W ELC OM E

FROM THE CHAIRPERSON... Merħba, Last month together with the Government of Malta, our principal shareholder, we launched the Air Malta Restructuring Plan for the period 2022 to 2026. The Plan includes several initiatives and will see the airline rightsize its work force, improve workforce productivity and flexibility, outsource ground operations, negotiate new collective agreements, refinance its aircraft leases, increase charter business and become a European network carrier amongst other measures. A number of key strategies, related primarily to our route network and fleet plan, have already been undertaken last year. In 2021 Air Malta renewed its focus on main European airports and concentrated on frequency growth to these destinations. We have cut unprofitable routes and reduced our network from 42 to 20 destinations, adding extra services on many popular cities. We aim to continue strengthening our network and work with our airline partners in key European hubs through codeshare and interline sales both for passenger and cargo sales. Air Malta was one of the first airlines to launch its Summer 2022 schedule which will see us conduct over 250 flights per week to around 20 destinations. We are very pleased that all our operational requirements of aircraft, pilots and cabin crew required to deliver a fully planned Summer 2022 schedule are all already in place, and we look forward to countries and Governments around Europe opening up and easing the ability to travel. Last year our charter business increased significantly, and we intend to grow this business further by offering sport teams, film crews, cruise operators and other groups the facility to charter our aircraft and travel according to their preferred schedule and choice of airports. Our airline currently operates a fleet of seven Airbus, (four) A320NEO and (three) A320CEO aircraft. Air Malta started the renewal of its fleet in 2018, moving from old A320CEO to greener A320NEO and by 2024 the entire fleet will consist of a eight single-type aircraft of A320NEOs. With the deployment of the new energy-efficient aircraft, Air Malta will significantly reduce fuel consumption, CO2 emissions and noise footprint and will therefore be well-placed to be a leader in the reduction of human induced climate change and in meeting its sustainability targets. Air Malta is committed to ensure that its customers are at the centre of its strategy and the airline is taking several tangible initiatives to leverage technology to deliver an outstanding customer journey and experience. To this end, the airline achieved a key milestone in its digital transformation journey by successfully launching its new booking and customer experience platform. Air Malta has consistently ranked amongst the best regional airlines in Europe and has recently been voted the 3rd ‘Best Regional Airline in Europe’ and the 10th ‘Best Regional Airline in the World’ at the Skytrax World Airline Awards™ 2021. The Restructuring Plan aims to build on Air Malta’s trusted brand to ensure a sustainable airline that is able to compete successfully for the years to come and in particular serving our customers with the capability to reach the Maltese Islands frequently all year-round. For more information and the latest news about Air Malta, our winter flight schedule, new website and booking engine, and our new reduced Business Class fares, please visit www.airmalta.com and www.facebook.com/AirMalta and join our newsletter mailing list to receive great offers directly to your inbox. Thank you for flying Air Malta!

FRO M THE ED ITO R... Dear travellers, It's no secret February is all about chubby cherubs and declarations of love, and here on the Maltese islands, we are not exempt from the St Valentine tradition. Love it or loathe it, in this issue, we are bursting with ideas about how you can spend the day. Picnic in a garden? Well, Malta has lots of botanical gems waiting to be explored, as local tour guide Denise Cassar shows us on page 40. Whether you usually gift your loved one roses or chocolates, why not consider something a little out of the box from our "Made in Malta" section? There are plenty of wonderful presents to be had. They say food is the way to the heart, and here at team Bizzilla, we would absolutely have to agree with that statement - if you don't believe us, just try Chef Stefan Hogan's sensational beetroot and crab risotto on page 46. Or perhaps a romantic getaway is more your style? Well, of course, there is only one answer for that: Paris! The French capital and romance, they go together like champagne and oysters, which is why loved up couples make a pilgrimage to the French capital every year on Valentine's Day. But why exactly is Paris the "city of love", and does it deserve the title? Paris boasts two spots on the list of the top 10 places in the world to propose, according to one study (admittedly, one of them is Disneyland Paris). The city has long been a top spot for Valentine's getaways and newlyweds. What is it about the French capital, more than any other city in the world, that makes people go weak at the knees? Christine Cassar finds out on page 20. And of course, we have our regular features for you, plenty of island highlights, six top sights and a round-up of top local restaurants not to be missed! Sit back relax, you'll soon be there.

Enjoy this edition and keep safe.

