From the editor It was a dark and stormy night. Not really, but I’ve always wanted to start a story with that lead-in. Speaking of storytellers, though, how about the incredible movies featured at Twin Cities Film Fest for 9 days in October? The festival staff did a great job bringing unique major and independent films to the ShowPlace ICON Theatre – including the local premiere of Bradley Cooper and Jennifer Lawrence’s new movie, Silver Linings Playbook (which opens nationwide Nov. 21). In case you missed it at the Fest, grab a drink at Lobby Lounge and enjoy this or any blockbuster opening at ShowPlace ICON during the holidays.

As autumn turns to winter, and the snow and temperatures begin to fall, I welcome you to come warm up with some retail therapy at The Shops at West End.

The Shops at West End is the place to see and be seen. The rebirth of an old favorite, Figlio, provides the perfect place to meet friends, old and new. Toby Keith’s I Love This Bar & Grill is bringing more and more national musicians to its stage. And Raku Modern Japanese Cuisine is set to open its sushi bar in November. Gluten for Punishment

People choose gluten-free diets for various reasons, but for those with Celiac Disease, it’s a necessary way of life. For people with a gluten allergy, dining out can be very frustrating. In fact, people with celiac disease sometimes avoid eating in restaurants just to avoid the hassle. See page 10 for a primer on celiac disease. After being recently diagnosed with celiac disease, I quickly learned just how difficult going out to eat really was. I became frustrated and crabby, and tested the patience of the people who were dining with me. With time, dining out became much easier. I learned to frequent restaurants where the menus and staff were helpful and knowledgeable. After reading materials my doctor gave me and conducting my own research, I am now able to recognize menu items that could potentially irritate my system. I quickly learned what I loved and what I’d never order again when going out to eat. Now, going out to eat is fun again!

Below are some helpful tips when dining out, whether you have lots of experience or are newly diagnosed with Celiac Disease. Eat before you go out. The hungrier you are, the more likely you are to make the wrong decision. If you don’t have time to snack on something beforehand, bring some fruit or gluten-free crackers to munch on while everyone else is eating from the breadbasket. I know it may feel weird, but it will make your dining out experience more enjoyable for everyone!

Know the gluten-free diet. This means not only knowing which ingredients to avoid, but also where they’re likely to be hidden, so you can avoid cross-contamination. Sauces are especially tricky, so know your stuff!

Research the restaurant ahead of time. This will help you determine what you can order or what questions you may have about a particular item. Some restaurants will have their gluten-free items listed on their menu, and others will require you to do more research. If the menu items aren’t

listed gluten-free, I always email the restaurant ahead of time, just to make sure I can find something safe to eat.

Tell your server about your allergy. Inform your server of your allergy and have them make the chef aware. Ask the server if he/she has any suggestions. You’ll be surprised at how much they know and how seriously they’ll take your allergy.

Have questions prepared. Always ask your server to tell the chef that you have a gluten allergy, and don’t be afraid to ask questions. Here are some things you can ask: • Are there croutons on the salad? Can you please leave them off? • What’s in the salad dressing? Is it made from scratch? • Do you make the soup from scratch? What ingredients were used? • Has the food been marinated in any sauce? • What ingredients are in this sauce? • Has the food been dusted with flour before being sautéed or fried? • Do you use the same oil for French fries as you do other breaded foods? • Are your mashed potatoes from a mix, or from real potatoes? • What is the crust made of in this dessert?

As always, check with your physician if you think you might have a gluten allergy. He or she can make recommendations based on your exact diagnosis. You didn’t choose to get a gluten allergy or celiac disease, but if you choose carefully off the menu, you can still enjoy life. You may be surprised at how good living gluten-free makes you feel and discover new foods you never thought about before.

Celiac Disease? According to CeliacCentral.org, the National Foundation for Celiac Awareness, celiac disease is a genetic disorder or autoimmune disorder where the tissues of the body are attacked by the immune system. Consuming gluten interferes with the absorption of nutrients from food and damages the villi, a part of the small intestine. Problems such as malnourishment, cancer, osteoporosis, Type 1 diabetes and other autoimmune diseases can occur when nutrients do not get absorbed into the bloodstream. Celiac disease can be brought on by stressful, physical and/or emotional events in a person’s life such as divorce, loss of a family member or surgery. There are nearly 300 symptoms associated with celiac disease. The most common are gastrointestinal, such as abdominal pain, bloating, constipation, and nonintestinal, such as anemia, itchy skin rash, migraine headaches and bone/ joint pain, to name a few. Other groups of people who may be affected by gluten include children with autism or with ADHD, people with gastrointestinal disorders like irritable bowel syndrome, and still others who believe that gluten-free food is healthier. Have you seen an increase of patients with celiac disease over the last five years?

