et the games begin! It looks like plans are moving fore-ward with the new driving range near Short Pump. If you like puttering around the house, you are going to love this golfing experience. Just a short drive (yes, drive, there I said it) from Short Pump Towne Center, Drive Shack will bring an upscale driving range and entertainment center to the Goochland area, off West Broad Street. The nearly $25 million project is in the developmental stages and has received rezoning approval from Goochland authorities. The proposed sports center will boast a three-tier driving range with 90 golf bays permitting multiplayer interaction, which will allow guests “to have fun and enjoy themselves,” according to Sara Yakin, COO of the New York-based Drive Shack. “It will be a new, exciting venture that will offer year-round entertainment and dining.” A center point of the facility will be a restaurant, offering burgers, wings, flatbreads, salads and appetizers. “We are taking the food and kicking it up a notch,” says Yakin, adding that the menu features “comfort food done well!”

The restaurant plans to offer weekend brunch in hopes of extending it to seven days a week, depending on the response. Drive Shack will also include a lounge as well as space for meetings and events. The 60,000-square-foot facility will also be equipped with a 175-foot-high fenced netting to catch golf balls, and there will be plenty of parking spaces to accommodate the projected influx of golf and game enthusiasts. There also will be a shop, featuring golfing-related merchandise, and golf clubs will be available for customers to use, with options to upgrade to premium golf equipment. With an expected 350,000 to 400,000 visitors a year, the job opportunities that Drive Shack will provide are expected to have a positive impact on the Richmond and Goochland areas. Yakin anticipates hiring about 350 people to fill positions such as managers, receptionists, sales staff, servers for the dining area, the terrace and the bays, as well as event planners for the meeting spaces. Drive Shack’s first facility in Orlando, Florida is scheduled to open in February of 2018. Goochland is the site of their second. Drive Shack’s real estate development team loved Richmond, according to Yakin. When choosing the Richmond area, she says that they factored in population, the number of corporations and the overall marketability in the decision. The Goochland location is set to open in the third quarter of 2018. A third site is slated for Raleigh, North Carolina, as they “plan to further expand their brand,” Yakin adds. “We are so excited to build near Richmond, Virginia and join the community there.” We are excited to have them! With easy access from Route 288 and Interstate 64, Drive Shack’s ultimate golfing venue is sure to attract hordes of golfers, sports lovers, gamers, business owners and foodies alike. RICE STUFFING WITH APPLES, HERBS, AND BACON
INGREDIENTS 3 1/2 cups water, divided 1 1/2 cups low fat, low sodium chicken broth 1 cup uncooked wild rice 1/3 pound bacon 3 cups diced onions 3 cups diced celery 4 - 5 medium button mushrooms, sliced 1 tablespoon water 1 cup uncooked long-grain white rice 1 3/4 cups currants 3/4 cup dried cherries 3/4 cup dried cranberries 1/2 ounce dried apricots 1 cup diced, unpeeled apples 1 cup slivered almonds 1/2 cup chopped Italian flat leaf parsley 6 tablespoons dried mixed herbs

In a medium saucepan over medium heat, bring 1 1/2 cups water and the 1 1/2 cups chicken broth to a boil. Stir in wild rice. Cover, reduce heat, and simmer 45 minutes. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Reserving drippings, drain bacon, crumble, and set aside. In the skillet with the reserved bacon drippings, saute onions, mushrooms and celery with 1 tablespoon water. Cook until very soft, about 20 minutes. Stir remaining water, rice, currants, cherries, cranberries, apricots, almonds, and apples into the wild rice. Continue cooking 20 minutes, or until wild rice and white rice are tender.
