On a peaceful, fall evening at the SMART ranch, Gail Clifton stood steady as a post, holding a horse’s head as they both faced a beautiful sunset. Neither the horse, named Logan, nor Clifton moved for several minutes as SMART riding instructor Samantha Toomey painstakingly made sure client Kelly Miller felt safe before she mounted a horse for the very first time. For those unfamiliar with the local nonprofit organization, SMART stands for Sarasota Manatee Association for Riding Therapy, an organization that allows those with physical and mental challenges to ride to their ability and learn to care for horses. That interaction has produced some important benefits, such as an increase in strength and stam-

Biking for a cause Students at All God’s Children Preschool were on the move Nov. 13. Riding tricycles, scooters and bikes with training wheels, they lapped the school’s parking lot in search of a grand prize. That prize ended up being $1,700 that was donated to St. Jude Children’s Research Hospital. Parents, family and friends donated money as the children raced toward the finish line of the fifth annual Trike-a-thon. “We had so much support from our wonderful families,” said Erin Bonifate, assistant director of All God’s Children.

Growing interest The University Park Women’s Club’s garden enthusiasts went on a Nov. 5 trip to Sunken Gardens in St. Petersburg. Kathy Bondur, a master gardener and club member, organized the trip. They learned more than the basics of planting. They received a history lesson covering the garden’s changes over the last century. Member Karen Curlin said Sunken Gardens dates back to 1903 when a plumber, George Turner, started transforming the property from a sinkhole to a flourishing tropical paradise. “Gardeners explored cascading waterfalls, birds and butterflies and more than 500 species of tropical and sub-tropical plants,” Curin said.

AT A GLANCE: NEAL COMMUNITIES Founders: Pat Neal, left, and his father, Paul Neal Jr. Year founded: 1970 2014 revenues: $276.6 million Employees: 192 Homes: More than 10,000 built on the west coast of Florida.

BUILDER NOTCHES

MAJOR AWARD Pat Neal, who has built homes in Manatee County going back four decades, earns national recognition. MARK GORDON OBSERVER STAFF

P

AT NEAL doesn’t merely rely on analytics and demographics when his prolific homebuilding firm looks into a potential project. Sometimes he even checks the garbage. Neal and another representative from Lakewood Ranch-based Neal Communities recently did that for a project in Venice. They looked for discarded old toys, diapers and other signs of kids living in the area to show the community was family-friendly.

Such a garbage patrol is one of many reasons why Neal Communities is successful. The company, which builds homes in more than 30 communities on the west coast of Florida, including at least four current developments in east Manatee County, had $276.6 million in revenues last year. Neal has won multiple industry and area community awards going back decades. He’s also been Entrepreneur of the Year in the Business Observer, sister paper of the East County Observer, three times. Now Neal has one more award. The company was named 2015 Builder of the Year in Professional Builder magazine, a monthly trade publication that reaches at least 120,000 homebuilders nationwide. Recent past winners include Nashville area homebuilder Goodall Homes, with

$100 million in annual sales; Houston-based David Weekly Homes, with more than $1 billion in sales and nearly 3,000 home closings in 2013; and national homebuilding giant Toll Brothers, with $1.47 billion in annual sales. “This is the pinnacle award for builders in the United States,” Neal said. “There is no bigger award than this. This is a story about the commitment and skill and perseverance of the people who work here.” Professional Builder magazine editors interviewed at least a dozen Neal Communities executives in November to get a deep understanding of the firm’s process and culture. In an interview with the Observer, Neal talked about what he believes is the firm’s keys to success, and what led to the award. His six keys are featured here:

NO. 1: QUALITY

NO. 2: LOCATION

NO. 3: LAND

FIT AND FINISH are key components of a good home, said Neal. Quality also includes building specifically in the Sunshine State. “Our homes are designed for Florida,” Neal said. “Not only to be light and airy, but to withstand our humidity, energy conservation requirements and climate.” Neal said the value of the home has to extend to customer service. The company has been particular about building well, and fixing what’s wrong.

NEAL ONLY BUYS in A and B locations, and he said he avoids buying land where there are “distressed neighbors,” such as bad schools. An A or B location also refers to things such as being away from a highway or having convenient access to a grocery store.

NO. 4: HIRING

NO. 5: PRIDE

NO. 6: BRAND

NEAL AND HIS EXECUTIVES abide by a hire slow, fire fast philosophy. In Neal’s case, he aims to hire so well, he never has to fire. The firm’s hiring process is wrapped around what Neal calls an endurance test that includes up to six in-person interviews. There’s also an aptitude test and a Myers Briggs personality test.

NEAL WANTS TO HOLD his head high when he’s in the community. “My team knows I never want to see my customer at Publix and have to go hide behind the Corn Flakes to avoid embarrassment — and I never do,” Neal said. “That means I should be able to look at any customer straight in the eye and be proud of the company, the community we built and the finished product for our buyer.”

NEAL COMMUNITIES EMPLOYEES live by the company’s 30-second rule, in that customers should quickly know they’re in a Neal Communities development. Said Neal: “When a person drives into our community, they should see the emphasis on landscaping, attention to detail, conscientious maintenance, visual quality of the homes, the effect of the land plan and a better, more innovative community than our competitors.”

A CLOSE COUSIN OF LOCATION is the firm’s land acquisition strategy. Neal, along with his son John Neal, are known in the region for shrewd land deals. It starts with buying land, said Neal, before the firm needs it. The company purchases enough land to handle its development needs for a 10-year period, based on current sales pace. Neal, who said his favorite part of being a homebuilder is going through the entitlement and zoning process, aims to buy early in an economic cycle. Another integral part of the land strategy is the firm treats those deals separately. Neal often says “every bag sits on its own bottom,” meaning the land division of the company has to be profitable, separate from the overall business. Same goes for the mortgage unit, title, golf courses and other holdings.

