I learned recently that storytellers call a new beginning an invitation. This invitation is actually part of a larger framework known as a ‘hero’s journey’; a call to adventure, sometimes embarked upon willingly, other times out of necessity. Of course, there are challenges encountered on any journey − fears, obstacles, trials, shady characters − which threaten to divert a hero from his or her path. As the story progresses and such challenges are met, a transformation takes place and the hero’s mindset is altered as life is consequently viewed in a different way. Certainly, you’ll recognise this ‘hero’s journey’ with reference to some of your favourite pieces of fiction, but as it is a new year, we’d like to invite you to embark on your own non-fiction hero’s journey, by embracing a fresh start this month. Have you had a chance to reflect on 2013 yet? I assume it wasn’t without its challenges. Did you learn from them? Did they set you off course? I think it’s important to reinforce here that it is totally alright to feel hesitant about getting out there and giving anything − a job, relationship, role, friendship, fitness − another go, or perhaps, reassessing its defining value in your life.

This obviously does open the door to doubt, confusion and feeling lost, but a new beginning, or a new adventure if you will, is also exciting, refreshing and empowering, and there’s no better time to give it a go than in January. From how to cope with change to moving on from stress and anxiety, being ruled by emotions, to the questions that utterly bamboozle in a job interview, we’ve compiled it all here, so you can get cracking on that fresh start!

Sarah Blinco meets popular personality of stage and screen, John Waters, who along with Stewart D’Arrietta returns to town this year with the unmissable Looking Through A Glass Onion tour which pays homage to the music, mystery and memory of John This production has evolved successfully since 1992 – an amazing achievement! How does it make you feel reflecting on the way the show and its subsequent popularity has unfolded? I’m very pleased to have invented a show that works. Just that, is quite an achievement in this industry. To see and to feel it work on an audience in a deeply emotional way, that is magic. What can audiences expect from the two man show (with Stewart D’Arrietta) that hits town this month? Doing the show in this, its original format, is far more demanding on Stewart and myself as performers. We like that challenge, and we proved to ourselves last year that it is the best way to really communicate with our audience. It is the way we will do the show later in the year in New York too. The show is described as being an intimate experience for audiences. How have you designed it as such? It’s about less people on stage; less focus on ‘band’ and more on the music and lyrics. They are what held people spellbound years ago, and they are the essence of Lennon’s genius. What is it about the production you think everyone – even younger audiences who didn’t grow up with Lennon and The Beatles – enjoys or engages with the most? I’m pretty sure it’s the confrontational nature of Lennon’s personality, allied to his openness and honesty. And of course our brilliant performances! What within this story do you relate to? This is the score to the movie of my life. That’s heady stuff, right there. What’s your favourite Lennon or Beatles song? How from the Imagine album. Speaker, author and founder of one of Australia’s most popular business networking groups, Melissa Groom, pauses for a chat with Sarah Blinco What were your initial aims when developing what has evolved into Empowered Mums (mumsinbusinessaustralia.com.au)? My aim is to empower women to take the necessary steps to educate themselves on how to grow a successful business, have financial independence and to build a community of supportive and like minded small business owners to share advice, our failures and successes. What are the greatest challenges working mums face in contemporary times, do you think? A lot of mums put unnecessary pressure on themselves. It is a difficult task to run a business with very small children. The key is to go at the tortoise pace rather than trying to go flat out. It takes years to grow a successful business. The children grow up so quickly so I say focus on looking after yourself and your family first and then the business. Finding a balance between juggling kids, the house and business is difficult. It’s about getting your priorities right, scheduling time in for your priorities, saying ‘no’ often and not feeling guilty about it. Mums tend to over commit. What are some of the things we most have to look forward to though? Thanks to technology some mums are working from their PC or mobile device while travelling the world! It’s allowing us to grow our networks at a rapid speed and to connect with businesses all over the globe. What is one thing you would encourage professional mums to do this year, if they’re not feeling connected or fulfilled? Get along to networking events and connect with like minded women. You also mentor mums in business; tell us about a recent client who is living their dream and who you’re most proud of? Sam Beau Patrick is one of our members who joined back in February 2012. Sam is one of our leading naturopaths in Australia and regularly appears on TV. She has just embarked on a project to help build orphanages and schools in Nepal. Sam is such an inspiration and a great role model for all

