Not everyone can say they’ve had a machine gun pointed at their face. But not everyone is Donna Thomas. This 81-year-old grandmother and Carmel resident has lived a life of adventure, and she has the stories to prove it. From canoe rides through the alligator-filled waters in Panama to meals with the Chinese head of government affairs, Thomas’ life has been nothing short of invigorating. Such stories are not what you might expect from a pastor’s wife. But it is because of her faith that Thomas has such stories to tell. This author, missionary and founder of two non-profit organizations has dedicated her life to helping others. She has fed the poor, provided shelter to disaster victims and brought medical supplies to the sick. She’s also a pilot. Thomas’ journey has been a long one. A native of Tulsa, Okla., she first moved to Indiana to attend Anderson College (now a university). There, she met her husband, Chuck, who was studying to be a pastor. The two graduated, married and moved to Wichita, Kan., where they founded the Pawnee Avenue Church. “It wasn’t easy,” Thomas says, laughing. “We had no idea what we were doing.” In 1968, while still running their church, Chuck and Donna founded a public charity, Project Partner with Christ. Through Project Partner, the Thomases led thousands of people to mission work. They bought a bus and two planes and even used a donated

yacht to assist in their travels. The couple was short on cash but high on a “why-not” attitude and a “can-do” spirit. And such attributes allowed them to accomplish a great deal and led to some unique experiences – like the time Cuban Prime Minister Fidel Castro forced them to land their plane. For that trip, the Thomases planned to fly workgroups to Haiti and Jamaica to build a school and parsonage. The mission work went fine; the flight home didn’t. While the Thomases had filed for permission to fly through Cuban airspace, it seems Castro, in an effort to show off to German officials, changed his mind. The group was forced to land by three MiG-17s. It took $8,000 of ransom money to get them home. But such perilous experiences didn’t stop the Thomases. In fact, the couple feared little and rarely turned down any opportunity. “My husband wasn’t the kind of man to say, ‘Why would I do that?’” says Donna. “Instead he’d say, ‘Why not?’” Another time, Chuck got lost in the Guatemalan jungle. Traveling the river with a guide, the two shored up to land in preparation for a huge storm. The guide left, leaving Chuck alone. In an effort to seek shelter from the storm, Chuck followed tribal Indians, but he eventually got lost. He spent two days wandering the snake-filled jungle, living only on the Tootsie Rolls Donna had stashed in his pocket. All in all, Chuck and Donna traveled to almost 80 countries, leaving their mark by helping others. Chuck passed away in 1992, but Donna continues her adventures. At 81, she runs CV Ministries, a non-profit organization in Carmel, where she consults with pastors and others around the globe. This amazing woman is an author, consultant and adventurer all wrapped up in one. She’s also a great storyteller.

FROM THE BACKSHOP this plan portends unhealthy results The Obama administration and Congress have fired a massive shot across the bow that they plan to pass major healthcare legislation without allowing reasonable hearings or full disclosure. Such a measure has no place in a budget debate. Using procedural rules to accelerate the measure and avoid hearings – and debate – is a clear violation of the Constitutional process. Look, President Barack Obama’s camp doesn’t want to know what you have to say, and it doesn’t care. Again, we must ask: Change? ••• “Whoops! What I meant was ... ” - Sen. Christopher Dodd (D-Conn.) is heavily promoting taxing the contentious bonuses for executives at bailed-out insurance giant AIG, some of whose top dogs live in (get this!) the Constitution State. You may recall this is the same guy who put language in the $787 billion stimulus bill that permitted the recompense of $165 million in taxpayer-subsidized bonuses. Apparently, he believes we all were born yesterday. •••

Brian Kelly & Steve Greenberg A numbers game, really - Let’s see if we get this correct: Obama isn’t quite so focused on the stock market – in which $11 trillion of pensions, investments and 401(k)s have been obliterated – but he DOES notice the independent polls showing shrinking support for his policies. The key number was 65 percent when he took office, and as of last week it had dropped to 56 percent. So far, Obama’s administration has been characterized by two main programs: the stimulus spending and bank bailouts. But polls indicate problems with each pillar of his package. We know our nation basically is detached, but how does one explain the polling that shows support for his stimulus plan but believes it won’t work? Gotta go, “American Idol” is on.

