Now that Summer is officially here, the city is abuzz with activities including the International Indian Film Academy Awards (IIFA). Some of the biggest stars in the Indian Cinema arrived in Toronto to kick off the IIFA and throngs of fans stationed themselves at Pearson airport to greet the stars. This includes the likes of Shahrukh Khan, Anil Kapoor, Bobby Deol and Sonu Sood to name a few. Of course, no film festival is complete without fashion & entertainment, and Desi Fashion was thrilled to be a part of it all. We enjoyed seeing all the stars stroll the Green Carpet decked out in amazing styles, and we are excited to share this awesome experience with you. Check out the IIFA feature on page 58. Another exciting development in fashion is Fashion Designer, Nyla Jamshed opening her store in Markham in Mid –July, which will feature her Karizma Collection. Look for details in upcoming issues. hekhar Rahate is a popular name in fashion designing/ shows & beauty pageants in U.S. and around the globe. Shekhar studied fashion designing in Dubai Beams International Fashion School. Shekhar has spent almost 15 years working with National and International celebrities including Miss World/Miss Universe/Miss Asia Pacsfic & many other title winners, presenting fashion shows & pageants in Paris/Germany/Switzerland/ South Africa, Dubai, India and United States. Shekhar is the only fashion designer who was invited by United Nations to present his collection in the prestigious General Assembly Hall at UN Headquarters, New York and this show was highly appreciated by around 450 delegates from 192 countries. 10 of his gowns were featured on this years academy awards red carpet events. hether it was fixing people’s teeth in his previous life as a dentist, or shooting them through his viewfinder is his current profession of a photographer, Dinesh Shettigar’s main aim is to make people smile. Anybody who’d know him would agree.

rapher till then, started broadening his creative scope. A wedding, a birthday party and some personal portrait shoots for close friends later, he knew he that his calling was photography. It’s what I do the best… “I look forward to the time when I have shoots planned,” says Dinesh. “It’s almost a form of de-stressing myself.” While he is currently concentrating on fashion and glamour shoots, his passion is candid photography. “I love capturing people in their essence,” he says. “It’s during such natural moments that one can capture raw, unadulterated emotions, especially during wedding, maternity and baby shoots.” JULY / AUGUST 2011 35


I’ll never forget… Last year, Dinesh participated in a photo contest organized by The Toronto Clothing Show. His photograph not only won him the first prize, it was also selected as the central image for the show’s promotions. “It was a great feeling,” he says, “seeing that shot from my camera on all the brochures, magazine covers and posters.” The incident has been a source of great inspiration. “I enjoyed photography, but this sort of recognition inspired a lot of confidence,” he says. Paris calling… Dinesh has just completed his first shoot in Paris, France. The project involved a photo campaign for the Toronto-based designer Joy Couture who recently showcased her collection at the 36 JULY / AUGUST 2011

I’m here to stay… In the world of digi-cams where every other person owns a photo blog, Dinesh wants to work towards longevity. Good at staying self-motivated he makes sure he’s always evolving. The mantra is to keep honing his skill. “I am constantly investing in my equipment,” he says. “And, I spend a lot of time studying photography.” His sentiments are reflected even when he talks about his dream personalities he wishes to capture. “It’s a fickle world… I want to shoot people

Parting shot… Dinesh met Dr. Norman Thomas – a Neuromuscular dentist in a conference in Orlando. The Octogenarian doctor is often found giving spirited lectures around the world. At the end of the conference, Dinesh asked him what kept him going at his age and with all his experience. “He told me one thing that I will never forget,” says Dinesh “Dinesh”, he said, “Don’t spend your time in criticizing others. Use that time in improving yourself.” A mantra that Dinesh has adhered to ever since.

A

rpana Chakravarty personifies the new age of women with goals and aspirations that cross both academic and creative pursuits. She is an accomplished model, with international exposure, a popular Bollywood dance instructor in the GTA, and a serious academic pursuing a Masters degree in Political Science. When she is not working on her Masters thesis, she can be found enthusiastically participating at multicultural events with her dance troupe or finding time to fit in a modeling assignment for a magazine layout. Her accomplishments as a model, spans across the globe, including assignments in Canada, the United States and India. Featured in advertisements across these countries, it is not unusual to see her as a model on billboards, newspapers, magazines or television. She has taken part in several of North America’s largest South-Asian fashion shows while also infiltrating the Western fashion industry. Arpana’s experience as a dancer includes performances as opening act for top-Bollywood artists like Aishwarya Rai, Shah Rukh Khan and Hritik Roshan. As a multi-dimensional, multi-cultural woman, Arpana’s modeling and dance classes inspires Caucasians to experience a facet of globalized culture that has yet to popularly promulgate in the less culturally diverse areas throughout Canada. At the same time, Arpana is an accomplished academic, having recently completed a bachelor’s degree with honours. She is currently pursuing a Masters degree in Political Science and Globalization with specific emphasis on migratory trends and urbanization in South East Asian countries. As an emerging scholar in her field, she has been invited to present at international