A

Yes, whenever anemia is diagnosed along with gastrointestinal distress, a clinician always suspects celiac disease. We have a celiac packet which we provide to new patients. We didn’t have this five years ago, since we just didn’t see that many cases.

Q

How do people get tested for celiac disease?

A

There are two ways to get tested. Patients can have a blood test or a biopsy. The biopsy is done through an upper gastrointestinal endoscopy.

What types of foods do people with celiac disease need to be careful with?

A

Celiacs cannot have grains which have gluten (wheat, barley and rye). There is a special grain called triticale, which is cross-bred with wheat, that also needs to be eliminated. One of the hardest things is finding non-wheat additives to food, as many condiments have wheat starch to thicken them or add to the flavor. These include wheat starch, bran, germ hydrolyzed gluten.

What advice do you give to people when dining out?

Q

For people who don’t have celiac disease but are doing the gluten-free diet, is it a safe way to lose weight and stay healthy?

A

I am not really sure why the gluten-free diet has caught on, especially for weight loss. Perhaps, people who have weight problems eliminate most of the wheat-based junk food, pastries, fast food, pizza and the higher calorie food. Of course people feel better when they are not eating those foods, and they lose weight. If people are trying to lose weight with a gluten-free diet, they still have to be careful with the overall calories.

Eating out is a big challenge. Make certain you talk to the server about your gluten allergy or call the manager over if it seems the server is too casual with your requests. If you are really in a bind for something to eat, stick with potatoes, refried/black beans with corn tortillas, omelets or a steak with sweet potatoes. Yum!

What can you do to have people talking about your party for days to come? Planning the party can be just as much fun as the party itself! To make it easier, we have assembled tips and tricks to planning a successful party that will make yours memorable for some time to come. 12

Be Organized

No matter what type of party you are having, organization is the key – be organized from start to finish. Having a clear understanding of what you want to accomplish, organization and a set timetable to help you get everything done will help you enjoy your party as much as your guests will. Know your time limits and be realistic about how much time you really have to plan for your party. Do not try to do the shopping, prep food, clean the house and have everyone over the same day. You will be too tired to enjoy your party and run the risk of being behind schedule. Instead do your shopping one to two days before the party. Choose recipes that you can make in advance. Prepare as much food as you can the day before, or morning of, your party. Save additional time by filling in your menu with prepared food and desserts from the bakery and deli departments at Rainbow. Or, if you’re looking to have the work done for you, catering from restaurants such as CRAVE is another option.

Decorate

When you invite guests into your home the environment should be welcoming. You do not need to hire a professional to create the perfect party mood; you can find great accent touches by visiting Parmida Home and Anthropologie at The Shops at West End.

Get Help

The best party planners know they cannot do it all. Enlist the help of friends or family. Give them specific tasks and responsibilities for preparty, during the party, and to help clean up after the party. Don’t be afraid to give suggestions if someone offers to bring food. To raise the bar on your next party consider hiring a bartender. Hiring a private bartender can really take a lot of pressure off of you and make your party something that will be talked about for days to come. A good bartender can help you determine how many alcoholic and non-alcoholic beverages to buy, will set up before the party, and will clean up at the end of the party. If you are having cocktails, ask your bartender to create a signature cocktail for your party based on a theme or to compliment the food being served.

The term R.S.V.P. comes from the French expression “répondez s’il vous plaît,” meaning “please respond.” This response tells the host whether or not the guests plan to attend the party and can then determine quantities for food and beverages.

Keep Guests in Mind

Your party will be memorable with personal touches if you cater to your guests. Be mindful of dietary restrictions when planning your menu. It is not always possible to make an entire meal with restrictions, however having options to suit dietary needs makes guests feel special and welcomed. Know which beverages your guests like to drink and have them on hand for your party. Do not forget to have non-alcoholic and caffeine-free options.

Know Your Etiquette

Whether you are the host or the guest, there are some basic party etiquette tips to keep in mind. The host should always welcome each guest upon arrival by greeting them at the door. It is important to have a space for guests to put personal belongings. If you have a number of guests arriving at the same time, enlist a volunteer that can help show guests where to put their belongings. If a guest does not know other guests, make introductions immediately and share something the guests may have in common with each other; once the guests start talking you are able to politely excuse yourself to greet other guests. Once your party is underway you should take time to be with each guest, but do not allow one guest to monopolize your time. At the end of the party, the host duties increase. Keep in mind that if you served alcohol, you take responsibility for the safety of your guests. If a guest has had too much to drink, a ride should be arranged for him/her. As each guest leaves, a good host will help gather their personal belongings and thank them for attending.