our members. Once you are successful in your business you are then able to reach out and help so many more people. What are your rituals for the beginning of a new year? I start my planning in September for the new year. It’s always good to plan ahead and know where you are going and then be able to have time off to spend with the family over the holiday season. I have a business coach that helps me set my goals and I am very focused on my vision and what I want to achieve.
What are you most looking forward to for 2014? We have network leaders starting up in Queensland, New South Wales, Tasmania and Victoria so I will be busy mentoring them to build a successful networking group, build our brand and their own businesses. From a past infused with creative talent, ex Olympic synchronised swimmer, Marina Kholod, has decided to shift her passion into the launch of her own online swimwear fashion label, Meadore. She shares her story with Riana Horner t just six years old when Marina first started swimming in Ukraine, it was clear she had a flair for originality. Encouraged by close family and training hard in gymnastics, ballet and acrobatics, it was not long before Marina became a synchronised swimming star. “My mother was the biggest influence, and I was always thankful for that,” she says. After participating in the Olympics and achieving her most ambitious swimming career goals, Marina went on to coaching and choreographing for the Australian Olympic national team and Commonwealth Games, taking them to China and London. “Being a professional athlete, you need to train ten hours a day while being a coach and choreographer needs 24/7 commitment.” Having hit what she felt was the peak of her synchronised swimming career and with the aim to create something striking in the high fashion world, Marina was inspired to take her years of experience from her professional athlete and choreographer involvement as a foundation to build her own exquisite swimwear collection. Her efforts go into ensuring the range brings confidence and sensual femininity to training women all over the world. AND Sarah Megginson discovers that beautiful sky-rise towers fringing a redeveloped beachfront, billion-dollar transport infrastructure and brand new cultural and recreational precincts are just a few of projects expected to breathe new life into the Gold Coast in 2014
here’s no denying 2013 was a challenging year for many local businesses. Construction of stage one of the $1 billion Gold Coast Rapid Transit System has impacted dozens of Surfers and Southportbased operators, with some even forced to close up shop. Local trader Hans Torv, who owns radio station 102.9 Hot Tomato and Southportbased The Courthouse Hotel, says that while the local community knew there would be “disruption” during the construction phase of the rail, “the impact on business has been heavier than anyone had anticipated”. “Customers just decided to steer clear of the construction zone completely, unless it was unavoidable,” says Hans, who is also the Deputy Chair of the Committee for Southport. “The contractors have done their best to limit the impact, but… the business community has taken on plenty of pain for what is hopefully long term good for the wider community.” Local business owner Cathy, who runs Shoetique, one of the last independent retailers still standing, is hoping the council will take action to encourage people back into the Southport CBD. “How has the past 12 months been? Every day a challenge… But I have put my head down and I’ve kept my shop fresh and beautiful with new and exclusive stock. I’ve continued to give outstanding service and friendship to all of my loyal and new happy customers,” Cathy says candidly. “Over the next 12 months I hope Southport will be beautified with flowers, trees and hanging baskets for new businesses to be re-established here. We have lost so many businesses to the light rail construction and this will entice the public back to see ‘the new Southport’.” Hans is in agreement, adding that the rejuvenation and urban renewal of January 2014
Southport will help “create an awareness and environment that highlights the great growth potential of the area.” “The trains are very quiet, which will be a relief after the constant construction noise and dust. Will the train bring more people to the CBD? I hope so, and in the long term it’s probably yes. I am sure in 20 years, people will look back and say it is a good thing that the work was done,” he says. “Council has been very supportive in the past with works like beautifying Davenport Street and doing some heavy lifting in getting Chinatown off the ground, so I’ve no doubt they will continue to do so. The Economic Development department has been very impressive over the past few years, showing vision and passion in discussions with local stakeholders.” So just what is the council planning to do, in an effort to bring people back into Southport? Mayor Tom Tate says the City of Gold Coast’s plans to revitalise Southport as the Gold Coast’s CBD prompted them to lobby the Minister for Economic Development Queensland, under the provisions of the State’s Economic Development Act 2012, for support. The Queensland Government has since declared Southport a Priority Development Area (PDA), which paves the way for a streamlined approach to planning and development of the CBD, bringing new economic, infrastructure and lifestyle opportunities to Southport. “Having a PDA means that we can really start to make things happen in Southport, support new ideas and cut red tape,” Mayor Tate says. “We want to create a vibrant and dynamic CBD that offers more jobs, better services and a great urban lifestyle. If you’re a developer or investor, we want to hear your ideas, come and talk to us.” 18
Southport (Division 6) Councillor Dawn Crichlow, Chair of the Southport PDA SubCommittee – which worked with members of the community to secure the declaration – is looking forward to helping the area reclaim its position as the city’s CBD. “Southport has historically been the city’s hub. It was one of the first coastal resort towns in South East Queensland, later becoming the administrative and commercial centre of the Gold Coast, so it makes sense to build on that role as we develop the CBD,” she says. “Everything’s now coming together for Southport. It’s a Priority Development Area, the first trams are on the tracks for testing, Chinatown is being developed and we’re getting ready to play centre stage for the Gold Coast 2018 Commonwealth Games. It’s an incredibly exciting time.”
What’s in store for 2014? A new Chinatown The council is investing $3.5 million to design and deliver a streetscape foundation in Southport’s vibrant new Gold Coast Chinatown. Once completed in mid-2014, Southport’s culturally diverse residents will celebrate their very own Chinatown, the place to enjoy the best of Asian culture and design. Located in the centre of the Southport CBD on Young and Davenport Streets, Gold Coast Chinatown will be adjacent to the light rail station, Australia Fair Shopping Centre and the GC Institute of TAFE. “The sooner Chinatown opens her myriad doors, the better for everyone,” says Hans Torv. “The traders of Southport will need to develop

