thing to know is that a consultation with a “Cannabis Doctor” is the same in nature as any other GP appointment. You won’t be on a watchlist, your employer won’t be notified and the police won’t be called if you are honest about self-medicating with black market products. With that said, there are some basic criteria that need to be met, including having tried a “traditional” medication before looking at cannabis. Can you “bust a myth” for us about cannabis? And, do you feel it’s losing the stigma associated with usage?

The “lazy stoner” myth is one that is certainly on the way out. Personally, I vape a high THC flower to manage some lower back pain before going for a 10km run. But I must admit, the temptation for a second protein bar at the end is certainly no myth!

Cooking time 1 hour Serves 4

Ingredients:

• 2 packets barramundi

• 1 eschalot

• 1 truss tomato

• ½ bunch coriander

• 1 corn cob

• 1 lemon

• 1 lime

• 1 garlic clove

• 1 avocado

• 1 Lebanese cucumber

Method:

• 1 long red chilli

• 1 cos lettuce

• 2 tbsp sour cream

• 4 tbsp mayonnaise

• 1 tsp chipotle powder

• ½ tsp smoked paprika

• 1 packet fajitas

• Olive oil

• Salt & pepper

1. Give all your vegies a little wash. Using a sharp knife, score the barramundi skins.

2. Grill corn on a barbeque or griddle, turning regularly until some of the kernels are charred.

3. Finely chop garlic, coriander stalks, and chilli (removing seeds if desired). Add to a bowl with avocado, sour cream, juice of half a lime and drizzle of olive oil. Season with salt and pepper and mash together well with a fork. Set aside.

4. Once corn is cooked, slice off kernels with a knife. Dice the tomato, eschallot and cucumber into ½ cm cubes. Roughly chop coriander leaves. Add ingredients to a mixing bowl, drizzle with olive oil and juice of half a lemon. Season with salt and pepper and mix well.

5. In a hot pan on high heat, drizzle olive oil and sear barramundi, flesh side down for approx. 3 mins. Turn and cook skin-side down for approx. 4–5 mins, checking regularly until skin is crisp and golden. Remove the hard end from the lettuce, then wash and dry leaves and set aside. In a bowl, add mayonnaise, chipotle powder and juice of half a lime, mix together well.

Vietnamese Style Prawn and Mango Salad

The perfect Spring taster!

Serves 4–6 Prep time 20 minutes

Cook/assembly time 10 minutes

Special Equipment mortar and pestle, julienne peeler (optional)

Ingredients:

Prawns

• 16 large green king prawns (around 500g), peeled and deveined

• Stalks from 1 small bunch coriander, roughly chopped

• 2 garlic cloves

• 1 Tbsp fish sauce

• 1 tsp sesame oil

• ½ lime, juiced

Salad

• 1 large mango, cheeks removed, finely sliced

• 1 medium Lebanese cucumber, finely sliced lengthwise

• 1 medium carrot, peeled and julienned or finely sliced lengthwise

• 200g cherr y tomatoes, sliced in half

• 200g bean sprouts, rinsed

• 1 long red chilli, finely sliced

• Leaves from 1 small bunch fresh coriander

• Leaves from 1 small bunch fresh mint

• 1 cup roasted peanuts, roughly chopped

• 1 Tbsp black sesame seeds, lightly toasted

Dressing

• 2 garlic cloves, minced

Notes:

• If you don’t have a mortar and pestle, you can finely chop the ingredients.

• If you don’t have a julienne peeler, you can use a regular peeler to create long shreds or simply slice thinly.

• Add the dressing just before serving.

Method:

1. To prepare the prawns, place the prawns into a mixing bowl. Add the coriander stalks and garlic in a mortar and pestle and pound together to form a rough paste. Add the paste to the prawns along with the fish sauce, sesame oil and lime juice. Set aside in the fridge for around 15 minutes while you prepare the salad. Don’t leave the prawns to marinate for more than 30 minutes.

2. Place all of the salad ingredients into a large bowl and toss together. Leave half of the peanuts and sesame seeds for garnish.

3. To make the dressing, add all of the ingredients except the lime to a small bowl and stir to combine, dissolving the sugar. Add the lime juice to suit your taste.

4. Place a large, heavy based fry pan over high heat with about 1 Tbsp neutral oil (such as rice bran oil). Cook the prawns for around 2–3 minutes per side or until

• 1cm piece fresh ginger, grated

• 1 long red chilli, finely chopped

• 3 Tbsp fish sauce

• 2 Tbsp rice vinegar

• 2 tsp white sugar

• 1 tsp sesame oil

• 1 lime, juice to taste

just cooked through and tender. You could also BBQ the prawns.

5. To assemble, add half of the cooked prawns to the salad and pour half of the dressing over, tossing to combine. Add more dressing to suit your taste. Transfer to a serving dish and top with the rest of the prawns. Garnish with the remaining peanuts and sesame seeds. Serve any remaining dressing on the side.

Spring Green Frittata

This quick frittata recipe is packed full of wonderful spring greens and creamy Danish feta and is a great recipe to make for breakfast or an easy to make dinner.

Serve 3–4 people Prep time 10–15 minutes Cook time 18–20 minutes

Ingredients:

• 1 asparagus bunch (cut into 2–3cm pieces)

• 1 handful of broad beans (shells removed or leave on if they are young)

• 3 Spring onions white ends only (sliced)

• 6 eggs

• 1 tbsp milk

• 1 tsp dried dill

• 60gms creamy Danish style feta

• Butter

• Pepper

Serve

• 1 tbsp fresh dill roughly chopped

• Extra Danish feta

Method:

1. Preheat the oven to 180°C (360F).

2 Melt a tsp of butter in a cast iron fry pan (oven proof) on medium heat, add the sliced spring onions and asparagus. Sauté for 5–8 mins until they are 80% cooked, place them into a small bowl and set aside.