academic conferences, including a recent presentation on a world-wide conference in Hyderabad. As a mark of her scholarly achievements, her academic work is fully funded by her

Bangle The History of Fascinating Indian Bangle (Bracelet)

he tinkling sound of bangles is a sign that the festival season has arrived. No traditional ensemble is complete without colorful bangles. As the festival season approaches there is a sudden surge in the demand for bangles. Traditionally known as “Churi”, they are made in glass, metal, lakh/lac, plastic, enamel, silver, gold and more. The importance of glass bangles dates back to when gold was the precious metal worn by the kings and prosperous people. Glass, which was cheap and abundant, was for the common people. Thus making it the most popular material used to make bangles. Today glass bangles are popular for their variety of colors. Although a riot of colors are also found in Lakh/ Lac and metal bangles. Significance The significance of bangles is deep-rooted within the cultures and traditions of India. It is considered bad omen for married women not to adorn their hands with bangles. For example in some cultures green colored bangles are worn during or after marriage, while other cultures believe none other than red colored bangles are the standard for marriage and married woman. Styles Bangles have evolved through time in their style with its soaring popularity. All these bangle styles can be worn in one or both hands depending on your outfit, style and occasion. Traditional “Churis” or Bangles are very thin approximately .18” in width. Gold, Silver or copper tone fashion bangles is a must have in your jewelry box.

They jive well with eastern or western dresses. Always wear them in bunches for a startling effect. “Kangans” are thick bangles about .25” in width. Huge Success for the launch of The Tiger Jeet Singh Foundation’s Japan Relief Campaign n front of a packed assembly of students ranging from Junior Kindergarten to Grade 7, the Tiger Jeet Singh Foundation along with their partner, the Halton District School Board, successfully launched their Japan Relief Campaign on Wednesday, April 20 at Tiger Jeet Singh Public School. In addition to students at the school purchasing over 300 wrist bands, the assembly was filled with several inspirational presentations prepared by the students along with Tiger Jeet Singh Jr. informing how they can leave messages at www.tigerjeetsinghfoundation.com under ‘Messages of Hope’ for the Japanese children. The assembly was concluded with a very heartfelt plea from Tiger Jeet Singh for the students to not forget the aftershocks and continued devas-

tation in Japan, and to send messages on the foundation’s website that will go a long way in providing hope for the young lives overseas. The Tiger Jeet Singh Foundation is keen to support students and schools in the affected areas of Japan and have already sold approximately 5,500

wrist bands, with 5,000 more on back order and another 10,000 bands being shipped in. The wrist bands are being sold for $5 in Halton Region first, but will also be offered across Canada and


internationally to support the campaign. The Tiger Jeet Singh Foundation is actively seeking corporate donations to support the student efforts as well. Tiger Jeet Singh’s connection to Japan is longstanding. He has spent the majority of his 45-year wrestling career in Japan and his son Tiger Jr. made his professional debut close to twenty years ago in Tokyo. Both fondly refer to Japan as their second home and have also held the country, and even more so the children of Japan, in a special place in their hearts. That is why this event focuses on the students’ contribution along with corporate support, to provide emergency supplies and relief to help those young lives following this disaster. The Foundation will provide Halton schools with customized red and white wrist bands symbolizing the colors of the Canadian and Japanese flags, and decorated in a manner to demonstrate support for the students in Japan. There will be an inscription of “KIDZ 4 KIDZ - United We Rise” illustrating the children supporting one another and paying tribute to the Japanese flag of the ‘Rising’ Sun. There will also be a Japanese inscription, which translated means “We Pray for Japan”.

