The Gypsy’s Horse brings Ireland to Wellington In what once was its own remote corner of Palm Beach County, folks in Wellington always have found a place where everybody knows their name.

You’ll find Guinness and Murphys and Harp among the traditional pub brews. There’s also Strongbow Cider and Magners Cider, Stella, and Yuengling.

But Colin Jackson insists the greeting come with an Irish brogue. So finding no traditional pubs around, he opened one six years ago. He is co-proprietor with Paul Rowan.

But in addition to beer and banter, The Gypsy’s Horse provides something difficult to find in most South Florida eateries – a unique menu. “All the recipes are from home,” Jackson says.

He built the heavy wood tables himself, and imported the chairs from Ireland. The beer barrels serving as high toppers actually once held whiskey. He installed a tiny stage in the corner for live music and ensured that the bar was as stocked as any in the Old Country. And he made sure that regulars could have their own inscribed pint to drink from. Throwing a nod to the surrounding equestrian life, he christened it The Gypsy’s Horse. It’s tucked inside the original Wellington Mall, but most people enter through the outside, where an open-air patio provides additional seating. “It is a traditional Irish pub,” Jackson says. “Around 5 o’clock the bar is full of people who will be here 2 to 3 times a week.” Tacked above the barstools are a couple rows of small gold plaques inscribed with the names of those people in the exclusive 25 Club. “We have 25 different drafts. You must drink one of each in a week,” Jackson says. “It’s only a pint. You wouldn’t believe the number of people who have tried and failed. Some people have tried to do it in a day,” he says with a knowing smile.

Come during happy hour and try some Irish samples, such as Mussels Green with Garlic Cream Sauce or Grandma Rita’s Irish Sausage – a cheese and potatofilled sausage wrapped in bacon. And yes, Grandma Rita is real. She’s the chef’s grandmother, whose recipes flavor the menu. “We have a lovely 20-ounce ribeye in red cabbage, and another very popular dish is the braised pork shanks in a cream sauce,” Jackson adds. On this menu, The Pie Shop doesn’t refer to desserts. There’s shepherd’s pie, chicken pot pie and traditional Beef-n-Guinness pie. In fact, the pies are so popular, Jackson has taken to freezing some so that folks can take them home for another night’s meal. As in true pub fashion, you don’t need to be hungry to visit, though. There’s live music every Friday and Saturday with no cover charge. On the far side of the bar is a pool table and dartboards. And on Thursdays, the karaoke microphone is open. “We have a lot of fun here,” Jackson says.

And it’s not just Americans competing at the Palm Beach International Equestrian Center anymore. There’s a larger and larger contingent of international riders heading to Wellington. This includes high-level riders such as Britain’s Nick Skelton and Pablo Barrios of Venezuela, as well as younger riders looking to make their mark. Among them are sisters Eirin and Lene Bruheim of Nordic Lights Farm, profiled this month. While 17-year-old Lene rides under the U.S. flag, 19-year-old Eirin competes for Norway. Both have decamped to Wellington for the season. Quickly becoming one of the largest events on the social circuit, the FTI Great Charity Challenge returns to the show grounds Friday, Feb. 17, as 32 local charities will have the chance to win their share of $1.5 million as world-class and amateur riders compete. We preview that event this issue, as well as the more light-hearted Fete Cheval fundraiser for the EQUUS Foundation set for March 9. For music lovers, a new event debuts this month: Saddle Up for Jazzfest Wellington arrives Feb. 10-11 to the International Polo Club Palm Beach. Medical School Eyes Wellington Campus

Wellington has its sights set on hosting a medical school in the community after a visit last month by an official from the Lake Erie College of Osteopathic Medicine (LECOM). “It’s not 100 percent set, but they seem committed and have indicated this is something they would like to see happen,” Wellington planner Bill Nemser said. The school is expected to present the campus for consideration in its budget in June. “Once that’s approved, they can go ahead and acquire space,” Nemser said. “We anticipate them having a location here by the end of 2012.” LECOM is based in Erie, Pa., with a branch campus in Bradenton, Fla., and offers careers in osteopathic medicine, pharmaceuticals or dentistry. Already, Wellington Regional Medical Center trains LECOM students, making Wellington an ideal place for a new campus. In January, LECOM Provost Dr. Silvia Ferretti visited Wellington to meet with local officials and business leaders. A medical school has long been in Wellington’s economic development plan, as an anchor of the planned Medical Arts District. “Having a medical school is a fantastic way to attract research and other uses to the area,” Nemser said. “It’s going to create all kinds of jobs, from instructors to support personnel.”

