I am a recourcefull, hard working and naturally very creative designer, who works well as part of a team, but I am equally comfortable working through and finding design solutions on my own.

As foodies everywhere seek out a healthy treat that won’t break any New Year’s resolutions, this month flavour finds a solution, Clifton’s Noa restaurant...

Love their food as we do, there’s nothing quite like bringing the French gastronomic ego down a peg or two; which is why I love to imagine the sea of incredulous Gallic grunts when Tokyo finally pipped Paris to the post as the city with the world’s most Michelin stars. I was intrigued to hear an insider’s perspective on this relatively recent phenomenon, and so in the name of investigative journalism (and a hankering for tempura) called into Clifton restaurant Noa. According to head chef Nobu Kawagoe, the reason for Tokyo’s success needn’t be overcomplicated: “We like to take great care of our food.” Having earned his spurs at his namesake Nobu in Mayfair, one of the world’s most famous Japanese restaurants, it’s probably fair to assume that this observation comes from first-hand experience of working with the best. If Nobu is the jewel in Noa’s crown, his modesty certainly belies his credentials, and he’s keen to keep the focus of our conversation on his food. “At Nobu we cooked a lot of modern Japanese cuisine which I loved, but when it came to creating

the menu at Noa I wanted to teach people about the more traditional dishes as well. We’re very lucky in Japan to have easy access to a huge range of ingredients, so I think the flavours in our dishes speak for themselves.”

Nothing could be truer. Being somewhat of an amateur when it comes to Japanese food, I had to be guided by recommendations. A starter of tuna harumaki with spicy mayo (£6.75) was an excellent opening gambit; a crisp outer layer enveloping unquestionably fresh tuna, seaweed, spring onion and ginger – this is not to be missed! Next up the grilled red fish with hot Jalapeño dressing (£9.20) was cooked to perfection and a surprisingly good match in both colour and flavour to the noticeable kick of the light green sauce. The dish was perhaps lacking a little in volume, but some crunchy green beans with dangerously moreish black sesame sauce (£3.20) proved to be ample compensation. The chef’s recommendation of beef takaki – strips of seared mature sirloin with onion Ponzu sauce (£8.50) has been earmarked for a return visit.

Finally, a bowl of green tea ice cream (£4.00) carried a slightly bitter taste that wouldn’t agree with every palate, but the depth of flavour couldn’t be disputed. I still have a lot to learn about such a light and delicate cuisine where countless different flavours come into play, but after this initiation, I’m going to relish the challenge. Hidden up a small side street, you’d be unlikely to visit Noa unless you knew about it. Now you do.
