Then, of course, there are wings, wings and more wings — and at Tree’s Wings, you just can’t get enough of them. Choose anywhere from 6 to 1,000 pieces served with your choice of tasty sauces, complemented by fresh celery and bleu cheese. Not a fan of bleu cheese? Try your wings with Tree’s very special house dressing. We ordered 20 wings with mild sauce, which quickly disappeared, so we ordered 20 more with hot sauce. Baby back ribs are another house specialty. When they say “the best

ever,” it may be an understatement. These tender, fall-off-the-bone ribs are prepared to perfection and indescribably delicious. Wellington resident Beth Townsend has put a difficult childhood behind her, making a name for herself in the cake decorating industry, and earning a spot on the current Food Network show Christmas Cake Wars. New episodes are airing Mondays at 9 p.m. on the Food Network through the holiday season. By Deborah Welky This month, Wellington The Magazine visited six local restaurants giving our readers the opportunity to “Taste The Experience.” This special feature section showcases the delicious food that shapes the Wellington culinary scene and the vision of the people behind it. We took the time to chat with owners and chefs, who shared some of their best dishes for our readers to enjoy. When Beebo inventor and Wellington dad Martin Hill had a problem, he came up with a solution so unique that he found himself featured on the ABC television show Shark Tank in September with a product that captured the interest of the “sharks.” By Deborah Welky

Cake Expertise Earns Beth Townsend A Spot On Food Network Christmas Show By Deborah Welky

Wellington resident Beth Townsend has put a difficult childhood behind her, making a name for herself in the cake decorating industry, and earning a spot on the current Food Network show Christmas Cake Wars. Townsend grew up painfully shy. “I was bullied at school,” she recalled. “Kids would bark at me in the hallways. One boy came right up and punched me in the face. So I was super scared and couldn’t bear to go to high school.” Townsend, now 35, was homeschooled following middle school and spent 17 years doing murals and faux painting for her father’s company before turning her talents to cake decorating. After all, she loved watching the Food Network’s challenges and discovered she was “a rock star” on treat day at her three children’s schools. Five years ago, she entered the Ulti-

mate Cake-Off in Palm Beach Gardens and took first place. She then entered four more competitions, taking first prize every time. Then she got an email from the Food Network. They had seen some of her cakes online and wanted her to compete in their Christmas Cake Wars show. Instead of being excited, Townsend was worried. “To be on display for all of America to see? No,” she said. It was Wellington’s PBSO Capt. Jay Hart who talked her into going. Hart had been one of the judges for the Wounded Warrior Project cake competition in Wellington, which Townsend wellington the magazine | december 2015

had won, and is now her significant other. He promised to take off work to accompany her to California for the three-week taping of the show if she got on. She did; and he did. Not that Hart got to spend much time with her once they got there. “You step off the plane, and they put you right to work,” Townsend said. “They immediately take you shopping for ingredients and material — anything you think you’ll use — then straight to the studio to meet everyone.” There were 21 contestants in all, divided into teams of three. Townsend’s team includes herself as cake decorator, Steve Baity of Ohio as food carver and Fred Isla of Nevada as sugar artist. One team will be voted out each

episode until two teams are left standing for the final episode. The winning team will get $50,000, to be split three ways. Townsend can’t divulge how many episodes she appeared in because that would give away how far she advanced, but she did say it involved long hours — and lots and lots of cakes. “It was fun but busy,” she said. Each episode requires the building of two themed cakes — one mini challenge for which the teams are given 45 minutes; and one demanding a minimum 5-foot-by-5-foot display, for which they are given four hours. “My terrific team and I would toss around ideas and do a quick sketch,” Townsend said. “We had to figure out how to work together on size, proportions and colors. Then we’d hit the

ground running, and I’d make sure it all came together in the end.” But what if that frenzied shopping trip on the way from the airport left the team a key component short? “Then we had to improvise,” Townsend said. Fortunately, the directive “ just figure it out” was something she had also learned from her father, Bob Townsend, a third-generation woodworker. In addition to his painting business, the part-time inventor had designed hurricane-safe traffic lights, currently in use in Wellington and throughout Florida.

Filming Christmas Cake Wars was “the scariest thing in my life. But I wouldn’t have traded it for the world,” she said. At the end of the day, filming Christmas Cake Wars was “the scariest thing in my life,” said Townsend, who grew up in Royal Palm Beach but now calls Wellington home. “But I wouldn’t have traded it for the world.” After watching the show, with new episodes airing Mondays at 9 p.m. on the Food Network through the holiday season, you may want to order one of Townsend’s cakes, or take her cake decorating course at www.cakeproshop. com. Taste The Experience Find Great Steaks And Seafood At Jordan’s Steak Bistro By Lauren Miró

Owned by Jordan and Ivette Naftal, Jordan’s Steak Bistro in the Pointe at Wellington Green serves up delicious steaks and seafood in a stylish environment. Jordan started from the bottom in the restaurant industry, studying at Florida International University in Miami and working in both corporate and independent restaurants across the country. “I started washing dishes when I was 11 years old and worked my way up in the business,” he said. “I was always in the restaurant business in one form or another.” He and Ivette owned Jordan’s Steakhouse, an upscale restaurant in Maryland, for eight years before coming to Wellington. Jordan’s father, Alan, lived in Wellington. “We fell in love with the spot,” he said. “We decided to open a restaurant that was a little less formal than before.” Perfect for a date or a celebration, Jordan’s Steak Bistro is modern and stylish, with warm orange and wood walls that offset the dark wood chairs and white tablecloths. Guests can sit at one of the many tables inside the restaurant, outside in their large cafe, or at the fully stocked bar. “We’re known for our drinks,” Ivette said. “Jordan is an unbelievable mixologist. He’s very creative, and we have a menu of specialty items.”