“This is the pinnacle award for builders in the United States. This is a story about the commitment and skill and perseverance of the people who work here.” Pat Neal, — Neal Communities

GreyHawk Landing CDD supervisors are looking for individuals who vandalized the community pool. AMANDA SEBASTIANO STAFF WRITER

A prank has led to an investigation at GreyHawk Landing. On Oct. 31, video surveillance recorded eight individuals who defecated in the community’s pool late at night. It cost the community $300 to have the pool cleaned, and community development district supervisors aren’t laughing. They are reaching out to the community to help identify the people who were recorded running from the scene. They said the people appear to be 18 to 21 years old. “It’s hard to see their faces, because they’re running and that makes the video blurry,” District Manager Greg Cox said. “These people obviously have no respect for their community,” CDD Chairman Ollie Kyte said. “Maybe they were drunk or something, but that’s disgusting.” If the vandals are caught, they will appear before the CDD board. Supervisors brainstormed other ideas for pool security. “Maybe we can get some motion detector lights,” Kyte said. “People who are up to no good don’t want to be lit up. And it will help us see them on the video.”

The culprits were caught on camera, and the CDD is asking for help identifying them.

Anyone with information can contact Cox by phone at 813-9335571 or by email at gcox@rizzetta. com. In other news, the CDD approved changing its no-parking, overnight policy. Now, individuals who are parked on the street between 3 and 5:30 a.m., will be ticketed at the car owner’s expense. Signs posted throughout the community say no overnight parking, but which timeframe constitutes as “overnight” has been vague and not enforced. “The issue has gotten worse recently,” supervisor Jeffrey Evans said. “This timeframe will help make sure everyone gets home first, and then we can zero in on chronic offenders rather than those who make a mistake.”

Board questions purchasing power ABOUT ANA OWEN

tional efficiency,” said Alan Silverglat, board secretary. “We spent a lot of money to hire a management team, so we have to let them manage.” Executive Director Anne Ross suggested that Owen should work with the departments to create a purchasing manual. The board could also set a cap so larger purchases had to pass through the board. The members also discussed pinning down some kind of policy for emergency expenses, so departments could address

immediate needs. “I don’t think the board is trying to be micromanaging, just operating as efficiently as possible,” Ross said. The board decided to table any decisions until the next meeting, during which time it asked departments to review monthly needs. Owen will work with the departments on the manual. She has set up additional goals for her new role at Town Hall. She’s developing a database for all the contracts she handles.

There ought to be steps that she needs to go through before she puts on that signature.” The IDA originally had talked about allowing Paul Chetlain, director of operations, to make routine purchases in a timely manner without having to wait until the board’s monthly meeting for approval. When she started her job as the Lakewood Ranch Town Hall purchasing manager in October, Ana Owen was ready to perform the tasks associated with her position. Those tasks, such as making purchases of equipment and services, might be subject to change. The Inter-District Authority is not sure how much authority to grant to the purchasing manager. Owen was hired to streamline the process of making purchases for departments in Town Hall. She said that a government or private business benefits from a purchasing manager who has a full understanding of the rules. Then things can get done quickly and efficiently. But during the IDA’s agenda review meeting Nov. 17, the question arose of how much she could spend without seeking the approval of the board. Operations had requested approval for the purchase of a $30,000 truck. The board began to discuss whether Owen could have made such a purchase without requesting approval. “Thirty thousand is quite a bit

Daft helps Dowling about 30 minutes each day. “All three of the P.E. teachers here have a few helpers in the morning,” Dowling said. “They take pride in what they do. They come see me every morning, and they know what they’re doing. They say, ‘Oh, we got this.’ The work is good for them. It teaches them responsibility.” The school wants students to donate 10 hours each quarter. Assistant Principal Beth Marshall said students who meet that goal are rewarded with a field trip at the end of the quarter. Brianne Alexander and other fifth-grade teachers came up with the idea to promote leadership and give students a sense of responsibility. She said the program develops role models.

“Younger students look up to the fifth-graders,” Alexander said. School faculty members hope students are learning “big picture concepts” that can help them become contributors to their community. “Community service teaches students skills they will use after they leave here, and also later in life,” Marshall said. “We always talk to them about community service. This is their community and they’re helping here.” For students Matthew Francailla, Gabriel and Nathan Alpert and Angelo Campanale, service hours mean they learn how to focus on the planet and environmental health. Five mornings a week, the Recycle Club members collect items from teachers’ bins to be recycled. Nathan Alpert said only a few teachers had recycle bins when they started, but now almost every teacher on campus recycles. “We’re making the school a better place, a cleaner place,” Francailla said. “And it’s fun.” Alpert and his twin brother, Gabriel, appreciate the goals they are trying to accomplish. “No pain, no gain,” Alpert said.

As darkness fell along County Road 675 and the ranch’s 23 acres, Clifton wasn’t about to sing the organization’s praises. She had her hands full being still. It takes time and incredible patience to produce the atmosphere necessary to work miracles. Clifton was a former executive director of the organization and a volunteer for 18 years, when she had the “former” removed last July. When a previous hire as executive director didn’t work out, Clifton was drawn back into executive director duty. Now she has the patience, but not the time to do what has become most rewarding to her ... helping the clients. “You’ve got to love Miss Gail,” said SMART Administrative Assistant Brandi Ezell of Clifton. “If it is safe and possible, she is going to make it happen. Her heart is in the barn with the students. When she has to be the executive director, it takes away from all this.” With Toomey setting the tone with her soft voice and calm demeanor, a group of volunteers, including Clifton, gave the clients the personal attention they needed. That adds up to countless hours of attention. Back to that time thing again. Clifton knows that being the organization’s executive director is a tremendous task. Like any nonprofit, its service is a direct product of its funding. SMART has to work hard to secure that funding. Last week, SMART received a $5,000 grant from Autism License Plate Proceeds to support children with autism who participate in the organization’s therapeutic riding program. With only 12 Florida nonprofit organizations benefitting from the Autism Services Grants Council fund of $57,050, Clifton points out that a certain trust in SMART’s work has been built over time. That money will lead to 200 therapeutic riding sessions for 20 children diagnosed with autism spectrum disorder. Autism is only one of the challenges that SMART’s clients face. So the program has to be aggressive in finding grants. “For us, there is no such thing as a small grant,” Clifton said. “Sixty percent of the people in our program are on a full scholarship. We’re always looking for the next $5,000 grant.” The nature of SMART’s work, however, might have caused a bit of a misunderstanding when people started to apply for the executive director’s job. Clifton explained that those who applied wanted to work with horses and the clients. “We need someone to sit behind a computer and bring in money,” Clifton said. SMART just posted the executive director’s job again, this time with the emphasis on fundraising and grant writing. Meanwhile, the organization continues to serve more than 600 clients a year. “We don’t need to hire another instructor,” Clifton said. “We