Wellington Election Update — The race for Seat 4 on the Wellington Village Council heated up in January when former Councilman Al Paglia, previously running for Seat 1, filed to run against Vice Mayor Matt Willhite. Two council seats and the mayor’s seat are up for grabs March 13. Candidates have until mid-February to make the ballot. Seat 1, currently held by termlimited Mayor Pro Tem Dr. Carmine Priore, has drawn two candidates, John Greene and Shauna Hostetler. Paglia said he switched seats to oppose Willhite because it is important that there be a contested race. “It’s important for people to step up to the plate and be involved,” Paglia said, adding that he chose to oppose Willhite because he believes the incumbent is a force of opposition on the council, voting against projects that Paglia feels are good for the community. Willhite said that he is proud of his voting record and noted that often, he opposes items because he has unaddressed concerns. “People don’t want the people they elect to rubberstamp everything that comes before them,” he said. “I have to be able to justify what I’m spending the taxpayers’ money on.” Tiger Shark’s New Design — A new generation of Wellington children has made its mark on the community. In January, the new look for the playground at Tiger Shark Cove Park was unveiled, designed by kids for kids. The playground, located at the corner of Greenview Shores and Greenbriar boulevards, was built in 2000 through a community-led effort. As part of a plan to revamp the playground, designer Jane Lewis Holman of Leathers & Associates met with students at Wellington schools and let them have a say in the design. Holman said that most of the students agreed that the ocean theme should stay, and offered ways to improve on it with sea creatures, submarines and more. One of the biggest updates will be to the pirate ship. The new design will add a center platform that rocks back and forth, giving kids the illusion that they are sailing the high seas. Holman encouraged the community to turn out in March and help rebuild the park. “We always try to involve the community and get them to come out and help us build these projects,” she said. FTI Great Charity Challenge Returns To PBIEC Feb. 17 By Lauren Miró

Charities across Palm Beach County will have the chance to win their share of $1.5 million as world-class and amateur riders compete as part of the 2012 FTI Great Charity Challenge presented by Fidelity Investments on Friday, Feb. 17 at the Palm Beach International Equestrian Center.

The charities chosen included the two pre-qualified charities, the Caridad Center and the Wellington Community Foundation, and the randomly selected charities, which were as follows: the American Humane Association, the American Red Cross, Be A Star Foundation, Big Brothers Big Sisters of Palm Beach and Martin Counties, Big Dog Ranch Rescue, Child and Family Connections, Children’s Home Society of Florida, Greyhound Pets of America, Gulfstream Goodwill Transition to Life Academy, the Hanley Center Foundation, Hospice of Palm Beach County, Jewish Adoption and Foster Care Options (JAFCO), Junior Achievement of the Palm Beaches & Treasure Coast, the Legal Aid Society of Palm Beach County, the Leukemia & Lymphoma Society, the Literacy Coalition of Palm Beach County,

The Great Charity Challenge, first suggested by Bellissimo’s daughter Paige, began two years ago as a way for the equestrian community to give back to Palm Beach County. “In two years, the event has raised more than $1.5 million and is targeting to raise $1.5 million this year alone,” Bellissimo said. The 32 charities will split the $1.5 million prize, with each taking home a guaranteed $10,000 and the winner taking $150,000. “One-hundred

Three others will be added in the weeks leading up to the event, with one final charity added on the night of the competition. “Every charity has an equal chance of being selected and then an equal chance at winning by randomly being assigned to a rider,” Bellissimo said. The charities are paired with a team of world-class and amateur riders who compete over a course of fences in a relay race. The fastest time determines the winner. “It’s a family-oriented equestrian relay race led by Olympiccaliber athletes,” Bellissimo explained. Each charity was randomly assigned a sponsor — a generous family or individual who donated money to make

