The festival formerly known as the Throop Cow Flop has undergone a bit of a generational change. Now rebranded as the Booster Club Blowout and 28th annual Cow Flop, the event will be a one-day affair Saturday, June 25, at the Washington Street Park, Washington and Loftus streets. The festivities begin at noon. A parade steps off at 1 p.m. Singer-songwriter Jay Luke will perform at 2 p.m. Nashville recording artist (and Jermyn native) Dani-elle will perform at 6 p.m. followed by the band Fake Uncle Jack. The actual cow flop will begin around 7 p.m. Fireworks will end the festivities at dusk. Booster Club secretary Kelly Lindemuth said the revamp came as the result of “much input from the community. They were looking to attend something that was that was more familyfriendly and certainly more economical. So giving it another title and linking it to the traditional cow flop seemed like it would get our message through.” The changes reflect a change in leadership at the Booster Club, which exists to support youth athletic activities in the borough, including the Throop Little League. “As the children of members grow up, some members choose to step aside from leadership positions in order to allow those directly involved with the children be more active,” she said. One element that will be different year, Lindemuth said, is the food. “Primarily, we will be preparing the food,” she said, noting that in previous years food was brought in by outside vendors. “That left us unable to have a say in the pricing of items. It became cost prohibitive for some families.” Food items that will be offered include potato pancakes, pizza, steak and cheese, burgers, hot dogs, Texas weiners and pizza fritta.

“In addition to the food, we will also be adding wine sales to our beer tent area. Case Quattro Winery from Peckville will be setting up a tent, offering sales of wine by the glass,” Lindemuth said. Lindemuth noted that more residents are becoming wine enthusiasts, and “we thought we’d answer that call as well,” she said. “Not everyone who wants to go out is a beer drinker. We wanted to appeal to those that had different tastes.” Lindemuth said the kids will notice something new as well: several bounce houses. “An all-day pass to the bounce houses will be $10 per child,” she said. But of course, you can’t improve on the perfection that is the cow flop itself. “It’s still all about the cow flop bingo,” she said. “Squares are still $10 to reserve your spot. In addition to the $5,000 winner, 10 ticket holders will have the chance to win $100 by random drawing. Winners need not be present to win, but they should purchase their tickets soon, as we are rapidly running out.” Tickets are available from any Booster Club board member, team coach or through the “2016

Throop Booster Blowout #cowflop” Facebook page. Some tickets will be available the day of the event. Meanwhile, there are also changes at another town festival this weekend. Blakely/Peckville JuneFest will be held Friday and Saturday, June 24-25, at a new location, Ritz Tech, 1600 Pennsylvania Ave. in Peckville. There will be food, beverages and music beginning at 7 p.m. each night. A firefighter’s parade will step off from Cougar Stadium parking lot at 6:30 p.m. Friday (rain date Saturday). The Tommy Guns Band will play Friday night, and Flashdrive will perform on Saturday. Fireworks will end Saturday’s festivities at dusk. According Blakely Borough Mayor Jeanette Acciare-Mariani, the move to Ritz Tech gives the festival, now in its fourth year, room to grow. “It also means easier parking,” she said. Attendees will find “a block party, friendly atmosphere, our local food vendors, a beer tent — run by Blakely Hose Co. No. 2 — and games and wagon rides for the kids.” “As always, please bring your own chairs on Saturday to watch fireworks,” she added.

Crystal and Andrea Vladika of the Eynon-Archbald Lions Club presented a check to Kathleen Breen, the director of Lions Engagement for LeaderDogs for the Blind at a recent meeting. Breen informed the group that there are more then 46,000 local Lions Clubs and more than 1.4 million members in more than 200 countries around the world. The EynonArchbald Lions Club ranks fifth in the world with providing support to LeaderDogs for the Blind. The annual Snowflake Gala, where most of the funds are raised, has been presented for five years and has donated more than $50,000.

Farmers Market Vouchers for Seniors

Lackawanna County senior citizens once again can participate in the local farmers market voucher program. The county is distributing farmers market nutritional program vouchers at 10 senior community centers. Under the program, each eligible senior can receive up to four $5 vouchers that can be redeemed at participating farmers mar-

kets and farm stands for fresh fruit and produce. The county has 20,000 vouchers available for distribution. Those who qualify are Lackawanna County residents who will be 60 or older by Dec. 31 and whose annual income does not exceed $21,978 for a single person, $29,637 for a couple or $37,296 for a threeperson household. Proof of age in the form of a driver’s license or birth certificate must be provided along with proof of Lackawanna County residency in the form of a utility bill or a driver’s license. Vouchers will be distributed on a firstcome-first-served basis beginning at 9 a.m. at the centers. Seniors unable to visit a site may appoint a proxy to pick up a voucher for them. Proxy forms can be obtained at the Area Agency on Aging, local senior centers or online at lackawannacounty.org. Distribution dates and sites include: Tuesday, July 5, at the Carbondale Senior Center, 66 N. Church St., and Monday, July 11, at the Mid Valley Senior Center, Green Wave Heritage Apartments, 310 Church St., Jessup.

Remove chicken, reserving drippings in skillet. Set chicken aside and keep warm. Cook mushrooms and next seven ingredients in drippings in skillet, stirring constantly, 4 minutes, or until carrots and celery are crisp-tender. Dissolve bouillon cube in hot water; add to vegetable mixture. Stir in tomato sauce and next five ingredients; place chicken on top of sauce. Bring to a boil; cover, reduce heat and simmer 25 minutes or until chicken is done. Cook pasta according to package directions; drain well. Arrange pasta on a serving platter. Spoon sauce over pasta and top with chicken. Serve immediately. Yield: 6 servings.