a good marketing plan to promote that we are all open for business and encourage MacDow, the contractors, and GoldLinq to contribute, considering they are the only ones making any profits during construction. We will be a part of that.” Easier transport Regardless of where you work, live and play, it’s likely that you’ve been aware of – if not impacted by – construction of the new light rail. The first stage of the billion-dollar Gold Coast Rapid Transit system stretches for 13km between Griffith University Hospital and Broadbeach, and is expected to transport its first passengers by the middle of the year. Although the project has been a boon in terms of local employment, with the building phase employing thousands and ongoing jobs created in customer service, driver and controller roles, the disruption to local businesses during construction has been devastating for some.

Where Surfers Paradise was once a chaotic, dishevelled maze of random restaurants and tacky tourist shops, several years of master-planned, large-scale infrastructure, development and rejuvenation projects has created a vibrant and connected new community. Are you ruled by your emotions? Marie Louise shares insights into how you can use them rather than have them use you... Oh no!’ Your alarm didn’t go off. You’re late, and you find yourself running out the door with burnt toast, shoes in one hand while still applying your makeup with the other. You sit in the car going over the conversation you’re about to have with your boss, the stories, the list of excuses, and the number of possible responses! As you continue to whirl in the fantasy of could-be conversations, the body is making its moves, the jabs in the stomach and tension in the shoulders. This magic movie of the mind continues for the next twenty minutes in traffic. As you step out of the car, you manage to fall over on the footpath, put a hole in your stocking and decide right there, the world is out to get you. You go straight to your office and bump into your boss who asks if you are ok? Selfconsciously, you say your alarm didn’t go off, she surprisingly understands, ‘I hate it when that happens’. You shut the door, sit at your desk and start to cry. Your day continues while you spin your morning story over and over in your head. Irritated you scuffed your shoes, surprised your boss was so nice and frustrated you haven’t achieved what you were supposed to. Now you come home and the house is a mess, typical! Everyone can sense you are in ‘a mood.’ They tiptoe around, just in case you are about to blow. What starts off as a situation, moves to an irritation, then transforms to an emotion, shifts to a mood, and then ends up being your personality. Not ideal. This is the cycle of mind-to-body reactions, which happen when we allow our emotions to take over and rule us. Emotions are the gift of being human; they amplify who we are as human beings. Where we miss the beat is thinking we are our emotions. We own phrases like ‘I am sad’, ‘I am happy’, and ‘I am frustrated’. Then that becomes who we are. Emotional reactions are electrochemical energetic responses that take place when chemicals release from the brain, distribute to the body and create physical responses in many different ways, like restricted breath, laughter, anger, sadness or irritability. Emotions are like storms rolling over the ocean and if we allow them to flow on by, the storm wouldn’t last very long, but this isn’t our norm. We usually choose to have an emotion, keep spinning more of the story in our heads, in turn releasing more of the chemicals, which moves to a mood, and when our story is spun often enough it exposes our new personality. So how do we use these emotional responses to evolve our life experience? January 2014

