The Mayoress and I are very much looking forward to attending this 9-day multi-cultural event in support of the Lunar Fiesta Project and hope to attend as many events as possible during this period. Why Phoenix? Phoenix (pronounced as “Feng Huang” in Chinese Mandarin, 凤凰) is the mythological bird of East Asia that reign over all other birds. The males were originally called “Feng” and the females “Huang” but such a distinction of gender is often no longer made and they are blurred into a single feminine entity so that the bird can be paired with the Chinese dragon, which is traditionally deemed male. In the ancient Malay history of the Philippines, the bird is referred to as “Adarna”. Traditionally, the phoenix has a very positive connotation as the symbol of high virtue and grace, as well as the union of “Yin”(阴)and “Yang”(阳) (The Balance of Universe). According to the 1st Chapter of “Shan Hai Jing” (山海经)(The Chinese Classic Text), the head of phoenix represents virtue, the wing represents duty, the back represents propriety, the abdomen says credibility and the chest represents mercy. Phoenix is also the “August Rooster” (pronounced as “Kun Ji” in Chinese Mandarin,鹍鸡), since it sometimes takes the place of the Rooster in the Chinese Zodiac. As we are approaching 2017 Lunar New Year (begins on the 28 January, 2017), it is the rising of fire phoenix according to the Chinese Zodiac Calendar, which is forecast to be a year with the blend of righteousness and justice, bombast and logistical efficiency. ARTIST FROM FUJIAN, CHINA

Huirong Zhang, born in Fuzhou City, China has graduated from the Faculty of Fine Arts in Fujian Education College, Mastering Gongbi Portrait Silk Painting in the Capital University. She is also currently a member of China Traditional Chinese Painting Association, Fujian Art Association, and Beijing Gongbi Recreation Association. She has participated in various international art exhibitions in China and the United States, being awarded as the Top 10 international Traditional Chinese Painting Artist by the 38th New York Art Expo. EXHIBITION OF RECREATED CHINESE ART FROM THE TANG & SONG DYNASTIES

Using traditional methods of Chinese Gongbi (Fine Brush) silk painting, Huirong Zhang has recreated some of the most iconic paintings of the Tang (618-906) and Song (960 – 1279) Dynasties when the Chinese arts were ourishing during a period of peace and prosperity and developing trade and cultural contacts along the Silk Road. The paintings will include depictions of Court ladies at their leisure, with stunning details of their hair and costumes as well as stunning landscapes on scrolls stretching to 6 metres long. In partnership with the Wisdom (Zhihui) Foundation and Bournemouth Chinese School, an exhibition of meticulously recreated masterpieces of the Tang and Song Dynasties opens at the Russell-Cotes Art Gallery & Museum from 31 January to 12 February 2017 in celebration of the Chinese Lunar New Year.

Taste the curry across cultures

Not just the aroma, taste and presentation, but also the story and value behind each and every curry dish. Why is this unique to their culture? Any special story behind the curry dish? -- This is the core objective of ‘Multicultural Curry Contest, to retrace the food heritage and embrace the cultural practice. It will be a wonderful and fun food heritage trail during the lunar new year celebration. EXHIBITION OF MULTICULTURAL FOOD HERITAGE TRAIL

Collaborated between the Wisdom (Zhihui) Foundation, Bournemouth Chinese School, and Unity in Vision, all the stories captured from the 15 participants will be translated into an exhibition gallery from 29 January to 5 February 2017 (Sunday to Sunday) at the Boscombe Riviera Basement Bar.

Romana is a local business lady and an interpreter from Christchurch. She is also a mother of two children and a volunteer in her spare time with the Unity in Vision executive committee. Nevertheless, an active member with the local interfaith and SACRE groups. SYLHETI STYLED SHAT-H-KARA LAMB CURRY This curry is cooked with the vegetable that only grows in Sylheti region of Bangladesh - Citrus Macroptera. Also, with the secret recipe from her grandparents. EAST AFRICA

From Bournemouth, Anisa is a mother and a teaching assistant who works with children who have special needs during the week. She is also a local scouts leader of a group that operates from the BICCM. As well, a member of Unity in Vision. KIDNEY BEAN CURRY Using a traditional blend of East African flavours, Anisa uses a little less green chilli to make it child friendly and of course being a vegetarian dish it's a healthy option. Sultana is a mother of three little darlings. She work as a senior Enforcement officer at Poole magistrates court. LAMB AND MOONG DHAL CURRY Cooked with a blend of authentic bangali flavours finished off with a thick creamy moong dhal (mung lentil) sauce...one to tickle your taste buds for sure. Deepak has a lifelong interest in most forms of authentic traditional Nepali cookery. He is also a model and has interests in fashion; an expert in traditional and popular Nepali dance, recently performing for the Unity in Vision 'International Mens Day' programme at Poole Civic Centre.

Sahar Ismail

EGYPT / SUDAN

Originally from an Egyptian family who settled on The Sudan , in Bournemouth since 2010 with her family. Sahar is the mother of three kids, also a teacher by training. She is volunteering with Unity in Vision, local scouts group as a scouts leader and BICCM with children on Saturday and Sunday schools. FOOOL (TRADITIONAL FAVA BEAN) CURRY Sahar loves to explore new cuisines and experiment to develop her own dishes. The popular bean dish in the Egypt and Sudan is transformed with a curry recipe, garnished with spring onions and fresh coriander. PARTICIPANT 6:

Farhana Patel

Farhana enjoys keeping ďŹ t and from her travels, she likes to infuse spices and tastes from around the world. She has her own combination when cooking this dish from Caribbean meets Indian. She is also a volunteer at a the BICCM on Sunday's working with young children. PEPPERED LAMB CURRY The Asian and Afro Caribbean communities were and are still very close. When travelling around the Caribbean I tried the local jerk seasoning and when I returned I infused those spices into my dishes, together with the spices I use from my Indian background.