Hatsume Fair Returns To Morikami In March By Deborah Welky

One of the hidden jewels of Palm Beach County lies just to the southeast of Wellington, and Bonnie LeMay is inviting everyone to discover it — the Morikami Museum & Japanese Gardens. As Morikami park administrator for 15 years, LeMay knows better than most what secrets the 200-acre site holds — everything from bonsai gardens to a Japanese tea room. But, from 11 a.m. to 6 p.m. on Saturday and Sunday, March 17 and 18, visitors will additionally get to experience the Hatsume Fair. “Hatsume (pronounced HOT-soomMAY) means ‘first bud of spring,’” explained LeMay, a Wellington resident. “And for the fair, we transform the park into a very unique Japanese spring festival. There are drum performances, martial arts demonstrations, bonsai and plant sales, garden talks and walks. There is also an anime and cosplay contest.” Anime and cosplay refer to the Japanese form of animation, and participants come dressed as their favorite characters. “We also have bounce houses, face painting and a number of Japanese craft activities for the children,” LeMay added. Foodies will appreciate the Asian and American food vendors, the Kirin beer garden, the sake stations and a variety of “wacky Japanese snacks,” LeMay said. HeavyGrinder, a Japanese DJ now living in the United States, will stage a celebrity performance, as will the Florida International University Para Para dancers.

“I’d like to extend a personal invitation to my fellow neighbors in Wellington,” LeMay said. “Morikami is a wonderful environment to experience. While our festivals are fascinating and informative and fun, it’s great to explore Morikami anytime, especially being so close.” Since 1977, the Morikami Museum & Japanese Gardens has been a center for Japanese arts and culture. Inside, the museum features items from its own collection as well as those on loan from private collectors and other institutions. Objects used in everyday life are on display, offering a glimpse into Japanese life throughout the ages. The Don and Beverlee Kohnken Gallery features monthly rotating art exhibits and helps to answer the question, “What is Japanese about Japanese art?” In addition, there are two permanent exhibits, one of which reveals the agricultural experiment that first

brought George Morikami to the Sunshine State and another that transports young visitors to Japan. The Donald B. Gordon Library houses 7,000 volumes on all topics Japanese. Outside, the Morikami Gardens (named Roji-en or “Garden of the Drops of Dew”) encompass six distinct and diverse areas, showcasing different historical periods and styles of Japanese gardening. Garden designer Hoichi Kurisu constructed them in “the spirit of the masters” and was inspired by the famous gardens of Japan. Enjoy the historical, technical and aesthetic aspects of the surroundings, or relax on a bench or boulder, taking in the sights and invigorating yourself toward personal insight and discovery. Fete Cheval, presented by Spy Coast Farm, will take place Friday, March 9 in the International Club at the Palm Beach International Equestrian Center in Wellington. The popular event serves as the primary fundraiser for the EQUUS Foundation, which is dedicated to improving the quality of life of horses, promoting the use of horses to enrich the lives of those in need and educating the public about the horse’s unique ability to empower, teach and heal. The foundation provides financial support for many worthy, horse-related organizations and, starting in 2012, will be offering equineservice academic scholarships to stimulate volunteerism. Fete Cheval is one of the most highly

anticipated entertainment events of the Wellington horse show season. After a cocktail reception, silent auction and gourmet meal in the International Club, the Fete Cheval main event is the Gymkhana Games on Horseback, staged in the International Arena. World-class riders come together for a little levity. They compete at fun games like Egg and Spoon, Musical Stalls, Sit a Buck and more. Many of the games are performed bareback. The shenanigans and mayhem that ensue make for a completely entertaining evening. Wall Street Farm also serves as home to the Wellington Interscholastic Equestrian Team. “I am co-chairing Fete Cheval with Hillary Dobbs and Patricia Keenan because I believe in the EQUUS Foundation’s mission to help horses heal people and to educate people about the great gifts horses give us,” Elizabeth Press said. “Through the foundation, many worthy organizations are funded. Eirin And Lene Bruheim Of Nordic Lights Farm Focus On The Future By Spending Time In Wellington By Rebecca Walton

It is no secret that the Winter Equestrian Festival at the Palm Beach International Equestrian Center is the top destination for riders around the world looking for the best competition. That’s why top young riders Eirin and Lene Bruheim have made Wellington their home base this season as they look to continue climbing the ranks in the sport they love. Eirin and Lene are sisters who ride out of their family’s Nordic Lights Farm,

which includes a year-round residence in Tomball, Texas. Eirin is a 19-year-old amateur-owner rider who competes for Norway in the jumper ring. In contrast, 17-year-old Lene is a junior rider who still competes in the hunter, jumper and equitation rings as she continues to improve, and will represent the United States when showing. Their parents, Bjarte and Elisabeth Bruheim, are both from Norway, and the girls’ extended family still lives

