If you offer rooms in your pub, you will be interested in the accommodation website Stay In a Pub, which recently held a useful forum on best practice and encouraged pubs to promote their offer more extensively. Among the participants were the British Beer & Pub Association, Visit England, and Enterprise. Simple ways in which pubs with rooms can make more of their offer included: • High Standards across the board are essential to your operation. • Giving a friendly welcome and making the check-in process as easy as possible. • Use of booking agents helps to keep your occupancy rate high. • Websites such as Inapub and Stay In a Pub can help to reach more potential customers. • Your website should do your rooms justice with strong photographs and descriptions. • Breakfast is extremely important to guests; it’s the last thing they’ll remember from their visit. Queen's Speech 2015 The industry welcomed legislation outlined in the Queen’s speech on 27th May. As part of the announced Enterprise Bill, the government plans to reduce regulation on small businesses, with the aim of cutting red tape by at least £10bn. British Beer and Pub Association (BBPA) chief executive Brigid Simmonds welcomed the ‘focus on reducing the burden on businesses’. “Plans to extend the ‘Primary Authority’ scheme is good news, as pubs can benefit from the cost savings of having to deal with only one local authority when it comes to enforcement in areas such as health and safety, and fire regulation,” she said. “We will also be looking at opportunities for more deregulation, and contributing to the review of Business Rates, where we have long been campaigning for reform.”

What’s in season July Summer pudding has become a favourite pub dessert in recent years and, with all the delicious berries now readily available, it’s a great dish to upsell for Sunday lunch, served with a dollop of fresh cream. Fresh fruit trifle, and meringues with berries are also worth adding to your summer menu. Include fresh fish on your barbecue menu or add a ‘catch of the day’ special, and advertise on A boards at the front of your pub. And why not offer something a bit different to a lasagne dish. Menu planning for the season ahead Taking time to plan your autumn/winter menu will help attract new and existing customers and increase your gross profit. With the summer season in full swing, it’s difficult to imagine the chilly winter nights ahead, but now is the perfect time to plan your menu for the colder months. A quality food offering will help drive traffic and help increase food sales and profitability, so taking time now to develop your menu will pay dividends in the long run. Your customers will be looking for comforting pub food as the temperature dial drops, with a choice of classic, new and seasonal dishes on the menu. If you’re in a seaside town, for instance, your core customers might be elderly, and prefer traditional dishes like roast dinners, sausage and mash, or meat pies. In more urban or city-centre locations, or even destination country pubs, diners may be more open to trying new dishes, and adding locally produced items, like cheeses, meats or vegetables, will go down well, as customers become increasingly interested in the provenance of their food. Becoming ‘famous’ for a particular style of food is another way to set your food offering apart from the rest. This can be as simple as becoming known for mouth-watering chips, which are a popular choice for diners predominately at lunch times and as a ‘bar snack'. The rise of the mighty chip has been supported through the growth in popularity of traditional pub grub. Spend in this area continues to increase, as customers seek premiumisation, which

can be easily achieved by a few small tweaks to traditional recipes – for example beer-battered fish and gourmet chunky chips provide customers with a sense of being served a superior dish. Take a look at your competitor's menus, in terms of price, quality and style. Think of ways to you can make your offer more attractive, without sacrificing the quality of your offering, perhaps with seasonal dishes of the day. Seasonal produce is increasingly what customers look for when eating out, and any local suppliers you can introduce to your menu will drive your appeal. Take advantage of the recent revival of classic hot desserts, like crumbles, sticky toffee pudding and spotted dick, which have become fashionable again in the past few years. Many of these puddings can be cooked in batches, making them both cost- and time-effective. Focus on increasing profitability when creating your new menu. When calculating cost per dish and your selling price, include hidden costs such as staff wages, insurances and advertising, together with the portion cost of each food item, condiments, and food wastage. Domestic league football is on its shortest summer break in years – three weeks less than in 2014 – but

Due to the timing of the event, which was screened in the early hours of the morning, Emma Marnell, Publican at The Wellington Arms, applied for a TENS licence from the local council, allowing the pub to serve alcohol until 5am. Emma says: “The boxing was shown via Sky Box Office, and although there was a small cost over and above our usual subscription package, the money raised in ticket sales covered this and additional staffing costs, and we even had enough left to donate £100 equally between our two charities, Help For Heroes and Ilfracombe Sea Cadets – which the customers were delighted about!”

