Dom Perignon

An Elegant Event with Bubbles hosted by Quin Farara cellar, a second Plénitude (P2) after 15 years and a third Plénitude (P3) after 30 years. During the successive windows of expression, the energy of the wines changes. These privileged points are captured moments when the wine sings higher and stronger. Each bottle of Dom Perignon is created from the finest grapes grown in one single year, resulting in each Vintage having subtle differences. Reinventing itself by interpreting the unique character of the seasons. Benfrech explained the company produces only vintage champagne, as part of the Dom Perignon heritage. No wine will be produced in years when the weather adversely affects the quality of grapes. A successful social evening at South Point saw several bottles of 1998 P2 sold at the event. This concept champagne is very much a collector’s item and is guaranteed to be served only on very special occasions. “In the end, it’s time which reveals all of them” Meet the ultimate Dom Pérignon Vintage, the Plénitude of harmony.

The Dom Perignon Private Sale event, which was held at the South Point lounge in Falmouth Harbour, was an evening of sophistication and elegance. As the sun set with yachts lighting up the night sky, guests were Invited to taste the expressions of Dom Perignon’s 2006 Vintage as well as the Dom Perignon P2 1998 and given the opportunity to purchase. The décor was minimalistic, kept clean to reflect the wine being shown; white orchids complimented the simple dishes of Blue Point oysters and Stone crabs. Every ingredient was able to reveal itself against this perfect canvas. Nathan Benfrech, Luxury Brand Manager at Moet Hennessy, took guests through a journey into the origins of the brand and a guided tasting. The wine is an assemblage of Pinot Noir and Chardonnay grapes, produced in stages described as plenitudes. After years of meticulous care and attention each Pléntitude is chosen to return to the light of day at its peak. It expresses its first Plénitude (P1) after 7 years in the

Antiguan Fish Chowder

Serves 4 Ingredients 1 lb fish fillet (firm flesh), cubed 4 oz unsalted butter 1 oz Antiguan seasoning pepper, finely diced 4 oz onion, minced 2 oz celery, rough-cut 8 oz potato, medium cubed 1 qt fish stock 8 fl oz dry white wine 1 sachet d’epices containing 2 cloves garlic crushed & ½ oz fresh ginger, peeled 8 fl oz coconut milk 2 bay leaves ¼ oz thyme (leaves only) 8 fl oz heavy cream 4 tbsp roux Salt & ground white pepper, to taste 2 tsp Susie’s hot sauce (to taste)

In a large saucepan over a medium heat add butter, seasoning peppers, onions, celery and diced potatoes. Cook for 3-4 minutes. Add the fish, wine, stock and sachet, combine and simmer for 10 minutes. Add the coconut milk, bay leaves, thyme and cream; return to a simmer and stir. Gradually add the roux to the mixture

and whisk to incorporate working out any lumps. Simmer at 185ºF for 15 minutes, skimming the surface as necessary. Remove sachet and bay leaves. Season with salt, pepper and Susie’s hot sauce to taste as needed. Serve immediately.

8 pcs chicken pieces (thighs and drumsticks) 2 tsp salt ¼ tsp ground white pepper 2 fl oz clarified butter or vegetable oil 8 oz onions, diced 2 tsp garlic, minced 2 oz all-purpose flour 8 fl oz dry white wine 16 fl oz chicken stock 2 bay leaves 1 tbsp thyme leaves 8 fl oz heavy cream 8 oz carrots, finely diced, blanched 8 oz leeks, sliced ½ oz fresh chopped parsley or minced chives

Method: Season the chicken with salt and pepper. Heat the butter in a large rondeau or brazier over medium-low heat. Add the onions and garlic to the pan and cook stirring from time to time, until the onions are translucent. Add flour and cook, stirring frequently, for 5 minutes. Add the wine to the pan to deglaze. Add the stock, bay

leaves, thyme and chicken. Bring to a simmer. Cover the pot and cook the chicken over medium-low heat, until fork-tender and cooked through, 30-40 minutes. Transfer the chicken pieces to an oven pan and moisten with some of the cooking liquid. Keep warm while finishing the sauce. Add the cream to the remaining cooking liquid and simmer until the sauce

has thickened slightly, 5-7 minutes. Skim thoroughly to degrease the sauce. Adjust seasoning with salt and pepper and strain. Return the chicken to the sauce, along with the carrots and leeks. Simmer for 2 minutes until the vegetables are tender. Serve immediately with sides of rice pilaf, mashed sweet potato and steamed vegetables.