there as well, allowing them the unique opportunity to choose which country they would like to represent. “Competing for Norway is an honor,” Eirin said. “That’s where we go for summers and winters, and that’s where I have my childhood memories. competitive sport, successfully showing at the top venues in the country and continually adding new mounts to their impressive string of talented horses. Last year, Eirin had the opportunity to compete internationally in France at Jumping Chantilly and Fontainbleau, before taking a six-month break to focus on school. Meanwhile, her sister represented Nordic Lights Farm in the United States and moved from the children’s hunters and jumpers to the juniors. Lene now has begun focusing on qualifying for the difficult medal finals held each fall. Last year, the girls came to Wellington for a few weeks to compete during WEF, but this year they will be staying throughout the circuit as they attempt to reach the highest ranks of the sport. “One of my goals is just to get my riding back to where it was before my break,” Eirin said. “I’ve been working steadily up to the high amateurs now, so I want to keep working up, build

some confidence, and get to know my horses again. I would like to start doing some Grand Prix classes again and maybe compete in some international events for Norway. Being at WEF allows you to really gain a lot of experience because you are competing over the most challenging courses and showing against the best riders.” Eirin will show her veteran mount Cicero 75, a 12-year-old Oldenburg gelding, and her sister’s newest horse Anyway, an 11-year-old Belgian mare. “They are two completely different horses, which I think is nice because then you have a horse for every class,” she said. “Cicero 75 likes lots of pace; he doesn’t like you to interfere at all because it makes him worry. great potential. “Anyway is a really good ride for me,” she said. “I’ve only had the ride on her for about two shows, but she is amazing. She is so fast that I don’t have to kick her or anything, just hold the reins. She’s careful, too, which is a huge plus.” While Eirin is showing the amateurowner divisions, Lene will be bouncing between several rings on her four mounts. In the junior hunters, she will be riding NLF Shakespeare’s Rhythm and Pristine Park, with the goal of eventually competing in a prestigious derby event, where riders compete against the best horses and riders in the country. She will also show NLF Valhall in the low junior jumpers, and Say No More in the equitation classes, including the prestigious ASPCA Maclay and USEF Pessoa Hunter Seat Medal, with the hope of qualifying for the finals at the end of the year.


“I think WEF is a really awesome show because you have people from everywhere coming to compete, and it has a great atmosphere,” Lene noted. “It’s a long circuit, but my goal is always to improve my riding, and WEF is the place to do it. I’m hoping that I will move up to the medium junior jumpers with NLF Valhall by the end of WEF, and show Shakespeare’s Rhythm in a USHJA International Hunter Derby.” Showing in many different classes keeps a rider on her toes, Lene added. “It can be challenging showing in the hunters, jumpers and equitation because you have to change your mindset, but it works pretty well,” she said. “All of my horses need a lot of leg, but they are all really talented, and I love having the opportunity to show them.” There’s more to Wellington, though, than just the show that has drawn Eirin and Lene to Florida for the winter. “Last year, we got to go to the beach, which was really fun,” Lene explained. “I am really excited to be able to go to Palm Beach again; it’s nice having it so close to the competition.”

“Wellington also has so many good restaurants and shops,” Eirin said. “You can go to the show and be in the competition mode, but then still relax at the end of the day — go have something nice to eat, maybe go buy something nice.” It will be an exciting winter for these two up-and-coming young stars. All Eyes On Wellington As WEF Hosts Olympic Trials By Lauren Miró

All eyes will be on Wellington next month as top American show jumpers compete to represent their country in the 2012 Olympic Games in London. To be conducted at the Palm Beach International Equestrian Center, the official Olympic Games Selection Trials will take place March 21-24 as part of the $6 million FTI Winter Equestrian Festival. It will run over four days and determine the short list for the United States Equestrian Team this summer. “It’s the peak of their career for someone to represent their country in the Olympics,” Equestrian Sport Productions President Michael Stone said. “We’re excited to have them here in Wellington.” Qualifying next month will put riders on the short list for the team. The final selection is slated for June 16, with riders arriving in London at the beginning of August. The trials will kick off with a series of speed rounds, in which the fastest time and a clear round over fences is key, Stone said. The winner of the trials will also be named the United States Equestrian Federation National Champion.