Putting fire safety first Fire in your pub can not only be a risk to life but also seriously impact upon your business. Fire safety is often a matter of common sense; however, it’s of utmost importance that rigorous safety procedures are put into place and properly executed. Joe Taylor, National Fire Safety Advisor at Enterprise advises how best to protect your customers, staff and premises:

Employ a competent person to determine what hazards and risks are in your premises and how to manage or eliminate them. The actions from your fire risk assessment must be carried out. Check your fire escape routes regularly

Promotional planning How to plan successful drinks promotions to boost profits without affecting current sales. There’s a fine art to running a successful drinks promotion. It’s not simply a matter of running a product at a reduced rate and hoping to cash in on the deal. You need time to plan and arrange your promotion for it to be truly effective. Start by considering the current sales of the product you plan to promote. For example, new lines or products you are selling. You also need to weigh up whether your offer is realistic. There’s little point in putting ale on offer if it’s going to damage your margins. You also need to bear in mind that there may be a reduction in sales revenue across the rest of your offer with the introduction of your promotion, thereby negating any profits you make. For example, if you’re planning a real ale offer, make sure staff are still pushing sales of lager, spirits and wines to all your non real ale drinkers. Food promotions are a great way to increase mid-week spend, especially Monday to Wednesday, when people are usually less likely to eat out. BOGOF offers and fixed price menus are both a great way to drive footfall. Work out the breakeven and point of profitability to ensure selling the beer at a reduced rate won’t damage your margins.

To work out profitability, start by looking at your breakeven point – the point at which your gross profit covers all your fixed costs – licensing costs, insurance, staffing, heating etc. A simple formula to do this is: Breakeven sales = fixed expenses divided by gross profit margin. In other words, how much do you need to sell to pay your expenses? Find out more by using the Enterprise GP calculator on the Publican Cannel or online ordering system. Once you’re decided which line to promote, make sure word gets out about it via traditional channels such as posters, leaflets and through social media. Use all the tools available to you on the Enterprise channel, including free point of sales kits to help drive promotions with themed evenings. If you’re promotion is successful, don’t necessarily think of it as a one-off and consider whether is it sustainable as a long-term sales driver. Remember people won’t visit your pub just because you’re offering cheap beer. You need to meet their needs with a complete offer to attract new customers and make them come back. The overall presentation of your pub, great service and a pleasant, welcoming environment should all be considering as part of your marketing plan.

Responsible Retailing Legislation advises that Publicans should avoid promotions that may encourage drunken behaviour, which could in turn lead to alcohol-related crime and disorder.

Be mindful that your promotions do not: • Encourage alcohol misuse or anti-social behaviour • Encourage underage drinking or target those under the age of 18 • Encourage the consumption of large quantities of alcohol in a small space of time

In addition: • Consider those who do not wish to consume alcohol by offering a soft-drink alternative • Discourage drink driving by providing customers with local taxi numbers and a free phone where possible • Serve food to help slow alcohol absorption Ensure your promotions comply with The Licensing Act 2003 (Mandatory Licensing Conditions) (Amendments) Order 2014. In 2013, regional winner The Swan, in Thornbury, Bristol, was gifted £5,000 to contribute to a good-will cause of their choice. Having fundraised tirelessly for many years, the pub's 'charity of the month' scheme supports a different, local charity each month by hosting a weekly quiz as well as a twice-yearly craft fair. Having raised an additional sum of £2,500, Sandra and her team chose the New Siblands School in Thornbury, which supports children with special needs and disabilities, by purchasing an ‘Eye Gazer’ machine. The high-tech system helps profoundly disabled children communicate with the outside world and make independent choices via a computer equipped with a camera track eye movement. By choosing what they would prefer to eat, composing full sentences or taking part in interactive activities, children are empowered by the programme and enabled in the long term to gain a level of independence their families may not have thought possible before. Publicans & pubs in the spotlight

A star turn! The Flemish Weaver, Corsham Gentleman’s Relish! Earl of Spencer and Harwood Arms, South West London Two Enterprise pubs have triumphed in the Gentleman’s Journal list of Top 10 Sunday Lunches. Congratulations to The Earl of Spencer and the Harwood Arms, both in South West London. The Earl Spencer has also won a Michelin ‘Bib Gourmand’ this year. Publican Michael Mann runs the pub with his partner, Jill O’Sullivan. He says of his success, “It’s a team effort: kitchen and front of house. We make everything from scratch here. We buy our meat direct and our vegetables from a family-run company. We even home smoke our prawns in our own smoker.” The pub in on-trend with its drinks offer, as well. “We stock Artisan spirits from around the country as well as Somerset Cider Brandy, Sipsmith Gin & Vodka, Chase Gin, Portobello Road Gin. And our real ales, craft beers and lagers have also brought about our growth.”

