For years, we’ve received inquiries as to when events were going to be taking place — and now there’s a convenient location to check on a date, review event details and even get to know a bit more about the organization that will benefit. Thank you to everyone who helped get the word out about our new social calendar — the response has been amazing. This is a work in progress, and we will continue to include new events as they come in, so be sure to check back often. Helping us kick off the social season is our Hot Couture Fashion pictorial, put together with help from Robin Fleming of La Casa Hermosa of Wellington. From our front cover, featuring polo star Jeff Blake, to the amazing looks on this month’s fashion pages, you can see why so many turn to La Casa Hermosa when planning for the social season. Special thanks as well to this month’s featured fashion photographer, Osiris Ramirez. The Wellington Preservation Coalition is at it again! This time, helping Elbridge Gale Elementary School plant a garden where children can plant seeds, watch them grow and harvest their creations, all while learning crucial lessons. This project was made possible in part by the Wellington Preservation Coalition, which donated funds for the Aquaponics system and materials. Also this month, we visit James Lala’s Wellington Quarantine, which is like Ellis Island for horses coming from abroad. Aside from his crucial work with the industry, Lala also offers a safe haven for unwanted mares.

Wellington Seeks K-Park Tax Refund Wellington is seeking to undo a mistake that left the village paying $184,000 in taxes last year on its K-Park property and is willing to take the issue to court, Village Attorney Laurie Cohen said last month. “I don’t know whether it will be successful, but we’re going to give it a shot and press the issue,” she told the Wellington Village Council. Wellington staff has not been clear about who dropped the ball, but Cohen said she thought the mistake was caused both by Wellington staff and the Palm Beach County Property Appraiser’s Office, which sent the tax notice to the wrong address. “I think there’s still some shared responsibility,” Cohen said. “They had been provided with a copy of the lease. They knew full well that there was agricultural use on the property, and, without question, they knew our address had changed.” Though the property appraiser’s office denied Wellington’s request to go before the Value Adjustment Board, Cohen said she thinks that was a mistake. “This is not a situation where we’re trying to get away with something,” she said. Folkestone/Yarmouth Plan — A road closure will not fix the problems in the Folkestone/Yarmouth neighborhood, residents told members of the Wellington Village Council last month. Most of the problems, residents said, have come from transient residents in the multifamily portions of the neighborhood. Council members directed staff to meet with residents and work on a plan to combat the problems, which include neglected buildings, maintenance issues, street lighting, drug activity and unsupervised children. Though closing a part of Folkestone Circle is not entirely off the table, council members felt the neighborhood needed a more comprehensive plan. “This doesn’t go far enough,” Councilman John Greene said of the road closure. “I want a comprehensive plan that says we’re going to take control.” Wellington staff originally

proposed closing approximately 280 linear feet of Folkestone Circle between Yarmouth Court and Carlton Street in order to stop cut-through traffic. During public comment, residents said they need help, but weren’t convinced closing the road was the way to do it. World Equestrian Games, Part 2 — The village may have another shot at hosting the 2018 World Equestrian Games after the sport’s governing body reopened bidding for the honor. Wellington Village Council members asked staff to set up a workshop with Equestrian Sport Productions, which again is hoping to bring the prestigious event to Wellington. Though Bromont, Canada, a suburb of Montreal, was initially chosen to host the games, the city was unable to earn the financial support required before a bid can be secured. On July 1, the Fédération Equestre Internationale (FEI) announced it would reopen bidding. Village Manager Paul Schofield told council members that the show promoters were looking to apply again to host the games. Equestrian Sport Productions placed a bid last year to host the games, but later withdrew it, citing a lack of support from council members. At the time, Equestrian Sport Productions and its parent company, Wellington Equestrian Partners, were engaged in escalating lawsuits with the Village of Wellington. In recent months, the lawsuits appear to have eased. Mayor Bob Margolis suggested that the council meet with representatives in a public workshop. “Since communication is really important regarding this issue, and there really wasn’t much last year, I’d like to throw out the possibility of having a workshop to discuss everything,” he said. Councilwoman Anne Gerwig supported the idea. “I don’t know how we could do this without it,” she said. “We need to know what they expect from us as far as cooperation or investment. If they expect something of us, we need to know that.”

Community Comes Together To Make

eep seeds have been planted at Elbridge Gale Elementary School in Wellington — seeds that will blossom into a better future as each child who passes through the doors of the school learns important environmental lessons.