The ‘South Asian Heritage Month’ commemorated the Tiger Jeet Singh Foundation’s 1st annual school tour. Philanthropist, humanitarian and wrestling legend Tiger Jeet Singh, and his son, former WWE superstar Tiger Ali Singh, made visits to Treeline Public School on May 20, 2011 and Sunny View Middle School on May 30, 2011. To celebrate Asian Heritage Month, these icons spoke to students about their message of “say no to drugs, stay in school, respect your parents and teachers, and stay tiger-fit!” The students at both schools embraced the Tigers with loud roars throughout their presentation. Accompanying the Tigers was Canadian recording artist Prita Chhabra, who presented screenings of her debut music video “Roots”, celebrating her generation’s duality between their Canadian and South Asian heritages.

Recording artist Prita Chhabra received the 2010 ‘excellence in the field of entertainment’ award at the 16th annual National Association of Indo-Canadians (NAIC) Awards, held September 17th at Verdi Hall in Toronto. Prita was in esteemed company alongside fellow award recipients Dr. Deep Saini (Vice-President of the University of Toronto), Niraj Sinha (Canadian multicultural communications expert), and Toronto paramedic Rahul Singh (founder of GlobalMedic, who was unable to attend due to helping flood victims in Pakistan). Senator Vim Kocchar (Canada’s first Indo-Canadian Senator) was also honoured in a special presentation by NAIC President Manmohan Singh.

Raghu Dixit is known as a self-taught guitarist/singer/composer/songwriter. In 2008, Raghu Dixit caught the attention of famed Bollywood duo Vishal & Shekhar, who signed Raghu for the recent launch of his debut album. Film Composer and Music Producer Pulls in Hat-Trick of Awards Vikas Kohli of FatLabs has just completed a hat-trick by winning a MARTY Award from the Mississauga Arts Council this past Friday, May 13th. This is the 3rd award in the past 2 months he has received for his work as a film composer and music producer. On Friday April 1st, he became the first composer to receive the prestigious Voice Achievers Award in Entertainment; And on Sunday April 10, he became the first composer to receive the coveted Trailblazer Award from the ReelWorld Film Festival. “I owe this award to every film director and recording artist who trusted me to create music for their project,” commented Kohli during his acceptance speech at the gala event held at the Living Arts Centre. Backstage, he quoted the line “Lately it occurs to me what a long, strange trip it's been” from a Grateful Dead song when asked how he felt about the past few weeks. And grateful is apt considering there were 21 talented artists in his MARTYS Performing Arts category. These three awards demonstrate the breadth of Kohli's involvement with the music scene. Between the MARTY Award, the Voice Achievers Award and the Trailblazer Award, Kohli’s work has now been recognized by the City of Mississauga, the South Asian community and the film industry, respectively. This marriage of music and film has led Kohli to produce an original live fusion music concert for the upcoming IIFA (International Indian Film Academy) Awards coming to the GTA this summer.

anada’s largest South Asian music concert desiFEST (presented by Rogers) celebrated a milestone 5 year anniversary on Saturday May 28, 2011 with record numbers of fans at Yonge-Dundas Square in Toronto, Ontario. Over 35,000 visitors danced and enjoyed live entertainment over 12 hours. Canadian and International artists came together with host SatsB to celebrate five years of desiFEST. It is the only festival in North America that provides a platform to showcase South Asian music and its best to mainstream audiences. Taz and Stereo Nation closed the evening with an electrifying performance with the crowd singing along word for word. Special guest, Toronto’s very own Roach Killa, returned after his own performance to sing with the band.

PRITA CHHABRA PERFORMS AT 2011 IIFA AWARDS EVENTS Canadian recording artist Prita Chhabra performed at several of the 2011 IIFA Awards Events across the Greater Toronto Area, as part of the promo tour for her debut music video “Roots”. Prita released her ‘east-meets- west anthem’ last month, partly in anticipation and celebration of India’s biggest awards show making its North American debut. On May 28, Prita was announced at an Albion-Islington press conference as the headliner of their IIFA BUZZ “Bollywood Spice” fundraising dinner, which took place June 10 at Elite Banquet Centre, with Toronto’s Mayor Rob Ford in attendance as the special guest of honour. On June 1, Prita spoke alongside Markham’s Mayor Frank Scarpitti about her upcoming performance at the Markham Bollywood Extravaganza, which took place June 18 at the Markham Civic Centre. Prita also performed at an IIFA BUZZ Mississauga “Bollywood Under The Stars” outdoor movie screening, held on June 19 at Mississauga’s new Celebration Square. With a viewership of over 600 million worldwide, the IIFA (Indian International Film Academy) Awards is the largest celebration of Indian cinema and culture, being among the most-watched global events, annually. 66 JULY / AUGUST 2011

