What started with a single strand of Christmas lights strung over a store entrance in 1925 has turned into a living legend as the most spectacular holiday lighting display in the nation. A local tradition for 86 years, Plaza Lights is a 15-block holiday spectacle on the famed Country Club Plaza, featuring thousands of glimmering, jewel-colored lights that accentuate every dome, tower and window of the Spanish-inspired shopping district. FUN PLAZA LIGHTS FACTS • The Plaza Lights started with a string of 16 lights over a doorway in 1925. The first Plaza Lighting took place in 1930. • Tower lights are always one color. For example, The Time Tower, at Broadway and Ward Parkway, is always red. • The lights don’t stay up all year long. The hard-working crew from Capital Electric begin hanging the lights in August and take them back down starting in mid-January through the beginning of March. • The big switch on the stage at the Plaza Lighting Ceremony really does turn on all the lights. • The child chosen to help turn on the lights from the audience is always chosen at random. • A lights test occurs on the Wednesday before Thanksgiving (the day before Thanksgiving) from 2 a.m. to 6 a.m. • The only time that the Plaza lights were not in operation occurred in 1973 when President Nixon called upon all Americans to curtail the use of Christmas lights to reduce dependence on foreign oil imports. • Guests that have been invited to turn on the Plaza Lights include: George Brett, Trent Green, Kate Spade, “Fastest Man in the World” Maurice Green, Paul Rudd, Jason Sudeikis, Eric Stonestreet, Walter Cronkite, Derrick Thomas, Marcus Allen, Buck O’Neil and Oleta Adams. 10

Talkin’ Turkey

Talking turkey for the Thanksgiving table (BPT) - Without a doubt the iconic American bird, the turkey, majorly influences all things Thanksgiving, right down to our tabletop décor. It’s a colorful history, nearly as old as the holiday itself.

