An invitation to be on living foods for a day Yes, I would love you to try raw food for a day. Just for a day. Not a month; just ONE day. Oh, I hear you! I’m here for you and thank you for saying yes! So what is raw food? Raw – alive – living…hmmm…I feel like singing. J Raw food is living and alive with enzymes -- the primary reason why I want you to accept the invitation. Enzymes are your body's housecleaners. There is an enzyme assigned to clean up each of your organs. So, what if these housecleaners haven't taken a day off in 30 years? What if they aren't allowed to rest every day, every minute, and every second of their lives? At some point, they will ask for your help. Knock , knock…”May I request for cohelper please, I couldn’t do the house cleaning alone”. I’ve been doing this straight for 30 yrs. I knew you sent some but they were all weak. They couldn’t do the job when they clean the house. They left without helping.“ They left?! Those enzymes who were supposed to help just passed by. And you know why? They just can’t do the job because they’ve been HEATED, COOKED, GRILLED, BOILED, STEAMED…the enzymes in the food that you were eating were already depleted with energy before they entered your body. In this case, the resident enzyme had to work 24/7. Now, you are already feeling the effect since they can’t do their job anymore in protecting you from toxicity and deficiency. You feel week, less energetic, and sick; and, a lot of illnesses are just popping out from nowhere. Look around, it’s happening to your parents and friends too! I’m just talking about ENZYMES here. Daniw Arrazola has been on raw food for almost 6 years now, being one of the pioneers for spreading the raw food lifestyle in the Philippines, conducting workshops, and opening up their home, Bahay Kalipay, for raw food retreats and detox programs. She gave birth to her son, Sinag (literally, ray of light) in their traditional native hut through an unassisted water method. Being on 98% raw food during her pregnancy, SInag grew up healthy and with noticeable vibrant mental and physical qualities. WHO IS INVITED? My journey to raw food continued after a day of trying an all-fruit diet. The effect to me was so big that in just one day I decided to embrace the raw food lifestyle. After years of uncertainty, emotional roller coaster rides, and trying different ways to heal myself, I woke up one day with clarity, emotional balance, and a feeling of lightness. It was the first time I cried out of joy, and not from sadness and pain. So, who should try this experience? ANYONE, from all walks of life, who is open to learning more about adding healthier food choices to their diet. If you are in doubt because of health reasons, you may consult your medical adviser. A day on RAW may seem to be too short for some people. Congratulations! I can lead you to continue on this journey. One way is to follow the same instruction in this book and use other raw food recipes; another is to commit to a 21-day program; or, if you want to take it further, join our cleanse and detox programs. In short, this book is now with you. Feel if you are being called, listen to the whisper of the heart, and follow it.

WHAT TO EXPECT? Here are at least 10 benefits that you can experience after A DAY ON RAW or when you are on raw food diet. These can be very apparent during the early stage since you can still remember how it is to be on normal cooked diet. I will leave it up to you to discover the other benefits base from your own experience, when you decide to extend to two or few more days. Maybe when you write to me, this list can grow to 50. Any or all of the above benefits can be achieved depending on your current physical, emotional, mental and spiritual state. Remember that every aspect and past experiences will contribute to the success of this invitation. What you do before A DAY ON RAW will have an effect to the result. It is important to commit some time to prepare for the big day. As you continue to turn the page, you will be guided step by step from the market to the table, from dusk until dawn. There is no space for failure. You’re actually enjoying the success now because even if you haven’t decided yet, a seed has already been planted. Your mental and emotional preparation is already starting. Through this process, some of you will feel experience some detox symptoms. This may happen during or immediately after. Do note that it is not an indication of failure. As I mentioned earlier, if you send more house cleaners to your body then the process of removing all the dirt is faster. Remember, detox = cleanse. If you feel any distinctive uncomfortable symptoms, which can range from slight headache, nausea, and urge to go to the bathroom or any discomfort, give yourself a time to just lie down, relax and do the affirmation that later I’ll share to you. Aromatherapy, good music and massage will also help. Lastly, keep yourself hydrated. Prepare a liter of water and finish through out the day.