SIX TOP SIGHTS

ST THOMAS BAY St Thomas Bay is found on the outskirts of Marsaskala. This sandy beach is of a reasonable size and is surrounded by cliffs on the majority of the bay. Frequented by fishermen, this little inlet is thought of as a favourite amongst locals.

SALT PANS

My Miniature World showcases a unique collection of dolls houses built by artist Rebecca Micallef, found in Għaguża Street. During your visit you will get to see various styles of dolls houses representing different historical periods. To visit and have a guided tour contact on (+356) 99994149 or myminiatureworld.mt@gmail.com www.myminiatureworld.blogspot.com

The Marsaskala coastline is beautiful, to say the least. Here you can find grooves dug deeply into the rock used to gather salt, also known as salt pans. The irregular shapes of the pans fitting together like intricate patchwork make an incredible sight. They are believed to date back to the era of the Romans.

THE PROMENADE

ST THOMAS TOWER

Marsaskala promenade is bustling in the summer. There are so many kiosks and eateries that you can visit while walking by the sea. If you're looking to step away from the crowd, why not find a secluded bench and bask in the warm sun.

Whether you’re looking to relax after a long day or simply absorb the rays of the sun as it tucks itself back into the horizon, the sea views of Marsaskala are a great place to call it a day. Alternatively, wake up before the sun does and watch the sun rise upon the Marsaskala seascape.

St Thomas Tower is yet another watchtower that can be found in Marsaskala. This large bastioned watchtower was built in 1614 and forms part of the Wignacourt Towers and served as an artillery battery in its time. Grab a shot of this tower it’s quite something.

FOOD A ND DRINK

This delightfully decadent dish from Chef Stefan Hogan brings together one well-loved local vegetable - the humble beetroot - also known as pitravi along with some classic Mediterranean flavours. The most commonly known colour of beetroot is purple, however, did you know it can be white or golden as well?

BEETROOT RISOTTO CRAB, BEETS AND POMME D’AMOUR INGREDIENTS 160gr arborio risotto rice, 1 shallot, finely chopped 1/2tsp grated ginger 25ml champagne, brut 400ml beetroot juice 250ml chicken stock (or vegetable) 90gr butter 50gr Parmesan aged (36 months)

INGREDIENTS FOR DECORATING THE RISOTTO 1 green apple, peeled and quartered (compressed) Pickled beetroot, cut into discs (raw) Marinated baby red beets (cooked) Marinated yellow beets, cut into cubes (cooked) 140gr crab meat mixed with (confit shallots, grated ginger, chive, lemon zest, olive oil)

METHOD In a sauté pan, lightly toast the rice in a tablespoon of melted butter. Add the shallot and cook until translucent, add the champagne and reduce heat until completely evaporated. Gradually add the warm chicken (or vegetable) stock, keep stirring using a spatula to ensure all grains are evenly coated. Cook over a low flame for approximately 6 minutes. Now start to gradually add the beetroot juice; this will take another 5-6 minutes. Remove from heat and add the remaining butter and stir it in, add the parmesan and adjust seasoning to taste, (if you want you can also add a squeeze of lemon juice to adjust the acidity). If the risotto is not loose, add some stock to get a soft creamy consistency.

CISK

KINNIE

Simonds Farsons Cisk plc is synonymous with a beer brewing tradition rooted in quality. At the base of this tradition are long-established skills of selecting nature’s best ingredients coupled with the expertise of skilled and dedicated brewers that ensure that a high standard of quality is maintained at every step in the brewing process. Over the years, this dedication has contributed to creating award-winning brews that so many have grown to appreciate. Cisk Lager, launched in 1929, is a golden-coloured, bottom fermented lager with a distinctive and well-balanced character with an alcohol content of 4.2%. The range also includes Cisk Export – a smooth, well-balanced and exceptional beer with a 5% alcohol content, Cisk Excel – a low carbohydrate beer, Cisk Chill – flavoured beer available in three flavours, Cisk Pilsner – a premium pilsner with an alcohol content of 5.5% and Cisk Strong – an outstanding extra-strong premium lager with a 9% alcohol content.