Originally from Indonesia she lives in Bournemouth but before that she lived for short periods in the Philippines, Scotland, South Africa, Botswana, Albania, Abu Dhabi, Granada and Jamaica. She trained as a secretary in Indonesia before marrying a British gentleman. SPECIAL INDONESIAN VEGETARIAN TAUFU CURRY This is special dish in Indonesia because taufu is very popular in Indonesia and most of Indonesian love taufu... PAKISTAN

Currently she is now a busy housewife but would like to go back into care work in the near future, because she enjoys caring for those who need it most. Her husband is from Pakistan, which has brought her into another beautiful culture. LAMB KARAHI This dish is full of rich flavours with a hint of spice to give it some heat. “It was the first time I saw this dish cooked by my brother in law.” So from then, she has enjoyed making this dish and also creating her own take on it. Neetu Aggarwal

Neetu is the member of Unity in Vision. Recently moved to Poole from Dorchester. She is the mother of two girls. Housework and her girls keep her very busy, but she would like to go for part time work in the near future. Originally from India, from a Hindu/Sikh family, she has lived in Dorset for more than 10 years. INDIAN VEGETARIAN PILAU RICE Made with peas, paneer, onions and potatoes and whole lot of dry spices - “This is my mother's recipe which I have always enjoyed and now my girls love it”. Hafsa and Romaana are a mother and daughter team and would like to introduce a Burmese chicken curry known as 'Kuwsi'. KUWSI The main ingredients are chilli and garlic for taste and coconut for texture. The dish is made to a traditional Burmese recipe from grandmother/great grandmother who lived her life in Mandalay, the second largest city and last royal capital of Burma (Myanmar). PARTICIPANT 11:

THAILAND

Noom is from Thailand. He has been living in the UK for 17 years as a chef, also the founder of Sunrise Bubble Tea & Smoothies (Available at the Lunar Fiesta Boscombe Market from 03-05 February 2017). THAI GREEN CURRY CHICKEN Thai Green Curry derives from the colour of it which comes from green chilies. It is based on coconut milk and fresh green chilies. It was invented around a century ago in Thailand and has become one of the most popular dishes in Thailand. PARTICIPANT 12:

Peter is the owner of 'Chick King' - the oldest chip shop in Southbourne. His family have been serving the customers and friends in the local for over 50 years. ENGLISH CHIP SHOP CURRY SAUCE A signature dish and loved by friends and family “Our customers come from all generations and from all over the country to enjoy our signature dish”. Our curry sauce is based on our family secret ingredient and is made with passion. This is one of the English Chip Shops classic ‘must have’ dishes with chips.

CURRIED BERKOUKES Berkoukes is a spicy Algerian dish with “Rass el hanout” spice. Rass el hanout is a complex spice blend from North Africa. It plays a similar role as Garam masala does in Indian cuisine. It is consumed during the winter and mainly in January to celebrate the wealth of the Algerian harvest of beans and meats. It is a dish of rich wealth, comfort and generosity. PARTICIPANT 14:

Malik

PAKISTAN

Malik is a local businessman from Pakistan and is passionate about cooking. He is a father of four and loves cooking for his family. LAHORE CHIKAR CHOLAY Chikar Cholay, is a popular street food from Lahore. It is a thick curry made from blended chickpeas. Malik used to cook this curry for his family served with naan or khamiri roti (leavened bread). PARTICIPANT 15:

PAKISTAN

Laila is a mother of two, also a homemaker. She has been living in the UK for 13 years. She likes reading, travelling and do creative writing in her spare moments. Originally from Pakistan CHICKEN CURRY

A typical Pakistani curry consists of chicken, stewed in an onion and tomato based sauce, flavoured with finger, garlic, tomato puree, chilli and a variety of spices including turmeric, cumin, coriander, cinnamon and cardamom. Unity in Vision Unity in Vision (UinV), is a voluntary organisation that operates across Bournemouth, Dorset and Poole. It has been running for 10 years, with the main objective to unite people from diverse cultures to work cooperatively to benefit the communities directly in its area of operation. 15 TH DAY OF CEL EBRATIO N The fifteenth day of the new year is celebrated as "Yuanxiao Festival" (simplified Chinese: 元宵节; pinyin: Yuán xiāo jié), also known as "Shangyuan Festival" (simplified Chinese: 上元节; pinyin: Shàng yuán jié) or the Lantern Festival (otherwise known as Chap Goh Mei Chinese: 十五暝; pinyin: Shíwǔmíng; literally: "the fifteen night" in Fujian dialect). Rice dumplings tangyuan (simplified Chinese: 汤圆; pinyin: tang yuán), a sweet glutinous rice ball brewed in a soup, are eaten this day. Candles are lit outside houses as a way to guide wayward spirits home. This day is celebrated as the Lantern Festival, and families walk the street carrying lighted lanterns. In China, Malaysia and Singapore, this day is celebrated by individuals seeking for a romantic partner, akin to Valentine's Day. Normally, single women would write their contact number on mandarin oranges and throw it in a river or a lake while single men would collect them and eat the oranges. The taste is an indication of their possible love: sweet represents a good fate while sour represents a bad fate. This day often marks the end of the Chinese Lunar New Year festivities.