The menu is stocked with some of the Naftals’ personal favorite drinks, along with custom-infused alcohol. Aside from the cocktails, the menu at Jordan’s Steak Bistro will keep you coming back. “We have delicious steaks, great, fresh seafood as well as vegan and vegetarian,” Jordan said. “We try to use the best ingredients, with as much local, natural and organic products as possible. Everything is made to order. Having owned a restaurant in Ellicott City, Maryland, we feature our original famous crab cakes.” No matter what you order, you’re in for a great treat. The menu features fresh twists on classic dishes. The Tuna Tartare is a great starter, with sushi-grade tuna mixed with capers, lemon, sea salt, sweet ginger, soy and a bit of wasabi. The combination is zesty and flavorful. For the next course, the Grilled Caesar Salad is a modern take on the classic dish. “It’s a grilled romaine heart — we put it right on the broiler,” Jordan explained. “Then we drizzle our Caesar dressing on it and finish the salad with pignoli nuts, marinated baby heirloom tomatoes and shaved asiago cheese.” But at Jordan’s Steak Bistro, steak is king. The Cowboy Steak is the house favorite. An 18-ounce to 20-ounce

bone-in ribeye from Jackman Wagyu Ranch, the steak is cooked to perfection and served with pommes frites. For a lighter fare, try the Blackened Scottish Salmon. The fresh fish is blackened and served with sautéed julienne vegetables and chive mashed potatoes. There are plenty of other items to choose from, including a number of vegetarian items. And there is also a small plate menu. “We wanted to provide a way for people to eat here every night if they want to,” Jordan said. “You can come in and have a small plate with a salad and a glass of wine, or choose a big steak or seafood.” Jordan’s Steak Bistro is located in the Pointe at Wellington Green at 10140 W. Taste The Experience Family Recipes Make Authentic Italian Cuisine At Catania By Julie Unger

Restaurant owners Brian Scotto, Richie Barathy and Jimmy Cunningham let guests embark on a sit-down, familystyle culinary trip to Italy at Catania, a new Italian restaurant in the Marketplace at Wycliffe with roots in authentic family recipes. Cousins and chefs Scotto and Cunningham — they share the same greatgrandmother — grew up in New York with large family dinners, eating special old-school Italian family recipes. “Many of our recipes are from our great-grandmother,” Scotto said. “My mother, Jimmy’s mother, all had different teachers, but all taught us, unknowingly. For all the years of us having big family dinners, big sit-downs for the holidays, we absorbed all of that and contributed our passion from the way we were brought up eating.” When Scotto and Cunningham decided to come together to form Catania, they brought along former coworker Barathy to take care of the front. “We decided to put all our great ideas together and our passion for the food industry and establish this lovely location,” Scotto said. Catania is named after a Sicilian town with a resonating story, which Scotto noted was frequently ravaged by volcanoes. “No matter how many times they got knocked down, it kept rising from the ashes to once again es-

tablish itself as a major town,” he said, explaining how that resilience spoke to them. Aromatic specialties include the Penne Broccoli Rabe, Chicken Campagnolo, Stuffed Artichoke, Grandma Pizza and New York Baked Clams. On the cool and crunchy side is a crowd favorite, the Pecan Salad. The Penne Broccoli Rabe has broccoli rabe sautéed in garlic and oil with sausage and sun-dried tomatoes. The Chicken Campagnolo features broiled chunks of chicken breast with garlic, oil and white wine, with potatoes, red and green bell peppers, onions and sausage. The Stuffed Artichoke is served Oreganata-style with homemade breadcrumbs made with garlic, cheese and spices, while the New York Baked Clams are shipped in from New York twice a week to the restaurant. Grandma Pizza is a thinner version of a Sicilian with fresh plum tomatoes and basil, while the Pecan Salad offers mixed greens with goat cheese, candied pecans, onions, tomatoes and green apple slices. Another restaurant favorite is Sunday Sauce. “A staple in every Italian house on Sunday afternoon is Sunday Sauce,” Scotto said. “It’s a pasta dish, pork ragu with a link of sausage and two meatballs, topped with ricotta,

parmesan cheese and fresh basil.” The born and bred Italian New Yorkers are bringing back the more old school Italian eatery feel with Catania — there are Italian sayings and phrases on the walls, comfortable seating and a friendly, homey feel, with large tables where everyone can sit back and enjoy their meal. “It’s a lot of culture and a lot of good memories that we have,” Scotto said. “We want people to come here and feel like they’re at home. Bring your family, have a good time, relax and enjoy.” Catania is in the Marketplace at Wycliffe at 4115 S. State Road 7. Oliver Wellington, the community’s namesake. “In the beginning, we were going to name it Oliver’s,” Gando said. “But then we thought, ‘Well no, we’ll call it Oli’s.’ People will say, ‘I’ll meet you at Oli’s.’ It sounds better.” Supporting local business is key. Local farms, fisheries and vendors supply the restaurant with heirloom tomatoes, microgreens and even beer. Farmhouse Tomatoes, Bush Brothers, Black Fork Specialty Produce and Due South Brewery are some of the restaurant’s Palm Beach County partners. The menu gets international influence from Latin and Italian cuisines, which includes handmade ravioli and

Taste The Experience New York-Style Delicacies At Flakowitz Deli & Bakery By Chris Felker

Flakowitz Deli & Bakery opened in Wellington earlier this year, bringing its New York-style delicacies to the community. Owner Robert Pirozzi, a transplanted Long Islander, also runs two other Flakowitz locations in Boca Raton and Boynton Beach. He was excited to open another Flakowitz location along Wellington’s booming State Road 7 corridor. Pirozzi has long had his sights set on Wellington. “I love the location. I’ve always wanted to be in Wellington,” he explained. “But I wouldn’t go just anywhere. I wanted a good location, and when Trader Joe’s opened up near this spot, and this place became available, we decided we’d jump at it.” Flakowitz Wellington is a brightly lit, wide-open, airy deli with large glass food cases showing the freshest of deli offerings. “Our concept is really old deli meets new deli,” Pirozzi said. “We’ve got the old-fashioned corned beef and pastrami Reubens, but now we also have all kinds of different salads, in terms of ultra-healthy prepared items.” Of course there are also all those sweet treats and big platters that define the traditional deli smorgasbord. When Wellington The Magazine visited, we sampled some traditional fa-