Kinnie, Malta’s own favourite soft drink, is a unique tasting bitter-sweet soft drink with orange flavouring and aromatic herbs. Kinnie is best enjoyed ‘neat’, with a slice of orange and lots of ice. Highly refreshing, it is also an excellent mixer. These distinctive characteristics have made Kinnie a Mediterranean classic since 1952, loved by the local population and tourists. Over the years, in keeping with evolving trends in lifestyles and health awareness, a zero-calorie version, Diet Kinnie, was introduced, as well as Kinnie Zest – a sugar-free variant with an intense orange flavour. The Kinnie range is available online at: amazon.co.uk kinnie.com

IL-BIZZILLA TALKS TO JUSTIN C AMENZULI CUSTOMER EXPERIENCE AGENT

HOW LONG HAVE YOU BEEN WORKING WITH AIR MALTA? I have been working with Air Malta for the past two years. THREE WORDS THAT DESCRIBE YOUR JOB? Challenging. Proactive. Satisfying. WHAT IS THE BIGGEST CHALLENGE OF YOUR JOB? Resolving a customer query in a very short time-frame and making sure to exceed expectations is always a challenge. Some queries can be more complex than others especially when a thorough decision-making process is required to make sure that the customers’ needs are addressed whilst ensuring we are inline with the airline’s policies, standards and procedures. DO YOU HAVE ANY HOBBIES? Travelling and playing football are my favorite hobbies. At ten years of age, I joined Valletta FC youth nursery and played regularly for the team, however nowadays I meet up with my friends playing recreational football. WHAT IS YOUR PREFERRED MALTESE DISH? Slow cooked horse meat stew. WHICH IS YOUR FAVOURITE MOVIE OF ALL TIMES? Being a big fan of Christopher Nolan, Inception is my favorite film. It is a science fiction movie with a great storyline and an interesting cast of award-winning actors. WHAT KIND OF MUSIC YOU LIKE TO FOLLOW? Progressive house is my favorite genre, however I listen to all types of music depending on my mood. WHICH IS YOUR FAVOURITE DESTINATION AND WHY? The beautiful region of Tuscany in Italy should be on any traveller’s bucket list. Tuscany is dotted with historical places and beautiful architecture. It offers travellers a vibrant culinary scene and it is regarded as one of the world’s best regions for fine wines. WHAT ARE YOUR FAVOURITE SPOTS AND TIPS FOR ANYONE VISITING MALTA? Travellers should embark on an interesting journey of the Maltese Island’s heritage and history by starting with a sightseeing tour of our capital Valletta, then proceeding to a visit to the three cities overlooking the Grand Harbour and then a visit to the fortified medieval old capital city of Mdina. A visit to the fisherman’s village of Marsaxlokk is a must and a stroll around Dingli cliffs or Għar Lapsi, should also not be missed.

ALCOHOL CONSUMPTION

SMOKING

Alcohol consumed at high altitude can have a stronger effect than usual. Cabin crew are legally empowered to refuse to serve any alcohol to an intoxicated passenger and anyone under the age of 18. In extreme cases, crew may also temporarily confiscate the passenger‘s own drinks so that the passenger does not become a nuisance to the other passengers and crew. Furthermore, Air Malta is bound by international regulations which prohibit the embarkation or the carriage of drunken passengers. However, since you are reading this article, Air Malta‘s Flight Safety Committee is confident that you are a law-abiding and exemplary passenger. Indeed, the cabin crew may need your assistance to restrain another passenger in the unlikely event that he or she may act irresponsibly during the flight. The consumption of one’s own alcoholic beverages inflight goes against Air Malta policy.

Smoking is prohibited from when you leave the departure terminal building until you reach the arrival terminal building. Smoking is allowed in designated areas only. Smoking is not allowed during any phase of the flight and in any area of the aircraft. Should you be aware of a passenger who has smoked in the toilet during the flight, please inform the cabin crew immediately so that they can check for any undetected fires. The use of electronic cigarettes (e-cigarettes) is not allowed on board Air Malta flights. Similarly, the use of naked flames on and around the aircraft is also prohibited.

FACE MASKS The Airline requires all passengers to wear an approved medical or cloth face mask at all times, starting from boarding, for the duration of the flight, through to disembarkation. Passengers will not be allowed to board without a facemask. Masks should also be worn within the airport building, before and during check-in, upon arrival, when collecting baggage, and up to the point that a passenger leaves the airport building. As per the Government of Malta Legal Notice 402 of 2020, children under three (3) years of age and persons with severe cognitive, physical, mental, or respiratory impairments who have difficulties tolerating a mask as certified by a licensed medical practitioner are exempted from wearing masks. Certified individuals shall always carry the relevant medical certificate exempting them from wearing a mask. Passengers risk fines if they fail to comply.