Over 8000 people were in attendance this past Friday June 24th at the new state of the art Mississauga Celebration Square venue for its first major production: a special officially-sanctioned IIFA evening concert entitled Bollywood Monster Mash-Up. Presented by the City of Mississauga and produced by FatLabs, this original production featured over 50 singers, dancers and musicians. “I could not be happier with the success of the Bollywood Monster MashUp. By putting on such an ambitious evening concert, we’ve set the stage for the city and the new venue as locations for high quality international productions,” says music composer and producer Vikas Kohli of FatLabs, adding, “Feedback from the over 8000 attendees has been amazing so far and I would remiss if I didn’t take the opportunity to thank the province, the city, the crew and the talented performers for supporting me in making this concept into a reality.” The evening began with an opening ceremony with Mayor Hazel McCallion, Jake Dheer from Rogers Television, MPP Bob Delaney

Prior to this the audience was entertained with 80s and 90s Bollywood and rock songs by a 14 member Fusion Band with a string ensemble, tabla and fronted by Canadian South Asian singer jsin. The show began with 50s and 60s Bollywood mash-ups with French-Canadian electronic artist The Alphabet Backwards performing with South Indian classical violinist Subhadra Vijaykumar and mridangam percussionist Sriram Suryanarayan. And through the night, VJ Daisy integrated various graphics on the fly with live camera feed of the concert to the venues two 15 ft x28 ft media screens.

ABOUT VIKAS KOHLI Award-winning composer and music producer Vikas Kohli is known for his expertise at fusing together genres as varied as punk, hip-hop and Bollywood pop. Kohli has been profiled on etalk Canada, CBC, CTV, The Globe a nd Mail, The Toronto Star, The Hindustan Times, MSN, AOL, Yahoo, Fox and Zee News. He is the first composer to receive the Trailblazer Award from the ReelWorld Film Festival, the first composer to receive a Voice Achievers Award and also received a MARTY award from the Mississauga Arts Council. Inspired by the story of Kiranjit Ahluwalia, featured in the hit movie ‘Provoked’ starring Aishwarya Rai, Avina decided she wanted to create a song with the aim in raising awareness of this injustice. The SBS Charity, also featured in the movie, came to hear of Avina’s forthcoming release and were delighted to come on board and offer their support for the single. Following the overwhelming response and support for her charity debut single ‘Tere Bina’, released last October to support the fight against domestic violence, the industry has been keenly waiting to see what’s next in store for Avina. “Tere Bina is a positive song all about girl power! It tells the story of a young woman who finally decides to walk away from a really violent and abusive relationship. The lyrics are in Hindi but the music has a very western feel, which I think will appeal to listeners that like to hear something a bit different but with a conscience. The Speed of Ideas– Shaw Festival, July 23 & 24

W

hen Shaw Festival managers began talking about the celebrations for their 50th Season, they began to dream about having a big conversation on the subject of theatre. Their dream was to invite some of the smartest people they knew, to come and talk about the kind of theatre they love – the theatre of ideas and debate; the kind of theatre that provokes and delights, challenges and inspires. As they talked, they began to create a list, one which included people they would love to talk to – some were old friends and some were people they had always wanted to get to know. And that was the birth of this forum that they have entitled ‘The Speed of Ideas’. At the top of that list was award winning playwright Tony Kushner (Angels in America). Here was a contemporary playwright who openly sings the praises of Bernard Shaw – Kushner had just written a play (The Intelligent Homosexual’s Guide to Capitalism and Socialism with a Key to the Scriptures) whose title was inspired by a Shaw play (The Intelligent Woman’s Guide to Socialism and Capitalism) Considered to be as controversial a playwright today as Shaw himself was in his day, having Tony

Kushner on hand to discuss the core of The Shaw’s mandate – the necessity of provocative ideas – was indeed a dream. When he accepted, The Shaw team was elated! Joining Kushner on the dream list was playwright Susan Lori-Parks. To The Shaw, Parks represents what they refer to as ‘the new Shavians’, playwrights like Bernard Shaw who challenge the status quo and shake up the establishment with plays that are thought-provoking and visceral. When word came in that Susan-Lori was indeed available and happy to participate, the energy surrounding the forum began to grow. To ensure that the speakers list was well-rounded, and not just a theatrical love-in, organizers decided to look outside themselves at writers and influencers who not only understood theatre, but were able to clarify the need for discussion and debate about ideas in the form of theatre. Immediately, they went to author and theatre critic Michael Billington. On July 23, Tony Kushner kicks off the two day event with a talk about his own work, and his relationship as a playwright with the writings of Bernard Shaw. Kushner will also conduct a book signing following his lecture. Also on the 23rd the second lecture of the day is entitled Inspired by Shaw, a playwright’s discussion featuring writers who have taken their own approach to Shaw’s work. Moderated by Literary Manager Joanna Falk, the panel includes Michael Healey (adapted Shaw’s On the Rocks for the 2011 season) and John Murrell (adapting Shaw’s Geneva). Concluding the 23rd, another event called Reviving the Female Voice takes a look at the ways in which plays by and about women of the Shaw Festival’s mandate pay a vital role at