Community service all tied up in knots

hat is your fondest memory of being involved in Scouting? For those who traveled that road, it probably has something to do with fishing, hiking, making crafts or S’mores. I doubt if public service rushes into the memory banks, even if that is a big reason the Scouting organizations exist. At that age, kids don’t understand that ever-so-subtly, they are being brainwashed into being a good person. Don’t worry, it’s a good thing. For example, in Orange County, N.Y., the Boy Scouts hosted an event called the Klondike Derby. It was held every January or February in the bitter cold. If this was a college course, it would have been called “Frostbite 101.” The Scouts acted as the dogs on a sled, pulling it around about five miles in the crusty snow. Along the way, the Scouts would make these pit stops, and Scout leaders would determine grades as they built a fire, cooked lunch, sent fellow sledders signals with a flag or, of course, tied knots. I don’t remember if my Troop received a decent score, but I do remember that the day after the event, I never, ever again wanted to participate in such a stupid, arctic form of torture.

Two days later, guess what? It was kind of fun. Those of you who have run half-marathons or marathons understand what I am talking about. While it is happening, it stinks. Then a week later, you can’t wait to do it again. What’s a couple of toes? I never paused to consider we were learning about teamwork, learning to depend on that guy next to you. Kind of big stuff when you enter the working world, don’t you think?

My other example of a somewhat painful Scouting experience that eventually turned meaningful was the day I had to complete a Boy Scout service project. I had chosen to paint a mile’s worth of fire hydrants in town ... in July. By the time I had reached my 40th hydrant, I was spending more time lying on the ground than I was upright. The grass around the hydrants bore a nice coat of red paint, although the hydrants themselves were ben-

efitting as well. Sloppiness was not an issue. I spent a lot of time that day in my own personal pity party, thinking “Poor me” as cars drove past on their way to parades, or swimming sessions or family reunions. Why didn’t I just join a soccer club? Eventually, as I drove through town 10 years later, those fire hydrants still looked pretty good. Hey, I painted those. All those old memories came rushing back a few days before

Thanksgiving as I checked out some local Cub Scouts as they gave out turkeys and other food at the Manatee Baptist Church in Bradenton. Cheryl Fair, who runs the church’s food pantry, enlisted the help of Pack 126, which is mainly made up of students from Gullett and Gene Witt elementary schools. They handed out 142 turkeys and 400 chickens to those who utilized the food bank. I talked to the boys a bit, and it was obvious they were like me when I was a Cub Scout, hyperactive and somewhat goofy. Even so, they got the job done. Alas, it was a day they probably won’t remember until years from now because they have their minds set on campouts, making Pinewood Derby cars and swimming. I guarantee you, though, that something very important was happening as they handed out that food, even if they won’t remember it. The fact is, those who picked it up, will.

Nixon brought the tree to Fitzgerald’s home and then decorated an additional tree for her and the mantel on an outdoor fireplace. “She matched it to the rest of my house,” Fitzgerald said. Nixon took the colors of her client’s home, a calming scheme of creams, gold, silver and a touch of blue, and weaved them into her holiday design. The tree has hydrangeas, birds and decorative glass balls with complementing colors. “She’s got the creative touch and more of the imagination on creating something that is unique,” Fitzgerald said. “She really did a nice job tying it into my home.” In the past, Fitzgerald has decorated her own home and used traditional colors and schemes. This year, Fitzgerald wanted a

more calm theme. “I’ve always had the ‘big red bow,’” she said. “It was nice to do something different than the traditional red and green.”

Lynda Nixon likes to use more natural elements to decorate, such as birds and pine cones, to get away from the “plastic red bow” type of decorations.

Lynda Nixon decorated Vicki Fitzgerald’s home and trimmed her tree to match the home’s color scheme and coastal design. The tree features gold, silver, cream and turquoise decorations with coastal touches.

According to Lynda Nixon, who owns White Rose Interior Designs, one of the biggest mistakes people make during the holidays is adding decorations to their everyday décor without removing anything. For example, if a coffee table already has a setting with candles and decorative stones, replace the candles with silver candles and the stones with pine cones.

Full Belly looks to expand

Successful Lakewood Ranch burger business will offer franchises. JAY HEATER MANAGING EDITOR

Matt Holt received a rude introduction to the restaurant business when he went into a partnership in West Palm Beach that crashed and burned in a year. “I learned how not to do things,” Holt said. How things have changed. After three successful years of owning Full Belly Stuffed Burgers with his brother, Shane, and mom, Pinki, the family team has decided to offer franchises. “It’s exciting even though things are up in the air,” Matt Holt said. “We felt like it’s the right time to move forward and to expand.” Matt Holt said his most important lesson from his failed venture was that a restaurant needed to carve out its own niche with a good, quality product in its market. Full Belly Stuffed Burgers has done that with offerings such as the “Matty Matt,” which has maple-flavored bacon mixed into the beef with peanut butter stuffed into the center. “It was kind of a joke,” Matt Holt said. “I always said that peanut butter makes everything taste better.” The “Matty Matt” has been very popular, although the Cheddar Bacon Burger remains the restaurant’s best seller. It features

their particular specialties. “I’m the muscle,” said the diminutive Pinki, who was named by the delivery-room nurses at her birth. “And Matt is the brains.” Shane emerged from the kitchen. “I’m the talent,” he said. While Shane comes up with all the recipes, his mom mixes together the ingredients early every morning. The brothers share a lot of the kitchen duties during business hours. It’s a formula that led them to consider opening a second location in Sarasota, but the the deal for the site fell through. They turned to the franchise idea. Matt Holt said that anyone

who purchases a franchise will be given at least a four-mile radius of exclusivity. “I feel confident there could be four to five in the Sarasota-Bradenton area without stepping on anyone’s toes,” he said. “Parrish also seems like a great opportunity.” Being part of a family-run business, the Holts want to make sure the quality they have developed in their Lakewood Ranch restaurant continues when someone takes out a franchise. “Initially, we are going to need to find the right fit of people,” he said. “We have to maintain that consistency. This will force us to put our trust in folks, but they will be owners of their own business.” Although Matt Holt said his family is thinking of the expansion in a boutique type of franchise format, the sky is the limit. “We just can’t foresee how much growth we might have,” he said. The family business originally offered the burgers at the Sarasota Farmers Market five years ago either on site or for takehome. Eventually, they opened the restaurant. The restaurant has earned a spot in Yelp’s Top 100 list of restaurants in the Tampa Bay area.

