Breakfast Bar HOSTED BY STYLED BY BELLE Breakfast would have to be my most favourite meal of the day! I love going out with my husband and two sons on a Saturday morning after swimming lessons for a serve of eggs benedict and a latte; I love an occasional ham & cheese toasted croissant from the cafe on my way to work; I also love a bowl of porridge in warm milk drizzled with honey on a cold morning. What I dream about most some weekends is that I could sleep back over at my parents house (as if I was still living at home), have a little sleep in (kid free of course!) and then wake to an enormous stack of my Mum’s famous crepes. There is just nothing better! OK, well maybe just one thing... my most ‘ultimate’ breakfast would have to be the amazing buffets when we go away on holidays. Those mornings I can have a little bit of this, and a lotta bit of that! Everything from eggs and pastries, to yoghurts and fresh fruit, pancakes and waffles – the list just goes on and on! That being said, the inspiration for my shoot was a relaxing buffet breakfast in an exotic part of the world. It doesn’t get much better than going on holidays, waking to clear blue skies and the shining sun, going for a walk along the beach and then sitting down to eat with the most picturesque views of the ocean. Pure bliss! Styled By Belle recently travelled to beautiful Bali and took the opportunity to style a breakfast in paradise! A striking marquee structure was set up on the beach with flowing yellow silk chiffon sails gently blowing in the sea breeze. Local frangipani and tuberose flowers decorated a crisp white table setting, along with calming blues in the plates and glassware.

“Mummy’s Breakfast Tea” was served along with a scrumptious array of breakfast eats. Served on the buffet was a range of freshly squeezed juices (yellow watermelon, carrot and bloody Mary’s), mango & banana and berry smoothies, parfait and yoghurts with fresh fruit and nuts, and a range of pastries including croissants, waffles and breakfast donuts. A second feature table was set up in the shallows of the ocean, serving blueberry hotcakes and a delectable stack of crepes layered with lemon curd & fresh cream. Divine! And after devouring as much food as possible, it is time for a sunbathe on the lounge chairs and perhaps a little swim in the ocean. Oh, and of course, an afternoon filled with pampering spa treatments! Oh so blissfully sweet!!!

This feature is dedicated to my mother, Natasha. My mother is the most amazing woman in the world. She has devoted herself to giving her children the best in life and is the most selfless person I know. My mum is my ‘everything’ and I really could not have achieved so much in my life without her incredible love and support. She is the best mother, the best grandmother and we are just so lucky to have her. I love you Mum. Happy Mother’s Day! xx

With a background in strategic marketing and incentives, she has a passion for styling and creating WOW factor events. Russian Tradition My mother comes from a Russian heritage and it is always a special treat for our family when she makes her delicious crepes (or “Bliny” in Russian) for breakfast. It is a simple recipe, passed down from my grandmother, but takes a little time to make a big stack for the whole family, so it is often a special occasion breakfast: such as a birthday, Easter morning or Mother’s Day treat!

TRADITIONAL RUSSIAN CRÉPES (BLINY) Ingredients - 2 eggs - 1/2 tsp sugar - 1/4 tsp salt - 2 cups milk - 1 cup self raising flour - 1 tbsp olive oil, plus more for frying Preparation • In a bowl whisk together the eggs, sugar and salt.

My personal favourite is a spread of butter with squeeze of fresh lemon juice and good sprinkle of sugar. I also love caramelised bananas (bananas sliced and lightly fried with honey & cinnamon) with fresh whipped cream. Mmm Mmm!

I am extremely honoured to be a part of this one of a kind virtual Mothers Day e-vent hosted by Blissfully Sweet. Leo & Bella was assigned to host an autumn market day inspired by Jacki’s mum Suzanne’s love for life. The vision was to create a pop up market specifically for Mothers Day where mothers and daughters would have a day for themselves to enjoy things they love. When it came to the inspiration behind this I visualised what Suzanne and Jacki would love to do on a weekend, and knowing the apple wouldn’t fall far from the tree, I am sure Suzanne enjoyed baking sweets as much as Jacki. This market will be filled with rustic home-made baked goods and loads of flowers, something both mothers and daughters would love and appreciate. Helen from Kiss My Cakes made some mouth watering home made baked goods, something you don’t see much in her repertoire but she stepped out of her comfort zone and created the most perfect Black Forrest layered cake, scrumptious apple pie, bread and butter pudding (a recipe that was passed on from her mum), delectable custard tarts and some mouth watering chocolate chip cookies. Also for sale are some jars of strawberry and raspberry jams finished off with a gift tag by Style Me Gorgeous which is the perfect gift for Mother’s Day. All this tantalising home made baked sweets is set on a peddler’s wagon to give it a rustic vintage market setting. I was over the moon when Kerri of Vintage Sew & So said she would love to come on board and help build the peddler’s wagon for this special event after seeing a photo I sent her. I pictured all this to be outdoors filled with lots of flowers, foliages and all kinds of organic elements. Virginia from Bouquets of Ascha Jolie helped tie the vision together with beautiful David Austin roses, kale and different types of foliages. She also brought along with her some fresh eggs for sale from her mother’s chickens. Who doesn’t love buying fresh eggs at a market? I know I do! I am grateful to all the talented ladies who have brought this very special idea to reality.

