The Washington State Department of Commerce in partnership with the Department of Children Youth and Families earlier this year awarded $17.2 million in grants to support learning facilities in the state — $225,000 of which went to the Bethel Kids Learning Center in Chehalis to assist with the building of an 3,500 square foot addition next to the center to house three new preschool classrooms, a children bathroom, employee bathroom, laundry room, and a small office space. The Bethel Kids Learning Center, open from 6:30 a.m. to 6 p.m., is a part of Bethel Church in Chehalis and has been accepting children birth to 12 years old since October of 2017. There were 350 kids on the waiting list ealier this year. “It’s been making a huge difference in the community and I can’t wait to see how much more we can do once we add all those rooms,” said DeeDee Judd, director of the Bethel Kids Learning Center.

Lighted Tractor Parade Wins Outstanding Promotional Event Award From State Centralia’s Lighted Tractor Parade received the Washington State Main Street Program’s Outstanding Promotional Event Award this year during a virtual ceremony. The Excellence on Main Awards recognize communities, individuals, and organizations that are helping to achieve economic vitality and build sustainable communities through downtown preservation and revitalization, stated a press release from the Washington State Main Street Program. “The Lighted Tractor Parade is the kind of event where families, couples, and friends create treasured holiday memories,” said Breanne Durham, Washington Main Street Director. “Bringing people downtown

is a mainstay of revitalization work, but what makes Centralia’s Lighted Tractor Parade outstanding is that it draws visitors and locals alike with an authentic and community-centered celebration.” The lighted tractor parade, held the second Saturday in December, is a way to pay homage to Lewis County’s agriculture roots and brings people together in downtown Centralia during the holiday season, Centralia Downtown Association (CDA) Executive Director Terri Zambon said. The event began in 2010 with a total of seven entries. Nowadays, the CDA must cap the entries at 90 while others join the waiting list. The parade is usually attended by over 15,000 people.

Community Responds to Benny’s Offer of Free Flowers In March, Benny’s Florist made good on an offer to place free flowers on the sidewalk in front of the Chehalis business for community members to pick up and take home. The business first made the offer on Facebook: “Let’s spread some cheer tomorrow ... As you know with everything going on business has been a little slow this week. That being said we have a overflow of flowers ... We will fill the sidewalk with beautiful cut bouquets for our customers to have for free. Please

swing by and get some flowers for yourself or to spread some cheer to someone else. We would hate to see all the flowers go to waste ... We just want to ask that each person only take one bouquet each. We want to cheer up as many people as possible! Thanks so much to all our wonderful customers over years and for your continued support of our local business.” After the post spread far and wide on Facebook, dozens turned out to pick up the flowers.

Judy’s Country Kitchen a Local Favorite Judy McCann was a waitress for six years at what used to be RJ’s diner at 3210 Galvin Rd., before asking the owner if they were interested in selling. Turns out, they were. So in 2006, McCann changed the name to Judy’s Country Kitchen and opened for business under the new name. “I always wanted to have a little restaurant and here I am,” McCann

said previously. Judy’s Country Kitchen grew to become a local favorite, known for its down-home country-style breakfast and lunches with gargantuan servings. Bill and Bea’s Drive In Thriving, Not Surviving, During Viral Pandemic Tradition is what’s carried Bill and Bea’s Drive In for the past 22 years that Jill and Denny Greene have owned the longtime burger joint on Harrison Avenue in Centralia. But it’s the drivethrough window that’s kept it going strong despite the global coronavirus pandemic. As many restaurants statewide, and even nationwide, are reeling from a lack of customers, mostly due to inhouse dining restrictions, Bill and Bea’s is doing better than ever for this time of the year. May through August is usually peak time for the restaurant, but the month of April ended up looking like summer at Bill and Bea’s. The Greenes can thank their double drive-through windows for that. The

restaurant seats 20 inside, but with dining rooms closed, customers have begun flocking to drive-throughs. “Busy. Real busy,” Jill said. “It’s just crazy right now because there’s not sitdown restaurants. That’s what’s saved us; having the drive-through windows. Sometimes you’ve got cars lined up at those windows.” It was an unexpected surprise for Jill, who was concerned that business would take a nose-dive. So much that she laid off one of her workers in anticipation for the lack of business. That employee was quickly re-hired when it became apparent that business was going the opposite direction. Up. The restaurant has been operating with a full crew of 10 ever since.

