THE MUSEUM IS OPEN TUESDAY THROUGH SATURDAY FROM 9AM – 5PM AND ON SUNDAYS FROM 1PM – 5PM.

Dazzle her for theHolidays!

This month, the Northeastern Nevada Museum is excited to be exhibiting the artwork of William Matthews in the Halleck Bar Gallery. At 65, Matthews is recognized as one of the pre-eminent artists of the American West. While primarily known for his cowboy paintings, Matthews is not himself a cowboy. Instead, he is an interloper—a trespasser—viewing their world from the outside. He is not, however, a stranger to the West. Matthews is a westerner who lives and works in Denver. Born in 1949, Matthews grew up in the Bay Area. His professional career began in Los Angeles, designing albums covers for Warner Bros. and Capitol Records. He lived in Europe from 1975 to 1980. Upon his return to Colorado, he ran a graphic design studio until 1990 when he dedicated himself full time to painting. He is most well-known for his portrayal of the working cowboys from the great ranches of the American west. The 1994 published monograph, Cowboys & Images: The Watercolors of William Matthews, chronicles a decade of the artist’s work devoted to this subject. In the fall of 2007, Chronicle Books of San Francisco released a second monograph dedicated to the subject matter entitled, William Matthews: Working the West. Commissioned projects have included cover artwork and story illustrations for the book Close Range, by Pulitzer Prize winning author Annie Proulx, a series of six large scale watercolors, Colorado Pioneers, installed at the Colorado Convention Center, and the 1994 United States Postal Service commemorative Postal Card Canyon de Chelly, from the series, America the Beautiful. William Matthews’ artwork is widely exhibited. His watercolors are part of numerous private and public collections including: Joslyn Museum, Omaha, Gilcrease Museum, Tulsa, Warner Western Records, Nashville, Autry National Center, Museum of the American West, Los Angeles, Booth Western Art Museum, Cartersville, Georgia, Buffalo Bill Historical Center and Museum, Cody, National Cowboy Hall of Fame, Oklahoma City, Old West Museum, Cheyenne, Eiteljorg Museum, Indianapolis, Phoenix Art Museum, Tucson Museum of Art, and the Denver Art Museum.

A Thanksgiving Recipe Plan Brined turkey with sage-thyme butter INGREDIENTS: 1 cup kosher salt 1 turkey (12 to 18 pounds)* 1 cup unsalted butter, at room temperature 1/2 cup fresh sage leaves, chopped 1/4 cup fresh thyme, chopped 2 tablespoons chopped garlic 1/2 cup all purpose flour 4 cups reduced-sodium chicken broth, warmed 1 tablespoon fresh sage leaves, chopped 1 tablespoon fresh thyme, chopped PREPARATION: Make brine: Boil 1 qt. water with salt in a pot big enough to hold turkey, stirring until salt is dissolved. Add 2 qts. cold water and let cool to room temperature. Meanwhile, remove leg truss from turkey and discard. Remove neck, tail, and giblets and save for broth if you like. Lower turkey into brine. If breast isn't submerged, make more brine, cool, and add. Chill, covered, at least 12 hours. Make butter: In a food processor, whirl butter, sage, thyme, and garlic until smooth. Preheat oven to 350 degrees. Lift turkey from brine, rinse, and pat dry. Set turkey on a V-shaped rack in a large roasting pan (big enough so turkey fits inside rim). Slide your fingers between skin and flesh of turkey, turning bird to make pockets of space on the breast, back, and leg areas. Still using your

fingers, slide about 1 tbsp. sage butter at a time under skin in all the pockets. Place bird, breast up, on rack. Roast turkey, basting occasionally with pan drippings, until a meat thermometer inserted straight down through thickest part of breast to the bone registers 165 degrees, about 2 to 3 hours. Transfer turkey to a platter and tent with foil. Let rest in a warm place 15 to 30 minutes, then carve. Meanwhile, make gravy: Pour drippings into a clear measuring cup, using a flat spatula to scrape off browned bits stuck to pan. Skim fat from drippings, reserve 1/4 cup of fat, and discard the rest. Measure drippings; add hot water if needed to make 1 cup total. In a large frying pan, heat reserved fat over medium heat. Add flour and cook, whisking constantly, until golden brown, about 5 minutes. Add drippings, whisking into a smooth paste. Whisk in about 1/2 cup broth at a time, letting mixture come to a boil between additions. Stir in sage and thyme. Make ahead: Chill sage garlic butter, covered, up to 4 days; bring to room temperature when ready to use. *Cook time varies with size of turkey as follows: 8-12 lb turkey: 2 3/4-3 hours; 12-14 lb turkey: 3- 3 3/4 hours; 14-18 lb turkey: 3 3/4 -4 1/4 hours; 1820 lb turkey: 4 1/4 -4 1/2 hours; 20-24 lb turkey: 4 1/2 -5 hours