Firstly, it’s to understand that this sequence of electrochemical energetic responses are reactions that our bodies and minds have become accustomed to, I call them our ‘rivers of response’. We will have the same physical signals and same reactive behaviors in any stressful situation. To go beyond our reactive emotional rivers, we must become present to the conversations our bodies are having with us in those moments. For example, when we first realise our alarm has failed, we can stop and feel where the contraction is in our body. Be completely present to this. This contraction is a fire of energy, which can be used as fuel to take action in ways that serve our life, rather than destroy it. Our norm is to choose the destructive option, we love to stick to what we know and our ‘rivers of response’ is what sets the benchmark for our normal. The reality is ‘you are late for work’. The entire story, which spins beyond that, is our rivers of response in full flow. Life is a lot simpler than that. With the power of CHOICE we can create and experience sensations in our body that will serve us. Choosing where we feed that emotion is when we start to create rivers that expand our life. Why wouldn’t we choose expansion? When a negative emotion hits: 1 Feel in the body where tension exists 2 Breathe into the space of tension 32
3 Give yourself a smile and ask yourself what you’re going to do with that tension? 4 Ask yourself, what are the sensations that I could choose to create? Action, peace, love. 5 Breathe 6 Turn your fire into fuel for sensations that serve you This is choosing how to use our evolved human brain. Be patient, we have spent centuries using the old model. It takes practice but it’s a practice that will transform your life experience.

RIDING THE
change wave
wise Greek philosopher once said, “Change is the only constant”.Looking at this, we can see he was right; the world is ever-changing – trees change with the seasons, trends alter day by day. But all that happens on a greater scale, and no-one really notices the change anymore; we are all simply used to it. Yet when faced with a personal change, we start to have our own little crisis, so unused to the change and unsure how to react. When faced with a big change, we often try to avoid it instead of dealing with it, somehow always presuming it will ‘fix itself’. That’s how I was. I had given up, deciding that moving to Australia was just a small phase in my life that I needed to barrel through; something that would be a blur to me when I got older. Out of all the scenarios I had in my head about moving to Australia and living here, I never once thought I could enjoy my time here. I had it set in my mind that it would be horrible; it simply wouldn’t compete with life back home. And looking back a year ago, I can safely say I was my own worst enemy. All the lectures and speeches I had received were about how this move could be good for me in the long run, that I would make friends – that I just needed to be social and make an effort. But what no-one understood – me included – was the reason I wasn’t coping was because I hadn’t accepted the move yet. Suddenly, the carpet I had brushed all my avoidance under had formed a large bump and was tripping me up. Stumbling made me realise I wasn’t this girl – the girl who kept her head down and stayed in her room all day. I needed to grow up. I finally January 2014
decided that I would start trying to accept it. Now don’t get me wrong, I wasn’t ready to start thanking the Universe for changing my life, not by a long shot. What I did realise was that maybe I could work with the Universe instead of against it. I think accepting change is really the hardest part of it all – ironically it is also the part that isn’t included in the lectures and the pep talks. You don’t just wake up the morning after a big change – whether it is a new school, new house, or a new continent in my case – and feel comfortable and happy. There will be anxiety and fear and maybe even excitement, but it won’t miraculously feel ‘normal’. I’ve learned though, you may not be able to control what curve ball life sends your way, but you can definitely control your reaction to it. Are you going to shrink into yourself or toughen up? When you accept what has been thrown in your lap, you start to realise that coping gets a little easier; your smiles become less forced and conversations enjoyable. You can either be your own worst enemy, or your own hero. Accept change; embrace it. As an author I admire, Maya Angelou, said, “If you don’t like something, change it. If you can’t change it, change your attitude.” Put away those dirty goggles of cynicism and pick up a pair of brand new and − most importantly − clean glasses. Change your outlook and maybe, just maybe, you’ll be happy again. I’ve come to think of change like a parent who insists on you doing something against your wishes but saying you’ll thank them later. If I had to pass on advice to 34
teens in my position, I’d say to drop the armour, put down your sword and start to cope, one baby step at a time. Life goes on and you can’t stay the same in a world that is ever-changing. Humans have adapted for billions of years, why stop now?

