Cooking in slow motion By Megan Haggan IN winter, we crave old-fashioned home cooking, “the type of food that warms you from the inside,” says Perry Rabin, director at cookware manufacturer Tomkin Australia. “Canberra winters are longer and colder than most in Australia, and the closeness of the snowfields conjures up fantasies of a hot meal in front of an open fire – the height of comfort!” he told “CityNews”. “Cold weather keeps you inside rather than going out to dine. Hearty comfort food takes time, and since you are at home for longer periods in winter, you are more likely to invest the time in cooking this style of food.” Using slow cookers is a European style of cuisine, which is fast catching on in Australia, Perry says, and it’s ideal for wintry evenings. “A slow-cooked meal demands a high-quality baking dish or pan that can also be transferred from the oven to the stovetop and vice versa.” More winter essentials include casserole pots, for soups and stews; a roast pan and rack and a paella pan for risottos – the lid’s important, he says, for keeping the flavours in.