Arrivals

Guests should arrive right on time for a dinner party and no more than 30 minutes late for a cocktail party. Never accept an invitation and then not show up just because you don’t feel like going out. If you need to cancel inform your host as soon as possible via telephone.

R.S.V.P.s

Whether the invitation is verbal, mailed, or electronic, the party host often asks for the guest to R.S.V.P. If you know the host well and feel comfortable, call and offer to help the host with preparations or ask if there is anything you can bring, if appropriate. If the host does ask you to bring something it is important you follow through on the request.

T ips ON TABLE SETTING Dining at a formal dinner can be a little intimidating. Which fork do you use first? Is this the soup or dessert spoon? Should I know this? Knowing the utensils used in a table setting can take the guessing out of the long-standing tradition. It will help you come across as more prim and proper when sitting down to a formal meal. • Always use utensils from the outside in. So the fork on the outside will be the one to use with the first course. The same rule goes for glassware and cutlery. • Forks are placed to the left of the dishes, knives to the right. If a soup spoon will be used, it will it will be to the right of the knives. • The napkin should be placed on the far left of the place setting, unless a decorative napkin fold or ring is used. In that case, the napkin may be located wherever the party host or hostess chooses. • When bread and butter will be served, a separate plate and butter knife may be placed to the upper left of the place setting. • Plates are stacked at a place setting according to the order of serving. The plate for the main course will be at the bottom; salad plate/bowl, appetizer plate and soup bowl will be stacked in sequential order. • Last but not least, glassware. Typically the water glass is the largest-rimmed glass located to the left of other glasses (placed in the upper right of the setting). White and red wine glasses will be located next to it.

Former runway and print model Briesemeister runs the eclectic boutique Pink Champagne with the same charm and personalized style found in every item. So it is no surprise that she is willing to go above and beyond to help customers find the perfect attire or gifts.

Media manager Les Glenna has used a personal shopper service for years. The Edina resident is busy juggling his children’s school and sports schedules and doesn’t have the time or energy to hit a large shopping mall. For purchasing assistance, Les relies on the services of Amy Briesemeister at Pink Champagne.

As a personal shopper, Briesemeister takes the time to get to know her customers and is quick to offer advice and input in updating a wardrobe or finding a perfect gift item that fits your style and personality. “I want them to love what they buy or I won’t let them walk out the door,” said Briesemeister.

“My office is right in Pink Champagne’s backyard, so I can run over there during lunch and be in and out in under 15 minutes,” said Glenna. “Amy knows me and my family and orders pieces she knows we will love to wear.”

“As a small shop, our inventory is changing out regularly,” said Briesemeister. “Plus, because our store is small, customers appreciate the intimate atmosphere.”

of fashions they’ve seen online or in magazines to seek similar looks. Others rely on Briesemeister to stay on top of the hottest fashions. Special orders are common at Pink Champagne. “Once we’ve decided on a style that fits a customer, I can place special orders catered to them,” says Briesemeister. It’s the “personal” nature of the personal shopper hat Briesemeister wears. It shows in how they feel with her selections. “My wife gets tons of complements from her friends over her outfits. About Terry John Zila Terry John Zila has been experimenting in the kitchen most of his life. Fifteen years in the restaurant industry have exposed him to a wide variety of cooking styles. In his classes, he uses that culinary knowledge to create fail-proof recipes geared to the home cook. Terry teaches at various locations throughout the Minneapolis/St. Paul area including Kitchen Window, Cooks of Crocus Hill, The Chef’s Gallery, Mackenthun’s, Nordic Ware and Kitchen in the Market. He also operates johnjeanjuan, a wedding cake and special occasion dessert business.

Rosemary Popovers Ingredients 2 eggs 1 cup flour 1 cup milk 1 tablespoon melted butter

2 teaspoons fresh, snipped rosemary 1/2 teaspoon salt

tip Make these in Nordic Ware’s Grand Popover Pan (Pictured)

Directions • Heat oven to 450º F.

Generously grease popover pan. • In medium bowl, beat

eggs slightly. Blend in remaining ingredients, just until smooth. Fill cups about half to three-quarters full. • Bake for 20 minutes,

then reduce oven temperature to 350º F. Bake 20 minutes longer, or until golden brown. Remove from pan and serve immediately. • For a drier popover,

prick the top of each popover the last five minutes of baking.

