Woodforde’s Reedlighter Brewers of beer for 35 years using the finest Norfolk malting barley, whole flower hops and water from its own wells, Woodforde's is one of a handful of brewers to have brewed two Champion Beers of Britain and was voted Brewery of the Year by the Good Pub Guide 2015. What is the inspiration behind Reedlighter? Our aim is to marry tradition and innovation. Reedlighters are traditional boats which carry away the reeds after the harvest on the Norfolk Broads, and being a ‘lighter’ beer (in colour) the name takes on a second meaning. This beer is Woodforde’s unique take on the popularity of the pale ale style.

MAR

What are the main ingredients? Brewed with a blend of five hop varieties for its bold hop character, including Summit, Centennial and English Goldings. This is balanced against a complex malt base of Maris Otter (the Rolls Royce

of malting barley, grown and malted in Norfolk), lager malt and malted wheat. What does it taste like? Deliciously drinkable and refreshing! Reedlighter is bursting with notes of lemon and grapefruit with a medium crisp, clean finish. Who will this beer appeal to? As with all our beers, it’s extremely balanced so it will appeal to traditional real ale fans who appreciate the skill behind a balanced pint as well as those who enjoy a hoppier brew!

TO ORDER

Wadworth St George & The Dragon For 2016, Wadworth have refreshed their beer pump clips (see page 54) to inject energy and excitement into their products, potentially widening their reach to a growing younger target audience whilst retaining existing drinkers, by offering a more engaging and contemporary brand presentation. What is the inspiration behind St George & The Dragon? The beer was originally brewed by Trevor Holmes, an ex head brewer at Wadworth and previously at Watney, Manns & Truman, to celebrate the English Patron Saint and the Six Nations Rugby. What are the main ingredients? A blend of Pale Ale, Amber & Crystal malts and Whitbread Golden Variety & Bramling Cross hops, which have been combined with exceptional brewing quality to deliver this excellent beer.

SEE 'ON THE DRAY' PAGE 54

What does it taste like? A full-bodied beer with a fiery amber hue packed with robust bitterness. It’s crisp and tangy on the palate, leading to a long, dry and slight biscuit finish, courtesy of the infrequently used Amber malt. This well-rounded, moreish beer has a great aroma of orange and blackcurrant. Who will this beer appeal to? St George and the Dragon is a traditional English ale and will appeal to a broad range of drinkers across the ale market and to all age groups.

leisure activities. Host events that are fun for everyone looking to get together at the pub. From egg hunts to Easter bonnet competitions, to live music and entertainment, a day-to-night schedule will encourage additional custom. Deals on a range of drinks will encourage customers to spend more time in your pub and visit more than once over the four-day break. Visit your local enterpriselive to stock up on exclusive show offers. Don’t forget soft drinks for children and non-drinkers. If you have a food offer, traditionally fish dishes are served on Good Friday, and roast dinners will be popular on Easter Sunday.

24% of people would go to the pub at Easter*

Meal deals, especially family dining offers, will be attractive over the expensive Easter season. Include offers like 'children eat free' or 'children eat for £1' when dining with adults. In anticipation of warmer temperatures, prepare your outside area with a tidy up of weeds and winter debris. Bring the outside in with fresh flowers on your tables for a seasonal feel. Daffodils are a really cheap way to brighten up your bar and restaurant.

St George's Day England’s national day falls on a Saturday this year, and it just happens to be FA Cup Semi-Final weekend, which should be a recipe for busy pubs across the country.

12% of people would go to the pub to celebrate St George’s Day*

St George’s Day is a great reason for friends and family to get together. Customers will be feeling especially patriotic, so themed events will be a huge draw, from quizzes to karaoke, to entertainment in the form of British band tribute acts or Morris dancers. Deck your pub in

St George themed bunting and flags to get behind the national mood.

Deals on British beers and ales will be really profitable. Ben Howe, from Charles Wells, says St George’s Day is a great sales driver for spring. “Over the last couple of years we had lots of occasions and excuses to go to the pub, like the Royal Wedding and Jubilee. This saw lots of good old fashioned British fun. 2016 will see a return of these activities as we have the Queen’s 90th Birthday, Olympics, Euros and a St. George’s weekend to get stuck into! So hopefully lots of reasons to get that bunting back out and see beer sales soar throughout the year!” Offer your customers a taste of tradition with special edition, English themed menus. Include classics like pies and stews, fish and chips and sausage and mash.