Cranberry Sauce with Apple INGREDIENTS: 1 12-ounce bag fresh cranberries 1 large apple, peeled and cut into 1/2-inch dices 1 cup sugar 3/4 cup water PREPARATION: Line an 8-by-4-inch loaf pan with plastic wrap and spray the plastic wrap with nonstick cooking spray. In a medium saucepan, combine the cranberries (take out 6-8 cranberries for garnish) with the apple, sugar and water. Bring to a boil and cook over medium high heat, stirring frequently until the cranberries are completely broken down and the sauce is very thick, about 15 minutes. Homemade Dinner Rolls INGREDIENTS: 1/4 cup warm water (115 degrees) 2 packets (1/4 ounce each) active dry yeast 1 1/2 cups warm whole milk (115 degrees) 1/2 cup (1 stick) unsalted butter, melted 1/4 cup sugar 2 1/4 teaspoons salt 3 large eggs 6 to 6 1/2 cups all-purpose flour (spooned and leveled) DIRECTIONS: Place water in a small bowl; sprinkle with yeast, and let stand until foamy, about 5 min. In a large bowl, whisk together milk, butter, sugar, salt, and 2 eggs. Whisk in yeast mixture. Using a wooden spoon, stir in 6 cups flour, 1 cup at a time, until you have a soft, shaggy dough (if necessary, add up to 1/2 cup more flour). Turn dough out onto a floured work surface; knead until smooth and elastic, 5 to 10 minutes. Butter the inside of a large bowl; place dough in bowl, turning to coat. Cover bowl with plastic wrap; let stand in a warm spot until dough has doubled in size, about 1 1/4 hours. Butter two 13-by-9-inch baking pans. Divide dough in half. Roll each half into a 15-inch rope; cut each rope into 15 1-inch pieces. Press each piece into a disk, then shape into a ball. Arrange dough balls in prepared pans. (To make ahead: Wrap pans well, and freeze, up to 2 months.) Cover pans loosely with plastic; let stand in a warm spot until rolls have doubled in size, about 1 1/4 hours (2 hours more if frozen). Preheat oven to 375 degrees, with racks in upper and lower thirds. In a small bowl, beat remaining egg until blended; brush onto rolls. Bake until golden brown, about 20 minutes, rotating pans back to front and top to bottom halfway through. Let rolls cool 15 minutes before serving.

TOOLS FOR BAKING PERFECT

Cheesecake

Nordic Ware 9” Springform Pan A great pan for baking cheesecakes, cakes, and even savory, deep dish pies. Also available in different sizes.

Cuisinart Hand Mixer with Storage Case

An essential tool for fall baking! A power tool that makes kitchen time easy! Variable speeds for many tasks.

DIRECTIONS: PREPARE THE CRUST: (1) Preheat the oven to 325°F. Place broken gingersnaps and the pecan halves in a food processor and pulse until an even fine crumb is formed. Add the brown sugar and pulse to combine. Add the melted butter and pulse once again. Prepare a 9-inch springform pan by placing a circle of parchment paper on the bottom of the pan. Cut the parchment so that it just fits the bottom without interfering with the pan’s ring. Pat the crumb mixture into the pan by lining the bottom and patting the crumbs 2 inches up the side. Bake in the oven for 10 minutes or until the edges just begin to brown. Remove from the oven and allow the crust to cool in the pan. PREPARE THE PUMPKIN FILLING: (2) Mix the cream cheese, sugar, spices, and salt together with a hand or stand mixer until smooth and the spices evenly distributed. Continue beating until the mixture becomes slightly fluffy, about 3 minutes. Add the eggs, one at a time, until just incorporated. Add the cream, vanilla extract, and pumpkin puree, beating until just combined; do not overbeat. (3) Prepare the springform pan with the baked crust inside by wrapping the exterior in aluminum foil. This will form a barrier around the pan when it sits in a water bath during baking. Pour the filling into the baked, prepared crust. Carefully place the filled pan into a larger pan. Place in a 325°F oven. Fill the outer pan with hot water until it reaches halfway up the side of the pan. Bake for 1 hour and 45 minutes. The center will be set though will quiver when moved.