5 WITTY TIPS FOR CONSCIOUS EATING HABITS: Before you go to the menu of A DAY ON RAW let me share with your some of my witty tips which I experimented a dozen of times. It doesn’t fail me when I call for a healthy tummy! This is my witty way to ask you to practice MINDFUL EATING or meditating while eating. I am keeping it short and reserve a space for more research and contemplation on your part. It is your assignment. SHOPPING TIP

I highly recommend that you use organic produce as much as possible since we know that chemicals & pesticides now cause most diseases. However, let it not hinder also your intention to try A DAY ON RAW. Bear in mind to choose the healthier option whenever an opportunity arises.

Be more conscious now where you are getting and who are the people planting your fruits and vegetables. Imagine, if there is so much love and care that the producers are giving to our food, that same vibe is also what you are absorbing.

I have a separate sheet for the shopping list, feel free to adjust specially if you wish to share your food to your family.

The list might be too long for some but check the recipes and you will see that some if not most the items shall be used twice. I really designed a SIMPLE Menu so you wont waste your money and your energy.

You also don’t have to buy the items under additional ingredients. Those are all optional and I will leave it to you to decide if your wish to go all out.

Before going to the market/grocery store, check whatever you have in you kitchen, pantry cabinet and fridge. Maybe you can use some of what you already have and replace the items in our list.

Read the recipes and review the shopping list at least twice before buying the ingredients. Plan where to buy and check the recommended store where you can find some of the ingredients.

Be eco friendly. Bring your own eco bag or re use your clean grocery plastic bag in your home. Lessen the plastic that you bring home and encourage your family member to do the same.

RECIPES A DAY ON RAW

Fresh Fruit with Fresh Coconut-Choco Milk/Lime/Ginger Ingredients: o 1 piece small size mango o 1 piece medium size banana o 1 small size whole papaya Milk o coconut milk/cream o *honey or coco sugar (optional) o ½ Tbs Cacao Powder or more! Garnish (optional) o 2tsp Cacao Nibs o 1 tsp of Coconut Flakes or freshly grated coconut o *Dried Fruit (blueberry, cherry, raisins) Other options instead of coconut milk o Squeeze some lime o Serve with grated ginger/ginger juice (squeezed grated ginger) Direction v Cut or slice the fruits in bite sizes, serve in a bowl v Mix coconut milk and cacao powder in a separate container v Pour some coconut-choco milk v Add some sweetener if needed v Garnish v *good as transition food but sweet foods are better serve on occasional basis. Omit for DIABETICS, with yeast infection and Cancer Patients


Berry Merry Smoothie or Tropical Fruit Smoothie GREEN Smoothie is the best way you can get the right amount of greens into your body to help the vitamins and other nutrients to easily assimilate into your system. It is called the LIQUID SUNSHINE as it has all the energy from the SUN through photosynthesis and chlorophyll. You can’t munch a kilo of kale but you can drink it once blended with fruits.

Ingredients o a bunch of Green Leafy Vegetable of your choice (4 cups loose measurement): § swiss chard, bochoy, lettuce, kale o 150-175g of any berry of your choice or 1 pc. of banana and 1 mango. o 2 cups Young Coconut water or plain water. o 1 pc of medium size cucumber Direction v Blend water/coconut water, cucumber first then add the fruits. v Slowly add vegetables using only the pulse button until all the veggies are mixed together. If you're using the high-speed-high-powered VITAMIX Blender you can put all the ingredients together without having to worry that your blender will overheat. You may change the green veggies depending on what is available in the market. Before using a new variety, you will have an idea if your smoothie will taste good by trying a little before buying and making a large batch. If your smoothie turned out too strong, just add more fruits and/or coconut water. If you made for more than one consumption, don't worry, you'll be amazed how good it taste when you put it in the freezer -- it's best to take it fresh but smoothies in the freezer can last up to three days. Store in a BPA free container or use glass mason jar. Try using Bochoy, Kangkong, Lettuce, Spinach, Kale, Swiss Chard and Sweet Potato leaves. And for fruits: Pineapple, Papaya, Soursop, Dragon Fruits, Organic Apple, Oranges and Berries You can add a little of the green superfoods like Moringa, Basil or other herbs. Cleaning Your Veggies If you're not sure how your supplier handles the veggies and how it was harvested and transported transported to the seller, soak the veggies in water with vinegar, 3 Tbs. to gallon of water for at least 10 minutes. I use the local coconut vinegar but regular vinegar can also be used. Other ways to clean is through the use of ozonizer or baking soda.