vorites, as well as some healthier fare and, of course, a few sweet dessert treats. The Asian Chicken Salad features marinated chicken with mandarin oranges, corn, peas, mixed peppers, cashews and tomatoes over mixed field greens with a ginger dressing. It was light, crispy, cold and delicious. Also on order was a Create Your Own (CYO) omelet that had grilled chicken and American cheese, plus a toasted whole wheat bagel with cream cheese, and home fries on the side, all served steaming hot and delicious. The Sloppy Joe Panini serves up thinly sliced corned beef and pastrami with Swiss cheese and Russian dressing on grilled focaccia. It was a great, crispy delight served with coleslaw. We also sampled the perfectly done Eggs Benedict, served on an open bialy with Hollandaise sauce and home fries. As a treat, we also had some tasty black and white cookies and a perfectly moist cigar roll, which was a delicious pairing of icing and nuts in a delicately crunchy pastry wrapping. We also enjoyed two different Linzer tarts, which were melt-in-your-mouth delicious with rich chocolate and smooth, seedless raspberry fillings. There is a lot more food on Flakowitz’s seven-page menu, including a full

breakfast selection with specials available until 10:30 a.m., plus a huge lunch variety. Pirozzi said that much of the produce they use is locally sourced. “We’re using a lot of fresh produce and unprocessed raw foods,” he said. “We went from using Quaker oatmeal to steel-cut McCann’s Irish oatmeal, which is the best around, and we have an oatmeal bar in the morning that transitions into a soup bar in the afternoon. We have a lot of different soups and hot meals, such as stuffed cabbage and meatloaf — just basic, down-home food.” Flakowitz Deli & Bakery is located at 2803 State Road 7. Taste The Experience Homestyle Italian Cuisine In A Friendly Atmosphere At Arrabiatas By Chris Felker

Two longtime restaurant collaborators teamed up two years ago to open Arrabiatas Italian Restaurant in suburban Boynton Beach and bring a taste of New York homestyle Italian cuisine to the area. Co-owner Dave Tranes keeps an eye on the front of the house, while chef Jimmy Cunningham keeps the kitchen operating like a well-oiled machine. The restaurant’s name foreshadows the signature spicy dishes to come. “Arrabiata is just a marinara sauce with cherry peppers. It’s a little bit of a spicy sauce, and has a nice kick to it. That’s what’s behind the name,” Tranes said. Not to worry. If you’re not a fan of spicy food, Arrabiatas caters to all palates. The mozzarella and tomato appetizer, featuring house-made cheese, is perfectly smooth and firm, while creamy and delicious. The pecan salad features mixed greens tossed with apples, tomatoes and candied pecans — all crunchy-fresh — with a smooth addition of goat cheese. Sample the Calamari Arrabiata, and you’ll find out that those little cherry peppers pack a punch. “Arrabiata” in Sicilian Italian can also mean “furious” or “mad” — and, true to the word, it is heated, and delicious. One of the house specialties is Chicken Campagnolo, a savory, bone-

less chicken breast sautéed with rosemary, potatoes, peppers, onions and sausage in a garlic white wine sauce. It is packed with flavor. Some of those signature cherry peppers complement the sweet ones nicely without giving off too much heat. Arrabiatas also makes amazing pizzas, such as the wonderful Primavera Pizza with its perfectly crisped, light crust and just enough broccoli, carrots, zucchini and squash on top of a generous dollop of marinara sauce, topped with the house mozzarella. There are many highlights on the extensive menu, ranging from Italian homemade favorites to long lists of pasta dishes, paninis, heroes and specialty pizzas. “Always, every night, we have different specials,” Tranes said. “We have two signature specials. We offer a pounded veal chop topped with spinach, prosciutto, mushrooms, marsala wine and melted mozzarella. We take a thick veal loin chop, pound it out very thin, bread it, then add the toppings — and it’s a phenomenal dish. We also do a half of roasted Long Island duck in a blueberry port wine sauce, but we don’t carry it all the time.” Arrabiatas also puts an emphasis on fresh ingredients. “Our produce, we have it delivered from local farmer’s markets,” he said. “All products here,

everything’s made fresh to order.” The restaurant’s service philosophy makes sure that the customers are never kept waiting. “We put in the appetizer as we prep the main dish to get that started. That way, after serving the appetizer, people aren’t waiting 20 minutes after they finish their appetizer to eat dinner,” Tranes said. “From the fish, to the clams, to the veal, chicken and shrimp, nothing’s frozen. We only use fresh product here.” With so much to choose from on the menu and such a laid-back, familyfriendly atmosphere, there are strong incentives for a return visit. SHARK TANK Appearance Finds Famous Investors For Beebo Inventor Martin Hill Story by Deborah Welky • Photos by Abner Pedraza

When Wellington dad Martin Hill had a problem, he came up with a solution so unique that he found himself featured on the ABC television show Shark Tank in September with an invention that captured the interest — and investment capital — of not one, but two of the “sharks.” Like most good ideas, his product was born of frustration. While bottlefeeding his son, now 6, Hill enjoyed seeing him drift peacefully off to sleep in his arms, but rued the fact that he had to choose between possibly waking him up or being restricted to moving only one arm. He tried the under-the-chin bottle hold, but the jostling movement of that maneuver was ineffective. When his son became distracted during feeding, fussy and fidgety, Hill knew that there had to be a better way. Enter the Beebo. An electrical engineer by trade, Hill took to his garage to come up with a solution, and the Beebo was born. The prototype was created by finding a Blackberry belt clip case to provide the rotation needed to fit a carved

foam form. The prototype shown on Shark Tank was a bottle holder flexible enough to fit the majority of bottles on the market and to work for both lefthanded and right-handed users. It even has the ability to rotate up to allow for burping mid-session. “When I initially came up with the idea, it was just for me — to enhance feeding time,” Hill explained. “My little boy was struggling with a bottle and was most relaxed when I was reading to him. I thought if maybe I could have a free hand to hold a book, I could combine feeding time and reading time. It might help him relax, and he’d take his bottle better. It worked perfectly. He’d look at the pictures, listen to my voice and suck his bottle dry.” Although Hill created the Beebo for his own use, “every time anyone saw the product that I made in my garage, they said, ‘That’s amazing; people will buy that.’” Nonetheless, developing the product for commercial sale was not at the top of Hill’s to-do list and, soon, years had elapsed. “I was working full-time and being a full-time dad, but I had this product idea. It wasn’t at the top of my priority list — being a good dad was first, then