“The finals will be held Saturday night,” Stone said. “It’s going to be a really exciting event. There will be a huge number of locals as well as people from all over the world flying in for it.” Vying for a spot this year is threetime Olympian Laura Kraut, a Wellington resident who first represented the U.S. 20 years ago. Kraut served as an alternate for the USET at the 1992 Olympic Games in Barcelona. “It was just awesome,” Kraut said of her first opening ceremonies. “1992 was the year of the dream team — Michael Jordan and Scottie Pippen. It was also the year of [long-jump champion] Carl Lewis. I walked beside him in line. It was a lot of fun.” In the 2000 Olympic Games in Sydney, Kraut competed with Wellington’s Margie Engle, Nona Garson and Lauren Hough. She took home her first medal — team gold — in the 2008 Olympics after winning the selection trials on her horse, Cedric. Kraut, who got her start as a young child, said that going to the Olympics truly is a dream come true.

“When I was really, really young, being an Olympic rider was my goal,” she said. “It was sort of a pipe dream. I never would have thought I’d really do that. As you get older, you get a bit more cynical — you think it’s not feasible. It’s really nice to be able to say I achieved my childhood dream.” Kraut said she is focusing on preparing as she would for any other show. “I try not to get too worked up about it until I know what’s happening,” she said. This year, she’ll return with Cedric, who she said has benefited from more experience, as well as her mare Teirra. Riders may shortlist with more than one mount but will qualify for the team on only one, she said. Kraut said that holding the Olympic trials in Wellington is a natural fit — riders from all over the world compete here during season, much like in the Olympics. “It would seem awkward if they didn’t hold it here,” she said. “It has evolved into the only place for the trials for so many reasons. The footing and the equipment are of the highest quality. The atmosphere is great. The crowds in Wellington understand the sport, and it creates |wellington the magazine| February 2012

real electricity for the competition, which is good practice for the crowds at the Olympics.” Stone agreed. “It’s as close as you can possibly get to what the riders will see at the Olympic Games,” he said. “We’re really the only facility in the nation right now that has the ability to host them.” He said the conditions were similar to those riders would see in London. “We have the best footing,” Stone noted, “and it’s the only place in the nation right now where you can jump under floodlights.”

to see higher, more difficult obstacles and a different strategy from riders than they are used to. “It’s a bit different from Grand Prix jumping,” she said. “There will be no jump-off. Each round will be about time. Most of the riders you see won’t be trying to go for the win or speed, they’ll be wanting to jump clear rounds. It will be a higher level of difficulty, and you’ll see more people struggling to go clear. You’re really going to come to appreciate those who pull off clear rounds.” Kraut said that unlike many sports, show jumping is unique because the top riders in the world compete against each other regularly. “You know who the players are,” she said. “You know who is likely to pull through.” But much of it comes down to preparation and fate, she said. “I always

You have to make sure your horse is fit and feeling good, and it all just has to come together. With four rounds in one week, you have to make sure everything is where it should be.” She said that regularly seeing her competition — both for the trials and in the Olympics — helps make her more competitive. “I know their strengths and their weaknesses,” Kraut said. “It’s an advantage that I’m able to compete against the top riders in the world here in Wellington. Family-Friendly Shopping At Kobosko’s Crossing Plaza Kobosko’s Crossing is a one-of-a-kind Wellington shopping plaza serving the community since 2006. Once a farmer’s market owned and operated by Andy Kobosko and his family, it has since grown into one of the area’s most unique shopping plazas. Located east of State Road 7 on Forest Hill Blvd., in front of the Olympia community, the plaza catches motorists’ eyes as they drive by. For Dr. Randall Laurich and his wife Lorraine, owners of the Wellness Experience chiropractic office, the location is what drew them to Kobosko’s Crossing. “It’s a great location and highly accessible,” Lorraine said. “And it’s locally owned by a great Wellington resident.” The shops in Kobosko’s Crossing are all small, family-owned businesses, which is

what attracted many of them, like Pizzazz Hair Design. “Here at Pizzazz, we have a motto, which is for our customers to come in as a client and leave as family,” Salon Manager Sarah Barnette said. “Kobosko’s Crossing absolutely relates to what we believe in as a salon, it’s very family oriented.” One of the center’s unique features is its breezy walkway, which makes it easier for people to explore the different shops. “The breezeways are wide, and people walk the plaza here. You don’t find that a lot in other plazas,” said Julie Pinello, manager of Red Balloon consignment shop. “Even some of the newer plazas, you don’t find people walking, and they do here. of the shops at Kobosko’s Crossing attract all members of the community, it keeps them coming back. “People from all ages come because it’s nice and clean and beautiful outside,” said Jennifer Johnson, owner of Johnson’s Custom Cakes and More, an upscale bakery. For Kobosko, who built the plaza and stayed on as owner, Kobosko’s Crossing is a great Wellington success story. “It’s kind of a family niche shopping center, and it has got a personal service touch,” he said. “We have always thrived