“It just amazed me at first at how busy it was,” Jill said. “I was worried. Once that shutdown happened, we just all of a sudden got busy.” She thinks being a burger and fries joint has also helped business these past six weeks as they usually keep better on the car ride home rather than a steak or other sit-down meal. It’s a winning combination that’s propelled the restaurant for years, however, not just recently.

Jill began working at Bill and Bea’s 51 years ago back in 1969 as a waitress when she was 16 years old, back when the founders, Bill and Bea, still owned it. It was her first job. Nearly 30 years later in 1998, she and Denny bought the restaurant from the previous owners, becoming the fourth owners of the business. Jill has also worked for the state up in Olympia for three years and drove down to Centralia on the weekends to help out at the restaurant. The timing was just right to buy it, she said. Her kids were basically raised at that point as her youngest was 15 years old and her oldest was 21 years old. Nearly everything is the same as it was when she began working there 51 years ago. It has the same three-foot grill and the same sized deep fryers.

“We’ve basically kept it the same over the years,” Jill said. “We make the burgers the same way.” The hamburgers are made fresh daily with hand-pounded ground beef, cooked the same way as Bill and Bea used to. The menu has expanded a bit, as well, to include salads and fresh fruit in their milkshakes. One of the few differences is they don’t have fresh french fries anymore due to a lack of space to prepare them. Greene used to buy them from a local man in town until he quit making them, so she switched to frozen fries. But customers can still enjoy the same type of burger that was served in the same location back in the 1960s. “That’s part of the charm of it, I guess,” Jill said. “People like those old-time burgers on the grill cooked like that, the thin patties instead of the pub-like burgers. They seem to like it, so no sense in changing it when it works.”

Tom Atkins started out in Tenino with a small barbecue pit and a table in 2010. It only took a year before Big T BBQ had outgrown its humble beginnings and moved to its current location at 2318 N. Pearl St. in north Centralia. Atkins had worked at the Ceramic Tile Center for 28 years, until 2010 when the construction industry plummeted. He had a barbecue pit, so he set it up on that corner in Tenino and started selling pulled pork sandwiches and a bag of chips for $5. A year later, someone approached Atkins about buying the diner, which was previously Mr J’s, a burger and espresso shop. Atkins needed to expand and the diner was the perfect size, so he and his wife, Rose Atkins, struck a deal. Big T’s

What kept Atkins and his wife going, despite doubts whether they had it in them to keep the restaurant going, was the simple fact that they’re not quitters, Atkins said. They had too much pride and ultimately didn’t want to fold that easily. People kept stopping by and saying it was the best barbecue around, which fueled them. “You get those affirmations and you can’t just walk away from something like that,” Atkins said. Around that time, the Centralia Steam-Electric Plant was bringing in several contractors from around the country, including many from the south who were no strangers to quality barbecue. It didn’t take long before they were all lunch regulars. “They’d come in for lunch and say, ‘Man, this is the best barbecue I’ve had since I’ve been back home,’” Atkins said. “You hear stuff

like that from the southern boys and it makes you feel good about what you do.” Big T’s style of barbecue is a little bit of Texas, a smidgen of Kansas City and mix of all kinds of styles. It’s become their own style, a Pacific Northwest blend, created mostly by Rose’s homemade seasonings and rubs. It’s born from hours upon hours of watching Food Network barbecue shows and researching different techniques. Tom said they’re one of the first places in Washington state to offer a smoked meatloaf sandwich. Rose always owns and runs a preschool and daycare in Tenino, on top of preparing all the rubs and seasonings each day. “It’s not easy being two business owners,” Atkins said. “But she loves the kids, and she’s got a lot of perseverance, too, so between us, we just keep on plugging away.” Big T BBQ has managed to keep