being good at my job. But the Beebo started getting more and more traction, so we started the research needed for the patent process,” Hill said. “I am a huge fan of Shark Tank, and I’d always had this dream of being on the show. I thought it would be fun to try out, if nothing else, for the life experience.” Then Hill heard about a Shark Tank casting call in Miami. He decided to apply, with the full support of his wife, Sarah. “I memorized a one-minute pitch, pitched it to the casting agent, and they called me back just a few days later saying that I was going to move on to the next bit of casting,” Hill said. “Then followed a lot of paperwork; phone interviews; making videos of myself, my product and my pitch; the amount of funds I was going to request; and the justification for the request. When I made the final cut, they flew me out to L.A. in June for filming.” Sarah was in the hotel, waiting, as Hill was the first “bait” tossed into the tank for the premier episode of Season 7. His five-investor shark panel featured Mark Cuban, Lori Greiner, Robert Herjavec, Kevin O’Leary and “guest shark” actor Ashton Kutcher, whom Hill did not know was participating until the night before the taping. Was Hill a nervous wreck? Not really. “I walked into Shark Tank and into negotiations knowing that I had a great opportunity for them — that’s what I truly believed,” Hill said. “A lot of peo-

If I didn’t get a deal, that would be fine, but I did, which made it even better. Kevin offered straight equity, but I was honestly wanting to work with two very specific people and make a very specific deal.” And at the end of the day? “I got the exact deal I had told Sarah I was going to get. As soon as I made it, I was allowed to call her and I said, ‘Lori. Ashton. Two hundred grand. Thirty percent,’ and she started screaming,” he recalled. Although Hill initially had been hoping to give up only 20 percent equity in his company, he felt that 15 percent for each of two sharks was a big enough piece of the pie for them to be motivated, and enough money for him to exponentially grow the business. “A lot of people don’t put a value on the sharks and what they can do. fit because she has retail contacts, and Ashton is an extremely successful investor. He has an extensive portfolio with some huge companies he has invested in. He also has a baby.” Hill is using the money to build his company — increasing capability so that they can make more products, adding inventory, buying advertising, moving into retail stores and trying to grow

the business fast enough to handle the new exposure. “After the show aired in late September, we experienced what is called the ‘Shark Tank surge,’” Hill said. “All of a sudden, we were thrust into the national spotlight, which causes a surge of product awareness and sales. Within 10 days, we sold out of the thousands of units that we had. We’re taking pre-or-

ders for a delivery that’s coming the end of November, but we’re probably going to be sold out before they get here.” Hill’s life his changed dramatically. He quit his day job, and now focuses exclusively on the product. “It’s crazy. I don’t get much sleep. I’m running my business and growing awareness and making the Beebo a global success,” he said. “I get inquiries every day from around the world; the market is huge. Delivery Dudes Brings Great Restaurant Meals To Your Doorstep Story and Photos by Julie Unger

Michael Fraunfelter was first introduced to Delivery Dudes when he was utilizing the company’s services. “I asked one of the other drivers about opening a franchise, and it all started from there,” he recalled. Fraunfelter was working in a call center at the time, and his wife was about to give birth. He had some money available, saw the opportunity and ran with it. Now, he owns a franchise in Wellington, which opened in October 2012, and one that is soon to open in Royal Palm Beach. “It’s a great idea,” he said. “It’s so simple.” Fraunfelter’s daughter is now 4, he is expecting a son in February, and he just recently purchased his first house. As his family grows, so does his Delivery Dudes business. Delivery Dudes is a restaurant de-

livery service working with more than 30 local restaurants. We’ve also picked people up who have drank too much,” Fraunfelter’s longtime friend and now employee, Taylor Carrano, has taken a few calls for those who decided driving wasn’t an option. “They know who we are, and they honestly do love us,” Carrano said, which is why they are called rather than a cab when someone has had too much to drink. Some of the strangest things they’ve delivered, Carrano said, include car

parts to someone who was fixing a car and wasn’t able to pick up the parts. They’ve delivered firewood, $100 worth of McDonald’s food, and even delivered food on-location to horse shows. It doesn’t matter where the delivery is destined to go; Delivery Dudes will bring it over. They’ve picked up formula, pacifiers and other baby supplies for new parents or parents with sick children. Working with those who have a difficult time getting out of the house is rewarding, in addition to being helpful. “I get a great feeling from doing it,” Fraunfelter said. “The families will contact us and leave great reviews on Google. We get nice e-mails about how helpful we are — and it’s not expensive.” One client is blind, so Delivery Dudes picks up his groceries, are in contact with his family and have even offered to help out by taking him to doctor’s appointments. “We like to be involved with the community as much as we can,” Fraunfelter said. But restaurant delivery remains the core of the business — and Delivery Dudes provides crucial extra income to many area eateries. “We’re their best customers,” Fraunfelter said. “We order from them every day.”

Each month, the local franchise places and delivers between 1,500 and 2,000 restaurant orders. The Wellington team includes 13 drivers, some of whom are part-time. All of the drivers have their driving records checked and go through background checks. “When I found out that he opened up Delivery Dudes, I just kept bothering him for a job,” Carrano said. “And I’ve been out here ever since.” The Delivery Dudes web site conveniently shows customers menu items by restaurant. A few clicks, and you can start your countdown to fresh, hot food.

First-time customers get free delivery, which is normally $5 for single-stop cash orders or $7 for credit card orders. Delivery is typically within 45 minutes to an hour. Many of the fine dining places they work with don’t deliver themselves, which makes the Delivery Dudes service special. Paying is currently not available online. Instead, customers pay upon delivery by cash or credit card. Rider Freddie Vazquez Competes For Puerto Rico At Pan Am Games By Carrie Wirth

A whirlwind journey swept up rider Freddie Vazquez and led him to represent his native Puerto Rico at the Pan Am Games. It was the realization of a lifelong dream for Vazquez, who, along with his wife, Jodi, owns Messenger Hill Farm, a hunter/jumper operation.