Chic Wrap

Not all plastic wrap is created equal! Easy-to-manage wrap with a box and integrated cutter eliminates frustrations.

PREPARE THE TOP FILLING: (4) In a small bowl, whisk together the sour cream, powdered sugar and vanilla. Pour over the freshly baked cheesecake. Return to the 325°F oven for 10-12 minutes. Remove from the oven and carefully lift the springform pan from the water bath to a cooling rack. Allow the cheesecake to cool to room temperature. Cover and refrigerate for 4 hours or overnight. PREPARE THE PRALINE GARNISH: (5) In a saucepan, combine the granulated sugar and water. Heat and stir until the sugar is dissolved. Add the butter and pecan halves, stir to coat, and cook until the nuts have toasted and the sugar has just turned amber. Spread in a single later on a plate and cool. PREPARE THE SPICED WHIPPED CREAM: (6) Mix together the cream, powdered sugar, vanilla extract, and cinnamon in a small bowl. Stir to dissolve the sugar, then whip the cream to soft peaks. PREPARE TO SERVE: (7) With a warm knife, run it around the edge of the pan to loosen the outer ring from the chilled cheesecake. Carefully remove the ring. Transfer the cheesecake to a serving platter by sliding the cheesecake from the bottom of the pan to the platter. (It’s ok to leave the bottom parchment liner in place underneath the cheesecake.) Dollop or pipe the spiced whipped cream onto the cheesecake, and place the caramelized pecans on top. Cut the cheesecake into 12 slices Serve and enjoy.

CHEESECAKE

Tips

PREBAKE THE CRUST

DISGUISE IMPERFECTIONS

This gingersnap crust behaves similarly to traditional graham crackers crusts. The melted butter moistens the flavorful crumbs holding them together while patted into the pan. Spread the crumbs evenly and pat them into place and up the side of the pan. Don’t fret about an irregular side border – it will be part of the cheesecake’s charm. Baking the crust helps set it in place and forms a barrier so that the batter does not soak through to the bottom.

If your cheesecake develops cracks on the top, use the sour cream top filling layer to fill in the gaps. After wrapping well with plastic wrap, removing the wrapping for serving may be tricky. If some of the topping sticks to the wrap, just smooth over and dust with a little cinnamon.

MANAGING THE HOT WATER BATH Moving a large pan with hot water into the oven can be risky business! It’s imperative that no water slosh into the prepared cheesecake pan. To minimize any potential issues, place the twopan assembly in the oven, then add the hot water to the outer pan. The process will cause some heat to be lost initially, but given the low temperatures and long baking time, the temporary heat loss will not be an issue.

LEAVE IT ALONE Even temperatures are key when baking cheesecake. The water bath will help, but keeping the door closed will really help! Resist the urge to open the door and to poke at things especially in the early stages.

COOL NATURALLY Just as great care was taken in creating an even heating environment, allow the baked cheesecake to cool gradually as well – no wild swings in temperature. When baked, carefully remove the cheesecake pan from the hot water bath and place on a cooling rack for a few hours or until room temperature is reached. Chill to finish the setting process; keep stored in the refrigerator.

WRAP WELL Wrap the baked cheesecake well after baking and while storing in the refrigerator. As with many dairy-based foods, the cheesecake can pick up an off flavor from other foods in the refrigerator. Onion-flavored pumpkin cheesecake? Not this time.

SWEETEN THE CREAM To easily sweeten cream that’s to be whipped, use powdered sugar instead of granulated sugar; it dissolves instantly.

CLEAN THE KNIFE Use a knife warmed in hot water when slicing the cheesecake. Keep a towel handy for wiping the knife’s blade between cuts.

Enjoy! NOVEMBER 2015 | EVERYTHINGELKO.COM

Khoury's Wine of the Month

Khoury’s would like to thank all of the Veterans that protect and respect the land that we call home.

