There is nothing more exquisite than when art and fashion collide – enter 22-year-old Christoph (Chris) Parsons, a stylist from the Gold Coast who has forged for himself a unique creative outlet
Where did you grow up? I grew up and was schooled on the Gold Coast but then moved to Sydney after school to study styling and creative direction. Currently you...? Right now I am a freelance stylist and foraying into other aspects of the creative/ fashion world. How did you start your emergence into art? It really began when I was doing a spring clean, and found piles upon piles of years old fashion magazines. Instead of throwing them out I decided to re-use the images and see if I could create something interesting and different. It is definitely a creative outlet and every piece is unique and thought provoking. How long does one piece usually take you? Up to an hour after the initial preparation of all the individual cut-out images. How would you describe your style? As a person, I am very individual, and I definitely think my creative works reflect that. I don’t pander to the masses, or do what is ‘congenital’ or ‘acceptable.’ I am extremely open-minded and I believe my art reflects that. August 2013
Many of my images contain the blurring of gender and/or species which some people find extremely confronting. Your pieces may be deemed as mildly controversial, is that your intention? I don’t think my art is controversial at all. I don’t have an intention to offend or cause controversy with these images. I understand that art and its meanings always come down to the eye of the beholder. To be honest, it amuses me that in 2013 these images would be thought of as ‘scandalous or controversial’. Would you say your styling influences your artwork? Definitely. I appreciate minimalism and clean lines, but I am definitely more interested in creating over the top, unconventional imagery. And that is what my art more often than not becomes. What and who inspires you? I am first and foremost influenced by avant-garde, surrealism, and ‘unconventional beauty’. I also refer to Richard Hamilton and Joseph Cornell. Two experimental ‘pop/ collage’ artists who were both geniuses in their individual capacities. Designers also play a large role in my inspiration. 12
Many create more than just tangible clothing, especially those in the haute couture spectrum of design. These creations in a sense are wearable art. Fantastical, over the top, beautiful pieces that really stir the imagination. Where can your art be purchased? I am presently developing a website for both my styling work and art, but if people would like to get in touch they can contact me via email: christovsky@msn.com What is something interesting that not many people know about you? I was adopted from Colombia, South America when I was a baby and I studied Law and International Relations for a year after graduating high school before I realised academia was definitely not for me. What’s in store for the future? I plan to move to Melbourne to further my studies in the creative world and hopefully foray into accessory design. My goal one day is to become a Creative Director of a brand overseas, and to always have my toes dipped in different ponds and to keep growing as a person.

Indigenous twist Michelle Lacey catches up with one of the Gold Coast’s budding young fashion designers, Biaga Buchanan t was her grandma’s fashion flare and glamorous take on life that ignited Biaga Buchanan’s passion for fashion. The 24-year-old grew up outside of Ipswich, however Biaga and her mother made frequent trips to her grandma’s home in Melbourne. From as young as fouryears-old Biaga can remember visiting her grandma’s house and parading around in her finest clothes and accessories. Never mind that they didn’t fit her, she felt beautiful. Her grandma was a loving and a kind woman with seven children. She travelled the world and it was her eclectic wardrobe which Biaga fell in love with. “She always told me, ‘No matter where you go – even if it’s just down the road to get some milk and groceries – you should always dress nicely because you never know who you’re going to meet’,” Biaga says. “She had a whole room dedicated to her clothes and shoes, which she picked up from her travels all over the world.” Her grandma’s name was Ponjydfljydu, pronounced Ponny Floo. She was an Indigenous dancer and performed in London, China, American and New Zealand with her husband, who played the didgeridoo. Biaga still has many strong memories of her grandma who died five years ago. “She was
a fashionista really... and one of the major reasons why I got into fashion.” Like her grandma, Biaga too has incorporated her culture and heritage into her passion. She feels an urge to make her own mark in society and introduce highfashion clothing with an Indigenous twist. She admitted there weren’t many young Aboriginal fashion designers out there. However, she took that as a positive. “I just wanted to push the boundaries and one day hopefully encourage both Indigenous and
She plans to start small but has big aims, one day aspiring to run her own fashion house and online store.“I would like to design clothes for my age bracket...(and) I would love for it to be high-fashion and inspire the younger generation. Melbourne is where the fashion hits first but Queensland is where my heart is.” She wants to show-off her cultural background and wear it with pride. Expect to see everything from chic suits to cute dresses adorned in kangaroo skin and emu feathers. Earthy tones, ranging from oaky yellows and browns to whites and blacks, are also used in her work. Not to forget striking Indigenous art included into her material and fabrics. One of her favourite designers was famous UK fashion icon Alexander McQueen, who not only made a strong brand for his designs but was once the head designer of Louis Vuitton. Biaga is studying for a Diploma of Fashion Design and Technology at the Gold Coast Institute of TAFE (GCIT). She was awarded the 2013 Joyce Summers Indigenous Scholarship, which covers her full course fees at GCIT. Although Biaga admits she still has a lot of growing and maturing in the industry, she couldn’t imagine doing anything else. Her grandma would be proud.