TODAY’S MARKET In today’s real estate market, buyers tend to look at a property asking price not as the amount they will have to pay for a home, but as a ceiling under which they can negotiate with the vendor (this was less true in the recent seller’s market when many buyers competed against each other, upping the sales price each time). e all dread the time when we break or lose a tooth. As adults we don’t get life lines or grow teeth as we age, so we do everything in our power to prevent its loss. Do we do enough for our children’s teeth? Our children rarely focus on their oral hygiene during their growing years and we are all guilty of that, it is the parents who should encourage positively and stay on top of their children’s oral needs. As early as 12 months of age the first dental appointment needs to be scheduled, so that good oral habits can be demonstrated which starts the years of compliance and care. Our past personal experiences if unpleasant should not mold our children’s future dentist patient relationship. Remember good habits should always start young. Deciduous or baby teeth usually fall out in the order in which they have erupted – first the two bottom front incisors, followed by the two top front incisors, the lateral incisors, first molars, canines and second molars. If a child loses a baby tooth early, a permanent tooth may erupt early and potentially come in crooked due to the limited space. In the normal course of events, the permanent teeth slowly dissolves the baby tooth root as it comes in up under the baby tooth. Finally the baby tooth gets loose and falls out. Early loss of baby teeth can be due to accidents or having Dental Caries which if left untreated can cause dental abscesses, spread of infections to the permanent tooth buds and tooth loss.

Using fluoride is one of the best ways to help prevent tooth decay. Fluoride makes the tooth surface stronger and more resistant to tooth decay. Fluoride can also be prescribed by your dentist as supplements. Sealing fissures in newly erupted molars helps protect them from dental caries as soon as they emerge. Sealants can help adults too, but they are only effective against tooth decay on the biting surfaces of molars and premolars. Keeping baby teeth for the duration of their term in the eruption cycle helps promote and guide proper eruption of permanent teeth and limits future orthodontic treatments. Keeping teeth longer also promotes proper speech development, facial growth, chewing and nutritional health. The last baby teeth are usually lost around age 11-12 years. It is worth mentioning that baby bottle tooth decay is type of rampant caries that occurs due to frequent exposure of a child's teeth to liquids containing sugar such as milk, juices or sweetened drinks, when these sugars pool around the infant’s teeth and gums, it feeds the bacteria in plaque. After numerous attacks, tooth decay can begin. Weaning should be encouraged which is the time when babies learn to take liquids from a cup instead of from a breast or a bottle.

Most babies are ready to learn to use a cup by 9 or 12 months of age and the avoidance of the overnight use of bottles are critical in preventing rampant decay. Having them sip on water after mealtime is important in rinsing and flushing the sugary liquids which can promote decay. Wipe your child’s teeth off after each feeding Most importantly try to avoid bedtime or long frequent meal times. Use the bottle at feeding time, and not as a pacifier. It is easier to fix a tooth with a small filling than a large cavity that requires baby root canals and stainless steel crowns. Hence for stronger aligned permanent teeth which we have to use throughout our chewing years we need to start the oral care in our children’s baby teeth and get them to a Dentist every 6 months, after the 1st year to build the habit and prevent complications such as crowding or malocclusions and dental infections. Keep in mind prevention is better than cure; it doesn’t matter if you have “Baby” or “Adult” teeth.