Wine and War Some Veterans are finding that after they have served their time in the Military, their time is now best served amongst the grape vines. In 2012 an article published by Wine Enthusiast magazine recognized five wineries in the United States that were either started by or run by Veterans. One of those wineries, recently presented the Double Gold at the Seattle Wine Awards, is Mercer Estates. Mercer Estates Winery is located in the Horse Heaven Hills Appellation of eastern Washington on land that has been a family run farm since 1886. Rob Mercer is a fourth generation farmer on the family property as well as president and CEO however, prior to becoming the wineries front man, Mercer donned military fatigues and combat boots. Rob is an Iraq War veteran. The Mercer family

has a long history of combat engagement dating back to the command of General George Washington so it seems only natural that Mr. Mercer would easily slip into the role of soldier. After serving with the US Military, Rob Mercer returned to Washington to take the family farm to the next level. In 2007 the Mercer family, which had been growing and selling grapes to local wineries, established their own wine label and began producing their own award winning wines. Mercer Wine Estate employees see themselves more as agriculturists rather than viticulturists, working the land and enhancing all that it has to offer, maintaining a sense of balance in the ecosystem so that generations to come may benefit from their knowledge.

Mine Reclamation Awards When mining operations and exploration projects in Nevada are complete, mining companies are required to leave the land safe and stable, and to provide a productive post-mining land use. To recognize and share examples of successes in the area of reclamation, closure, planning and wildlife protection and enhancement in Nevada, Excellence in Mine Reclamation Awards have been presented since 1991. Department of Conservation and Natural Resources Director Leo Drozdoff says, “While compulsory land reclamation projects occur throughout the state, these awards highlight efforts that are truly noteworthy.”

South of Battle Mountain is the historic Copper Basin area, which has been prospected and mined since the 1800’s and hazardous abandoned mine features are present on both private and public lands. One of these historic mining areas was the Bailey Day mine, located on public land near the town of Battle Mountain. Although the area had been fenced, continual trespass had reached a peak in 2013, when the Lander County Sherriff’s Department contacted Newmont with concerns about continued vandalism of the exclusion fence and concerns for young people exploring shafts and tunnels and using the site for wildland parties. Newmont immediately responded with fencing repairs, and coordinated with the BLM, Sherriff’s Department, the NV Department of Wildlife and the NV Division of Minerals in planning for permanent closure of hazards. Archeological and biological assessments were completed, and a detailed closure plan was implemented. Shafts were backfilled and surface dumps were regraded to approximately the original contour, and the entire area was re-seeded. NOVEMBER 2015 | EVERYTHINGELKO.COM

THE RETURN OF THE

Rough-legged j

Hawk J CONTRIBUTED BY LOIS PORTS, BRISTLECONE AUDUBON CHAPTER

The Rough-legged Hawk (Buteo lagopus) ranges in length from 18-24 inches and has a wingspan from 47-60 inches. They belong to the genus Buteo which

J

is a group of hawks with broad rounded wings,

42

relatively short tails and soaring flight. Rough-legged refers to the fact that they have legs feathered all the way to their toes. This helps conserve heat. The Rough-legged Hawk, the Ferruginous Hawk and the Golden Eagle are the only North American raptors to have this characteristic.

During breeding season they are found in the Arctic and sub-Arctic regions of North America and Eurasia. During fall they migrate south into much of the central areas of the United States in order to avoid the harsh winters of their breeding grounds. It is a common winter resident in the Great Basin. They are usually seen singly. They feed mostly on small vertebrates with rodents making up the majority of their diet. They occasionally will feed on carrion. The Rough-legged Hawk utilizes several different hunting methods. It can often be seen perched on a fence post, phone pole or even on the ground still-hunting, where it watches and waits for prey movement. Sometimes they use quartering. The hawk flies back and forth over open fields where rodents and other prey can be surprised and caught. Even though it is a fairly large raptor the Rough-legged Hawk can hover. It hangs in the air on very rapidly beating wings as it searches the ground below. When the snow melts in the spring rodent runways become totally exposed to their scrutiny. The hawks will travel northward following the snow melt until they reach their breeding grounds in the Arctic Tundra. Bristlecone Audubon main goal is to provide educational opportunities for our area. Our next meeting will be on November 19, 2015. Dr. Nick Haertle from Great Basin College will be giving a presentation on snakes with an emphasis on pitvipers. Everyone is invited to attend this meeting. We meet at 7:00 p.m. in Room 208 of the Diekhans Center for Industrial Tech. (1050 Chilton Cir., Elko).