READERS’ VIEWS CRISIS CALLS FOR OPEN-MINDEDNESS Editor:

I was dismayed to read your editorial titled “His Lord’s Financial Services” in the March 10 issue of Current in Carmel. To say religious institutions should not offer financial advice is a bit narrow-minded. In today’s world, financial guidance is more important than ever. Religious institutions are made up of people – including financial professionals very capable of offering advice. By offering free guidance, these institutions provide cost-effective

education to those in need. If part of that education includes asking participants to contribute to a religious organization, then wonderful. Religious institutions fund and support many social services, reducing the burden on taxpayers to care for those less fortunate. Isn’t it better to teach sharing rather than selfishness? Wasn’t it greed that got us into this mess in the first place?

IN-VITRO DESERVES ANOTHER LOOK Editor:

We are writing in response to Danielle Wilson’s March 10 column on in-vitro fertilization (“In-Vitro Not All It’s Cracked Up to Be”). Danielle, your concern for your friends who are trying to conceive is clear, and we’re sure they’re grateful for your support at a challenging time. A woman may have to take several medications to prepare for treatment, but referring to her body as a “pharmaceutical bazaar” isn’t fair to her or to the process. You have also referenced the number of embryos transferred back to the woman after fertilization. While the case of the woman in California who gave birth to octuplets has raised awareness about IVF

and multiple births, this is highly unusual. Guidelines from the American Society of Reproductive Medicine are clear about the number of embryos recommended for transfer based on age and other factors. IVF is expensive and emotionally challenging, and many couples need more than one cycle of treatment to achieve a pregnancy. Fertility centers understand this, and many offer a refund program to make multiple cycles of treatment more affordable. To everyone who walks the fertility journey, we offer our praise for their steadfast desire to be parents.

When Just Trucks owner Todd Slavin saw the sales at his truck accessories store drop from 10 percent to 50 percent in just four months, he said, he couldn’t just sit there and watch the ship go down. So he transformed a quarter of his 6,000-square-foot location into a convenience store. Attached to Just Trucks, which sells everything from truck bedliners to pinstriping to security, is a Qwk Mart, offering everything from Krispy Kreme donuts to lottery tickets and gum. And both are owned by Slavin, with his brother, Jay, managing the convenience store. Since its opening early last month, Qwk Mart’s sales have increased by the day. “One-hundred percent of the Just Trucks customers converge to Qwk Mart while we’re installing (accessories),” Slavin said. “And a tremendous amount of Qwk Mart customers at least walk through the Just Trucks side.” Slavin said he knew he had to change direction after Just Trucks’ record plummet. In his 11 years running the store, Slavin said the period from last August

to this March was the worst ever – worse even than the months following Sept. 11. “We were into the $4plus gasoline,” he said, “From that into the election, to the economy sliding...” “I (was) staring out the window as we were going broke, watching thousands of cars go SLAVIN by right at the intersection,” Slavin said. “And I said we cannot be at this prime of a corner (96th Street and Michigan Road) right off the interstate and not capitalize on the traffic.” Slavin said he considered numerous methods to revive the business, including various customer niches – from selling remote control cars to opening a liquor store. “I couldn’t come up with anything people needed,” he said, “So I thought, ‘What about something they don’t need. What about convenience – Coke and smokes?’” Slavin, who has already run five or six businesses, said if something isn’t working, business owners need to take a different approach. “Think outside the box,” he said. “Be creative. Don’t go down with the ship. Failing is not an option.” Photo by Lily Tsay

CHS STUDENTS HEADED TO INTERNATIONAL FINALS Current’s own Maddi Bourgerie has advanced from the state DECA competition to the international competition next month in Anaheim, Calif. Bourgerie is among 28 international finalists from Carmel High School. DECA, as described on its Web site, is “an international association of high school and college students studying marketing, management and entrepreneurship in business, finance, hospitality and marketing sales and service.” At CHS, every marketing student is automatically enrolled in DECA, though the competitions are optional. Bourgerie placed third in her event, Entrepreneurship Written, which requires a 30-page business and marketing plan and 15-minute prepared presentation to judges at the competition. Her business plan, she explains, is for “a bakery in

downtown Carmel … where you could order pies, cookies, or brownies.” “The biggest aspect I had to present to the judges was the location in the Arts & Design District and how great it is, and that definitely set me apart from the other competitors,” she said. The other CHS students qualifying for the international competition are Brian Bates, Andrew Burke, Timothy Chai, Michael Cheng, Michael Courtney, Alyson Endicott, Heather Fitzpatrick, Megan Fraser, Michael Goldberg, BOURGERIE Trent Huckstep, Joey Kelner, Tricia Kennelly, Daniel Kim, Lily Lannon, Molly Longest, Mackenzie McCanna, Hollyn Meador, Erin Meyer, Kristen Neher, Ansel Nalin, Logan Patterson, Karen Rans, Logan Rosenberg, Jimmy Rizkalla, Mallory St. Claire, Jaimie Walker and Mike Zervic. Based on the total points earned by CHS participants, the school placed second in the state competition.