It’s time to journey to the City of Bethlehem to be counted.

less hours of preparation, Liam Bramley has only a few seconds during a soccer game to prove himself. It’s in those moments the Lakewood Ranch senior goalkeeper comes alive. Bramley, who has earned the starting job all four years of his high school career, changes his focus from the entire field and locks his eyes on the soccer ball coming his way. He is, literally, the Mustangs’ last line of defense. In that one instant, his ability to maneuver his 5-foot, 11-inch frame in front of the ball as it rockets toward the goal could decide the game. “It all comes down to being able to make that big save when you’re called upon,” Bramley said. “Some games you may only touch the ball once or twice, but when you do, you have to come up big for the team.” In four seasons, Bramley constantly has produced the big save. He has three district titles to his credit and his team is off to a 5-21 start. It has allowed eight goals and Bramley has posted four shutouts. “Liam is the cornerstone of our team,” Lakewood coach Vito Bavaro said. “He leads by example and controls the flow of the

game from the goal.” Often the flow carries all his teammates to the other side of the field. Bramley finds himself standing in front of his net watching the action. Boredom undoubtedly has to be a factor. “I’d rather be bored because at that point we’re obviously winning,” Bramley said. The Mustangs have 11 more regular-season games and Bramley has to remain focused. In a split second, an opponent could be headed toward him on a breakaway. So far, he has been up to the challenge. “He’s a really good goalkeeper just in the way he stands out for the team and the way he communicates,” sophomore forward Pablo Vargas said. “He puts 100% effort into his play.” Since Bramley doesn’t allow many goals, Vargas said it takes the pressure off the offense. They don’t have to take chances. Bramley started playing goal his first competitive U9 because it went against the norm. He still feels the same way. “It’s probably the one position that requires leadership and a lot of communication,” he said. “The keeper can see everything on the field while the other players only see what’s in front of them.” Bramley said he approaches each game with the same intensity and attention to detail no matter the opponent.

He goes through his same warm-up ritual, beginning with footwork exercises and eventually moving to diving stops. “The preparation doesn’t change because you never know when the team is going to have a bad day,” Bramley said.

Shopping can wait: I may be suited for golf the game. I try to relate golf to life as much as I can.” Marshall dappled in golf in high school, but didn’t pick up the game again until several years after college while delivering groceries one November afternoon to the home of the head golf professional at Brookside Golf & Country Club, in Columbus, Ohio. Three months later, Marshall landed his first job on the range and started learning the business. It was there that the thought of teaching first piqued his interest. “Teaching is all about picking people up and keeping them up,” he said. “The game of golf is really hard.” After five years at Brookside, Marshall moved to Florida in 1994 and spent 19 years working with David Leadbetter, one of the top instructors in the world. Of those 19 years, 17 were spent working with the junior golf program at IMG Academy. Marshall began his new role at Esplanade in September. “I like helping people and seeing them get better,” Marshall said. “I found I’m a natural teacher. It’s all about being able to read people and relate to them on their level. “You have to be really patient and you have to mean it,” Mar-

shall said. “You have to teach based on their experience level, so they can truly understand it.” Perhaps Marshall might even be able to teach my husband, Brian, and I. Although, given my husband’s uninspired response that “a golf course is just a waste of what otherwise would be a perfectly good shooting range,” maybe I’ll just end up wearing those super cute golf clothes to McNeal Elementary School drop-off. n

Lakewood Ranch High is once again leaving its mark on the classroom. Lakewood Ranch’s football team finished first in Class 7A in the Florida High School Athletic Association’s Academic Team Champions for the fall. could have learned to play golf years ago or I could have shopped. Suffice to say, I don’t play golf. Not that there’s anything wrong with golf. There are, I have noticed, some super cute golf outfits as I walk over to look at the yoga pants, which are worn more these days for dropping my son off at kindergarten than they are for working out. Golf, thus far, has failed to capture my attention. That is, until I recently had the opportunity to sit down with Larry Marshall, the new PGA golf instructor at Esplanade Golf & Country Club in Lakewood Ranch. He talked about honing his students’ techniques. Marshall’s approach starts with the premise that you don’t need to be perfect on your first try, which I can assure you I would not be. It’s all about breaking down the complexity of the game and taking it one swing at a time. Success isn’t gauged solely on the flight of the ball. It’s about understanding the changes that you’re making and recognizing that the ball will eventually respond to those changes. “The biggest thing is getting them to trust me,” Marshall said. “I know I can help in all parts of

The Braden River High football team carries its 13-0 mark into the Class 7A state semifinals Dec. 4. The Pirates host St. Thomas Aquinas, the defending Class 7A state champion. Kickoff is 7:30 p.m. The Pirates earned a berth in the Final Four after capturing their first regional championship with a 17-7 victory against Plant City in the Class 7A-Region 3 finals Nov. 28. After Plant City went on top 7-0 when quarterback Corey King threw a 23-yard scoring pass, Braden River changed its focus from stopping running back Markese Hargrove to pass protection. “We thought they were going to come out and run the ball,” Braden River coach Curt Bradley said. “They have a 1,600-yard rusher, and we thought they were going to attack us on the ground. They came out throwing it. “We kind of loaded the box in our game plan this week, and that game plan went out the window real quick when they caught us in a couple seams early on,” Bradley said. The defensive switch worked for Braden River, which forced three interceptions. Following linebacker Noah Arce’s first interception, quarterback Jacob Huesman connected with DeShaun

Braden River kicker Kyle Thoma hit a 30-yard field goal with 23 seconds to play in the half to give the Pirates a 10-7 advantage heading into the locker room. Huesman connected with Juwaan Jenkins for a 17-yard score with 5:24 left to play to seal the victory.