November 14th and 15th, the second weekend in November, the Elko Community will be treated to another great event by the Lamoille Women’s Club. The Fall Craft Festival organized by Martha Wallace and Elisabeth Moore is held at Spring Creek High School Gymnasium on Highway 227 (Lamoille Highway) which is less than 15 minutes from Elko proper. This fall/ winter event is sponsored by the Lamoille Women’s Club and the membership of the club volunteers their time and talents to improve the communities of Lamoille, Spring Creek and Elko. Proceeds for all their projects and events are reinvested in the community. The LWC Craft Festival opens the season of holiday bazaars and craft events for Christmas shoppers in the Elko area. Take an hour or so break from your weekend and enjoy shopping in comfortable setting among the various booths available to find that special gift for that someone special. Well-made creative items for shoppers’ satisfaction will be available at this extravaganza. Local photography, stoneware, quilts, ceramics, Christmas Ornaments, homemade soaps, and soap dishes, local jewelry, and refurbished furniture. For the foodies there will be gourmet olives, garlic and many other spices packaged for gift giving and chocolate delights. Not to mention Scentsy candles, other Christmas items, Miche Bags, totes, nesting dolls, cat trees, and bamboo pillows. Shop and browse in a spacious room with entertainment, great crafters, friends, and members of the Lamoille Women’s Club. NOVEMBER 2015 | EVERYTHINGELKO.COM

A big advantage to the Fall Craft Festival is the FREE close parking. The LWC will also be showcasing their new quilt, the 41st edition that will be awarded to the lucky person that purchases the opportunity ticket between November and June 2016 at the end of the Lamoille Country Fair. The new quilt will be unveiled November 14th. This year’s quilt has been made by Joyce Kay. The ladies will be pleased to offer everyone the opportunity to purchase tickets for this gorgeous quilt. Get your tickets early. One does not need to be present to win the quilt. Proceeds from this festival go toward the Lamoille Women’s Club community service projects. The Club provides Scholarships for high school and college students, leadership training for a worthy student at Spring Creek High school, food baskets at Thanksgiving and Christmas, cookie trays for all county offices at Christmas and adopts a family for a year needing services from CADV. The ladies have a currant two year project that assists the VFW supporting local Veterans. Last year we contributed monetary donations to Hospice, Spring Creek Volunteer Fire departments, Special Olympics, Joshua Tree, Underdog Ministries’ and the Elko County Fair. Donations have also been provided to Safe Haven Animal Rescue Zoo, Lamoille Volunteer Fire Department, and the Elko Animal Shelter. For more information on the Fall Craft Festival and Lamoille Women’s Club, contact Martha Wallace at 775-340-6922, Elisabeth Moore at 775-934-7194 or visit the GFWC Lamoille Women’s Club website at www.lamoillewomansclub.org. Laser Therapy

Lorinda Fallini, DVM

Michael Perchetti, DVM Christina Talley, DVM Tessa Sustacha, DVM

For those who view drugs and surgery as mainstay treatments, laser therapy may seem odd. Nothing is injected or swallowed, yet it is claimed that light can help heal tissues and injured nerves regrow. Light waves possess incredible power. Photosynthesis is

converted. Laser light also has energy that can be used therapeutically. In recent years, use of laser therapy in both human and veterinary medicine has increased in the treatment of conditions that were once managed only with drugs and surgery. Laser therapy is much less invasive than traditional therapies. Lasers can also reduce or eliminate the need for drugs in certain cases. You may be wondering, “How does it work?”, “Is it worth the money?”, and “What situations can laser therapy be used in?” Well, keep reading and I will let

Elko

Veterinary Clinic

you in on all of the details.

What in the heck is laser therapy anyway? Laser therapy is a surgery free, drug free, non-invasive treatment to reduce pain, inflammation, and swelling. Laser is actually an acronym for “light amplification by stimulated emission of radiation.” Laser beams are different from other light sources in that they provide focused energy that produces small points of intense power. The light from a laser can cauterize (burn), cut and destroy tissue in a very precise manner. Used at lower power, lasers have the ability to alter the function of cells without heat and without destroying those cells. This can be used to treat a variety of conditions affecting the joints, nerves, bones, blood flow, and soft tissue in animals. The light of the laser is distributed through a noninvasive hand piece to treat the affected area. Your pet may feel a gentle and soothing warmth, and the treatments usually take a matter of minutes. How much is this treatment going to cost? Here at Elko Veterinary clinic, we have a few choices. The price will depend on whether or not it is to treat a chronic disease, post-surgery care, or for any acute conditions. Prices will range from $15-$180. You can buy a laser session individually each time you visit or you can purchase a 4 or 6 pack of treatments depending on the case. If you buy the single treatment, you may come in, get your pet’s laser session done, and then pay and leave. If you buy the multiple laser pack, you may come in, get the laser session done, and leave until your next appointment. At any time you may call in or come up to the counter and schedule your pet’s laser treatment session.