Another pub was renamed recently, but for different reasons. The Flemish Weaver recently featured as the Red Lion in the BBC1 hit series, Poldark. Publican Daniel Grace has just taken over and hopes to tap into the television tourist trade on the back of it, by posting the phrase ‘As seen on Poldark’ on his website. The pub has a good relationship with the local town hall, which organises walking and lunch tours in the town, and Daniel was delighted that the pub had a booking for fifty people for lunch within weeks of him moving in.

May the fourth be with you The Royal Oak & Castle, Pevensey “May the fourth be with you” set the tone at the Star Wars day at the Royal Oak & Castle, organised by Publican Debby Fitton. A life size C3P0 and R2D2 came along with Obi Wan Kenobi and Darth Vader to raise over £500 for the charity Myeloma UK. Visitors were invited to have their photo taken with the characters in return for a donation and to eat Star Wars-inspired food such as Han Burgers and Hoth Dogs. “It was my birthday on 4th May and it was also a bank holiday Monday. I was talking to a customer about what to do and he said he collected these Star Wars costumes and came up with the idea!” says Debby.

Countess Mountbatten The Knatchbull Arms, Stoke St Michael Publican Tony Warren of The Knatchbull Arms, Stoke St Michael was delighted to welcome a very special visitor recently, when the The Countess Mountbatten of Burma, British peer and the third cousin of Queen Elizabeth II, dined at the pub along with her family. The Countess is daughter of Louis Mountbatten, 1st Earl Mountbatten of Burma. Tony tells us "It was an honour to welcome the Countess and her family - we hope to see them dining here again very soon!”

Royal British Legion The Swan, Thornbury A special trench menu and a special display were enjoyed by customers at the regular annual Royal British Legion event at The Swan in Thornbury. The RBL Thornbury meet at the pub on a monthly basis and this year raised £195 for the RBL. The special menu included trenchman’s stew (corned beef stew), corned beef fritters with peas and chips, toad in the hole and vegetable turnovers. Matthew Davies, Assistant Manager, and son of Publican Sandra Davies said, “Our morning customers are older and they really enjoy it each year but we have a few younger customers that come along too!”

Bumper auction The Red Cow, Cheshunt The Red Cow dart’s team and customers got together for a charity event in May to raise money for Great Ormond Street. As well as a 12-hour darts match, Publican Majella Mooney-Kilcommons organised a bouncy castle and an auction. Many local business donated prizes, but one local’s donations in particular made a huge difference. Harry Kane, the Spurs star striker, gave away some of his football kit for the event. “Harry donated a few things including a football shirt and picture and they went for a really high bid", says Majella. The pub raised an amazing £4,000 on the day for Great Ormond Street Hospital.

New kids on the block The Maypole Inn, Thurloxton The Maypole Inn, which already boasts live music, a skittle alley, and an outdoor pizza oven, has opened a new children’s play area to add to its long list of attractions. The new play area looks like a mini-castle and covers 12 square metres, featuring a climbing wall and cargo nets. It is one of the first of its type in Somerset. Publican James Lowe, who runs the pub with his wife, Jo, said, “We’re a family-oriented pub, especially at weekends, and have a big garden next to a busy main road, so we’re hoping to attract even more families. Ours will be the only pub in and around Taunton to have anything like this, and people here are already talking about it.”

VE Day celebrations Golden Lion, Monmouthshire The Golden Lion, in Major, Monmouthshire, got into the VE Day 70th anniversary spirit, when it was transformed for the duration of the three-day celebration by hanging bunting across the whole of its frontage. Louise, who runs the village pub with partner Garth Davis, said, “Living and working in a small community, and being passionate about things like this, we wanted to make people here – especially young people – aware of the sacrifices that were made on their behalf during World War Two. As well as the bunting outside, we decorated inside with more bunting, flags, balloons, and commemorative mugs. We’re right opposite the village cenotaph, and The Royal British Legion led the two-minute silence. It was about bringing the community together, and there was a really good turnout.”