Change can be challenging at any age. Psychologists Kate Swann and Kristina Mamrot share their tips for survival • The unknown can be frightening. Prepare yourself by researching the change and becoming familiar with your new environment. • Don’t pretend you’re okay if you’re feeling worried, sad or angry. Acknowledge your feelings and share them with someone you trust. • Keep in touch with old friends and family. Make sure you’re active on Facebook and pick up the phone occasionally. • Make it your mission to immerse yourself in your new life. Join a group, get back into exercise and look around for opportunities to socialise. • Make sure you’re not isolated. Remember to make new contacts and get involved in your new life. • Remind yourself that it’s okay to feel the change is tough. New things are often difficult, but they become easier over time. • Feeling self-conscious and like you don’t fit in? That’s normal, it takes time to feel at home in a new environment. But don’t let those feelings stop you from getting out and mixing. • Instead of worrying about what you’re going to say to new people, focus instead on finding out about them. Treat new encounters like detective work where you want to find out as many things as you can about the new person. Most people love talking about their favourite topic – themselves!

She has also written for Channel Ten’s Offspring and Wonderland. Having been awarded the 2012 and 2013 Logie for Most Outstanding Children’s Series, a 2013 Australian Writers Guild award, and a prestigious Emmy nomination, Samantha’s trajectory is poised for further international acclaim. J’aimee Brooker recently sat down with Samantha to chat about her successes and goals for 2014

You’ve worked on so many fabulous projects; what’s been your favourite to date and why? Dance Academy was my baby so I’d definitely nominate that. I spent so many years with those characters that they really became my friends. I miss them now I don’t get to work with them every day but I’m proud of where they all ended up. You’re currently working on a feature film, B Model, which is to be produced by Louise Smith and directed by Rachel Griffiths; how is the project coming along? I’ve been working on this film since 2010 and am just about to start what will be the sixth draft. It’s based on a book by Miranda Darling and is about an Australian girl who is a very unlikely model who stumbles into the world of high fashion in Japan, London, Milan and Paris. You’ve inspired many tweens and teens through Dance Academy and in doing so have created a great deal of interest in ballet and contemporary dance. What’s your background in dance? I dreamed of being a ballet dancer since I first started classes on the Gold Coast. I think I was about three years old at the time. I begged my parents to let me quit school so that I could train more intensely but they bribed me with a deal that if I finished Year 12 and got a good mark they would pay for a year of full time training. We all stuck to our ends of the bargain and when I was eighteen I was January 2014

dancing about fifty hours a week when I ended up breaking a bone in my back. I had to re-calibrate what I wanted to do with my life and that led to a lot of reading and watching TV on the couch, which in a roundabout way led to me wanting to become a writer. Dance Academy airing rights have been sold to 180 territories, earned you two Logies and a prestigious Emmy nomination, and undoubtedly created you a lifelong fan base; what do you consider the biggest achievement of this program? The comments that mean the most to me are when the fans say the show has changed their life – whether it’s about giving them inspiration to work hard towards a goal or the outpouring of grief that followed when we killed one of the characters. That sounds indulgent or egotistical but it’s the most extraordinary thing about writing for young adults. It’s such a formative time and I know I will always remember the books I read at that age, or the shows and films that meant so much to me. Authors like Melina Marchetta and Tessa Duder made me feel things I’d never felt before, they literally shaped my world view, and if Dance Academy has done that even for just