Remember forming lines in grade school? I do. That’s when I learned what parallel meant. My first-grade class always had gym and lunch with the other first-grade class, so when we lined up outside the classroom doors, our teachers would say, “Please keep the two lines parallel.” That kind of structure is necessary when leading 50 or 60 six- and seven-year-olds through a school. It is also necessary in writing. Parallel structure: When using words or phrases in the same way in a list or a sentence, you have to set them up in the same way; they must be the same syntactically. Did I lose you at syntactically? Here’s a simple example to show you what I mean: The dogs run, jump, and played. Can you hear the Sesame Street song, “One of These Things is Not Like the Others”? I can. That sentence shows poor parallel structure because the verbs run, jump, and played are not all in the same tense; they’re not the same syntactically. That’s an obvious example. When setting up a list within a sentence, each item in that list must be structured in the same way. If the first structure begins with a past-tense verb, the following items must do so, as well. If the first item is a clause, the rest must follow suit. Take this sentence, for example: Jenny went to the conference with the expectation of being served bad food, being required to wear a name badge, and a shabby hotel room. If you take out the food and badge clauses, the sentence makes sense (Jenny went to the conference expecting a shabby hotel room.), but with everything in place as it is, the struc-

CARMEL STUDENTS WIN STATE HONORS - Several Carmel High School theatre and drama students earned honors at the three-day Indiana State Thespian Conference earlier this month at the University of Indianapolis. Carmel High’s presentation of “For Whom the Southern Belle Tolls” earned fourth-place honors. The tech-challenge team placed first overall and won the top award for theatre curtain folder. Team members are Natalie Cappucci, Matthew Crocker and Sam Spoerle. Individual winners were Jowi Estava, best of category, short films; Katie Cooprider, superior, scenic design; Sarah Donaldson, superior, experienced monologue; Rohan Dharan and Michael Wright, excellent, experienced acting duet; Karaline Feller, excellent, experienced monologue; Caroline McCaulay, excellent, novice monologue; and Katie Teal, excellent, experienced monologue.

ture isn’t correct. The sentence should read something like: Jenny went to the conference with the expectation of bad food, a required name badge, and a shabby hotel room. Or Jenny went to the conference with the expectation of being served bad food, being required to wear a name badge, and being placed in a shabby hotel room. Personally, I like the first correction better; it’s more concise. Correlative conjunctions are a trick when it comes to parallel structure sometimes. You may recall that correlative conjunctions are the two-part conjunctions like either-or, neither-nor and not only-but also. They require parallelism: What follows either must be the same form as what follows or, and so on. My favorite example of faulty parallelism with correlative conjunctions is one I’m sure you’ve heard or even used yourself: Either you do it or not. Not is an adverb; you do it is a clause. They are not the same syntactically. The correction is Either you do it or you don’t. Scads of people make this mistake, and I think in casual conversation it’s very forgivable. But not so much in any sort of written document that should be proofread. I feel it’s only fair to mention that parallel structure is an aspect of grammar that many people find difficult to identify at all, much less correct. Just being aware of how you structure things in lists and other similar constructions in sentences is the biggest hurdle. Once you get over that one, the rest is just keeping the lines straight on the way to gym class. pregnant? feet hurt? By Dr. David Sullivan Current in Carmel

Plantar fasciitis Achilles tendonitis Peroneal or posterior tibial tendonitis Stress fractures Ingrown toenails

There is concern when treating musculoskeletal problems during pregnancy, because X-rays obviously need to be avoided. A good clinician should be able to diagnose most of these problems without an X-ray. MRIs and other forms of advanced imaging are sometimes needed to confirm a diagnosis, so foot problems are often treated without a definite diagnosis to avoid putting the fetus at risk. Supportive shoegear and orthotics will typically decrease the stress and eradicate or at least lessen the pain of the first three