Japanese Miso Soup A very simple soup which can be done in 5 minutes. Serve it cold or warm. Add a little ginger and spice to bring out its flavor. Always have the ingredients in your fridge and you’re good for a healthy fast warm delight.

2 Tbs. Japanese Miso Paste 4 Tbs of Cucumber – cubed 1 tsp. Olive Oil dash Cayenne Pepper powder 2 cups Warm water 1/8 small size White Onions

Additional Ingredients (optional) o o o o

soaked Wakame Seaweeds sesame seeds spring onions for garnish grated ginger

Direction Dilute the miso paste to the warm water. Add the rest of ingredients including the wakame seaweeds if you have. v Garnish sesame seeds and spring onions. v v


Cucumber Roll with Spicy Miso Paste This is one of my favorites, indeed. It pleases everyone specially when platted well. A simple dish but will look like a gourmet once topped with sprout and some sesame seeds. Replace the cucumber with NORI sheets for a quick alternative and some Japanese-y taste.

Ingredients o o o o o o o

2 medium size Cucumber ½ medium size Red Bell Pepper or Capsicum ½ medium size Orange/Yellow Bell Pepper or Capsicum ½ medium size Carrots ½ Avocado ½ Mangoe 1 pack of spouts of your choice

Additional Ingredients (optional) o Garnish with sesame seeds o Some sprouts Direction v Peel the cucumber and carrots. v For the cucumber, slice this 1/8 inch thick or use a peeler or a mandolin slicer. Make sure that it’s thin enough to be rolled or hold the julienned veggies inside. Put on a plate with table napkin so it will absorb the water of the cucumber. You will only need the meet and set aside the part with seeds. v Slice all the carrots and bell pepper in match sticks sizes. v Slice the mangoes and avocado thin enough to fit in the roll with rest of the ingredients. v Lay the cucumber on a plate horizontally and put a little of all the other ingredients on top, vertically. Put enough that you can roll the cucumber into one circular piece like a regular nori roll. Do this with the rest until you last slice of cucumber. v Serve and topped with some more sprouts, throw some sesame seeds around. v Miso paste can be served on the side or poured on the roll.


Spicy Miso Paste This should be a staple in every kitchen. This paste is very versatile. Once you have this you can just add other ingredients for a different new dish. I tried blending avocado, zucchini, mango, or tahini and it balances the flavor and the saltiness, in the end giving a new distinct goodness. Experiment!

Ingredients o 2-3Tbs of Extra Virgin Olive Oil o 1-2 Tbs of Miso Paste o 1/8 tsp of cayenne pepper o ½ medium size of Red Bell Pepper (optional and can be added or replaced with avocado, zucchini, mango, tahini o lime juice as desired Direction v Blend all the ingredients except for the olive oil. Add the oil when everything is well blended. All oils with Extra Virgin label should be the cold pressed, raw oil. Sometimes when we are blending, some people tend to over blend and heat up the oil. All oils are sensitive to heat and will loose its healing properties --- lose the enzymes.


