tired of traditional tailgate fare? try these strands of school spirit By April Blake

B

y this time in the season, people have been to several tailgates, and eaten the wings, eaten the burgers, drunk the beer. It’s time to make this one a little different with a kick of edible school spirit in the form of garnet and black pasta. But maneuvering a pot of boiling water, a propane burner and a beer in hand at the same time sounds dangerous and heavy. So we’ve got other ways to serve that spaghetti that’ll be much more outdoors and grilling friendly. Garnet and black pasta can be found at the Crescent Olive at 2901 Devine St. Both the dried cabernet-merlot infused fettucine noodles and the squid ink linguine strands cost $6.50 per 12-ounce bag. The day before the game, plan some time to cook the pasta and let it cool. If you’re cooking both, cook them in separate pots, otherwise the colors will muddy together. Once the pasta is cooked according to package directions, drain the water and let it cool slightly before sealing the pasta — still separated by color — into storage bags or containers. Store them in the fridge until it’s time to load up the cooler. After the grill is nice and hot, put a disposable aluminum pan on the grill and add the spaghetti and a little bit of water, just enough to create steam to loosen the pasta up as it warms up. Top with a second aluminum pan to keep the steam in, or close the grill lid. Since the whole point of this pasta is to show off the fun colors, these noodles shouldn’t be covered in a thick sauce, but rather with a light oil

Crescent Olive has plenty of varieties, but our oil of choice to dress these noodles is a roasted garlic olive oil and crushed red pepper flakes. Toss pasta with oil and the desired amount of red pepper flakes until coated, then finish with fresh or grilled cherry tomatoes and thinly sliced red onions, and a sprinkling of Parmesan or feta cheese. Allow the dressed pasta to marinate off of the heat for a few minutes prior to serving. Call it fettuccine for football if you want. But no one at the tailgate will call it boring.

brews that pair with your tailgate food

his column has highlighted some local and nearly local beers recently, but this week, we are going to recommend a few beers from out of state that just happen to be terrific beers for pairing with tailgating food. 21st Amendment Brewery started out as a brewpub in San Francisco in 2000 and became so popular that they recently moved to larger brewing operations to allow for wider distribution, and that wider distribution thankfully includes South Carolina. (The beers are available in Columbia at Bottles and Craft and Draft.) They make lots of award-winning beers and have some of the best graphic design of any brewery in the country, but I believe their true strength lies in the fact that their beers are very easily to pair with classic pub food. Their origin as a brewpub makes perfect sense when you try their beers. If your tailgate includes chicken biscuits for brunch and/or burgers for lunch, I highly recommend their Toaster Pastry India Style Red Ale. This multi-awardwinning beer is brewed with biscuit malts, giving it a nice bready quality, though it's hoppy enough to keep from being sweet. If you are really doing your tailgating right with some steamed oysters and/or pork barbeque, then check out Marooned on Hog Island. This stout was brewed with the San Francisco area's Hog Island Sweetwater oyster shells for a sweet, smooth drinking beer with a salty bite at the end. The box and cans even tell the story of two deserting deckhands stranded on Hog Island who lucked into some oysters, roast pig and stolen captain’s ale. There are plenty of other 21st Amendment beers that could work for whatever tailgate food you have planned. Going with Mexican? Try their Mexican-style lager, El Sully. Going for some fried chicken? There should still be some cans of summer seasonal wheat beer Hell or High Watermelon kicking around town. And as these games get cooler and we start bringing chili, let’s hope stores are stocked with plenty of Fireside Chat, a winter spiced ale.

THE COCKY LIFE tailgate big, but don't forget the little things By Anne Wolfe Postic You have the tent, the propane-fueled grill, a sturdy folding table, an arsenal of tailgate friendly recipes, and a cooler that keeps your beverages colder than an old-fashioned icebox by the register at a country gas station. You have a tablecloth in team colors and a mascot to stand by your table, just in case people still don’t know who you’re cheering for when you’re finished with all the eating and drinking. Maybe you even have a television, proof that you and your tailgate crew are bigger fans of the game than anyone else around, because you like to watch football before you go into the stadium to watch football. But there’s always one little thing you forget. Maybe it’s a spoon for the pimento cheese or to-go cups for people who stop by your spot to say “Hello” and want to take a toter. Did you remember trash bags? Or maybe you forgot that absolutely everything you bring to your tailgate should be designed to show people how much you love the Gamecocks (or whatever team you’re into). Never assume that plain paper plates will do, or that your napkins can be the same ones you use at every meal. You need plates, cups and napkins, all emblazoned with your mascot or, at the absolute least, your team colors. Gibson’s on Devine has it all. And those cups can be washed and used again throughout the season. “Keep Calm and Tailgate On” as they say.

Don’t mind if I do. These small details may not seem like a big deal, but how is a Solo cup in Georgia red or Kentucky blue going to look juxtaposed with your Gamecock garnet lucky shirt?