Rustic ApplePie FROM KISS MY CAKES

HOME MADE

Ingredients PASTRY - 300g plain flour - 80g icing sugar - 180g cold unsalted butter - 1 egg, lightly beaten * extra lightly beaten egg to brush pastry.

My recipe for short crust pastry is really easy to make, work with and suits a standard pie/tart dish. I use this recipe for all my sweets that require a sweet pastry shell and its fail proof. I have 2 tips for you all to help you achieve perfect results and that is 1. ALWAYS use unsalted butter, it keeps it’s shape better (regular butter tends to spread in pastry and biscuits) and 2. Give your dough a minimum of 2 hours in the fridge. So, let’s get down to business.... Preparation • Process flour, icing sugar and butter in a food processor until your mixture looks like bread crumbs. Add egg and process until your mixture just starts to come together. Before taking your mixture out, pop a little sprinkle of regular flour down on the bench and please be careful not to overwork! Form your dough into a disc, cover with cling wrap and pop into the fridge for 2 hours.

Now it’s time to make your filling! • Peel, core and cut apples into wedges and pop into your favorite large heavy based pot. Pour the caster sugar in along with the lemon juice and ground cloves. Cook gently on a medium heat for about 8-10 minutes, until the apples are just soft. Make yourself a cuppa and take a break until it’s time to take your pastry out of the fridge.

Lightly brush the top of the pastry with a lightly beaten egg and pop into oven until the pastry is a lovely golden brown color, now for all those people who need a time, I would say about 40 minutes. This drives my husband nuts not timing my food, so I do apologise, it’s been a while since I’ve timed my family classic! Best served with both Ice-Cream and Cream! Hope you enjoy my rustic family classic.

• Preheat oven to 180°C. Lightly flour With love, the bench, pop out your rolling pin and pull up those sleeves! Unwrap and roll out pastry until it’s about 4 mm thick and gently push it into your Kiss My Cakes chosen dish. Don’t cut the excess pastry off because we want to fold it over the apple remember! Spoon in your apples then fold the pastry in towards the middle of your pie.

Little Big Company’s Theme was Shop for Mum, which essentially we wanted to incorporate sweet treats in a shop setting and purvey the feeling that Mum was having a beautiful and pampered shopping experience, a champagne on arrival, cupcakes and cake and Mum being treated to a beautiful shopping experience whereby she can get treated to a whole outfit. The experience was about spoiling Mum and ensuring Mum gets treated to a beautiful and enjoyable day whilst shopping, as she works so hard and always puts her children first so she deserves to be treated to a beautiful day. We went with a pink, gold and pearl theme, with perfumes, roses and beautiful flowers. Inspired Occasion made all the sweet treats and Bouquet of Ascha Jolie decorated gorgeous presents with flowers and made a flower wristlet for Mum. Little big Company designed a flower scarf on the shop mannequin, we wanted to have flowers, beautiful scents and perfume on the day. A beautiful ruffle cake with fresh flowers on top was the main centrepiece with pearlised cake pops. The whole experience was about Mum enjoying her day shopping for an outfit to feel special with beautiful feminine sweet treats and flowers.

I am generally inspired by my children when I set about creating my sweet treats and the results are usually pastel and pretty. However this “Oh Sweet Mum� Pies, Slices and Tarts table allowed me to work outside of my usual boundaries. The theme to the table was rustic with dark hues inspired by the warm colours of the treats I was making, with teal and gold highlights. My mother often baked when I was young and I have fond memories of helping her in the kitchen. I made sure to include a caramel slice in the assorted slices in memory of the many times we made and enjoyed this treat, which no doubt helped foster my love of baking and my quest to share my love of baking with everyone I meet. Many of the recipes I whipped up for this rustic table are kid friendly or have portions that children can assist with, such as the base in the following caramel slice recipe. The Rocky Road slice, Pie Pops and Boston Cream pie recipes are from my book Sweets on a Stick.

Mum’s Sweetest

FROM BUBBLE & SWEET

CARAMEL SLICE Ingredients

-

2/3 cup self-raising flour 2/3 cup desiccated coconut 1/2 cup brown sugar (firmly packed) 85 g unsalted butter, melted 1 tin condensed milk (395g) 30g unsalted butter 2 Tbsp golden syrup 150 g milk chocolate melted

• Grease a 20cm X 20cm baking tin and line with parchment paper. • Preheat oven to 180°C (160°C fan forced) • Sift flour into a large bowl, mix in desiccated coconut, brown sugar and 85g melted butter with a large wooden spoon until well combined. • Press the mixture into the prepared baking tin firmly with the back of a spoon ensuring that the mixture is pushed into the corners. • Bake for 10 to 12 minutes until golden and remove from the oven.