High-Tech Dentistry Is A Passion For Wellington’s Dr. Laurence Grayhills Story by Chris Felker Photos by Abner Pedraza

Dr. Laurence Grayhills has switched gears a few times in his life. He started out as a reproductive physiologist working in-vitro fertilization for cattle, and now he’s a longtime, established Wellington dentist. During college, his first transportation was a Harley-Davidson Sportster he bought at auction, and he ended up involved in an export business with two friends, shipping refurbished Harleys to Europe. “That put the three of us through school,” Grayhills noted. One of his favorite hobbies used to be riding his Harley, but not anymore. “I sold the motorcycle; all I have is a scooter now,” he said. A visit to his office might find Grayhills pulling out a sample of his latest pastime — glass-blowing. But his pride and joy remains his high-tech, state-ofthe-art dental office. Grayhills said one of the most significant advancements in dentistry that his office offers is the CEREC machine — a computer-aided design and manufacturing apparatus used to fabricate porcelain restorations such as crowns, veneers and fillings. “Here we have total control,” Grayhills said. “The computer never — rarely — makes a mistake. We have a digital CT scan. We can do three-dimensional scans of somebody’s head, and know exactly where we’re placing implants.” Originally from Chicago, Grayhills, 58, has been in Florida for almost 40 years and in dentistry for 26. “I entered it a little late,” he said. Grayhills had been planning to work part-time to pay the 56

tuition, but the dean of the University of Florida College of Dentistry told him that dental school was a full-time job. However, he managed to secure a four-year scholarship. “They saw the need,” Grayhills said. “I came in with good grades. I had a master’s degree going in, so they knew I was a serious student. It was a public health scholarship.” In return, he had to give three years back by working in a public health clinic, and he chose one in Belle Glade. “They had a really nice facility. I worked as a public health officer for three years. I liked the community so much that I decided to stay,” he said. He eventually formed his own practice, which has since evolved into Grayhills Mohip Dental & Associates Laser Dental Center in Wellington. Grayhills and his partner, Dr. Vikram Mohip, offer a full menu of dental services, including high-tech, cosmetic, restorative, pediatric and spa dentistry; digital radiography; implants; and oral surgery. Both are members of the Academy of Computerized Dentistry and the Academy of Laser Dentistry. Mohip’s degree is from Nova Southeastern University, and he served his general practice residency at the VA Hospital in West Palm Beach. Grayhills earned his dentistry degree from UF in 1985, after earning bachelor’s and master’s degrees there as well. He’s also a fellow of the Academy of General

Dentistry, a distinction earned by only about 7 percent of dentists. He also served for seven years as the forensic odontologist for the Palm Beach County Medical Examiner’s Office. “I’m passionate about my work,” he said. “I’m passionate about my teaching.” Grayhills enjoys imparting his knowledge. He teaches at Palm Beach State College and is involved with the Atlantic Coast Dental Research Clinic there. One of the highlights for him is teaching a course on “the reality of dental practice,” which deals with the business side of the profession. Raquel and Brent Crowe of Illustrated Properties were both single when they met at a California real estate office in the early 1990s. Raquel was one of the top-selling agents and Brent, who arrived to learn more about a real estate career, vowed to become as good as she was — maybe better. Then again, as the saying goes, “if you can’t beat ’em, join ’em.” Within two years, they were engaged and had become a formidable real estate team. While Raquel had learned salesmanship by watching her mother run their Central American grain distribution business, Brent had worked alongside his uncle, building and selling shopping malls in southern California and selling designer water to movie stars. “I don’t think he really enjoyed selling water anyway,” Raquel said. “This wonderful country presents great opportunities to everyone. You just have to be honest, be a hard worker, be persistent and have a plan.” “You are in charge of your own success or failure,” Brent added. “Every day, we start unemployed, and we have to go and shake the tree.” And the Crowe real estate team “shakes the tree” quite well. They relocated to Coral Springs in 1996, but when Brent sold a house in Wellington, he was smitten with the area and wanted to move. “My only objection was there was no mall,” Raquel laughed. “The more homes we sold in Wellington, the more we fell in love with the area,” Brent said. “In a way, it’s like a small town.”