How do I know if laser therapy will help in my pet’s situation? Laser therapy can be administered to any animal from hamsters to cats, dogs to horses, it has even been used to treat reptiles (and fish!). Some acute situations we use laser therapy for include wounds, allergies, infections, bites/cuts, inflammation, sprains, fractures, post-surgical healing and pain relief. Laser is also phenomenal for more chronic conditions, such as, degenerative disc disease, inflammatory bowel disease, skin disease like- lick granulomas, anal gland abscesses, osteoarthritis, and geriatric care for our older patients. Here at Elko Veterinary Clinic we use laser therapy every day and see improved pain management and healing in our patients. Laser treatment is an amazing therapy and we are fortunate to be able to help our patients with pain and improve wound healing. Everything we do to help our patients, in turn help improve our clients’ lives and relationship with their pets. We love nothing more than to help your pets feel better. Laser sessions are a noninvasive, drug free way to help with pain and inflammation. They are more affordable than most of the drugs and can be used to help with the same types of issues. Also laser therapy can be used to treat multiple species of animals. If you have any more questions about laser therapy, feel free to give us a call or schedule a consult with one of our doctors.

Rescued

Adopted

PETS

Zoey Bryan and Diane Ouellette adopted Zoey one year ago. Zoey was ready for us before Bryan was ready for her, but he quickly caught up. There is never a day that she doesn't bring us dozens of smiles.

Rescuers know what a gift it is to rescue It brings you great joy and great gratitude. It's like they know and appreciate you and it feels great to be appreciated. Thank you to all that submitted their pet pictures and stories and thanks to all those that have opened their hearts and homes to a rescue. Thank you to the hard work that is done at The Elko Animal Shelter. They provide a temporary home until a forever home comes along.

Our favorite breed is "Rescued".

Bella Rose - before and after

Baby Girl

She was pulled by Theresa Meyer to go into the Old English Sheepdog Rescue where she was adopted by a loving family who had been waiting 2 years for a girl like her. She is happy and spoiled rotten in Idaho.

Wink Embry adopted this sweetie after someone dropped her off in Spring Creek at 6 weeks of age. Wink says "She is the happiest Daddy's Girl." I say she is the "Luckiest Daddy's Girl."

Jax & Ayla Ayla adopted Jax in May of 2015. Ayla says that Jax is the kindest, sweetest, and most easygoing dog I have ever had. I think Jax's thinks Ayla is the kindest, sweetest, and most easygoing human he has ever had.

62

Punkin Spice

Tank

This long haired Chihuahua mix that was adopted by the Rigby's in May of this year. Sharon says "She is such a joy in our lives and is up for any adventure. She has a funny personality, is loving and sweet, and rarely ever barks." They named her Punkin, and their 15 year old added the middle name Spice, saying she is a Spice Girl. I think her favorite song would be "Spice Up Your Life".

The Goldstein's adopted Tank from the Elko Animal Shelter in the Spring of 2015. It's not heard to imagine that Tank is a total Sweetheart. Tank loves to play with his brother and sister and is a great protector to his family. They feel this impulse was by far the best for all as he was part of their hearts before they even left the shelter.

Hildegarde

Jasmine

Hildegarde was adopted from Animal House in 2006 by the Mott family. Hildegarde has soulful eyes what an absolute sweetheart.

Jasmine was adopted by the Cabaret's in February of this year. Jasmine shows her appreciation for her new life by pleasing others. Laurie says Jasmine loves to please and she is hoping to have her trained and certified as a therapy dog.

NOVEMBER 2015 | EVERYTHINGELKO.COM

Chuckar Jason Bennett adopted this gorgeous German Shorthaired Pointer on October 9th. He is an awesome kind loving dog and Jason says he is grateful to have him. His name is Chuckar.

Remington

Colt

The "Viking" Cocker Spaniel. Yolanda Coleman adopted Remington in 2014. The Coleman's were sad when, for health reasons, they had to say goodbye to their 12 year spaniel. A few months later, Remington showed up on the shelters website. Yolanda went down there that very day and the rest is history.