a steady stream of customers, even with the novel coronavirus outbreak. Atkins’ selling point has been top-notch quality barbecue with affordable prices. They’ve been able to keep their full menu through all this, as well. “We’ve got an amazing community that comes out and supports this,” Atkins said. Even though business has been booming for Atkins, he feels for the local small restaurant owners in the area who are struggling to stay afloat. Many of which don’t have a drive-through window, like Big Ts, or have shut down temporarily until in-house dining restrictions are lifted. Tom and Rose have done their best to provide help whenever and wherever possible. They worked with a group that was feeding the homeless for a while. The Centralia Police needed a new K9 about six

months ago and were putting on a fundraiser to pay for it. Big Ts donated a huge spread of barbecue to help generate money. Even recently, Tom and Rose received a call from the local 911 dispatchers who were wanting to feed their crew. So Tom and Rose stepped up and provided them some free meals. “It’s not just about us, it’s about the community, it’s about the other people in town,” Atkins said. “Whatever it takes to help others.” Big T BBQ is open six days a week, from 10 a.m. to 8 p.m., Tuesday through Saturday, and from 10 a.m. to 7 p.m. on Sundays. It was open seven days a week before the coronavirus, but Atkins and his crew needed at least one day off each week with so many orders coming in lately. Atkins expects to open back up daily as soon as the statewide in-dining restrictions are lifted.

Scatter Creek Winery Has Been in Business Since 2005 Tucked along the quaint main street in Tenino is a friendly place “where everybody knows your name” called Scatter Creek Winery and Brewing. The owners, Terril and Andrea Keary, want all their guests and wine club members to feel like family. The welcoming smiles were wide on a day last year as several longtime customers came to purchase gifts and taste any one of the 15 varieties of wine or a glass of home-brewed beer on tap. The Kearys opened their winery in 2005 and began brewing beer in 2017. “It was quite a lengthy process to get our license to begin brewing beer, but we felt it was important to offer both. Some friends and spouses of our customers don’t drink wine, and we wanted to make our business a place for everyone,” said Andrea. Sourcing for both grapes, fruit and hops from Washington vineyards

and farms, Scatter Creek prides itself on buying as local as possible. Terril purchases freshly destemmed and pressed grapes. He buys chardonnay, cabernet sauvignon, merlot and others from vineyards in Yakima. In addition, his fruit wines are all based on grapes with different fruits free pressed on top. Much of the winery’s business comes from its wine club members. There are various levels of participation that affect the pricing of their wines. Andrea enjoys offering “Sip and Shop” events where local crafts people and small businesses can hold events. The winery hosts several large events per year, including a murder mystery dinner theatre. There is a large room upstairs that can be rented, and guests cater events with food from local restaurants.

Avenue Espresso Creates Career Opportunities For Employees Bob Thompson’s dream of opening an espresso stand was always in the back of his mind, it just took him a bit longer to reach it than he had originally planned. Thompson, owner of Avenue Espresso, nearly went into the espresso business straight out of graduating from the University of Washington in 1988. One of his friends from business school ran the Espresso Romas, which was one of the original coffee shops on University Way near the campus. They talked about opening their own coffee shop. Had a business plan, figuring out how to raise enough money to do it. Then his friend got an offer from an investment bank in San Francisco for $90,000 a year and left to go take that opportunity. So Thompson put his plan on the backburner and went to go work overseas in Australia for a while. When he returned to the U.S. he decided he’d finally open an espresso stand. His first

