Our Executive Development Chef Rob Owen, has been integral to the development of this year’s range and concepts. “Christmas is a time that everyone wants their menus to be extra special, but also ensure that each dish is profitable and can be finished consistently by the team. Whether you want to create a menu from scratch or you are pushed for time and need solutions that will cater for this Creed has a number of core products that deliver on both. PULLED TURKEY TIAN INGREDIENTS
Serves 6
2 turkey legs 2 onions 1 red pepper 1 green pepper 1/2 bunch parsley
METHOD Confit the turkey legs and flake into a bowl. Finely dice the onion and peppers and cook in a little oil until soft and allow to cool. Chop the parsley and add all ingredients together and season with salt and pepper. Press into a Tian mould and serve with mixed salad and our Spiced Apricot and Orange Chutney 606032 pg 7.