Lisa Skinn rescued him three years ago when he was four months old. Colt had been at the shelter for a while and was at risk of being euthanized. Lisa's husband did not want another dog and was initially quite irritated but he got over it and is happy this wonderful animal is alive and with them. I think those eyes say that Colt is pretty happy that you guys came through for him.

Boots - the one on top

Jake

With Guido, the Great Pyrenees, as a playmate, he had big "Boots" to fill when Kathy Warren adopted him. He quickly became a great fit with the family and a great friend to Guido.

Jake found his forever home with Laurie Cabaret in August of 2012 and has been handing out kisses ever since. The Cabaret's say Jake is the "Fastest Licker in the West", they even have a sign on their door that says "Caution, Dog Can't Hold is Licker"...now that is one happy, happy dog.

The Cast of Five Chantyl Wolf and her husband have adopted these five beauties from the shelter. Their family includes 3 boys and 2 girls. Each cast of five has their own unique personality and fills this rescue home with love. Cheeseburger aka "Cheesie" got his name because of his size. This big boy was their very first rescue. Chaos has a wild personality with lots of energy to burn. Chaos also loves to cuddle and purrs the loudest. Loom is like a magician, he is in one spot one second and then in the blink of an eye, he has disappeared. He always reappears and begs for attention when he wants some loving. Gizmo is sweet and innocent looking but she is already showing signs of being a great hunter. She loves to pounce and wrestle with Precious. Precious, "the Grey" is extremely sweet and loves to curl up in a lap. But if you put a bowl of food down, get out of her way or she will take you out!

Bikki & Baxter

Trooper

Bikki and Baxter were adopted in 2008 by Bruce and Tracie Cosens and they think both of them are just awesome. Bikki was never suppose to be a lap dog but that is what she is. Baxter is a goofball and only wants his belly scratched. I think Bikki and Baxter are both lucky dogs.

Trooper was found on the side of the road in Spring Creek by Von Watson. It was raining and he was being attacked by a dog. Von rescued him and posted a picture of him on EPRN. For Tina Diedrichsen, it was love at first site. Trooper was taken to the Elko Animal Shelter where Tina went to meet him. He was in bad shape, he was skin and bones and very weak. Tina brought her 3 golden retrievers to the shelter to meet him and they all got along great. He joined their family on August 30, 2014.

Elko Animal Shelter Coldwell Banker Algerio Q/Team Realty has been collecting donations for the local animal shelters. Coldwell Banker is accepting donations of Dog and Cat food, blankets, sheets, towels, collars, leashes, treats, toys, and monetary donations for the Spay and Neuter Clinic. If you would like to contribute feel free to drop by either one of the offices and leave your donations and they will gladly take them to the shelters. Both offices are open from 9 am to 5 pm Monday thru Friday. Spring Creek Office is located at 114 Tonka Ln. 775 738 9866, and the Elko Office at 700 Idaho St. 775 738 4078

64

NOVEMBER 2015 | EVERYTHINGELKO.COM

They decided to name him Trooper because of all he went through. He has made it through pneumonia, surgeries, and countless other issues. He is 13 now and is thriving. He is living the good life. He recently enjoyed his first beach vacation with dog dad and his three golden sisters. Tina says adopting a sick senior has been expensive but very rewarding. There isn't anything we won't do to help him. We love him so much and we hope he lives a lot longer. After all, he needs to have more beach vacations! Now this is a real Animal Rescue Success Story.

SUPPORT YOUR

HEALTH

CONTRIBUTED BY DR. TODD WENDELL OF RUBY MOUNTAIN CHIROPRAC TIC

Did you know you need bacteria to be healthy? While harmful bacteria do exist and can cause pain and sickness, there are large quantities of healthy bacteria inside your body. In fact, your body is filled with trillions of bacterial cells, outnumbering your human cells by 10 to 1. These more than 400 different types of natural bacteria exist to help maintain your health. For example, intestinal bacteria produce enzymes, which allow your body to metabolize vitamins and digest fats and carbohydrates. Healthy bacteria in the gut (gastrointestinal system) also aid in proper hormone regulation and work to keep harmful bacteria at bay.

PROBIOTIC-PACKED FOODS Want to add a nutritional punch to your diet? Eat more probiotic-packed foods to increase the healthy bacteria in your body. These foods might include authentic sauerkraut, sourdough bread, kefir, kombucha, miso soup, kimchi and yogurt. Remember that yogurt contains sugar so opt for plain. The probiotics in these foods are real bacteria that are healthy and ready to boost your body’s health.

