Maison d’Uzes Recipe From Chef Christophe Artichokes Provençale Style for Four People: Ingredients: 12 artichokes, 50g of smoked bacon, 1 carrot 1 celery stalk, 1 oignon (young one, oignon nouveau in French) 4 garlic cloves 1 orange, thyme, laurel, 2 badian or star anise 10 cl of Olive oil 30 cl of chicken broth 20 cl of white wine Cut the carrot, smoked bacon, onion and celery and make a mirepoix (small square pieces.) Peel the artichokes (cut the stems and take away the most hard leaves.) Fry the mirepoix in a pan with olive oil and add the artichokes. Add the badian, the thyme, the laurel and the garlic, cover and cook during 5 minutes. During this time peel the orange and keep the skin to put orange skin slices in the pan. Add the white wine in the pan and the chicken broth, cover and let it cook (slow fire.) Verify the artichokes cooking with the top of a knife, and cook until artichokes are soft. One it's cooked, take away the artichokes in a plate and put a film on it to avoid them to dry, and keep the rest of the preparation in the pan and let it reduce as a syrup consistency. When it's done, you can put back the artichokes in the pan to warm them. Bon appétit, you can drink with it a White wine of Chabrier, AOP Duché d'Uzès!