On Saturday 17th September 2016, Gulliver & Anthony hosted a Backyard Jam. The venue was the newly refinished Country Club Apartments complex, off the beaten track in green lush surroundings of the village of Buckley’s. The celebratory event included the launch of the new album titled “Peaceful Demonstration” by Anthony’s world-renowned ‘Black Slate’ reggae band. The entire band was on island for their very first Antiguan performance. Picnic seating and beautifully decorated marquees set the garden party scene. The stage and sound system were of the highest order, but the day was made special by the attendance of a few hundred of the

coolest big people, the fabric and soul of Antigua & Barbuda. This truly was an insiders event. The food was global street vendor style, from freshly grilled lobster to ital, to Indian and sushi. Chef Selwyn James put on a fabulous spread and Lisa of Quin Farara ran an immaculate bar. Patrons showed their appreciation by trying to sink it. The wine of the day was Gris Blanc Rosé from Bacchus wines. Thanks are extended to all who attended. We shall do this again soon - Find us on Facebook.

The GARD CENTER (Gilbert Agricultural and Rural Development) held its 2nd annual fundraiser in April 2016, in the form of a Farmto-Table luncheon, held at its Gilbert Agroheritage site. The official sponsor of the event was the James & Maginley Charity and Care Foundation. The primary mission of the charity is to improve the lives and well-being of the more vulnerable citizens of Antigua & Barbuda. The event was held under the patronage of Their Excellencies, Sir Rodney & Lady Sandra Williams. A delicious buffet-style spread was made with fresh, local produce and served in a true Farm-to-Table setting, under white tents, with the fresh air gently blowing through the Casuarina trees. This well attended soirÊe has since been dubbed Antigua’s most exquisite


and unique outdoor dining experience! Patrons enjoyed live entertainment provided by pannist Bernard Duplesis, complimentary food samples, which included locally caught seafood, and locally made confectioneries. Extra fundraising came from the generous donated prizes, bid on in a Chinese auction. Food & Beverage participants included Goddard Catering Events, Galley Bay Resort, Jumby Bay Antigua, LS Eventz, Colleen Simpson and the Antigua Barbuda Hospitality Training Institute. Participating farmers and agro-developers included Shirley Ramsey, George Purcell, Glentis Goodwin, Stephen Brumant, Willimina Peters and Grant Joyce. Originally from the land of wood and water, Jamaica, Alison attended the Antigua & Barbuda Hospitality Training Institute and studied Basic Cookery. Her drive and ambition gained her an internship in the restaurants of the Galley Bay Resort & Spa. Alison, who has been cooking with her grandmother since age seven, seized the opportunity to work in such a respected establishment and was officially hired in less than a month. Since starting work at the hotel in December 2015, there has been no looking back. Continuing to shine in the kitchen and displaying a natural charm, Alison frequently presents popular cooking demonstrations to the hotel’s guests who find her engaging and knowledgeable. She is well-loved by her fellow colleagues and won employee of the month, having just passed her three month probation period. Alison, who is a devoted Christian, thanks God every day for all she has achieved and the blessings bestowed on her. She is a wiz on the grill and likes to get creative in the kitchen, using organic produce from the hotel’s own garden. As a chef, she produces international cuisine, and is partial to a good lasagne and sushi. At home she’s a fan of local dishes, particularly fungee, pepperpot and seasoned rice.

1 medium Antigua Black pineapple, finely diced 1 fresh smooth mango, finely diced 1 local papaya, finely diced Juice of 1 freshly squeezed lime 4 tomatoes, diced 1 each, sweet red and yellow pepper, finely diced 4 scallions, finely diced ½ oz (15 g) fresh ginger, finely grated ½ oz (15 g) fresh cilantro leaves, finely chopped 3 tbs olive oil Salt and pepper to taste Susie’s Hot Sauce to taste 1 egg white, lightly whisked 4 tbsp vegetable oil

Method for Ital Patties:

1 cup (240 g) minced soya chunks, pre-soaked 1lb lentil peas, precooked 1 whole onion, finely diced 1 clove garlic, finely diced 2 stalks of celery, diced 1 tsp fresh thyme 2 tsps herbal seasoning mix ½ cup soy sauce 1lb wheat flour Oil for frying

Using a large mixing bowl and spatula mix all ingredients together. The consistency should be that of sticky dough. Turn mixture out onto floured surface. Using a floured rolling pin, roll out mixture until it is ½ inch thick. Use an overturned glass to cut out pattie shapes and place on a floured plate or cooking sheet. Heat one inch of oil in a frying pan over a medium-high heat. When

oil is hot, fry the patties on both sides for approximately 2 minutes, until golden brown. Serve patties hot with fresh salsa and fried green tomatoes.