The Vazquez family, who live in Wellington during the season and compete at the Winter Equestrian Festival, share their passion and work side-by-side. Both are successful competitors on the national stage. Freddie Vazquez, with the help of his friend and mentor, Olympic gold medalist Chris Kappler, is an emerging international competitor. Vazquez received a request from the Puerto Rico Equestrian Federation in June to represent his country at the Pan Am Games in Toronto. He and equine partner Zippo Z qualified and were ready to compete. With just four weeks to go, Zippo sustained a minor bone bruise, an injury from which he will make a complete recovery, but put him out of the mix for the games. “My federation asked me if I could find another horse,” Vazquez recalled. “The horse had to meet the requirements of the Fédération Equestre Internationale (FEI), the international governing body of the sport.” A Chinese proverb says: “Pearls don’t lie on the seashore. If you want one, you must dive for it.” Vazquez decided to take the dive and go for the pearl. Desiree Johnson, his source for European horses, quickly came up with three solid candidates. Vazquez traveled to Europe to try them and clicked with an 11-year-old Belgian Warmblood mare, Esprit De Vie, formerly competed with by Oliver Lazarus. “I left Jodi in Tryon to manage 26

horses, our clients and our whole operation, and she sent me off across the world to follow my dream,” he said. Vazquez and Esprit De Vie were only a week into their relationship when they arrived at the Pan Am Games. Every day, Vazquez got to know Esprit a little better. “She took it all in stride,” he said. “She did more than I could ask.” Vazquez competed and finished Michel Vallaincourt’s huge courses, albeit out of the medals, riding against the best in the Americas, all on a horse he barely knew. Throughout his Pan Am experience, Vazquez had the unyielding support of Kappler, his wife, his mother and all his clients at Messenger Hill Farm. “With Chris [Kappler], it is all about preparation,” Vazquez explained. “What we did was totally different from what Chris does. Chris said, ‘We have to do what we have to do, Freddie. Let’s do it.’”

His marriage is a supportive pillar. Vazquez refers to his wife as his top fan. “I don’t know what I did to deserve Jodi,” Vazquez said. “She knows this is my dream. She puts it all on hold. After the games, she said, ‘I am so proud of you. What you did was not doable — to simply survive on a horse you don’t know.’ She knew I wasn’t pleased with my performance, but she made me feel good about it.” In September, Vazquez and Esprit De Vie won the $30,000 Showplace Fall Classic Grand Prix. Zippo Z will be back in action this winter in Wellington, and Vazquez has another grand prix horse, Bachelor 4, that has had some great results. Vazquez has his sights set on the next prize and looks forward to competing again in Wellington this season. “I believe in my team and my horses,” he said. “I am grateful to my clients and

Equestrian Industry To Remember Anne Heyman At Anne’s N ight By Jennifer Wood

Anne Heyman, a remarkable woman and leader in the equestrian community, will be honored at a special “Anne’s Night” fundraiser on Saturday, Jan. 9 in Wellington. Heyman, a devoted philanthropist, died in January 2014 following a tragic fall from a horse during competition. She was honored last year at a sold-out event held at Double H Farm in Ridgefield, Conn. Its spectacular success enabled a generous donation to Anne’s organization, the Agahozo Shalom Youth Village (ASYV). ASYV has taken in more than 500 orphaned Rwandan children and provided them with food, shelter, nurturing and education. The outpouring of support from the equestrian community at last year’s event was incredible, and the second “Anne’s Night” plans to expand on the idea of paying it forward by benefiting another worthy cause. The upcoming Anne’s Night event

will be held at the Harrison family’s Double H Farm in Wellington. The night will remember Anne’s spirit and introduce Uryadi’s Village, a nonprofit organization founded last year by equestrian Jennifer Crooks. The shared themes of the causes benefiting from Anne’s Night have led to it becoming an annual event, highlighting the philanthropic passions of members of the equestrian community. The goal of Uryadi’s Village is to support multiple orphanages in rural Ethiopia to create self-sustainability through viable agriculture and different entrepreneurial avenues for the women in the community. Orphans make up more than 5 percent of Ethiopia’s population, and

Wellington Equestrians Partner With Royals To Help Working Equines What happens when a group of Wellington equestrians, a few royals and a dynamic organization join forces to aim their collective fire power toward alleviating suffering? Lives are improved for millions of working equines and their owners in the developing world. That’s exactly what is happening through the Brooke, the world’s largest international equine welfare charity. More than 100 million working

equines provide a living for 600 million of the world’s poorest people. The animals and owners labor together on roads, in fields and on farms, on moun-

taintops, in jungles and deserts, in factories and on city streets, in brick kilns and stone quarries. Working equines also save human lives by hauling water, food and basic necessities. Any work that is carried out by trucks, vans, trains, buses, motorcycles and tractors in prosperous nations is often accomplished by equines in the developing world. These animals are the backbone of the economy in developing countries, supporting poor communities, where most people earn less than a dollar a day. On average, a family of at least six people is directly dependent on each one of these loyal animals, who toil in some of the world’s toughest environments. Their health and welfare directly affect the quality of life for their owners. But because they labor so quietly, steadily and efficiently, these working equines are almost invisible to the rest of the world. So are their contributions and their suffering. During their working lives, the majority will suffer from chronic malnourishment, exhaustion, dehydration, heat wellington the magazine | december 2015

stress, crippling lameness, disease and injury, often compounded by a lack of accessible and affordable veterinary services. However, most of this suffering can be prevented, and the Brooke has rallied several Wellington residents to join its efforts to achieve a common goal: a world in which these working horses, donkeys and mules are free from suffering. For more than 80 years, the Brooke has operated around the globe to improve the welfare of these animals through free veterinary intervention and the development of sustainable equine welfare practices that reduce future suffering. The charity is currently working in Afghanistan, Pakistan, Ethiopia, India, Egypt, Nepal, Senegal, Guatemala, Nicaragua, Kenya and Mexico.

