COVER STORY Vaksana This farm stay started during the pandemic and has been a favourite among social media influencers! Vaksana, which means fertile and green, is located in Rettanai village, that’s roughly 2.5 hours from Chennai. Spread over 13 acres, the founders adopted the permaculture method of farming, and today have an expansive range of fruit trees, over 20 varieties of mango trees and seven varieties of banana trees. They have three farm houses, and each farmhouse is an individual villa with two mezzanine floors and can sleep between 6 to 12 people comfortably. Aoling festival: This six day festival is celebrated by the konyak tribes in April at Nagaland and it commences during the start of the spring festival. Ooty summer festival: People in the Nilgiris spend their summer in the Rose botanical garden watching the mesmerizingly arranged flowers of various breeds in different forms. The first thing which stands out at InterContinental Hotels and Resorts, Mahabalipuram is the impressive stonework and romantic atmosphere. Lit with soft ambient lighting and adorned with plush decor, InterContinental projects quiet elegance and relaxed luxury. The resort offers 106 luxurious rooms and suites, a lavish spa and three award-winning restaurants which cater to the guest’s every whim. We visited the famous KoKoMMo Tiki Shack which exudes Goan and Hawaiian vibes and offers an eclectic menu and phenomenal drinks. The restaurant sits right at the beachfront close enough to feel the salty spray and roaring waves. The chill January winds beckoned us and we were seated in their casual furniture.

KoKoMMo is renowned for its seafood dishes and the wait staff suggested a few appetisers like the Kovalam Fish Steak, Kodiyal Roast, Grilled Rock Lobster Tails and Harissa Chicken Skewers. We skipped the lobster and ordered the rest. We tried the Kodiyal roast- first. It was a spicy prawns dish slow-roasted with chilli, tamarind, and lots of ghee. The prawns were succulent and well-cooked. The subtle spices didn’t overpower the prawns and instead enhanced its inherent sweetness. Next was the Kovalam Fish Steak- spicy and crisp Vanjaram steaks, a definite crowd favourite. The fish was coated with freshly hand-pounded masala and aromatics. It was served with a cooling mint yoghurt chutney. The sizzling flavours were tempting and we quickly devoured the three pieces. The Harissa Chicken Skewers were a welcome distraction from the seafood. The expertly spiced chicken was served on bamboo skewers with a green chutney. For the main course, we went with Aunt Mary Sungta Kodi, a Goan prawn curry dish made with Kokum, Coconut Milk, fresh spices and surprisingly Lady’s Finger. The delicious curry was mildly spiced and was kid-friendly. The rich curry perfectly complemented the Malabar Parotta and Basmati Rice we had ordered separately. We wrapped up the meal with a cold and creamy Rasmalai, which was topped oddly with a single blueberry. We unfortunately could not try the popular