• While the base is baking, place the condensed milk, 30g butter and golden syrup into a medium heavy based saucepan and heat over medium low heat. Continue to cook stirring constantly for about 10 minutes until the mixture thickens and turns golden, do not allow the mixture to boil. • Pour the caramel mixture over the cooked base and return to the oven for a further 10 minutes or until the caramel turns golden at the edges. • Remove from the oven and allow to cool to room temperature. • Once the slice is cooled spread the melted milk chocolate evenly over the top and place in fridge until set, approximately 30 - 40 minutes. • Remove the slice from the baking tin and place on a cutting board and cut into pieces. • Slice may be stored in an airtight container in the fridge for up to 5 days. Beachside Lunch HOSTED BY BLISSFULLY SWEET

The beach and lunch are synonymous with memories of my Mum! I remember days of shopping and then stopping for a little lunch somewhere, because we could! My Mum lived right by the beach and it gave her so much pleasure and to have this set on a beach seemed... Right! So location was found at the glorious Balmoral Beach in Sydney, as I wanted the lunch to be set on the grass just off the beach and some overhanging trees made the location perfect. When thinking about the setting, I thought about Mum and about what I like (as it is almost the same) and decided to go with a relaxed but glamorous affair. I wanted it to have a vintage feel and for it to be a setting that has an ahhhh moment! I knew in my head EXACTLY how I wanted this all to look, and it turned out just so and even more so! I easily achieved this by having the best of vendors for this lunch. I wanted the table to be festooned in bright and beautiful flowers and even more of them hanging from the trees. Lina from Chanele-Rose Flowers made my vision a reality and made the most beautiful floral chandelier to hang above the table and then lined our tables with natural arrangements of all the beautiful blooms. Beautiful vintage china, linens and props from Jo at The Vintage Kitchen made the tables come to life. Carla at Bellezza Interiors found some gorgeous furniture pieces to use and Nicole from Pretty & Print is a paper whisperer and made all the paper products. The fans were all handmade by Nicole (*sigh*), as were the beautiful messages in a bottle (more *sigh*), the menu covers, the gift boxes and the beautiful paper flowers that adorned my buttercream cakes on the cake table. To photograph all this visual beauty, Tanya from Tindale Images, outdid and outshone herself on this – I am officially swooning over these photos!

So the location, props and mood all set! Now we need food... It is a lunch! So I decided to go a little different and showcase my love of the savoury also! I made a sandwich cake – to play with the heads a little – it looks sweet, but isn’t! Once you cut into the “cake” there were many sandwich layers of savoury goodness! Other savoury options were mushroom & gruyere tartlets, a 4 tiered cheese stack topped with fresh figs, walnuts and honey, caprese bites and a goats cheese roulade filled with a capsicum coulis. When thinking sweet, I wanted to showcase the sweets that remind me of my mum, things more vintage, more home baked! So apart from the ombre frilled double height cake, I also made vanilla slice cakelets with rose scented icing. Vanilla slice is the sweet I think of the most when I think of my mum. I decided to snazzy it up a bit and make them like little cakes and added some rose into the icing. Lemon & passionfruit tarts as well as meringue swirls made the dessert table more home spun. Little vanilla cupcakes with paper flower inspired blooms sat in the gorgeous tea cart. Lastly, I wanted the lunch to look like it was being enjoyed! Bring in some of my lovely ladies – Lisa, Emma, Karen & Leanne and I had a glamorous Mothers Day lunch set on the beach! Somewhere where Mum could be welcomed like a queen and then she well and truly dined like one also! I dedicate this lunch to my beautiful Mum, as well as my gorgeous sister Tina! STEP 1 You will need a pair of scissors, marker, double sided card and some strong wire.

STEP 7 Your stem will then poke through the base of the flowers as pictured above.

STEP 2 Hand draw a swirl approximately 10cm in diameter. It can be as rough as you like as the different shaped swirls add character to the shape of the finished flower.

STEP 8 Take the rounded end of your flower and wrap the hook side of the wire around the card. This can be fiddly, but just takes a little practice.

STEP 3 Cut out the swirl shape with scissors staying just inside the marked line.

You can wrap some florist tape around the base and wire to give a clean finish.