Method for Tropical Fruit Salsa: Combine all ingredients gently in a mixing bowl. Refrigerate until service. Serve chilled.

Coconut Mango Gummy Treats

Ingredients

Method:

1 cup coconut water or full fat coconut milk ½ cup fresh lemon juice 1 large ripe mango, peeled and diced 6 tbsp gelatin powder 1-2 tbsp honey

Puree mango pieces in food processor. Set aside. Combine coconut water and lemon juice in small pan and gently heat the mixture until it is warm to the touch. Remove from heat. Add gelatin powder 1 tbsp at a time and whisk thoroughly to combine (If you notice clumping, gently heat mixture again). Add mango puree to gelatin mixture and whisk to combine. Pour mixture into silicone moulds or glass baking dish (no need to grease it). Place in fridge to set for at least 2 hours. Remove from moulds and eat.


Easy Soursop Ice Cream Ingredients

Method:

2 large, very ripe soursops, peeled, remove seeds and freeze pulp ½ tsp cinnamon powder ½ tsp pure vanilla extract Pinch of sea salt Fun additions: chocolate chips, coconut flakes or nuts/seeds

Let soursop pulp soften at room temperature for about five minutes. Blend soursop, cinnamon, vanilla and salt in a blender until smooth and creamy. Pour into bowl, mix in favourite additional ingredients and serve immediately, or add to popsicle moulds and freeze to eat later.

Banana and Pineapple Frozen Yoghurt Ingredients

Method:

4 large (500g) bananas, peeled, sliced and frozen for 3 hours 1 ⁄3 cup (60g) dark brown sugar 250g low-fat Greek yoghurt 1 cup fresh Antigua Black pineapple, peeled & finely diced

Remove bananas from freezer and let soften at room temperature for 5 minutes. Place all ingredients into a food processor or blender and process until smooth. Pour into paper cupcake baking cases. Top with a large spoonful of pineapple. Serve immediately.

Tropical Flapjacks Method:

150g local dates, stones removed 50g dried papaya 100g butter or margarine 3 tbsp agave syrup or honey 50g coconut or almond flakes 3 tbsp mixed seeds 50g raisins 150g porridge oats

Heat oven to 190Cº/375Fº, gas 5. Line an 18cm square tin with baking parchment. Put the dates into a food processor and process until they are finely chopped and sticking together in clumps. Put butter, agave syrup, dates and papaya into a saucepan and heat gently. Stir to combine until butter has melted. Add all the remaining ingredients to the pan and stir until well mixed. Spoon the mixture into the tin and spread level. Bake in the oven for 15-20 minutes until golden brown. Remove and cut into 12 pieces. Leave in the tin until cold. Store in an airtight container.

Blend beetroot and strain off juice. Gently heat cream and milk over medium heat. Add sugar and vanilla, stir well, and pour beetroot juice into milk. Mix gelatin with water, set for 2 minutes. Heat gelatin for 2 seconds and add to beetroot mixture mixture. Pour in 3 oz ramekins and cool. Allow to set for 5 hours in fridge.

Method for Fruit Salsa: In a small bowl combine all fruit salsa ingredients. Cool in fridge until service.

To Serve: Turn out beetroot panna cotta onto plates and serve with fruit salsa and ice cream or sorbet.

Barbudan Soldier Crab Fungee with Mangrove Snapper Serves 4 Ingredients

Hermit Crabs Hermit crabs (Soldier crabs as they are locally known) live inside shells of other animals, mostly shells of sea snails, to protect their bodies from predators. They change their shell when the old one becomes too small.

4 Soldier Crabs 4 cups water 2 ½ cups cornmeal 2 tbsp butter ¼ cup vegetable oil (as needed) 2 tsp vegetable oil Salt to taste

Method: Boil Soldier crabs in a large pot. Pour off water and allow crabs to cool. Extract the crabmeat from the shell. Then separate the yellow head flesh and fat and put aside in a separate bowl. Pour the water in pot to boil. Season to taste and add butter and half the oil to the boiling water. Add reserved head flesh and fat from crab. Simmer on a low fire. Add the cornmeal and crabmeat and stir rapidly using a “turn-stick” or wooden spoon. Add extra water and/ or oil as required until fungee is thick, smooth and lump free. When the mixture leaves the sides and bottom of the pan, remove from the fire. Add 2 tsp vegetable oil to a small round bowl deep enough to roll the fungee. The oil will help to shape and smooth the fungee into a ball-liked shape. Add 1 cup of fungee to the bowl and roll in circular motion until it comes to shape and then gently pour out fungee-ball on a platter. Repeat with remaining fungee.