3. Add the eggs into a medium mixing bowl along with the milk, pepper and dried dill. Whisk until they are fluffy then crumble in 1/2 of the feta, whisk to combine.

4. Using the same cast iron fry pan, melt another knob of butter and swirl it around to coat the pan before pouring in the egg mixture. Sprinkle over with half of the cooked vegetables and the broad beans and place in the oven for 5 minutes to partially cook.

5. Take the fry pan out of the oven at the mid cooking stage and sprinkle over the remainder of the vegetables and the remainder of the feta crumbled over the top. These are added in two parts to prevent all of the vegetables dropping to the bottom of the frittata. Bake for a further 10–15 minutes (depending on your oven) until the egg is cooked in the middle and they start to fluff up and pull away from the sides of the fry pan.

6. Serve hot straight from the oven with fresh dill sprinkled over the top and extra crumbled feta.

Slow Roasted Pork Belly with Fennel and Citrus Salad

What’s not to love!

Ingredients:

• 1.5kg pork belly, scored

• 1Tbsp fennel seeds

• 1Tbsp sea salt

• 1 large fennel bulb (including stalks), sliced

• 1 red onion, peeled and sliced

• 1 head garlic, cut in half crosswise (skin on)

• 1 small orange, sliced (skin on)

• 2 sprigs rosemary

• 1 small handful fresh sage leaves

• 500ml chicken stock

• 250ml white wine

Fennel and Citrus Salad

• 2 navel oranges

• 1 ruby grapefruit

• 1 small fennel bulb (white part only), finely sliced and fronds reserved

• 1 small radicchio, roughly chopped

• 1 long red chilli, finely sliced

• 2 Tbsp red wine vinegar

• 3 Tbsp extra virgin olive oil

Method:

1. Preheat the oven to 220°C.

2. Place the pork belly on a wire rack set over a baking tray or roasting pan and pat the skin dry. Add the fennel seeds to a mortar and pestle and create a coarse grind. Rub the fennel seeds, salt and a generous drizzle of olive oil into the skin and flesh of the pork belly and place into the oven. Roast in the hot oven for around 45 minutes or until the skin appears golden and crisp.

3. Place the fennel, onion, garlic, orange, rosemary and sage into a roasting dish. Once the pork skin is golden and crisp, carefully take it out of the oven and place it on top of the vegetables in the roasting dish. Pour in the stock and the wine and place it back into the oven.

Turn the oven down to 160°C and roast for a further 3 hours or until the pork is tender. Remove from the oven and allow to rest for 30 minutes.

4. To make the salad, peel the oranges and grapefruit and remove the segments by cutting between the membrane. Do this over a bowl to catch the juices. Squeeze any excess juice out of the fruit after removing all of the segments and reserve for use as a part of the dressing.

5. Place the citrus segments, fennel, radicchio, and chilli into a salad bowl. Dress with the reserved juice, red wine vinegar, olive oil and a pinch of salt. Garnish with fennel fronds.

6. Slice the pork into portions and serve with pan juices and the roasted pan vegetables.

World-Leading Cancer Research Facility

Marking a significant step in the future of cancer research in Australia, the ACRF International Centre for Cancer Glycomics was officially opened on the 5th of August this year. Today, we share more about what’s to come for this cutting-edge facility at Griffith University.

Bringing together state-of-the-art infrastructure combined with the best and brightest scientific talent in the field of cancer glycomics, the ACRF International Centre for Cancer Glyomics brings even more hope for Australians in the battle against cancer.

The first of its kind in the country, the Centre was officially opened by Professor Mark von Itzstein AO, Director, Institute for Glycomics, Professor Lee Smith, Deputy Vice Chancellor (Research), Griffith University, Ms Kerry Strydom, Chief Executive Officer, Australian Cancer Research Foundation, Mr Tom Dery AO, Chair, Australian Cancer Research Foundation and facility patron, Air Chief Marshal Sir Angus Houston AK AFC (Ret’d).

The official opening proceedings included a question and answer session with Chief Investigators which gave guests an overview of the exciting research that will be conducted in the facility.

Professor Mark von Itzstein AO shares with us the specific and critical research that this new Centre will enable, he explains.

“The ACRF International Centre for Cancer Glycomics will enable our Institute’s researchers to determine changes to the carbohydrate and other biological languages in a number of cancers at a single cell level.”

This kind of dedicated facility enables research to reach new heights, with von Itzstein adding: “This research will lead to major advances in the early diagnosis of significant cancers, including skin, ovarian and breast cancer as well as the discovery and development of new drugs to treat these cancers.”

In late 2021, the facility was awarded a significant $2.6 million in funding from the Australian Cancer Research Foundation (ACRF), making possible the continued study of ‘gylcomics’ specific to

their roles in cancers. As for those who will be working there? A high-powered team of glycomics experts who will partner with surgeons, radiologists, scientists, and high-risk cancer clinics to develop early markers in high-risk cohorts; advance precision medicine, including immunotherapy; and to target ovarian, prostate, colon, skin and breast cancers and sarcoma.

A major development for the Institute of Glycomics, the opening of the Centre places them at the frontline of cancer glycomics, to be recognised as a world-leading facility in the deep mining of the cancer glyco-code down to a single cell level.

For so many Australians, cancer has touched their lives or the lives of loved ones, and a key defence in the fight against cancer is knowledge. The ability to understand the cancer glyco-code will improve the lives of countless cancer sufferers around the world, and there’s no doubt that we’ll continue to see big things coming from the ACRF International Centre for Cancer Glycomics.