9 ANTI-AGING

You don’t have to be barefoot AND pregnant to cause harm to your feet. Either one adds stress to the feet for different reasons. With pregnancy comes weight gain and, typically, swelling in the feet (most commonly in the third trimester). The stress on the feet from added weight can result in multiple foot ailments including:

ailments listed above. Stress fractures may be immobilized. Ingrown toenails are typically treated in the same manner as in non-pregnant patients. Added stress from weight is not the only cause for discomfort in the feet during pregnancy. Many women suffer from significant swelling in the feet, especially during the third trimester. This causes much frustration when putting on shoes. It is highly advised that pregnant women have their shoe size checked throughout pregnancy. Pay attention to the width and depth of the toe box, not just the length. Swelling can be controlled with a compression hose, but rest and elevation, along with routine exercise to keep the fluid pumping through your system, is the best way to control this common problem. Remember: You don’t have to live with foot pain just because you are pregnant. There are many ways to safely treat these problems without putting you or your baby at risk. Dr. David R. Sullivan is a board-certified foot surgeon and certified wound specialist with Westfield Foot and Ankle, LLC. He can be reached at drs@westfieldfoot.com or 317-896-6655.

DISPATCHES NATURAL PAINKILLER - Plagued by round-the-clock aches? Try a bit of exercise. Cleveland Clinic researchers discovered that a brisk one-minute walk helps patients with chronic pain feel better. “Exercise prompts the brain to release fell-good neurotransmitters that boost mood within minutes,” notes Todd Sitzman, M.D., president of the American Academy of Pain Medicine. Dr. Sitzman’s advice: If you’re suffering, ask your doctor about an exercise plan that will work for you. -Quick & Simple LIGHTEN UP! - Simply getting lighter can keep blahs away. Here are three simple ways to brighten your mood, even on gray, rainy days:

Swap out bulbs. Use compact flourescent bulbs to light at least the high-traffic areas of your home; they mimic sunlight better than incandescent bulbs. -Health

CONCEAL - After 40, skin loses elasticity and thins, which can make you look tired and allow blood vessels to show through, heightening discoloration. Concealer lightens dark circles, gives lids the appearance of a lift, and provides an overall glow.

Rise and shine. Leave curtains and blinds in your bedroom open, and/or put lamps on a timer to turn on 15 minutes before your alarm sounds to get a “dawn simulation” effect.

2

Get some sun. Just being outdoors can boost your mood. Morning sunlight is most beneficial, so take a prework walk.

• Choose the Right Hue. Pick a yellowbased formula that’s at least two shades lighter than your skin tone. • Apply It. Using a small-headed concealer brush, apply a dab along the lower lashes to the innermost corner of eyes and the hollows of the nose. You can also use your ring finger, which has a naturally light touch and added warmth to tap and gently blend. • Set. A dusting of a sheer, loose yellowtoned powder locks the concealer in place. -www.prevention.com

The use of pesticides on produce is a big concern for many people. If you don’t want to fork over the cash for organic produce, however, you can wash the pesticides off your produce with readily available ingredients. • Clean your sink thoroughly. • Fill the sink about halfway with cold water, then add four tablespoons of salt and the fresh juice from half a lemon. • Soak most fruits and vegetables 5-10 minutes; leafy greens get 2-3 minutes, berries get 1-2 minutes. • After soaking, rinse the produce thoroughly in cold water and dry each piece. - Household Magic

SOUL FOOD TO REMEMBER The plant Kale is a somewhat ignored, inexpensive “soul” food in the U.S. But in ancient Greece, it was a favorite vegetable used to help rheumatism, eyesight and memory. It contains potassium, phosphorus, calcium and sulphur. Kale can be used in three ways: raw in salad, cooked as a vegetable, or as a tea. For tea, mince a handful of the leaves, add red pepper and salt to taste, and drop into two cups of boiling water. Steep, cook, and drink strained as a liquid before meals. -Ancient Healing Secrets

Pay close attention to the clothes you choose to put on in the morning – they’re a window into your true emotional state. If you find you’re often dejectedly grabbing your “fat pants,” ask yourself why. Taking note of your thoughts, and getting to the root of what’s behind them, is a crucial step toward trading in worn-out routines for desperately needed new ones, whether they involve dressing in a way that reflects the true you, finding a job that makes you eager to get dressed or finally becoming serious about diet and exercise. -Quick & Simple