Low Back Pain

A

s a yoga teacher specializing in therapeutics, I’ve fielded many questions regarding back pain and injuries. It’s important to take time to ask students what they are nurturing in their bodies so that you’re able to monitor them and give more specific options. If you ask one-on-one, they are usually more willing to share with you, as opposed to revealing to a large group. While yoga can be very healing, many classes are meant for the general population (without injuries) or are often too fast to address the specific needs of someone with this type of injury. Low back pain is often the result of minor muscle, ligament or joint issues in the lumbar spine area as a result of strain from one activity (how you use your body AND how you sit, stand and sleep) or years of misalignment (poor posture), muscle tightness or weakness, stress (life) or other injuries. Lack of body awareness is a huge contributor as well: rounded shoulders, forward head, and kyphosis (concave spine), swayback, or lordosis (arched spine). Sciatica is much more severe (with pain shooting down the leg from the back) and happens when the spinal vertebrae bulges out and compresses the nerve from the spinal cord. If you have a “radiating, constant pain which could infer an impingement of the nerves from a constricted piriformis muscle pressing on the sciatic nerve or herniated disk, and are not able to find a pain free posture (even lying down)”, Judith Lasater, author and PT recommends a medical evaluation. In

addition, there are several life-threatening causes of back pain (infection, cancer, spinal fracture and neurological problems) which seeking a physician is in order. However, most injuries are resulting from postural or poor body awareness. Are you slumped in a computer chair while you’re reading this? Move to the edge of your chair, pull your sitz bones together (and higher than your knees), place your feet flat on the floor in front of you, and draw your belly and chin back. There, now don’t you feel better already? (Taken from the Alexander Technique which is as beautifully applicable today as it was 100 years ago when it was founded.) “Movement heals,” Joseph Pilates. Resting (lying in bed) will not allow the muscles to rebuild to support the spine. The more you lay around, the more muscle loss you'll have (studies show up to 3% a day). Studies also show that most pain will subside within 6-8 weeks, regardless of what you do and that surgery is generally not the most effective option. A recent study of yoga practitioners found that 98% of 1000 people with back pain found yoga helpful. Now that’s powerful. What can you do in your yoga practice to reduce back pain? Begin by creating AWARENESS of: n Generate internal warmth first before movement or stretching. n Focus on breath. n Placement or stacking and proper rotation of joints (ask your teacher for adjustments).

Aim to feel balanced through the pelvis and lower spine, not over-arching the low back and not over-tucking the pelvis. So this soup is particularly beneficial during flu season but is healthy and delicious all year long.” Serves 4 Ingredients 3 cups (750 mL) frozen shelled edamame 1 tsp (5 mL) fennel seeds ¼ tsp (1 mL) ground cardamom salt and pepper to taste 1 cup (250 mL) water ¼ cup (60 mL) loosely packed mint leaves 1 tsp (5 mL) grapeseed oil

SPICY BEETS WITH STEAMED SPINACH “Not only is this dish beautiful with its dark green and rich red colors, but it also features a delicious blend of spices: fennel and cardamom. It’s a perfect accompaniment to seafood. We never had beets growing up in the village, so I definitely feel like I’ve been missing out! I make this recipe a lot to make up for it”. Serves 4

Beets are a good source of fiber, vitamin C, magnesium, iron, copper, and phosphorus. Add beets to spinach and you get twice the health benefits, as spinach is also rich in vitamin C and fiber and contains other nutrients, such as calcium, folate, vitamin K, and iron. Ingredients 4 medium beets, peeled and cut in half 6 cups (1.5 L) water

boil, then cover the saucepan and reduce the heat to low. Simmer until the beets are cooked, about 7 to 10 minutes. Drain the beets and let them cool, then slice them thinly. Heat the oil in a skillet over mediumhigh heat. When the oil is hot, add the fenugreek leaves, fennel seeds, cardamom, salt, and pepper and cook for 5 to 7 seconds. Add the beets and stir to coat with the spices. Turn the heat off. Rinse the spinach and place it in a large saucepan with a few tablespoons of water. Set the saucepan over medium heat and steam until the leaves wilt just a little, about 2 to 4 minutes. (Alternatively, you can steam the spinach in a vegetable steamer.) Drain the spinach in a colander to remove excess water, then divide it among 4 plates. Spoon some of the beet mixture over each bed of spinach and serve.

Combine the edamame, fennel seeds, cardamom, salt, pepper, and water in a saucepan and bring to a boil. Cover the saucepan, reduce the heat to low, and simmer for 3 to 5 minutes. Turn the heat off and allow the mixture to cool. Add the mint leaves. Transfer the mixture to a blender and purée. Return the soup to the saucepan and reheat the soup gently on low heat. Heat the oil in a small skillet over medium-high heat. When the oil is hot, add the ginger and fry for 15 seconds. Set it aside. To serve, ladle the soup into 4 bowls. Garnish with a few pieces of the ginger in the center of each bowl.