For Pasterczyk, a garden project was on the top of her list for the school. “We had some gardens in disrepair,” she recalled. “It was a match made in heaven. Unbeknownst to Tom, this was one of the plans we had for the school. But we had limited funds.”

On Saturday, Sept. 28, volunteers, school leaders, parents and children came together to celebrate the Green Apple Day of Service, building a beautiful garden where children can plant seeds, watch them grow and harvest their plants, all while learning crucial lessons.

After many meetings, it was decided the garden revitalization would be set for the national Green Apple Day of Service. It was also an opportunity to propel Elbridge Gale to become a Green School of Excellence. “We’ve been a Green School of Quality,” Pasterczyk said. “In order to jump to the next level, you need a project that the community can get involved with.”

The event was made possible in part by the Wellington Preservation Coalition, which donated funds for the Aquaponics system and materials. School officials are hopeful the project will earn Elbridge Gale a Green School of Excellence designation. Wellington Preservation Coalition Executive Director Tom Wenham approached Elbridge Gale Principal Gail Pasterczyk with the idea, which grew out of the 2013 Florida Green, Energy & Climate Conference. There, Wenham met with Wellington Projects Manager Mike O’Dell, who was looking for a school garden to use as a model for a new soil project, and Wenham immediately thought of Elbridge Gale. He met with Pasterczyk, who was enthusiastic about the idea.

And this project truly brought out the entire community, from representatives of the Village of Wellington, Palm Beach County and the Wellington Garden Club to parents, teachers, students and business leaders. For Wenham, the project brought back fond memories of his childhood, when he’d pick fresh fruits and vegetables. “I thought, ‘Why can’t we still be doing the same thing today?’” he said. “We wanted the kids to see we mean business and are really invested in this. The Aquaponics system is great because it can show kids that their food doesn’t come from [the grocery store]. We want them to know they can grow their own vegetables and eat what they grow.”

Students have put their own personal marks throughout the garden, decorating bird houses and rain barrels that will provide sustainability for the garden, using reclaimed water and attracting wildlife. They also had the opportunity to plant seedlings. “They’re so excited about this project,” fifth-grade science teacher Sheila Galera said. “Since the Aquaponics system has been installed, it has been impossible to keep them in the classroom.” Second-grader Aspen Sybil said she can’t wait to get her hands on some ripe tomatoes. “I think this is really exciting,” she said. “There are a lot of new and pretty plants and new things for us to see. Last year, we were able to grow some vegetables, but now we can grow more. The tomatoes were my favorite.” As part of the project, volunteers fixed and replanted the Aquaponics system, built six in-ground garden beds and planted more than 150 seedlings provided by the Palm Beach County Extension Institute of Food & Agricultural Sciences. Arthur Kirstein IV, the institute’s agricultural economics development coordinator, is a 34-year Wellington resident who wanted to get involved when he heard about the project. “I work with 24 other schools growing seedlings for their gardens,” he said. “I wanted to work with Tom [Wenham] because we share the same love of this community. It’s a great project for community involvement.” The project has taken in all aspects of Wellington, even including the horse industry, which provided much of the fertilizer for the project. “The village really wants to encourage sustainability,” O’Dell said. “Horse waste is a huge issue for us. This is one of the ways we can use it.” Pasterczyk noted that this provides even more lessons for the children about ecosystems and how animals contribute to the life cycle. “They can see we embrace all aspects of the equestrian community,” she said.

In addition to funding building materials, the Wellington Preservation Coalition donated $2,300 for the Aquaponics gardening system. Different from a traditional hydroponic system, the Aquaponics system is its own mini ecosystem. Herbs and other plants grow in soil above a tank of fish. Water from the tank is used to hydrate the plants and is then pumped back into the tank. The fish remove all the nitrates from the water so it can be reused. “The kids love looking at the fish, and it helps them learn about it,” Wenham said. it’s a sustainable ecosystem all its own. “I think it’s very important children are learning these lessons,” he said. “They are our future leaders, growers, farmers, scientists and conservationists.” Student AnnaMarie Renda was excited to see so many people coming out to help her school. “It feels amazing,” she said. “This is going to be really cool. I can’t wait to see the flowers blooming and the bees and birds. It will help teach us new things about plants. In our classroom, we’re learning about