A lot of young Indigenous people don’t have the confidence to break into such diverse fields.” Currently, Biaga is working on a threepiece collection ahead of this year’s Gold Coast Show at the end of August. “I’m pretty sure I’m going to be crying when I see my collection down the catwalk,” she says. 16

Creating a
designer lifestyle
from scratch
Exhausted, miserable and looking for a way out, Sarah Megginson decided enough was enough, and went in search of ways to design the lifestyle she desired − but how and where do you start when pursuing big dreams? n 2006 I was working 60 hours a week in a demanding marketing job that I didn’t enjoy, for a volatile boss who I didn’t respect. ‘Something has to change’, I pledged to myself on New Years Eve – and something did. I rerewired my life and started from scratch, and today I’m living the life I always dreamed of. Back then though, I thought my dream life – getting paid to be a writer, ideally working from home – was a serious pipe dream. I always knew I wanted to be a writer. I studied journalism, Public Relations and creative writing at Griffith University, but when I graduated, I wound end up landing jobs in marketing and PR rather than journalism. And five years into my career, I was working in a thankless, demanding marketing and events role that was slowly draining my will to live. August 2013
So, I made the decision to make some changes. I wanted to crack the magazine industry and I was prepared to do whatever it took to get my foot in the door: make coffees, collect mail, even work as the editor’s assistant’s assistant. At 25 years of age, I would have accepted an unpaid internship if it meant the opportunity to make some industry contacts. I was so serious about changing my life that I quit my crappy marketing job and with no safety net of a weekly pay cheque, I applied for every magazine and journalism job in the country. Thankfully, the universe realised how massively committed I was to my new goal, and rewarded me with an amazing job just three weeks later. I was offered a role with a mid-sized publishing company in Sydney, working as a 18
journalist on a property magazine. I loved real estate; I loved writing; I loved magazines. It was a match made in publishing heaven.