YOUR NEIGHBORS A RED-HOT GREEN THUMB

Think you know your hot sauces? You haven’t met Margie Hernandez — or her homegrown jalapeños. JESSICA SALMOND STAFF WRITER

H

ot sauce in an unmarked, corked, glass bottle is a gamble. There’s no familiar Tabasco label, no hot wing sauce recipe on the back — no indication of how flammable it could be. East County resident Margie Hernandez, creator of this unlabeled red jalapeño sriracha sauce, loves spicy things, but even she admits, it’s hot. “On a scale of one to 10, it’s a 10,” she said. The sauce’s layered, herbal flavor highlights each of the items she grows in her garden. It’s not an instant-flame kind of hot, it’s a slow, smoldering development of flavor on your tongue. “All it is, is peppers and garlic, basically,” she said, adding that she puts in some spices and sugars, too. Hernandez has spent years perfecting her two signature hot sauce recipes. She started making her own sauces years ago, when all she could grow were peppers while she was living in the suburbs in Sarasota. She researched recipes online, then experimented with a trial-and-error process. She eventually found the right mix. The red jalapeño peppers she uses are only a few inches long, and it takes about a pound of them to make one bottle of sriracha. She cooks the peppers with a blend of spices and other items from her garden, lets the mixture sit in jars for 10 days and then cooks it again to finish the flavor. “We put hot sauce on everything,” Hernandez said. She serves her sauce as a salsa with chips, adds it into other dishes, slathers it on chicken — anything that needs a kick. Her other signature sauce is what she calls carrot sriracha sauce. It was inspired by a dish she tasted in Belize, which was flavored with a carrot-based hot sauce. After she tried it, she decided she would start making that, too.

Margie Hernandez started developing her property into a fruit and produce grove about six years ago. Below, from left, are one variety of peppers grown for sauce; carrot sriracha and red sriracha; and muscadine grapes grown to make wine.

“I bought a bottle, and the ingredients were basic, so I had to play with it a little to make my own sauce,” she said. Everything she puts in her sauce is something she has grown herself — onions, garlic, herbs, carrots, peppers. When Hernandez and her husband, David, moved from Sarasota to a home on Upper Manatee River Road six years ago, there wasn’t one fruit tree or produce-bearing plant on the five-acre property. Now they are growing not only ingredients for hot sauces but also pomelos, bananas, apples, oranges, lemons, limes, star fruit

and cherries. They also have a few rows of grapes to make their own wine, and 14 free-range hens, all with their own names, of course. She’s still letting her grove mature before she tries to start selling her sauce regularly. The Hernandezes hope to turn their land into an income-generating retirement pastime. For now, she makes her wine and hot sauce for her family, friends and occasionally sells them at the Myakka Market. “I take care of my girls (hens), my trees, my garden, that’s what I do,” she said. “It’s a full-time job.” Hernandez hasn’t been com-

HOT ITEM When Hernandez has a batch to sell, her hot sauce is available at the Myakka Market. The market is open 9 a.m. to 6 p.m. Monday through Friday and 11 a.m. to 5 p.m. Sunday. She charges $7 a bottle.

pletely without help, however. In the last year, Heike Caspary, a neighbor, has become her close friend and an apprentice to hot sauce making. The two women connected over their love of food and have become integral parts of each other’s kitchens. They both love to cook, love to try new recipes and experiment with different fruits they find at the farmers market. Now, when they visit each other’s houses, they stay up late into the night — in the kitchen. “The sauce blew me away,” Caspary said. “I try to make my own, too, but I’m still learning.”

She was one of many students who also was grateful for great food as Kiddie Academy celebrated Nov. 25 with a complete holiday dinner before the students headed home to be with their families. Before they left, they munched on turkey, mashed potatoes and dressing. The children sported Native Indianinspired paper headbands

all it a warm-up for the real meal. Bashaw Elementary had its own holiday celebration Nov. 19 before releasing students for the Thanksgiving break. Although mom didn’t make the ham, turkey, stuffing, mashed potatoes or apple pie there, the students weren’t complaining. The annual Thanksgiving Feast lunch for all students once again was a hit. The students enjoyed an event that is referred to as “Friends-giving.”

Saturday, Nov. 21, at the Lee Wetherington Boys & Girls Club Benefiting Boys & Girls Clubs of Sarasota County

I

t may have been drizzling outside, but it was warmth, sunshine and hugs all around inside when Boys & Girls Clubs of Sarasota County honored Betty Schoenbaum and her late husband, Alex. The attire specified “island festive,” and the 320 guests took it to heart, making for a colorful crowd, which was welcomed at the door by a B&GC youth. Honorary Chairman Sam Shapiro made the presentation to his good friend, Betty Schoenbaum, who said: “No one would love this more than Alex Schoenbaum, because he loved the Boys & Girls Clubs. There is no better place for a child to learn.” The program provided much evidence of that with speakers including Kevin Stalker, a Duquesne University Student and last year’s Regional Youth of the Year, and Whitney Stewart, an alumna of the Gene Matthews Boys & Girls Club in North Port and the National Boys & Girls Clubs of America Youth of the Year, whom is selected from more than 4 million youths across the country. She talked about mentoring kids at her club, and many of those kids came on stage to show their appreciation — with hugs, of course. Where there’s Betty Schoenbaum, there are always hugs. And the more the merrier. The event exceeded its fundraising objectives thanks to guests who enthusiastically supported the silent and live auctions. They also bought $10 gift bags containing a chance to win $1,000. Gretchen Scott, who provided the boys and girls with their outfits, donated the money and the bags. The menu by Chef Paul Mattison was “island” from the first bite of scallop ceviche to the dessert bombe featuring coconut and passion fruit.

Mike Doyle shows Betty Schoenbaum her “Champions For Children” Award while Emily Schoenbaum looks on with pride.