life cycles, and we can see everything growing in our garden.” Galera said the lessons learned from the new gardens will be numerous. “There’s so much we can teach,” she said, “from animal and plant life cycles to the conversion of nitrates and nitrites. The children will be able to actively understand what they’re reading in their textbooks.” The students will be able to monitor as the fish grow, as well as the plants both in the Aquaponics system and

elsewhere in the garden. They can even monitor the water in the system and learn about pH balance and other chemistry lessons. When all the plants have grown, kids will get to taste the fruits — well, vegetables — of their labor. “The Jacobs family has agreed to send their personal chef to prepare food for the students,” Wenham said, referring to the benefactors behind the Wellington Preservation Coalition. Pasterczyk said this will be an important step in teaching the children to make healthy choices that will follow them through life. “The chef will show them how they can eat vegetables and enjoy them,” she said. “We really hope they get excited about learning to cook and eat the vegetables they have grown.” The remaining vegetables will then be sold to parents and staff, and at the Wellington Green Market to raise money for the school. Pasterczyk said this was all possible thanks to all the sponsors, especially Wenham and the Wellington Preservation Coalition, and also because of her dedicated staff. “They have been on board 100 percent,” she said. “They have committed themselves to coming out during weekends to feed the fish and water the seedlings. They have a plan for the summer. We couldn’t do this without them.” Wenham said that is the kind of dedication that made him want to work with Elbridge Gale. “They have such a strong commitment to their students and our community,” he said. “We’d love to see this be a model for other schools, but it takes a lot of work, and they’re going to have to show they are as dedicated.” (Left) Wellington Preservation Coalition Executive Director Tom Wenham digs in to help Elbridge Gale’s garden grow.

“I have tried every diet known to man (or moms) these last few years – to no avail.” Alyson continued to tell me her story. “For example, this past summer, my best friend flew me to their home in Sonoma for an entire month. We ate nothing but organic everything, lean protein, I drank 150 ounce-plus of water a day and did a high intensity workout every morning mixing up interval training with boot camp at her gym. In exactly 30 days – I lost a grand total of THREE pounds. I didn’t even lose the initial ‘water weight’ everyone else loses.” I empathized, “It’s hard to stay motivated with minimal results.” “I’m willing to starve myself, if that would work. I even did two rounds of hCG. My wallet’s lighter, but that’s about it.” “The FDA recently published a website, www.fda.gov/hcgdiet, detailing how hCG diet products are illegal, and how restrictive diets such as that one can cause electrolyte disturbances, an irregular heartbeat and are potentially fatal.” I continued, “But looking at your diet history, I don’t think the problem is one of eating too much.” “Dr. Woliner, what else could it be? I have a friend that blew up taking Abilify for her depression, and another while on Actos for diabetes, but I’m not on any medications.” “It’s true that many drugs have weight gain as a common side effect [1]. But there are other causes of weight gain. With your other symptoms of cold intolerance, fatigue, and constipation, I’m thinking that you have an untreated thyroid condition [2].” “I begged my other doctors to treat me for that, but they all said no.” “Some doctors focus too much on lab tests without considering the patient’s history and physical exam findings [3]. Thyroid hormone resistance is more common than people realize.” Alyson sat with a puzzled look on her face. “So, even if these doctors said my tests were normal, I might still have a thyroid problem? [4]” “The word ‘normal’ has many meanings. There is a difference between ‘common’ and ‘optimal’ [5]. Rather than using a range that includes people who are overweight and being treated for high cholesterol and other conditions, perhaps it would be better to use narrower ranges of persons who feel ‘dandy’ [6].” “Does anyone even use that word anymore?” “My practice is built on patient-to-patient referrals. Just liking my bedside manner is not enough to convince your friends to see me. You have to glow. So yes, I do plan on making you feel dandy.” After finishing Alyson’s physical exam, my staff used our Korr indirect calorimetry machine to measure her metabolic rate [7]. “You’re at ‘minus 20%’. That’s one of the slowest metabolism’s I’ve ever seen!” “How do we fix that?” “I use a holistic approach that combines behavior changes, diet, exercise, supplements, and of course medications [8,9]. I prefer to use T3 based drugs as they have been shown to cause significantly more weight loss than T4 drugs such as Synthroid alone [10].” As I ramped up Alyson’s dose of thyroid medication, her fatigue and other symptoms began to resolve. To be on the safe side, I periodically rechecked her EKG and bone density, which remained normal [11]. “Dr. Woliner, your scale says I only lost 49 pounds, but at home, naked, I’m down 51!”

