Food and Drink Guide 2010! Generally considered to be a time of merriment and plenty, Christmas can also be a total bombardment of choice! The Albion’s famous hot cider is back along with winter Pimm’s, and the big wood burner is now alight day and night to ensure the warmest winter welcome. Their kitchen comes into its own at this time of year with big, warming, hear ty dishes, the only drawback being not having room for pudding! Albion fish stew, rib of beef, roast Hereford pork chops, steamed steak and kidney pudding, ham and parsley sauce and devilled kidneys are just a few favourites. For pudding perhaps, the tar t tatin, brought piping hot to your table in an iron skillet, turned out in front of you and served with a scoop of homemade ice-cream. James and Aero, the pub dog, are spending

their spare time foraging with notable success. Enormous puffballs, chicken of the woods, and parasol mushrooms are now a regular feature on the menu. The shooting season is now in full swing and we can look forward to rabbit, grouse, pheasant, duck and woodcock. The wine list is updated at this time of year so look out for big robust reds alongside firm favourites such as the Rioja Reserva Marque de Vargas. Christmas bookings are in full swing and the private dining rooms are a favourite for parties between 10 and 30. Many of the more popular dates are taken but call and they will do their best to fit you in, whatever your size of party.

The Green Man The Green Man is a small, wooden panelled, candlelit public house specialising in real ales from independent local breweries. Their main ethos is to provide the public with as much local produce as possible whether it be ale, wine, spirits or food. With seven hand pumps to chose from and an array of wine by the glass hosting the finest organic reds, whites, rosés and Champagne available, your thirst will be more than quenched. For the festive season, they are extending their range of quality whiskies, rums and gins. Head chef Krishna specialises in creating exciting dishes for the menu. He works closely with their butcher and gamekeeper and takes a keen interest in seasonal produce. Dishes such as squirrel pie, braised hare and devilled ducks' hearts have made an appearance on the menu. Friday fish & chips and Sunday lunch are the food highlights of the week. Café Maitreya, now in its 9th year, aims to provide an oasis of calm and warmth from the madness of the festive season. Readers of the Which? good food guide have rated Café Maitreya in the top three Bristol restaurants for the past five years now. Consistently great food and a relaxed atmosphere make this place a must on the hit list of restaurants to experience this winter. Depth of flavour, taste combinations and textures are central to its more Northern European approach to vegetarian cooking. Winter flavours include rosehip, quince, sloes and rowan, and more earthy flavours such as crown prince pumpkin, trompette mushrooms and Jerusalem artichoke. Some produce comes from Café Maitreya’s own garden, whilst some is

Once belonging to engineer Isambard Kingdom Brunel, there has been a lot of consideration to ensure the original features of this personal boathouse were maintained. Cotswolds House and The Greenway Hotel. Executive Chef Antonio Dias, from Coimbra in Portugal, utilises his Mediterranean skills to combine standard favourites with new and exciting dishes in the revised Severnshed menu. Antonio sources fresh fish and meat, where possible, from local suppliers. Antonio reacts quickly to include seasonal produce in his dishes, as well as revisiting the menus regularly in order to offer the very best to Severnshed customers. Severnshed offers a fantastic breakfast menu from 9am daily. A two course prix fixe is also available from 12-7pm, whilst the à la carte is offered from noon until late. You can also visit Severnshed on a Sunday for a traditional Sunday lunch – served until it’s all gone!

Bart Spices Menu Try this mouthwatering recipe to add a little festive flavour to your Christmas menu: Traditional Christmas Pudding, Serves: 8 * 125g ready-to-eat dried prunes * 125g soft dried figs * 400g luxury mixed dried fruit * 3 tbsp brandy * juice & grated zest of 2 oranges * 2 tsp Bart mixed spice * 1 tsp Bart ground cinnamon * 50g almonds, chopped * 200g light brown muscovado * 100g butter, softened * 2 large eggs, beaten * 75g fresh white breadcrumbs * 75g plain flour Preparation Time: 50 minutes Cooking Time: 4 hours Method 1 Chop the dried prunes and figs into small pieces, about the size of a sultana. Place with the mixed fruit in a large bowl. Pour over the brandy, orange juice and zest, mix well and cover. Leave overnight until the liquid is absorbed. 2 Add remaining ingredients and beat until well combined. 3 Grease a 1.2 litre pudding basin and line the base with non-stick baking parchment. Spoon the pudding mixture into the basin. Cover with a pleated piece of buttered foil (the fold allows for expansion), with the buttered side towards the pudding. Fold the foil over the edge of the basin and tie with kitchen string so no steam can escape. Make a string handle to lift the hot basin out of the pan. 4 Place the basin in a steamer, then put the steamer on top of a saucepan filled with cold water. Alternatively, put an upturned heatproof saucer in the bottom of a deep saucepan and stand the basin on top. Pour cold water into the saucepan so it comes halfway up the basin. 5 Bring to the boil, then simmer for about 5 hours for a light pudding or about 8 hours for a darker one. Remember to check the water level regularly as it will need to be topped up with hot water to prevent it from boiling dry. 6 Allow pudding to cool, then discard foil and replace with a new piece. Store in a fridge or freezer for up to a month. 7 To reheat the pudding on Christmas Day, steam or simmer in water for 1½ hours until piping hot. Turn out on to a plate and decorate with holly leaves.

How will you be spending Christmas this year? Our tradition is to go to church around 8am then to my parents’ house afterwards. I am one of five brothers, with one sister and there are 21 grandchildren aged from one 1-18 years old. So, you can imagine the noisy, chaotic night we have with 33 of us all in the same room! It’s crazy but full of happiness and laughter. I love it, but the children love it even more. December 25th is probably the warmest day in the year in Chile so we spend lot of time by the pool.

What does your traditional Christmas dinner involve in Chile, and which Cono Sur wines will you be drinking with it? For obvious reasons, I am always the one in charge of the wines and we like to start with the Cono Sur Sparkling Brut as an aperitif – a great sparkling wine always adds a sense of occasion to the celebrations. To kick off our meal we will share a platter of prawns, crab, clams and mussels – we have great seafood in Chile thanks to our long Pacific

coastline. Our Cono Sur Viognier is an excellent match. For the Turkey it has to be a Pinot Noir, which is the grape our winery has built its reputation on. The Cono Sur Reserva Pinot Noir has the elegance to match the turkey but with enough fruit character to embrace the tasty accompaniments. To finish, we have my mother’s famous lemon meringue pie, which I like to savour with our aromatic Cono Sur Gewürztraminer. 55