Now, of course, Raquel gets to live here, and have easy access to great shopping! Because Raquel speaks Spanish, she finds herself extremely busy during Wellington’s equestrian season. “When we moved to Wellington, we affiliated ourselves with Illustrated Properties,” she said. “They have the presence here. This area is equestrian, and we researched that market. I have a lot of Argentine polo players who buy and rent from us.” Brent and Raquel Crowe credit much of their success to professionalism. Product knowledge is key, and they are constantly visiting new communities, speaking with builders and developers, and attending local meetings in order to stay current.

“Before, they were too lenient; now they’re choking us,” Raquel said. “There’s a trickle-down effect. A new homeowner hires contractors and shops at Home Depot. Someone who has a legitimate job and good credit? They need to lend to these people. Vinceremos Therapeutic Riding Center Founder Has Led The Nonprofit For More Than 30 Years Story by Matthew Auerbach Photos by Susan Lerner

Wellington is known around the world as a center of all things equestrian. Riders, jumpers, dressage, polo players — the best of the best ultimately find themselves here. However, there’s another equestrian community nearby, featuring very different participants. Since 1981, the Vinceremos Therapeutic Riding Center, under the guidance of Ruth Menor, has used horses to provide therapy to those with special needs. Because of her dedication to helping those in need, Menor is this month’s nominee for Wellington The Magazine’s Woman of the Year Award. Menor was raised on a dairy farm in Michigan. When she was 12, her father died due to a farm accident. “My mother decided it was not practical for us to stay on the farm after my father passed,” she recalled. “Florida was where we used to go for vacation, so my mom thought that would be the best place for us to relocate.”

Menor is the first to admit that the idea of using equestrian activities for the physically and mentally challenged did not start with her. It is a long-established practice. “Back in Michigan, we lived near a big therapeutic riding center,” she said. “I always thought it would be great to open something like that. That’s how Vinceremos came to be.” Vinceremos is certainly not a onewoman show. Aside from dozens of volunteers and other supporters, Menor gets a great deal of support from her family. “Many of my family members are involved,” Menor said. “My mom Charlotte helped to start the organization and is still on the board of directors, one of my children (daughter Sarah) is an instructor, and my husband Mike helps with maintenance, repairs and special projects.” Ruth and Mike Menor are celebrating

their 30th year of marriage. Aside from Sarah, they have two other children, sons Michael and John. When forming the idea for Vinceremos, Menor knew she wanted to create an environment that brought the riders into a partnership with the horses. “Riding is intrinsically therapeutic,” she said. “By structuring our organization to allow more specific input from each rider, they get the fullest benefit available. Our approach is very holistic — touch the horses, watch how the horses respond, feel their movements. We work on the relationship between horse and rider. Riding impacts the rider positively on all these levels.” The largest program at Vinceremos is the therapeutic riding program, a combination of therapy and riding instruction. The program is structured

Leaving behind the world she knew wasn’t easy, but Menor was allowed to bring the one possession that would be a constant in her life for years to come. “The one thing we took from the farm was my horse,” Menor said. “That horse made the transition much easier. I didn’t realize it at the time, but my own personal therapy was underway.” Menor knew she wanted to share her deep love of horses with others. “I love the joy horses have brought to my life,” she said.

wellington woman as a riding lesson that incorporates therapeutic goals. “For a child who has lots of other therapeutic intervention, this is a fun and motivating way for them to get their therapy,” Menor said. “Our goal is always to teach them to become as independent as possible, as safely as possible. Being able to control an animal as large as a horse is a great confidence builder.” Another service provided is hippotherapy, taken from the Greek word for horse, hippos. “Hippotherapy focuses on functional outcomes,” Menor said. “The treatment is provided by a physical, occupational or speech therapist and has proven to be very effective for early intervention for kids who aren’t meeting their developmental milestones.” According to Menor, the areas she has

seen the most progress in are development of core strength and verbalization. “Parents have often told me that after riding for only a short time, their child was no longer struggling to walk independently and was taking his or her first steps,” she said. Menor is proud of the many volunteers she has at Vinceremos but knows that the success of her organization begins with her four-legged associates. “We’re very careful when it comes to choosing horses,” she said. “Physicality and temperament matter the most. We need horses that can walk, trot, canter and maybe even jump because, by stressing independence in our riders, we want them to learn to ride ‘normally.’ Our horses must also be easygoing and very accepting of the rider.” Training and experience are also high on the list of must-haves.