Unwanted Mares Find A Home Thanks To James Lala’s Wellington Quarantine

James Lala’s Wellington Quarantine is like Ellis Island for horses coming from abroad. The peaceful Wellington facility, just minutes from the show grounds, aids emigrating horses through federal requirements, including one that mandates that stallions breed two test mares, each by live cover. The bred mares are then tested and, if found negative for CEM, a sexually transmitted disease, the

stallions are that much closer to getting to their final destination. With more than 200 international sport horses going through Wellington Quarantine each year, Lala must have enough mares on hand to provide the CEM process required by the United States Department of Agriculture (USDA). As a bonus to fulfilling the requirements of the quarantine, Lala also has an opportunity to give unwanted or rescued horses a quality life. “I really like our mares, and we give them a great home,” Lala said. “It’s important that they are safe for the stallions — that is our greatest concern. So, for a mare to be useful, she has to have a good nature. They should be sturdy and on the smaller side.”

said. “She is keenly aware of the risks involved. We work closely together to create an environment where the stallions, mares and handlers are as safe as possible.” Lala gives a second chance to mares whose future is questionable or who might otherwise be euthanized. His program gives them a new purpose and a home with quality care. Sometimes the horses don’t take to the breeding process, but Lala just can’t help but save them.

“I have one Pinto mare I adopted just because I thought she was cute,” he explained. “She is a great test mare and, it turns out, she is a great trail horse. We have one Thoroughbred, a 4-year-old with the most crooked leg I’ve ever seen. The majority of breeders would have put her to sleep. She is one of the sweetest horses. I love her. I am so pleased that I could give her a second chance. She is a very good test mare.”

Some of the mares were donated to the facility by previous owners. “Either they were lame, not useful, they don’t want them anymore or they simply couldn’t afford them anymore,” Lala said. “Sometimes they were using the mare as a broodmare, and breeding just didn’t make sense any more. When this happens, they give them to me. They may check in on them, but they sign them over to me.” Lala also works with several rescue organizations to find the right mares, including the South Florida Society for the Prevention of Cruelty to Animals, Elite Rescue, and the Florida Thoroughbred Retirement and Adoptive Care (TRAC) Program. “We have gotten a bunch of mares from the SPCA down in Hialeah,” Lala said. “Lisa Wagner at the SPCA does an incredible job. The horses all arrive looking good, with front shoes and up-todate on worming and vaccinations. She

“We have the most beautiful mare that a family gave us, and I am hoping one day she’ll be sound again to be useful,” he said. “We can give these horses a home for life.” While taking in unwanted horses, Lala learned firsthand that he would rather be resourceful and search for alternatives than end the life of one of his mares. “A few years back, I took in one that just didn’t work out as a test mare,” he said. “She was very lame. I searched for months to find her a new home. I felt there was no option but to euthanize her. I was in the office crying as the truck was on the way. I couldn’t stand it. I called the truck and stopped it. I reached out again, and this time was able to find her a home as a broodmare in Alabama.” In addition to the import and export quarantine business, Lala runs horse shows and schooling opportunities, hosts and gives clinics, and takes in rehabs and quality young horses in training. He also teaches and has several lesson horses. He enjoys showing his own hunter, Casares, and his jumper, ASAP. SeaView Eyecare Focuses On Getting Each Patient The Proper Lenses Dr. Amanda Weiss, owner of SeaView Eyecare in Wellington, sees to it that each of her patients receives exactly the correct fitting, while enjoying the company of a pleasant and professional staff. Weiss, who was raised in St. Louis, where she did her undergraduate work, received her doctorate in optometry from the Southern College of Optometry in Memphis. “Optometrists specialize in optics. That’s how the profession was founded — correcting the optical errors in the eye,” Weiss said. “In the past 30 years, it has become increasingly more medical, where optometrists now treat eye infections and diagnose and manage glaucoma, cataracts and macular degeneration. However, optometry stops short of doing surgery.” The goal at SeaView Eyecare is to make patients’ visits a comfortable experience. “We actually make it fun here for adults and for children,” Weiss said. “Going to the eye doctor is not just about coming out with a prescription. It’s about first coming out with the right prescription for each eye and with both eyes together, which is a different thing.” Patients need not only the correct prescription, but also the correct type of lens for the purpose. “There are lots of different kinds of lenses made by different manufacturers with many different types of optics,” she explained. “The advantage of going to an establishment where people are licensed and are trained in optics and all of those types of lenses is that you get the appropriate type of lens for your needs.”

