Merħba and welcome onboard this Air Malta flight.

“It’s beginning to look a lot like Christmas”, and that’s because it is! November has disappeared faster than the last mince pie of the Christmas spread, as December rolls around, bringing with it a change of weather and much cheer!

As another year ends, we look back with great satisfaction on all the achievements that the Air Malta team managed to accomplish.

What do you love most about Christmas? The delicious aromas wafting from the kitchen with Imbuljuta tal-Qastan diligently at the helm (see our recipe on page 88), fairy lights becoming our main source of illumination, yuletide carols filling the air and that repeated rendition of “Santa Baby” in every shop as Bublé emerges from hibernation just in time for the festive season. I even secretly enjoy the annual wrestle with my stubborn Christmas tree, and the frustration of sitting on my living room floor surrounded by awkwardly-cut wrapping paper, sellotape stuck in my hair, and a light dusting of glitter on every conceivable surface as I attempt to ‘neatly’ wrap a present yet again. (With the added disapproving look from my dog).

It has been a good year for us during which we have announced our return to profitability after almost two decades, increased frequencies to popular destinations, opened new routes to Ibiza, Warsaw, Tbilisi and Cairo, redefined our Business Class with a new gourmet menu that celebrates our local heritage and traditions, and welcomed two brand new Airbus A320neo to our fleet. We are encouraged by what we achieved this year and I wish to thank you for supporting Air Malta and being part of our success story. The month of December is a very special time for the people of Malta and Gozo as we hold our Christmas Festivities at heart. So many activities and events are organised on a national level; activities that can be enjoyed by locals and tourists alike. Experience the traditional unique celebrations that the Maltese Islands are renowned for and savor typical local treats and dishes which are so popular during the festive season.

But essentially, it’s less about buying presents and more about being present. Malta is an impressive hotchpotch of nationalities, cultures and religions. “I come here to help my husband with nativity scene figurines. I love Christmas and local feasts so I enjoy coming here. Some of my friends can’t understand how a woman does this kind of work but I like to do all sorts of jobs. I don’t mind. I don’t think that this work should only be associated with males. I look forward to Saturdays, to spending some time here working in the garage. My job here is to paint the figurines and mould the clay. Now, I wish to learn how to make them. We also make Holy Week statues and titular statues. We use clay and kartapesta. This garage belonged to a friend of ours, Lino Fardell, who also made nativity scene figurines. Built between 1572 and 1577, this cathedral contains two masterpieces by Caravaggio. St John’s CoCathedral is a gem of Baroque art and architecture. It was built as the conventual church for the Knights of St John. This church is till this very day, an important shrine and a sacred place of worship. It is also a venue for many cultural events.

Strait Street, or Strada Stretta, also affectionately termed ‘The Gut’ owing to its reputation as the former redlight district of Valletta, was once the place where sailors who were docked in the harbour went for a good time throughout the late 19th until the mid-20th century. Nowadays, after extensive regeneration, the area is filled with bars and restaurants.

Why not catch a show while you’re in town? The Manoel Theatre is a renowned theatre and famous performing arts venue in Malta. The stunning theatre is often referred to as merely “The Manoel”. It is named after Grand Master of the Order of the Knights Hospitaller, Fra António Manoel de Vilhena, who ordered its construction in 1731.

After a considerable restoration project, the Triton Fountain at Valletta’s entrance is a sight you cannot miss. The fountain consists of three bronze Tritons holding up a large basin, balanced on a concentric base built out of concrete and clad in travertine slabs. The fountain is one of Malta’s most famous Modernist landmarks, catch it as dusk begins to fall, and you’ll see it beautifully illuminated.

At the tip of Valletta’s peninsula sits the magnificent Fort St Elmo. It stands on the seaward shore of the Sciberras Peninsula that divides Marsamxett Harbour from The Grand Harbour and commands the entrances to both harbours along with Fort Tigné and Fort Ricasoli. It is best known for its role in the Great Siege of Malta of 1565. For Game of Thrones fans, it was also a popular filming spot!

If you’re looking for the most impressive views the Islands have to offer, this place should be on the top of your list! The public gardens provide an unhindered, panoramic view of the world-famous harbour, with the three cities; Birgu, Senglea and Cospicua as a backdrop. In his spare time, Stephen loves the sea, escaping to Gozo and going for long walks near the Salini salt pans. But even in his free time, inspiration still creeps up on him, having even produced Salini bath salts inspired from these walking trips. Having been in this business since 2001, Stephen remarks that it has been a long journey, from humble beginnings in artisan markets to today’s expansive range, fueling international sales. But Stephen also notes there still a long road ahead. It will be interesting to know what the future holds for Stephen Cordina Aroma & Therapy but with his tenacious personality, coupled with his pure genius, it will definitely be exciting. In the meantime, he is looking forward to opening his flagship store in Valletta and most recently opened a store at The Point in Sliema.