Transitioning to a self-made lifestyle
For two fabulous years, I worked for the magazine and wrote dozens of features, news articles and advertorials. I got to experience the fun side of the media lifestyle that I’d always coveted – attending swanky launch parties, and getting invited to fancy five-star media lunches ¬– but, most importantly, I learnt how to work within the confines of a newsroom. I quickly learnt how to be organised; how to balance multiple stories and conflicting deadlines, and meet briefs that were influenced
by both my editor and the advertising team. And, I got paid to write for a living. In a national magazine. Life was pretty wonderful! During this time, I also gained the confidence to pitch story ideas to higherprofile, better paying magazines for freelance jobs, and I got more and more work. Before long I was writing for Cosmopolitan and Marie Claire, and I picked up some profitable business clients along the way. By Christmas 2008, I realised I almost had enough contacts and leads to develop a fulltime freelance career. Becoming a freelancer is something I strived towards my entire working life, and when I actually took the plunge, it was the scariest, most anxiety-inducing, yet exhilarating thing I’d ever done. The gamble paid off. Today, I’m back living on the Gold Coast, thanks to the flexibility and freedom that my freelance career provides. I’ve been fortunate enough to be able to create the kind of work/life balance that allows me to spend oodles of quality time with my kids, while also maintaining a great career and earning a good living. Best of all, I work part-time – three days a week while my little one is at kindy – but I earn a full-time income. My work these days is split between magazine writing and editing, and working with private clients on projects including books, reports, newsletter articles and eBooks. I contribute to varied projects and get to meet and work with lots of interesting, inspiring people, including Lorna Jane Clarkson and Mia Freedman. I also recently realised another life-long dream when I released my first book, How to make money by working from home: The step-by-step guide to successful freelancing. It’s basically a how-to guide to help other people create the same lifestyle I’m lucky enough to have. I don’t get bogged down in office politics or unnecessary staff meetings. No two days are ever the same. And I love answering my phone, because I never know who the caller may be – like a referral for a $3,000 job that I wasn’t expecting, or the go-ahead for a story I pitched a week earlier. The freelance life suits me down to the ground and I’m often surprised that more people aren’t doing it. I know that it’s not for everyone,but for people who have transferrable, marketable skills, freelancing offers a fabulous, flexible opportunity to generate a solid income.
A daily dose of inspiration
One of the major perks of my job is the fact that I don’t work for just one client, or in just one industry – my workload is varied and diverse and changes on a weekly basis. On any given day, I might be chatting with a property coach for a finance book, interviewing a psychologist for a magazine feature, or liaising with a styling expert for an online fashion article. The biggest upshot to this is that I am constantly motivated and inspired by the people I work with. Without even realising it,

they challenge me to look at things differently, reassess my approach towards different areas of my life, and reach for bigger and better goals. About six months ago, for instance, I interviewed a mortgage broker, Michael, in the United States. He is achieving all sorts of amazing things with his business, but that’s not the part of his story that piqued my interest; it was his personal life I was interested in. We got chatting about our kids and our lives throughout the interview, as you do, and he mentioned that he takes 12 holidays a year. Come again?! As he explained, he owns his business and has a great team to take care of things while he’s away. So, he’s structured his lifestyle in a way that allows him and his family to spend the first week of every month on vacation. Whether it’s a week skiing in Canada, an island getaway, a trip to Europe, or a visit to Disneyland… wherever they want to go and whatever they want to do, they make the time to get away and spend time together as a family every single month! I ended that phone call feeling beyond inspired! I dashed out of my office to tell my husband all about Michael and his monthly holiday set-up, yelling e xc i t e d l y, “That’s the h o l i d a y lifestyle we should aim for!” Of course, not everyone ide to y-step gu has the type of The step-b freelancing l u successf career or lifestyle Megginson By Sarah that suits a monthly getaway: as well as work, we all have family commitments, social lives, hobbies
and responsibilities. And financially, affording a week-long vacay every month is out of reach for most of us. But I looked at what Michael was doing, and tweaked it to fit with what my family can realistically achieve. With two small children and my husband working five days a week, we won’t be jetting off on exotic holidays to Thailand, London or Africa every other month. However, we can realistically plan to spend one weekend away every four to six weeks, exploring fun and interesting holiday hotspots in our local area. Already, we’ve spent weekends getting to know Brisbane, the Sunshine Coast, Port Macquarie and the Tweed Valley. We even checked into the Hilton one weekend, to experience Surfers Paradise like a tourist. Next we plan to explore further afield, with visits to Port Macquarie, Coffs Harbour, the Whitsundays and Sydney on the agenda. And who knows? Maybe one day, we’ll be in a position to upgrade to monthly flights to faraway, exotic locations… Right now it seems like nothing more than a pipedream, but I know from experience that those are the only dreams worth pursuing!