The Brooke is led by Her Royal Highness Camilla, the Duchess of Cornwall, wife of Prince Charles, who is serving her second term as president. Her lifelong passion for horses led to her involvement, which has included visiting some of the Brooke’s programs in developing countries. The project sites have also been visited by Prince Charles and Princess Anne. The Duchess of Cornwall also visited Kentucky earlier this year to officially launch the Brooke’s American arm: Brooke USA, headquartered at the Kentucky Horse Park. Under her leadership, the Brooke last year reached more than 1.5 million working equines and approximately seven million people who depend on them. The Duchess of Cornwall isn’t the only member of royalty who supports

World-class equestrian competitors, such as Olympians Charlotte Dujardin, Laura Kraut and Debbie McDonald, have recently been welcomed as Brooke ambassadors and advocates. Salt The Spa owner Marianne Porto has integrated the best of luxury spa experiences with the therapeutic power of salt in her boutique luxury spa off Lake Worth Road in Wellington. Porto opened her doors on July 1. However, she has been in the industry for more than 25 years and staffed her spa — it is not part of a franchise — with former coworkers, all boasting at least 15 years of experience. “It’s like getting the band back together,” she said. Porto credits her diverse staff of 13 employees, who came to her with their own clientele, for helping make Salt The Spa a success. “Everyone does quality work,” she said. “They have all worked at luxury day spas.”

When Porto first found the location, the bright, airy atmosphere appealed to her, in addition to the idea of staying in Wellington, where she has worked for the past 25 years. “It’s my happy place,” she said, of the location. “I was only going to take a little piece of this bay. It kept growing. I originally just wanted to do the float tank and massage, and then, since I also do facials and waxing, I said, ‘OK, let me just add facials,’ then, ‘OK, let me just add waxing.’ Then I went to a

salt room, and that’s really cool. That’s kind of how I got the name. Four people can fit comfortably into the room at a time. “It’s like being at the beach without getting sunburned and hot,” Porto said. The float pod — originally called a sensory deprivation tank — has evolved. Formerly, the pods immersed clients in total darkness. Now, music can be played and soothing lights can rotate, calming whoever is in the water, enriched with 1,000 pounds of medical-grade Epsom salt, which is known to help relieve muscle and back pain, Porto explained. “It’s impossible to sink in it because the salt concentration is so high,” she said. The infrared sauna is another unique feature. “The infrared is not as hot as a regular steam sauna, so people can

Chatsworth Village A Community-Centric Neighborhood In The Heart Of Wellington Story and Photos by Julie Unger

Chatsworth Village is a single-family, community-centric neighborhood located near schools, restaurants and equestrian venues. It is on Greenview Shores Blvd., nestled between Wellington Trace and South Shore Blvd. Neighborhood Watch Captain Jessica Crow is thrilled with her family’s choice not only to move to Wellington, but to settle in Chatsworth Village. “My husband and I had our two small children and were living in the Delray Beach/Boca Raton area. We looked all the way up to Stuart and down to Boca, and we just really liked Wellington,” she said. “It has a nice, neighborhood feel. The schools are good, and we love the homes. We just wanted a change, and we’re really happy. We’ve been here almost four years.” When they moved here, Crow’s children were very young,

but are now enjoying a great education in the first and second grades at local schools. “Chatsworth Village is a beautiful neighborhood, and we love it. There are a lot of families here,” she said. “We don’t have a lot of homes for sale in here, and if we do, they usually sell pretty quickly.” The community began in the 1990s, with the builder starting in the front and working toward the back, Crow explained, pointing out a new house that was just built on one of the few remaining vacant lots. There are many families and a few empty-nesters living in the community, where people are always riding bicycles and walking dogs in the Florida sunshine. Younger families are moving into the community, which makes celebrations such as Halloween and block parties true

events. “Halloween is amazing here; it’s just so much fun for the kids,” Crow said. “Everyone goes all out for it.” The community also throws annual block parties. Crow started out volunteering to help with the block party and eventually became the neighborhood watch captain. Now, she organizes quarterly meetings as part of the position that she has held for a little over a year. She

was originally hesitant to take on the job because of her busy schedule, but now she is glad that she did. Taking it turned out to be a rewarding and fun adventure. “It doesn’t really require a lot of work — it’s what you make of it,” she said. “I decided that my big thing as neighborhood watch captain would be to create a Facebook page, put up signs in the community when we have meetings and do the annual block party.” Last year’s block party was a successful and amazing event. “We had about 200 people. Everyone brought food, and we used a grant from the village to buy burgers and hot dogs,” Crow said, explaining that many of the neighbors cooked the food so that everyone could eat at the same time. The 2015 block party was scheduled for a day when a hurricane was anticipated, so it was moved to a later date. The change from summer to sometime in November wasn’t planned, but there

is an upside. The weather should be cooler, Crow said. Crow stressed that Chatsworth Village didn’t begin a neighborhood watch program because of any specific problems. It has been more of an informational program, with the guidance of the Palm Beach County Sheriff’s Office and the Village of Wellington. “We have had really no crime in this neighborhood, since I’ve been in the neighborhood, going on four years,” she said. “We’ve had a little bit of juvenile stuff, but it has been next to nothing.” Crow’s next project, with help from the Village of Wellington, is to make a change to the sign at the community’s entrance. It’s ready for a face lift, she said, and she is hoping to see a big upgrade. An older entrance sign, however, does not change her feelings about the community where she is raising her children.


wellington | neighborhood What really drew Crow and her family to Chatsworth Village is Staimford Park, which is toward the back of the community on the lake. “It’s gorgeous; there’s always a breeze, and it’s great for the kids,” she said. Staimford Park is different from other parks in Wellington. Mature trees offer a canopy where sunlight peeks through, offering picturesque views of the lake from park benches that line the area. The playground, complete with swings, a slide, a jungle gym and more, is on a soft rubber flooring. Covered picnic tables offer a quiet retreat for snacks, lunch or just a shady spot where parents can supervise their kids playing. There are often birthday parties, gettogethers and even informal Easter egg hunts taking place at the park. “It’s a beautiful neighborhood, and people really take pride in living here,” Crow said.