SEEING ORANGE University and the study’s lead author, the difference lies in the type of lycopene: Tangerine tomatoes contain mostly cislycopenes, which are absorbed by the body at more than twice the rate of the trans-lycopenes found in red tomatoes. “While red tomatoes contain far more lycopene than orange tomatoes, most of it is a form the body doesn’t absorb well,” says Schwartz. -Clean Eating

The next time you’re picking out tomatoes, you might want to think orange. A study published in the Journal of Agriculture and Food Chemistry demonstrated that the anti-oxidant lycopene in certain orangecolored tomatoes, called tangerine tomatoes, is more available to the body than in red tomatoes. LENGTH MATTERS, GUYS - The length of your trousers is everything. A half inch too long, and you’re instantly disreputable; a half inch too short, and you’re laughable. A one-inch kink in the front crease, and you, my friend, are golden. -Esquire

PREPARING THE BUBBLY - According to the Champagne Wines Information Bureau ( www.champagne.com), champagne should be refrigerated for no longer than 2-3 hours before serving, in order to preserve the best taste and bouquet. Open the bottle correctly by slanting it at a 45 degree angle away from yourself and guests. Then, with a thumb on the cork, untwist and loosen the wire muzzle. Grasp the cork firmly, twist the bottle slowly and let the pressure help push out the cork. Allow a light and merry pop. -Household Magic

Relate art to room elements

Although picture hanging allows for personal creativity, it needs to be aesthetically pleasing. The No. 1 rule to remember is the size of the art should be relative to the size of the wall. Smaller pieces look best on narrow walls; larger pieces or groups of frames Vicky Earley are best on expanDesign sive walls. In addition, art needs to reflect furniture size. For instance, a picture frame over a sofa should not exceed the width of the sofa. And let the height of the furniture piece determine the height of the art. The base of the frame should be no more than eight inches above the top of the piece of furniture. Art that is hung alone should be at eye level, where it can be easily viewed and en-

17

joyed. Start with its center five feet from the floor, and adjust it to your preference. Avoid the temptation to simply wham a nail into the wall! It really does make a difference when the appropriate hanging device (based on the composition of your walls and the weight of your art) is used.

Lay it out on the floor first

The simplest way to create a grouping is on the floor. This gives you the chance to arrange and rearrange without making holes in walls. Craft paper cut to the size of the piece or collection and taped in place can be the most useful tool in establishing the ultimate position.

Check the balance

Step back and look at the arrangement. Make sure you balanced the heavier and lighter pieces, as well as color spread throughout the grouping. How do the frames look next to each other? Rearrange

until you feel the group is visually balanced. Think of a wall arrangement as one large picture For a display with impact, start with your largest frames in the center as a focal point. From there, surround them with smaller frames for a balanced grouping. Create uniform space between each piece. Your home is an expression of who you are, and your walls are your own personal gallery. They should reflect your interests, personality and memories. Fill a wall with the faces of those you love, or of the places you have traveled. Remember, what you choose to frame can be as grand as an original oil painting or as simple as a handwritten note. Art is about you and what you hold dear. Vicky Earley is the principal designer for Artichoke Designs in downtown Carmel. CAN THE CLUTTER - You probably already recycle your aluminum cans, but what if they could help you declutter spaces around your house? Try shorter cans like those for tuna or canned chicken in drawers to organize paper clips, push pins, or other small necessities. Soup cans on a cork board can organize all the kids’ art and school supplies, and vegetable cans make nice storage containers for garden seed packets. Use a clean-edge can opener to avoid creating dangerous organization. -www.hgtv.com

CREW VERSUS BAREBOAT - If you’re thinking about chartering a sailboat, it may be tempting to save money by exercising a bareboat option, where you serve as skipper (and cook and housekeeper) of the boat, but it can mean the difference between a carefree trip and a stressful one, especially if you’re not an expert sailor. If you’re intent on bareboating, though, most charter companies will ask you for a sailing resume and may even give you a test run. -National Geographic Traveler

KEEP IT COOL - The larger the ice cube, the slower it melts. A few days in advance of a party, make two big ice cubes. One method to do this is by cutting off the tops of milk or juice containers, washing them, filling them with water and the putting them in the freezer. Use one cube when you first put the punch out; use th other for a later refill. Another option is to prepare the ice cubes (large or small) with the same juice that goes into the punch. That will keep the punch cool without diluting it. -Household Magic