Jane Meredith, co-founder of one of the nation’s favourite jewellery retailers − and a popular business born in Queensland − Secrets Shhh, shares some entrepreneurial insight How did you originally get into the jewellery business? I went from donuts to diamonds! I had sold my Donut King franchise in Sydney and was staying with a friend on the Gold Coast. During this time I was offered a job as a sales person at Calleija Jewellers at Sanctuary Cove. My friend was a mutual friend of John Calleija and that’s where my journey began and what a wonderful beginning it was. What inspired you to create a business such as Secrets Shhh? Secrets evolved because we wanted to give women from all walks of life the opportunity to wear beautiful designer jewellery. Coming from the high end jewellery industry I was very aware that only 9 per cent of women in the world could afford to buy stunning designs set with traditional diamonds. Secrets has been operating for over 13 years, what do you believe your secret to success is? It is Richard Branson’s wise words of inspiration that ‘creating something you believe in and doing something differently’ and ‘look at the problem and think outside the square’
sparkling secrets that drove me to continue and make Secrets a success. Also learning to enjoy the journey and be happy within the moment. How would you describe the ‘Secrets customer’; what are they usually looking for? People have definitely reassessed thinking and spending patterns – and when it comes to jewellery, many women now make a conscious decision because they have a wonderful alternative available and, at the end of the day, Secrets offers jewellery that allows choice. What item of jewellery can you never have enough of? I love the classic round brilliant cut. The brilliant cut in particular contains the most facets so reflects the most light (has the most sparkle) out of all the cuts available within the diamond industry, so I do own a few classic ring designs, earrings and tennis bracelets from Secrets which I wear and enjoy on a daily basis. However if I could choose one set it would be my classic round brilliant cut stud earrings, pendant, three stone ring and tennis bracelet. I do own these designs in yellow gold, however white gold and rose gold are also available and very tempting. TOUGH MUDDER Sarah Blinco meets some of the fittest, most adventurous Gold Coasters − ever! ecently we were alerted to a group of fine, fit folk who are embarking on an overwhelming mission to the Sunshine Coast later this month to compete in Tough Mudder (toughmudder.com.au), dubbed as being ‘the toughest event on the planet’. They don’t profess to possess Superman’s superpowers, but rather, are just your everyday residents, many of whom have overcome significant obesity and confidence obstacles. The crew from Vision Personal Training in Bundall, including Noni Jenkins (team leader), Tina Lynton, and Vision Bundall owner, Jeff Osborne, are set to test their limits in strength, stamina and mental grit as they navigate a hardcore 20km-long obstacle course, designed by British Special Forces.Blimey! The competition is held internationally and has attracted over 1,000,000 participants to date. Apparently only 78 per cent of candidates successfully complete each challenge, but Noni tells me the important thing is to get started training and give it a go. “When I first saw the Tough Mudder video I thought, how many people can I get involved in this? I started getting people interested and August 2013
Would you survive? the question kept arising on how to train for this kind of crazy event. I researched the obstacles and developed training plans around them, like running up Mt Tomewin, and 6am ocean swims in winter. The most exciting and nerve-wracking thing about Tough Mudder is that it’s so far out of everyone’s comfort zone; like entering unknown territory − anything can happen.” Team member, Tina, says she’s ready for this next big challenge.“I’ve wanted to do something like this for the last couple of years but wasn’t in a great space for it after giving birth... I started training at Vision, where we gradually gathered interest that turned into a training squad. We’re now on our way to Tough Mudder! I’ve found it’s about working as a team to get through it. We’re all different shapes, sizes and occupations, but we’ve become friends and encourage each other. Camaraderie is important and it helps you realise you can achieve goals. I had set myself a goal last July to do the half marathon and I did it here a year later. I’ve completed that, it’s now onto my next goal. It’s going to be challenging, but I’ve learned it really is all about mind over matter.” As the manager of Vision, Jeff’s seen many of the team through the toughest days of their 30
weight loss journey. “Here we are really good at helping people lose weight, keep it off, and change lifestyles for the better. Some of these people have reached impressive goals − 20kg, 30kg and 40kg weight loss! Once people reach these kinds of milestones we encourage them to go a little further. For them, something like Tough Mudder is a new challenge and it’s cool to see people take it on. We’ve worked with these people from when they first walked into the studio in a state they didn’t want to be in. It’s actually a bit emotional seeing how far people like Tina have come and how much they’ve changed, and I’m looking forward to seeing them do really well.”