Travel Around the World HOSTED BY MY LITTLE JEDI

We are so delighted to be a part of the virtual Mother’s Day e-vent hosted by Jacki from Blissfully Sweet in honour of her mum who passed away 10 years ago. What a lovely way to commemorate this special day and also a great tribute to all mums out there. Around the World theme was perfect for Dewi and I as we both love to travel, especially if it involves Paris. Essentially we wanted to combine the three main elements, trip around the world, our passion for Paris and also add a touch of femininity to the mix. The hues of sailor blue, lipstick red and latte brown complimented each other brilliantly. We used vintage suitcases, chalkboard frames, wooden drawer and a mix of red and clear hobnail stands to created different heights to the table and also to accentuate the beautiful cakes and desserts. What a better way to celebrate Mother’s Day than treating yourself with a slice of mouth-watering sugar rose petal cake followed by red velvet cake in a jar! We used a beautiful white embossed ceramic jug to display the beautiful blooms which added a touch of rustic French charm to the table. The vintage map was a perfect way to highlight the trip, starting from Sydney all the way to Dubai, London, Berlin, Paris, Milan, Skopje, Athens, New York, Bahamas and back to Sydney. Adding small details such as handmade passport, plane tickets, postage stamps cake bunting, mini airmail envelopes and world globes was a perfect way to tie the travel theme together. It was a pleasure working with Shannon as she captured every emotion and every vignette beautifully. Bon Voyage!

Cake in a Jar STRAWBERRY AND WHITE CHOCOLATE SPONGE CAKE Makes 24 Cup Cakes or 2 x 8” round cake Ingredients -

00gr unsalted butter 2 5 tbp vegetable oil 300gr caster sugar 1 vanilla bean (scraped) 4 large eggs (minimum weight of 59gr)

Preparation • Preheat oven to 180°C, adjust the oven rack to the middle of the oven. • Line the muffin pan or 2 x 8” round cake tin with the butter and flour. • Using an electric mixer, beat the butter, sugar and vanilla bean together in a large bowl, starting on low speed and increasing to high once the sugar is incorporated. Beat until the mixture is pale and creamy, stopping the machine once or twice during beating to scrape down the side and base of the bowl with the spatula. • Add one egg to the butter mixture and beat about a minute. Stop the machine and scrape down the side of the bowl. Repeat with the remaining egg.

- 2 50gr fresh strawberry (cut into a cube size) - ¼ cup good quality white chocolate - 370gr Self Raising Flour - 250ml soy milk (I used So milky Vitasoy)

• Add the cubed strawberry and the white chocolate. Beat in low until just incorporated. • Sift the flour 3 times, stir with a spoon, alternate with the milk until the flour is just incorporated. • Do not over mix the batter. • Divide the mixture evenly among the pan or the paper cases. • Bake for about 20 minutes, until the cupcakes are light golden. When they are ready, a skewer inserted into the centre of a cupcake will come out without any batter attached, and the cupcakes should spring back when lightly pressed in the centre. • Turn the cake into the wire rack and let them cool in the room temperature.

CAKE IN A JAR

VANILLA BEAN SWISS MERINGUE BUTTER CREAM Ingredients - 430gr egg white - 2 ¾ cup caster sugar - 600gr unsalted butter - 1 vanilla bean (scraped and split) • In a medium pot, add the egg whites and sugar , whisking constantly, until temperature reaches 140 degrees or until the sugar has completely dissolved and the egg whites are hot. • With the whisk attachment of the mixer, begin to whip until the mixture is thick, glossy and cool. • Switch over to paddle attachment and while mixing on medium speed continuously, add the softened butter in chunk until incorporated and mix until it has reached a silky smooth texture.

• Keep in airtight container for up to one week or can freeze up to 6-8 weeks. • How to assemble the cake in the jar • Prepared the jar, make sure it is clean and dry. • Brush the cake with syrup to keep the cake moist. • Measure the diameter of the jar and with the round cookie cutter, cut the cake into 24 small rounds to make 12 cakes in the jar. Fill one small cut cake as the bottom part, top with the swiss meringue filling and top with another cake and swirl with the vanilla swiss meringue frosting. • Repeat with the remaining jar.

Once I received the brief for “Oh Sweet Mum’s E-vent”. I knew straight away I wanted to create 3 stand out pieces. I think nothing stands out more then a tiered cupcake. To me they are like little mini cakes and look absolutely gorgeous and so sweet and cute at the same time. The gorgeous color palettes of the event give me so much inspiration, I loved the fresh beach tones mixed in with all the gorgeous pastel and natural colors. I wanted to create pieces which had a hint of that seaside freshness, lots of floral elements and a smidgin of vintage chic. I drew inspiration from my own mum and want she would love if I were to create these pieces for her. My mum is such a huge support in my life and in my business and while thinking of her these ideas emerged. My mum loves all things pretty and I love all things vintage so by putting all these elements together I came up these 3 pieces. A homage to not only Jacki’s mum but also my own mum but with my flare.