As the song goes, “When you’re a Jet, you’re a Jet all the way.” For Carmel High School graduate Amanda Brantley, who is performing in the Indianapolis Civic Theatre’s “West Side Story” this weekend, “all the way” means all the way to BRANTLEY Broadway. Brantley hopes to make her mark on the Great White Way one day, but for now, she’s happy to have landed the role of “Jet girl,” one of the ensemble players aligned with the “American” boys of the Jets gang. It’s her first time performing in a musical, although she has been on stage as a dancer before. She was thrilled to get the part. “It’s a great learning experience, because in a musical like ‘West Side Story,’ you have to be just as good a singer as a dancer,” she said. “You put all your skills into the experience.” Brantley started dancing when she was three years old, learning classical ballet, tap, jazz, modern and hip-hop dance at the Jordan Academy of Dance at Butler

University. She recently began studying Latin and ballroom dancing, styles that have come in handy in the musical. She plans to attend Ball State University to major in dance starting this fall, having deferred college for a year for ankle surgery and to explore opportunities like the Civic Theatre’s current production. The Civic Theatre ensemble began rehearsals in January, working on the choreography – which Brantley calls “intricate.” And although making her musical debut on a repaired ankle might sound like a lot of pressure, Brantley is handling it like a seasoned professional. WATERING THE GARDEN - One of the most important tools for efficient watering doesn’t supply water but measures it. A rain gauge shows how much natural precipitation has fallen, so you can tell at a glance if you’re in for a day of watering or relaxation. Place the rain gauge in an open area with no trees or structures overhead. These keep raindrops from entering the gauge, and any water dripping from them after a storm can further skew the reading. Be sure to empty the gauge after each rainfall. -Martha Stewart Living

Choosing the right oil

e all have experienced those last-minute “which oil do I want” situations. It always happens when the oil-change guy is standing there expecting this great epiphany, or when you are low on oil, about to blow your engine and standing in the store aisle gazing cluelessly upon rows and rows of choices. Choosing the right oil for a culinary quest can have the same feeling. Chef Michael Picking the corVlasich rect oil can be very Culinary Explorer scientific. Your choice can help the quality of your meal or turn it into a nice pile of dog food. The following are some hints about oils that might help you understand how to pick the right one. Cooking oils are extracted from plants, nuts and seeds. They can boost flavors, create textures, heighten presentations and catapult a recipe’s desired reaction. Studies

have also verified that cooking and eating with these oils (unsaturated fats) is better than using butter, lard or other animal fats (saturated fats), or the evil hydrogenated oils or trans fats. Olive oil, arguably the most-used oil in the world, is extracted from tree-ripened olives. Extra virgin, virgin, super fine and fine are the most common varieties. All are made using a cold-press method (without heat or chemicals). Canola oil is made from rapeseed. It has a high smoking point and is best for frying. Corn oil comes from the germ of corn kennels. It has a high smoking point and a neutral or bland flavor. It is an all-purpose oil used in most kitchens. Sesame oil is very aromatic, with a distinct flavor and strength depending on its variety (light or dark). The light variety is usually preferred for frying and lighter applications. The dark is made from toasted sesame seeds, producing a strong flavor better suited for sauces and dressings. Peanut oil has a stronger flavor than canola. It is made with a heat press, but it has a slower smoking point than corn oil and does not absorb or transfer flavors easily. Other less popular oils include truffle, walnut, herb and hazelnut. These all have

TRUFFLE FRIES • 2 each Russet potatoes washed and dried • 1 qt. canola oil • Salt and pepper • 1 small bottle truffle oil Preheat Canola oil in a fryer or sauce pot to 375 degrees (only fill the vessel halfway to guard against spills or fire). While the oil is heating, cut potatoes into ¼ inch batons (skin on). Submerge them in cold water and rinse thoroughly, pat dry with a towel, and immediately immerse them into hot oil, one potato at a time. Fry until lightly golden brown. Remove from oil, place on paper towels, lightly salt and pepper, then sparingly drizzle with truffle oil to accent the flavor. Serve immediately.

