Riwaz by Atul Kochhar to open in Beaconsfield for fourth Bucks restaurant

T

wice Michelin-starred chef Atul Kochhar has announced the opening of his new restaurant in the historic market town of Beaconsfield in Buckinghamshire. Riwaz – meaning ‘tradition’ – opens its doors on 16th February 2022. Since the restaurant’s conception in April 2021, it’s been Atul Kochhar’s dream to champion the traditional cuisines of India with a menu inspired by history and cultural stories and practices. Atul Kochhar commented: “Now that our Industry has re-opened, it’s a prime time to explore new opportunities, and it’s in the Chiltern Hills’ pretty town of Beaconsfield that we’re opening this new gourmet destination. Our intention is to make Riwaz the place to go for an exhilarating Indian meal that is adventurous and yet remains true to tradition. At Riwaz, we will follow tradition but also remember that traditions get upgraded with time. The team can’t wait for the doors to fly open in Buckinghamshire.”

Kochhar’s inspiration for Riwaz comes from his experiences growing up in different parts of India - Bihar, Jharkhand, Uttar Pradesh, Punjab, Tamil Nadu, West Bengali and Orissa among many other regions.

He continues: “I moved to the UK with my well grafted traditions of various parts of India. After almost three decades here, my traditions have embraced ingredients, habits, practices and of course, traditions of the land as well. So, my cooking will be a nod to British Indian traditions – and I am proud of it. “Riwaz celebrates the rustic beauty and charm that I remember from

a young age and that are typical of many Indian regions. There are dishes I am especially excited to prepare for the first time – like Hare Masale Ki Machhi (a Parsi fish dish of john dory with spinach crisps and Neelgiri korma); Rogan Boti (from northern India, a plate of Lake District lamb rump with classic Rogan gravy); and Hiran Ka Keema Salli (using local ingredients, an iconic meal of New Forest Muntjac keema masala with crisp potatoes).” With a menu featuring dishes created and cooked by Kochhar’s grandmother, Riwaz will initially open from Wednesday to Sunday on the former Zizzi site in Beaconsfield. Lunch will showcase a set lunch menu and the Jugalbandi for two to share (£35pp), which includes a spiced potato appetiser of Dilli Ki Aloo Kachloo Chaat and Malai Chandi Tikka grilled supreme of chicken. The evening A La Carte menu (average £60 per head) offers time-

honoured starters (such as Chowk Ki Bhalla Papri Chaat - yoghurt with crisp poori and lentil dumplings with date, served with tamarind, yoghurt and mint chutneys) and characteristic main courses (such as Kali Mirch Aur Adraki Jungli Murg - guinea fowl curry with ginger and black pepper), along with classic vegetables, rice, breads and accompaniments. In addition to the Jugalbandi, a 7-course Tasting Menu (£65 pp) will be available in the evening (Sunday to Thursday). Highlights include Jalpari of Tandoor seared Scottish scallops with lentil salad and spiced broccoli puree, and Malai Chandi Tikka grilled chicken in a cream marinade with silver leaf and bull’s blood leaf salad. The Riwaz bar will offer a great selection of wines, cocktails and customary Indian drinks and there is additional seating outdoors for al fresco dining. Riwaz @home takeaway experience will commence after opening.

eren, a collection of high-quality hospitality venues by the sea in South West Wales, has successfully paid off a £600,000 loan it secured at the beginning of the Coronavirus pandemic. In a statement to the press, Seren Collection announced it had paid off the loan, which was secured through the Coronavirus Business Interruption Loan Scheme (CBILS) with Barclays at the beginning of the Covid crisis. The business secured over £600,000 from CBILS in the spring of 2020, and had used the funding to keep the business running, as well as being put towards protecting staff jobs and paying creditors and suppliers. The collection said that repayment of the loan comes with sincere gratitude to the government, and to the financial team at Barclays for their reassuring support throughout an undoubtedly challenging time. The company says the loan and other government support were ‘instrumental’ in allowing Seren to

successfully navigate its way through the crisis and reopen all its venues successfully. Neil Kedward, Managing Director, commented: “Whilst it’s horrible that some hospitality businesses were unable to survive, and many are still impacted, the loan scheme was crucial to our survival during incredibly uncertain times. “All the team at Seren very much respect how government support allowed us to emerge largely unscathed from the crisis, for which we are extremely grateful. Repaying our CBILS loan feels like an important and necessary step to put this crisis behind us. We are now ready to continue our journey.” The hospitality group currently operates four venues around the south west of Wales, most of which are restaurants, however the group’s portfolio does include the Grove of Narbeth hotel in Pembrokeshire. Otherwise, Seren Collection operates the Coast restaurant in Saundersfoot, the Beach House restaurant in Oxwich and the Kiosk Café found at Copett Hall Beach.