As for Roza, she still goes to Cat Village every day, to feed her cats and make sure they are all well. If you see her there on her morning or evening visit, be sure to talk to her – she’s always chatting to people who come to see the cats. From ginger toms, to tabby kittens, to lucky black cats, felines of all shapes and sizes will find a good meal and a warm bed at Cat Village. Should you wish to contribute to Roza’s work, there’s a cash donation box, a place to leave cat food and toys, plus an information board that tells you how your spare change feeds, neuters, and even rehomes some of St. Julian’s finest feline residents. For all its good work, Cat Village is just one shining example of Malta’s animal-loving spirit. In every town or village on Malta and Gozo, there will always be one generous soul who trudges out each morning and evening (rain or shine) to feed, water and pet the local strays. With so many of its residents living in complete harmony with our feline friends, it’s no wonder Malta is known as the ‘Island of Cats’.

HERE’S A CLOSER LOOK AT THE WOMAN HERSELF WHAT INSPIRED YOU TO TAKE CARE OF STREET CATS? My love for nature explodes when cats come into the picture. Cats not only enhance the beauty of a place, but also bring joy to the people who frequent it. I started helping strays 44 years ago when this mother cat brought her kittens to my doorstep in Valletta. Since then, I never looked back. I started building a cat house and feeding and neutering the cat population. HOW HAVE MALTESE PEOPLE REACTED TO THE VILLAGE? Maltese people appreciate the work being done at Cat Village and often provide tins of food. I love to see the astonished faces of people when they discover Cat Village, and hear the many stories about lost, loved and others that have passed on. WHY DO YOU THINK CAT VILLAGE HAS BECOME A TOURIST ATTRACTION? Over the years it has been filmed by Japanese, Portuguese and other film companies. Tourists flock to this place and I rejoice to see their expression, their faces and their love for our beloved felines. I call it a therapeutic place where people talk about their pets. Children draw pictures of cats and others relate stories of their past or present loved ones. DO YOU TRY TO REHOME THE CATS? Imbuljuta tal-Qastan is a traditional Maltese hot drink served after Midnight Mass on Christmas as well as on New Year’s Eve. This comforting traditional drink undeniably captures the aromas of the end of the year with spices like cinnamon and clove, but also with chestnuts and mandarines, flavours often found in Christmas recipes during December. Enjoy Marthese Quattromani’s twist on this local favourite.

IMBULJUTA TAL-QASTAN INGREDIENTS 150g dried peeled chestnuts 750ml water 100g cup sugar 50g cup cocoa powder 2 cinnamon sticks 1/2 tsp cinnamon 1/2 tsp whole cloves 1/4 tsp nutmeg 1 local orange rind * 1 local mandarin rind * Glass (100ml) Merlot wine ** or a shot anisette (optional) 1 tbs corn flour blended in a little water Some chocolate chips to serve (optional)

METHOD Soak the chestnuts overnight. The next morning drain the chestnuts, remove any remaining peel and place in a pan. Add the water, sugar, cocoa powder, cinnamon, cloves, nutmeg, and the citrus rind. Bring to a boil and simmer until the chestnuts are tender, approximately an hour and a half. Once cooked remove the citrus rind and cinnamon sticks. Add the wine or anisette. Adjust thickness by adding some corn flour diluted in a little water. Serve hot in a cup or a bowl accompanied with some chocolate chips. * Recommended to use orange/mandarins which are not wax treated. ** A twist in the traditional recipe that really blends well!