GIRLS’ WEEKEND: ’d not been to Sydney for years, but as one of my best friends has relocated, I thought it might be about time I re-visited. Sydney is one of those great, vast cities, with literally something new to discover every day of a lifetime, therefore it can be difficult to decide on an itinerary. To narrow the options, we opted for a ‘girls weekend’ approach (centred around Potts Point and the city), which meant sightseeing was not necessarily a priority; shopping, relaxing, cocktails and dancing though, were critical. Here’s a rundown on our discoveries... eye candy Rushcutters Bay Park is a sprawling oasis in the middle of an otherwise large and chaotic metropolis. Located between the prestigious Darling Point and Elizabeth Bay postcodes, here you can lay about under the sun, wander along the waterfront and go hunting for celebrity homes, train utilising the convenient outdoor gym equipment, spot cute dogs... and cute guys! Yep, according to my sources, if you’re seeking eye candy of the fit, jogging, sexy variety, this is the place to be. Thank me later. If you’re in need of food or a caffeine hit after such strenuous activity, try the delightful Bay 88 on Bayswater Road (bay88.com.au) for allegedly the best coffee in the area. old school Keen for cocktails with a little culture on the side? Sydney boasts not one but two such landmarks, and there’s no better way to achieve those excited little tummy butterflies than viewing something so beautiful from above. If you’re seeking an extravagant (yet, 32
once-in-a-lifetime) adventure, consider Sydney by seaplane (sydneybyseaplane.com ), costing around $360 per person. You’ll depart Rose Bay, soar across Bondi, the Harbour and all of Sydney’s scenic glory, and 20-minutes later land at beautiful Palm Beach (aka ‘Summer Bay’), for lunch in your choice of one of the region’s finest establishments. retail therapy Let’s face it, Sydney is a shopper’s paradise that includes everything from suburban streets lined with luxe boutiques, to super centres like Westfield, and traditional markets such as 150-year-old Paddy’s (paddysmarkets.com. au). As the city was within easy reach of our accommodation (Mercure Potts Point), we ventured into David Jones (opposite Hyde Park) to explore all five levels, and stop for lunch and wine tasting at the aptly named The Wine Bar (within the complex’s expansive basement Food Hall). The relatively new Westfield Sydney is next door too, and offers all the usual Capcity favourites like Zara, Hugo Boss, Swarovski, Armani Exchange and Guess. Just a block up the road is the Queen Victoria Building (qvb.com.au) which is worthwhile seeking out, not only for its hundreds of gorgeous stores, but because

the building itself is glorious, first opened in 1898, and featuring elaborate Romanesque architecture. If you’re interested in historical structures, a guided tour is on offer here for $15. Or, if you’re in need of respite, perhaps a Champagne Afternoon Tea is more your style?