Herb Crusted Rack of Lamb

Ingredients 8-bone rack of lamb, Frenched (your butcher can do this) 3 tablespoons chopped fresh rosemary 3 tablespoons chopped fresh thyme 3 cloves garlic 1 teaspoon kosher salt 1 teaspoon freshly ground black pepper 1/4 cup olive oil 2 cups Panko bread crumbs 1/4 cup beef stock Dash red wine or sherry 3 tablespoons unsalted butter Directions • Place the chopped rosemary, thyme and

garlic in the bowl of a food processor fitted with the metal blade, and pulse to combine. Add the salt and pepper and pulse to combine. • With the motor of the food processor

running, slowly pour in the olive oil until the mixture forms a paste. • Prepare the lamb: Season the lamb with

salt and pepper and spray with olive oil spray. Preheat the oven to 350°F. • Sear the rack on all sides in a preheated

pan over high heat. • Remove the rack of lamb from the pan

and smear all surfaces of the lamb with the herb paste.

• Press the Panko bread crumbs into the

herb paste coating the rack of lamb. • Place the lamb on a rack in a roasting pan.

Make this in the Nordic Ware Pro Cast Traditions Rectangular Baking Pan

Roast at 350°F for 15 minutes. Increase oven heat to Broil. Finish the lamb with 5 minutes under the broiler for medium-rare and just until the crust is brown. Do NOT allow the crust to burn. Watch carefully. • Remove the rack of lamb to a cutting

board and, using an instant-read thermometer, check the lamb for doneness. Rare: 130-135°F Cool red center Medium Rare: 135-140°F Warm red center Medium: 140-145°F Warm pink center NOTE: It is best not to cook lamb loin above medium doneness as it is such a lean cut and overcooking will render it tough and chewy.

Pan Sauce Directions When the lamb has reached the desired temperature, tent with foil and allow to rest at least 10 minutes before carving. Place the roasting pan on the stove over medium heat. Add the beef stock and the red wine or sherry, and heat, scraping up the brown bits from the bottom of the pan. Reduce slightly and whisk in unsalted butter. Separate the lamb chops and place on individual plates. Spoon a tablespoon of pan sauce over each portion and serve immediately.

Cherry Hand Pies Recipe courtesy of Nordic Ware cooking class instructor Terry John Zila Makes 6 Ingredients 1 recipe Shortening Crust (recipe follows) 1 can pitted tart cherries, drained (reserving 3 tablespoons of the liquid) 1 1/2 tablespoons quick-cooking tapioca 1/8 teaspoon salt 1/8 teaspoon almond extract 1/2 teaspoon lemon juice 1/2 cup sugar 1/4 teaspoon cinnamon (optional) 1/8 teaspoon nutmeg (optional) 2 drops of red food coloring (optional) 1 egg white Directions • Preheat oven to 425°F. • Make filling: Drain cherries, reserving

3 tablespoons of their liquid in a large mixing bowl. • Add tapioca, salt, almond extract, and

lemon juice to the reserved cherry liquid, then add the drained cherries and the sugar.

Cherry Hand Pies

• Gently stir together and allow to stand

for 15 minutes. • Roll out enough of the crust to form a

6-inch circle. • Open the pocket pie crimper so that it

forms a 45-degree angle and ease the rolled pie crust into mold. You need to keep the crimper at an angle so that when you close it, it won’t tear the dough. • Add 2 tablespoons of the cherry filling

into the crust and gently close the crimper shut to seal the dough. Do not overfill as they will not hold together during baking. • Ease open the crimper. If the crust sticks

a bit, gently insert a butter knife along the fluted edge and the crimper should open. • Remove the pie from the crimper and

place on a rimmed baking sheet lined with parchment paper. Brush crust with egg white. Repeat with remaining crust and filling. • Bake for 15 to 20 minutes.

Shortening Dough Ingredients

3/4 cup shortening, cut into small pieces 1/4 cup whole milk 1 egg yolk 1 tablespoon lemon juice Dough Directions • Pulse the flour, salt and sugar in the bowl of a food

processor fitted with a metal blade. • Pulse in shortening until the mixture resembles coarse

cornmeal. • In a mixing cup, measure milk, add egg yolk and lemon

juice and blend. • Add the milk mixture to the flour/shortening mixture

and pulse until a soft dough forms. • Turn onto a work surface and knead the mixture until

smooth and uniform (about 30 seconds). Roll as needed.