When Nate met Melba and posing for photos as people left. Audrey Coleman and Kitty Cranor co-chaired this year’s Broadway under the Stars event, which presented a Heart and Soul Philanthropy Award to Gerri Aaron and Marvin Albert for their leadership and financial support. In the crowd: WBTT board chair Marian Moss, WBTT Executive Director Julie Leach with husband Brock, Scott Anderson, Veronica Brady, Frank and Jaclyn Brunckhorst, Clemmie and James Cash, Norbert Donelly, Roxie Jerde, Donald and Doris Johnson, Ambassador James Joseph and Mary Braxton-Joseph, William and Elizabeth Johnston and Kelley Lavin.

Chair Kimberly Bleach made certain that Equality Florida was ready for the rain with tents aplenty atop the Palm Avenue garage for its annual event Nov. 21. The organization presented a Lifetime Achievement Award to Mary Bonauto, the lawyer who successfully argued for marriage equality at the U.S. Supreme Court earlier this year, and a Voice for Equality Award to Michael Donald Edwards, the producing artistic director of the Asolo Rep. BT first covered this event in 2011, reporting that the 250 guests were nearly twice as many as the prior year. This year, the count was 400. Dennis Stover, a handsome presence at all their events, deemed the increase a reflection that the LGBT organization is developing “a much broader base of mainstream support.” Spotted in the crowd: Peter Amster, Jan Chester, Warren and Margo Coville, Frank Galati, Scott George and John Mason, Ron and Rita Greenbaum, Michael and Ruth Harshman, Marilyn Harwell, Debbie and Larry Haspel, Joe Holt and Paco Martinez, Christine Jennings, Carol Phliips, Ayse Sommers and Mary Lou and Ed Winnick.

It seems to be an issue at virtually every event: Getting the audience to hush so that presenters and honorees can be heard. The Equality Florida Suncoast Celebration 2015 planned for it in advance and recruited Jim Martin, right, to get the message across.

Sometimes it pays to break the rules — as Westcoast Black Theatre Troupe founder Nate Jacobs did 16-or-so years ago when he snuck through a rope line to meet singer Melba Moore. It turned out that a mutual acquaintance had just told her that Nate was an up-and-comer she should meet. A remarkable friendship ensued over the years, and Moore has been a source of emotional and financial support for Nate and his troupe. She came to town to perform for their annual fundraiser Nov. 19, at the Sarasota Municipal Auditorium. Not only did she wow the crowd, she was, by all reports, friendly and gracious, even standing by the exit chatting

Tidbits Belated big birthday … Nikki Nilon summers in Chicago and celebrated her 80th there with 40 family and friends at the Tortoise Club Sept. 17. She partied again in Sarasota Nov. 18 when friend Renée Sheade treated her to lunch at Michael’s On East ... Betty on the ball … she may be 98, but she sure doesn’t look it. More than one youth at the Boys

& Girls Clubs event that honored Betty Schoenbaum and her late husband, Alex, commented, “She can’t be that old … she is beautiful.” She is also sharp as a tack and didn’t hesitate to set the record straight when one of the speakers had her age at 97 and undercounted the restaurants in the chain her husband founded. The correct numbers are 98 and 2,016, respectively.

Key Chorale serves ‘A Banquet of Voices’ JUNE LEBELL MUSIC CRITIC

Key Chorale, Sarasota’s “Symphonic Chorus,” under the direction of Joseph Caulkins, offered a program of primarily early music that shows how brilliant programming and excellent training can add up to a special evening of music. I had my doubts about the concert because Key Chorale is a large group – around 100 singers – and, except for a handful of paid section leaders, the singers are amateurs. Well, they might not have had the formal training and backgrounds professionals have, but they truly live up to the definition of amateur: one who engages in a pursuit, study, science, art or sport because of love. And these lovers of the vocal art really came through in this concert Sunday. But they had another strike against them before they even opened their mouths. We’ve found, through study and practice, that music of the 16th and 17th centuries is now thought to have been written for small numbers of musicians. Late 20th and early 21st century practice tells us that the Monteverdi “Vespers of 1610,” for example, should be sung by only one or two voices on a part. Same with the music of Giovanni Gabrieli, Heinrich Schutz and Michael Praetorius. Key Chorale and Caulkins proved that any size chorus, large or small, if properly trained and rehearsed, can pull off gorgeous, stylistic readings of this

great music. Take the Monteverdi, Schutz and Gabrieli works on this well thought-out program. These composers wrote, not only for the musical forces they had on hand, but also for the great spaces in which the works were performed. It was the early version of the modern surround sound, with brass, strings and voices stationed in various parts of the cathedrals and churches so the listeners would feel as if they were in heaven, surrounded by choirs of angels. Caulkins did that with his excellent soloists, starting with tenor Rob Davis, who has a large, colorful, clarion voice, standing in the rear of First United Methodist Church, to open the Vespers. After that, we heard trumpets (Michael Dobrinski, Gregory Knudsen and Daniel Medelow), trombones (Brad

Williams, Laurie Penpraze and Marc Morgan), and violinists (Daniel Jordan and Chung-Yon Hong) coming at us from various parts of the church, dizzying us with sounds ranging from mysterious to divine. He also positioned some of his soloists in various parts of the church – a quartet in the balcony, singing antiphonally with the large choir on the stage, and mezzo Amy Jo Connours, who seems to go from a Gabrieli boy-alto sound to jazz and gospel with the ease of a chameleon – so we were always looking around, trying to find the source of the magic coming at us from all sides. Organist Nancy Yost Olson stayed at her instrument, stage left, but played with great support and clarity. This is not easy music to sing. Its change of meters and tempos

can easily stump a conductor, but Caulkins was wise enough to conduct many of the triple meters in one, making long, sweeping, arched phrases that really made music. Hardest of all was a group of 16th century carols in contemporary arrangements, including a fun setting by Mack Wilberg (of the Mormon Tabernacle Choir) of “Ding! Dong! Marrily on High,” and Brian Kay’s syncopated arrangement of “Gaudete,” which brought tenor Rob Davis back at the end with a voice that traveled with us through the doors. Amateur, schmamateur. The Mormon Tabernacle Choir isn’t a paid group either, but they sing circles around the music they perform. Suddenly, Key Chorale is coming into its own, and we have nothing but praise for them and their conductor.