Toys for Tots was founded in 1947 in Los Angeles by U.S. Marine Corps Reserve Major Bill Hendricks when his wife, Diane, tried to donate a homemade doll to a needy child but could find no organization through which to do so. Together with Lt. Col. John Hampton, Hendricks rallied the U.S. Marines Corps to provide toys for underprivileged children at Christmastime, and the program quickly spread nationwide. In Palm Beach County, the motorcycle rights groups ABATE joined the program in 1982, and the effort was taken over by its most ardent sup88

porter, Bill Casperson of Bill’s Bikes, in the late 1980s. Upon Casperson’s death in 1995, the future of the county’s Toys for Tots drive was unclear. That’s when the Palm Beach County Motorcyclists Association stepped in to take over. “We want to continue to make Bill’s vision real,” PBCMA President Kat Krum said. “Life’s crappy

You should not have to quit believing in Santa Claus because your parents are broke.” With 33 years of experience, a board of five and an unwillingness to waste time on nonsense, the group’s Toys for Tots program runs like a well-oiled panhead. The group meets monthly beginning in September and places collection boxes around the county in mid-October. Volunteers bring the toys to the U.S. Marine Reserve’s distribution point in an old barn at the South

Florida Fairgrounds, and that scenario continues until the big annual event, Bill’s Bikes Memorial Toy Run. This year, it will take place Sunday, Dec. 13. “Last year, we collected 11,000 to 13,000 toys just that one day,” said Jeff Swenson, a PBCMA board member, Harley rider and manager of Walgreens in Wellington, a major supporter of the event, along with all local Walgreens stores. “We bring them on flatbed trucks that day and do a presentation to the Marines. The motorcycle run begins at noon at the fairgrounds with a policeescorted ride from there to Dreher Park in West Palm Beach.” Thousands attend, and each rider brings one toy or more. “You see motorcycles that are full

of toys,” Swenson said. “ Sheriff Ric Bradshaw leads the parade — he’s been doing that for several years — and the police close down Southern Blvd. All along the parade route, people sit out and wave, and we honk at them. It’s a fun sight to see.” Everyone is welcome to attend the Toy Run, regardless of whether they own a motorcycle. Admission to the Dreher Park “bike in” is $10 or one new, unwrapped toy. There is food, beer and soda available for sale with proceeds going to Toys for Tots, and bands play until late afternoon. Back at the fairgrounds, U.S. Marine Corps volunteers spend months sorting the toys into appropriate categories for age and gender. When the cash comes in from the Toy Run, organizers head out to buy toys to fill

in the gaps. Last year, it was girls ages 10 to 13. “We want to make sure that when every kid in this county wakes up Christmas morning, they have a toy,” Krum said. “If a family has a 5-yearold and a 15-year-old, it would be pretty awful if the 15-year-old didn’t get a toy. They’re still kids, too.” Because teenagers are included, the group buys lots of MP3 players, handheld video games, basketballs, backpacks, board games and hairbrush sets. They use Toy Run money and donations that come in throughout the year. Walgreens customers and employees donate as well. The U.S. Marines Corps volunteers are the ones in charge of getting the right toys to the right people. wellington the magazine | december 2015

From late November through Dec. 20, parents are invited to come to the fairgrounds to pick up toys that have been specially chosen for their children. “We are a pretty well-to-do county, but there are a lot of underprivileged kids in this area,” Krum said. “The need just rises every year. Dr. Saulis Banionis, owner of Florida Interventional Pain Management in Wellington, employs dramatic new techniques in pain management to help people not only feel less pain, but actually help in the healing process. Platelet-rich plasma and stem-cell therapy are treatments he often uses to help patients reduce their pain and to assist in their recovery. As an interventional pain management specialist, he diagnoses and treats both chronic pain and acute pain conditions, such as postoperative pain from back, shoulder or knee surgery. “Physicians realize that what we are giving them doesn’t make patients comfortable, because they have to be able to do physical therapy, and a big part of my philosophy is making people more functional,” Banionis said. Doing just that can help with the recovery, even though the pain cannot always be taken away completely. “My target is to make everybody more functional, and a lot of times that comes down to educating the patient,” he said, adding that in some cases, there isn’t a pill that will work. Banionis teaches patients about the different components of facilitating their recovery and reducing their pain level so that they can participate in physical therapy and recover. “Their recovery is dependent on how much they are moving, so the more that I can help them to be more comfortable… they’re able to do their physical therapy and the sooner they can recover,” he said. In recent years, Banionis has been training in stem-cell therapies introduced by the American Society of Interventional Pain Physicians. “It was an amazing, eye-opening experience,” he said. “Finally, we had an

option other than a steroid injection, which stops working over time.” Stem-cell and platelet-rich plasma treatments offer a joint-preserving and often healing process to patients. “Oftentimes, it’s able to preserve or repair damage to tissue, either tendons or ligaments, that otherwise may have required surgery,” Banionis said. “It’s an amazing technique that is still considered experimental.” Stem cells are able to become like tissue they are introduced to, and thereby assist in the healing of damaged tissue. “That’s the really cool thing about it,” he said. “It’s a blank slate that when your body is injured basically tells other cells, ‘Listen, we need help over here.’” Blood circulation is the key to healing, which diminishes significantly after age 32, Banionis said, and stemcell therapy, often in conjunction with platelet-rich plasma, puts healing material directly where the injury is, often employing ultrasound guidance. In today’s medical environment, pain management tends to be pushed off to physician assistants and nurse practitioners, but Banionis always sees his patients personally, and doesn’t use physician assistants. “People like that personalized attention,” he said. “They may see the doctor once in another office, and they struggle to ever see the doctor again. When it comes to pain management, injections, medications or what it is that would benefit the patient, sometimes there are subtle differences that you have to