Britain’s Beer Alliance backs a campaign called ‘There’s a Beer for That’ – created to celebrate the diversity, quality and versatility of our national drink. There are more breweries in the UK now than any time since the 1930’s, with over 1,700 at the last count. We now have more beer styles and brands than any other time in history. Drinkers are increasingly choosing beer over wine in every country in the world, but why has this happened?

”It’s time for a beer renaissance", says Beer Sommelier, Annabel Smith, and here’s why… "Beer is being rediscovered as a drink of choice for a new generation of drinkers and at the moment, the beer industry is one of the most exciting, diverse, vibrant and innovative trades in the world.

18

First off, there is an increased demand for natural ingredients in the food and drink we consume, and provenance of food and drink is more important to customers than ever before. Then there’s the sociability aspect - beer drinkers talk to each other in the pub about beer (partly because there is such a huge diversity of colours, flavours and styles, one to suit every palate). Not all beer is ‘brown and bitter’!

Of course the quality of beer – especially draught – has improved dramatically over the past decade. There is a real trend for quality over quantity – drinkers not settling for anything less than perfection and are prepared to pay for it. Beer paired with food? This doesn’t have to mean a multi-course fine dining experience. What could be better than a plate of good cheese and cured meats with a glass of beer?" For more information, plus advice on food pairing, range and much more, visit beerforthat.com

Mike Hogg, from Westons Cider, agrees. “The cider category has seen a massive uplift in recent years, with two out of three adults classing themselves as cider drinkers**. Cider festivals will positively impact your profits, and can be held both indoors and outside, so are virtually weather-proof!” Follow these simple steps to make the most of the cider revival… Stock an interesting & varied range Provide a diverse and interesting range based on draught, packaged, cloudy, clear, apple and fruit ciders. Consider regional ans local styles too as these add different levels of interest. Impart your knowledge Make sure your team is knowledgeable, engaging and able to recommend with confidence. credentials. Customers love to absorb information and enjoy sharing their new discoveries with others. Be adventurous with serves Consider smaller sampling sizes like flights, schooners and 1/3rds, which create opportunities to trade up and responsibly extend a drinker's capacity to sample more styles. Add value For an upsell opportunity, create a complimentary cider menu – it works particularly well with cheese, pork dishes and believe it or not, curry.

52% of men and 48% of women have drunk cider in the last 2 weeks*

Festival fun Don’t forget the entertainment – encourage customers to stay in your pub a little longer whilst listening to live music, open mic or comedy. Board games are an easy way to increase dwell time, especially in smaller premises.

SEASONAL MENU PLANNING As we move into spring through to summer, refresh your menu by phasing out heartier winter dishes, as the brighter weather leads people to choose less heavy options. Many customers also start to make healthier choices in the spring, preparing for their “summer ready” body. Lighter meals can also help to bring in female clientele.

Fish, warm salads and dishes packed with vegetables will be popular choices. Diners are also becoming increasingly interested in the provenance of their food choices, so try and include dishes on your menu that include local produce.

Your love affair with a fruit drink may come to an end when you find out it has been a little unfaithful. Vacuuming, vaporising and reconstituting juice can be real passion killers. Frobishers fruit juices, fruit smoothies and juice drinks however, are made from perfectly ripe fruit that is simply squeezed, pressed and bottled. No concentrates or anything artificial, just the honest character and goodness of the original fruit.

Making the most of TripAdvisor Review websites are often met with mixed emotions in our industry and can be fraught with pitfalls if ignored or handled incorrectly. But, used properly, review sites can be a powerful part of your social media marketing. Geo Bassani Lima, Publican at The Hampton, has been awarded a TripAdvisor Certificate of Excellence for the second year running. Having turned the pub from a wet-led offering to a destination gastropub in less than 18 months, Geo credits TripAdvisor as playing a huge part in the pub's success.

On the back of online reviews, we have customers travelling from across Surrey and Greater London to dine with us. We’ve seen a 1000% increase in food sales in 12 months alone. It’s a fantastic, unbiased tool to spread the word about my pub. Geo Bassani Lima, Publican at The Hampton, Greater London

Mark Daniels from Inapub advises how to get the best out of TripAdvisor to attract new custom. When people get a response on TripAdvisor, it is estimated that they are twice as likely to recommend you afterwards. Very few people leaving a review expect a response. Those that do receive them have a much more positive impression of the venue than before. Try to reply to every review, even if it’s just to say thank you for taking the time to review the business. It makes the reviewer feel engaged and readers recognise you are on top of your business. 92% of customers say they trust online word of mouth more than anything directly from the business.* TripAdvisor isn’t the only review service online so make sure you do an online search of your business to see what people are saying about you on other sites, like Yelp! and Google.

which areas could be improved. Take that feedback and act on it! The 5% that review you could be telling you what the 95% that don’t care enough to review you think. Have a look at the last dozen reviews and look for common aspects that will point you in the direction of where attention might be needed. On average, each review left will be read by 40 potential customers. Now is your time to shine; make your responses personal, don’t just use a stock line for each and every one. Show your potential customers and existing ones that you’re taking the opportunity to improve your business. Don’t respond with emotion. If you have received a negative review that you take personally, take time before you decide to reply – sleep on it! Go back to the review with a more pragmatic view and take your time to respond.