Principal Planner {AZAR JAZESTANI EVENTS}

INTERNATIONAL ICON I chose to design a sweet table with a strong focus on a current trend; Ombre. The colour gradient craze is popping up everywhere, but the truth is... It isn’t as simple as it may look. To coordinate the perfect ombre sweet table, you would ideally need to work with one main supplier for all the sweets. This will ensure that the colours come out perfectly. Working with multiple vendors will be much more difficult and since ‘real’ sweet tables are most often done with multiple suppliers, I wanted to offer an alternative approach to this huge trend. Let’s call it the ‘Backward Ombre’: The use of an Ombre palette to style a sweet table. Order all your sweets to be white. Not only do you have a ton of choices, no matter how many suppliers you are dealing with, the end result will come together perfectly. I used different sized boxes and wrapped each one with a printed Ombre palette using the year’s hottest pantone colour {Tangerine Tango}. To add another design element to the whole table, I lined each box with candy. (fill your boxes with sugar and use the candy just as a topper, placing them neatly next to one another).

In choosing the sweets for this table, I wanted to incorporate another hot trend in a new way. Since the Naked Cake is making a comeback, It thought it would be great to do ‘naked CUPcakes’. They turned out so beautiful and are the perfect addition to your sweet table. I’m a true believer in a realistic spread and I always build my tables based on the KISS Principle. A gorgeous table can be brought to life just as easily with simple sweets and doesn’t need an array of expensive desserts to wow. Use crowd pleasers such as cupcakes, cake pops, cookies and macarons and finish it off with the centerpiece cake(s). You can always add a few other treats if you’d like. (we used: doughnuts and gourmet marshmallows) I hope you’re inspired by this sweet table and try it on your own!

When thinking about what to design for the “Oh Sweet Mum� Mothers Day E-vent my immediate thoughts were white washed beach huts, stripy deck-chairs and flocks of white seagulls. Oh and of course lots of flowers! Although they are not something you relate to the beach, flowers are always a must for Mums on Mothers Day. With all of this in mind, I designed a cake that I thought my Mum would like to receive along with matching cupcakes and mini cakes.

I knew that the passion for designing cakes wasn’t going to go away and that was what I wanted to do for the rest of my life. My cakes always have a vintage, romantic or elegant feel to them. Arty McGoo INTERNATIONAL ICON I am so excited to be a part of this amazing project! I was inspired by the colors, the themes, the scope, and the incredible artists involved. But mostly I was inspired by the beautiful dedication to Jacki’s sweet mother and to mothers everywhere. I am blessed to have a mother who lives up to the true definition of mother and is an example to me every day. I try not to take for granted that she lives minutes away as I know so many are missing their mothers. I was having a hard time trying to figure out what I was going to do for this. How do you encompass your feelings about motherhood in cookies? I realized one day what I could do that might give a small glimpse of how I feel about mothers. I thought of how I am always trying to live my life to make my mother proud and how much I look up to her. I know she feels the same about her mother and I immediately saw an endless thread that has bound generations of loving, faithful, hard-working women to me. Such a nurturing, loving legacy to pass down through daughters! Each of these hand painted cookies are based on photographs of my mother, grandmother, and great-grandmother. They span from when she was a baby in her mother’s arms, to when she became a new mother, and four generations gathered to celebrate. While this collection is of my own heritage, I hope it inspires you to think of the remarkable women who instilled lessons in your life. I am proud to bear the title of mother and proud that I have such amazing examples to pattern my life after. Happy Mother’s Day!

Afternoon Picnic

HOSTED BY BLISSFULLY SWEET

When I received the last minute opportunity to host Afternoon Picnic, I did not need to dig deep for my inspiration. My first inspiration was the season, Autumn. It is my most favourite season of all, with all the beautiful colours and foliage as well as the abundance of beautiful autumn food harvests! But when I dug a little deeper into my memory banks, so many wonderful thoughts came drifting back. I clearly remember driving with Mum {only a few years before she died} when she came to a screeching halt and turned suddenly into this field/lane. She quickly said “jump out”. I knew not to ask questions, so I did. She was transfixed and staring around and looked over at me, and said “how beautiful are these trees?!” This lane was completely covered in autumn leaves and was lined in tall overhanging trees and it was like we were canopied by autumn! I then dug a little deeper and remembered the picnic set that she gave me along with her old stainless steel picnic cups {I think we all had a set of these at some stage}. Then as I looked at these cups, I thought of my mother-in-law and my husband’s family in Italy. When we had a fantastic Italian family visit back in 1996, we were taken up in the mountains in Calabria and discovered the most beautiful area where people were picnicing {Italian style, with pots of pasta} and crystal clear mountain water flowed freely from the hills. I was only 25 back then and probably took most of these beautiful details for granted... however, the memories have stayed with me and I brought all of these to the fore when thinking of this picnic.