Victoria Hulland and Ricardo Graziano in Sir Frederick Ashton’s “Marguerite and Armand”

A knight of royal revival ANNA DEARING DANCE CRITIC

Sarasota Ballet added three new pieces to its repertoire Nov. 21 when the ballet performed the works of three great knights — Sir Kenneth MacMillan’s “Concerto,” Sir Peter Wright’s “Summertide” and Sir Frederick Ashton’s “Marguerite and Armand.” The performances at the Sarasota Opera House were accompanied by the Sarasota Orchestra, led by American Ballet Theatre Conductor Ormsby Wilkins. The program was a revival of sorts, bringing back the lost “Summertide,” which Wright

created featuring Sarasota Ballet Assistant Director and Repetiteur, Margaret Barbieri, in the original cast for the Sadler’s Wells Royal Ballet. “Marguerite and Armand,” which Ashton created for Margot Fonteyn and Rudolf Nureyev, made history with this being its U.S. debut. “Concerto” is a plotless, neoclassical ballet that echoes the likes of Balanchine’s works of the same time period in the late 1960s and early 1970s. The ballet features a large cast of 35 dancers in simple costumes (women: leotards and short skirts, men: unitards) in shades of blue, turquoise and lavender that embellished the newly cre-

ated set designs by Lady Deborah MacMillan. Set to Dmitri Shostakovitch’s “Piano Concerto No. 2,” the ballet opens with a lively first movement featuring Elizabeth Sykes and Alex Harrison, who perform multiple pirouettes and fast chaînés into grand jetés and lifts. Edward Gonzalez was ever the strong partner, lifting Ellen Overstreet in slow pressing lifts during the sensual and slow pas de deux in the second movement. At one point, Gonzalez grabs Overstreet’s extended foot in a développé à la seconde and flips her over his back into an arabesque lift. Wright’s “Summertide” follows a similar structure to “Concerto” with three movements: the first movement a bright and vibrant piece, followed by a slower second movement and

culminating with a high-energy finale with the entire cast. Set to Felix Mendelssohn’s “Piano Concerto No. 2,” the ballet features a gorgeous billowingcloud-like backdrop with gold accents designed by Dick Bird. Bird’s costume designs were brilliantly hand-painted dresses and unitards by Bill Fenner. Ricardo Rhodes owned the first movement with his machismo, strong technique and bright smile. Samantha Benoit and Kate Honea were almost identical with similar sprightly styles and quick rhythms. In the second movement, Danielle Brown’s pas de deux with Rhodes was supported by the additions of Jamie Carter and Joshua Stayton, each man transitioning Brown from one amazing lift to another. “Marguerite and Armand,” set to Franz Liszt’s “Piano Sonata in B minor,” was a stunning, dramatic piece. Cecil Beaton’s set designs and costumes, brought to life by Doug Nicholson, were extravagant yet elegant, and at the same time represented the luxurious and ornamental lifestyle of 19th century Paris. Victoria Hulland danced the role of courtesan Marguerite, who is plagued with an eminent young death from consumption. Ricardo Graziano danced the role of Armand, the young suitor who captures her attention. The pair was incredibly passionate and emotionally raw in their roles, demonstrating their excellent dramatic abilities. The pair almost brought the audience to real tears (including this critic) during the death scene, when Graziano literally wept on stage for his dead partner. Bravo.

Hidden in Plain Sight With his one-man play, Robert Softley Gale explores what it means to live with a disability. NICK FRIEDMAN A+E MANAGING EDITOR

Robert Softley Gale knows the feeling all too well. He enters a room, and everyone turns to look. But at the same time, there’s a sense of avoidance. He’s simultaneously the center of attention and invisible. It’s a unique paradox, but he says it’s something many people with disabilities experience. And for the 35-year-old Scottish actor, who was born with cerebral palsy, it’s something he’s dealt with his whole life. “We all want to be part of the bigger picture,” he says. “Everybody wants that. But quite often, people with obvious physical disabilities struggle to fit in.” His one-man play, “If These Spasms Could Speak,” is part of his efforts to combat this social divide. Also an equality advocate and public speaker, Softley Gale provides audiences with a candid look at the issue. He explores his relationship with his body, as well as the insights of five other disabled people, with whom he conducted interviews. After touring around the world for the last four years, the show will make its U.S. premiere Dec. 10, at Florida Studio Theatre. With it, Softley Gale says he hopes not only to provide a relatable

story for people with disabilities, but he also wants to give ablebodied people a new perspective. “People with disabilities have these experiences that others don’t have,” he says. “It really can be like being hidden in plain sight.” Softley Gale grew up in a performing-arts family, and he’d done a lot of work backstage, but he never considered a role in the spotlight. But 12 years ago, Theatre Workshop, a theater company in Edinburgh that employs both able-bodied people and

people with disabilities, asked him to audition for a play. He realized he could use the paradox as an art form. “I never thought I would get into acting,” he says. “But I realized that on stage, it’s all about me. People listen to what I’m saying. I’ve always wanted to share how I see the world, and acting was a good way to do that.” The play is a collection of stories — some funny, some sad, but most importantly for Softley Gale, they’re all honest and relatable. “At first, the audience is thinking about how differently disabled people are perceived,” he says. “But these are universal issues — everyone has something they don’t like about their body. By the end, you realize how similar our lives are. That’s the journey I want to take you on.”

Every new piece showcases each choreographer’s unique journey of growth over the last five months. “In a show like this, you’re really choreographing your heart,” says Wilmott. “Being a choreographer is to be in a very vulnerable place.” Those stories include everything from the every day to the emotional. And to understand these stories through movement, one has to know and understand SCD’s choreographers. Learn more about them here.