“If we can put them right to work in the program, that’s a big plus,” Menor said. “But very often, we take younger horses and spend lots of time training them. When they’re ready to go to work for us, we know them really well. The horses we train often end up working in the program their entire lives, so training them ourselves is often easier and more expedient than having to fix someone else’s mistakes.” Setting up shop in the Wellington area was important to the nonprofit’s mission. “We have the support of so many horse enthusiasts,” Menor said. “Of course, it’s a lot different today than it was 30 years ago, and we’ve worked very hard to develop our reputation as a premier center. The support from the equestrian community and the many local businesses has been crucial to our continued success.” Vinceremos continues to evolve. Last

The three-ring, 22-stall lighted facility will make nighttime riding a reality. “The covered arena will allow us to run more classes in the evenings and through the summer, which will expand our services to clients who aren’t able to come during our current hours of operation,” Menor said.

Offering a blend of authentic Mediterranean food that is sure to delight, the new restaurant Troy Mediterranean Cuisine is the perfect place for a delicious meal. Located next to TooJay’s on the upper level of the Mall at Wellington Green near Macy’s, Troy Mediterranean Cuisine features a menu that hails from the rich, eclectic Mediterranean coastline. Like its food, the restaurant’s name has roots in the Mediterranean region. “Ancient Turkey was Truwisa,” General Manager Deniz Suuctugu explained. “In English it’s called Troy. We are the grandchildren of the Trojans, so that is how we picked the name.” Suuctugu grew up working at his family’s restaurant, where he learned a love for the business and the food. “Myself and my brother have been cooking this sort of food with my mother since we were young,” he said. “I’ve been in the restaurant business all my life.” After college, Suuctugu and his brother decided to stay in the family business. In 2009, they opened a successful restaurant in Naples. This past November, they opened in Wellington, which they felt was lacking in options for good Mediterranean cuisine. “We saw an opportunity here to bring great Mediterranean food,” Suuctugu said. “Today’s generation wants to eat healthy, and the food is very good for you and very delicious.” Troy Mediterranean Cuisine offers authentic food from the various cultures and countries of the region — the food is not just from one country. “It’s not just Greek or just Middle Eastern,” Suuctugu said. “It includes foods (Left, top to bottom) The appetizer sampler offers an array of Mediterranean favorites; the Greek salad; the skewer platter with chicken, beef, shrimp and lamb shish kabobs; and cheese rolls, featuring filo dough stuffed with feta cheese and parsley. |wellington the magazine| February 2012

from Greece, Israel, Turkey, Egypt. It’s the best of the Mediterranean.” The authentic style is apparent from the moment you walk into the restaurant. The bright walls contrast with dark wood booths and tables, and the décor has a distinctly Mediterranean flair. Floor-to-ceiling windows at the front of the restaurant give it a beautiful, natural light and an inviting atmosphere that feels as if you’re dining outdoors on the beautiful Mediterranean coast. But the atmosphere is brought to life with each bite of food, prepared by chefs who grew up with the cuisine. “We have two chefs who are Turkish and one who is Greek,” Suuctugu said. “We want to blend the cultures so that guests have the best experience.” The food is fresh and delicious, with produce picked at their ripest. “Everything is fresh,” he stressed. “The [produce] is not from a grocery store — it is field grown.” Because of this, guests are guaranteed a great meal made to order, Suuctugu 70 February 2012 |wellington the magazine|

said. “We prepare the food when the customer orders it,” he said. “We don’t have pre-cooked meals.” If you can’t decide from a menu of delicious options, the appetizer sampler ($8.99) is a great idea. Guests can choose four items from a list including hummus, dolmas, green peas, pita chips, cheese rolls, falafel and tzatziki dip. The hummus, a classic choice, is filled with robust, savory flavors that pair perfectly with the pita bread. For something a bit more creamy, the cheese rolls — made of filo dough and stuffed with feta cheese and parsley — combine classic Greek flavors with a twist for a great start to a meal. One of the most iconic items, Troy’s Greek salad ($7.99) combines fresh romaine lettuce, tomatoes, cucumbers, onions, feta cheese and kalamata olives served with Greek dressing and pita croutons. The salad makes a great meal and exemplifies the blend of delicious options. Or, if you’re looking for something more substantial, Troy offers a variety

of shish kebabs ($9.99 and up). Choose from chicken, beef, shrimp or lamb, grilled to perfection and served over a pita with a side salad and tzatziki sauce.