Progressive addition lenses, or no-line bifocals, are popular, but some people have trouble adjusting to them due to incorrect fitting.

Optometrists specialize in how the brain uses the eyes together. “That’s where I think we excel here in this office,” she said.

“Every progressive lens is different,” she said. “Where does the reading prescription start in that lens? How much distortion are you going to get when you look out to the sides? If the right style of progressive lens wasn’t chosen for you, or the measurements that are taken when we fit that lens for you are not accurate and done by a professional, then it’s very unlikely that someone will be successful and happy with their vision in that lens.”

Binocularity often must be learned, especially in young children. “If you have a child who has an eye muscle problem or a big difference between the prescription in each eye, that’s something that needs to be corrected at a very young age to prevent a lazy eye,” said Weiss, who examines children as young as 3.

Optometry has become increasingly more commercial, and there are many retail practices that focus more on sales than a good fit, Weiss said. “Most salespeople don’t have the knowledge of optics, and that’s where, again, we differ in that we have people who are licensed and trained in optics,” she said.

Volunteering comes naturally to Nancy Pullen. Growing up in Miami, she watched her parents give of their time to many organizations. It wasn’t long before she followed in their footsteps. “My first shot at volunteerism came when I was in junior high school,” Pullen said. “I spent my summer vacation as a candy striper at Jackson Memorial Hospital. During the school year, I volunteered there on Saturdays. My desire to choose a career in nursing was solidified there.” Pullen has continued to volunteer and remains as committed to the idea of helping others as she was during that summer vacation. She is Wellington The Magazine’s November nominee for our Volunteer of the Year Award. Pullen followed through on her decision to become a nurse. She earned an associate’s degree in nursing from Broward Community College and a bachelor’s degree in nursing from Barry University. “I began my nursing career at North Shore Medical Center in Miami,” Pullen said. “That is where I met my husband, Fred. He had been volunteering at a mission hospital in Haiti and was severely injured in an automobile accident there. He was flown up to Miami for treatment,

and I was his admitting nurse. I worked in orthopedics and then in the intensive coronary care unit at North Shore.” Pullen has been married to Fred, an ear, nose and throat specialist, for 33 years. They have three stepchildren and six grandchildren. A few years after they tied the knot, Pullen began working in her husband’s private practice so that their days off and vacation time coincided. During this time, she also volunteered with the Mercy Hospital Foundation in Miami, eventually serving as president of its board of directors. The Pullens would soon leave Miami behind. “We had begun spending summers on the island of Nantucket in Massachusetts,” she said. “We purchased a second home there in 1990, and in 1993 we opened a bookstore on the island.” Her place of residence may have changed, but Pullen’s devotion to volunteerism remained steadfast. “When we lived on Nantucket, I volunteered with the Nantucket Historical Association as a docent at their historical sites,” Pullen said. “I also volunteered with A Safe Place on Nantucket, where victims and

survivors of domestic violence could receive treatment, counseling and support. I also volunteered at the Nantucket AIDS Network. We left Nantucket in 1999 so that I could attend seminary at the Orlando Institute. Part of my training was to serve an internship at a church.” A year later, the Pullens found themselves living in Wellington. “A close friend had started a church in Wellington, and we saw what a beautiful community it is,” Pullen recalled. “We moved here just as the building boom hit. Fields and pastures were quickly replaced by houses, stores and restaurants. Instead of having to drive to get to those things, we realized that we never have to leave Wellington for anything!” The Pullens became members of New Community Church (now LifeChurch) in Wellington. “I began my church staff volunteer position there,” she said. “That turned into a full-time volunteer position that lasted until 2007.” That is when Pullen left New Community Church and began volunteering with Bill Tumulty in the Life Missions Department of Christ Fellowship Church, which led to her current involvement with the Big Heart Brigade, a nonprofit organization started in 1992 by

Tom DeRita and his son, David. “Bill was already on the board of directors of Big Heart and asked me to help him price out needed supplies and place orders for their annual Thanksgiving feast,” Pullen said. Big Heart Brigade’s mission is to pay attention to those in need who are struggling to make ends meet. Pullen has been an organization board member since 2009. “The board is made up of leaders in business, a few Christ Fellowship staff and Palm Beach Gardens Fire-Rescue personnel,” Pullen said. “Every penny raised for the Big Heart Brigade goes directly into our projects. Besides the Thanksgiving feast, Big Heart helps provide scholarships for the children of fallen police officers and firefighters. We also volunteer our efforts for the Wounded Warrior Project.”

