Executive Chef MATHEW PLANK loves to create delightful surprises for diners who frequent The Harvest Table. His creativity and innovation will be recognized by Sodexo through the month of November. Specifically, Chef Mathew’s Nashville Style Hot Chicken Sandwich will be featured through Sodexo’s Love of Food program. His story and recipe will be shared with Sodexo chefs across the country. On a trip to Deals Gap, North Carolina, Chef Mathew stumbled across a small shack-like restaurant where he ordered a “hot chicken sandwich.” He was instantly inspired to create his own version of this delicious sandwich. When he was asked to submit ideas for the summer Staff Appreciation Picnic, he offered this creation. It was an instant hit with staff and Chef Mathew added it to The Harvest Table’s offerings. Chef Mathew worked at Bright’s Restaurant in Ephrata during high school. “I fell in love with the atmosphere of the kitchen and the camaraderie of the fellow cooks and chefs. Interacting with customers while cooking in an open kitchen gave me the needed push to explore the culinary world. The satisfaction of seeing so many smiling faces after enjoying a well-executed meal is second to none.” Chef Mathew attended The Art Institute in Philadelphia in the summer of 2004. He spent 13 years in Philadelphia working in a variety of dining venues, from Lincoln Financial Field to Silk City and more. He returned to Lancaster County in 2015 and started working at The Harvest Table as a cook supervisor in December 2015. He was quickly promoted to executive chef with Sodexo in August 2016 and enjoys sharing his creativity with people at Garden Spot.

HATS, SCARVES, MITTENS & GLOVES COLLECTION FOR CROSSNET MINISTRIES November 1-30

Please place new hats, scarves, gloves and mittens, appropriate for school-age children, in the wooden barrel next to the Post Office by the Apartment Suites Lobby. The winter items will be given to CrossNet Ministries to share with children in our community. For more information, please contact Life Enrichment (6007).

Can you believe it’s November? The holidays are upon us! Just looking at the calendar there’s a fashion show and gift preview, paint night, concert series, Look & Learn, Swipe out Hunger Community Meal at CrossNet and the Train Room Open Houses begin. Let’s not forget Thanksgiving. October featured the Fall Festival and Explore Retirement Living so there were a lot of visitors. A visitor during the Open House commented, “I love it that you introduce us to residents. At the other ‘places’ we went they wouldn’t let residents talk with us.” Garden Spot has the best residents in the world and you love interacting with visitors. You’re welcome to talk with whoever you want! You make Garden Spot special. Expect more visitors during the holidays and of course, feel free to talk things up. P.S. 33 of the 50 new homes at Sycamore Springs are spoken for. If you know someone who wants to move soon please point them in the direction of Sycamore Springs!

GSV CLUB FOCUS

Colleen Musselman, Director of Life Enrichment

THE ARCHIVE ROOM

written by Juanita Fox, GSC Storyteller

A retired history teacher, Ken Wendel is fascinated with history and how companies and organizations evolve. When Ken Wendel moved to Garden Spot in November 2003 he brought with him his interest in history. He casually asked at a Cottage Council meeting, “Where can I find the history of the community?” Before he knew it, Garden Spot found a room for him and, the administrative team delivered boxes and boxes of newspaper clippings, minutes and history. He spent the next 14 years sorting through the articles and documents, creating the framework and organization for the Archive Room. In doing so, he created a space where the memories and history of Garden Spot can be preserved and accessed for years to come. A team of residents now helps Ken. Ann Gross coordinates veterans' records. Dorothy Winegardner takes care of retired nurses’ records. Chick Wenzel helps residents record their life stories. Pat Frankel and Darlene Smith do reporting, indexing, filing, photography and more. Mike Lanyon files Garden Spot publications and meeting minutes. Located on the ground floor of Gardens West, the Archive Room has volumes of history. Information can be quickly referenced through the card catalog, a listing in a binder or a computer program. The room is available for anyone who wants to read the articles and learn more about the history of Garden Spot and its origins. “Everyone from Garden Spot is in here. Why don’t you come down and see it?” asks Ken. If you are interested in perusing the history or reading the stories, you can make an appointment by calling Ken at (6765). The Archive Room will host an open house on Wednesday and Thursday, November 20 and 21 from 10-11:30am and 1:30-3:30pm. Life Stories An additional opportunity in the archive room is the Life Stories studio. In the studio, residents are welcome to record their life stories by themselves or with a family member. “I usually encourage people to take an hour and a half to two hours to tell their life story,” Chick Wenzel says. Chick, who teaches a class on Writing Your Life Story every other year, offers tips and questions for people to answer while they are recording. At the end, Chick gives them a flash drive where their audio story is saved. If residents choose, they can leave a copy of the story in the archive room for others to reference. “People often say they are going to share their life story with their family members. Our studio offers a great opportunity to do that and Christmas is a perfect reason to do it,” Chick says. “And your only cost is a donation to the Benevolent Fund,” Ken adds. To learn more or schedule a time when you can record your life story, call Chick at (6938).

VOLUNTEER SERVICES Deborah Fast, Director of Volunteer Services JANICE FORD: A HISTORY OF RETAIL

Janice Ford, who moved to Sycamore Springs with her husband Tom in July 2017, transitioned from working full time in 2017 to working part time in 2018 to volunteering up to 20 hours a week in 2019. She thrives on involvement with the Garden Spot community, volunteering with Share & Care and serving on Cottage Council, as well as with Dining Ambassadors. Janice has a long history with retail, which attracted her to Share & Care soon after she moved to Sycamore Springs. Her first job at age 16 was working at Woolworth's. She also worked at Gimbal Brothers on 69th Street in Delaware County and Macy’s in Exton. As a nurse and an x-ray tech, she had a stressful day job. Working in retail in the evenings, on the weekends and throughout the holiday seasons helped her to relax. Today, Janice uses this retail experience as she serves on the Share & Care pricing/planning team, which evaluates donations, sorts and prices products and creates displays. She also works at the Share & Care desk, helping shoppers and ringing up sales. “Through Share & Care, I get to go back to what I enjoyed the most,” Janice says. “Plus everyone is so pleasant and I get to meet more and more people and more and more residents. It’s just so much fun.” She adds that she appreciates that all the proceeds from Share & Care benefit the Benevolent Fund and that Share & Care serves people moving to Garden Spot or transferring to a new home at Garden Spot because it provides a way for them to donate unwanted items and benefit Garden Spot Village. Janice also serves on Cottage Council and is currently helping to raise awareness for the Employee Appreciation Gift. She also participated in Episode 2 of the Retire With Purpose Podcast, due out later this month. To listen to Janice’s story and transition to Garden Spot, find the podcast here: gardenspotcommunities.org/podcast.

WELLNESS NOVEMBER IS FLEXIBILITY MONTH What Is Flexibility?

You probably know what it means when someone says they are flexible. It usually means that they can reach down and touch their toes or bend deeply into a squat. But the definition of flexibility is more complicated than simply being able to do a single stretch. According to the U.S. Surgeon General's report on physical activity and health, flexibility is defined as “a health-related component of physical fitness that relates to the range of motion available at a joint." That means that each joint and each group of muscles in your body might have a different range of motion (ROM) or a different level of flexibility. Some areas of your body may be very tight, meaning that the muscles feel short and restricted. Some areas of your body may feel very loose and you may be able to lengthen and move those muscles freely.