To Serve: Serve immediately with pan-fried mangrove snapper fish and seasonal steamed vegetables.

An Antiguan & Barbudan Delicacy

Serves 4 Ingredients: Stuffing 4 Medium Shellfish, cleaned and gutted 2 tbsp butter 4 cloves garlic (minced) ¼ cup yellow onion 2 sprigs fresh thyme 2 cups. breadcrumbs ½ cup seasoning pepper (diced) ½ hot pepper (diced) Salt & pepper to taste

In Antigua & Barbuda there are some local specialities that should never be missed. One such delicacy is the Trunkfish, locally known as Shellfish because it has a hard shell exterior. Trunkfish are right-angled shaped fish belonging to the boxfish family, which are closely related to pufferfish. They can be recognised by their unusual hexagonal plate-like scales which are fused together into a solid, triangular or box-like body. Because of these heavy armoured scales, they are limited to slow movement and have few predators that can penetrate their carapace. To prepare, the fish should be cleaned and gutted, but not scaled. The spacious cavity is stuffed with breaded herbs and spices and the whole fish is placed on an open grill to cook. The hard fish shell almost acts as a container within which the flesh and the stuffing infuse. Once cooked the scales fall away easily leaving the tender flesh and stuffing for you to enjoy. Look out for Shellfish on the grill at Emily’s Hot Spot, and other roadside BBQ joints.

Place skillet over medium heat. Add butter, garlic, onion and thyme. Sauté until onions become translucent, do not burn. Add breadcrumbs and seasoning and hot peppers; season with salt & pepper. Set aside to cool. Taste and adjust seasoning. Add the stuffing mixture into the empty cavity of the shellfish. Wrap the stuffed fish tightly in foil and grill or place the shellfish directly on the grill rack. It’s ready when the shell is soft and feels like its falling apart.

For most people, the choice to drink an organic or biodynamic wine usually comes down to taste and ethics. Winemakers around the world are adapting production methods to suit people who want to know exactly what they are consuming and where it comes from. Biodynamic and organic viticulture are methods of production that certain winemakers favour to help them influence the nature of the wine to their style and philosophy of farming. What both methods have in common is the prohibited use of any chemicals or fertilisers that can leave residue on the vines. Some controversy surrounds the use of added sulphites in natural wine production, though naturally occurring sulphites are present in grapes. In Europe and Canada the law in wine production is that an organic wine may have added sulphites, whereas in the USA the law is that wines cannot have added sulphites. The sulphites are what give wine its extended shelf life.

is able to combat problems intrinsically and eliminates the need for artificial, and potentially toxic, chemicals. When it comes to biodynamic wine production start off by thinking of an organic wine, but taken several steps further. Biodynamics differs from other forms of organic or sustainable agriculture in that the farming methods are attuned to the spiritual forces of the cosmos placing the farm in the context of the wider pattern of lunar and cosmic rhythms. This may involve linking sowing and harvesting to the phases of the moon or the positions of the planets. The holistic key to biodynamics is considering the farm as a self-sustained living system with the soil as an organism in it’s own right. Some of the most astonishingly delicious wines in the world are coming from wineries practicing biodynamic and organic wine farming. Many sommeliers love serving these types of wines in their restaurants because they taste great and they tend to go well with food. The results are healthy, delicious and highly aromatic wines made in complete harmony with nature.

Countries such as Australia and Italy are producing vast amounts of natural wines, and winemakers are in various stages of converting to biodynamic production. France produces some excellent natural wines because in certain regions such as Provence and Bordeaux the climate produces mists that naturally protect the vines against most pests. Today, you will no doubt find many examples of organic wines appearing on the wine list of your favourite small bar, restaurant, supermarket or wine retailer. Organic wines are an agricultural system using grapes that have been grown without the use of artificial or synthetic chemicals, such as herbicides and pesticides. To keep the weeds and insects at bay, organic farmers work with nature, rather than against it, by boosting their vineyard’s biodiversity. For example, they introduce cover crops to provide a habitat for beneficial insects that are the natural enemy of problem species, or have small sheep graze between the vine rows, eating the grass and weeds. In this way, the vineyard becomes a self-regulating, natural ecosystem, which