I wanted something rustic, something organic, a part of nature. Old wooden picnic benches said all those things to me. So I went on the search and found exactly what I was looking for... in my very own local national park, Lane Cove. Location sorted! Onto the food! My mother could bake, and bake well. However, my first true love is with COOKING, not baking! I have a lot of skills that I can now give thanks to my mother-in-law! Someone who does not look at cook books, but has the wealth of food knowledge in her heritage. So I wanted it to be a rustic picnic, with the Italian way of doing the food – a lot of it and a lot of variety! I also wanted to display all the food very naturally and used a variety of old wooden boxes, boards, sawn off logs and picnic baskets. One thing I wanted to include was herbs, and my trio of old herb pots was just the right highlight and was a little present for Mum! For savoury food options, I decided to make what I love and what reminds me of autumn... and also what is easy to take to a picnic! On the menu were bolognese pies with a homemade cherry tomato relish, cauliflower, carrot & brie pasties, a hearty lamb and vegetable soup as well as some fresh sourdough rolls stuffed with Italian sausages and caponata! Salads to go with were potato with pesto mayonnaise, pearl barley and pumpkin and a fig, prosciutto & blue cheese salad. Then onto our sweet choices. On offer was a cheese board with some fresh oranges, jaffa and English toffee macarons, orange & poppyseed loaf, pumpkin pie, chocolate & caramel tart as well as a orange meringue tart

The centre piece of all of these sweets were the cakes that I kept quite plain with a textured wood look and used the colours of autumn leaves as my accent – in ruffles as well as cascading leaves. Bring in my trusty talented ladies! Nicole from Pretty & Print is a “paper whisperer” and made the most stunning large paper flowers as well as a gorgeous paper flower bouquet. This was exactly what I wanted – it had the organic element I was after, as well as adding a lot of prettiness! Not only did Nicole make the paper flowers, she designed and made all the paper for the flowers as well as the wrap for my soup thermos! Love that gal! Then to photograph the setting and all the beautiful vignettes, was Lynsey from DMBImages! Such a pro in capturing everything as natural as we wanted it but perfect in the images to collect. Thank you so much Lynsey. We managed to get all our images just as we wanted... and just in the nick of time! An autumn thunderstorm rolled in and saturated us to the bone! It was hilarious to look back on – to see us running back and forth, collecting food and props... completely unglamorous – but fun! So to end, I would like to dedicate this beautiful autumn afternoon picnic to my mum, who inspired me to love nature and everything I see as well as my mother-in-law. She opened up her heart and her heritage to me and showed me the true meaning of generosity with food! XX

Savoury BOLOGNESE PIES There is nothing better than a really good pie... flaky pastry with an oozing filling! Pies are one of my most favourite treats and I love to experiment with the fillings! I am known in our family for my bolognese sauce (with thanks to my mother-in-law and then honed down after the past 20 years!). My kids love my bolognese sauce, so I decided to make bolognese pies... and they were a hit!

Preparation

• Start by making the pastry. Pastry is one of my most favourite things to make – it is not hard to make yourself – so give it a go!

Filling

• Place the plain flour and the chopped cold butter in a food processor and pulse until it is fine and crumbly. Combine the egg yolk and cold water and lightly whisk. Drizzle the egg mixture into the food processor and you may need to use the lot, or you may not. Pulse until the mixture just comes together in small parts (add more liquid if you need). Do not wait until the mixture balls together, as your pastry will become hard. Turn the mixture out on a lightly floured surface and press together to form a disc. Refrigerate for 1 hour.

• For your filling. You can use your own recipe for bolognese sauce or ragu. Recipes differ from family to family,

the pans, ensuring that you are not stretching it too much as it will shrink when cooking. Blind bake your pastry cases for 10 minutes and then remove your weights (I use raw bean mix).

so make what you love. Some tips from me to you when making your sauce. I only use a mix of pork & veal mince when making my sauce. Ensure you brown your mince well and break up in the pan into small pieces while cooking and then add your pureed tomatoes. I always allow my sauce to simmer for at least 3 hours. When making the sauce for the pies, I tend to make the sauce a bit thicker so that it is not too runny when using. • Preheat your oven to 180°C. Roll out your pastry between 2 sheets of baking paper, this helps with the pastry not sticking and also not ripping. Have your non-stick pie pans ready (I use the individual ones). Gently press your pastry into

• Place spoonfuls of your Bolognese sauce into the pie cases. Try to not overfill too much, I usually fill to ¾. Sprinkle grated mozzarella cheese (to taste) over the sauce and then top the pie with a round of your pastry. Press down on the edges gently and seal with an egg wash. I topped my pies with little cut out pastry autumn leaves. You can decorate as you wish. • Bake in the oven for approx. 25 minutes. I do not have an exact time, as when it is nice and golden and slightly risen, your pies are ready! • Depending on the size of your pies, this pastry recipe will make approx. 8 individual pies. An Evening sweets Affair HOSTED BY BOUTIQUE AFFAIRS