I want the audience to feel that even though we’re far apart (she lives in Cleveland), that we’re still close. The second section is about the evolution of a relationship between a man and a woman falling in and out of love.” If the voice of your movement could sing, what would it sound like? “It would be an epic movie soundtrack. Everything from the first time she danced when she was 4 years old in a production of ‘The Nutcracker,’ to the time in high school when she lost her leg in a car accident. We started doing improvisational exercises based on big events in her life. I don’t do a lot of solo pieces, but I wanted to create something about her and her journey. Stephanie dances through the main moments of her life. At home, I’m constantly surrounded by the sound of my two kids. Even when I’m lying down in bed and they’re napping, I’m still listening for any kind of sound they’re making. The dancers begin to stretch inside the tight confines of the New College fitness center. Their next three hours of rehearsal will be one of intense physical and mental focus. They will need to be limber and open to memorizing new steps, but also be ready to enter new worlds. Though Sarasota Contemporary Dance (formerly Fuzion Dance Artists) has been an active presence in Sarasota’s dance scene for the last decade, this new-choreography showcase allows the group to re-introduce itself. After changing its name in September, the company is gear-

at 6 a.m.” he says. “And I’m here until 10 p.m. or later every night. It’s the craziest business in the world, and I wouldn’t trade it in for anything.” Shenker isn’t only satisfying his own dreams. He’s satisfying the appetites of Sarasota’s approximately 25,000 Jewish residents and countless northeastern seasonal residents and retirees used to having a deli just up the block. Sol Meyer NY Delicatessen will feed a demand that, besides a few corporate regional chains, has remained untapped since Shenker moved to Sarasota in 2000. And for most, there’s a deeper connection to deli food. It’s more than just a familiar taste and smell. For those who grew up on this Jewish soul food, each bite is like a step into a time machine. Sarasota’s demand was so great that after just two days, Shenker and his staff ran out of food and had to work all Sunday to prepare and restock the kitchen. “For us, it’s a bite of the old country,” says Shenker. “It brings us back. No matter where you are, if you’re eating pastrami, corned beef, knishes, the big deli sandwiches, you’re taking a bite out of New York and your family roots. Every time you eat deli, it’s like going on a vacation to Manhattan.” Since he moved to Sarasota, Shenker has worked as a chef at the Longboat Key Club, Hotel Indigo and the Starlite Room. On the side, he also ran a kosher catering business. Now fans who have tracked the deli’s progress online show up just to watch Shenker and his team prepare their favorite foods. The biggest test: living up to their impossibly high standards. After a sneak peek of Shenker’s

DELI DREAMS Like many people’s adoration of deli and Jewish food, Solomon Shenker’s obsession began in his mother’s kitchen. When Shenker was 18 years old, the Kings Point, Long Island native got a job at New York City’s 2nd Avenue Deli. Shenker says he went up to the two deli owners, Nat Hertzberg and Paul Sia. And with cigars poking out of their mouths, they said, “So, kid, you want to be in the deli business?” The rest is history. His first day on the job, Shenker says he worked for 14 hours, peeling hundreds of potatoes, preparing steamed kettles of soup, garbage pale-sized servings of coleslaw, and creating hundreds of matzo balls. After that first day, his dream was to start his own deli wherever he could. “People were cursing at you, screaming at you, throwing things at you,” says Shenker. “It was great.”

Matzo Ball Soup: A classic comfort food, matzo balls are served in a noodle soup and the balls themselves are a light mixture of matzah meal (unleavened bread), eggs, water and chicken fat.

food, leadership staff from the Jewish Federation of SarasotaManatee gave their approval. “I’ve been waiting 15 years for a real New York deli, and now it’s finally here,” says Howard Tevlowitz, executive director of The Jewish Federation of SarasotaManatee. “There is a God.” Tevlowitz’s colleagues agreed. “I ate the whole thing,” says Jeremy Lisitza, director of community engagement and administration of the Jewish Federation, after noshing on an oversized plate of handmade chopped liver. “I’m not saying it’s better than my mother’s chopped liver. She’s still alive.” Florida native or Northeast transplant, Jewish or Gentile, Shenker’s goal is to make his restaurant customers’ home away from home. And with its recently hired staff already interacting like family and a communal seating policy that encourages eating next to strangers, Shenker is confident his deli is more than just a place to grab a good meal. “When you walk in here, I want everyone to know each other,” he says. “It’s going to be like a Jewish ‘Cheers.’”

Homemade Cheese Blintzes: A breakfast staple, the deli takes slices of vanilla-infused crepes and then tops them with sweetened farmer cheese and berries and other preserves.

Knish: The knish is one of Shenker’s favorite dishes to prepare. It has a warm and flaky exterior and is traditionally filled with potatoes or meat. Pastrami, Corned Beef, Brisket: The centerpiece of any deli establishment, Shenker imports meats from butchers in the Bronx.

Pan Fried Cheese Kreplach: A Polish favorite, these are small dumplings cooked in chicken stock and then filled with cheese, meat or potatoes.

Eastern European Eggplant Salad: Roasted and chopped Russian eggplant, garnished and seasoned with olive oil and onion. Old Fashioned Egg Cream: A great dessert drink, the egg cream ironically doesn’t involve any eggs. The combination of milk, chocolate syrup and spritzer stirred together in a glass will satisfy any sweet tooth.

Potato Latkes: Traditionally served during Hanukkah, this favorite snack is essentially potato pancakes that are shallow-fried with a mixture of potatoes, onions, flour and egg.

BETTER CALL SOL: Deli Diehards FROM PAGE 1

He understands their eagerness. He, too, has been waiting a long time for a Jewish deli to open in Sarasota. After 15 years, the Long Island, N.Y., native decided to open his own. And when he opens the doors, he wants it to be perfect. Located in the heart of downtown Sarasota’s restaurant row, at 1473 Main St., Sol Meyer NY Delicatessen will serve Jewish deli cuisine, inspired by Shenker’s family kitchen and the Manhattan delis he loved as a child. In October, he and his business partner and brother-in-law, Meyer Sabotin, rented the space, which was formerly occupied by the Englewood-based pizzeria, Flatbreads. In a month’s time, Shenker, 51, has accomplished a lot: acquiring permits from the city, redecorating the cozy 35-seat space, handpicking his 13-member staff and acquiring and prepping deli staples such as corned beef, brisket, pickles, matzo balls and knishes. To please the discerning Jewish community, he knew just serving the essentials wouldn’t be enough. Most importantly, he knew his ingredients would all need to come from New York City (he buys all his meat from the Bronx). He also knew that he and his kitchen staff would need to hand-make every item. But Shenker says the hard work is a small price to pay to have his own deli, which opened Friday, Nov. 27, just in time for Hanukkah. “I’ve been up at 5 a.m. every day and have gotten to the deli