Gong lights the way for stylish refurbishment of renowned French restaurant, L’Oasis Nestled in the heart of the small fishing village of La Napoule, L’Oasis is an historic address for French Riviera gastronomy. In 2020 the current owners decided it was time for a reinvention of this legendary establishment, and the stunning new interiors feature beautiful timeless designs from Gong, helping to set the perfect ambience for diners.

he past 18 months have presented a number of challenges for the hospitality industry however, Michelin-starred restaurant L’Oasis took the opportunity as a chance to reinvent and refresh their celebrated restaurant, creating a new, immersive experience for diners.

Utilising Battery Power to Maintain Cleanliness

ince the pandemic began, cleanliness has consistently been at the forefront for those working in the hospitality industry and for guests, who increasingly want to see cleaning in action. With trip hazards and risks involved, could battery power be the answer? Covid-19 continues to be top of mind for those in the hospitality sector as customer safety continues to dominate. Customer’s expectations of cleanliness have been heightened throughout the pandemic and it is important to cater for these growing demands to keep guests coming back time and again.

As the tempo picks up, the lighting transforms. 4SPACE designers seamlessly integrated the architectural and entertainment lighting with five distinctive ambient moods based on the time of day and desired experience. Each bar has its own distinctive vibe and personality and transforms daily from a chic restaurant where you can dine in style as the evening draws to a close. As nighttime falls over the city, the restaurant becomes an elegant party venue and after club-bar. Explore the feminine Champagne bar with its pretty pink décor, pink terrazzo bar, bubbly textures and organic patterns are featured on the archways and mouldings and printed on the banquette seating. Four classically styled chandelier lighting ensures a romantic vibe. The Rum Station is an eccentric tiki-style bar with impressive totem poles, bamboo accents and vibrant art that adorns the walls. Retro Gin Point and Vodka Lane’s entertainment is centred around an oversized disco ball that’s centred in the arched ceiling. Black and silky steel colours are throughout the bar with black and white terrazzo highlighted features. Bold UV graffiti has been painted on the mesh screens. To continue the slightly masculine feel is the whiskey bar has rich art deco styling, onyx accents and moody lighting. Enter this standalone bar through an imposing arched entry. The Japanese sake bar is cleverly designed around the ancient Japanese Kumiki joinery method which is accentuated with

brick fascias that are stabbed for texture and filled with plaster. The subtle lighting represents a peaceful zen garden and reflecs circular patterns on the floor. Striking artwork and graffiti lines the walls. The Wine Court is designed as a well-stocked wine cellar with four prominent arches and an oversized mirror that reflects the arches into nine. Terracotta, lines the walls and the floors whilst the statement arched ceiling is a mixture of bricks and mirrors. Tequila Road and Mezcal Street is designed to capture the spirit of South America with ‘day of the dead’ sugar skulls centred in the archway, brightly coloured terrazzo for the counter and graffiti artwork on the walls. The rather fun lighting is a nod to Mexican sombreros. The VIP Lounge is the final destination of the night; it’s eccentric, opulent and has an enormous arch with distinctive copper mesh walls, lavish black marble floors and lounge seating. The DJ booth has state-ofthe-art lighting and circular kinetic mirrors for party appeal. Even the toilets are Instagram-worthy with circular installations, stretched mannequin legs and fun house-style mirrors.

TSPL acquires Polurrian on the Lizard

Travel Sector Property Limited (TSPL) has acquired Hotel Polurrian Limited, owner of the freehold interest in Polurrian on the Lizard at Mullion in Cornwall.

Polurrian on The Lizard first opened in 1912, sitting on 12 acres of ground and including part of the Pulurrian Cove beach. It features 41 bedrooms and underwent a refurbishment in 2019. Amenities comprise a lounge, bar, restaurant, games room, spa, gym and pool, along with six selfcatering villas. All employees at the Polurrian, including the general manager Grant Callaghan, will be retained. TSPL have also entered into a management agreement with Luxury Hotel Management Limited.

Andrew Long, principal director of TSPL, said: “We are delighted to have acquired the Polurrian, which has many happy memories for my family and I since first discovering this wonderful location some 32 years ago. We are proud to own this iconic hotel and to further endorse our Cornwall connections, with regular visits for business and pleasure each year.” Long has plans for further investment in the Polurrian to enhance the hotel’s existing facilities. Alongside his new role as owner, Long will continue to serve as CEO of Extra Motorway Services Areas Group, a company he co-founded and which is headquartered in Beaconsfield.