From the moment I found out I was given The Evening Sweets Affair, my mind started racing with a million different ideas. I knew that I wanted it to be different to my usual work yet still very feminine. Obviously it had to be shot at dusk with that beautiful glistening light. We found a fantastic location at Everton Estate with breathtaking views and stunning natural surroundings. I worked very closely with both Helen (Kiss My Cakes) and Virginia (The Bouquets of Ascha Jolie) to ensure we were all on the same page, I could not have done it with out these two ladies and I truly appreciate all the hard efforts they put in to bring this to life. We made a conscious decision to NO cupcakes, as this was a more adult and evening affair. The colour palette used for the cakes were shades of dusty pinks, ivory and gold. The three ladies (cakes) stood in their glory and spoke for themself. Each complimented one another, but I must admit my favorite was the centre lady with cascading ruffles down the front of the very tall 3 tier cake. Other desserts included mini vanilla bean sponge petits, triple stack cookies and turkish delight macarons nestled on a beautiful vintage dresser from Maison Living. Helen is just amazing and she picks up what you put down and every little detail is carried out in all of her cakes and you can see all the love and efforts she puts in.

Virginia from The Bouquets of Ascha Jolie is not only the best when it comes to flowers, she has a wonderful eye for detail and helped a lot along the way. The colour palette for the flowers were shades of magenta, crimson, ivory and dusty pinks. The two floral centre pieces took centre stage on the main table with loosely flowing roses scattered down the centre of the table. We used gold candelabras and lots of cut crystal. I was very lucky to have Virginia on my team as she is so very talented at what she does and her flowers really made everything come to life. Whilst coming up with the concept for this shoot, I really wanted to use a model to set the scene. I knew exactly what I wanted her to look like and the moment I saw Jade I knew she would be perfect. I was fortunate enough to be able to choose a gown from the wonderful J’Aton Couture whose work I have admired for many years. I knew when I saw this dress it was simply made for this setting and I’m so very thank ful to them for allowing us the use of their master piece gown. All the elements had come together. I had all of our linen made exclusively for Boutique Affairs. Beautiful soft chiffon in a dusty dirty pink draped over the table and just slight touched the ground, high back tiffany chairs in gold with ruffle tails compliment the setting perfectly.

All that was left was to bring in the horse. Like any true gentleman, he stood and did exactly what he was told! A beautiful black stallion by the name of Reconnaissance with his black glistening coat topped the shoot off. The beautiful photos were captured by the very talented Vanessa from Wildberry Studio who was kind enough to take the photographs for us. We all waited in anticipation to see the shots and we all gasped when they came through! I love what Vanessa has captured and I’m very fortunate to have such a highly acclaimed photographer capture this for us. I’m absolutely thrilled at how the shoot came out, it was everything that I wanted it to be. I still smile when I look at the photos to know that all the many hours we had put in paid off. A big thank you to the lovely ladies that made this happen I really couldn’t have done it with out you. A BOUTIQUE STYLING TIP I like to mix and match with a lot of my pieces, I find that this helps expand your collection also. I love to collect pretty vintage plates and these can easily be made into cake stands. I find that candle sticks are fabulous to use as you can just simply paint them then pop a plate on top for a simple yet effective cake stand. As seen in the cake on the left I sprayed the candlestick gold and then placed one of my pretty plates on top. These are easy enough to change the colous all the time depending on what colour palette you are working with. Oh SWEET MUM

Hot Chocolate & S ’mores HOSTED BY JUST CALL ME MARTHA

When I was asked to create a special “Blissfully Sweet” Mother’s Day table to honour Jacki’s mum Suzanne Maree Wadey, who passed away from breast cancer 10 years ago I was very excited if not a bit nervous. The theme was relaxed, casual beachside with the main colours being shades of teal, rustic/ natural sand and white. Since my topic was “Hot Chocolate and S’mores bar” my accent colours was chocolate and burnt orange. My main inspiration came from the gorgeous printables by Style me Gorgeous, I used the colours that Sarah incorporated in my tags and used them in paint colours, ribbon, food and props to create my “bar”. I didn’t want to use a conventional table so instead I opted for a vintage “hutch” that I had in storage. I gave the hutch a lick of paint (matching my printables) and used that as my “anchor” point for the whole design. Thinking about what to serve on my bar was both easy and difficult! Easy because it’s a bar, so I had to obviously incorporate elements such as self-serve chocolate, marshmallows, crackers etc but at the same time difficult as I didn’t have anything “pretty” to showcase like I normally do. No fancy cakes, no lovely cookies and no gorgeous cupcakes as it didn’t fit with my theme. Instead I opted to have some gorgeous eye catching flowers sprinkled with shells from Velvet Lily Florist to make my bar “pretty” and providing a focal point . I am sure you can see from the photo’s that the stunning bouquets lifted my bar from ordinary to lovely. Some of the food that was served at the bar (other than the expected self-serve ingredients needed to create a hot chocolate drink and s’mores snack) were dunking choc chip cookies, chocolate macarons, S’Mores cupcakes, S’mores Cheesecake and s’mores pops. As a favour everyone took home either a S’mores campfire kit or Hot chocolate kit.

