Sheikh Manqoush

Biting into traditional perfection

Traditional Hijjazi dish often cooked in winter especially during rainy days.

If you’ve never had manaeesh or manousha it is quite possibly one of the best traditional Arab snacks around. Sheikh Manqoush is probably one of the better places in town to find some.

2 large onions

What’s manaeesh? It is lightly tossed Arabic bread smeared in cheese. Then baked in an oven quickly on a wooden tray making the cheesy treat come out piping hot which is then sliced into four pieces. The bread is so thick and the cheese so creamy that it tastes a bit like biting into a cloud with how fresh and fluffy the texture is right out of the oven. Unfortunately the menu for the traditional food is all in Arabic and none of the staff speak English so bringing along an Arabic speaking friend is probably a good idea. However there is an English menu with burger and sandwhiches but the manaeesh is by far the main reason you should stop by Sheikh Manqoush. Location: Imam Malik rd. off Sari st. Ingredients 1 Maggie cube

2 cloves of minced garlic

1 cup long grain white rice 1 cup yellow lentils

1 tablespoon turmeric ½ teaspoon slat

2 cups of hot water

Preparation Method: 1. Pour the oil into a deep pot and heat to a medium temperature, add the chopped onions and garlic. Cook until the mixture turn brown. 2. Wash the rice and lentils aside. Then, add the rice and the lentils to the pot. Pour the hot water to the pot. Finally, add the turmeric, salt and the Maggie’s cube. Steer gently for 20 second and cover the pot. Let the mixture get cooked well. 3. Pour the rice to a deep plate, garnish the plate with some fried onions.