Super Food Chocolate Slush I included this in the menu because I know this one you can easily have everyday because this is really good! I got the inspiration from my dear friend, Asha Peri. She prepared it for me and my shining light, Sinag. After that it just became part of our life. SUPER FOODS are nutrient packed. It’s like having your supplements without the synthetic capsules. With coconut meat and water alone you are already getting a lot of nutrients so don’t be pressured if you don’t have all the ingredients. I just always include the chocolate powder especially if I put spirulina in order to balance the flavor. This is the only drink that I take cold or frozen so I recommend that you double the recipe if you want and put half in the freezer. Again, you can make this very simple or very complex. When I computed all the expenses per glass and considered all the nutrients I could get, I would rather have this than take one of those pills! Your investment will go a loooong way. Satisfying Green Salad Simply delightful!

10 leaves Lettuce 2 mediumTomatoes ½ medium Carrots ½ Cucumber 2 Tbs. Olives Sprouts

Direction v Cut, slice or grate all the vegetables. v Serve in a salad plate and garnished with the olives and sprouts. v Pour some Hoisin sauce on top


Hoisin-Sesame Sauce This is another staple in my raw kitchen. You only need a little as it is flavorful. Just like the Spicy Misp Paste, you can raw play with this by adding other ingredients. I tried blending this once with 2 more cups of young coconut meat and cilantro/coriander and it made into a really good dressing and dip. The rest since I have a dehydrator, I spread it and when it was already dry, I rolled and cut into noodle-like sizes. Whoa, that was really crazy hoisin flavored raw noodle!

¼ cup Nama Shoyu/Tamari 2 Tbs Miso 3 Tbs Coconut Sugar/Honey/5 dates 2 Tbs Apple Cider Vinegar 1/8 tsp Garlic Powder 2 tsp Sesame Oil ¼ Tsp Chili Paste or 1/8 tsp. Cayenne ½ cup Young Coconut meat (or 1 cup even!)

Direction v Blend all the ingredients until smooth. v Pour on the salad or serve in a separate bowl.


Melt in Your Mouth (and your hand) You Wont Mind Chocolate I called this melt in your mouth and hand (teheee!) because we can also make one that is stable which you could bring around, but this one is inexpensive and high in nutrients which what we just need and you will keep it in the freezer to keep the form. TIP: Use the mixture as chocolate sauce for your fruit breakfast bowl. Wink! Another piece of advise, TRIPLE the recipe.

Ingredients o 21/2 Tbs. Raw Cacao Powder or more if you want a dark chocolate flavor o ¼ cup Coconut Oil (other cold pressed oils will do) o ½ c Honey or Coco Sugar (or more if you want a sweeter taste) o pinch of salt o ¼ tsp. Cinnamon Powder o add water when needed o a dash of cayenne powder or a dash of ginger powder (or divide the mixture to two and experiment with this on the other half) Additional Ingredients (optional) o o o o

1/8 tsp. Vanilla beans/5 drops of Vanilla Essence 3 Tbs. Tahini 1-2 Tbs. Dried Fruits 1 tsp. Sesame Seeds

Direction v Blend all the dry ingredients first at high speed until it turned into a powder v Slowly add the coconut oil and blend until smooth. At this stage lower the speed of the blender so it wont heat up the oil. You can even manually mix the powder, oil and the rest of the wet ingredients using hand mixer or egg beater. v Pour the mixture into a flat container, at least 1 inch thick container. Spread until it’s evenly distributed. v If you have the additional (optional) ingredients slowly throw it on top. v Cover and put in the freezer. Wait for least 15 minutes to harden. v Roughly poke it with a bread knife and enjoy.


FRUIT ICE CREAM Make this two days ahead. Ingredients o 5 cups of any of the following fruits or a combination of two: Mangoes Sweet Pineapple Bananas Jackfruit Additional Ingredients (optional) o Virgin coconut oil or your melted chocolate o Coco sugar o Dried Fruits Direction v v v v v v v

Chop the fruits into bite size Freeze for two nights Blend once it’s frozen or when you want it to be served Put in a dessert bowl or glass Topped with dried fruits of choice Pour some VCO and wait until it hardens. This will be crunchy! Serve. Hmmmm, yum!