When Abraham Lincoln proclaimed Thanksgiving an official holiday back in 1863, English potters seized the opportunity to target the growing American market by producing turkey-themed dinner plates and platters. These ingenious designers generally took an existing design and replaced the center with a turkey motif to create those first Thanksgiving patterns. Manufacturers such as Spode, Mason’s and Wood & Sons used their colorful transferware patterns to start a new holiday tradition. “Even today manufacturers are creating design options for consumers by producing Thanksgiving or turkey-themed accent plates to mix and match with their everyday dinnerware,” says Robin Long, vice-president of product marketing for tableware giant Replacements, Ltd. “You’ll find colors and motifs to fit all tastes and lifestyles, from the very traditional to a more modern aesthetic. If someone wants more than just an accent plate, there are so many fantastic collections that include all piece types, from plates to bowls to platters.” In fact, Replacements’ most popular Thanksgiving pattern, His Majesty by Johnson Brothers, started as an accent plate in the Friendly Village pattern. Demand proved so great for this particular motif, the English manufacturer turned the proud Tom Turkey-adorned plate into its own pattern. Gobble up serveware Perhaps just as popular as the turkey pattern this season is the turkey platter. I suggest starting a wonderful family tradition of dedicating a special platter for your Thanksgiving turkey and making it the centerpiece of your holiday gathering.” Turkey platters aren’t only fun, some are also functional. Lenox and several other manufacturers produce turkey-shaped platters and other autumn themed serving pieces in alternative metal serveware. This is a special alloy that maintains a constant temperature to keep foods warm or cold when heated or chilled. Tabletop trends for turkey day Whether you’re planning a huge buffet or an intimate dinner with close family and friends, Robbins says the color trends for Thanksgiving entertaining remain a bright version of fall: strong oranges, sages and brilliant turquoises. Both individual candles and groupings of candles are popular for the Thanksgiving tabletop. Burlap is also a hot trend for table runners or place settings. And if Tom Turkey isn’t the right design element for your table, Robbins says you can still create a seasonal feel, minus the bird. “You can use fall leaf or even woodland patterns to create a classic Thanksgiving table without going with a turkey motif. Beautiful classic fruit patterns give your table that horn of plenty flair.” Robbins suggests tying this look together by combining whole spices such as cinnamon and nutmeg with natural elements like nuts, small pumpkins, fall fruits and colorful leaves to create a cornucopia-type centerpiece. Walnut stuffed cherry tomato halves: “Who doesn’t love a stuffed cherry tomato?” Guarnaschelli says. “A mixture of cheese, peppery arugula and juicy tomatoes brings out the great richness of the nuts. Stuffed cherry tomatoes are satisfying without being filling, and make a great alternative to bread-based starters. You can assemble these appetizers ahead of time and refrigerate them until you’re ready to serve.” Yield: 12 servings • Prep time: 15 minutes Ingredients: 3/4 cup fresh arugula leaves, coarsely chopped 1/2 cup (2 ounces) coarsely chopped Fisher Walnut Halves and Pieces, toasted 1/2 cup finely grated Parmesan cheese 2 tablespoons extra-virgin olive oil 1 teaspoon balsamic vinegar 1 teaspoon grated lemon zest 1/8 teaspoon salt 36 cherry tomatoes Directions: • Toast the walnuts by placing them in a large non-stick skillet over medium heat. Stir frequently until the walnuts turn golden - about three to five minutes. • Combine the arugula with the walnuts, cheese, olive oil, vinegar and lemon zest; set aside. • Cut the tops off the tomatoes. Use a small spoon (such as an espresso spoon), the handle of a teaspoon or a melon baller to gently remove the majority of the seeds and pulp, taking care not to pierce the skin. Season the insides lightly with salt. Fill the tomatoes with the walnut and arugula mixture. Serve at room temperature. “For a more Italian experience, use authentic Parmigiano Reggiano cheese in this recipe,” Guarnaschelli suggests. “It’s more expensive than domestic Parmesan, but it has a wonderfully rich and nutty flavor.” Quickie goat cheese and pecan bites: Another great make-ahead appetizer, these bites are filled with flavor and deliver the perfect combination of crunch and taste. “The freshness of the parsley and lemon zest is the perfect bridge between the goat cheese and pecans,” says Guarnaschelli. Yield: Makes 24 servings • Prep time: 15 minutes Ingredients: 1 pound soft goat cheese 2 teaspoons cracked black pepper 1/2 cup toasted Fisher Pecan Halves, chopped Zest from two lemons 3 tablespoons chopped flat-leaf parsley Directions: • Break up and mix the goat cheese with the black pepper in a medium bowl. Divide into 24 pieces of about 2 teaspoons each and roll into balls. • Combine the pecans, lemon zest and parsley in a medium bowl until well blended. Roll the goat cheese balls in the pecan mixture. Arrange on a serving platter. Refrigerate until ready to serve. Take them out 15 minutes before serving so they soften a little and drizzle with a little olive oil, if desired. Spicy walnut and chickpea hummus: Chipotle brings smoky heat to this appetizer. While hummus is traditionally made with tahini (sesame) paste, this version uses sesame seeds and walnuts to add richness to the mixture and texture when sprinkled on top. Serve this hummus as an individual hors d’oeuvres or as a tasty dip with pita wedges. Yield: 24 2-tablespoon servings • Prep time: 15 minutes Ingredients: 1 cup chopped Fisher Walnuts, divided 1/4 cup olive oil 1 can (15 ounces) chickpeas, drained and rinsed 3 tablespoons fresh lemon juice 1 tablespoon sesame seeds 2 cloves garlic 1/2 teaspoon paprika 1/2 teaspoon salt 1/4 teaspoon chipotle powder or ground red pepper 1 medium red bell pepper, ribs and seeds removed, coarsely chopped, about 3/4 cup 1 tablespoon chopped parsley Directions: • Combine 1/2 cup walnuts and olive oil in the bowl of a food processor, pulse to coarsely chop the walnuts. Add the chickpeas, lemon juice, sesame seeds, garlic, paprika, chipotle powder and salt, and process until smooth. • Transfer the spread from the food processor into a medium mixing bowl and stir in bell pepper, parsley and remaining 1/2 cup walnuts.