location opened in winter 1997 on 93rd Avenue in Tumwater. Thompson had grown up working in a lumber yard with building materials, so he had a fair bit of management experience at that time. He hired an experienced coffee stand manager, Linda Larsen, who still works for him, to help take over that aspect of the business. “She had a lot of hands-on coffeemaking experience,” Thompson said. “And I had the experience for building out the locations and I did all the books and financial management.” It was originally called 93rd Avenue Espresso to reflect the location. Thompson shortened it to Avenue Espresso when he opened his second stand in Grand Mound. Now Thompson owns nine locations along the Interstate 5 corridor, including four in Lewis County; three in Chehalis and one in Centralia. The first Lewis County

it was a necessary expansion. Larsen, who manages the employees, needed to be able to give more opportunities to the baristas. They would reach a certain point and plateau. The next logical jump for them after being one of the leads at a location is managing one of the stands. So Thompson kept finding new locations because he had so many employees who would make new managers. Most of the younger baristas are part-time and come-and-go, but all the managers are full-time and have healthcare. “We can kind of keep moving people up and retain them and give them a career, rather than just a job,” Thompson said. “That was our philosophy.” He also encourages his managers about investing in a house and setting down roots. Avenue Espresso uses Batdorf and Bronson Coffee Roasters beans, based out of Olympia. While Starbucks uses a heavy, dark, Italian roast, Batdorf and Bronson has more of an earthy, woody taste to it, he said. “It’s got a really interesting flavor profile,” Thompson said. “It’s very

different from Starbucks or others out there.” Avenue Espresso doesn’t really have any specific popular items. Everyone has their own preferences and little nuances with what kind of coffee they order, Thompson said. Being a barista is like being a bartender, only with coffee rather than alcohol. Catering to their customers specific orders is where Avenue Espresso excels, Thompson said. “Our gals get really good at knowing the customer, what their drink is, the way they like it and making it very consistent across the board,” Thompson said. “And sometimes the drink doesn’t match the person. You’ll get this exlogger that comes in in a jacked up 4-by4 with a raspy voice and he’ll ask for a 16-ounce mocha with a hint of vanilla. I’m like, ‘Wow, I wouldn’t expect that drink from you.’” Thompson said he’s grateful for all the support Lewis County has given his coffee stands over the years, which included events like the dot-com stock market bubble in the late 1990s, the Great Recession in 2008 and, of course, the current novel coronavirus pandemic. “I just want to say thank you to all the people out there that have enjoyed our coffee and supported us,” Thompson said. “We’re trying to be as careful as we can for our baristas and customers to be safe. We don’t want one of our baristas to get sick and pass something through the window. We’re ultra-safe with personal equipment and sneeze guards up to try and protect everyone.”

Grand Opening Ceremonies at Recreation Park and Penny Playground Postponed The grand opening of Chehalis’ Recreation Park and Penny Playground has been postponed until the city is able to invite the entire community, as the county is currently in phase 3 and cannot allow more than 50 people at the park at a time. “We decided that we’re going to hold off on that grand opening celebrating until we can do it right. We would love you to have a ribboncutting ceremony for the playground as well but we are looking at the same restrictions — 50 people or less and we have a sign with 400 donors on it,” said Lilly Wall, Chehalis’ recreation manager, in July. After years of planning, the city broke ground on the nearly $4 million park project in August of 2019, according to past Chronicle reporting. Some of the improvements to the park include the installation of turf on the four ballfields, replacement of the

roughly 25-year-old Penny Playground equipment, installation of all-weather walkways through the park and many other improvement projects. There are four baseball fields at Recreation Park that are ready to be used. The city had planned to open the whole park up when Lewis County entered phase 4 but as cases of COVID-19 rise in the county there is more uncertainty around when that will occur. Another challenge of opening up the ballfields is filing for tournaments, since teams from counties that are still in phase 1 or phase 2 cannot play in Lewis County, which is currently in phase 3. The ability to hold tournaments at Recreation Park and the resulting increase in tourism revenue was one of the factors that went into the decision to renovate the park and ballfields, according to the Chehalis Foundation website. “A lot of the teams that would like