This year, an intrepid group of volunteers from the ages of 9 to 90 started baking pumpkin bread in August so that each meal would have a special home-baked treat. Pullen feels blessed to be doing something that brings so much joy to others. “I look forward to going to work every day,” she said. “I can’t wait to see what opportunities and adventures are waiting. I can honestly say that I work with the best and brightest and most inspiring people in the business, including all of the Big Heart crew. The Bull McCabe’s Brings Unique Celtic Cooking Style To Wellington

ffering a unique twist on traditional Irish and Celtic flavors, the Bull McCabe’s Irish Pub & Tap Room puts the focus on flavor. Located in the original Wellington Mall, the restaurant offers great food and brews with an emphasis on local produce. The pub opened this summer and has already become known for its unique Celtic Black Rock cooking style, which lets patrons experience the joy of traditional Celtic rock cooking. Owner Alan Craig is a native of Dublin, Ireland, and has operated several popular Irish pubs throughout South Florida. “I’m a musician and have played Irish music for many years,” he said. “There was no venue in South Florida for something like that.” He also owns the Field Irish Pub & Eatery in Dania Beach. He said he saw an opportunity when the space in Wellington became available. “There aren’t any other Irish pubs in the area,” Craig said. “I wanted to bring the passion we have for this industry here to Wellington.”

free and organic products, sourced from local farms. “We support local farms within a 50-mile radius,” Craig explained. “Our beef is free of growth hormones, sourced locally from the Seminole Tribe of Florida.” The pub is warm and inviting. Central to the space is a large bar with more than 40 brews on tap. Patrons can sit at the bar or at one of many dark wood tables, or choose to curl up in one of the comfortable overstuffed chairs scattered about the space. There is also a beer garden outside with a full bar, televisions and 20 draft brews. There, patrons can sit at the bar or in one of the intimate cabanas to dine al fresco. The Bull McCabe’s opens daily at 4 p.m. with happy hour specials from 4 to 7 p.m. Monday through Friday. Similar to its philosophy on food, the pub is a craft brew hideaway, offering more than 40 draft beers that include local favorites as well as classic beers. The brews come from as close as Jupiter — Monk in the Trunk — and offer a wide array of options. “We have one of the largest selections in Palm Beach County with 43 craft brews from all over the world,” Craig said. “We offer guests the opportunity to drink like a local, featuring several local beers; 15 of our beers are |wellington the magazine| November 2013

Though people may be drawn in with drink specials and entertainment, the delicious menu will keep them around. The menu is crafted around the Celtic rock cooking system. “You sear meat on a heated volcanic stone,” Manager Robert Feinson explained.

Make sure you save room for dessert. Chef Dennis Thibodeau offers a delectable dish as part of the dessert of the day ($4 to $8). One of the most popular items is the Bailey’s Banana Caramel Pie, a delicious combination of homemade caramel with bananas and chocolate that makes for a tantalizing bite. Or try the Lemon Custard Raspberry Puree, a recipe handed down through Thibodeau’s family. The lemon custard is sweet and falls in perfect harmony with the tangy raspberry flavors.

The brew won the company a gold medal, which can be seen hanging in the Bull McCabe’s. Patrons can also enjoy live Irish music during dinner several nights a week. “We have a former member of the Irish Rovers who plays Wednesday and Thursday nights,” Craig said. “On Friday night, he’s joined by another member of the Rovers, and they play as a duet. The stones are heated to more than 800 degrees in a special oven, and the dish is served on an individual stone right at the table. “The meat is cooking in its own juices,” Craig said. “It’s incredibly healthy. It doesn’t use any oil or butter. It sears the meat and gives it a natural flavor.” Try the 8 oz. filet ($28.95), a juicy cut of meat served on the Celtic rock with the vegetable of the day and dipping sauces. The taste is unique, and the meat is fresh and flavorful, showing off the beef in all its glory. The Bull McCabe’s also offers classic Irish favorites. The Bangers & Mash ($12.95) is a bountiful dish of fresh mashed potatoes and bangers served with a homemade sauce. The dish tastes fresh but not filling — a delicious take on a favorite dish.