very robust and distinct flavors used for finishing dishes. They can easily overpower a dish or mild-flavored food ingredient, even certain types of fish and meat. Chef Michael R. DISPATCHES COOL TUNES - What better than a simple, oldfashioned fan to beat the harshness of summer heat? How about a notso-simple, not-so-oldfashioned battery-operated fan with an integrated MP3 player? Now we are talking, aren’t we? The Indoor Outdoor Fan with MP3 Speakers, apparently, cares for your mental as well as physical needs - so you can look cool while the fan is belting out the latest from the Jonas Brothers through its 3-inch speakers. While doing that, you get a very decent 36 hours of battery life, or an even better 72 hours on low power. You can even connect the fan to an AC source when available. A sizable addition to your camping gear at best. Available for around $14. -www.popgadget.net

GOOD FOR GAMERS - What was once generally thought of as noncompatible could play nice in the future thanks to the XCM Cross Fire Adapter. This peripheral – which will be released for the Xbox 360 in due time – will enable PS3 controllers to be used on the Xbox 360 console, and it is also compatible with original Xbox wired and Xbox 360 wired controllers. In addition, this is no mere adapter, as it features an integrated rapid fire/turbo button with force feedback support as well as analog tilt functions. -www.ubergizmo.com

SHUFFLE ADAPTER - Several different sets of earbuds have already cropped up that cater specifically to the new iPod Shuffle (which comes with earbuds not interchangeable with just any others),

but who wants to drop $50 on a new set of earbuds when they’re perfectly happy with the ones they already have? That’s where the inline control adapter kit comes into play. This handy little device plugs into your Shuffle and allows you to use any ordinary pair of headphones or earbuds. You can even use it to plug into the aux input in your car stereo and still control the iPod. 26 porch roof remodel in carmel INITIAL SITUATION: This home in the Prairie View development on the east side of Carmel was built in the late 1990s and included a wood deck and adjacent concrete patio. The homeowners added additional landscaping and enjoyed spending time outside, except the heavy sun from the eastern exposure made it uncomfortable to be outside in the summer months. The homeowners’ idea was to add an open-air porch roof over the existing deck, which would provide shelter from the sun, yet still have an open outdoor feel.

DISPATCHES HSHC GOAL REACHED - The Humane Shelter of Hamilton County exceeded its goal of raising $10,000 by the end of March. Another donor has agreed to match the funds up to the $10,000 goal, so more than $20,000 has been donated to the shelter in the past few months. A special thanks goes out to all who donated during this time, and grateful thanks go to those who will continue to donate throughout the year.

DOWNER LOOPHOLE CLOSED - U.S. Department of Agriculture will close the loophole allowing downers to be used for food. Cattle too sick or injured to walk, or downers, often harbor diseases, including mad cow disease or bovine spongiform encephalopathy (BSE). getting into the holistic groove By John Mikesell Current in Carmel

Remember, supplements are only complements to good food, proper exercise and a happy, healthy environment. Take time every day to evaluate your own habits and behavior and consider how these might affect your pets. Be brave. You might find that by adjusting or eliminating your own bad habits, both you and your dog will be happier and healthier! A great example is exercise. The best way to ensure your dog is getting enough exercise is to take it on long walks (at least an hour) daily. If you do that, chances are you will lose some weight and gain fitness as well! Read household labels. Learn about the ingredients in the foods you eat – what they are and the risks they pose. Ideally, your household products should be so safe that they do not need a signal word on the label at all.

Herbal, homeopathic and energetic remedies are best used in support of what the body is naturally designed to do: heal itself and stay healthy. These alternative or complementary therapies serve to stimulate or support natural body functions,

Deeno is a 9-year-old, neutered male yellow lab. He is full of life, and he doesn’t let the arthritis in his hips get him down. Deeno still loves to go on walks and give wet (not sloppy) kisses. His big, brown freckle-speckled nose is the focus of his wise, graying face. His brown eyes glimmer with endless hope that a home awaits him. Deeno is good with other dogs but does not like cats. And because Deeno has sensitive hips, we recommend he go to a family with older children who won’t be too rough with him.

meaning proper nutrition, exercise and environment must already be in place for these tools to be effective. Always strive to get to the root of your dog’s health issues. Think holistically. Skin problems are seldom skin-deep. Likewise, emotional or behavioral problems often stem from human influences. Don’t be afraid to question authority. Ask your veterinarian about the drugs he or she prescribes. And if you aren’t satisfied with the answers, contact the drug manufacturer or do a Web search before you administer drugs to your dog. At a minimum, you should be familiar with the symptoms of the most common adverse effects before you start your dog on any prescription drug or herbal or natural remedy.