I’ll also be working on my next passion project which is a political thriller.

Anxious and wish you could stop all the thoughts, ideas and worries from cluttering the mind for just a moment? Your answer is meditation. It’s not something weird, or ‘just for monks and hippies’ − it’s for everyone, and you really should consider trying it this year
Meditation actually means ‘to become familiar with’, and is a way of turning inward and nurturing our inner selves. • • • • • • • • • •

Meditation cheat sheet There are many meditation techniques, and teachers will vary according to their preference and style. I’ve given one technique below as a simple introduction I use at the beginning and end of my Yoga classes. Learning a few simple ideas for yourself at home will make a big difference to your life and ultimately meditation is a personal journey. It’s important to create a regular habit for at least ten minutes each day to still the mind. Ideally the best time to meditate (although not necessarily possible for everyone) is 5 to 7am. At this time the chi energy of the universe moves to our small intestine, and it’s the most powerful time of day to let go of ‘stuff’ from our mind and body that no longer serves us (including any stored negativity). Choose your temple: Creating a home meditation zone ‘temple’ can be fun and January 2014
rewarding for the meditation experience. Preferably surrounded by nature or a small garden as the power of nature helps you resonate more deeply with your own innate stillness, strength and peace. Perhaps use essential oils, candles, soft Yoga/meditation music, and hang inspiring meditation prints. You only need a space to sit comfortably on a firm cushion to keep your hips square with your legs crossed. At first you may sit with your back supported against a wall and as time progresses your back will torso muscles will strengthen. If crossed legs is too difficult to maintain for ten minutes, release each leg in front one at a time. Eventually you will be able to extend your sitting time. Nurture your practice: Sit tall and notice your posture as you rest your hands on your thighs and connect your thumb and forefinger to lightly touch (thumb represents universe and forefinger represents individual self). Notice the way your body feels, acknowledging any resistance and discomfort as observation without judgment. Start to bring awareness to the natural rhythm of your breath, feeling the natural rise and fall of your breath. Feel the cool air moving through nostrils, back of the throat and expanding into the chest, lifting and opening each rib. Imagine you are drinking the breath and every cell in your body is being nourished with this elixir of life. Breath is ‘Prana’ which means life force. Bringing regular attention to your breath will literally improve your life. Start to count as you breathe in and follow the line of your breath for at least four to five seconds (extending to six to seven seconds with regular practice). Hold the breath for one second and then gently press the breath out through the nostrils 42
with the mouth soft and belly drawing inwards. Try to breathe out for the same time − four to five seconds (extending to six to seven seconds with practice). After ten rounds of breathing in and out (long, slow, deep breaths) simply rest at the end of the tenth breath and again bring your awareness back to how your body feels. Scan through your whole body, extending the crown of your head upwards, relax your shoulders down, releasing shoulders blades down the back, feel the length in your neck, notice the natural curves of your spine, feel the warmth and softness in the belly, feel your hips open, arms and legs relaxed and notice the subtle vibration of energy in the palms of your hands and soles of your feet. Sit and notice any sounds, listen to sounds underneath sounds, the touch of air or sunlight on your skin, sensing the flow of energy through your body and the same flow of energy around you. With practice you may feel the seamless flow of energy between you and nature. This a powerful feeling when you match the vibrational energy of nature and take that serenity, beauty, calmness and strength into your day. If your mind wanders, this is normal. Simply bring your attention back to your body and your breath. Rest assured that your mind will be waiting for you after the meditation but it will really appreciate the rest and nurturing. See thoughts as clouds moving through the clear blue sky. Yoghurt is nutritious, delicious and can be incorporated into nourishing breakfasts, scrumptious lunches and creative dinners. The Australian Organic Certified yoghurt company, five:am (fiveam.com.au), has shared these mouth-watering recipes with us, keeping you healthy and happy into the New Year... Middle Eastern lamb
& yoghurt stuffed eggplant (SERVES 4)
INGREDIENTS • 3 medium size eggplants • 1 teaspoon salt • 500g lean free range lamb mince • 2 -3 tbsp olive oil • 2 brown onions, diced finely • 2 cloves garlic, crushed • 1/2 tsp allspice, ground • 1/2 tsp cinnamon, ground • 1/2 tsp cumin, ground • 1 tbsp fresh mint, finely chopped • 1/2 cup (120g) Greek Style yoghurt (additional to serve) • 50g pine nuts, toasted • Fresh mint leaves, to serve METHOD Pre heat oven to 180°C Slice the eggplant and scoop out the flesh, then finely dice it and set aside. Heat a pan on medium-high heat 2 -3 minutes, add olive oil and brown lamb mince well. Remove mince from pan and set aside. Add onion, garlic, diced eggplant and spices to the pan and brown well for 4 -5 minutes. Remove from heat and add to the lamb, mix well to combine. Season the mixture with salt and pepper, and stir in fresh mint, yoghurt and pine nuts. Rinse the eggplant skins and pat dry, then arrange the clean eggplant skins in a shallow baking dish and spoon in the lamb mixture. Cover eggplants with foil and bake in pre-heated oven for 40 minutes. Remove from oven and serve hot with a generous dollop of yoghurt and garnish with fresh mint leaves. January 2014