THE CHIROPRACTIC CONNECTION How can chiropractic care help support your health? The chiropractic adjustments you receive not only help your spine stay healthy but also maintain the health of your nervous system. When your nervous system is healthy, your immune system is healthy, which defends your body against harmful bacteria. Since 80% of your immune system is in your gut, the overall health of your digestive system is very important.

The central nervous system is responsible for coordinating and controlling every system and organ in the body. Subluxations (or misalignments), pinched nerves and herniated discs in the spine may hinder the communication between your brain and your gut, so we work with you to restore that communication to normal.

Through healthy probiotic foods and regular chiropractic care you could have a stronger immune system, which may just translate to better health and a better life!

I am a licensed massage therapist located in downtown Elko.My family and I have lived in Nevada since 1979 working for the ranching community. I opened The Christmas Store in 2003 for local artists as an avenue to retail their arts and crafts. We offered for sale hand-made soaps, aroma therapy, essential oils, therapeutic bath salts, etc.

Any day is a good day for a massage. I have also owned and worked for a garden center. I was employed as a manager at The Home Depot, and a manager for the Western Folklife Centers’ Gift Shop, home of The National Cowboy Poetry Gathering. We have had a massage table in our home since the kids were little as I have always had an interest in health and well-being, including the studies of nutrition, vitamins and minerals, massage therapy, family chiropractic maintenance, the use of essential oils and aroma therapy with massage, and the study of flower remedies and chakra stones. After our kids grew up, I decided to go back to school and attended the US Career Institute in Fort Collins, CO. It just felt like the next step in my life.

While attending the US Career Institute, I learned a great deal about health, wellness, and massage and how they all benefit a healthy lifestyle. HERE ARE SOME OF THE BENEFITS OF MASSAGE:

Promotes relaxation, reduces stress and anxiety, improves circulation, lowers blood pressure, enhances immune system, relieves muscle aches and stiffness, improves flexibility, eliminates toxins, promotes deeper and easier breathing, improves digestion and elimination, helps TMJ disorders, relieves headaches, enhances faster injury/illness recovery and soooooo much more. SOME OF THE MODALITIES I OFFER IN MY PRACTICE INCLUDE: Swedish, Deep tissue, Hot and Cold therapy, Aroma therapy, Reflexology, and Reiki.

MASSAGE GIFT CERTIFICATES AVAILABLE FOR COUPLES MASSAGE, BIRTHDAY, CHRISTMAS, VALENTINE’S DAY.

“I am nominating my mother for this because she is the most selfless woman I know. She gives and gives in every way possible without ever thinking of what she could get in return. The past few years we have experienced some hardships as a family and my mother has stood up for every one of those occasions. She has kept us together, united, and living in love through it all. She has never sought apologies for wrong-doings, explanations for failures, or questions about new beginnings. She motivates, supports, and inspires every person in this family. From us all....Mama, thank you for your endless love and support. Thank you for your spiritual guidance. Thank you for being the glue that keeps this family together. Thank you for being the angel we all need to survive this life. WE LOVE YOU MORE!” Debbie is happily married to her husband Gene Lindsey, they’ve been married for 23 years. She has 5 children, 4 children in-laws and 15 grandchildren. Debbie is a local business owner. She owns three tax and bookkeeping offices in Elko with over 40+ employees (2 H&R Block Offices and Tax Liability

Consultants). She just received an award for being in the top 100 Franchisees for H&R Block and is up for the top three in the nation. When Heather and I spoke she expressed how giving her mother Debbie is and how she is constantly giving back to our community. I had no idea just how involved in our community Debbie was until I received Heathers email. “She participates in Group District meetings for her businesses to better H&R Block businesses everywhere. Debbie is part of the Downtown Business Association in Elko, a member of the Rotary Club, Charter member of Great Basin Elks Lodge #1472, and Chamber of Commerce Member. Her businesses conduct a food drive every year during tax season collecting over 6500 pounds of food and donates the food to FISH. Debbie volunteers her time at various community events including Wine Walks, Christmas Light Parade, Alley cleanup days, etc. She supports all four high schools in the sports departments, FFA groups, and other clubs needing financial help. Every year she hires at least one high school student. She is on her fourth high school student employee this year with the last three going on to college for financial

Every summer she makes a point to travel and see every grandchild and child she has. She takes them all somewhere special and gets all of her grandchildren their school supplies and clothes every year.