Dapper Games: Chehalis Shop Flourishes From Game-Inspired Friendship Editor’s Note: This story was first published in May 2019. When three friends were brought together by Magic: The Gathering, it wasn’t long before they decided to create a new space for gamers in Lewis County. In July, 2018, owners Skyler Templeton, Davyn Reed and Ian Richards opened Dapper Games in Chehalis, a game shop selling card games, board games, miniatures and more. They really wanted the shop to be whatever their customers wanted it to be, Templeton said. “I just wanted a nice place that people could come and play and enjoy themselves … even if they just wanted to come in, sit down, hang out, maybe play a game of pool,” Richards said. Though the shop sells games, it’s also a space for people to hang out, play games or challenge one of the owners to a game of pool. The shop offers more than 100 board games for visitors to

play, many of which are also available for purchase. Magic: The Gathering is their most popular seller, representing almost 80 percent of the shop’s sales, Richards said. Magic is a card game made by a company based out of Seattle. “What draws people to local game stores is the events and the promos you get give out,” Templeton said. “A lot of game stores are focused on variety rather than doing one specific thing different or special.” Dapper Games hosts weekly tournaments on Fridays and Saturdays, drawing game players of all ages and experience levels. The surrounding businesses and community are very welcoming, so the shop tries to give back as much as they can, Templeton said. One of the walls of the shop is covered by a Magic-themed mural painted by local artist Thomas Sutley. The shop also recommends Sutley to players who are looking to customize their cards so that Sutley can paint and personalize them. Oddball Creations is another business Dapper Games works with that provides 3D printed game pieces. Templeton said they have customers come in all the time who have no gaming experience, but they work with what the customer knows to find games that they will like. The shop is trying to promote more family-oriented game nights to provide a place for entertainment that’s not super expensive, Reed said. There is also a room available to rent for events, like birthday parties. “We built a lot of what we have structure-wise off of criticism,” Templeton said. “It’s been nice hearing feedback from the community and being able to adapt and answer to it and then see the rewards of, ‘Oh yeah, this is way better.’”

For the eighth year, Sunbird Shopping Center last year donated $5 from every sale of a pair of Georgia Boots to the Lewis County Food Bank Coalition in Chehalis. The result in both communities is much-needed sustenance for those who struggle to afford food. “We push it very hard,” said Ron Sturza, one of the owners of Sunbird Shopping Centers. “We have a good partner in Georgia Boot.” Sturza is proponent of the “reliable, durable” Georgia Boot products, particularly the Romeo shoes.

Hobe and Shoni Pannkuk Power The Man Cave Outfitters in Downtown Centralia You truly never know until you ask. In this case, had The Man Cave Outfitters co-owner Shoni Pannkuk not asked for such a substantial loan, the Chehalis Tribal Loan Fund may not have given it. On Jan. 17, the CTLF presented The Man Cave Outfitters co-owners Shoni and Hobe Pannkuk with a loan for $250,000, the largest amount the fund has ever lent to a small business. “They didn’t have minimums or maximums and I’m a tribal member, so I asked (for the amount),” Shoni Pannkuk said. “We had already been in business and this was really just to expand, so I thought it was enough to show them, you know, we’ve already established financial information and we’ve already shown

that we’re successful, we’ve been doing it, here, in a brick and mortar store, for a year now. So, we asked, and they didn’t say ‘no.’” Shoni and Hobe plan on using the money to expand their current building. The retail space is slated to stay where it is, while the storage room is to be repurposed into space for classrooms. The plans also feature an indoor shooting range, which will sit where the building’s four parking spaces are currently. The range will be open to the public. The Pannkuks projected in January that the renovations would take six months. “There is no public indoor shooting ranges in this area,” Hobe Pannkuk

They reopened the beloved establishment earlier this year and have been adding to their offerings frequently.