If so, drop into The Tea Room (thetearoom. com.au); prices start at $44 per person. rest + relaxation We chose to stay at Mercure Potts Point (mercuresydneypottspoint.com.au) because of its central location to the city and vibrant nightlife. It’s easy to get in and out of the city on the 311 bus route; alternatively everything on our wish-list was under a $15 cab fare away. The hotel is situated one-minute walk from Kings Cross station, so accessible by train from the airport (simply change at Central). A variety of rooms are available at the Mercure, so perfect for a girls weekend, solo visit or breakaway with that someone special.We were lucky enough to score a Harbour-side position and were ecstatic to discover a magnificent view from our spacious room across the city to the Bridge and Opera House. The hotel is chic and comfortable, with bar, restaurant, internet and numerous other convenience amenities. Staff are friendly and room-service menu delicious! I particularly liked the large, comfortable lobby just off street level − a perfect meeting spot for greeting friends prior to a night out. Outside − within walking distance or a short

taxi ride − you’re not only spoilt for choice with a variety of cafes, clubs, bars and restaurants, but supermarkets, pharmacies and boutiques too, meaning everything you may need is on hand. There’s even a fascinating walking tour of The Golden Mile you can sign-up for from here, that takes you through the area’s colourful history brimming with mobsters, murders and mysteries, and delves into the stories of the notorious Tilly Devine and Kate Leigh, showcased in channel Nine’s Underbelly: Razor. when to go... BIG KEV IS BACK! Kevin Rudd, at Draculas, that is... hayne Grinke, head of Newman Entertainment’s props department received this text message recently … “Don’t demolish Kev, we’re back in business.” The SMS was referring to a giant sculpture of Kevin Rudd’s face that forms the entrance to a bizarre indoor attraction in Surfers Paradise called the Digestion Experience. Situated on level three of Dracula’s Haunted House, the Big Kev experience invites visitors to crawl through Kevin Rudd’s mouth, slide down the tongue and begin a dizzying journey through the inside of the Prime Minister’s body. The journey through the foam latex construction, includes walking through Kev’s lung cavity, being squeezed down the oesophagus, through the stomach and finally taking a stooped crawl through the intestines. The exit is selfexplanatory. “People just love it,” says attraction manager Lisa Kirk. “Particularly the kids. August 2013
Mind you, this section of the attraction has been out of sync with the political landscape since Kev was ousted, in fact we were planning on replacing the caricature entrance. All of a sudden we’re back in flavour - at least for a few more months.” Shayne Grinke who sculpted the big face of Kevin Rudd chose not to replace it with a Julia Gillard caricature. Lisa explains. “Somehow it didn’t seem appropriate to be crawling down the exPrime Minister Julia’s throat. There are some sensitivities that simply have to be respected. As for Kev, well he seems like fair game, after all, it’s just a fun tribute to a well-known effigy. Who knows, the Haunted House might have to hedge its bets and start designing a big Tony, just in case.” Since the digestion installment was added three years ago, over one hundred thousand people have been swallowed! Pencil Paper Star preschool is a five level programme that assists and enhances a child’s cognitive, language, physical, social and emotional development. Each ‘star block’ presents relative tasks such as identifying colours and patterns at level one to handwriting skills at level five. The inspiration for Pencil Paper Star preschool was spurred from personal experience. Maria moved from Sydney to Queensland about four and a half years ago with her three children. At the time, Maria’s fouryear-old daughter, Chanel, became enthralled with the educational activities undertaken by her older siblings. It was an interest that Maria couldn’t easily ignore. She created a programme for Chanel alone that was both stimulating and appropriately educational. “I drew on my extensive time and experience in the Childcare Early Education industry to help me write and design the programme. I knew I wanted to create something that allows children to participate in educational activities in a fun and creative way. Also important was the confidence and self esteem a child gains whilst developing a basic skill set in a supportive non-structured environment.” It’s this flexibility of adapting the programme to work at home that parents appreciate. But, realistically, not every parent has the time available to make this programme work, which is why Maria now offers two Pencil Paper Star preschool centres on the Gold Coast, in Coomera and Ormeau. The school readiness 38