Most customers that take the time to write a review actually care about your business. They’ve taken their own time to tell you what aspects of your business you are doing well and

Inspired? Check out what our 2015 regional winners did to support their local communities…

We have very good community relationships with local children's sporting clubs and organisations. We have sponsored their kits, given one-off payments for coaches to come in for sessions and also contributed to the development of their on-site training facilities. Allen Jones Publican at The Prince of Wales, Belvedere

The Woolpack, Buckingham East Midlands regional winner Publican Alan Edmeads supports various local charities and groups, who use his pub as a base to meet. “Most of the groups meet in our function room 'The Cote', which we renovated from being a run-down, unused barn several years ago, to enable more groups to meet there. The Royal British Legion Buckingham branch regularly meet at the pub and use the space as their poppy distribution centre, and The North Bucks Veterans and Families Support Group meet here once a month to offer support and a meeting place for veterans and their families.”

Hope & Anchor Bristol and South West regional winner Publicans John Murphy & Andrew Mills provide community support that caters for all ages. In addition, they have raised in excess of £30k for local charities to date. “We have very good community relationships with local children's sporting clubs and organisations. We have sponsored their kits, given one-off payments for coaches to come in for sessions and also contributed to the development of their on-site training facilities.”

Prince of Wales, Belvedere Inner London regional winner Publicans Helen & Allen Jones provide support across the entire community, including local seniors. “We are a very friendly, local pub, a place where our locals feel comfortable, safe and not lonely. We pick up some of our senior customers so they can come in for lunch, provide a shopping service for members of the community who have become housebound and keep phone numbers of some regulars, in case we don't see them.”

Over the coming months, deals&ideas magazine will provide you with the ideas and inspiration you need to enter the awards, or visit enterpriseinns.com/ech for more details. 31

Starring role The Woolpack, Esholt The Woolpack, Esholt, has been celebrating the 40th anniversary of its first appearance on Emmerdale with a series of events which will help raise money for Wheatfields Hospice. The pub sold beer at “1976” prices for one day in January, with two nine gallon barrels having been kindly donated by Timothy Taylors and Moorhouse’s Brewery which were sold at 35p per pint until they ran out. This was followed by seventies fancy dress and live music in the evening. To mark the official anniversary date, on Tuesday 26th January, the Woolpack created a Man versus Food Challenge where contestants were served a giant homemade Yorkshire pudding, filled with 6oz of braised steak, chicken breast, three Cumberland sausages, roast topside of beef, roast crown of turkey, home baked honey ham, stuffing, roast potatoes, creamed potatoes, four vegetables and lashings of gravy, sold at cost with a suggested £5 donation to the charity. A total of £430 has been raised for the hospice so far.

THIS MARCH & APRIL'S ON THE DRAY FEATURED BEERS OFFER DISTINCT CHARACTERISTICS AND ARE PERFECT FOR PAIRING WITH FOOD: EXMOOR ANTLER

BLACK SHEEP HOLY GRAIL

This beer’s soft sweetness works well with a sausage sandwich or try it with a hearty plate of toad in the hole with rich onion gravy

Pair with a lemon infused roast chicken or a southern fried chicken wrap – both make a marvellous match for beer

LANCASTER AMERICAN HOP

TIMOTHY TAYLOR'S LE CHAMPION

Try crispy chilli prawns or squid with this one, with a squeeze of lemon. American hops cut through a bit of chilli heat.

A beer which is outstanding with white fish and shell fish! Snack on a crab meat sandwich on white bread, or posh it up with some sea bass fillets

WADWORTH ST GEORGE & DRAGON This beer’s flavours pack a punch so give it something to square up to – great with welsh rarebit (or just cheese on toast), or a robust steak pie

MARSTONS QUEEN BEE

Its honey sweetness is perfect with Indian snacks – the heat of the spices in onion bhajis, vegetable samosas and pakoras are quenched by this light golden beer.