1 tablespoon fresh parsley, snipped 1 tablespoon chopped pimiento 4 skinless, boneless chicken breast halves Salt and black pepper, to taste 1 teaspoon fine dried bread crumbs 1 tablespoon paprika Preheat oven to 350°. Combine cheese, mushrooms, ¼ cup of the yogurt, chives, parsley and pimiento in a small bowl. Stir well. Place 1 chicken breast half, boned side up, between 2 pieces of plastic wrap. Working from the center to the edges, pound lightly with a meat mallet to 1/8-inch thickness. Remove plastic wrap. Repeat with remaining chicken. Sprinkle lightly with salt and pepper. Spread an equal amount of filling on each chicken breast half. Fold in the sides and roll up. Secure with toothpicks. Arrange rolls, seam side down, in a baking dish with 2-inch sides. In a small bowl, combine bread crumbs and paprika. Brush chicken with 1 tablespoon yogurt, then sprinkle with crumb mixture. Bake until chicken is tender and juices run clear when a piece is pierced, 25 to 30 minutes. Serve immediately. Yield: 4 servings.

Zesty Baked Hot Dogs 3/4 cup chopped onion 3 tablespoons margarine 1-1/2 cups celery, chopped 1-1/2 cups ketchup 3/4 cup water 3 tablespoons vinegar 1 tablespoon spicy-brown mustard 1/3 cup fresh lemon juice 1 tablespoon sugar 1 tablespoon Worcestershire sauce 2 (1-pound) package beef or turkey hot dogs 20 hot dog buns, split and toasted In saucepan over medium heat, sauté onion in margarine until tender. Add the Chicken-Cheese Rolls next 8 ingredients; bring to boil. Reduce 1/2 cup low-fat mozzarella cheese, heat; cover and simmer for a half hour. shredded Cut 3 (1/4-inch) slits on each side of hot 1 (2-1/2-ounce) jar sliced mushrooms, dogs; place in a 2-1/2-quart baking dish. drained Pour sauce over hot dogs. Deluxe Bacon Cheeseburgers 2 pounds lean ground beef 1/4 cup green pepper, diced 1/4 cup scallions, sliced 1/2 cup mushrooms, sliced 2 cloves garlic, crushed Salt, black pepper, basil (optional) 1 tablespoon butter or margarine 1 tomato, peeled, seeded and chopped 2/3 cup shredded Swiss, Cheddar or other cheese (optional) 8 strips bacon, room temperature Make 8 very large, flat patties from beef. Season with salt and pepper, if desired. Sauté next five ingredients in butter. Season as desired. Place 1 tablespoon vegetable mixture and small amount of tomato and cheese, if using, on four of the patties. Top each with one of remaining patties and crimp edges together; press together so they form a flattened ball. Wrap two strips bacon in an “X” around each burger; secure with toothpicks or small skewers. Grill far from coals for about 40 minutes. Yield: 8 burgers. Summer Vegetable Paella 1 teaspoon olive oil 3 cups broccoli florets 2 zucchini, sliced on the diagonal 1 tomato, diced 2 nectarines, pitted and sliced Heat oil over high heat in a large nonstick skillet. Add broccoli and zucchini and cook, stirring often, for 5 to 7 minutes. Add tomato and nectarines, cover, lower heat to medium, and cook until vegetables are crisp-tender, about 5 minutes longer. Yield: 6 servings. Sweet Potatoes with Banana 1 (18-ounce) can vacuum-packed sweet potatoes 1 large banana 1/2 cup packed brown sugar 2 tablespoons margarine or butter, softened 2 tablespoons reserved pineapple syrup or corn syrup 1/8 teaspoon salt Shape aluminum foil into a broiler pan, 10-by-7-by-1-1/2 inches. Place foil pan on broiler rack and broil 3 inches from heat until potatoes are hot, 5 to 8 minutes. Yield: 4 servings.

Angel Food Cake (Delicious topped with chocolate sauce or fresh fruit.) 1 dozen egg whites (1-1/2-cups) 1-1/2 cups sifted powdered sugar 1 cup sifted cake flour 1-1/2 teaspoons cream of tartar Dash salt 1 cup sugar 1-1/2 teaspoons vanilla 1/2 teaspoon almond flavoring Egg whites must stand at room temperature for at least one-half hour. Sift together powdered sugar and cake flour; set aside. Beat egg whites, cream of tartar and salt until foamy in a large mixing bowl. Gradually add sugar, a little at a time, beating on high speed until stiff peaks form. Immediately beat in vanilla and almond flavorings. Sprinkle flour-sugar mixture, 1/4 cup at a time over beaten egg whites, folding gently, only until flour-sugar mixture disappears. Spoon batter into an ungreased 10-inch tube pan. Gently cut through batter with a knife or spatula to remove air pockets. Bake at 350° for 30 to 35 minutes, or until top springs back when touched lightly with your finger. Invert cake in pan on a funnel; let cake cool completely. Remove cake from top of funnel, set cake right side up on serving platter. Loosen sides of cake with a narrow spatula or knife and remove from pan. Add your favorite topping. Yield 12 servings.