be able to recognize as a physician, and those will mean the difference in one treatment plan versus another.” Banionis did part of his training at Ross University and completed his anesthesia and pain management fellowship at New York Medical College in Valhalla, N.Y. He has practiced in the area since 2007 and opened his current office a little over two years ago. Banionis is the sole proprietor at his office. “I decided to start my own practice after interviewing with several other larger practices and deciding that was not how I wanted to practice medicine,” he said. Re/Max Direct Realtor Laura Lombardo’s road to Wellington involved two continents, a natural disaster, thousands of miles and a popular Disney movie. Born in Italy, Lombardo moved to New York with her family at age 10. In high school, she took part in a unique program that allowed her to work on Wall Street. In her early 20s and newly married, she moved to the other side of the continent. “I moved to Simi Valley in California,” Lombardo recalled. “I lived there from 1986 to 1994. My family suffered through the 1994 Northridge earthquake. It was so traumatizing to me that we decided to move to Florida.” Mother of three children — sons Phillip and Joey, and daughter Talia — Lombardo stumbled upon Wellington quite by accident. “I found Wellington out of the blue,” Lombardo said. ”My son, Joey, wanted to see The Lion King, and it was playing in Wellington. Right from the start, I had a good feeling about this town: children were riding their bicycles, there was beautiful landscaping; it felt like Simi Valley. We bought a house on Wisteria Street in Sugar Pond Manor. Our community was great, with good neighbors who we are still close with to this day.” In more recent years, she left Wellington to ply her trade in New York, where she continues to maintain an office. As someone who knows the ins and outs of the industry, Lombardo’s expertise is her biggest strength. She believes that her experience in the Big Apple is an invaluable asset when it comes to turning Empire State snowbirds into full-time South Florida residents, and she feels that the lure of relocating is stronger than ever. “I feel that the Florida market is strong and prices are increasing,” Lombardo said. “There is going to be an increase in New Yorkers moving to the Southeast. One of the biggest reasons is the continuing problem with traffic. Changes are being made to discourage the use of cars, while encouraging the use of mass transportation. Let’s face it: people can fly to Florida quicker than they can get over the Verrazano Bridge — or at least that’s what it seems like.” Her time in New York also bolstered her confidence as a Realtor. “The areas I specialize in are residential and aeronautical communities,” Lombardo said. “When I moved back to New

York, I realized how advanced I was in the field. When I discovered that Realtors in New York do not write contracts, and I knew I was well-versed in that practice, that convinced me that I had a great advantage over my competitors.” She is glad to be back in a community that she knows so well. At one point, Lombardo was called the “Aero Club Queen” because she was the agent who sold the most homes in Wellington’s Aero Club neighborhood. She still has many friends, clients and contacts in that area, as well as other parts of Wellington. Did We Miss Thanksgiving? Doesn’t it seem like we have just sent the kids back to school? There is this strange time warp that fast forwards us all straight to the holiday season. It came fast, but it is an exciting time of the year. Decorating, gift buying and entertaining are all part of the season. As we look forward to all of the different holiday festivities, let’s talk about décor, entertaining and how we can do it easily and inexpensively. Here are a few ideas that might get your creativity in high gear for the season ahead. First, you need to decide the colors you will use and the style of decorating. Will you use traditional colors for your holiday or will you coordinate them with your existing décor? Do you want casual, beachy, country, natural or more formal and traditional? Now that you have a palette and a style, look around for the simple changes that will transform your everyday look into a festive holiday presentation. Let’s talk candles. Forget the drippy, messy and smoky candles of yesterday. Electric candles are now available everywhere in every color and design. These even come with remote controls and timers. You can put them in places that were previously out of reach or hazardous. These will allow you to highlight areas that usually get no attention. This includes cabinet tops, display ledges and even the inside of curio cabinets and bookcases. This way, you can attain a beautiful, flickering and cozy ambience with no heat, soot, mess or danger. Put a group of mismatched stemware (check your local thrift shop) with an electric tea light in each, on a mantel or the center

of a table. Low cost, but very effective. The next item on my list is ribbon, which is fairly inexpensive. Replace drapery tie backs with ribbon bows. A ribbon bow tied around the back of dining chairs can add a little holiday charm to the chairs you see every day. Ribbon will give you the same feel as garland on banisters, mantels and trees with a more streamlined effect. Add bows to a chandelier over the holiday table or around the bases of candle stands. Remember that if the candle is real, any decorative addition must be on the stand or holder — not on the candle! Fill large vases, large bowls or lidded apothecary jars with colored glass balls. These will add color and sparkle to table tops and shelves. Going back, you can also add battery-powered bee lights to the mix and give the containers even more sparkle. If you are using a more rustic style, gourds make great dip servers, tureens and candle holders. If your holiday involves gift giving, be prepared for the unexpected. Buy multiples of inexpensive things that you love to make quick gift bags. Stock up on your favorite tea, buy discount store tea balls and a few really great mugs. That can be a nice little gift to pop in a bag so no one feels forgotten. If you are at a loss for a gift, you can always stop in and get a gift certificate for a consultation with one of our consultants. It may be a selfish plug, but it is a great idea. Bacio Bacio Helps Military Brides — Brides Across America held its annual Operation Wedding Gown campaign on Friday, Nov. 13 and Saturday, Nov. 14 at Bacio Bacio Bridal Salon, located at 9160 Forest Hill Blvd. in Wellington. Bacio Bacio was one of 60 bridal salons taking part in the national event benefiting military brides. At the event, Bacio Bacio gave away free gowns valued at up to $5,000. Church Fashion Show Fundraiser — The Episcopal Church Women of St. David’s-in-the-Pines Episcopal Church held a fashion show Saturday, Nov. 14 at Breakers West with fashions provided by Dress Barn. Binks Forest Fall Carnival — The Binks Forest Elementary School PTA presented its 2015 Binks Forest Fall Carnival on Saturday, Nov. 7 at the school campus in Wellington. The annual fall carnival is one of the biggest fundraisers for the school. It featured bounce houses, games, entertainment, a petting zoo, a vendor/sponsor area, gift baskets for auction and plenty of food for sale.