classes, taught by Maria herself, began in June. While she’s starting with two, Maria confesses the future could take her and the program anywhere. “I’ll look to venture out to different locations as demand for the classes increases.” Education is once again a hot topic for parents and commentators. The Labor Government’s GONSKI reforms are positioning the examination spotlight firmly over Australia’s current model for early schooling. But whether it’s a political agenda you agree with or not, the principle motive is hard to ignore – education is not an area to drop the ball. According to Maria there’s a gap in the current market that stems from differences in curriculum from state to state. “Queensland children are at a disadvantage to those in New South Wales and Victoria where the curriculum has progressed.” Pencil Paper School preschool looks to even out the playing field and ensure Queensland kids have as much of a head start as anyone else. “I’m a single mother of three children and all have benefited from my early Childhood Education practices at home. It’s allowed them to grow into confident and enthusiastic learners. My ultimate goal is to see Pencil Paper Star expand internationally as an essential part of every child’s early education.” Australia’s conversation on education is ongoing. 800g potatoes, scrubbed and cut into 2cm chunks 4 tbsp olive oil 1 large red onion, halved and cut into 1cm wedges 200g chorizo sausage, peeled, halved and cut into chunks 2 tsp thyme leaves salt and ground black pepper 2 tbsp parsley or coriander leaves 1 tsp finely chopped red chilli (optional)
METHOD Bring potatoes to a boil in a pot of salted water, boil 5 minutes, then drain thoroughly. While they cook, heat 2 tbsp of the oil in a large frypan and cook onion over medium heat until softened (about 5 minutes). Add chorizo and cook a further 5 minutes, stirring now and then to prevent sticking. Lift out of pan and put to one side. Add remaining 2 tbsp oil, thyme and well-drained potatoes and cook over a medium-high heat, turning now and then, until slightly crispy (about another 10 minutes). Add the onion and chorizo mixture back to the pan and cook another minute or two. Season to taste with salt and ground black pepper and sprinkle with parsley or coriander leaves and chilli, if using.

INGREDIENTS • 3 tbsp olive oil • 1 large onion, finely diced • 1 clove garlic, crushed • 1½ cups risotto rice • ½ cup white wine • salt and ground black pepper • 25-30 saffron threads • 5-6 cups hot chicken or vegetable stock • 4 handfuls baby spinach • 1 cup grated parmesan • 1-2 tbsp butter

INGREDIENTS • 12 poached or canned peach halves (or any other stone fruit) • 3 tbsp butter • ½ cup sugar • ¼ cup brandy To serve (optional) • yoghurt or crème fraîche • sliced almonds
METHOD Heat oil in a deep, heavy-based saucepan and gently fry onion and garlic until soft but not browned (about 5 minutes). Add rice and stir over heat for 2 minutes to lightly toast. Add wine, salt and pepper and cook a further 2 minutes, or until liquid is absorbed. Add saffron threads to 5 cups hot stock, then add to rice mixture. Stir to combine, cover and simmer over a very low heat until almost cooked (about 15 minutes). At this point, test the rice – it should have a tiny, hard, white core in the centre of each grain, which means it is nearly ready. If the core is bigger, cook another few minutes. It needs to be almost cooked before you add the final ingredients. If the rice begins to dry out, add another ½-1 cup of hot stock or water – it should look very soupy. Stir in the spinach, parmesan and butter, cover and cook another 2-3 minutes until the rice is fully cooked through but still al dente (it will continue to cook once removed from the heat, so take care not to overcook it). Remove from heat and allow to stand for 2-3 minutes.
METHOD Drain syrup from peach halves and reserve. Heat butter in a large frypan until it turns nut-brown. Add sugar and, when sizzling and caramelised, add peaches and about ¼ cup reserved syrup. Shake over heat until liquid comes to a boil. Add brandy and flambée. Serve with yoghurt or crème fraîche and sliced almonds, if desired.
INGREDIENTS • 1 large smoked ham or bacon hock • 2 bay leaves • 3 cups dried split green peas, rinsed and checked for stones • salt and ground black pepper METHOD Place ham or bacon hock in a large pot with bay leaves and 14 cups (2½ litres) water. Bring to the boil, skimming off and discarding any scum that rises to the surface. Cover and simmer for 2 hours. While the meat cooks, place the split peas in a separate pot, cover with 6 cups water and bring to the boil. Reduce heat to a simmer and cook, uncovered, until the water has almost evaporated (about 40-45 minutes). Lift ham or bacon hock out of cooking liquid, discard the skin, fat and bones and finely dice the meat. Return meat to the pot containing the cooking liquid and add the partly cooked peas, salt and pepper. Simmer gently until peas are fully broken down (about another 40 minutes).

