DOWN ON THE FARM IN GLEN ALLEN LAVENDER FIELDS

T

By Averill P. Byrd

he Richmond area is rife with local farms, farmers markets and farm-to-fork restaurants. Many of us are discovering the wonder and joy of knowing exactly where our food comes from. It fosters a strong sense of connection – not just to our food and the whole process of creating it, but also to the men and women who have chosen the farming life and make these meals possible for the rest of us. In Glen Allen, Stan and Nicole Schermerhorn have embraced the farm life and have created a spot that attracts huge numbers of area residents. Lavender Fields, nestled in a quiet corner of Glen Allen, houses A Thyme to Plant – a direct-to-store herb farm boasting some 250 varieties of USDA certified organic herbs. The Schermerhorns sell “starts” – those small pots of herbs you can take home and grow yourself – to numerous stores in Virginia, Maryland and DC, including Whole Foods. Nicole and Stan have run A Thyme to Plant for almost two decades, and the farmland has been in their family for 200 years. They work full-time, year-round, build-

GREAT FOOD IN A COZY FARMHOUSE ATMOSPHERE

Open for Lunch & Dinner: Wednesday through Sunday | Sunday Brunch 10:00 a.m. ing their own greenhouses, operating machinery, devising contraptions to minimize problems and maximize space, and even watering herbs by hand. “We’ve made a family here,” says Nicole, of clients, other farmers and employees, both fulltime and seasonal-but-returning (some of them former interns, all of them eventual friends). Her nephew, Shaun Mercer, who, like Nicole, moved to Richmond from Australia, now manages Lavender Fields, hosting tours, classes, seasonal activities for the whole family (butterflies, lavenders, face painting!) and managing the retail store where you and I can get a sampling of herbs and their amazing honey.

What’s New in the Galleries of Glen Allen

T

By Steve Cook

he diversity of musical programming at the Cultural Arts Center at Glen Allen (2880 Mountain Road) is nothing short of amazing. The beautiful facility offers everything from blues to bluegrass and from classical to county. However, those of us who live nearby might not fully appreciate the opportunity the center offers to enjoy the visual arts as well as the performing arts. Not only are all the galleries free and open to the public, but even the opening night receptions, which include refreshments and, on occasion, live music, are also free and open to all. With four outstanding galleries showcasing both regional and international talent, there is seemingly almost always something new to see and enjoy. Here is an overview of what you can currently find in the galleries at the Cultural Arts Center. The Gumenick Family Gallery: You have until the 21st of March to catch the Stories of the Greatest Generation. Journalist Tom Brokaw coined the phrase to describe those who grew up during the Great Depression. The James River Art League presents artworks and related stories inspired by those of that generation. From March 22 until May 20, the Gumenick Gallery will be exhibiting The Phi Decreed. This internationally displayed exhibit features Eric Standley’s complex artworks created from stacked, laser-cut paper. The opening reception will be held from 6 to 9 p.m. on March 22. The Slantwall Gallery: Skullduggery (ends March 31) - Artist Helene Ruiz takes a whimsical approach to symbolically express how tricky life can be. Using playful symbols, such as clowns, jesters, jokers, and fools, brightly colored against a strong black background, she breaks up the too serious reality of life with humor and fun. The Midway Gallery: Discover Joanna Tyka’s colorful collection of expressionistic, happy abstracts Creating paintings makes me very happy and that is the feeling I would like for everyone to have around my art,” she says. This exhibit ends on March 27. Beginning May 3 (through July 15) this gallery will showcase Distinctive Papercuttings by David Jenkins from Arlington, Virginia. The Glass Door Gallery - Japanese Yosegizaiku Comes to America (through March 27). Yosegi is the traditional Japanese craft of creating colorful, geometric decorative veneer. Artist Nicholas Phillips, from Silver Spring, Maryland, recently traveled to Hakone, Japan to learn the secrets of this technique from one of its masters and has been perfecting it since his return. The galleries are generally open during normal operating hours. Occasionally, the Gumenick Family Gallery will be closed for private functions. Call ahead (804-261-2787) if you’re specifically planning a visit to the Gumenick Gallery. For more info, go online to ArtsGlenAllen.com.

2 tablespoon minced chives, for garnish

PREPARATION 1.) Cut green leafy tops off of leeks and put aside. Slice light green to white portion of leeks in half lengthwise. Place each half length flat side down and cut the leek into thin, C-shaped slices. The amount of cut leeks may seem excessive, but they are mild in taste and reduce significantly during cooking. [Note: Leeks can be dirty, so place all cut leeks in a large bowl, fill with water and agitate with your hand. Any sediment should sink to the bottom of the bowl. Empty rinsed leeks into a colander, return them to the bowl and repeat until the water in the bowl remains clear.] 2.) Using medium to large stock pot, brown and render the pancetta or bacon. Remove pancetta or bacon and set aside. Add 2 tbs. olive oil to pot, stirring to mix with the pancetta or bacon fat. 3.) Add onions, then add the cut and drained leeks. Let cook until onions and leeks are somewhat translucent and softened, stirring periodically to avoid browning or sticking to the bottom of the pot. Add the garlic and stir. 4.) Add 3 tbs. butter. When melted add the 3 tbs. all-purpose flour and stir until thoroughly combined. Add 1 quart of chicken or vegetable stock, then the potatoes and cook until the potatoes are tender. Cook time will vary depending on quantity and type of potato used.

5.) When potatoes are cooked through, remove soup from heat and add the halfand-half. Stir to incorporate. Use a hand blender to blend the soup to a smooth consistency. 6.) Serve in soup bowls, placing a pat of butter or swirl of olive oil in the center and using the pancetta/bacon and reserved leeks for garnish. Perfect with a crusty bread.