ertain topics inevitably lead to an argument. Religion and politics should be avoided at work and social gatherings. I have also found that it’s best not to talk about your favorites on “American Idol” or “Dancing with the Stars.” But here’s a topic I had not anticipated would cause dissent in my marriage: mayonnaise. Ketchup? Sure, there were always possibilities here for a tiff. You never hear a man say to Dick Wolfsie his wife, “With all Humor that ketchup on your burger, sweetheart, you can’t possibly appreciate the fine texture and flavor of the grain-fed beef.” Women, on the other hand, will say, “If you put ketchup on my Chicken Kiev, I will rip your ruby-red tongue right out of your mouth.” Mustard? Yes, I could see an argument about mustard. Over the years, I have attempted to improve most of my wife’s cooking with a healthy dose of this condiment. What would her Pork Milanese have been without mustard? Uneventful. What would her Beef Bourguignon taste like without a glob of Dijon? I shudder to think. What about that sesame-encrusted salmon without a dollop of you-knowwhat? Yes, Mary Ellen and I have clashed over mustard. But a fight over mayonnaise? Who would have predicted this? It all started one morning last week when Mary Ellen was searching for the sugar in our kitchen cabinets and noticed I had accidentally placed the mayonnaise jar in the cupboard, rather than back in the fridge, the night before. Such absentmindedness is a part of nature. I have found my keys in the freezer and my cell phone in the dryer, but mayonnaise in the cupboard was apparently a capital offense. Without the slightest hesitation, Mary Ellen tossed the jar in the garbage, along with this denouement: “It’s no good. We have to throw it out.” I begged to differ. I just couldn’t accept the product’s ruin in just a few hours. Look, if you can’t fight off bacteria overnight, you’re not worth the preservatives you’re made of. The next day, desperate for a smear on my BLT, I fished the mayonnaise out of the garbage and slathered it on my sandwich, then placed the jar in the fridge. Hours later, my son unknowingly partook, this time making an egg salad sandwich. When Mary Ellen discovered what I had done, she panicked. “Are you trying to wipe out the entire

family?” she bellowed. “Why not just open all the cans with bulging tops and make a nice bouillabaisse for the neighborhood block party?” It was the angriest I had ever seen her, angrier even than when I left the oven on when we went out for a short … vacation. It almost ruined our entire cruise. I picked up the mayonnaise jar and confirmed my wife was correct. It did say “REFRIGERATE AFTER OPENING.” But then my eye caught an 800 number

written on the label, a hotline for people with emergency mayonnaise questions. I didn’t know if I was calling a deli or New Delhi, but I made the call. “Hello, may I help you?” “Yes, I have a question about food poisoning.” “First of all, this is the mayonnaise hotline, not the Mayo Clinic. And, yes, I know what you’re going to ask. I get husbands all day long with this question. Commercial mayonnaise is loaded with

acids that can actually kill bacteria. And the eggs used in prepared mayonnaise are pasteurized. It’s perfectly safe.” “So I shouldn’t throw it out?” “Of course you should throw it out. A man can’t win a mayonnaise argument.” He was right, of course. I didn’t tell Mary Ellen about my phone call. There would have been Hellman’s to pay. Personally, I find it hard to believe Michigan (41st) outranks us. I mean, we still have some factories open. And Missouri (42nd)? I’ve been to places in Missouri where I am pretty sure everyone was named Jethro or Ellie May, and they had the unmitigated temerity to use the word “Hoosier” as a pejorative meaning “hick.” I do find some good news in the survey, through. Number one, it gives us a pretty good road map toward making this state a better place to live. The problem is so many of the people who have that power – those jokers we like to call legislators

come to mind – are constitutionally incapable of consulting a road map, much less pulling over and asking for directions. And keep in mind that the five highest ranked states had scores that weren’t all that far from those on the bottom. And the top states are pretty much no-brainers anyway. Minnesota, in fifth place, has moose, and any place with moose is a good place. Colorado is fourth, with its abundance of scenery and rich people. Coming in third is Wyoming, and – OK, that one I don’t understand. Hawaii is second, which I think warrants a resounding “duh.” And the happiest state in the union is Utah. Of course it is. And if that’s a mystery to you, just consider this: When did you last see a frowning Osmond?
