CHEF JOE HELBLING OF HOWLETT’S
W
hen we asked Joe Helbling, owner and chef at Howlett’s Restaurant and Tavern, located in Chester’s Village Green (3530 Festival Park Plaza, Chester), to share one of his favorite recipes, Helbling generously provided us with the recipe for the restaurant’s signature dish, Howlett’s Famous Prime Rib. “It’s what we’re known for,” Helbling says. “It’s the best in Chesterfield County. Helbling also shared a bit about his background in the culinary arts. The Pittsburgh native has been cooking professionally ever since he graduated from high school in the late seventies. By that time, he was living in Lynchburg, Virginia and, upon graduation, took a job with an uncle who was working with Greyhound Food Management. In the mid-eighties, Helbling moved to Richmond and leased the cafeteria at the Greyhound Terminal on the Boulevard. When the lease at the terminal terminated, Helbling says he felt it was time to open his own restaurant. He purchased the original Howlett’s Tavern. The original home of the restaurant had been named for the 19th century tavern that once stood in front of historic Magnolia Grange near the Chesterfield Courthouse Complex. While running the restaurant there, Helbling met and married his wife, Brooke.

Today Brooke works with her husband in managing the business. The couple have five children. A little less than a decade ago, the couple closed that restaurant and ultimately re-opened Howlett’s at their current location. “While we loved the quaintness of the original Howlett’s,” Helbling says, “moving provided us with more space to accommodate our guests.” Cooking is not just a job, with Joe Helbling. It’s a passion. “What inspires me,” he says, “is the ability to provide a place where people can meet and spend time with their family or friends and enjoy a good meal.” Even at home, Helbling says he does all the cooking. “I enjoy cooking whether at home or at the restaurant.”

Rockin’ at Henricus
G
et ready to rock at Henricus Historical Park on Saturday, May 5 from 2 until 8 pm. That’s the date for HenROCKus at Henricus. Created as a spinoff from Henricus’ Hops in the Park Harvest and Beer Festival, a crowd favorite held during the past three Novembers, HenROCKus is sure to be another hit. “The concept of the event is simple,” says Charles L. Grant, executive director of Henricus Historical Park. “Enjoy great music from regional bands, great beer provided by Steam Bell Beer Works, and great food from Greggory’s Grill.” All proceeds from the event, Grant adds, will go directly to Henricus’ Children’s Education Fund. The musical entertainment kicks off at 2 p.m. with the Pat Russell Band performing what they call “country that rocks.” Bringing it back to the 80s, Chinese Fire Drill takes the stage at 4 and Ventura Boulevard, Richmond’s newest Tom Petty cover band, closes out the festivities from 6 until 8 p.m. Admission is $5 for adults. CHICKEN AND DUMPLINGS IN THE SLOW COOKER
INGREDIENTS 1 1/2 - 2 lbs. chicken tenders (can start these from frozen)

6 carrots, about 1 lb., sliced 1-2 stalks celery, chopped chopped/minced garlic to taste 2 cans cream of chicken soup 2 cans chicken broth 3 cups milk 1/2 tsp. poultry seasoning salt and pepper to taste 5 flour tortillas, cut into squares 1 tbs. flour
PREPARATION 1.) Place chicken tenders in slow cooker, either thawed or frozen. 2.) Add carrots and celery to slow cooker. 3.) Stir cream soup, chicken broth, milk, poultry seasoning, salt and pepper together.