with berries and yoghurt (SERVES 4)
INGREDIENTS For the crepes • 3 free range eggs • 120g plain flour • Salt, a pinch • 375ml skim milk • Butter, for cooking For the filling • 2 cups of mixed berries (strawberries, raspberries) • 8 tbsp of organic strawberry jam • 1 cup (245g) of natural or vanilla bean yoghurt • 4 tsp of organic honey METHOD To make the crepes Sift flour and salt into a bowl. Whisk the eggs and milk, gradually pour in flour, whisking continuously until smooth. Pour the batter through a sieve, cover with cling film and place in the fridge for at least half an hour. Beat the batter with a whisk before using.Melt a little butter in frying pan over medium heat. Use paper towel to wipe the pan yet leave enough butter to allow the crepes to cook without sticking. Add a ladle of the crepe mix and swirl the pan around to spread the mix in a thin layer covering the base of the pan. When the crepe is browned on the underside use a spatula to flip it over and brown quickly on the other side. Stack crepes on a plate with a clean tea towel over the top until ready to use.
Crispy BBQ salmon, zucchini
& rocket salad with minted yoghurt (SERVES 4)
Ingredients For the salmon • 4 X 180g fillets of salmon (skin on) • 3 lemons • Small handful of freshly picked dill, roughly chopped For the zucchini salad • 2 medium sized zucchini, washed. • Small handful each of picked parsley, mint and rocket • Sea salt and freshly cracked pepper • Extra virgin olive oil • 1 lemon For the yoghurt dressing • 4 tablespoons of natural yoghurt (no sugar added) • 2 handfuls of mint, picked, washed, dried and finely chopped • Pinch of cayenne pepper
To assemble Spread jam evenly on each crepe, then fold each crepe in half and then in half again. Place folded crepes side by side on a baking tray, lined with baking paper, and place in a pre-heated moderate oven (180oC) for five minutes, until warm. Remove crepes from the oven. Spoon berries over crepes, add a dollop of yoghurt and drizzle with honey.
Method Place the salmon onto a chopping board flesh side down and use a sharp knife to make three 5mm deep incisions into the skin of each salmon fillet. Season with salt and pepper, scatter chopped dill over the whole salmon and drizzle with olive oil. Cover with cling film and allow to rest in fridge. Place the 4 tablespoons of yoghurt into a mixing bowl, add the finely chopped mint along with a pinch of salt and cayenne pepper and mix to combine. Cover with cling film and place into the fridge. Use a potato peeler to peel long strips of the zucchini into a bowl. Sprinkle some salt over the zucchini and allow to rest for two minutes. Rinse in cold water and then pat the zucchini dry. Dress with olive oil, salt, pepper and a squeeze of lemon. Cook the salmon on a pre-heated grill plate or BBQ skin side down for 2-3 minutes, use a spatula to flip the salmon and cook for a further minute. Remove and allow to rest. Arrange the salmon skin side up on four plates, drape some of the beautiful zucchini salad to the side of each fillet and finish with a big dollop of the minted yoghurt and a drizzle of extra virgin olive oil. 45