Make your own MARSHMALLOW CUPCAKES

For The Cupcakes Gather ingredients for your favourite vanilla or chocolate cupcake recipe. I personally use an old Women’s Weekly recipe. 1 x cup of graham crackers • Pre-heat your oven to 180°C and pop your cupcake liners in your cupcake tin.

• Pop some graham crackers in your food processor and blitz till crumbs form. You’ll need 1 cup. Now spoon 2 teaspoons of the graham cracker crumbs into each cupcake case and press down with your spoon. • Make your cupcake batter following your favourite recipe and spoon the batter into each cupcake case. • Bake for 20 minutes or until cooked and then cool completely

sure you have a pot holder handy and a table mat next to you. I also have my bench mixer ready for the last stage of this recipe. • Place the bowl over a saucepan of simmering water (don’t let the bowl touch the water) and beat continuously with a hand held electric mixer until light and fluffy. You’ll see the mixture go from pale cream to absolute white as you beat over the heat. It will start thickening and increasing in volume so keep beating till soft peaks form.

For the marshmallow frosting - 3 egg whites - 480g caster sugar - 3 teaspoons light corn syrup - ¼ teaspoon cream of tartar - 150ml water - ¾ teaspoon vanilla paste - ½ cup of melted chocolate • In a metal bowl (make sure it’s a big bowl as the mixture doubles in volume while you beat it) combine the egg whites, sugar, corn syrup, cream of tartar and water. Make

• Take the bowl off the heat and place on your table mat, add the vanilla paste and continue beating your mixture until it forms stiff peaks. I pop my mixture into my bench mixture and let the machine continue mixing unaided as it takes ages. • Pop the marshmallow frosting in a piping bag with a big pastry star tip and pipe the frosting like ice cream swirls onto your now cooled cupcakes. The frosting will cover about 24 cupcakes. • Using a mini blow torch (they sell them at Bunnings and sometimes at Aldi) gently “scorch” the edges of you frosting to look like roasted marshmallows. • Drizzle with melted chocolate.

Midnight Snack HOSTED BY STYLED BY BELLE

When I think of the word “Midnight Snack”, two people come to my mind immediately: 1. Nigella Lawson – Celebrity cooking show host and woman of my own heart. If you are familiar with her show, at the end of each episode she sneaks out of bed in the middle of the night and goes to the fridge for a naughty little snack. I love seeing this and she always makes me giggle! 2. The second person is someone that ties in perfectly with the theme of this Blissfully Sweet E-Vent... a pregnant “mother to be”! Many woman experience so-called “cravings” throughout their pregnancy and can often be found sneaking (or “pounding” if it’s closer to the end of the 9 months) around the kitchen at all hours of the night trying to ease their craves! Cravings vary from woman to woman and can include virtually anything. From sweet to sour, or salty to spicy, there are so many stories of the foods woman munch away on, or send their partners to the shops for, in the middle of the night. I personally was partial to a bit of chocolate and the odd donut while I was pregnant, but also pined for lots of tropical fresh fruit. There are the weird and wacky combinations you often hear such as ice cream & pickles, or chocolate sauce on hot chips, as well as the even stranger stories of dirt and charcoal! I did say weird and wacky didn’t I!!

So for our final Blissfully Sweet e-vent, I proudly present my “Oh Sweet Mum To Be” Midnight Snack inspired shoot... The E-Vent was shot in a kitchen where our gorgeous mummy “to be” has snuck out of bed for a midnight feast! An amazing spread has been laid out on her kitchen benchtop, where she has come to ease her craves. Her house is located by the beach, and she has beautiful views of the shimmering moonlit ocean from her kitchen window, while lanterns and candles illuminate the room inside. Delicious treats ready to be devoured include chocolate pots, hot cocoa, lemon soufflés (served in fresh lemon skins), blueberry macaron mousse cups, cheesecake, sticky date pudding, banana milkshakes, chocolate, crisps, popcorn, cheese & crackers, french fries and of course pickles & ice cream! Featuring on the table is also an enormous rich chocolate fudge cake that has been beautifully decorated in midnight blue ruffles (reminiscent of the oceans waves). Love comes in many ways, but the love a mother has for her child is so incredibly special. A mother loves right from the start, at the moment she first holds her baby close to her heart. I thought it truly fitting to conclude our Blissfully Sweet “Oh Sweet Mum” E-Vent with the very essence of motherhood and to celebrate the start of an incredible journey and experience for every mother!

• Preheat oven to 350 degrees. Line a baking sheet with parchment. Trim tip end from a lemon so fruit sits level. Cut stem end one-third of the way down, making cut parallel with bottom; reserve top. Repeat with remaining lemons.