This ‘spirit’ is embodied by students and staff alike, and can be sensed the first time one enters the College grounds. It is clear that College Headmaster Jamie Dorrington is a visionary man. His focus is on building a school that prepares students for the 21st century challenges that they will be faced with when they graduate from his watch and venture out into the world as young adults. To accomplish this vision, Jamie keeps one eye looking ten years into the future; yet, his feet are firmly planted in the here-and-now and his sleeves are rolled up at the ready to do what’s required to guide his staff and students to where he feels they need to be. One of Jamie’s personal missions is to inspire his students to live their lives as responsible local and global citizens. Local students study side-by-side with the College’s thriving community of international students, and the College has sister school relationships with schools in Japan, Ethiopia and the United States of America. Over recent years, the grounds, facilities and technology at Saint Stephen’s College have undergone some impressive developments. school and some local universities. There is no musty barely-used school library here. Instead, there is a state-ofthe art ‘iCentre’ that blends the traditional library format with modern and interactive modes of research, collaboration and learning. The iCentre provides the entire College community with printed books and resources, digitally interactive collaborative learning spaces and purpose-built meeting rooms. It also serves up 24/7 access to digital resources like e-books and audiobooks via a secure, dedicated online portal. If you’ve ever wanted to learn a foreign language and were just a bit unsure about taking the big leap, Saint Stephen’s College has made that first step easy. The College’s newly created awardwinning Language Centre has opened its cultural doors to students, parents and the broader community eager to take on new linguistic challenges. Courses on offer from the end of July include French, Japanese, Chinese and Spanish. Head of Foreign Languages, Mrs Danielle Goucher, said foreign language study in Australia was often limited to high school and university students. “Adults are a bit reticent to take the first step, particularly those who may not have had the option to learn a foreign language at school. We wanted to change that, which is why we decided to offer people outside the school environment the opportunity to learn a little about another part of the globe,” said Mrs Goucher. “The centre’s hi-tech facilities are 44
complemented by our fabulous teachers providing excellent tuition in a comfortable, easy to learn in environment. It’s a dynamic and fun way to learn and it really does open up the world to the community,” she said. The College has also partnered with local businesses in offering tailored language programmes. Divisional Human Resources Manager, Tony Lines said the Chinese Business classes had provided an exceptional professional development opportunity for the Village Roadshow Theme Park team. “The classes have allowed the participants to enhance their communication skills with our Mandarin speaking guests, enabling us to offer them a more personalised service. They are appreciative of the fact that our team members are making the effort to speak to them in their language. We would certainly consider sending additional participants next year if the programme is offered again,” he said. Courses will run during the second semester, 2013. 1 Is he a dog person? Is he a cat person? No, but he used to have a pet parrot − perhaps he’s always been into the whole flying thing? 2 He enjoys the TV shows Scrubs, Dexter and Battlestar Galactica ... you know, in case you’re after something you have in common with him. But, if you want to check him out on the small screen, do yourself a favour and buy all four seasons of The Tudors. 3 Twilight author, Stephanie Meyer, always maintained to the film series’ producers that she had only ever imagined that Henry would pull off playing Edward Cullen. I guess she was almost right, the role did eventually go to a fellow Englishman (Robert Pattinson). 4 He’d be a handy (and handsome) travel buddy − he’s fluent in English, French, Spanish and Italian.
5 Russell Crowe (who co-stars in Man of Steel) might be partly the reason Henry went on to pursue an acting career. Henry was a 16-year-old pupil at the Stowe School (South East England), and had been cast as an extra while Russell filmed a scene for Proof Of Life at the school. He managed to score a few moments with Russell at one point, and asked him what it was like to be an actor because he was interested in the same path. Evidently, Russell was friendly, and encouraged him to “commit”.