Tell us a little about Fretfest and your passion for promoting gifted musicians? I’m one of those people who fell through the cracks in the music industry because there are no rules. It’s an unregulated industry. So I decided to help create some certainty for younger musicians. That’s why I set up Fretfest. I offer a safe start for novice musicians. I provide them with a professional platform, so they can look and sound their best and I put them alongside other talented young musicians and, sometimes, we get older more experienced musicians to play as well. I don’t allow the musicians to copy other people’s songs. They have to sing their own songs. It’s about promoting original Australian music. And you’ve also developed Escalate – Take Your Band To The Next Level, assisting originals bands to score gigs; tell us about some of the exciting acts you’re working with right now? Archetypes is a fantastic young band from Brisbane and, on the Gold Coast, look out for Double Lined Minority, Here’s To Neverland and Scarlet Kill. These three bands are playing in our monthly showcase events at Helensvale Community and Cultural Centre. What’s your earliest memory of being inspired by music, and what do you enjoy doing musically? I was 14 when I was first really inspired. I went to grade 8 camp and some fellas were playing acoustic guitars. That experience HOOKED me! I had started taking an interest in music when I was a child, I messed around on the organ in my parents lounge room. My mum bought me an acoustic guitar when I was 14 and I also remember seeing a really big rock band when I was 15 and that got me vibed on rock. I bought an electric guitar when I was 16. I wanted to be Neil Young or Paul Stanley (KISS) − I could never make up my mind. But I saw David Bowie live at the end of high school and I have been going to concerts, writing songs, performing and listening to music ever since. What advice do you have for artists or performers who are struggling with the competitive nature of the entertainment industry? Communication is the key. You have to be contactable at all
hours, you have to reply to emails and messages promptly, you have to be alert and ready to take phone calls and go to meetings. You also have to say thank you. This is the gratitude business and it’s the same when you are working with your audience, from the stage. It’s a conversation and you have to allow for the ebb and flow so it feels natural. A lot of young musicians get on stage and say nothing or they say far too much and neither is appropriate. You have to strike that happy medium between being the over enthusiastic new friend and the quiet loner. Is music a big part of your family life too? Yes. We have four children and a music room at home. Even our one-year-old is banging and clanging in there. He plucks the guitar strings (randomly) and he toots on the recorder and shakes the shaker, taps on the piano keys and barks into the microphone at every chance he gets. Growing up watching daddy on stage hosting music concerts is going to have a formative effect. All the kids come to the day-time concerts in the park and we have friends who are musicians, so it becomes an inevitable part of family life and the great thing about kids is they’re not jaded. They just get up and bash away and it comes straight out! This year you’re most looking forward to... Spending time with my one-year-old son. He is so clever. It’s fascinating watching a child learn how to walk and talk and express itself and come to grips with the world. I see this in musicians too, the way they take to the stage and blossom under my instruction and, if we can just convince the authorities to keep supporting us, we will continue to unearth more and more seriously talented young musicians who audiences will be attracted to. How can musical talent connect with you regarding collaborative opportunities? I am working on a project to bring busking back to Southport and I also have a plan in place to have Escalate at The Helensvale Community Centre on a monthly basis.