NATALIS NOTABILIS 2019 MALTA’S CHRISTMAS VILLAGE

The most wonderful time of the year is fast approaching and Rabat’s historical core is getting ready to be transformed into a Christmas wonderland during Natalis Notabilis 2019 – Malta’s Christmas Village. Around 100 stalls will be set up in the narrow and intertwining streets of Mdina’s suburb, including artisans selling local products and craft, a variety of Maltese and international Christmas delicacies, such as Qagħaq talGħasel (Honey Rings), Qastan tal-Imbuljuta (Hot Chocolate with Chestnuts) and Kafe’ tal-Istanjata (Maltese Traditional Coffee). These may be obtained from the Franciscan Friary’s own kitchen. I owe my aviation career to Air Malta as I joined in 1987 as a sponsored Cadet Pilot and became a captain in 1995. In 2000, I left Air Malta and joined a Gulf airline. In May 2018, after being abroad for 18 years, I returned to Air Malta as Chief Flight Operations Officer (CFOO). In my new post, I look forward to working closely with a very knowledgeable group of aviators in Air Malta Flight Operations, ensuring safety remains our top priority while maximising efficiencies. WHAT IS THE BIGGEST CHALLENGE OF YOUR JOB? Aviation is an ever-evolving industry and pilots have to keep abreast with new aircraft, procedure changes and regulatory updates. My challenge as CFOO is to ensure we, as senior management, support our pilot community adapt to these changes as easily and smoothly as possible, by making available to them all the required resources and tools to do so. WHAT DO YOU LIKE TO DO IN YOUR SPARE TIME? In my spare time I love to cook and when I have the luxury of longer time off, I love travelling with my family. Both travel and cooking give us the time as a family to come together and bond amid our normal busy schedules. I have been married for 30 years and we were given the gift of twin daughters. Since they were born, we always made sure that we travel together. WHAT IS YOUR PREFERRED MALTESE DISH? There’s no doubt my favourite Maltese dish is snails, both when served in garlic and olive oil or in curried tomato sauce. I compare this dish to the likes of oysters: It is a dish which is normally eaten accompanied by a good bottle of wine or cans of local beer. It is a sort of communal dish. And I love the custom in Malta where snails are given as appetisers in a lot of our local bars, with locals removing them from the shell while discussing a multitude of subjects from football to politics. WHICH IS YOUR FAVORITE MOVIE OF ALL TIMES? I cannot say I am a movie buff, but my favourite movie of all times is The Godfather. WHAT KIND OF MUSIC YOU LIKE TO FOLLOW? My music appreciation is quite vast ranging from classic operas up to the present music. Being born in the sixties, the 80’s new romantic genre will always have a special place in my heart. WHICH IS YOUR FAVOURITE DESTINATION AND WHY? Venice. It is an enchanting, ever-changing yet never-changing city. Confusing I know, but yes, a city with buildings from medieval years which due to the water surrounding and the different cultures who visit, seems to change by the minute. I have been to Venice more than ten times and will certainly visit again. WHAT ARE YOUR FAVOURITE SPOTS AND TIPS FOR ANYONE VISITING THE MALTESE ISLANDS? The ‘Silent City’ of Mdina and the Capital City of Valletta are both must-visits. Being this time of year, the feast of the Immaculate conception on the 8th of December in Cospicua should not be missed, it is one of the only two feasts celebrated in winter, contrary to the multitude of summer village festas. Another favourite of mine this season is touring the multitude of private crib shows all around the island, where locals spend months preparing magnificent Christmas cribs and open their doors for visitors to come admire them for free.

Alcohol consumed at high altitude can have a stronger effect than usual. Cabin crew are legally empowered to refuse to serve any alcohol to an intoxicated passenger and anyone under the age of 18. In extreme cases, crew may also temporarily confiscate the passenger‘s own drinks so that the passenger does not become a nuisance to the other passengers and crew. Furthermore, Air Malta is bound by international regulations which prohibit the embarkation or the carriage of drunken passengers. However, since you are reading this article, Air Malta‘s Flight Safety Committee is confident that you are a law-abiding and exemplary passenger. Indeed, the cabin crew may need your assistance to restrain another passenger in the unlikely event that he or she may act irresponsibly during the flight. The consumption of one’s own alcoholic beverages inflight goes against Air Malta policy.

Smoking is prohibited from when you leave the departure terminal building until you reach the arrival terminal building. Smoking is allowed in designated areas only. Smoking is not allowed during any phase of the flight and in any area of the aircraft. Should you be aware of a passenger who has smoked in the toilet during the flight, please inform the cabin crew immediately so that they can check for any undetected fires. The use of electronic cigarettes (e-cigarettes) is not allowed on board Air Malta flights. Similarly, the use of naked flames on and around the aircraft is also prohibited.

Devices that can send or receive data by wireless means, such as mobile-phones and tablets, may be used during all phases of the flight provided their transmit/receive capabilities such as GSM & Wi-fi are switched off. Devices working on Bluetooth wireless connectivity are allowed. If the device has ‘Flight Mode’ capability, this must be enabled. Such devices shall be safely secured in the customers’ hand (handheld) or a pocket during taxi, take-off and landing. Larger devices (e.g. laptops) shall be switched off and stowed away safely during taxi, takeoff and landing. Accessories, such as headphones, must not obstruct access to the aisle. If the data transmission capability cannot be switched off (whilst the device is operating), the device itself must be switched off for the duration of the flight.

These could include, but are not limited to, items such as DVD players, electronic games, music players and personal cameras. Such devices shall be safely secured in the customers’ hand (handheld) or a pocket during taxi, take-off and landing. Larger devices shall be stowed away safely during taxi, take-off and landing.

LAPTOPS AND NOTEBOOKS Such devices may be used during boarding and during flight but not during taxi, take-off and landing. Any built-in data connectivity such as Bluetooth or Wi-Fi must be disabled. These devices must be stowed away safely during taxi, take-off and landing since they could hinder an emergency evacuation.

ARE THERE TIMES WHEN I CANNOT USE MY ELECTRONIC DEVICES?

CAN I USE HEADPHONES? Personal headphones can be used during all phases of the flight. However, we ask you to remove your headphones during the safety briefing. For safety reasons, customers sitting in an emergency exit row must refrain from using headphones during taxi, take-off and landing.

Under certain circumstances, your Flight Crew or Cabin Crew may ask you to switch off all Personal Electronic Devices. This may happen during automatic landings, low visibility takeoff or landing, or during emergency situations.

I SHOULD INFORM THE CABIN CREW WHEN … your portable electronic device is damaged, becomes hot, produces smoke, is lost, or falls into the seat structure. If safe to do so, the device must be switched off immediately.
