MY TOMATO PIE by Karen Johns Crowther
This fresh pie is a popular quick-and-easy recipe that is sure to please. This recipe was given to us by a Northern Neck resident by the name of Karen Johns Crowther.
INGREDIENTS 2 large or 3 medium tomatoes, peeled and sliced
1 cup grated mozzarella
10 fresh basil leaves, chopped
1 cup grated cheddar
¾ cup chopped vidalia onion
1 cup mayonnaise
1 (9-inch) pre-baked deep dish pie shell
Salt, Pepper, and tarragon

1.) Dry the tomatoes in a colander layered with paper towels 2.) Layer tomato slices in pre-baked pie shell, add Salt and Pepper 3.) Layer mixed up onion basil tarragon or herbs you like on top of tomatoes 4.) Mix 2 cheeses and mayo smear on top 5.) Bake for 35 minutes at 350. Let cool, serve and enjoy!
